Corn zein-stearic acid films were laminated to whey powder (WP) and sodium caseinate (SC) mixture (WSM) films. WSM films were prepared at three mass ratios of WP and SC (50:50, 60:40, and 70:30 in w/w) by casting method. WSM films with poor mechanical and barrier properties were produced as the whey powder ratio of WSM increased from 50:50 to 70:30. Corn-zein lamination improved the mechanical and water barrier properties of WSM films by increasing tensile strength (TS) from 4.7-14.5 to 14.0-26.8 MPa and by decreasing water vapor permeabilities (WVP) from 0.432-0.490 to 0.386-0.422 ng m/m2 s Pa. However, elongations of corn-zein laminated films were reduced from 64.5-128.0 to 2.6-4.5%. Mechanical and water barrier properties of corn-zein laminated WSM films were affected by the mass ratio of whey powder to sodium caseinate in WSM films. Addition of stearic acid up to 10 g/100 g of corn zein decreased TS and WVP of laminated films to approximately 12 MPa and 0.36 ng m/m2 s Pa regardless of mass ratio in WSM film. However, no significant differences in TS and WVP were found with further addition of stearic acids.  相似文献

The effect of addition of caseinates to soy protein isolated (SPI) based films containing lipids (33% of oleic acid or 85:15 oleic acid (OA)–beeswax blend (BW)) on water vapour permeability (WVP), mechanical and optical properties was evaluated. SPI–lipids was combined with caseinates (sodium or calcium) in different SPI:caseinate ratios with the aim of improving water vapour barrier, mechanical and optical properties of SPI films containing lipids. Caseinate incorporation to SPI based films provoked an increase of elastic modulus and tensile strength at break, mainly for calcium caseinate. Both caseinates contributed to increase the water vapour barrier properties of soy protein-based films. Caseinates also provoked an increase of transparency of SPI based films and colour softening. The most effective combination was 1:1 sodium caseinate:SPI ratio, when film contains 85:15 oleic acid:beeswax ratio.  相似文献

The effect of the homogenization conditions of the film-forming emulsions and lipid self-association on the physical properties of sodium caseinate films containing oleic and stearic acids was studied. For this purpose, different film-forming emulsions were prepared by using different homogenization methods and were characterized as to particle size distribution and rheological properties. Likewise, mechanical, structural and optical properties and water vapour permeability (WVP) of the obtained films were also determined. While films containing stearic acid showed a laminar-like structure, oleic acid was more homogeneously dispersed in the film matrix. These differences in structure make the stearic acid films less flexible, showing more surface roughness and less gloss and transparency than films containing oleic acid. The film microstructure also affects the WVP. In this sense, for oleic acid films, water barrier efficiency increased when homogenization conditions were more intense, whereas for films containing stearic acid, the opposite effect was observed. This different behavior was attributed to the different kind of lipid self-association in the aqueous media, protein interactions and their impact on the final film microstructure.  相似文献

Polylactic acid (PLA)-coated soy protein isolate (SPI) films were prepared by dipping SPI film into PLA solution. The effects of coating on improvements in mechanical and water barrier properties of the film were tested by measuring selected film properties such as tensile strength (TS), elongation at break (E), water vapor permeability (WVP), and water solubility (WS). TS of SPI films increased from 2.8±0.3 up to 17.4±2.1 MPa, depending on the PLA concentration of the coating solution, without sacrificing the film's extensibility. In contrast, the extensibility of SPI film coated with solution containing more than 2 g PLA/100 ml solvent, increased. WVP of PLA-coated SPI films decreased from 20 to 60 fold, depending on the concentration of PLA coating solution. Water resistance of SPI films was greatly improved as demonstrated by the dramatic decrease in WS for PLA-coated films. The improvement in water barrier properties was mainly attributed to the hydrophobicity of PLA.  相似文献

