Cereal-based confectionery products being consumed through whole human life are considered mainly to be a source of carbohydrates, that is energy, although cereals are a rich source of minerals as well. To evaluate some hard biscuits produced in Croatia as a source of different trace elements in nutrition, in this study Zn and Cu contents were determined in classic wheat flour biscuits and in dietetic biscuits enriched with whole wheat grain flour or whole wheat grain grits, soya flour and skimmed milk. Zn was determined by flame atomic absorption spectrometry (AAS); Cu was determined by inductively coupled plasma atomic emission spectroscopy (ICP-AES). The results show that the Zn content in different kinds of biscuits ranges from 5.89 up to 17.64 mg/kg and the Cu content ranges from 1.15 up to 2.79 mg/kg depending on the type of wheat milling products and mineral content of other ingredients used. Enriched dietetic biscuits produced from wheat flour type 850 and whole wheat grain flour and/or soya flour and skimmed milk were almost 200% and 150% higher in Zn and Cu, respectively, in comparison to classic white wheat flour biscuits and can be considered as good sources of Zn and Cu in nutrition.  相似文献

To evaluate some wheat flour based hard biscuits produced in Croatia with regard to their Fe and Mn contents and thereby their functionality, Fe and Mn are determined by cold-vapor atomic absorption spectrometry (CVAAS) in seven biscuits: classic white wheat flour biscuits and in dietetic biscuits enriched with whole wheat grain flour or whole wheat grain grits, soya flour and milk. Presented data show that Fe contents in seven analyzed biscuits range from 9.32 up to 24.80 mg/kg while Mn contents range from 3.76-16.37 mg/kg depending on type and share of cereal milling products and mineral content of other raw materials used. Thus, enriched biscuits produced from wheat flour type 850 and whole wheat grain flour, having the highest concentrations of Fe and Mn, were about 150% and 250%, respectively, richer in those elements in comparison with classic white flour biscuits of Petit Beurre type. Data show that wheat flour based hard biscuits, particularly enriched biscuits, can be considered as a good additional source of Fe and Mn in diets.  相似文献

With the aim to develop nutritionally and functionally improved biscuits, standard wheat flour based recipe was supplemented with inulin (Raftilin) (10.5%) in combination with one of the following raw materials: soy flour, amaranth, carob (24.5%), apple fibre or oat fibre (16.5%). Various nutritional parameters such as proteins, fat, ash, carbohydrates total minerals, protein digestibility and energy value were determined in modified biscuits. Dietary fibre content, polyphenolic content and bioavailability and antioxidative activity were also assessed in the view of estimating the functionality of investigated samples. In order to evaluate the impact of technological procedure (baking) on analysed parameters, all experiments were conducted in dough samples as well. Supplementation with soy flour resulted in significant increase (p < 0.05) in protein content and digestibility (from 10.04 to 14.49 mg/100 g and from 68.9% to 81.5%, respectively). The increase of total dietary fibre content in relation to the reference sample ranged from 30.9% (sample with amaranth) to 130.6% (sample enriched with oat fibre). Best results regarding total phenolic content and antioxidative activity were achieved by incorporation of carob and apple fibre into the reference sample. Supplementation with inulin resulted in significant decrease of the total energy value of modified biscuits (from 445 to 412 kcal/100 g dry matter).  相似文献

Casein and soybean are superior quality proteins; however, these are known to inhibit mineral absorption. These investigations were aimed at enzymatic modification of these proteins and to study their effect on mineral bioaccessibility. Casein and soybean proteins were hydrolyzed with alcalase and trypsin individually under optimum conditions. The protein hydrolysates, prepared with different degrees of hydrolysis, were freeze dried, fortified with either iron or zinc and analyzed for bioaccessible minerals in vitro. Proteolytic hydrolysis enhanced the bioaccessibility of iron and zinc in proportion to the degree of hydrolysis. Tryptic hydrolysis enhanced the bioaccessible iron from 1–4% in casein and from 1.3–3.3% in soybean. Alcalase hydrolysis showed a comparatively higher enhancement with both the proteins. Tryptic hydrolysis enhanced zinc bioaccessibity by 3-fold in casein and alcalase hydrolysis enhanced by 2- to 2.5-fold. In soybean, dephytinization showed a synergistic effect. In conclusion, enzymatic hydrolysis of proteins looks promising for enhancing bioaccessibility of minerals in protein matrices.  相似文献

