In-vitro binding of calcium (Ca) and magnesium (Mg) by total dietary fiber, hemicellulose A (HCL A), lignocellulose (LCL), cellulose (CL), and lignin (L) fractions isolated from rice bran (RB), wheat bran (WB), oat fiber (OF), apple fiber (AF) and tomato fiber (TF) was evaluated. At pH 6.8, significant amounts of Ca were bound by whole fibers, ranging from 800 μg g−1 for RB to 10 097 μg g−1 for TF. Mg bound by whole fibers varied from 496 μg g−1 for OF to 2177 μg g−1 for WB. Re-acid washing (pH<2.0) released 95–99% of the Ca and Mg bound to the fibers. Fibers with the highest endogenous Ca and Mg concentrations bound significantly (P<0.05) the highest amounts of the minerals studied. The Ca bound by HCL A varied from 9753 μg g−1 for RB to 11 337 mg g−1 for TF, whereas Mg bound varied from 1151 μg g−1 for OF to 5626  μg g−1 for TF hemicellulose fractions, respectively. Among the fiber components, Mg binding decreased in the order HCL A>LCL>L>CL, whereas Ca bound was in the order HCL A>LCL>CL>L. A relatively strong correlation was observed between the combined effects of protein content, hemicellulose, and lignin vs total Ca and Mg bound. 1998 Elsevier Science Ltd. A sensitive and specific HPLC method with tandem diode array-fluorescence detection (DAD-FL) has been developed and validated for the simultaneous determination of pheophytin a (phy a) and pyropheophytin a (pyrophy a) in olive oils. Pigments were extracted with reverse phase solid phase extraction (RP-SPE) and subsequently analysed by HPLC-DAD-FL. The chromatographic analysis was carried out isocratically on ODS2 RP column using methanol–acetone (1:1 v/v) at flow-rate of 2.0 ml min−1. Specificity of the method was assured by the simultaneous detection by UV–visible (410 nm) and FL (λEx: 410 nm; λEm: 672 nm). Both compounds could be baseline separated within 7 min. The method was validated and applied in olive oil samples recently extracted as well as stored during 12 months. The limit of detection (LOD) defined at a signal-to-noise ratio of about 3 was ∼21.6 ng g−1 for pyrophy a and ∼24.6 ng g−1 for phy a under FL detection, and ∼148.0 ng g−1 for both analytes under UV–visible detection. The calibration graphs were linear (r2 > 0.9999; p < 0.01) between 0.25–14.00 ng μl−1 for pyrophy a and 0.25–19.00 ng μl−1 for phy a, under both fluorescence and UV–visible detection conditions. Recoveries of phy a and pyrophy a were over 94% as estimated by the standard addition method. Relative standard deviation for the intra-day and inter-day determination of phy a and pyrophy a were lower than 3.7% and 8.0%, respectively.  相似文献

In colostrum collected 0–80 h postpartum the contents of immunoglobulins (Igs), transforming growth factor beta-2 (TGF-β2), insulin-like growth factor-1 (IGF-1) and growth hormone (GH) were analysed. Colostrum initially contained 90 mg mL−1 IgG1, 2.8 mg mL−1 IgG2, 1.6 mg mL−1 IgA, 4.5 mg mL−1 IgM, and these concentrations declined by 92%, 87%, 93% and 84%, respectively, in the samples collected later. Of the growth factors, colostrum initially contained 289–310 ng mL−1 TGF-β2 and the concentration diminished to 66 ng mL−1. The content of IGF-1 and GH postpartum decreased from 870 to 150 ng mL−1, and from 0.17 to <0.03 ng mL−1, respectively. Heat treatment and freeze-drying of colostral whey decreased the content of Igs to 75%, while the contents of IGF-1 and TGF-β2 were unaffected. A similar processing, including filtration steps reduced also the IGF-1 and TGF-β2 by 25%. IgM seems to be the most sensitive of the Igs to processing.  相似文献

