Twelve lactating crossbred goats (Sanan × Beetal) in early lactation were divided into two groups of six each. Group I was fed on fresh berseem fodder ( Trifolium alexandrinum ), whereas group II was fed on berseem fodder and concentrate mixture in 1 : 1 ratio to fulfil their nutritional requirements as per National Research Council (1981 ). Feed intake and milk yield were recorded daily, and milk samples were collected on 0, 30, 45 and 60 days of experimental feeding for the estimation of fat, vaccenic acid, conjugated linoleic acid (CLA), vitamins A and E, and total antioxidant activity. There was no effect ( P >  0.05) of dietary treatments on daily as well as total milk yield and milk fat, solids-not-fat and total solids, although average total CLA (mg/g fat) content in milk during the trial was higher( P <  0.01) in group I (18.92) in comparison to group II (10.94). Vitamin A content averaged 0.46 and 0.27 µg/mL and vitamin E, 1.20 and 1.38 µg/mL in milk of groups I and II, respectively, were higher in the berseem-fed group ( P <  0.01) and total antioxidant activity of milk was also higher ( P <  0.01) in group I than in group II.  相似文献

Krk cheese is a hard, full-fat cheese made from raw sheep's milk, characterized by a delicate, full and strong flavour. The aim of this study was to determine farm influence on the chemical composition of sheep's milk for Krk cheese production, and the chemical characteristics of Krk cheese during ripening. Gross composition of the milk used complies with the average sheep's milk composition from the Croatian Adriatic region. During ripening, fat, protein, salt content and lactic acid concentration increased ( P <  0.01), as well as the water-soluble nitrogen fraction and the 12%-trichloroacetic-acid-soluble nitrogen fraction ( P <  0.05). Degradation of β-casein could be an indicator of the ripening quality of Krk cheese.  相似文献

Beverages made from goat cheese whey, flavoured with strawberry and peach pulp, were processed and submitted to physicochemical analysis and affective tests. The beverages exhibited similar values with respect to all the analyses of the proximate composition and little variation in pH and titratable acidity during refrigerated storage. They also showed low caloric value. For colour, aroma and consistency acceptability, there was no significant difference ( P > 0.05) among peach and strawberry flavoured samples. The flavour acceptability was higher for the strawberry beverage than for the peach one ( P = 0.05). A positive purchase intent for strawberry flavoured beverage was reported by 76% of the consumers, while 50% affirmed a similar intention for the peach-flavoured product. The beverages produced showed potential for commercialization, serving as an additional alternative product derived from goat milk, with minimal additional cost to the dairy plant.  相似文献

Cheese is a biologically and biochemically dynamic product in which a series of sequential changes take place throughout its manufacture and subsequent ripening. These changes improve nutritional value, body and texture and enrich the flavour. Conjugated linoleic acids (CLA), a group of naturally occurring geometrical and positional isomers of linoleic acid, are present in high concentration in dairy products and fat from ruminant animals. Six isomers of CLA have been separated and identified by gas liquid chromatography (GLC) analysis. Buffalo milk had higher 9c,11t-18:2 isomer (86.14%). Total CLA concentration of CLA isomers was increased significantly ( P <  0.05) on conversion of milk into cheese and subsequent storage. The concentration of the 9c,11t-18:2 isomer was decreased significantly ( P <  0.05), whereas that of trans , trans -isomers (12,14-; 11,13-; 10,12-; 9,11-) increased significantly ( P <  0.05).  相似文献

Complementary blends were prepared from mixtures of malted or unmalted millet and soybean. The malted or raw millet was fortified with malted or raw soybean grain mixture at two ratios: 50% (an equal amount to the millet) or 30%. The mixture was extruded in a single screw 600 Jr. insta pro-extruder. The extruded mixtures were analysed for nutrient and sensory qualities. The crude protein was least (18.3%) in unmalted mixtures of 70% millet and 30% soybean (RM70RS30). A significantly (P<0.05) higher protein value of 28.9% was observed in malted mixtures (MM50MS50). Extruded combinations of 50% raw millet and 50% raw soybean (RM50RS50) had a significantly (P<0.05) higher gross energy value (1819 kJ/100 g) than other mixtures. There were significant differences between the calcium, phosphorus, magnesium, sodium and zinc levels of the mixtures. The mixtures were relatively high in minerals. Lysine and methionine content in the mixtures varied respectively, from 4.39 g/100 g protein in RM70RS30 to 5.30 g/100 g protein in MM50MS50 and 1.28 g/100 g protein in RM5ORS5O to 12 17 g/100 g−1 protein in MM70MS30. The sensory evaluation showed that taste, flavour and texture increased with a greater proportion of malted ingredients, but the colour became unacceptable. While increase in the level of soybean improved the chemical values, mixtures with less soybean were more acceptable.  相似文献

