Improving pork quality and shelf life is important in today’s swine industry because higher levels of DDGS are incorporated into pig diets. Relatively high level of poly-unsaturated fatty acids (PUFA) in DDGS may increase pork susceptibility to lipid oxidation and thus reduce pork shelf life. Antioxidants such as vitamin E may delay the onset of pork lipid oxidation when used as an ingredient in the diet. This experiment examined carcass characteristics, meat quality, shelf life, and color stability in pork from pigs (n = 150) fed five levels of a natural vitamin E (Nova-E) and one level of synthetic vitamin E. Natural vitamin E and synthetic vitamin E had no effect on carcass characteristics or meat quality. Increasing dietary natural vitamin E from 10 to 200 mg/kg decreased lipid oxidation. Lipid oxidation of pork chops and ground pork was similar between pigs fed 40 mg/kg and higher levels of natural vitamin E, indicating no additional benefits from supplementing beyond 40 mg/kg natural vitamin E. Supplementing 200 mg/kg synthetic vitamin E decreased pork lipid oxidation when compared to supplementing 10 mg/kg natural vitamin E. High levels of natural vitamin E or synthetic vitamin E, however, did not prevent discoloration of loin chops. These data indicate that natural vitamin E was effective to help reduce lipid oxidation and the effective minimal level of dietary supplementation appeared to be 40 mg/kg.  相似文献

The objective of this study was to evaluate the effect of diet supplementation with olive leaves or α-tocopheryl acetate on lipid and protein oxidation of raw and cooked n 3 enriched-pork during refrigerated storage. Enrichment of pork with α-linolenic acid through diet supplementation with linseed oil enhanced (p  0.05) lipid oxidation in both raw and cooked chops but had no effect (p > 0.05) on protein oxidation during refrigerated storage while decreasing (p  0.05) the sensory attributes of cooked pork. Diet supplementation with olive leaves or α-tocopheryl acetate had no effect (p > 0.05) on the fatty acid composition of pork but decreased (p  0.05) lipid oxidation while exerting no effect (p > 0.05) on protein oxidation in both raw and cooked α-linolenic acid-enriched chops stored and chilled for 9 days. Moreover, olive leaves and α-tocopheryl acetate supplemented at 10 g/kg and 200 mg/kg diet, respectively, exerted (p  0.05) a beneficial effect on the sensory attributes of cooked α-linolenic acid-enriched pork chops.  相似文献

The effect of addition of rapeseed oil (canola), CuSO(4) and vitamin E (all-rac-α-tocopheryl acetate) to pig diets on pork meat quality (lipid oxidation, colour and drip loss) was studied. Pigs were reared on ten different diets, either a control diet (no supplementation of rapeseed oil, CuSO(4) or vitamin E) or 6% rapeseed oil diets supplemented with CuSO(4) (0, 35 or 175mg/kg) and vitamin E (0, 100 or 200mg all-rac-α-tocopheryl acetate/kg). The natural content of vitamin E originating from feed ingredients amounted to 9-23mg vitamin E (α-tocopherol) per kg feed. Muscle vitamin E levels reflected the dietary intake and pigs fed the control diet had significantly lower levels than pigs fed rapeseed oil diets. The quality of fresh pork chops packed in air or in 80% O(2):20% CO(2) was followed during chill storage for 8 and 13 days, respectively. Colour, as measured by tristimulus colorimetry of pork chops packed in 80% oxygen atmosphere, was significantly improved with respect to redness when compared to chops packed in air, regardless of dietary treatment. The low vitamin E content in pigs fed the control feed significantly decreased a values and the oxidative stability of pork chops during chill storage compared to the other feeding groups. Packing of chops in a high-oxygen atmosphere increased lipid oxidation, especially in chops with low levels of vitamin E. Supplementation of rapeseed oil diets with 100 or 200mg vitamin E significantly decreased lipid oxidation of chill stored chops. Supplementation with CuSO(4) did not influence meat quality attributes (drip loss, colour stability and lipid oxidation) for any of the storage conditions.  相似文献