Bovine casein was hydrolysed with a range of proteolytic enzymes including pepsin, trypsin, α-chymotrypsin and β-chymotrypsin, and assessed for antibacterial activity. The pepsin digest of bovine casein, which showed antibacterial activity, was fractionated using reverse phase high performance liquid chromatography and the antibacterial peptides isolated were characterised using electrospray ionisation mass spectrometry. Two antibacterial peptides were identified, a novel peptide (Cp1) which corresponded to residues 99–109 of bovine αS1-casein and a previously reported peptide (Cp2) which corresponded to residues 183–207 of bovine αS2-casein. The minimum inhibitory concentration (MIC) of Cp1 and Cp2 were determined against a range of bacterial cultures. Cp1 exhibited an MIC of 125 μg mL−1 against all Gram-positive bacteria tested, and MIC ranging between 125 and >1000 μg mL−1 against the Gram-negative bacteria tested. Cp2 was generally far more potent against the Gram-positive bacteria, exhibiting an MIC of 21 μg mL−1, compared to MICs ranging from 332 to >664 μg mL−1 against most of the Gram-negative bacteria tested.  相似文献

The influence of temperature on the growth and biological activity of two probiotic strains (Bifidobacterium longum CRL 849 and Lactobacillus fermentum CRL 251) as pure and mixed cultures in soymilk (SM) were evaluated. Maximum growth was observed at 37°C in both mixed and pure cultures. In a product prepared with the mixed culture (1:1) at 37°C, the amount of lactic acid produced was approximately 55 mmol l−1 after 24 h with a slow production rate (2.8 mmol l−1 h−1); the formation of acetic acid was higher with respect to pure cultures (82.01 mmol l−1 after 24 h), and final pH (24 h) was 5.0. About 85% of the total amount of sugars in SM was reduced, mainly sucrose. Stachyose was reduced (71%) after 4 h of incubation. Maximum activity of alpha-galactosidase (alpha-gal) (13.2 U ml−1) was observed after 6 h. At 37°C the bifidobacterium strain was viable in mixed culture throughout the period assayed. At lower (30°C) or higher (42°C) temperatures, mixed culture showed slower growth and lower acid production in SM but the alpha-gal activity was stimulated at 30°C.  相似文献

The study describes an improved version of the reverse-phase-HPLC method. To determine free resveratrol isomers, the method uses isocratic elution and electrochemical detection with the use of a glassy working electrode at a potential of 0.75 V. The effects of important factors – such as the isomerization of standard resveratrol solution in diffused daylight and its dependence on temperature or resveratrol isomerization in wine samples – were investigated. The equilibrium between trans- and cis-isomer was achieved after a 5-h exposure to the daily diffused light and it was not significantly influenced by the temperature (30–60 °C). Linearity was obtained in the concentration range from 0.01 to 10 mg l−1. The detection limit (S/N=3) was 3 μg l−1 for trans-resveratrol and 15 μg l−1 for cis-resveratrol. The trans- and cis-resveratrol were determined in selected Czech red and white wines and in the extract from Vitis vinifera plant. The concentration of trans-resveratrol ranged from 0.7 to 11 mg l−1, that of cis-resveratrol from 0.6 to 5.1 mg l−1.  相似文献

Fruiting bodies of wild mushrooms and forest soil samples were collected and analyzed for macro- (N, P, K, S, Ca, Mg) and microelement (Al, Zn, Fe, Mn, Cd, Pb) contents in pine stands of the Notecka Forest in west-central Poland. Elements were determined by atomic absorption spectrometry in 160 samples of 8 fungal species and 15 underlying soil samples. Macro- and microelement contents in soil were low and characteristic of the poor and acidic sandy soils of the Polish lowlands not influenced by industrial pollution. In fruiting bodies, the highest mean concentration of macroelements (dry mass basis) was found for N (40.0 g kg−1), followed by K (33.0 g kg−1), P (5.4 g kg−1), S (2.2 g kg−1), Ca (1.0 g kg−1) and Mg (0.7 g kg−1). All macroelements (except for Ca) were concentrated in considerably higher levels in the fruiting bodies than in the forest soil. Nitrogen, P, K, S and Mg were preferably translocated into the cap rather than the stipes. Calcium, however, was often found in higher concentration in stipes than in caps. The mean microelement concentrations, across all tested fungi, were in the following order: Al > Zn > Fe > Mn > Pb > Cd. Microelements showed different distributions, depending on the part of the fruiting body. Some were more concentrated in the caps and some in stipes and distributions varied among species. Xerocomus badius is the most often harvested edible mushroom in the Notecka Forest. Pb and Cd distributions in fruiting bodies of this mushroom were evaluated in order to assess health risks to consumers. The estimated dietary exposures to Pb and Cd for consumers of this mushroom were in excess of guidelines on safe exposures.  相似文献