The relationships between meat pH, sensory tenderness and acceptability for Podolian (P) and Limousine  ×  Podolian (LP) beef were investigated. Negative linear relationships between pH measured at each of 1, 24 and 48 h post mortem and sensory tenderness were found at 2 ( P <  0.001) and 7 days of ageing ( P <  0.05). At 7 days of ageing, sensory tenderness was higher ( P <  0.001) than that at 2 days of ageing. LP beef showed higher sensory tenderness ( P <  0.001) than P. The regression between perceived tenderness and acceptability was separately calculated for LP and P beef. Both were significant ( P <  0.01 and P <  0.001, respectively). In addition, a significant difference was observed between the two regression coefficients ( P <  0.05), indicating that the two variables were more associated for P than LP beef.

PRACTICAL APPLICATIONS


Meat acceptability is obviously related to tenderness. More interestingly, other factors (e.g., familiarity, age, etc.) can affect product acceptability. In fact, the same product can be perceived by some consumers as being tough, whereas it can be considered tender by others, corresponding to low and high levels of acceptability, respectively. Therefore, along with treatments aimed to increase tenderness (e.g., ageing), information about the product, age and familiarity of consumers, etc., can increase the acceptability of meats, which are less tender because of their intrinsic properties.  相似文献

White cheese samples were manufactured from bovine milk using three different commercial direct vat starter cultures (DVS-1, -2 and -3) and a lyophilized culture, and ripened at 4 ± 1°C for 90 days. The composition, titratable acidity and ripening indices of the cheese samples were determined on the 2nd, 30th, 60th and 90th days of ripening. The ratios of total solids, protein and fat were higher for cheeses manufactured using DVS-2 and lyophilized cultures but the titratable acidity in cheese produced using DVS-3 and lyophilized cultures was higher (P < 0.01). The mean value of the ripening indices of the cheese produced using the lyophilized culture was lower than the cheeses produced with added DVS cultures (P < 0.05). The total solids, ash, salt ratios, titratable acidity and ripening indices values increased for all types of white cheeses during ripening (P < 0.05).  相似文献

A new UV–Vis absorbance spectrum method was proposed to evaluate the heat treatment of milk and milk-like systems. The method was based on the immediate UV absorbance development when heating amino-sugar mixtures, and validated by correlating the absorbance values of milk-like systems, processed at various temperatures and holding times, with furosine content determined using standardized HPLC analysis. The UV method correlated well with the furosine method under mild heating conditions with R 2   =   0.9569 ( P  <   0.001) and 0.9594 ( P  <   0.01) respectively. This method allowed an efficient discrimination of commercial milk heat treatment. The paper offers the possibility to develop an easy, inexpensive and sensitive way to control the milk protein quality.  相似文献

Twenty-four Murrah buffaloes (60 days pre-partum) were divided into four equal groups (T 1 , T 2 , T 3 and T 4 ) and were supplemented with 0, 1000, 1500 and 2000 IU α-tocopheryl acetate per day up to 30 days of lactation, and half of these doses from 30 to 60 days of lactation. Milk samples collected fortnightly were analysed for vitamin E, fat, and development of oxidized flavour, with and without copper addition by a panel of judges, and chemically by the thiobarbituric acid test. Scores for oxidized flavour ranged from 0 to 10 with 0–4 as definite, 5–7 as light and 8–10 having no defect. The α-tocopherol content in milk fat (µg/g) averaged 20.55, 25.56, 29.98 and 31.38 in T 1 , T 2 , T 3 and T 4 groups, respectively. The addition of Cu in the milk significantly increased milk fat oxidation. Better stability of milk in T 3 and T 4 groups was observed, which might be due to a higher level of milk α-tocopherol. Addition of 1500 IU α-tocopheryl acetate in the diet of buffaloes helped in improving the oxidative stability of milk.  相似文献