PLA-based composite films with different types of nanoclays, such as Cloisite Na+, Cloisite 30B and Cloisite 20A, were prepared using a solvent casting method and their tensile, water vapor barrier and antimicrobial properties were tested. Tensile strength (TS), elongation at break (E), and water vapor permeability (WVP) of control PLA film were 50.45 ± 0.75 MPa, 3.0 ± 0.1%, and 1.8 × 10−11 g m/m2 s Pa, respectively. TS and E of nanocomposite films prepared with 5 g of clay/100 g of PLA decreased 10-20% and 11-17%, respectively, depending on the clays used. On the contrary, WVP of the nanocomposite films decreased 6-33% through nanoclay compounding. Among the clay types used, Cloisite 20A was the most effective in improving the water vapor barrier property while sacrificing tensile properties the least. The effect of clay concentration tested using Cloisite 20A showed a significant decrease in TS and WVP, with increases in clay content. Among the PLA/clay composite films tested, only PLA/Cloisite 30B composite film showed a bacteriostatic function against Listeria monocytogenes.  相似文献

The mechanism of potassium sorbate (K-sorbate) release from chitosan films was studied as a function of immersion time in aqueous solution. Fick's law was applied to calculate the diffusion coefficient and the power law defining the type of diffusion mechanism. The novelty in this study is the compound diffusion mechanisms comparison through chitosan film (CF) and chitosan emulsion film. Initially, the lipid was selected to obtain the emulsion films. The evaluation was based on the water vapor permeability (WVP). The lower WVP (32.45% less than chitosan film) was found using 0.5 g/100 g of palmitic acid for 2.0 g/100 g of chitosan. Then, active chitosan films (ACF) were obtained incorporating K-sorbate on CF at 0.1 and 0.5 g/100 g of K-sorbate. Also, active palmitic acid-chitosan films (APEF) were obtained, incorporating 0.1 g/100 g of K-sorbate. The mechanisms of K-sorbate diffusion through ACF and APEF were mainly non-Fickian. However, the K-sorbate diffusion coefficient did not reduced in lipid presence.  相似文献

Beeswax or a 1:1 blend of stearic–palmitic acids (S–P) were incorporated into gellan films through emulsification to form gellan/lipid composite films. The films, containing 0–25% lipid (dry film basis) were examined for mechanical properties, water vapor permeability (WVP) and opacity. Addition of the lipids to gellan films significantly improved the WVP (P<0.05), but lowered the mechanical properties and caused the films to become opaque. Beeswax was more effective than S–P acids in reducing the WVP, and films with beeswax showed better mechanical properties overall than those with S–P acids. The tensile properties of gellan films containing 14.3% beeswax were evaluated as a function of water activity (aw) of the film. Increasing the aw decreased the tensile strength (TS) and elastic modulus but tensile elongation was not affected. The extent of the decreases in TS for the composite film was less pronounced than that for a similar film without lipids, suggesting that lipids help to alleviate moisture sensitivity of gellan films.  相似文献

The properties of porcine plasma protein-based films as influenced by some factors and pretreatment were studied. Both protein concentrations (20 and 30 g L−1) and glycerol contents (50, 60 and 70 g/100 g protein) had the impact on film properties. Film prepared from film-forming solution (FFS) containing protein (30 g L−1) and glycerol (60 g/100 g protein) possessed the highest tensile strength (TS) (2.48 MPa), while that containing protein (30 g L−1) and glycerol (70 g/100 g protein) exhibited the greatest elongation at break (EAB) (18.33%). Protein and glycerol contents affected water vapor permeability (WVP) and transparency of the resulting films. No differences in protein solubility were found among all films (p > 0.05). Pretreatment of FFS by adjusting pH (2-11) and heating at different temperatures (40, 55 and 70 °C) on the properties of the resulting films was investigated. TS and EAB became higher but WVP decreased with decreasing or increasing pH value of FFS. Heat treatment of FFS with pH 3 and 10 had no impact on TS of the resulting film (p > 0.05). On the other hand, EAB and WVP increased with increasing temperature of FFS at both pHs (p < 0.05).  相似文献

