The effects of gel from ground chia (Salvia hispanica L.) were studied as a fat replacer in sweet pan breads. This substitution was addressed to reduce the total amount of fat in the product and to improve the nutritional value of the products regarding the fatty acid composition. The effects on the baking results were determined by assessing common baking evaluations and texture analysis after 2 and 48 h. The doughs were characterised with rheometer and rheofermentometer measurements. Rheometer measurements revealed that the replacement resulted in softer doughs with decreasing values for storage and loss moduli with increasing chia content. The yeast activity was increased with incorporated chia gel compared to the control. The best results for the baking experiments were obtained with 25% fat replacement through ground chia gel. Here, the highest volume yield with the softest crumb even after 48 h was achieved.  相似文献

Chia seed (Salvia hispanica) is an ancient oilseed used by Mayas and Aztecs as foodstuff. This seed is a natural source of omega-3 fatty acids (α-linolenic acid), soluble and insoluble fibers, and proteins in addition to other important nutritional components, such as vitamins, minerals, and natural antioxidants. Chia can be considered as “functional food” because apart from contributing to human nutrition, chia helps to increase satiety index, prevent cardiovascular diseases, inflammatory and nervous system disorders, and diabetes, among others. BackgroundThe outstanding nutritional and technological properties lead to innovative applications of chia (Salvia hispanica L.) in food products.Scope and approachThe aim of this contribution is to give an overview of the various food application approaches for chia. The nutritional and technological properties of chia as well as its technological and innovative utilization are presented. Examples for the various applications in food products are given in five main topics: baked goods, dairy products, meat and fish products, gluten-free products and other products such as functional food, hydrocolloid and thickener.Key findings and conclusionsBesides the nutritional benefits of chia incorporation in food products the technological effects are emphasized very often. Summarized in five main topics, most authors conclude that chia is a valuable food ingredient for functional food development. The application of chia in baked goods for example is beneficial not only to improve the nutritional value but acting as hydrocolloid or substitute egg, fat or gluten. The increase of oil stability and applications as food thickener in novel food applications are of high importance too. As different chia fractions give various options for applications the utilization of chia for further food products will increase significantly in the future.  相似文献

The consumption of chia seed (Salvia hispanica L.) has increased in recent years due its high content of omega‐3 fatty acids and dietary fiber. This seed also has a high concentration of proteins and essential amino acids, becoming a promising source of bioactive peptides. The objective of this review was to identify the composition and the beneficial effects of chia seeds (S. hispanica L.), their proteins, peptides, and their potential impact on human health. The UniProt database was used to identify the chia proteins and their amino acid sequences. The BIOPEP database was used to analyze the peptides's bioactive potential. A total of 20 proteins were cataloged in chia seed, 12 of those were involved in the regular metabolic processes of the plant cells. However, eight proteins were specifically related to production and storage of plant lipids, thus explaining the high concentration of lipids in chia seeds (around 30%), especially omega‐3 fatty acids (around 20%). The analyses of amino acid sequences showed peptides with bioactive potential, including dipeptidyl peptidase‐IV inhibitors, angiotensin‐converting enzyme inhibitors, and antioxidant capacity. These results correlated with the main health benefits of whole chia seed in humans such as antioxidant capacity, and hypotensive, hypoglycemic, and anticholesterolemic effects. Such relation can be associated with chia protein and peptide compositions and therefore needs further investigation in vitro and in vivo.  相似文献

The processing parameters related with chia oil extraction employing screw press have not been studied yet. A Box–Behnken experimental design was used to study the optimization process by response surface analysis. The independent variables considered were seed moisture content, restriction die, screw press speed and barrel temperature, while the response variables measured were oil yield, fines content in oil and oil quality (acidity, peroxide index, K232, K270, values, antioxidant activity and total tocopherol content). Since chemical quality data of chia seeds oil pressed at different conditions was not affected, the response was optimize to maximize oil yield. The results suggested that 0.113 g/g dry solids (0.101 g/g seed), 6 mm restriction die, 20 rpm screw press speed and 30 °C barrel temperature were the best processing combination to maximize oil yield.  相似文献