Two trials were carried out to produce low fat Ras cheese with acceptable organoleptic properties. In the first trial, cheese milk containing 1%, 1·5% or 2% fat and including CMC or carrageenan at levels of 0·1% and 0·02%, respectively, was used in cheese making. Control cheese was also made from milk containing 4% fat. Cheese without added stabilizers and containing lower fat levels than the control cheese had a flat flavour and tough rubbery body throughout ripening. The addition of both stabilizers improved the body characteristics of low fat cheese but did not affect flavour development in cheeses made from 1% and 1·5% fat milk and only slightly enhanced flavour intensity in cheese made from 2% fat milk.In the second trial, cheese milk of 1% or 1·5% fat with added 0·02% carrageenan was used for the preparation of Ras cheese curd. The resultant curd was then mixed with 2% of a starter culture containing S. diacetylactis and L. casei with 10 ml of 0·05% MnCl2 solution for each kilogram of curd or reduced glutathione at a level of 100 mg/kg curd. The additives enhanced flavour intensity, improved body characteristics and accelerated the formation of both soluble nitrogenous compounds and Free Volatile Fatty Acids.  相似文献

Relationships between total bulk milk somatic cell score (SCS) and milk fat and protein contents and acidity were investigated in the Khorasan Razavi Province, a region that contributes 6.83% of total milk production in Iran. A total of 1476 samples were analysed. Data were obtained by randomly collecting 123 samples of bulk tank milk from 41 dairy farms during April 2006 to March 2007, every month. Milk was analysed for titratable acidity, protein and fat contents and somatic cell counts (direct microscopic cell count and with Somatos, Russia). Microscopic and Somatos somatic cell counts were comparable. Results showed that the season of raw milk production did not have a significant effect on acidity. Milk fat content increased gradually from spring to winter and there were significant differences ( P <  0.05) between spring and other seasons. Higher levels of milk protein fractions were observed during the autumn and winter than in other seasons. The highest total bulk milk somatic cell counts were observed in July. Total bulk milk SCS had significant effects ( P <  0.05) on acidity and fat and protein contents. Moreover, the level of acidity and fat in milk decreased with increasing SCS. A significant positive relationship was observed between total bulk milk SCS and the protein content of milk. Elevated SCS were associated with lowered milk quality in Holsteins in the Khorasan Razavi Province.  相似文献

The objective of the study was to analyze the functional and nutritional properties of enzymatically hydrolyzed whey protein concentrate (WPC) and to formulate a beverage mix. WPC hydrolysates were produced using fungal protease and papain, at time intervals of 20, 40 and 60 min and were analyzed for proximate composition and functional properties. A beverage was formulated with hydrolyzed WPC, skim milk powder, cocoa, liquid glucose, sugar and vegetable fat and analyzed for physicochemical properties, sensory attributes and keeping quality. Results revealed that the protein content of WPC was 75.6% and decreased slightly on enzyme treatment (69.6%). The water absorption capacity of WPC was 10 ml/100 g and increased in enzyme treated samples from 16 to 34 ml/100 g with increase in the time of hydrolysis. Emulsion capacity (45 ml of oil/g of control WPC) showed a decreasing trend with increasing time of hydrolysis. Enzyme treatment slightly increased the foam capacity in three samples but lowered foam stability in all. The gel filtration pattern of enzyme treated samples showed an increase in low molecular weight fractions. The amino acid profile showed higher content of methionine in samples treated with enzymes, compared to the control. The in vitro protein digestibility of untreated WPC was 25% and increased in all treated samples to varying degrees (69–70%). Formulated beverage had 52% protein, 10% fat and 6.6% ash. There were no significant differences in the sensory attributes of formulated and commercial beverage. The formulated beverage could be stored well in a PET container for 30 days.  相似文献