A seaweed extract containing laminarin (L) and fucoidan (F) (L/F) was manufactured from brown seaweed (Laminaria digitata) in spray-dried (L/F-SD) and wet (L/F-WS) forms. The effect of supplementation of pig diets with L/F-SD and L/F-WS (L, 500 mg/kg feed; F, 420 mg/kg feed) for 21 days pre-slaughter, on quality indices of fresh M. longissimus dorsi (LD) steaks was examined. Susceptibility of porcine liver, heart, kidney and lung tissue homogenates to iron-induced (1 mM FeSO4) lipid oxidation was also investigated. Dietary supplementation with L/F did not increase plasma total antioxidant status (TAS). In LD steaks stored in modified atmosphere packs (80% O2:20% CO2) (MAP) for up to 15 days at 4 °C, muscle pH, surface colour (CIE ‘L*’ lightness, ‘a*’ redness and ‘b*’ yellowness values) and microbiology (psychrotrophic and mesophilic counts, log CFU/g pork) were unaffected by dietary L/F. In general, levels of lipid oxidation (TBARS, mg MDA (malondialdehyde)/kg pork) followed the order: C > LF-SD > L/F-WS. A statistically significant reduction in lipid oxidation (P < 0.05) was observed in LD steaks from 75% of pigs (n = 6) fed with L/F-WS compared to controls. Iron-induced lipid oxidation increased in liver, heart, kidney and lung tissue homogenates over the 24 h storage period and dietary L/F-WS reduced lipid oxidation to the greatest extent in liver tissue homogenates. Results demonstrate potential for the incorporation of marine-derived bioactive antioxidant components into muscle foods via the animal's diet.  相似文献

Low-fat pork liver pâtés enriched with n  3 PUFA/konjac gel were formulated by replacing (totally or partially) pork backfat by a combination of healthier oils (olive, linseed and fish oils) and konjac gel. Lipid oxidation, microbiological changes and biogenic amine (BA) formation were studied in healthier-lipid pâtés during chill storage (85 days, 2 °C). Increasing unsaturated fatty acid levels favoured lipid oxidation, although the levels reached were low throughout the storage period, ranging from 0.113 to 0.343 mg malonaldehyde/kg sample. Neither the formulation nor the time in storage affected the microbial load. Biogenic amine contents of products (the sum of initial concentrations and amines formed during storage) varied according to the type of BA but were far below levels that could constitute a consumer health hazard.  相似文献

Fresh pork sausages (pork shoulder, pork back fat, water, rusk and seasoning) were manufactured where 15% of the pork back fat was substituted with linseed oil (LO) or fish oil (FO). Green tea catechins (GTC) and green coffee antioxidant (GCA) were added to both LO (LGTC 200 and LGCA 200) and FO (FGTC 200 and FGCA 200) substituted sausages at a level of 200 mg/kg. Raw and cooked pork sausages were either over-wrapped with oxygen permeable film (aerobic storage) or stored in modified atmosphere packages (MAP) containing 80% O2:20% CO2 or 70% N2:30% CO2, respectively for 7 days at 4 °C. Effects on fatty acid profiles, lipid oxidation, colour and sensorial properties were investigated. α-Linolenic acid increased from 1.34% (control) to 8.91% (LO) and up to 11.2% (LGTC 200 and LGCA 200). Addition of fish oil increased levels of EPA from 0.05% (control) to 2.83% (FO), 3.02% (FGTC 200) and 2.87% (FGCA 200) and DHA levels increased from 0.04% (control) to a maximum of 1.93% (FGTC 200). Lipid oxidation was low in raw and cooked linseed oil containing sausages. GTC (200 mg/kg) significantly (P < 0.05) reduced lipid oxidation in raw fish oil containing sausages after 7 days of storage. Colour parameters in raw pork sausages were unaffected by the packaging atmosphere. L1 lightness values were lower (P < 0.05) in LGTC 200 and a1 redness values lower (P < 0.05) in LGTC 200 and FGTC 200 after 7 days of storage. Sensory scores of cooked pork sausages were unaffected by linseed oil addition. Flavour and overall acceptability scores in cooked fish oil containing sausages were improved by GTC addition. Results obtained demonstrate potential for the production of nutritionally enhanced fresh pork sausages.  相似文献

