Despite the vast body of available literature on the possibilities of essential oils (EOs) as food preservatives or functional ingredients, the sensory impact of their addition to foods has barely been approached. This work focuses on the hedonic taste acceptance of 3 food products (tomato juice, vegetable soup, and poultry burgers) when they are incorporated with potentially antimicrobial concentrations (20 to 200 μL/L) of 6 selected EOs (lemon, pennyroyal mint, thyme, and rosemary) and individual compounds (carvacrol, p‐cymene). Although addition of 20 μL/L of pennyroyal mint or lemon EO did not change the taste acceptance of tomato juice, higher concentrations of these compounds or any concentration of the other 4 compounds did. In vegetable soup, the tolerance limit for rosemary EO, thyme EO, carvacrol, or p‐cymene was 20 μL/L, while the addition of 200 μL/L of lemon EO was accepted. Tolerance limits in poultry burgers were established in 20 μL/L for carvacrol and thyme EOs, 100 μL/L for pennyroyal mint EO and p‐cymene, and 200 μL/L for lemon and rosemary EOs. Moreover, incorporation of pennyroyal mint EO to tomato juice or poultry burgers, and enrichment of vegetable soup with lemon EO, could contribute to the development of food products with an improved sensory appeal.  相似文献

Sous vide cook-chill (SVCC) is a technology characterized by vacuum-packaging of raw or partially prepared foods before pasteurization, followed by rapid chilling and storage below 3°C. The application of essential oils (EOs) is a strategy to control pathogens and to extend the shelf life of products by reducing microbial levels and oxidative processes. The aim of this study was to evaluate the efficacy of Rosmarinus officinalis L. (rosemary) Thymus vulgaris L. (thyme) EOs against L. monocytogenes ATCC 679, inoculated in beef processed by SVCC stored at 2°C and 8°C for 1, 2, 3, 7 and 14 days. Leaves were dried and hydrodistilled in a Clevenger. Determination of minimum inhibitory concentration (MIC) assay was performed. Beef samples of m. longissimus thoracis et lumborum were packaged in bags inoculated and added individually with one of each EO at MIC values. Bags were vacuum-sealed, and samples were processed at 55°C/65min (for 3-log10 reduction). L. monocytogenes enumeration was done according to ISO 11290-2. A reduction of the population of L. monocytogenes was observed in all samples at 2°C. At day 14, the population of L. monocytogenes was similar in thyme and control at 2°C and 8°C. Inversely, rosemary at both temperatures show an added reduction of about 2-log10, comparatively to control. These results support the possibility of using rosemary as natural preservative to contribute in the reduction of L. monocytogenes and confirm the importance of using adequate chilling storage for maintain this pathogen at acceptable levels in view to prevent the risk for consumers.  相似文献

The content of the flavonoid kaempferol in different experimental rosemary honey samples produced in Aragón (Spain) and in some commercial rosemary honey samples produced in different Spanish regions was evaluated by HPLC. The content ranged between 0·33 and 2·48 mg kg−1 of honey. Nectar has been suggested recently as the origin of this flavonoid. Rosemary pollen contained kaempferol 3-diglucoside and 3-glucoside, and therefore could be an alternative source for the kaempferol found in rosemary honey. However, there was no correlation between the kaempferol present in honey and pollen content. This suggests that the contribution of pollen flavonoids to the pool of flavonoids found in honey is very small, and that the search for phenolic markers of the botanical origin of honey should be addressed to the identification of nectar flavonoids or other nectar constituents. © 1998 SCI.  相似文献

