Listán blanco and Gual are two white grape varieties grown in Spain (Canary Islands) and Gual is also grown in Portugal (Madeira Island). Wine quality could be improved by exploiting the varietal characteristics present in grapes as aroma precursors. At the present time, the enologic potential of these varieties has not yet been studied. Aroma precursors in musts and skins, and free volatiles in wines were determined in samples of both varieties. Aroma precursors of must and skins were isolated by absorption on XAD-2 resin and the aglycone liberated by means of acid hydrolysis. Free volatiles from wines and from aroma precursors were extracted with dichloromethane and then analysed by gas chromatography-mass spectrometry (GC–MS). Among the aroma precursors analysed, only α-terpineol, linalool and linalool oxides, 4-allyl-2,6-dimethoxyphenol, 2-methoxy-4-vinylphenol, 4-hydroxybenzaldehyde, vanillin and benzyl alcohol showed contents in grapes comparable to the levels observed in wine volatile compounds.  相似文献

This paper reports on a quick and simple method for reliably quantifying aroma precursors in grape extract, musts and wines of different grape varieties. The method, which is intended mainly for use by wineries and analytical laboratories, is based on isolation of terpenyl-β-d-glycosides through selective retention on a C18 reversed-phase column, followed by hydrolysis to liberate terpenes, yielding an equimolar proportion of free aglycons and glucose. Sugar was measured using an enzyme analysis kit. Aroma precursors were quantified using this method, in a range of crushed grapes, musts and wines produced in the Castilla La Mancha region. The method was also applied on a larger scale in a wine analytical laboratory, to chart the behavior of terpenyl glycosides during the final stages of ripening of grapes from different viticulture Spanish regions.  相似文献

Free and glycosidically-bound volatile compounds of must, skin and wine from Muscat “a petit grains” cultivated in Spain were determined, and the effect of different skin contact times on the aroma composition and sensory characteristics of wines was investigated. Must and wine had a large quantity of mono-terpenes, mainly linalool, geraniol, and nerol. The most abundant glycosylated fraction was the mono and poly-oxygenated terpenes, followed by benzene compounds and norisoprenoids. Must skin contact at 18 °C during 15 and 23 h produced an important increase in the free and bound varietal compounds, which suggests the use of glycosidic enzymes, together with skin maceration, to increase wine aroma. From a sensory standpoint, must skin contact was very positive, since it brought about an increase in the fresh and fruity characteristic of the wines, and they also had more body.  相似文献

Aroma components of white wine made from cv. Muscat of Bornova, a natives grape variety of Vitis vinifera grown in Turkey, and the effect of skin contact treatment (15 °C, 6 and 12 h) on the aromatic profile of this wine were investigated. Aroma components were extracted with dichloromethane and then analysed by gas chromatography(GC)–flame ionisation detection and GC–mass spectrometry. A total of 72 components were identified and quantified. Skin contact treatment increased the amount of total aroma components. Wine produced with 6 h skin contact was the most preferred. From the 72 compounds identified, β-damascenone, ethyl hexanoate, ethyl butanoate, isoamyl acetate, 2-phenyl ethyl acetate, linalool, geraniol, and 2-phenyl ethanol were impact odourants of Muscat of Bornova wine on the basis of odour activity values (OAVs).  相似文献

The influence of yeast on the aroma of Sauvignon Blanc wine   总被引:1,自引:0,他引:1  
The main objective of this study was to investigate the effect of different Saccharomyces cerevisiae wine yeast strains on the concentration of aroma-enhancing volatile thiols and fermentation metabolites in Sauvignon Blanc wine. Seven commercial wine yeast strains were selected based on their putative ability to modulate the concentrations of the fruity volatile thiols, 4-mercapto-4-methylpentan-2-one (4MMP), 3-mercapto-hexanol (3MH) and 3-mercapto-hexylacetate (3MHA). Each of these yeasts was used to produce Sauvignon Blanc wines under controlled conditions, in triplicate, in 20-L quantities. The levels of 4MMP, 3MH and 3MHA in these wines were quantified using the p-hydroxymercuribenzoate method. In addition, a total of 24 volatile yeast-derived fermentation aroma compounds were also quantified using headspace solid-phase microextraction coupled with gas chromatography mass spectrometry (HS-SPME–GC–MS). Formal sensory analysis was conducted by 12 trained assessors and, additionally, a panel of 24 experienced wine industry professionals assessed the wines and ranked them in order of preference. The results indicated that the yeast strains varied significantly in terms of their capabilities to (i) produce volatile thiols and fermentation metabolites; and (ii) to modulate the varietal characters of Sauvignon Blanc wine. Yeast strains that produced the highest levels of volatile thiols were responsible for wines with the highest perceived intensity of fruitiness, and these wines were preferred by the tasting panels. While the ‘green’ characters in Sauvignon Blanc wines can be manipulated through vineyard management, the ‘tropical fruity’ characters appear to be largely dependent on the wine yeast strain used during fermentation. Therefore, the choice of yeast strain offers great potential to modulate wine aroma profiles to definable styles and predetermined consumer market specifications.  相似文献

