The performance of a commercial bulk pre-packaging system was compared to a laboratory system in terms of quality attributes such as microbiology, colour, odour, and acceptability of PVC-overwrapped pork retail cuts. A similar retail shelf life of 3 days was achieved after either 0, 7, or 14 days bulk storage with both packaging systems. The colour of the samples from both systems was pale to normal during the trial. After 14 days storage the samples from both systems were still acceptable and had a fresh meat odour. The results show that the commercial system (Cryovac GFII, Darex Africa (Pty) Ltd, Kemptonpark RSA) may be applied successfully for 100% CO2 bulk packaging of PVC-overwrapped pork retail cuts.  相似文献

The influence of different centralised pre-packaging systems (PVC, modified atmosphere packaging (MAP), 25% CO(2) and 75% O(2), vacuum skin packaging (VSP) and the mother bag concept, 100% CO(2)) on the shelf-life (0, 7, 14 and 21 days at 0°C) of fresh pork was determined using microbiological, colour, odour and acceptability characteristics. All the packaging treatments were equally efficient for the first 4 days of retail display. In the extended shelf-life study (7, 14 and 21 days) the mother bag centralised packaging system gave the most promising shelf-life results (21 days) and was also judged superior in terms of odour. Modified atmosphere packaging (14 days) and VSP (7 days) may be considered as other possible options.  相似文献

The effect of storage temperature on microbial and sensory quality of retail cuts of pork was determined on samples stored under temperature regimens designed to simulate conditions that could be encountered in accessing distant markets with retail-ready product. Samples were packaged in modified atmosphere with 100% CO(2) and <200 ppm O(2) in plastic film with extremely low gas transmission rates. All samples were stored at -1·5°C for three weeks. Reference samples were held at -1·5°C for the duration of the study; experimental samples were transferred to 4°C (-1·5 4° C ) or 7°C (-1· 517° C ) and analyzed for microbial content and sebsory attributes including appearance, confinement and meat odours. Storage life of reference samples at -1·5°C was seven weeks before rejection for loss of acceptable appearance. With transfer of samples to 4 and 7°C after three weeks at -1·5°C, samples remained acceptable for retail sale for two weeks and one week, restpectively. The microbial flora was dominated by lactic acid bacteria under all three storage conditions. Appearance of the cuts was the principal criterion limiting storage life. Discoloration of the meat was not a problem in this study, but purge and odour, including sour and sulphur notes, became a problem with time. The study indicated that export of retail-ready pork cuts to distant markets with a three-week time for delivery to market at -1·5°C can be achieved with one to two weeks of marketing time at retail market at 4 to 7°C.  相似文献

A study of the nutrient composition of Australian pork was undertaken to determine whether new breeding, feeding and processing methods had resulted in any changes in pork samples in the market place since surveys undertaken in previous decades. Samples of 13 popular pork cuts were purchased from randomly selected supermarkets and butchers’ stores in urban areas across the socioeconomic scale in three States of Australia, and analysed, raw and cooked, separable fat and separable lean, for nutrient composition (proximate components, minerals, vitamins) in late 2005 and early 2006. Results showed that present-day pork separable lean tissue continues to be low in fat, in line with stated objectives of practices implemented by the industry in Australia. Pork remains a good source of protein and of thiamin and other water-soluble vitamins, the latter being detected at nutritionally significant levels in fat tissue as well as lean; folate was detected in most samples, lean and fat portions. Iron content appeared to be slightly lower than in previous decades.  相似文献

After consideration of five potential sampling designs, 13 retail pork cuts were purchased from randomly selected supermarkets and butchers’ stores in urban areas across the socioeconomic scale in three States of Australia in late 2005 and early 2006. They were analysed, raw and cooked, for gross composition (fat, lean, bone and gristle). Gross composition varied considerably within cut associated with large divergences in interpretation of standard pork cuts by butchers. There were no notable differences in gross composition across States, across the socioeconomic range of suburbs of purchase or between outlet types (butcher vs supermarket). Cuts tended to be larger and leaner than those in similar studies in the 80s and 90s. Due to increasing uniformity in breeding and feeding of pigs in Australia, sampling designs in future surveys could be simplified.  相似文献