Novel edible composite films were prepared from pistachio globulin protein (PGP), saturated fatty acids, and an emulsifier using the emulsification technique. The water vapor permeability (WVP) of the emulsified films was reduced by approximately 37–43% by fatty acid addition. The effect of fatty acid on the oxygen permeability (OP) of PGP films was indirectly determined as the oil peroxide value. The OPs of the emulsified films were lower than those of a PGP film without fatty acid, but the differences were not significant (P < 0.05). The mechanical properties of PGP films were also affected by fatty acid addition; the ultimate tensile strength (UTS) was diminished, and elongation at breaking (E) decreased considerably (35–70%). Furthermore, the incorporation of fatty acid increased the opacity of the films. Finally, differential scanning calorimetry showed that the glass transition temperature (Tg) of the PGP film was ∼127 °C and was not considerably affected by fatty acid addition.  相似文献

Starch (S)–flaxseed meal (FM) biofilms were prepared from potato and maize starch by incorporating FM up to 15% (dry solid basis) and using glycerol as plasticizer. The dynamic mechanical properties, tensile properties and water vapor permeability (WVP) of these films were measured. The storage modulus of both the starch (control) and starch–FM films decreased as temperature increased. Tan δ increased initially in all the films with increase in temperature until a peak value was reached which allowed the determination of glass transition temperature (Tg). Both tensile strength and Young’s modulus of the starch–FM films increased with increase in the FM content. The WVP of the potato starch–FM films first increased to 2.261 (×105 g m−2 h−1 Pa−1) when FM content increased to 5% and decreased down to 1.832 (×105 g m−2 h−1 Pa−1) with further increase in the FM content to 15%. While the WVP values of the cornstarch and corn starch–FM films were not significantly (p > 0.05) different. The incorporation of FM increased the tensile strength, decreased the % elongation at break and increased the Tg.  相似文献

Films made from sodium caseinate and nanocellulose were prepared by dispersing the fibrils into film forming solutions, casting and drying. Composite films were less transparent and had a more hydrophilic surface than neat sodium caseinate ones. However, the global moisture uptake was almost not affected by filler concentration. Addition of nanocellulose to the neat sodium caseinate films produced an initial increase in the barrier properties to water vapor, and then, it decreases as filler content increased. This was explained in terms of additional detrimental changes (cracks and bubble formation) induced in the morphological structure of the film by the reinforcement.The tensile modulus and strength of composite films increased significantly with increasing cellulose concentrations, while the values of elongation decreased. In the same way it was found that the storage modulus increases considerably with filler addition in the low temperature range (<60 °C), though the effect of temperature on the films performance is even more dramatic, as expected in protein-based materials.  相似文献

The effect of pH-shifting, a process that induces the molten globule state in proteins, on the film-forming potential of soy protein isolate (SPI) at different temperatures was investigated. Partial unfolding at pH 1.5 or 12, followed by refolding at pH 7.0, was performed to alter the protein structure. Glycerin-plasticised films were prepared from pH-treated SPI at ambient temperature (20 °C), or by heating at 50, 60, 70, or 80 °C (30 min). Tensile strength (TS), elongation at break (EAB), water vapour permeability (WVP), protein solubility (pH 3–7), and non-participating proteins of films were analysed, and the film microstructures were examined. The pH12-treated SPI spontaneously formed a transparent, slightly yellowish film at 20 °C, which had the greatest EAB, while pH1.5-treated and native SPIs required preheating at 50 and 70 °C, respectively, to form a film. Heating generally decreased solubility and WVP but increased TS. Films formed from both pH12- and pH1.5-treated SPIs were more elastic (up to 2-fold greater in EAB, < 0.05) than the film formed from untreated SPI despite slightly reduced TS and WVP. Electrophoresis revealed disulphide bonds between A and B subunits of glycinin being a dominant force in pH12- and pH1.5-treated SPI films, while noncovalent forces were abundant in untreated SPI films. The pH12-treated SPI film consisted of more interactive protein strands than other SPI films, which seemed to explain its superior elastic properties.  相似文献