Vitis vinifera cv. Albariño is an aromatic variety characterised by terpenes present largely as glycosidic flavour precursor compounds, which depends on fermentation to reveal its aromatic varietal potential. Clarified Albariño must containing 250 mg N/L (control) was supplemented with diammonium phosphate to 350 and 450 mg N/L before fermentation with a high-nitrogen-demand wine strain of Saccharomyces cerevisiae (M05). Ammonium supplementation had a significant effect on the chemical composition (titratable acidity and ethanol) and volatile profile of Albariño wines. Varietal compounds in the free fraction (limonene, linalool, α-terpineol, α-ionone and β-damascenone) and bound (limonene, linalool and α-terpineol), as well as most yeast-derived fermentation products (including esters, higher alcohols and volatile acids) were associated with moderate nitrogen concentrations. Free β-ionone, bound geraniol, bound α-ionone, bound β-damascenone and 1-hexanol were associated with high nitrogen concentrations. OAV wines made with moderate nitrogen exhibited a higher total odorant activity, driven by ethyl esters, terpenes and C13-norisoprenoids, resulting in fruity and floral aroma attributes.  相似文献

Grapes from the Vitis vinifera (L.) varieties Ribolla Gialla and Malvasia Istriana were subjected to two skin contact procedures: pomace maceration and whole berry maceration during alcoholic fermentation. Wine free volatile compounds were determined using two extraction techniques coupled to GC; odour activity values were calculated and compared to control wines without skin contact. The highest concentrations of esters and relative fruity impacts were determined in the control wines for both varieties. Pomace maceration was found to be an effective procedure for the extraction of varietal aroma compounds like terpenes, but only in the Malvasia Istriana was their higher impact on floral odour determined. Pomace maceration resulted in higher total phenol and methanol content. Whole berry maceration was less efficient in terpene extraction, and its impact on general wine composition was not so radical. Control wines were chosen as preferred wines for odour and overall impression.  相似文献

In this work, the harvest variability of the varietal composition of Fernão-Pires grape variety was evaluated using a dichloromethane liquid–liquid continuous extraction followed by GC-qMS of the free (F) and potential varietal components (PVC) from the musts across four harvests (1998, 1999, 2000, and 2002). This study showed that Fernão-Pires musts exhibited varietal volatile composition variability along the years. Based on the data obtained, using GC-qMS in tandem with PCA, relationships were established between the varietal volatile composition of the musts and the white wine aroma quality classification conferred by the official wine taster chamber. The results of the volatile analyses were consistent with the wine quality classification, indicating that the wine aroma quality is clearly associated with the musts free varietal volatile composition. On the other hand, the PVC fraction allowed the distinction of the musts according to the composition of potential aroma precursors. The proposed approach can provide information to winemakers concerning the winemaking methodologies that can be implemented to improve the varietal wine aroma quality.  相似文献

The aim was to evaluate the effect of wine addition during manufacturing of dry fermented sausages, in terms of safety aspects (biogenic amine accumulation), aroma profile and sensory characteristics. Three batches of salami were produced: without wine addition and with 7.5% or 15% (v/w) of white wine. The fermented sausages showed characteristics that can increase product diversification. Some of the sensory features (i.e. increased salty perception) can represent an important strategy because of the trend to reduce salt intake for health reasons. The presence of wine immediately reduced the pH and is a source of ethanol, which can have an inhibitory effect against undesirable microflora. The microbiological results observed regarding Enterobacteriaceae and enterococci were encouraging. The addition of wine did not negatively affect the ripening time or increase the presence of biogenic amines. The samples containing wine showed reduced concentrations of putrescine.  相似文献