In this research, rheological properties of blends of pine honey (3%, 6%, and 9%) with sesame pastes (tahin) produced from hulled roasted sesame seeds, called simply tahin, and from unhulled roasted sesame seeds, so-called Bozkir tahin, were determined at temperatures ranging from 10°C to 60°C and at speeds ranging from 0.5 to 100 rpm. Tahin and Bozkir tahin blends with pine honey were found to exhibit non-Newtonian, pseudoplastic behavior at all temperatures. Apparent viscosities versus speed data were successfully fitted to the power law model. The flow behavior index, n, varied in the range of 0.4226–0.6228 for the tahin–pine honey blends, and in the range of 0.4661 to −0.7266 for the Bozkir tahin–pine honey blends. The consistency index, K, was in the range of 9.34–36.42 Pa·sn for tahin–honey blends, and in the range of 9.92–37.53 Pa·sn for Bozkir tahin–honey blends. The consistency index (K) increased with increasing honey levels in both tahin types. According to statistical analysis, the exponential model was a better model to describe the effect of the soluble solids on the viscosity of tahin samples represented by the pine honey percentage. The emulsion stability of both tahin types improved with the addition of pine honey. It was also correlated with activation energy (E a), Arrhenius constant, some sensory properties such as spreadibility, firmness and overall acceptance, and color parameters such as the C and h. Temperature sensitivity of the consistency index was assessed by applying an Arrhenius type equation, and E a value appeared in the range of 7.61–10.05 kJ/mol for tahin–honey blends and in the range of 9.02–10.50 kJ/mol for Bozkir tahin–honey blends.  相似文献

Fresh Valencia orange juice was treated with 0, 70, and 350 ppm of commercial pectic enzymes, concentrated to 72° Brix and stored at –7°, –1°, 7°, and 13°C for up to 6 months. The 70 ppm enzyme treatment successfully reduced initial apparent viscosity by about 25%. For the 70 ppm enzyme treated samples after 6 months storage at all four temperatures, juice cloud remained acceptable, furfural remained below the significant level, and at ?1°C, vitamin C levels were above 32 mg/100 mL. There was no significant difference in taste after 6 months storage at ?7°C between control and 70 ppm enzyme treated samples. Product quality of enzymatically treated orange concentrate stored at refrigerated temperatures was of sufficient quality to realize potential savings of 17% in storage and 30% in refrigeration.  相似文献

A total of 14 Mexican honeys were screened for quality parameters including color, moisture, proline, and acidity. Antioxidant properties of complete honey and its methanolic extracts were evaluated by the DPPH, ABTS, and FRAP assays. In addition, the antimicrobial activity of complete honeys against Bacillus cereus ATCC 10876, Listeria monocytogenes Scott A, Salmonella Typhimurium ATCC 14028, and Sthapylococcus aureus ATCC 6538 was determined. Most of honeys analyzed showed values within quality parameters established by the Codex Alimentarius Commission in 2001. Eucalyptus flower honey and orange blossom honey showed the highest phenolic contents and antioxidant capacity. Bell flower, orange blossom, and eucalyptus flower honeys inhibited the growth of the 4 evaluated microorganisms. The remaining honeys affected at least 1 of the estimated growth parameters (increased lag phase, decreased growth rate, and/or maximum population density). Microorganism sensitivity to the antimicrobial activity of honeys followed the order B. cereus > L. monocytogenes > Salmonella Typhimurium > S. aureus. The monofloral honey samples from orange blossoms, and eucalyptus flowers demonstrated to be good sources of antioxidant and antimicrobial compounds. All the Mexican honey samples examined proved to be good sources of antioxidants and antimicrobial agents that might serve to maintain health and protect against several diseases. PRACTICAL APPLICATION: The results of the study showed that Mexican honeys display good quality parameters and antioxidant and antimicrobial activities. Mexican honey can be used as an additive in the food industry to increase the nutraceutical value of products.  相似文献