Sunflower seed meal protein (SP) films were prepared using various plasticizers, cross-linking agents, Cloisite Na+ or red algae, and their physical properties, such as tensile strength (TS), elongation at break (E), and water vapor permeability (WVP) were determined. The TS, E, and WVP of the SP film containing sucrose and fructose (2:1) as a plasticizer and cinnamaldehyde as a cross-linking agent were 3.05 MPa, 34.42%, and 2.25 × 10−9 g m/m2 s Pa, respectively. The incorporation of Cloisite Na+ improved the physical properties of the SP film. The TS of the SP/Cloisite Na+ composite film containing 3% Cloisite Na+ increased by 2.19 MPa, and the WVP of the composite film decreased by 0.52 × 10−9 g m/m2 s Pa compared to the SP film. The incorporation of red algae also improved the TS of the SP film. The TS of the SP composite film containing 1.2% red algae increased by 3.82 MPa compared to the SP film. In addition, an SP/red algae composite film containing grapefruit seed extract (GSE) was prepared and used in food packaging. After 12 days of storage, the population of Listeria monocytogenes inoculated on smoked duck meats packed with the SP/red algae composite film containing 1.2% GSE decreased by 1.31 log CFU/g compared to the control packaging. Therefore, these results suggest that SP composite films can be prepared by the addition of red algae to the SP film–forming solution and that the SP/red algae composite film containing GSE can be used as an antimicrobial food packaging material.  相似文献

Sugars are natural plasticizers for food biopolymers and zein is the most important protein of corn. In this research, sugars (fructose, galactose and glucose) were used as plasticizers and the water vapor permeability (WVP), contact angle and microstructure of the zein films were studied. The pure zein film had high WVP and adding of sugars to 0.7 g/g zein caused to decrease of WVP. Films containing galactose had the lowest WVP.All samples had the lowest contact angle with ethanol and the highest contact angle with water. The zein films containing galactose had the highest water contact angle within the plasticized films. The pure zein films and the films containing fructose had higher critical surface tension of wetting (γc) than the films containing glucose and galactose. Adding sugar plasticizer to zein films increased the surface tension of zein films. In the unplasticized zein films, loose structures with a lot of cavities and voids were observed. The films plasticized by fructose had smooth surface and plasticizer particles distributed throughout of the films.  相似文献

Gelatin films derived from beef, pork and fish sources were manufactured by twin-screw, co-rotating extrusion. The effect of extrusion processing parameters, namely; screw speed (100–400 rpm) and temperature (90, 90, 90, 90 °C and 90, 120, 90, 90 °C) on the mechanical and barrier properties of gelatin films were studied. Increasing screw speed up to 300 rpm improved (P < 0.05) tensile strength (TS) and reduced (non-significantly) water vapour permeability (WVP) values for all manufactured gelatin films. However, the WVP of various gelatin film types was reduced (P < 0.05) when a screw speed of 400 rpm was employed. Increasing the speed of extrusion promoted (P < 0.05) increased solubility of films in water. Manufacture of films using a higher temperature profile resulted in films possessing higher puncture strengths (PS), increased water barrier properties with higher water solubility.  相似文献

Chitosan films incorporated with various concentrations of gallic acid were prepared and investigated for antimicrobial, mechanical, physical and structural properties. Four bacterial strains that commonly contaminate food products were chosen as target bacteria to evaluate the antimicrobial activity of the prepared gallic acid–chitosan films. The incorporation of gallic acid significantly increased the antimicrobial activities of the films against Escherichia coli, Salmonella typhimurium, Listeria innocua and Bacillus subtilis. Chitosan films incorporated with 1.5 g/100 g gallic acid showed the strongest antimicrobial activity. It was also found that tensile strength (TS) of chitosan film was significantly increased when incorporating 0.5 g/100 g gallic acid. Inclusion of 0.5 g/100 g gallic acid also significantly decreased water vapor permeability (WVP) and oxygen permeability (OP). Microstructure of the films was investigated by Fourier transform infrared spectroscopy (FT-IR) and scanning electron microscopy (SEM) and it was found that gallic acid was dispersed homogenously into the chitosan matrix.  相似文献

