This study focused on the exploration of the potentials of extracting antioxidants from peels and stems of yellow-fleshed and white cassava varieties. The effect of particle size (0.2 and 0.5 mm) and variety on the phenolic content and antioxidant activity was assessed. The peels of the yellow-fleshed cassava variety with a particle size of 0.2 mm showed the highest phenolic content with 681.5 GAE mg 100 g−1 and antioxidant activity of 19% and 425 μM TE g−1 dry matter using DPPH and FRAP assays respectively. The stems of the white cassava with a particle size of 0.2 mm exhibited high phenolic content (442.4 GAE mg 100 g−1) and antioxidant activity of 12.8% and 234 μM TE g−1, better than the stem of the yellow-fleshed cassava. These results indicate that phenolic and antioxidant extractions were influenced by variety, the plant parts and particle size for the antioxidant assays.  相似文献

The study presents changes in the phenolic levels, antioxidant and anti‐inflammatory potential of purple basil leaves caused by different chemical elicitors: arachidonic acid (AA), jasmonic acid (JA) and β‐aminobutyric acid (BABA). The application of the all tested elicitors increased the concentration of phenolic compounds, including flavonoids and phenolic acids; especially, in comparison with control (457.62 μg g?1 FW), the rosmarinic acid level significantly increased after AA and JA treatment ‐ 705.0 and 596.5 μg g?1 FW, respectively. Phenolics from AA‐elicited plants showed the highest anti‐inflammatory activities designated as lipoxygenase (EC50 = 1.67 mg FW mL?1) and cyclooxygenase inhibition (EC50 = 0.31 mg FW mL?1). Elicitors' treatments (especially AA and JA) may be a very useful biochemical tool for improving the production of phenolic compounds in purple basil leaves.  相似文献

The porcino is good source of phenolics and has been used to enrich wheat flour. The antioxidant activity and the content and composition of free and bound phenolic acids in the dough of wheat and porcino flour mixture (70:30 w/w) were investigated. The free form in the amount of 1305.76 μg g?1 was the main part of the phenolic content in the flour mixture. By dough mixing, the content of free phenolics increased by approximately 70%. Further thermal processing decreased the content of both forms of phenolics compared to dough after mixing, but the content of free phenolics of 1764.24 μg g?1 is still higher than in the flour mixture. The stability of the detected phenolic acids during mixing and thermal processing depended on whether they were in free or bound form. After thermal processing, the total content of detected phenolic acids was 683.31 μg g?1, indicating that approximately 87% of the total content of phenolic acids detected in flour mixture was retained.  相似文献

Wheat bran was fermented at 28 °C for 7 days under 70% humidity by Aspergillus niger, Aspergillus oryzae and Aspergillus awamori. Total phenolic content (TPC) of the unfermented sample was 1531.5 μg g?1 wheat bran. After the fermentation of Aspergillus awamori, Aspergillus oryzae and Aspergillus niger, TPC reached 5362.1, 7462.6 and 10 707.5 μg g?1, respectively. The antioxidant activity in the extractions of fermented wheat bran also increased significantly compared with the unfermented sample (P < 0.05). Aspergillus niger showed the greatest capacity to release bound ferulic acid (416.6 μg g?1). Aspergillus oryzae and Aspergillus awamori had the advantages of releasing more chlorogenic acid (84.0 μg g?1) and syringic acid (142.3 μg g?1), respectively. The destructive effect of Aspergillus niger on wheat bran structure was the strongest, followed by that of Aspergillus oryzae. This effect of Aspergillus niger may be due to its higher cellulase, xylanase, arabinofuranosidase and β‐xylosidase activities. Besides, Aspergillus oryzae possessed higher β‐glucosidase activity, and Aspergillus awamori had higher α‐amylase and feruloyl esterase activities. Aspergillus niger may be the best to release bound phenolic acids in the three Aspergillus species. These will provide the helpful information for understanding mechanism of the fermentation by Aspergillus species releasing bound phenolic in wheat bran.  相似文献