The aim of this study was to evaluate the incorporation of hydrophobic plasticizers (acetyltributyl citrate – ATB, tributyl citrate – TB and acetyltriethyl citrate – ATC) in a matrix of gelatin, using the saponin extracted from Yucca schidigera (yucca) as emulsifier, in the production of biodegradable emulsified films using the casting technique. High levels of hydrophobic plasticizers were incorporated, reaching up to 75% of plasticizer in relation to the protein (w/w) for ATB and TB, and up to 60% for ATC. The minimum values of water vapor permeability were 0.08, 0.07 and 0.06 g mm m?2 h?1 kPa?1 for ATB, TB and ATC respectively, with no significant differences (p > 0.05). The water solubility of the films ranged from 21% to 59.5%. Although the WVP decreased, both scanning electron microscopy and laser scanning confocal microscopy indicated that the incorporation of the hydrophobic plasticizers did not occur homogeneously in the film matrix.  相似文献

Palm olein-based diacylglycerol (POL-DAG) was blended with palm super olein (POoo) in various concentrations (10–90%), with increments of 10% (wt/wt) POL-DAG. The physical and chemical characteristics, i.e., iodine value, acylglycerol content, fatty acid composition, melting and crystallization profiles and solid fat content, for POL-DAG, POoo and their binary blends were evaluated. The mid-infrared FTIR was used to determine the absorption bands of the different concentrations of the oil blends. Only slight differences of FAC and IV were observed. POL-DAG:POoo blends showed significant changes (p < 0.05) in DAG content and decreases in TAG content with increasing POL-DAG content. The DSC thermograms showed that the addition of different concentrations of POL-DAG changed the melting and crystallization behavior of the oil blends (POL-DAG:POoo). The crystallization onset point increased (p < 0.05) with an increasing POL-DAG concentration (10–90%). POL-DAG has the same absorption bands as POoo, with the exception of several minor peaks that appeared at (I) 2954 cm 1, (II) 1267 cm 1, (III) 1199 cm 1, (IV) 1222 cm 1 and (V) 966 cm 1. This study will provide essential information for the palm oil industry to identify the most suitable POL-DAG blends with desirable physicochemical properties for food application purposes.  相似文献

Lactobacillus plantarum ACA-DC 146 and L. paracasei subsp. tolerans ACA-DC 4037 were examined for their potential application as adjuncts in the production of traditional Greek set-type yoghurt. Both strains displayed low milk acidification activity, while no inhibition was observed towards or from the yoghurt starters used. Yoghurt produced with L. paracasei subsp. tolerans ACA-DC 4037 exhibited the best sensory properties, with a rich traditional smooth taste, and the strain was selected for further trials. Yoghurt produced with this strain as an adjunct had good physicochemical properties. After 2 weeks of refrigerated storage, microbial loads (>7.0 log cfu g−1) were in accordance with international recommendations and guidelines for probiotic and starter cultures in milk products. Increasing the microbial load further, using concentrated and encapsulated inocula (10–11 log cfu g−1), gave yoghurt with long fermentation times and poor organoleptic properties.  相似文献

The free radical-scavenging activities of extracts of Aloe vera of leaf skin by supercritical CO2 extraction and solvent extraction were determined. An orthogonal array design matrix of L9 (34) was considered to optimize supercritical carbon dioxide extraction processing at a CO2 flow rate of 12–36 l h−1, 35–45 MPa and 32–50 °C. The optimum extracted yield of 1.47% was provided at 50 °C 36 l h−1, 35 MPa and 20% of modifier of methanol. These four factors were all demonstrated to be significantly crucial in the supercritical carbon dioxide extraction operation, as two-variable interactions. The extracts of A. vera rind by supercritical carbon dioxide extraction and solvent extracts provided significantly higher free radical-scavenging activities of 33.5% and 39.7%, respectively, than extracts of A. vera gel extracted by ethanol with a free radical-scavenging activity of 14.2%. The inhibition percentage of extracts of A. vera and reference antioxidants followed the decreasing order: Trolox (76.8%) > ethanol extracts of A. vera skin (39.7%) > BHT (35.9%) > the extract of supercritical carbon dioxide extraction (33.5%) >α-tocopherol (25.6%) > ethanol extracts of A. vera pulp (14.2%). Compared to BHT and α-tocopherol, the extracts of A. vera skin, by supercritical carbon dioxide extraction and ethanol, showed stronger antioxidant activities. Components in the rind of A. vera are responsible for the higher antioxidant activity of A. vera extracts.  相似文献