Information on the combined effect of dietary vitamin C and Se on the composition and oxidative stability of meat of broilers is not available in the literature. In the present experiment, male broiler chickens were fed a maize–wheat–soya diet supplemented with vitamin C at 280 and 560 mg/kg of diet, and Se (sodium selenite or selenised yeast; Se) at 0.3 mg/kg for 5 weeks. After slaughter, samples of thigh meat were analysed. The supplementation of diets with vitamin C or Se increased the protein concentration of the meat at the expense of fat. Vitamin C supplementation increased the vitamin C content of the meat in a dose-dependent manner and decreased the vitamin A concentration in the meat of broilers fed diets with sodium selenite or without a Se supplement. In the meat of the broilers that were fed these diets, the vitamin C decreased the lipid oxidation in meat that was stored for 5 days. No sparing effect of vitamin C was apparent on the amount of vitamin E in the meat. Selenised yeast was more effective in the enrichment of meat with Se than was selenite. Both Se sources increased the activity of glutathione peroxidase and the oxidative stability of the meat.  相似文献

The use of 0.02 or 0.05% chitosan is proposed to reduce from 450 to 150 mg kg 1 the SO2 required to preserve pork burgers aerobically packed and stored at 2 °C for up to 21 days under retail display conditions. The effects of chitosan and/or sulfite addition and the storage time were determined in fresh (color deterioration, lipid oxidation, pH, total viable counts, Escherichia coli and coliforms, Salmonella, appearance and odor) and cooked (appearance, odor, flavor and texture) burgers. The addition of either 0.02 or 0.05% chitosan was not detected by sensory analysis, and extended the shelf life of low-SO2 burgers from 7 to 14 days. Chitosan enhanced the preservative effects of sulfite at a low dose, acting on the main causes of meat deterioration (bacterial spoilage, color stability and lipid oxidation), and provided good sensory properties to fresh and cooked pork burgers.  相似文献

A questionnaire complemented with colour photographs was used to obtain information on dietary practices and preferences regarding home-prepared pork chops in a small (n=151) sample of Swedish consumers. The results from the questionnaire were combined with analytical results from meat of different RN genotypes, and showed that fried chops from a pig that was carrying the RN allele (high glycogen content) had a darker crust and contained lower levels of mutagenic heterocyclic amines (HCAs) than chops from a non-carrier (low glycogen content). In this study population, the intake of fried pork chops only contributed slightly to the total HCA exposure; the total monthly intake of mutagenic HCAs was on average 256 ng, ranging from 0 to 1982 ng/month. However, using lower frying temperatures and meat from pigs carrying the RN allele can further reduce the intake. From the photographs, most of the respondents chose fried chops from the non-carrier, which would result in an average contribution to the monthly HCA intake of 359 ± 402 ng (mean ± SD) compared to 35 ± 60 ng/month for consumers who preferred the RN/rn+ chops. More than 20 times the amount of mutagenic HCAs was formed when frying chops of the non-carrier of the RN allele at an initial pan temperature of 200 °C instead of 160 °C; 4.13 compared to 0.18 ng/g cooked meat.  相似文献

The present study was undertaken to investigate the protective effect of tetrahydrocurcumin (THC) and chlorogenic acid (CGA) against streptozotocin (STZ)–nicotinamide (NA)-induced type 2 diabetes in adult Wistar rats. Diabetes was induced in experimental rats weighing 180–220 g, by a single intraperitoneal (i.p.) injection of STZ (45 mg/kg BW), 15 min after the (i.p.) administration of NA (110 mg/kg BW). THC (80 mg/kg BW) and CGA (5 mg/kg BW) were orally administered to diabetic rats for a period of 45 days. Fasting plasma glucose, glycosylated haemoglobin (HbA1C), thiobarbituric acid reactive substances (TBARS) and lipid hydroperoxides (LOOH) were significantly increased, whereas insulin, total haemoglobin (Hb), non-enzymic antioxidants (reduced glutathione (GSH), vitamin C, vitamin E and ceruloplasmin) were decreased significantly in diabetic rats. Though the diabetic rats treated with THC and CGA individual exerts beneficial effects in all the biochemical parameters in (STZ)-induced diabetic rats. The combined treatment with THC and CGA normalized all the above-mentioned biochemical parameters in STZ-induced diabetic rats. Normal pancreatic histological architecture in THC and CGA treated diabetic rats revealed that these phytochemical exert higher degree of protection when administered in combination than single treatment of individual compounds.  相似文献