In this work, the effects of increasing amounts of 3 plant oils in diets on the fatty acid (FA) profile of goat milk were studied. The study consisted of 3 experiments, one per oil tested (linseed oil, LO; high oleic sunflower oil, HOSFO; and regular sunflower oil, RSFO). The 3 experiments were conducted successively on 12 Malagueña goats, which were assigned at random to 1 of 4 treatments: 0, 30, 48, and 66 (H) g of added oil/d. A basal diet made of alfalfa hay and pelleted concentrate (33:67) was used in all of the experiments. For each animal, milk samples collected after 15 d on treatments were analyzed for fat, protein, lactose, and FA composition, whereas individual milk yield was measured the last 3 d of each experiment. Oil supplementation affected neither dry matter intake nor milk production traits. Increasing the oil supplementation decreased the content of saturated FA (especially 16:0) in milk fat and increased mono- and polyunsaturated FA in a linear manner. Vaccenic acid content linearly increased with the oil supplementation by 370, 217, and 634% to 5.32, 2.66, and 5.09 g/100 g of total FA methyl esters with the H diet in LO, HOSFO, and RSFO experiments, respectively. Rumenic acid content linearly increased with LO and RSFO supplementation by 298 and 354% from 0.53 and 0.41 g/100 g of total FA methyl esters with the 0 g of added oil/d diet. The content of trans-10-18:1 was not affected by LO supplementation but showed an increasing linear trend with HOSFO supplementation and linearly increased with RSFO supplementation. The ratio of n-6 to n-3 polyunsaturated FA in milk fat was decreased by about 70% with the H diet in the LO experiment and it was increased by 54 and 82% with the H diet in the HOSFO and RSFO experiments. In conclusion, LO supplementation in this work seemed to be the most favorable alternative compared with HOSFO or RSFO supplementation.  相似文献

The influence of milk processing and ingredients on the sensory properties of white coffee beverages has, as yet, not been thoroughly investigated, so in this study analysed milk products processed in a defined manner were added to a standardized, fresh coffee beverage; the resulting odour, taste and retronasal odour perception were measured by intensity tests, and selected volatiles were analysed by static headspace gas chromatography/mass spectrometry. After adding pasteurized consumers’ milk, the effects of a different fat content (3.5 and 1.5%) and fat dispersion were studied. The milk with the lower fat content and with smaller fat globules, resulting from double homogenization (each 250/50 bar), induced a more intense coffee-related retronasal odour perception, whereas the milk-related impression was nearly the same. The addition of casein increased the creamy and milky retronasal odour perception and reduced the coffee-related taste and retronasal odour. These correlations may result in a custom-made development of milky coffee beverages controlled in their nasal and retronasal odour and taste by the defined processing of the milk component. With instrumental analysis it was observable that the effect of the addition of twice-homogenized, twice-pasteurized low-fat milk and of the addition of whole milk was similar. In both cases more volatiles were released from the beverage than with the addition of low-fat milk that was homogenized once. This is an unexpected result, because the whole milk has a higher fat content than the low-fat milk and therefore a greater retention of the flavour compounds was expected. Is it possible that the flavour compounds are not dissolved in fat and that interactions happen only with fat globule membrane constituents?  相似文献