The effect of two commercially available adjunct cultures, LBC 80 (Lactobacillus casei subsp. rhamnosus) and CR-213 (containing Lactococcus lactis subsp. cremoris and Lc. lactis subsp. lactis) on the proteolysis in low-fat hard ewes’ milk cheese of Kefalograviera-type was investigated. Two controls, a full-fat cheese (306 g kg−1 fat, 378 g kg−1 moisture) and a low-fat cheese (97 g kg−1 fat, 486 g kg−1 moisture, made using a modified procedure), were also prepared. The effect of adjunct culture on proteolysis, as examined by polyacrylamide gel electrophoresis of cheese and water soluble cheese extracts, was marginal. The reverse-phase HPLC peptide profiles of the water soluble extracts from low-fat cheeses were similar although some quantitative differences were observed between low-fat control cheese and experimental cheeses. The fat content as reflected by the differences in peptide profiles affected the pattern of proteolysis. Proteolysis, as measured by the percentage of total nitrogen soluble in water or in 120 g L−1 trichloroacetic acid, was significantly (P<0.05) affected by the addition of adjunct cultures. Furthermore, the adjunct cultures enhanced the production of low molecular mass nitrogenous compounds; the levels of total nitrogen, soluble in 50 g L−1 phosphotungstic acid, and of free amino acids were significantly (P<0.05) higher in the low-fat experimental cheeses than in the low-fat control cheese.  相似文献

Study objectives were to evaluate ractopamine hydrochloride's (RAC) effect on performance, carcass characteristics, and tenderness of early weaned beef steers. Steers were assigned to a control diet (0 mg RAC·steer 1·d 1), 200 mg RAC mg·steer 1·d 1, or 300 mg RAC·steer 1·d 1. Steers fed 200 and 300 mg RAC·steer 1·d 1 gained 14.84 kg and 14.57 kg more live weight and produced 13.22 and 14.90 kg more hot carcass weight, respectively, than controls. Feed conversions for steers fed 200 or 300 mg RAC·steer 1·d 1 of RAC increased 45.2% and 47.3% and average daily gain increased 55.5% and 54.5% compared to controls, respectively. Feeding either dose of RAC increased (P < 0.05) loin muscle area and increased (P < 0.05) Warner–Bratzler shear force (WBSF) values compared to controls, however the magnitude of WBSF difference diminished (P > 0.05) over 14 days of postmortem aging. Results of this study confirm that RAC increases weight gain and feed efficiency, minimally impacts carcass quality and has manageable impacts on tenderness when fed at either 200 or 300 mg steer 1·d 1.  相似文献

Substantial numbers of aerobic bacteria but few coliforms or Listeria spp. and no Escherichia coli were recovered from both swab samples and brines circulated in cleaned equipment used for injecting pork loins. After meat was processed for 30 or 60 min, the numbers of aerobic bacteria in brines had increased by >1 log unit, to about 4.5 log cfu ml−1, but coliforms were <2 and E. coli and Listeria spp. were <1 log cfu ml−1. The numbers of bacteria on the surfaces of pork loins before and after injection of the meat were similar. No bacteria were recovered from the deep tissues of the uninjected meat, but aerobic bacteria were recovered at log-mean numbers of 2.1 log cfu g−1 and coliforms at log-total numbers of 1.2 log cfu 25 g−1 from 25 samples of deep tissues of injected meat. Aerobic bacteria were recovered at log total numbers of 1.0 log cfu 25 g−1 from 25 samples of injected pork cooked to a central temperature of 61 °C, but no bacteria were recovered from the deep tissues of meat cooked to 70 °C. The findings suggest that moisture-enhanced pork cooked to a medium rare condition can be microbiologically safe.  相似文献