The content of total polyphenolics, antioxidative capacity and antiproliferative activity were tested in wild and cultivated blackberry pomace. Wild blackberry pomace extract Tw2 showed the highest following contents: total polyphenolics (50.16 mg GAE g−1 dw), flavonoids (7.73 mg Qc g−1 dw), flavonols (6.63 mg Qc g−1 dw) and total monomeric anthocyanins (13.40 mg Cy g−1). Tw2 extract significantly inhibited free radicals: IC50DPPH = 127.76 μg mL−1, IC50ABTS = 26.53 μg mL−1 and IC50 ˙ OH = 168.62 μg mL−1, and the growth of breast adenocarcinoma IC50MCF7 = 306.68 μg mL−1 and cervix epitheloid carcinoma cell lines IC50HeLa = 315.49 μg mL−1. Wild blackberry varieties had higher extraction yields, higher total polyphenolic contents and possessed stronger biological effects compared to cultivated blackberries (P < 0.05). All blackberry extracts showed high biological potential that could be attributed to high total polyphenols and flavonoids content and could be utilised as value-added functional food.  相似文献

Bran is detached from cereals during roller-milling operations and considered as a byproduct of milling. Bran carries phenolics and antioxidants in appreciable quantities which can be heightened by modification. In the present project, four cereals were under study that is, wheat, barley, millet and sorghum. Bran was separated from cereal grains and was subjected to size reduction that is, fine (1 mm) and coarse (2 mm) and enzymatic modification by using xylanase and cellulase. Total phenolic content (TPC), total flavonoids content (TFC) and phytic acid were determined spectrophotometrically and phenolic acids through HPLC. TPC and TFC were recorded highest in xylanase-treated millet bran (0.304 mg GAE g−1 and 211.42 μg g−1 QE respectively). In vitro antioxidant activity assessed by DPPH and FRAP was found to be highest in coarse millet bran (89.51% inhibition) and native sorghum bran (722.52 μMFeSO4 g−1) respectively. In this study, we prepared candied paprika from various coloured fresh paprika and compared the changes in phytochemicals and quality for 42 days by analysing carotenoids, ascorbic acids and total phenolic content, and by assessing sensory and instrumental qualities. We identified five types of carotenoids from candied red paprika (CRP) and three from candied orange paprika (COP) and candied yellow paprika (CYP). At 0‐day storage, capsanthin and β‐carotene in CRP were quantitatively analysed to 26.96 μg g?1 fw and 3.81 μg g?1 fw, zeaxanthin and β‐carotene in COP were 9.35 μg g?1 fw and 4.16 μg g?1 fw, and lutein and β‐carotene in CYP were 0.27 μg 100 g?1 fw and 0.70 μg 100 g?1 fw, respectively. After 42‐days storage, CRP retained approximately 68.6% carotenoids, COP retained 40%, and CYP retained 33%. Ascorbic acid and total phenolic content decreased during storage as carotenoids did. However, rates of decrease were different in different coloured paprika, especially, ascorbic acid in COP and phenolic acid in CRP were considerably conserved for 42 days. Hardness, springiness and chewiness in all samples were significantly increased by 14‐days storage and maintained until 42‐days storage, and all the sensory parameters, including colour, appearance, odour, texture, paprika flavour and overall consumer preference showed no differences until 28 days.  相似文献

The colour and profile of the aromatic compounds of potato juice (PJ) protein preparations were investigated following various process modifications. Several antioxidants (sodium bisulphate, tartaric acid, ascorbic acid), acidulants (tartaric, ascorbic and hydrochloric acids) and chelating agents (chloride, lactate and calcium hydrogen phosphate salts) used for pectin removal during the coagulation of the PJ proteins were evaluated. The combination of sodium bisulphate or ascorbic acid as antioxidants, with calcium chloride or lactate, and ascorbic acid as the protein coagulant, increased the brightness of the protein preparations. Forty-one aromatic compounds, including aldehydes, alcohols and alkanes, were identified. The total concentration of volatiles ranged 59–105 μg g−1. The ascorbate variant contained the lowest n-hexanal concentration. Different treatments did not impact significantly on the 2-methyl-propanal and 2-methyl-butanal concentrations. Interestingly, 2-pentylfuran production was dramatically reduced (16.48 μg g−1) in the lactic variant in comparison to 40.52 μg g−1 with CaHPO4 addition.  相似文献