Cantaloupe and honeydew melon cultivars were processed and stored under a high oxygen passive modified atmosphere packaging (MAP) or reduced oxygen controlled atmosphere (CA; 5 kPa O2 + 10 kPa CO2 and balance N2) for 14 days at 5 °C. Atmosphere did not affect softening rate or soluble solids content and had a negligible effect on colour. Volatile compounds known as flavour-important in melons were extracted using stir bar sorptive extraction (SBSE) and quantified via GC–MS. Acetate esters increased more in MAP than in CA. Non-acetate esters increased markedly in both cultivars and storage types. Alcohols were more abundant in honeydew than in cantaloupe. Aldehydes decreased during storage in both cultivars and storage types. Lower O2 availability under CA conditions likely suppressed some of the esters relevant to the aroma of fresh-cut melon. Results suggest that package O2 levels are more important in determining aroma than other quality attributes of fresh-cut melon, and high O2 levels may be required to reveal desirable aroma compounds.  相似文献

The effects of adding selected amino acids (phenylalanine, alanine, aspartic acid and threonine) to grape juice on the generation of aroma compounds and on amino acid uptake were studied. The fermentation kinetics varied according to the quantities of amino acids added. The fermentations finished more quickly in supplemented juices and their alcoholic content was significantly higher than in the control (p < 0.05). Amino acids were consumed mainly in the first quarter of fermentation. Higher alcohol formation took place at the same time as ethanol formation: with more amino acids present in the medium, more phenyl ethanol (p = 0.01) and benzyl alcohol were formed while isoamyl alcohol production decreased. The contents of isoamyl and phenylethyl acetates, ethyl hexanoate and ethyl octanoate, as well as most fatty acids increased during the fermentation, reaching a maximum for 10% of ethanol; with higher alcoholic contents, their concentrations decreased.  相似文献

This study compared the influence of different cover crops with clean tillage on wine aroma compounds of 5-year-old Cabernet Sauvignon vines. White clover, alfalfa, and tall fescue were used in the vineyard and compared with clean tillage. Aroma compounds of wine were analysed by solid-phase microextraction gas chromatography–mass spectrometry (SPME-GC/MS). Forty-seven volatile compounds were identified and quantified. Wines made from grapes grown with various cover crops had higher levels of aroma compounds. Ethyl acetate, isoamyl acetate, ethyl octanoate, ethyl hexanoate, phenylethyl acetate, isoamyl alcohol, linalool, citronellol, β-damascenone, α-ionone, and 5-amyl-dihydro-2(3H)-furan were the impact odorants of sample wines. Wines from cover crop also had higher contents of these impact odorants than the control. For different cover crops, alfalfa sward yielded the highest levels, followed by the tall fescue treatment. According to the data analysis of aroma compounds and sensory assess, permanent cover crop may have the potential to improve wine quality.  相似文献

This study evaluates the specific impact of isolated yeast strains on the aromatic profile of fermented musts from Prieto Picudo, an autochthonous Castilla y León (Spain) red grape variety with an increasing demand in the local marketplace. For this purpose, the aroma profiles of wines elaborated from Prieto Picudo grapes have been studied by sensory analysis, gas chromatography–olfactometry (GC–O) and gas chromatography–mass spectrometry (GC–MS), with the aim of determining the potential of each strain to generate distinctive varietal and fermentation-derived aromatic compounds. The results have shown that the yeast strain exerts a critical influence on the levels of some fermentative (linear and branched ethyl esters, fatty acids, ethyl phenylacetate) and varietal compounds (4-mercapto-4-methyl-2-pentanone, 3-mercaptohexylacetate, β-damascenone), thus inducing a deep influence on the final aroma of the wine. Combination of both sensory and chemical data arises as a major tool to monitor the different patterns of aroma release and formation from selected yeast strains during the winemaking process.  相似文献

Consumer acceptance testing has been only recently applied in wine research, to assess wine sensory attributes that affect hedonic liking. The aim of this study was to investigate the effect of Saccharomyces yeast co-inoculations on wine volatile composition and sensory profiles, and to determine if differences were sufficient enough to affect consumer acceptance. Fermentations were conducted using two- and three-yeast co-inoculations, and single strains. Yeast inocula differed substantially in volatile thiols and other flavour compounds, and in their sensory properties. Wines from four yeast inocula which showed large sensory differences were subjected to consumer testing by 120 consumers, with differences in overall liking found. Four clusters of consumers were identified, with one group strongly preferring the two-yeast co-inoculated wine with an intermediate sensory profile, while another group favoured the wine made using the three-yeast co-inoculation. This study has demonstrated that the yeast inoculum used to conduct fermentation affects consumer acceptance.  相似文献