Galotyri is a traditional Greek soft acid-curd cheese, which is made from ewes’ or goats’ milk and is consumed fresh. Because cheese processing may allow Listeria monocytogenes post-process contamination, this study evaluated survival of the pathogen in fresh cheese during storage. Portions (0.5 kg) of two commercial types (<2% salt) of Galotyri, one artisan (pH 4.0±0.1) and the other industrial (pH 3.8±0.1), were inoculated with ca. 3 or 7 log cfu g−1 of a five-strain cocktail of L. monocytogenes and stored aerobically at 4°C and 12°C. After 3 days, average declines of pathogen's populations (PALCAM agar) were 1.3–1.6 and 3.7–4.6 log cfu g−1 in cheese samples for the low and high inocula, respectively. These declines were independent (P>0.05) of the cheese type or the storage temperature. From day 3, however, declines shifted to small or minimal to result in 1.4–1.8 log cfu g−1 of survivors at 28 days of storage of all cheeses at 4°C, indicating a strong “tailing” independent of initial level of contamination. Low (1.2–1.7 log cfu g−1) survival of L. monocytogenes also occurred in cheeses at 12°C for 14 days, which were prone to surface yeast spoilage. When ca. 3 log cfu g−1 of L. monocytogenes were inoculated in laboratory scale prepared Galotyri of pH ≅4.4 and ≅3% salt, the pathogen died off at 14 and 21 days at 12°C and 4°C, respectively, in artisan type cheeses fermented with the natural starter. In contrast, the pathogen survived for 28 days in cheeses fermented with the industrial starter. These results indicate that L. monocytogenes cannot grow but may survive during retail storage of Galotyri despite its low pH of or slightly below 4.0. Although contamination of Galotyri with L. monocytogenes may be expected low (<100 cfu g−1) in practice, that long-term survival of the pathogen in commercial cheeses was shown to be unaffected by the artificial contamination level (3 or 7 logs) and the storage temperature (4°C or 12°C), which should be a concern.  相似文献

Total mercury and methylmercury concentrations were measured in the muscle tissue of two fish species from the Ionian and Adriatic seas. Higher total mercury and methylmercury concentrations were detected in striped mullet (Mullus barbatus), a benthic species (Ionian sea: Hg=0.40 μg g−1 wet wt, MeHg=0.40 μg g−1 wet wt; Adriatic sea: Hg=0.49 μg g−1 wet wt, MeHg=0.44 μg g−1 wet wt), than in hake (Merluccius merluccius), a pelagic species (Ionian sea: Hg=0.09 μg g−1 wet wt, MeHg=0.09 μg g−1 wet wt; Adriatic sea: Hg=0.18 μg g−1 wet wt; MeHg=0.16 μg g−1 wet wt). Total mercury residues were determined in all samples of both species from the Adriatic sea, while levels below the limit of detection were registered in 25% and 11%, respectively, of striped mullet and hake samples from the Ionian sea. In 18.8% and 22.2% of striped mullet samples from the Ionian and Adriatic seas, respectively, total mercury concentrations exceeded the maximum level fixed by the European Commission Decision (Hg=0.5 μg g−1 wet wt). In the two different species, mercury was present almost completely in the methylated form with mean percentages between 60% and 100%. The estimated weekly intake for total mercury was below the established the provisional tolerable weekly intake (PTWI) for both species, though their consumption provides a methylmercury intake above the WHO safety limit.  相似文献

Utilization of distillery stillage from bioethanol production for lactic acid and feed production was studied. The lactic acid fermentation of the stillage was performed by Lactobacillus rhamnosus ATCC 7469 and maximal lactic acid concentration of 50.18 g L 1, yield of 0.90 g g 1, productivity of 1.48 g L 1 h 1 and viable cell number of 5 × 109 CFU mL 1 were achieved. Solid residues with biomass remains after lactic acid fermentation were assessed for animal consumption. The content of proteins and ash decreased in the residues after the fermentation, whilst the content of oil and nitrogen free extract was higher when compared to unfermented samples. The digestible (17480.64 kJ kg 1) and metabolisable (17389.08 kJ kg 1) energies as well as digestibility (966.95 g kg 1) of the fermentation residue were very high. The in vitro assessment of L. rhamnosus ATCC 7469 survival in simulated gastric conditions has shown high survival rate (87%). In addition, this bacterium has shown good antimicrobial activity against the most important pathogens and capability to produce exopolysaccharide on different sugars present in animal diet. After effective lactic acid fermentation, the residues could be recommended as a high quality feed for monogastric animals.  相似文献