Chia seed (Salvia hispanica L.) is the greatest known plant source of n-3 α-linolenic acid. The present study evaluated the effects of 3 inclusion levels of chia seed [zero (control); low, 2.7% (CLow); and high, 5.5% (CHigh)] in diets of dairy goats on milk yield and fatty acid profile. Nine Saanen dairy goats in the last third of lactation period, live weight 38 ± 8.7 kg, housed in metabolic cages, were fed iso-proteic and iso-energetic (160 g of crude protein/d and 11 MJ of metabolizable energy/d) diets. Gas chromatography was used to analyze fatty acid profile and total conjugated linoleic acid (CLA). Silver ion HPLC was used to analyze the isomeric profile of CLA. The results were subjected to variance analysis using a Latin square design repeated 3 × 3. The CHigh treatment was higher for dry matter, neutral detergent fiber, and acid detergent fiber intake compared with CLow and control diets. Digestibility was not affected by the inclusion of chia seeds. The CHigh diet improved N intake with respect to the control and CLow diet. Milk yield and chemical composition were not affected by the treatment. The milk fatty acid profile of C18:0, C18:1, C18:2, and C:20 was higher for CHigh than the other treatments. The in vitro gas production (mL of gas/g of dry matter) was lower in CHigh than the control diet. In conclusion, the addition of chia seeds at the CHigh level in dairy goat diets negatively affected in vitro rumen fermentation, but increased the milk fatty acid profile of C18:0, C18:1n-9 cis, and C:20, monounsaturated fatty acids, and polyunsaturated fatty acids. The total CLA content increased from 0.33 to 0.73% with the supplementation of chia to the diet, as well as the isomers cis-9,trans-11, trans-7,cis-9, trans-11,cis-13, and trans-12,trans-14.  相似文献

Growing consumer demand for healthy and nutritious products has motivated scientists and food manufacturers to design novel dairy products with higher fiber levels and lower fat content that are free of chemical additives. Chia seed mucilage (CSM) is a healthy natural gel extensively used as a dietary source of soluble fiber, a bulking agent, and a fat replacer in a large variety of foods. In this study, we evaluated the effect of CSM on the nutritional, technological, and sensory properties of skimmed yogurts. The addition of 7.5% CSM to a yogurt formula lowered the degree of syneresis of the resulting yogurt during storage compared with full-fat yogurts. The nutritive value of the enriched yogurts improved due to higher levels of dietary fiber compared with full-fat and skimmed yogurts. Moreover, rheological measurements revealed greater consistency, firmness, and viscosity, as well as the formation of a highly structured network and better resistance to stress in yogurts containing 7.5% CSM. The sensory acceptance of the yogurts enriched with 7.5% CSM was similar to the reference samples in acidity, creaminess, and viscosity terms. These results confirm the feasibility of using CSM as a fat replacer to design novel skimmed yogurts.  相似文献

In this study, the nutritional composition and phytochemical composition of the rosehip seed, and the fatty acid and sterol compositions of the seed oil were investigated. The rosehip seed contained valuable phytochemicals such as phenolic compounds (2554 μg/g), carotenoids (2.92 μg/g), and ascorbic acid (1798 μg/g). Furthermore, the rosehip-seed oil was rich in polyunsaturated fatty acids, linoleic acid (54.05%), linolenic acid (19.37%), and phytosterols, mainly β-sitosterol (82.1%). The rosehip seed and seed oil were found to have antioxidant activity measured by trolox equivalent antioxidant capacity assay. It can be concluded that the rosehip seed and seed oil may be utilized as a source of phytonutrients.  相似文献