Water kefir microbiota was used to develop novel soy whey-based beverages that have antioxidant activity. In the present study, comparative phenolics, antioxidant and metagenomic composition of the soy whey beverages fermented using three different water kefir microbiota, named WKFS-A, WKFS-B and WKFS-C were investigated. WKFS-B beverage had the highest concentrations of isoflavone aglycones (208.73 ± 2.78 mg L−1) and phenolic acids (132.33 ± 3.41 mg L−1) compared with WKFS-A (193.88 ± 1.15 mg L−1) and (91.73 ± 2.34 mg L−1) and WKFS-C (160.63 ± 1.76 mg L−1) and (97.13 ± 2.63 mg L−1), respectively. The WKFS-B also showed higher DPPH and ABTS radical scavenging activity and ferric reducing antioxidant power compared with WKFS-A and WKFS-C beverages. Microbial species diversity index analysis showed that a higher concentration of isoflavone aglycones, phenolic acids and increased antioxidant activity in the WKFS-B beverage correlates with the higher relative abundance of Lactobacillus genus. This study thus revealed that Lactobacillus dominated water kefir microbiota produces soy whey beverages with high phenolic acids, isoflavone aglycones and antioxidant activity.  相似文献

In this work, bee pollen samples from different botanical origin were investigated for antioxidant capacity. Thereafter, a phenolic profiling was produced through a mass spectrometric untargeted metabolomic approach. Marked differences were identified in TPC, ranging from 4.2 (Magnolia) to 29.6 mg g−1 GAE (Lamium). Wide differences were also recorded in antioxidant capacity (ORAC, ABTS and DPPH assays). Untargeted profiling allowed annotating 467 compounds with flavonoids being the most frequent class of phenolics followed by phenolic acids, tyrosols, lignans and other. OPLS-DA clearly discriminated the most represented floral families (Umbelliferae, Rosaceae and Fabaceae), suggesting, thus, that botanical origin leaves a characteristic phenolic signature in pollen. Overall, 35 phenolics accounted for most of the discrimination, with flavonoids being the most represented class. Despite the fact that further research is needed, the phenolic profile of bee pollen is a promising tool to investigate the botanical origin.  相似文献

Physicochemical characterisation and oxidative stability of refined hoki oil, unrefined hoki oil and unrefined tuna oil were carried out in the present study. Tuna oil contains a higher percentage of polyunsaturated fatty acids (42.57%) than the hoki oils (28.79–30.13%), which have higher percentages of monounsaturated fatty acids (45.02–47.16%). All oils showed a good ratio of n‐3 to n‐6 fatty acid (7.01–8.10). Cholesterol contents in the unrefined hoki (5149.40 μg g?1) and tuna (2045.48 μg g?1) oils were higher than the refined hoki oil (1411.27 μg g?1). Tuna has a higher concentration of natural α‐tocopherol (752.49 μg g?1) but lower concentration of vitamin A (110.99 μg g?1) than unrefined hoki oil (151.44 μg g?1 and 997.60 μg g?1, respectively). Higher percentages of unsaponifiable matter were found in the hoki oils (4.90–7.24%) compared with the tuna oil (0.56%). The hoki oils appear more yellow than the tuna oil, which is darker by comparison. Moisture, p‐anisidine value and free fatty acid contents in the hoki oils were lower than the tuna oil. Other indicators of oxidative stability showed that the hoki oils were more stable than the tuna oil.  相似文献

Bioactive compounds from Brazilian hop (Humulus lupulus L.) cultivars were extracted by ultrasound and their phenolic profile compared with commercial hop from the USA. The most effective extraction conditions (solution of ethanol 49%, at 52 °C and a solid/liquid ratio of 1 g per 34 mL) for the total phenolic compounds (TPC) were determined using a Central Composite Rotatable Design. The Brazilian hop showed higher content of TPC (33.93 ± 0.67 mg GAE g−1), total flavonoids (54.47 ± 0.10 mg QE g−1) and higher antioxidant activity (ABTS: EC50 21.29 ± 1.36 μL mL−1; DPPH: EC50 3.91 ± 0.17 μL mL−1) when compared with the USA hop. The main phenolic compounds present in the extracts were the flavonoids isoquercitrin and quercetin. The antioxidant properties of the Brazilian hop extract had not been reported yet in the literature for this raw material, thus showing potential to be incorporated in polymeric films used as active packaging.  相似文献