Abstract

Plant-based foods gain more importance since they play a key role in sustainable, low-meat and healthy diets. In developing countries, these food products, especially legumes and cereals, are important staple foods. Nevertheless, the question arises on how efficient they are to deliver minerals and if it is useful to encourage their consumption to reduce the prevalence of mineral deficiencies? This review paper focuses on the discrepancy between the mineral content and the amount of minerals that can be released and absorbed from plant-based foods during human digestion which can be attributed to several inherent factors such as the presence of mineral antinutrients (phytic acid, polyphenols and dietary fiber) and physical barriers (surrounding macronutrients and cell wall). Further, this review paper summarizes the effects of different processing techniques (milling, soaking, dehulling, fermentation, germination and thermal processing) on mineral bioaccessibility and bioavailability of plant-based foods. The positive impact of these techniques mostly relies on the fact that antinutrients levels are reduced due to removal of fractions rich in antinutrients and/or due to their leaching into the processing liquid. Although processing can have a positive effect, it also can induce leaching out of minerals and a reduced mineral bioaccessibility and bioavailability.  相似文献

A total of 134 samples, consisting of 58 wheat flour, 40 instant noodle and 36 biscuits, were analysed for the presence of deoxynivalenol (DON). The samples were obtained from retail markets of the city of São Paulo during the period 2010–2014. DON was determined by high performance liquid chromatography with ultraviolet detection and immunoaffinity sample clean-up. Method validation followed international guidelines. The LOD and LOQ were 60 and 200 µg kg?1, respectively, considering the three different types of samples analysed. The lowest recovery found in this study was 91.8% with RSD 4.5% for instant noodles. DON was detected in 91.4%, 97.5% and 97.2% of samples wheat flour, instant noodles and biscuits, respectively, resulting in a total of 94.8% with levels ranging from LOD to 1720.0 µg kg?1.  相似文献

The aim of this work was to assess the influence of high hydrostatic pressure on antioxidant capacity, mineral and starch bioaccessibility of a non conventional food: “algarrobo” Prosopis chilensis seed. The algarrobo seed was pressurized at 500 MPa during 2, 4, 8 and 10 min. The antioxidant activity, mineral and starch content and bioaccessibility of algarrobo samples were significantly affected by the processing and digestion conditions. All treatments increased the bioaccessibility of the antioxidant activity (IC50), minerals (dialysis and solubility) and starch (resistant and digestible) compared to the untreated sample. Bioaccessibility of calcium, iron and zinc in the treated sample for 500 MPA at 10 min, expressed as percentage solubility, was several-fold higher (three, three and five times, respectively) than in the untreated sample. Similar effect was observed in IC50 value, algarrobo seed untreated sample exhibited the lowest antioxidant activity (0.11 ± 0.005 mg/ml), and followed by all treated samples (500 MPa at 2, 4, 8 and 10 min) which showed the strongest activity.In summary, the antioxidant capacity, mineral and starch content of the seed may be underestimated in the literature because the extraction solvents usually used do not allow a complete release of antioxidant compounds and, additionally, non-extractable polyphenols with a high antioxidant capacity are ignored. This correspondingly applies to the starch and mineral content. On the other hand, the analysis of in vitro digestive enzymatic extracts suggests that the antioxidant activity, minerals and starch of seed in the human gut may be higher than what might be expected from literature data based on measurements of aqueous-organic extracts.  相似文献

Ginger nut biscuits are popular traditional biscuits which contain honey. In order to improve their nutritive profile and functionality, standard formulation based on wheat flour was substituted with buckwheat flour at three levels (30%, 40%, 50%). The quality attributes (chemical composition, microelements, bioactive compounds (total polyphenols, rutin, quercetin), antioxidative potential, textural and sensory properties) were compared to control biscuit (based on wheat flour) and biscuits substituted with rye at the same levels, since rye is used as an ingredient which improves the quality of ginger nut biscuits. Substitution with buckwheat flour resulted in a significant increase (p < 0.05) in protein, Zn, total polyphenols, antioxidative and chelating activity. Total dietary fibre, Cu, Mn and Fe contents also increased but did not exceed those in rye substituted biscuits. Consumption of 100 g of enriched biscuits could contribute to reaching ≈18–22% (buckwheat) and 16–17% (rye) of the estimated daily average total polyphenols intake, respectively. With the contents of rutin and quercetin at 3.96–6.57 mg/100 g d.b. and 0.087–0.214 mg/100 g d.b., respectively, buckwheat substituted biscuits may significantly contribute to total dietary flavonoid intake and meet the demands of preventive nutrition. Buckwheat enriched biscuits were rated higher regarding sensory attributes, softness and fracturability as compared to control but lower compared to rye supplemented biscuits.  相似文献