A non‐thermal technology using magnetic field (MF) can improve flowability of honey while maintaining its physicochemical quality. Effects of MF treatment on rheological and physicochemical properties of longan honey exposed to MF for 2 h at 15 °C and 28 °C were investigated and compared with those of non‐MF samples. Increasing MF strength at 28 °C caused a reduction in firmness (P ≤ 0.05), but not in consistency, index of viscosity and cohesiveness. The effects at 15 °C were greater. Newtonian behaviour was observed for all samples. Shear stress and viscosity were significantly reduced with increasing MF strength at 15 °C (P ≤ 0.05), but less at 28 °C. pH was also decreased. Total soluble solids content was increased at both temperatures (P ≤ 0.05). Colour index was not significantly affected by MF, whereas optical density was slightly increased at high MF strengths (P > 0.05). L* values for the MF treated samples were increased (P ≤ 0.05), giving lighter and more pleasant colour to the honey. MF treatment improved overall qualities of honey.  相似文献

Purge and Trap (P&T) has been evaluated as a fractionation technique for the GC–MS analysis of the most volatile compounds in honey. The volatile fraction of twenty-two commercial honeys of eight different botanical sources (eucalyptus, thyme, citrus, rosemary, heather, lavender, multiflower and honeydew) was characterized by P&T–GC–MS. Hundred volatile compounds were characterized, 18 of them being determined for the first time in honey. Compounds detected included volatiles derived from the floral nectar or honeydew source such as terpenes, furan derivatives from honey processing and storage and other compounds whose origin could be related to microbial or environmental contamination. This method has also been validated with regard to data reproducibility; with relative data (percentage of total volatile composition) showing a better precision over quantitative results calculated using an internal standard. Application of multivariate statistical analysis to P&T–GC–MS data has shown to be very promising to classify samples according to their botanical origin.  相似文献

The purpose of this work was to investigate the rheological behavior of Spanish honeys under different conditions (at different temperatures and concentrations). All the samples were characterized to determine their physicochemical (moisture, 0Brix, pH, ash, conductivity, color, total acidity, diastase activity, 5-hydroxymethylfurfural content, sugar content) and thermal (glass transition temperature) profiles. The honeys samples (80.4–82 0Brix) behaved as Newtonian fluid; as expected, their viscosity increased with the solid content and decreased with the temperature. Two experimental viscosity models (Arrhenius and Vogel–Taumman–Fulcher) were checked using the experimental data to correlate the influence of temperature on honey viscosity. A simplified model was proposed to describe the combined effect of the temperatures and concentrations (0Brix) on the viscosity of Spanish honeys. The dynamic viscosity and complex viscosity had the same magnitude at 40 °C, 45 °C, and 50 °C for of all the samples and the Cox Merz rule could be applied at these temperatures.  相似文献

In this paper, the 5-hydroxymethylfurfural (HMF) contents of the acacia honeys after heat treatment were determined by HPLC; the kinetics of HMF formation was also investigated. The HMF content of acacia honey was 0.38±0.01mg/kg, but rapidly increased to the maximum of 18,320.07±14.29 mg/kg at 190°C and decreased to 1,180.24±6.54 mg/kg at 230°C after heating. The HMF content increased gradually in honey samples heated in 12 h at the temperature of 80, 100, and 120°C. The apparent frequency constant was k f =3.91×1025/h, and the apparent activation energy was E a=173.10 kJ/mol. The HMF content in the acacia honey was related to honey composition, heating temperature, and time, and the HMF formation could also be related to the initial honey pH.  相似文献

An antimicrobial sachet containing microcellular foam starch (MFS) with embedded rosemary oil and thyme oil was developed to reduce bacterial growth in shredded mozzarella cheese. The efficacy of the volatiles of oils at various concentrations in reducing Listeria monocytogenes as well as the release of the oils from the MFS have been also determined in this study. The cheese, inoculated with a cocktail of 5 strains of L. monocytogenes (approximately 3 log CFU/g), was packaged in a Nylon/EVOH/PE bag. A paper sachet containing MFS embedded with rosemary oil and thyme oil, separately or together, was inserted into the bag. Rosemary and thyme oil volatiles released from the sachet restricted the growth of L. monocytogenes, resulting in a 2.5 log CFU/g reduction on day 9 at 10 °C. The volatile oils also showed inhibitory effects on the growth of lactic acid bacteria (LAB) and total aerobic bacteria (TAB). After 15 d at 10 °C, the numbers of LAB and TAB in the samples containing the sachet with both oils experienced a 1.2 and 1.4 log CFU/g reduction, respectively, compared to untreated samples. Nonetheless, the sachet treatment produced a distinct odor, unfavorably received by the panelists. The results suggest the potential for application of the sachet system for the reduction of growth of L. monocytogenes, LAB, and TAB in food products.  相似文献