This study reported the chemical composition, phenolic content, antioxidant and anti‐lipase activity of oregano and Lippia essential oils. The major compounds found in oregano essential oil were γ‐terpinene (32.10%), α‐terpinene (15.10%), p‐cymene (8.00%) and thymol (8.00%). In Lippia essential oil, α‐limonene (76.80%) and 1,8‐cineole (4.95%) represented the major compounds. Oregano essential oil had higher phenolic content (12.47 mg gallic acid mL?1) and DPPH scavenging activity (IC50 0.357 μg mL?1) than Lippia essential oil (7.94 mg gallic acid mL?1 and IC50 0.400 μg mL?1, respectively). Both essential oils had similar antioxidant indexes (about 1.2) determined by Rancimat. Moreover, oregano essential oil had also higher anti‐lipase activity (IC50 5.09 and 7.26 μg mL?1). Higher phenolic content in the essential oils was related with higher scavenging and anti‐lipase activities. Oregano and Lippia essential oils could be used as natural antioxidants on food products.  相似文献

Individual phenolic compounds, total phenolic content and antioxidant potential were assessed in kernels, oils and bagasse pellets (residues of oil pressing) of different walnut cultivars. Twenty-seven phenolic compounds were detected in kernels and pellets conducting high-performance liquid chromatography–tandem mass spectrometry. The main polyphenolic subclass comprised hydrolysable tannins, which accounted approximately 60.80% (kernels) and 61.66% (pellets) of the total phenolics identified (TPI). Walnut oil was poor in phenolics and contained only six different compounds but due to their low content (from 0.15 to 1.44 μg g 1) just two compounds have been identified. Glansreginin A and glansreginin B were detected in all analyzed walnut products. A comparison of average amount of total phenolic content revealed that walnut oil contains as much as 154 fold less phenolics (0.05 mg GAE g 1 FW) compared to kernels (7.7 mg GAE g 1 FW) or pellets (7.9 mg GAE g 1 FW).  相似文献

The objective of this study was to characterise the nutritional potential of leaves and identify a diversity centre with low cyanide and high nutrient content among 178 Latin American cassava genotypes. This field-based collection represents the seven diversity centres, held at The International Center for Tropical Agriculture (CIAT Palmira, Colombia) by the Cassava Program. The cyanide, all-trans-β-carotene and lutein concentrations in cassava leaves ranged from 346 to 7484 ppm dry basis (db), from 174–547 μg g−1 db and 15–181 μg g−1 db, respectively. Cassava leaves also showed significant levels of essential amino acids leucine, lysine, phenylalanine, valine and threonine, and average total protein content of 26.24 g 100 g−1 db. Among seven diversity centres, South American rainforest group showed low cyanide and high carotene content in leaves. In addition, VEN77 and PAN51 genotypes stood out for having low cyanide in leaves and roots and high carotene in leaves. This genetic diversity can be used to select high potential progenitors for breeding purposes.  相似文献

While qualitative studies have identified chlorogenic acids in antioxidant extracts, particularly ethyl acetate‐derived extracts, of Taraxacum officinale, quantitative analysis of these phenolic compounds remains largely unreported for this species. In this study, bioactivity‐guided fractionation of an antioxidant crude ethyl acetate extract (DPPH = 295.481 ± 0.955 mg TE g?1 extract) from T. officinale root resulted in a number of reverse‐phase fractions that demonstrated high antioxidant activity (DPPH = 1058.733–1312.136 mg TE g?1 extract), stronger than that of the synthetic antioxidant Trolox®. UPLC‐MS/MS screening of these fractions for the presence of selected mono‐ and di‐caffeoylquinic acids revealed large quantities of 1,5‐dicaffeoylquinic acid present in several fractions (853.052–907.324 μg mg?1), respectively. Due to the antioxidant potency and high levels of 1,5‐dicaffeoylquinic acid observed in these fractions, it was concluded that specifically this chlorogenic acid derivative is a major contributor to the antioxidant efficacy of dandelion root.  相似文献