Pulses are increasingly being put forward as part of healthy diets because they are rich in protein, (slowly digestible) starch, dietary fiber, minerals, and vitamins. In pulses, nutrients are bioencapsulated by a cell wall, which mostly survives cooking followed by mechanical disintegration (e.g., mastication). In this review, we describe how different steps in the postharvest pulse value chain affect starch and protein digestion and the mineral bioaccessibility of pulses by influencing both their nutritional composition and structural integrity. Processing conditions that influence structural characteristics, and thus potentially the starch and protein digestive properties of (fresh and hard-to-cook [HTC]) pulses, have been reported in literature and are summarized in this review. The effect of thermal treatment on the pulse microstructure seems highly dependent on pulse type-specific cell wall properties and postharvest storage, which requires further investigation. In contrast to starch and protein digestion, the bioaccessibility of minerals is not dependent on the integrity of the pulse (cellular) tissue, but is affected by the presence of mineral antinutrients (chelators). Although pulses have a high overall mineral content, the presence of mineral antinutrients makes them rather poorly accessible for absorption. The negative effect of HTC on mineral bioaccessibility cannot be counteracted by thermal processing. This review also summarizes lessons learned on the use of pulses for the preparation of foods, from the traditional use of raw-milled pulse flours, to purified pulse ingredients (e.g., protein), to more innovative pulse ingredients in which cellular arrangement and bioencapsulation of macronutrients are (partially) preserved.  相似文献

目的 研究麦麸对酥性饼干颜色、物理性质以及淀粉消化性的影响。方法 将麦麸按0~50%比例添加到面粉中制作饼干,测定混合粉的溶剂保持力,测定饼干颜色、延展度、硬度以及淀粉消化性。结果 添加麦麸导致混合粉的水和碳酸钠溶剂保持力值增加,乳酸溶剂保持力值和面筋性能指数降低(4.71%~33.20%和25.73%~34.11%),饼干颜色变暗。当麦麸添加量大于20%时,饼干的延展度和硬度增大(53.54%~64.31%和135.98%~408.53%)。此外,麦麸的添加在一定程度上降低了饼干淀粉消化性。麦麸添加量与饼干物理性质呈强正相关性,与消化终点葡萄糖含量呈负相关。通过主成分分析,提取了2个主成分,累计方差贡献率为85.3%。结论 适量添加麦麸有效改善了饼干酥脆性,并在一定程度上抑制了饼干淀粉的消化,增加了饼干的功能性质,可以为麦麸产品的进一步开发提供参考。  相似文献

This study was performed to provide information about the physical and chemical characteristics of commercial semi-sweet biscuits and to ascertain the key characteristics of commercial semi-sweet biscuits (rich tea type), in terms of starch properties, such as gelatinisation, pasting, granule crystallinity and morphology, and to compare the magnitudes of changes of physical characteristics (diameter, thickness, weight and bulk density) for selected brands. A total of 10 rich tea biscuits from different brands were bought locally and were measured for physical and chemical characteristics. The three-point bend test showed that a biscuit with lower fat content was harder than a biscuit with normal fat content, except for sample B. Starch gelatinisation properties show that To, Tp and Tc were higher than for wheat flour whereas ΔH was lower than for wheat flour. X-ray results showed that commercial biscuits still retained their crystallinity but at lower intensities than native wheat flour. Microscopy observations revealed that some of the granule birefringence of commercial biscuits can still be observed under polarised light. Different brands of biscuits showed different physical and chemical characteristics.  相似文献