The combined effect of high-pressure (HP) treatment and bacteriocin-producing lactic acid bacteria (BP-LAB) on the survival of Listeria monocytogenes Scott A in cheeses made from raw milk that was inoculated with the pathogen at 4.80 log cfu mL−1, a commercial starter and one of seven strains of BP-LAB was investigated. On day 3, the counts of L. monocytogenes were 7.03 log cfu g−1 in a control cheese (without BP-LAB, not HP treated), 6.06–6.74 log cfu g−1 in cheeses with BP-LAB, 6.13 log cfu g−1 in a cheese without BP-LAB and treated on day 2 at 300 MPa, 2.01 log cfu g−1 in a cheese without BP-LAB and treated on day 2 at 500 MPa, 3.83–5.43 log cfu g−1 in cheeses with BP-LAB and treated on day 2 at 300 MPa, and 1.81 log cfu g−1 or less in cheeses with BP-LAB and treated on day 2 at 500 MPa. HP treatment was more effective on day 51 than on day 2.  相似文献

Ganoderma tsugae Murrill was available in the form of mature and baby Ling chih, mycelia and fermentation filtrate. From these four forms, methanolic extracts were prepared and their antioxidant properties were studied. Methanolic extracts from mature and baby Ling chih showed high antioxidant activities (96.8% and 93.6%) at 20 mg ml−1, and had EC50 values of 0.53 and 1.11 mg ml−1, respectively. EC50 values in reducing power were 5.00, 2.28, 0.93 and 2.15 mg ml−1 for Ling chih, baby Ling chih, mycelia and filtrate, respectively. Methanolic extracts from mature and baby Ling chih scavenged 1,1-diphenyl-2-picrylhydrazyl radicals by 88.4% and 93.8% at 5 mg ml−1, whereas those from mycelia and filtrate scavenged by 85.7% and 79.3% at 10 mg ml−1, respectively. EC50 values in chelating ability on ferrous ions were 4.82, 3.05, 1.10 and 3.41 mg ml−1 for Ling chih, baby Ling chih, mycelia and filtrate, respectively. Total phenols were the major naturally occurring antioxidant components found in all methanolic extracts and in the range of 24.0–35.6 mg g−1. Based on EC50 values, G. tsugae was good in antioxidant properties except for the scavenging ability on hydroxyl radicals.  相似文献

Ultraviolet (UV-C) irradiation is a non-thermal disinfection method, effective against a range of bacteria and viruses, which is being considered as an alternative to pasteurization of fruit juices. The objective of this study was to investigate the effect of UV-C irradiation on the polyphenolic content and in-vitro total antioxidant activity of apple juice. UV irradiation doses ranging from 0 to 240 mJ·cm 2 were delivered to apple juice and polyphenols, sugars, in-vitro total antioxidant activity and total phenols were profiled. The results demonstrated that UV-C irradiation in apple juices at relevant commercial disinfection doses induced significant reduction in the concentrations of chlorogenic acid, phloridzin, and epicatechin (p < 0.05). The induced changes were relatively minor for the above mentioned polyphenols, except phloridzin (50% reduction) at 240 mJ·cm 2. Epicatechin concentrations were reduced significantly (p < 0.05), whereas increase in catechin concentration was observed with increase in UV-C exposure to 240 mJ·cm 2. There was a minor reduction in sugar (glucose and fructose) concentrations with increasing exposure levels from 0 to 40 mJ·cm 2 (p > 0.05). In contrast, a slight increase in sugar concentrations as increase in UV-C exposure after 40 mJ·cm 2 was observed. These changes were not significantly different from control. Total phenolic content was well retained regardless of the UV-C exposure for apple juice. In-vitro total antioxidant activity changed when UV-C exposure exceeded 40 mJ·cm 2, but remained unchanged at the maximum UV-C dose of 240 mJ·cm 2. These results suggested that UV-C irradiation could be an effective alternative to conventional thermal processing for production of high quality apple juice.Industrial RelevanceThis research paper provides scientific evidence of the potential for UV-C irradiation to achieve meaningful levels of disinfection while retaining important bioactive compounds (polyphenols) in apple juice. In-vitro antioxidant activity and individual polyphenols were well retained at commercially relevant doses of 40 mJ·cm 2. From a nutritional perspective, UV-C irradiation is an attractive food preservation technology and offers opportunities for horticultural and food processing industries to meet the growing demand from consumers for healthier food products. Therefore, UV-C irradiated foods could be sold at a premium price to their thermally-processed counterparts, as they have retained their fresh-like properties. This study would provide technical information relevant for commercialization of UV-C treatment of juices.  相似文献