Chia seeds were utilized by Aztecs as food and for medicinal purposes. Nowadays, this crop is gaining importance in many countries, due to its nutritional attributes. Some physical properties and chemical characteristics of chia seeds from four different regions of Mexico were evaluated and compared. Seed size distribution was not significantly affected (P > 0.05) by the region, with similar values of seed length (2.03–2.10 mm), width (1.27–1.32 mm), thickness (0.77–0.81 mm) and surface area (4.95–5.42 mm2). Bulk density (662–741 kg m?3), geometry and granulometric distribution were also determined. Origin of tested seeds significantly (P < 0.05) influenced their composition; all seeds had high contents of protein (18.5–22.3%), fat (21.5–32.7%) and fibre (20.1–36.1%). Chia seeds ratio between omega‐3 and omega‐6 fatty acids was 3:1 for the studied regions; seeds from Chiapas and Michoacán had the highest proportion of ω‐6 and ω‐3 fatty acids. The studied seeds contained phenolic compounds in the range of 0.53–0.71 mg GAE g?1.  相似文献

The composition and content of certain bioactive components of the cold pressed oil obtained from six samples of pumpkin seeds (Cucurbita pepo L.) cultivated in Serbia were analyzed by GC and GC/MS. The composition and content of fatty acids, tocopherols and phytosterols, and the total content of squalene were determined. The results indicate oil's excellent quality, with high contents of monounsaturated fatty acids (37.1 ± 0.70–43.6 ± 0.69 g/100 g of total fatty acids), total tocopherols (38.03 ± 0.25–64.11 ± 0.07 mg/100 g of oil), sterols (718.1 ± 6.1–897.8 ± 6.8 mg/100 g of oil) and especially squalene (583.2 ± 23.6–747 ± 16 mg/100 g of oil). High content of squalene, phytosterols and monounsaturated fatty acids recommend the use of this type of the oil in the nutritional and medical purposes.  相似文献

The objective of the present study was to determine the composition of fatty acids in the whole grain, hulls, bran and the light flour of common (Fagopyrum esculentum Moench) and Tartary (Fagopyrum tataricum (L.) Gaertn) buckwheat harvested in two consecutive years. Fatty acid composition for different milling fractions was determined as methyl esters using gas chromatography. Nine fatty acids were determined: lauric (12:0), myristic (14:0), palmitic (16:0), palmitoleic (16:1), stearic (18:0), oleic (C18:1; n-9), linoleic (C18:2; n-6), α-linolenic (C18:3; n-3) and arachidic (20:0) acid. The highest relative content was determined for linoleic acid (from 35.54 to 47.57%), followed by oleic acid (from 20.96 to 40.76%) and palmitic acid (from 13.86 to 26.42%). The total fatty acid content was the highest in bran (up to 62.64 g/kg), followed by whole grains (up to 22.93 g/kg), light flour (up to 9.69 g/kg) and hulls (up to 5.87 g/kg). Saturated fatty acid content was the highest in the hulls and the lowest in the bran. Polyunsaturated fatty acid content was the highest in light flour. High positive correlations were found between saturated fatty acids with 18 carbon atoms or less.  相似文献

将0.04%茶多酚、0.02%甘草提取物、1.0%VE和不等量(1.0%、2.0%)鼠尾草添加到羊肉乳化香肠(简称羊肉肠)中,考察添加物质对羊肉肠脂肪氧化、颜色和挥发性风味物质主成分的影响,并就挥发性物质中酯类、酸类、醇类和醛类物质的种类和相对含量进行分析。结果表明,与对照组相比,天然活性物质的添加降低了羊肉肠脂肪的氧化程度,添加样品之间没有显著性差异(P0.05);所有样品的挥发性物质主成分相似,不能通过主成分分析进行区分;羊肉肠的L~*、a~*、b~*、C~*和H~*值均有不同程度的变化,尤其是甘草提取物、鼠尾草的添加对C~*和H~*值的影响显著(P0.05);处理组样品中酯类、醇类、酸类和醛类物质的种类和相对含量均有不同程度的变化。不同添加物对羊肉肠品质的影响各异,鼠尾草抑制脂肪氧化程度与添加量非正相关,挥发性风味物质的种类和数量与添加量同样未发现明显量效关系。  相似文献