There is a growing interest in vegetable-based sources of proteins. Despite its high nutrient content, lupine has been rarely exploited as a protein source due to the presence of high levels of non-nutritive compounds such as alkaloids, which impart a bitter taste. Here, we evaluated the effect of debittering and solid-state fermentation on the nutritional contents of three lupine varieties (Lupinus mutabilis Sweet). These processes induced significant changes (P < 0.05) in the nutritional composition of the three lupine varieties (INIAP-450, INIAP-451 and Criollo) and increased the protein levels to 644.55 g kg−1 (Criollo variety) and the levels of several constituent amino acids such as valine (54.62 g kg−1), methionine (42.47 g kg−1), isoleucine (59.27 g kg−1) and leucine (76.32 g kg−1). The ether extract of INIAP-450 showed increased levels (up to 244.03 g kg−1); especially, monounsaturated fatty acids (559.78 g kg−1) and polyunsaturated fatty acids (293.17 g kg−1) were observed. The omega-6/omega-3 ratio in the debittered grain oil reached the minimum requirement established for good-quality oils (5/1). However, the levels of other components decreased, showing levels up to 13.04 g kg−1 (total starch) in the Criollo variety, 22.62 g kg−1 (resistant starch) in INIAP-450, 6.53 g kg−1 (potassium) in INIAP-451, 46 g kg−1 (iron) in INIAP-451 and 29.75 g kg−1 (zinc) in INIAP-450.  相似文献

This study aimed to identify the least aggressive and highest yield extraction method to obtain bioactive compounds from Inga marginata Willd fruits, determine the chemical components, and evaluate the extracts’' antimicrobial and cytotoxic activity. The extraction efficiency was expressed by the total phenolic and total flavonoid content and antioxidant activity (DPPH, IC50, and ORAC) using conventional, ultrasound, and microwave-assisted extraction. The highest bioactive compound content was achieved using 5 min at 60 °C for total phenolic content (214.98 mg GAE g−1), total flavonoid content (22.90 mg EQ g−1), DPPH (45.98 μmol TEAC g−1), inhibitory capacity (0.80 mg mL−1), and ORAC (167.25 μmol Trolox g−1) using ultrasonic extraction, and the extract inhibited the growth of all microorganisms tested. Thirteen chemical compounds were determined by ESI-ToF-MS, confirming the high phytochemical capacity of the extract. Lastly, the Inga extract showed no cytotoxicity at the concentrations used.  相似文献

The aim of this work was to test 13 edible seeds for the levels of phenolic compounds and the antioxidant activity (TAC) at different germination states (dormant, imbibed and 7d sprouts). Selected seeds included mungbean, alfalfa, fava, fenugreek, mustard, wheat, broccoli, sunflower, soybean, radish, kale, lentil and onion. Accumulated phenolics (mg chlorogenic acid equivalent, CAE) and TAC (μg Trolox equivalent) on dry basis (DB) showed the general trend distribution of 7d sprouts > dormant seeds > imbibed seeds. In addition, the specific TAC (μg Trolox mg−1 CAE) increased only for imbibed seeds indicating a possible protection effect of the phenolic antioxidants to the emerging sprouts. Phenolic contents of 7d sprouts (DB) ranged from 490 (lentil) to 5676 (mustard) mg CAE 100 g−1. Seven day sunflower sprouts had higher TAC on a DB (40202 μg Trolox g−1) compared to other seeds (1456–25991) and a blueberry reference (35232). Increases in phenolics (DB) from dormant seed to 7d sprout differ among seeds, ranging from 2010% (mungbean) to −11% (kale), while increases in TAC (DB) ranged from 1928% (mungbean) to 0% (lentil). This study shows that germinated edible seeds are an excellent source of dietary phenolic antioxidants.  相似文献

A strain, Rahnella aquatilis L103, which was isolated from the soil around the roots of mushrooms, produced antibacterial protein though fermentation. This protein has broad antibacterial spectrum towards gram-positive and gram-negative bacteria. The protein has a significant antioxidant capacity on scavenging ABTS (82.5%, 120 μg mL−1), DPPH· (64.1%, 600 μg mL−1) and OH· (60.1%, 750 μg mL−1) as well. The protein was considered to be safe within concentration of 150 μg mL−1 as shown by MTT results and was applied to beef refrigerated preservation. The treatment group presented lower total viable counts (TVC), total volatile basic nitrogen (TVB-N), 2-thiobarbituric acid (TBA), meanwhile, higher sensory score and longer shelf life (2 days) compared with the control group (P < 0.05). The results indicated that the protein under safe concentration was beneficial to beef preservation.  相似文献