Oxidative stress is a common pathogenesis of diabetes mellitus and asiatic acid (AA) plays an important role in ameliorating those difficulties. The present study was designed the protective effects of AA on altered lipid peroxidation products, enzymic and nonenzymic antioxidants in streptozotocin (STZ)-induced diabetic rats. Diabetes was induced in experimental rats by single dose STZ (40 mg/kg b.w.) injection. Diabetic rats showed significantly increased levels of plasma glucose, thiobarbituric acid reactive substances, lipid hydroperoxides, aspartate aminotransferase, alanine aminotransferase, bilirubin, creatine kinase, urea, uric acid, creatinine and decreased levels of plasma insulin. The activities of enzymatic antioxidants such as superoxide dismutase, catalase, glutathione peroxidase and glutathione-S-transferase and the levels of non-enzymatic antioxidants such as vitamin C, vitamin E and reduced glutathione were decreased in diabetic rats. Oral treatment with AA (20 mg/kg b.w.) showed near normalized levels of plasma glucose, insulin, lipid peroxidation products, enzymatic and nonenzymatic markers in diabetic rats. The results demonstrate that AA possesses potent antioxidant effect comparable with glibenclamide in improving antihyperglycemia and attenuating antioxidant status in diabetic rats.  相似文献

The antioxidant activity of plant extracts (100 and 500 mg/kg) from cloudberry, willow herb and beetroot on thiobarbituric acid (TBA) reactive substances (TBARS) development and hexanal content of cooked pork patties was investigated. Pure quercetin, rutin and caffeic acid were tested in parallel for comparison. The most potent antioxidants on stabilizing oxidation were cloudberry extract and quercetin. The lowest antioxidant activity was found with the addition of pure rutin to the meat. Caffeic acid showed an intermediate activity. At a concentration of 100 mg/kg, beetroot and willow herb extracts showed an antioxidant activity on TBARS and hexanal contents similar to that observed for caffeic acid during 3 days of refrigerated display, while cloudberry extract was as potent as quercetin. At a concentration of 500 mg/kg, beetroot and willow herb extract stabilized hexanal production of cooked pork patties after 6 days of refrigerated storage in a way comparable to that observed for pure quercetin and cloudberry extract. TBARS numbers were well correlated with hexanal content in cooked pork patties on day 3 of refrigerated storage. However, hexanal production and TBARS numbers were not highly correlated in samples with the highest level of beetroot (500 mg/kg). Hexanal production was inhibited by the high level of beetroot, but TBARS production was not, perhaps because the red color of beetroot extract interfered with the determination of the pink TBA chromogen.  相似文献

Grain sorghum is a rich source of phytochemicals. In this study, male hamsters were fed AIN-93M diets supplemented with a hexane-extractable lipid fraction from sorghum distillers dried grains with solubles (DDGS). Diets contained 0.0%, 0.5%, 1.0%, and 5.0% (w/w) DDGS lipid extract. After 4 wk, the 5.0% DDGS lipids group had significantly lower plasma non-HDL cholesterol and liver esterified cholesterol concentration. Faecal neutral sterol (i.e., cholesterol) excretion was significantly higher in the 5.0% DDGS lipids group compared to the other treatments (66% higher compared to controls). Bile acid excretion was not affected by DDGS lipid intake. Faecal cholesterol excretion was negatively correlated with liver cholesterol concentration (r = ?0.97, P = 0.026), and liver cholesterol concentration was directly correlated with plasma total cholesterol concentration (r = 0.96, P = 0.041). Thus, lipid extract of sorghum DDGS exhibited cholesterol-lowering properties due, at least in part, to increased cholesterol excretion from the body and could provide health benefits when incorporated into human diets.  相似文献

The effect of oxidized corn oil and vitamin E (α-tocopheryl acetate) in pig diets on the oxidative stability of muscle lipids and on the surface colour characteristics of fresh and previously frozen pork chops in refrigerated storage was investigated. Lipid oxidation (TBARS values) and surface redness (Hunter 'a' values) were significantly influenced (P < 0·01) by dietary α-tocopheryl acetate levels but not by degree of oxidation of dietary corn oil. Lipid oxidation and colour deterioration during refrigerated storage were greater in previously frozen chops compared to fresh chops. TBARS values were lower and Hunter 'a' values higher in pork chops from pigs fed 100 and 200 mg α-tocopheryl acetate/kg diet compared to pigs fed 10 mg/kg diet after 2, 4, 6 and 8 days of refrigerated storage. Hunter 'a' values were significantly correlated (P < 0·01) with the logarithm of TBARS values. The results suggest that oxidation of myoglobin precedes oxidation of muscle lipids in pork chops stored at 4°C.  相似文献