The objective of this study was to characterize physical properties including thickness, colour, water vapour sorption kinetics and isotherms, water vapour permeability, tensile strength, elongation at break, and microstructure of composite films prepared by casting sodium alginate and low methoxy pectin at proportions of: 100–0%, 75–25%, 50–50%, 25–75%, and 0–100%. Combination of both polysaccharides gave continuous, homogenous and transparent films. All of analyzed films reached their state of equilibrium within the 24 h of adsorption time. Water sorption isotherms for all films had a sigmoidal shape and were not influenced by the film composition. Sorption kinetics and isotherms indicated hydrophilic character of investigated films. Statistically significant (p < 0.001) correlations were found between colour, water vapour permeability, tensile strength, elongation at break, and chemical composition (alginate and pectin) of composite films. A different internal arrangement was observed as a function of film composition.  相似文献

Properties of sodium alginate films were modified using two different methods of CaCl2 treatment, i.e. the direct addition of CaCl2 into film making solution (mixing films) and the immersion of alginate films into CaCl2 solutions (immersion films), and their treatment effects on tensile strength (TS), percentage elongation at break (E), water vapor permeability (WVP), and water solubility (WS) of the films were investigated. TS and E of the mixing films were not changed considerably, but those of the immersion films changed considerably with significant (P<0.05) increase in TS and decrease in E. WVP of the immersion films decreased significantly (P<0.05), but that of the mixing films did not decreased. Water resistance measured by WS was not improved with the mixing films, but the alginate films became water resistant when they treated by immersing in higher than 2 g/100 ml CaCl2 solutions. Water adsorption by the films also decreased in the immersion films. Swelling ratio (SR) of the immersion film decreased with temperature without affecting WS of the films.  相似文献

The effect of murta (Ugni molinae Turcz) leaves extract on water vapor permeability (WVP) and gas permeability (GP) of carboxymethylcellulose (CMC)-based films was studied. Two ecotypes of murta leaves “Soloyo Grande” (SG) and “Soloyo Chico” (SC), were analyzed for their composition (HPLC-MS) and SC extract revealed a higher concentration of flavonols than the SG extract. The film forming solution was prepared with 2 g of CMC, 0.4 ml of glycerol and 0.5 ml of sunflower oil in 100 ml of water (Control), 50 ml of water and 50 ml of each exctract (SC50 or SG50) and 100 ml of each extract (SC 100 or SG 100). The addition of murta leaves extract modified the WVP and GP of the films. The WVP decreased significantly (P?0.05) with the incorporation of SG extract in the film but not with the SC extract (P>0.05). The CO2 and O2 permeability of the films were influenced by the kind and concentration of murta leaves extract used. The CO2 permeability, with SG extract was higher than without extract (P?0.05) and with SC extract was not modified. The O2 permeability with murta leaves extract were lower than without extract. Therefore, it is possible to consider that films with SC acts only as barrier to the oxygen, but with SG the water vapor and gas barrier properties were modified, being more permeable to the CO2 and acting as barrier to O2 and water vapor.  相似文献

Sodium caseinate/tung oil composite films were prepared through emulsification in order to reduce the water affinity of the protein-based film. Addition of lipid leads to milky films, resulting in a sharp increase in opacity. Uneven lipid distribution was evidenced by SEM in films prepared with 15% tung oil, which most likely arose from the limited dispersion capability of the lipids. Tung oil content also affects the film mechanical response, increasing tensile strength and elastic modulus but decreasing deformability. Contact angle measurements, besides water absorption tests, confirm lower hydrophilicity of the samples. However, tung oil incorporation into the caseinate matrix did not affect significantly the WVP at any of the three levels used, probably due to pore formation. The advantages of cross-linking composite films using heat were also addressed.  相似文献