The sugar profile of wort from laboratory malted barley, malted sorghum, unmalted barley and unmalted sorghum grains mashed with commercial enzyme preparations were studied. Similar levels of glucose to maltose (1:7) were observed in wort of malted barley and malted sorghum. Mashing barley or sorghum grains with commercial enzymes changed the glucose to maltose ratio in both worts, with a greater change in wort from sorghum grains. Although hydrolysis with commercial enzymes released more glucose from maltose in sorghum wort, the same treatment retained more maltose in barley wort. Adding malted barley to sorghum grains mashed with commercial enzymes restored the glucose to maltose ratio in sorghum mash. Fermentation of wort produced from all barley malt (ABM) mash and commercial enzyme/barley malt/sorghum adjunct (CEBMSA) mash of similar wort gravity was also studied. ABM and CEBMSA worts exhibited similar glucose to maltose ratios and similar amino acid spectra. However, ABM released more individual amino acids and five times more proline than wort from commercial enzyme/barley malt/sorghum adjunct. ABM produced 27% more glucose and 7% more maltose than CEBMSA. After fermentation, ABM mash produced 9.45% ABV whilst commercial enzyme/barley malt/sorghum adjunct mash produced 9.06% ABV. Soft ice-cream samples were prepared with different proportions of cream and skimmed milk powder (SMP) and were examined for quality by physico-chemical parameters and sensory attributes. The specific proportions of cream and SMP were designed using the central composite rotatable design (CCRD). Response surface analysis indicated that sensory flavour, texture and overall acceptability (OAA) scores of soft ice-cream varied from 7.12 to 8.86, 6.66 to 8.03 and 6.90 to 8.45, respectively. The differences in the sensory scores for respective attributes were highly significant ( P ≤  0.01). The soft ice-cream containing a minimum level of 3.24% cream and 4.94% SMP resulted in a product having a minimum of 4.3% fat, 5.7% lactose and 33% total solids, with a minimum OAA score of 8. The derived mathematical second-order polynomial models against cream (X) and SMP (Y) were found to be adequate as coefficients of multiple determinants ( R 2) were more than 80% except for melting resistance.  相似文献

The effects on wort quality when mashing with unmalted sorghum (0–100%) and malted barley (100–0%) in combination with industrial enzymes were evaluated. A mashing program with temperature stands at 50°C, 95°C and 60°C was used. Different combinations of commercial enzymes were evaluated. A heat stable α‐amylase was found to be essential for efficient saccharification. The inclusion of a fungal α‐amylase in mashes with a high sorghum content improved filtration rates to that of 100% malted barley mashes. Addition of a bacterial protease increased the amount of nitrogen solubilisation and peptide degradation. An increase of the relative proportion of sorghum in the grist resulted in decreases in wort filtration, colour, viscosity, attenuation limit, free amino nitrogen, high molecular weight nitrogen, and a corresponding increase in pH (p < 0.01). Overall the addition of malted barley in small proportions to unmalted sorghum mashes together with commercial enzymes was found to improve the potential for brewing a high quality lager beer from unmalted sorghum.  相似文献

We investigated the main sterols, phytosterols, and the α- and γ-tocopherol content in donkey milk during the first 2 mo of lactation. Cholesterol was the main sterol in milk (mean ± standard deviation = 0.97 ± 0.443 g/100 g of fat). Lanosterol was the main minor sterol of animal origin, followed by desmosterol (0.003 ± 0.001 and 0.001 ± 0.001 g/100 g of fat, respectively). Of the phytosterols, β-sitosterol was the main sterol of vegetal origin in donkey milk (0.005 ± 0.002 g/100 g of fat), but lower levels of campesterol, brassicasterol, and stigmasterol were also recorded. Mean levels of α- and γ-tocopherol were 0.01 ± 0.007 and 0.003 ± 0.001 g/100 g of fat, respectively. We observed no significant changes in sterol or tocopherol content during the first 2 mo of lactation. The presence of lanosterol in donkey milk is of particular interest, because lanosterol is a potential drug and has important physiological effects. The presence of phytosterols, which are considered nutraceutical molecules, enhances the nutritional quality of donkey milk fat for consumers.  相似文献

The effects of fat replacers (Simplesse® D-100, N-Lite D, and inulin) on the melting characteristics, overruns, hardness, rheological parameters and sensory attributes of reduced (RF, 60.0 g/kg), low (LF, 40.0 g/kg), and nonfat (NF, 1.0 g/kg) ice creams were investigated. The magnitudes of the melting rates were in the order RF>LF>NF for samples that contained Simplesse® D-100 or inulin, but the reverse order was found for samples with N-Lite D. The nonfat ice creams had lowest overrun values of around 10%. Inulin-containing ice creams possessed higher overrun values than others ( P  > 0.05). The use of fat replacer decreased the hardness of ice creams. All ice cream samples showed pseudoplastic (shear-thinning) behavior. The addition of N-Lite D and inulin decreased the flow behaviour index of ice cream samples. The reduced and low fat ice cream samples were rated as similar to the control by a sensory panel. On the other hand, no correlations ( P  > 0.05) were observed between rheological parameters and sensory texture and mouthfeel.  相似文献