Precooked longissimus chops and semimembranosus/adductor roasts from pigs (n = 30) given no supplemental vitamin E (CON) or supplemented with 100 mg vitamin E/kg diet (VITE) were evaluated for lipid oxidation, microbial growth, sensory characteristics, cooking/storage losses and reheating losses. Chops and roasts were vacuum packaged, precooked to 60°C and stored at 2°C for 0, 7, 14, 28, or 56 days. Lipid oxidation was lower in VITE chops and roasts than in CON chops and roasts. Off-flavor intensity scores were more acceptable and storage/ cooking losses were lower for VITE roasts than for CON roasts. Supplementation of vitamin E in a swine diet provided added protection against lipid oxidation and precooking pork under vacuum provided a palatable product with a shelf-life of 56 days.  相似文献

The objective of this study was to determine the effects of 2 differing forage to concentrate ratios (F:C) and various levels of corn dry distillers grain with solubles (DDGS) replacing canola meal in precision-fed dairy heifer rations on chewing behavior, rumen pH and fill, and particle size of rumen contents and feces. A split plot design with F:C as whole plot and DDGS inclusion level as subplot was administered in a 4-period 4 × 4 Latin square. Eight rumen-cannulated Holstein heifers (12.5 ± 0.5 mo of age and 344 ± 15 kg of body weight, respectively) housed in individual stalls were allocated to F:C 50:50 (low forage) or 75:25 [high forage (HF); dry matter basis] and to a sequence of DDGS level (0, 7, 14, and 21%; dry matter basis). Forage was a mix of 50% corn silage and 50% grass hay (dry matter basis). Diets were fed once daily and formulated to provide equal amounts of nutrients and body weight gain. No differences were found for rumen pH between dietary treatments. Time spent eating tended to be longer for HF and was not affected by DDGS inclusion rate. Ruminating time did not differ by F:C, but linearly increased as DDGS increased (422 to 450 ± 21 min/d). Total chewing time tended to be longer for HF and to increase linearly as DDGS increased (553 to 579 ± 33 min/d). Wet rumen digesta weight and volume were greater for HF. Geometric mean particle length of rumen contents was greater for HF 2 h prefeeding when analyzed with solubles (particles <0.15 mm). Proportion of rumen solubles decreased as DDGS increased 5 h postfeeding. Fecal geometric mean particle length and proportion of particles >1.18 mm increased with increasing levels of DDGS and did not change with F:C. Total chewing time increased by the addition of DDGS and higher F:C. Heifers can compensate for lower physically effective neutral detergent fiber by modifying their chewing behavior. Rumen pH was never at a level that could induce acidosis, and lower eating time at lower F:C was somewhat compensated by time spent ruminating per unit of physically effective neutral detergent fiber intake. Dry distillers grains with solubles, when used in dairy heifer rations as a replacement for canola meal, yielded similar rumen digestion traits.  相似文献

A nationwide survey was conducted to ascertain the levels of Vitamin A and Fe in wheat and maize flours, sugar and vegetable oils and some flour-based processed foods to assess compliance to the Nigerian Industrial Standard. Samples were collected from factories and markets in all the 36 states of the six geopolitical zones of the country; comprising 94 (vegetable oil), 42 (sugar), 95 (flour) and 62 (processed foods) and subjected to vitamin A and iron analyses using HPLC and AAS respectively. Using a 50% acceptable range of the specified minimum standards as basis for compliance, the results showed that only 14.9 – 20.2 % of the samples of vegetable oils analyzed fell within acceptable level (10,000-20,000 IU/kg) but there was no significant difference (p > 0.05) in the results obtained for the six zones. For sugar, only 11.9 – 16.7 % of the samples collected complied with the acceptable range of the standards (12,500 – 25,000 IU/kg) but this varied significantly (p > 0.05) with the zones. The levels of compliance for vitamin A and Fe in flours were found to be 12.2 – 33.3 % and 1.0 – 21.0 % respectively at the acceptable range of 15,000 – 30,000 IU/kg and 34.6 – 46.8 mg/kg, respectively. In all cases, the compliance levels at the 50% range were only marginally higher than at the 30% WHO acceptable range. For the levels of these micronutrients in the processed foods, the values obtained ranged between 5,139 – 7,687 IU/kg for vitamin A and 11.9 – 16.7 mg/kg for Fe. These results call for a critical and holistic review of the fortification strategy in Nigeria.  相似文献