Two experiments were conducted to evaluate the effect of different gas mixtures on the keeping quality of fresh pork sausages. The modified atmospheres consisted of combinations of oxygen, carbon dioxide, and nitrogen. In the first experiment, 15 gas combinations of these two gases plus oxygen were evaluated. The samples were stored at 5°C for up to 16 days. The variables used to evaluate the quality of the sausages included acceptability, hardness, cohesiveness, hue, pH, total plate counts, coliforms and water holding capacity. The results showed a negative effect of oxygen upon most of the variables. Based on these results, the second experiment was designed to evaluate the effect of frozen storage upon the quality of the samples against non-frozen storage (5°C). Six gas combinations of carbon dioxide and nitrogen were used. The results favoured frozen storage and high carbon dioxide levels (60% to 80%).  相似文献

The effect of four different gas mixtures on several characteristics of Merino fresh lamb meat quality was studied. Merino lamb meat was packed under four different atmospheres (Batch 1: Ambient air; Batch 2: 70% O2 + 30% CO2; Batch 3: 80% O2 + 20% CO2 and Batch 4: 30% CO2 + 69.6% Ar + 0.4% CO) and stored in darkness and under refrigeration (3 ± 1 °C) for 12 days. pH values and weight losses of lamb meat showed no significant changes during 12 days storage (P > 0.05) and were not affected by the different used atmospheres (P > 0.05). Lightness (L*) was not significantly affected by gas atmospheres until day 12 of storage, lamb meat packed in contact with air (Batch 1) showing the lowest lightness (P < 0.001). Samples in contact with ambient air, presented the lowest a*‐values during most of the storage period (P < 0.001). Batch 4 (30% CO2 + 69.6% Ar + 0.4% CO) showed the highest a*‐values after 7 days storage. Batches 2, 3 and 4 presented a lower microbial count of total aerobic bacteria and Enterobacteriaceae than batch 1 (P < 0.05), whereas for lactic acid bacteria counts there were not significant differences (P > 0.05).  相似文献

A centralised bulk packaging technique, utilising various gas mixtures, c. 100% CO2 + oxygen scavenger, c. 80% O2:20% CO2 and c. 25% CO2:50% N2:25% O2, was evaluated in terms of consumer acceptability and colour. The inclusion of an oxygen scavenger ensured that pork retail chops bulk packaged in a 100% CO2 were as acceptable after 0, and 14 days bulk storage and subsequent retail display than chops stored in oxygen-enriched atmospheres. The study also indicated that a saturation level of 10 and higher indicated that the appearance of the pork chop was acceptable to the consumer panel. From the results of this study it is apparent that consumers find pork retail packs, bulk packaged in oxygen depleted atmospheres, as acceptable as pork chops stored in oxygen enriched atmospheres.  相似文献

Longissmus dorsi loins were removed from Suffolk cross-breed lambs (4–9 months) and hoggets (15–20 months). The effect of package gas composition was investigated by packaging loins with gas mixtures containing 80:20:0, 60:20:20 and 60:40:0/O2:CO2:N2 with a 2:1 headspace to meat volume ratio. The most effective gas mixture for prolonging shelf-life was used to study the effect of different headspace to meat volume ratios. Loins were packaged with a headspace to meat volume ratio of 2:1, 1.5:1 or 1:1. All modified atmosphere (MA) packs were held under refrigerated display conditions (4 °C, 616 lx) for 12 days. Loins were assessed for microbial, oxidative and colour stability and headspace composition every 3 days. The 80:20:0/O2:CO2:N2 gas composition and the 2:1 headspace to meat volume ratio was the most effective packaging combination at maintaining and prolonging the attractive red colour of MA packaged lamb and hogget meat. 80:20:0/O2:CO2:N2 resulted in significantly (p<0.01) higher Hunter a values in lamb. The 2:1 ratio gave higher visual assessment values in lamb and higher Hunter ‘a' values for hogget meat throughout the trial. The 2:1 ratio was the most effective at decreasing Pseudomonas and increasing the numbers of lactic acid bacteria in the total microbial load in both lamb and hogget meat. Lipid oxidation in lamb and hogget meat occurred at a slower comparative rate than discolouration or microbial growth and was not the major determinant of shelf-life. The 2:1 headspace to meat volume ratio was most effective at maintaining the initial gas mix in both lamb and hogget MA packs.  相似文献