The effect of level and type of fat as well as emulsifiers on the rheological characteristics of biscuit dough and quality of biscuits has been studied. Increasing the level of fat from 150 to 250 g kg−1 softened the dough, as indicated by a reduction in extrusion time from 108 to 18 s and an increase in compliance from 31.9 to 49.9%, while it reduced the development of gluten, as shown by a reduction in elastic recovery from 0.485 to 0.365 mm. Among the different types of fats used, hydrogenated fat produced the stiffest dough. Addition of any of the emulsifiers glycerol monostearate, lecithin or sodium stearoyl lactylate lowered the elastic recovery value, indicating their contribution to the shortening effect on gluten, and also resulted in a reduction in consistency and hardness and made the dough more cohesive. The maximum change was observed with sodium stearoyl lactylate. The density, breaking strength and compression strength of biscuits decreased, indicating an improvement in crispness, with increasing fat level. The thickness of biscuits was significantly higher when hydrogenated fat or oil was used in the formulation. Biscuits made with bakery shortening had better surface characteristics and higher crispness. Glycerol monostearate and lecithin brought about a greater improvement in the quality of biscuits when compared with sodium stearoyl lactylate. Studies indicated that emulsifiers in general had a greater beneficial effect, particularly in the case of biscuits made from medium hard wheat flour. © 1999 Society of Chemical Industry  相似文献

Watermelon (Citrullus vulgaris) seeds are high in protein and fat, on enriching protein, it can find application as a protein source in various food formulations. Most of the processed foods are generally fortified with micronutrients. The effect of the matrix on the mineral bioavailability is highly important and hence investigated. Defatted flour and protein isolate were prepared from watermelon seed meal and chemical composition and functionality was analyzed by standard techniques. Multiple regression analysis was done to study the compositional influence on the mineral bioaccessibility. Invitro digestibility of the protein was good. The seeds were a moderate source of iron and zinc. The percent bioaccessibility of all the minerals were found to correlate (R = 0.97-0.99) with the concentration of phytate, tannin and oxalate contents. The seed components exhibited good functionality with good macro and micronutrient density and can find application in many food products.  相似文献

Bench scale baking tests for two types of biscuits,1 a hard sweet (HS) and a short sweet (SS), have been used to examine the biscuit making properties of a large number of flour samples from wheats grown in four consecutive years (1980–1983). Multiple regression models for prediction of biscuit properties using a range of standard cereal laboratory tests as independent variables on results from 1980–1981 harvest wheats confirmed earlier observations that such tests are of limited commercial value for biscuit flour specification. However the results of baking tests, with both types of biscuit, from single wheat varieties grown during 1981–1983 showed that flours from soft milling wheats (SMW) required less water to give biscuit doughs of standard consistency (measured instrumentally) than did flours from hard milling wheats (HMW). In addition biscuit doughs made with SMW flours gave greater oven spring, i.e. biscuits of lower bulk density, than doughs made from HMW flours. In each season the difference in the mean values of both parameters for flours milled from SMW and HMW was highly significant (P<0.001). With one exception the variability of the measured parameters within seasons was not significantly different between SMW and HMW. However within both SMW and HMW varieties highly significant differences (P<0.001) were observed between seasons for the mean values of both measured biscuit parameters. The effect of flour particle size on the biscuits was studied by regrinding a number of flours. With flours from both SMW and HMW reduction in particle size resulted in HS biscuits of higher density but SS biscuits of lower density.  相似文献

采用质构分析、电子鼻与固相微萃取-气相色谱-质谱联用方法,对制备的鱼糜马铃薯饼干质构和风味进行对比分析。以感官评定和质构为评价指标,以低筋面粉含量为100%,确定鱼糜马铃薯饼干的配方为:马铃薯全粉相对含量30%、马铃薯淀粉相对含量20%、鱼糜相对含量40%、棕榈油相对含量40%。对鱼糜马铃薯饼干、鱼糜饼干、马铃薯全粉饼干和普通饼干的风味进行对比,结果发现4种饼干的风味物质主要为杂环类、烃类和醛类化合物,其中以美拉德反应产物甲基吡嗪和2,5-二甲基吡嗪为主,含有鱼糜的饼干中,醛类化合物的种类和含量明显增加。本研究为饼干的香气特征研究提供科学依据,为马铃薯和鱼糜的开发利用提供一定参考。  相似文献