The present study was hypothesized to evaluated the antihyperlipidemic effect of diosmin (DS) on lipid metabolism in experimental diabetic rats. Diabetes was induced male albino Wistar rats by intraperitoneal administration of streptozotocin (STZ) (45 mg/kg b.w.) 15 min after the ip administration of nicotinamide (NA) (110 mg/kg b.w.). DS were administered to diabetic rats intragastrically at 100 mg/kg b.w. for 45 days. The levels of plasma and tissue lipids (cholesterol, triglycerides) (TGs), free fatty acids (FFAs) and phospholipids (PLs), low density, very low-density lipoproteins (LDL and VLDL), and high-density-cholesterol (HDL-C) were measured. The activities of 3-hydroxy 3-methylglutaryl coenzyme A (HMG-CoA) reductase, lipoprotein lipase (LPL) and lecithin cholesterol acyl transferase (LCAT) were assayed. The levels of plasma and tissue lipids decreased with significant increase in HDL-C levels. The altered activities of lipid metabolic enzymes were restored to near normal. The present findings suggest that DS can potentially ameliorate lipid abnormalities in experimental diabetes.  相似文献

The effect of chitosan (0.5% and 1%) added individually or in combination with nitrites (150 ppm) on microbiological (Total Viable Counts, Lactic acid bacteria, Pseudomonas spp., Brochothrix thermosphacta, Enterobacteriaceae, yeasts and moulds), physicochemical-chemical (pH, chemical composition, lipid oxidation) and sensory properties of fresh pork sausages stored at 4 °C for 28 days was investigated. Chitosan addition resulted in significant (p < 0.05) inhibition of microbial growth, while nitrites did not seem to protect sausages from microbial spoilage. A gradual reduction of nitrites was observed till the end of storage, when nitrites were almost depleted in all nitrite containing samples. The rate of lipid oxidation in fresh pork sausages was significantly decreased (p < 0.05) by addition of increasing levels of chitosan, while samples containing both chitosan and nitrites showed the lowest malondialdehyde (MDA) values, indicating a synergistic antioxidative effect. Consequently, the samples containing the combination of nitrites and chitosan at any level deteriorated less rapidly and were judged as more acceptable than all the other samples.  相似文献

In this paper, the effect of photodynamic method mediated by curcumin (PDT) on the shelf life and quality of pacific oysters during storage at 5 ± 1 °C were analyzed. In our previous study we investigated the optimal treatment conditions of photodynamic method mediated by curcumin to sterilization were 10 uM photosensitizer concentration and 5.4 J/cm2 light energy density. Under these conditions, the effect of a novel photodynamic activation method mediated by curcumin on oyster shelf life and quality was researched. The total bacterial counts, TVB-N content and sensory analysis were used to evaluate the effects on oyster shelf life. The oyster shelf life was prolonged from 8 days to 12 days after photodynamic treatment and the oysters in the treatment group displayed notable odor retention, produced fewer odor corrupting substances when the control group oysters reached the end of their shelf life (day 8). Texture, free amino acid contents and fatty acid levels were applied to estimate the quality of the treated oysters. The texture had no significant change after treated with PDT. At the end of oyster shelf life, compared PDT group (PDT) with control group (control), total free amino acid contents (control: 234.30 mg/100 g, PDT: 813.02 mg/100 g) was higher and free fatty acid levels (control: 0.071 mEq/L, PDT: 0.0455 mEq/L) displayed lower in PDT group. This indicated that the treated oysters oxidized minimally, decayed slowly, decomposed fewer nutrients and had lower metabolic levels of spoilage microorganisms. PDT has a positive effect on prolonging oyster shelf life and its quality.  相似文献