The HPLC phenolic profiles of 52 selected unifloral honey samples produced in Europe were analysed to detect possible markers for the floral origin of the different honeys. Lime‐tree (five markers), chestnut (five markers), rapeseed (one marker), eucalyptus (six markers) and heather (three markers) honeys had specific markers with characteristic UV spectra. In addition, the flavanone hesperetin was confirmed as a marker for citrus honey, as well as kaempferol for rosemary honey and quercetin for sunflower honey. Abscisic acid, which had been reported to be a possible marker for heather honey, was also detected in rapeseed, lime‐tree and acacia honeys. Ellagic acid in heather honey and the hydroxycinnamates caffeic, p‐coumaric and ferulic acids in chestnut, sunflower, lavender and acacia honeys were also detected. The characteristic propolis‐derived flavonoids pinocembrin, pinobanksin and chrysin were present in most samples in variable amounts. © 2001 Society of Chemical Industry  相似文献

The inhibitory effect of various concentrations of mint, sage, bay leaves, thyme, aniseed, red pepper and citrus peel oils on the growth of an aflatoxin-producing strain of Aspergillus parasiticus and its production of aflatoxin was studied. Amongst the herbs used, thyme was found a highly effective antifungal agent. Growth and aflatoxin formation was depressed by orange and lemon oils at a concentration of 1.6% through 10 days incubation.  相似文献

Seventeen flavonoid aglycones were identified in various experimental and commercial citrus honey samples by HPLC analysis. The flavanone hesperetin was detected in all samples. This flavanone was not detected in any of the honey samples, from diverse floral origin (including rosemary, lavender, sunflower, almond, sweet chestnut, white clover, Erisarum, Robinia, Rhododendron, Tilia, Prosopis, Eucalyptus and Calluna honeys) previously investigated. The analysis of the flavonoids present in orange nectar revealed that the flavanone hesperidin (hesperetin-7-rutinoside) was the major flavonoid detected and, therefore, this should be the main source of the hesperetin found in citrus honey. Hesperetin should be produced by hydrolysis of hesperidin by the bee enzymes present in honey. These results suggest that hesperetin could be used as a marker for the botanical origin of citrus honey.  相似文献

The antioxidant properties of tert-butylhydroquinone (0·5 g kg?1 + 20 g kg?1 ascorbic acid—TBHQ-AS) and an extract of rosemary (2·5 g kg?1) alone and in combination were determined by their addition as solutions to cooked fish flakes stored at - 20°C. Oxidation was measured by following changes in free fatty acids, thiobarbituric acid number, fatty acid composition and sensory evaluation. The order of effectiveness in inhibiting oxidation was TBHQ-AS > combination > rosemary > untreated control ?70°C > untreated control -20°C. Sensory evaluation indicated that green aroma and flavor notes were associated with the rosemary extract, while fish oil notes were associated with untreated samples.  相似文献

Rheological properties of four unprocessed unifloral Australian honeys (heath, tea tree, yapunya, and yellow box) and an artificial honey were analysed at 20°C. A model previously used to describe viscosity data of various sugar and sugar mixtures was used to describe the concentration dependence of the viscosity of honey samples with varying moisture contents. The model successfully described the sugar concentration dependence of the unadulterated and medium moisture (70–85% solids) range honey samples.  相似文献