Natural antioxidants have gained interest for their role in preventing lipids oxidation. The goals of this investigation were to study the antioxidant potential of carrot (Daucus carota), grape (Vitis vinifera) leaf and turmeric (Curcuma longa) powder extracts and to evaluate their addition as natural antioxidants in biscuits. Physical and chemical properties of biscuit were evaluated during processing and storage. Electrophoretic properties of biscuit dough were carried out to understand the impact of different extracts on the processing of biscuits. Biscuits prepared with 1 % (w/w) grape leaves ethanol (70 %) extract (GLE), carrot aqueous extract (CE), and tumeric aqueous extract (TE) were acceptable. Among extracts, TE was found to retain only 11.2 % activity, wherein GLE had retained 51.0 % activity after baking, which was comparable to butylated hydroxyanisole and better than tert-butylhydroquinone (TBHQ). TBHQ was found to possess the highest activity, followed by GLE, TE and CE, respectively. The ash content of biscuits enriched with TE and GLE was near to that of the control sample. Addition of CE, GLE and TBHQ reduced the force required for breakage. After 15 days of storage, PV was increased in all samples, but in the case of GLE-enriched sample there was a sudden increase in PV from 0.034 to 0.374. Supportive electrophoresis study indicated that there was no change in the protein subunits of biscuit dough fro different samples. It could be concluded that GLE, CE and TE might be used in biscuit baking as natural antioxidants.  相似文献

Demand for health oriented products such as sugar-free, low calorie and high fibre products is increasing. One such recent trend is to increase the fibre content in food products to overcome health problems such as hypertension, diabetes, and colon cancer, among others. Consumption of high fibre products consisting of indigestible cellulose, hemicellulose, lignin and gums have several health benefits. Apart from these benefits, β-glucan-rich fibres have the benefit of reducing the absorption of glucose. Fibre sources from wheat, rice, oat and barley were used to study their influence on rheological characteristics of wheat flour dough and biscuit making quality. Ash, total protein and dietary fibre content of bran samples ranged between 4% and 10%, 12% and 14% and 20.4% and 49.5%, respectively. Farinograph characteristics of the wheat flour-bran blends showed increase in water absorption from 60.3% to 76.3% with increase in the level of bran from 0% to 40%. The resistance to extension values as well as extensibility of the dough decreased with increase in the bran level. The spread ratio of the biscuits prepared from wheat, rice and oat bran blends decreased from 8.38 to 7.52, whereas the same increased to 9.3 for biscuits prepared from barley bran blends. The breaking strength values of biscuits ranged between 1.34 and 3.83 kg. Highly acceptable biscuits could be obtained by incorporating 30% of oat bran or 20% of barley bran in the formulation.  相似文献

Whole wheat flour breads, white breads and biscuits were stored in flexible packages flushed with either air, 100% nitrogen or 100% carbon dioxide. Compressibility tests were performed during a storage time of 13 - 15 days for bread and 7 - 15 days for biscuits. Significantly lower regression coefficients (P < 0.01) were found for white and whole wheat breads and biscuits stored in carbon dioxide modified atmosphere than for the air stored samples. No significant differences were found between regression coefficients of air and nitrogen stored bread samples. Mold growth was inhibited on breads and biscuits by carbon dioxide atmosphere during 13 - 15 days of storage, but occured between the 5th and 7th day of storage on the air packaged samples.  相似文献

In developing countries, iron and zinc deficiencies are mostly attributable to poor bioavailability of iron and zinc. The study aimed at enhancing the bioaccessibility of minerals in high‐phytate oilseed and cereal flour mixes by activating the intrinsic phytase of wheat flour. The flour mixes were fortified with iron and zinc separately for comparison. The flour mixes were incubated at optimum conditions of temperature and pH for phytase activation. Phytase activation enhanced bioaccessible iron by 43–162% in native and 40–168% in fortified wheat–soya, 83–192% in native and 97–240% in fortified wheat–groundnut flour mixes in relation to control flour mixes. Bioaccessible zinc was enhanced by 87–183% in native and 30–113% in fortified wheat–soya, 31–65% in native and 61–186% in fortified wheat–groundnut flour mixes. Endogenous phytase activation was effective in enhancing bioaccessibility of iron and zinc in native and fortified flour composites economically.  相似文献