Three selected autochthonous and one commercial Saccharomyces cerevisiae strains used as starters for fermentation of the same Gewürztraminer must were compared in terms of their influence on primary and secondary aroma of wine. At the same testing conditions, each strain S. cerevisiae produced individual metabolites in different concentrations and combinations which significantly influenced resulting wine flavour. Higher concentrations of 2-phenylethanol and cis-rose oxide, associated with S. cerevisiae TC-NAX-A, considerably distinguished this strain from the others. Occurrence of these VOCs has important influence on sweet rose-like flavour typical for Gewürztraminer wine. This paper deals with the characterization of chemical substances that directly affect the primary varietal aroma of Gewürztraminer wine, while looking for a tool to produce an original and attractive product in form of suitable autochthonous strain S. cerevisiae.  相似文献

The influence of saliva on aroma release from white and red wines was studied in a model mouth system. Aroma compounds were analysed in the dynamic headspace of wines by solid phase micro extraction/gas chromatography with flame ionization detection. Volatile compounds were identified by solid phase micro extraction/gas chromatography-mass spectrometry, resulting in a total of 43 compounds in white wine and 41 in red wine. The results showed a greater influence of saliva on aroma release in white wine than red wine. In white wine treated with human saliva, esters and fusel alcohols, responsible for fruity and fusel oil odours, were reduced of 32–80%; by contrast, the concentration of 2-phenylethanol and furfural, responsible for rose and toasted almond notes, increased by 27% and by 155%, respectively. In red wine, treated with human saliva, only a few esters decrease, with a reduction of 22–51% due to protein-binding ability of polyphenols that are able to inhibit the activity of the saliva. C-13 norisoprenoids, vitispirane (eucalyptol) and TDN (kerosene), decreased both in white and red wine, showing a comparable variation while, for β-damascenone, the variation was insignificant.  相似文献

This work explores the ability of different yeast strains from different species of the genus Saccharomyces (S. cerevisiae, S. uvarum and S. kudriavzevii) and hybrids between these species to release or form varietal aroma compounds from fractions of grape odourless precursors. The de novo synthesis by the yeasts of some of the varietal aroma compounds was also evaluated. The study has shown that de novo synthesis affects some lipid derivatives, shikimic derivatives and terpenes in all species and hybrids, with some remarkable differences amongst them. The release or formation of aroma compounds from precursors was found to be strongly linked to the yeast or hybrid used, and the triple hybrid S. cerevisiae × S. bayanus × S. kudriavzevii in particular and secondarily the hybrid S. cerevisiae × S. bayanus were highly efficient in the production of most varietal aroma compounds, including γ-lactones, benzenoids, volatile phenols, vanillin derivatives and terpenols. The presence of precursors in the fermenting media caused a surprising levelling effect on the fermentative aroma composition. Altogether, these results suggest that it is possible to modulate wine aroma by employing different yeast species in order to create new wines with different aromatic notes.  相似文献

This study was conducted in order to improve our understanding of how phenolics and aroma compounds change in wine grapes during postharvest dehydration. Pinot noir grapes grown in the Willamette Valley of Oregon were harvested at 22.0 and 24.0 °Brix. Grapes harvested at 22.0 °Brix were divided into three equal lots with one lot immediately used for wine production, and the remaining two lots placed inside an air tunnel with an air speed of 1.0–1.8 m s−1, 38% relative humidity and a temperature of 22 °C. The soluble solids content and weight loss were measured daily and wines were made from grapes when they reached 24.8 and 26.7 °Brix. The soluble solids of grapes increased about 1 °Brix per day; therefore, on the third and fourth day the berries reached the desired concentration; weight loss was 14 and 16%, respectively. Results from berry phenolic analysis indicated that per berry anthocyanin amount remained unchanged during dehydration. The composition of proanthocyanidins isolated from berries changed during dehydration. Volatile compounds in wines made from dehydrated grapes contained more terpenes and norisoprenoids (β-ionone, β-damascenone) when compared to wine made from the original fruit. Wines made from increasingly dehydrated grapes tended to resemble the composition and flavour profile of wines made from grapes left on the vine (i.e. with extended ripening). The results of this study suggest that postharvest flavour changes consistent with changes during fruit ripening can occur in grapes when harvested early and allowed to dehydrate under controlled conditions prior to fermentation.  相似文献