Antioxidant fractions from four herb spices belonging to the Lamiaceae family: rosemary (Rosmarinus officinalis), sage (Salvia officinalis), thyme (Thymus vulgaris) and hyssop (Hyssop officinalis) were isolated using supercritical CO2 at 35 MPa and 100 °C. The antioxidant fractions were characterized chemically by HPLC-DAD/ESI-ToF-MS. Antioxidant activity of obtained extracts was determined by measuring their ability to scavenge stable 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical and reactive hydroxyl radical during the Fenton reaction trapped by 5,5-dimethyl-1-pyroline-N-oxide (DMPO), using electron spin resonance (ESR) spectroscopy. The antioxidant activity of the extracts was compared to the activity of butylated hydroxyanisole (BHA) and Flavor' Plus? water-soluble rosemary extract. In DPPH radical assay the order from the strongest to the weakest antioxidant activity was: BHA, thyme extract, Flavor' Plus?, rosemary and sage extracts, and hyssop extract, while in hydroxyl radical assay order was: Flavor' Plus?, sage extract, rosemary extract, hyssop extract, BHA and thyme extract.Industrial relevanceSpices and herbs have been used not only for flavoring food but also for improving the overall quality of the product and to extend the shelf-life of foods. The present investigation relates to the field of food additives, and particularly to an antioxidant fractions from four herb spices which belong to the Lamiaceae family: rosemary (Rosmarinus officinalis), sage (Salvia officinalis), thyme (Thymus vulgaris) and hyssop (Hyssop officinalis). Butylated hydroxyanisole (BHA) and Flavor' Plus? are used in food industry as antioxidants due to their ability to prolong the shelf-life of foodstuffs by protecting them against deterioration caused by oxidation, such as fat rancidity, colour changes, degradation of the flavor and loss of nutrient value. Synthetic antioxidants such as BHA now being replaced by natural antioxidants because of their possible toxicity and due to a suspected action as promoters of carcinogens. The present study confirms that investigated herb spices belonging to the Lamiaceae family present important sources for the production of food additives.  相似文献

This study was conducted to evaluate the survival of 7 Shiga‐toxigenic Escherichia coli (STEC) in fresh cold‐pressed juice and the antimicrobial efficacy of 4 essential oils (EO: achillea, rosemary, sage, and thyme). The minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) of each EO was determined using microdilution assays evaluated at pH levels 4 and 7; as well as at 4 and 25 °C; daily for up to 5 d. Results indicated that 5 of 7 serotypes survived well in cold‐pressed raw juice for at least 4 d at 4 °C and pH 3.5 with no significant (P > 0.05) reduction in viability. The EO showed varying degrees of antimicrobial activity against the 7 STEC. The MIC and MBCs were lowest for thyme (2 μg/L) and highest for sage (15 to 25 μg/L). The antimicrobial activity was enhanced at low pH and temperature. Data showed that although the top 7 STEC could survive low pH and temperature in vitro and in cold‐pressed juices, EO, especially from thyme and rosemary, reduced STEC to an undetectable level at 4 °C, suggesting that they could be used as natural antimicrobials in juice.  相似文献

A simple method was developed for the simultaneous determination of glyphosate, its main degradation product (aminomethylphosphonic acid), and glufosinate in honey. Aqueous honey solutions were derivatised offline prior to direct analysis of the target analytes using online solid-phase extraction coupled to liquid chromatography-tandem mass spectrometry. Using the developed procedure, accuracies ranging from 95.2% to 105.3% were observed for all analytes at fortification levels of 5, 50, and 150 μg kg?1 with intra-day precisions ranging from 1.6% to 7.2%. The limit of quantitation (LOQ) was 1 μg kg?1 for each analyte. Two hundred honey samples were analysed for the three analytes with AMPA and glyphosate being most frequently detected (99.0% and 98.5% of samples tested, respectively). The concentrations of glyphosate were found to range from <1 to 49.8 μg kg?1 while those of its degradation product ranged from <1 to 50.1 μg kg?1. The ratio of glyphosate to AMPA was found to vary significantly amongst the samples where both analytes were present above the LOQ. Glufosinate was detected in 125 of 200 samples up to a maximum concentration of 33.0 μg kg?1.  相似文献