An assessment was made of the microbiological quality of the final product (different retail cuts), produced by two different retail supermarket groups (A & B). The influence of sanitary conditions on the microbiological quality of the final product was evaluated, and the possible influences on shelf life were determined. Supermarket group A (Sup group A) received carcasses with significantly lower surface counts of micro-organisms than supermarket group B (Sup group B), while the latter had a more efficient overall sanitation programme than supermarket group A. Five cuts were monitored for the presence of total aerobic counts, psychrotrophic counts, lactobacilli, Enterobacteriaceae and numbers of Pseudomonadaceae present. A shelf life study was also executed by repeating these enumerations on the same meat samples after refrigerated storage at 5°C for 2 and 4 days, respectively. It is generally accepted that a good refrigeration or chilling regime will preserve the inherent meat quality, but in this study it was found that neither served as a guarantee of quality. The more stringent hygiene at retail level of Sup group B yielded consistently lower mean counts of the different bacterial groups for all the meat cuts monitored and, thus meat with an extended shelf life. The total count (at 30°C) on meat cuts was the highest, followed by the psychrotrophs, the Pseudomonadaceae the Enterobacteriaeae and the lactobacilli. Minced meat generally had the highest mean aerobic total microbial counts. This count on minced meat might be a suitable indicator for monitoring the overall sanitary condition of a retail premises. The results re-emphasized the multi-factorial complexity of fresh meat quality and shelf life. The microbial quality of the raw material (carcasses), the maintenance of the cold chain, sanitary condition of premises, equipment and personnel surfaces and general management practices are factors that collectively determine the microbiological quality of the product.  相似文献

The objectives were to determine the nutrient composition and variation in eight cuts of bison meat in bulls and heifers and identify nutrient relationships in the clod and sirloin by principal component analysis. The nutrients analyzed were: energy, protein, total fat, saturated fat, monounsaturated fat, polyunsaturated fat, transfat, cholesterol, vitamin A, Ca, Fe, Na and moisture. Differences were observed in fat components between cuts and bulls had higher (P < 0.05) amounts of total, saturated, monounsaturated and polyunsaturated fat in the blade compared to the other cuts. The sirloins had less (P < 0.05) cholesterol than all the other cuts in bulls and the clod in heifers. Fat varied more than protein and moisture in all cuts. Four principal components (PC) accounted for 63.9% of the total variation of the nutrient composition. Total, monounsaturated and saturated fats were in PC1 and cholesterol in PC2 showing that cholesterol is independent of other fats. If dietary alterations elicit changes in bison meat fatty acid profiles, it may be possible to reduce cholesterol independent of total, monounsaturated or saturated fat.  相似文献

Batches of coarsely ground beef trimmings were each divided into four portions. One portion from each batch was vacuum packaged, then stored at -1·5°C. The other portions were finely ground and distributed in retail packs. The retail packs were master packaged under atmospheres of N(2), CO(2) or O(2) + CO(2) (2:1, v/v), then stored at 2°C. The product was assessed after storage times of up to 32 days. For each assessment, a vacuum pack and a master pack of each type, each containing products from the same batch, were withdrawn from storage. The vacuum packaged product was finely ground and distributed into retail packs. The newly prepared retail packs and those from the master packs were displayed in a retail cabinet in which air temperatures averaged 4 ± 2°C. The appearance of the displayed product from each storage packaging was assessed twice daily until it was judged to be unacceptable. At the beginning and end of the display, the product in each pack was assessed for discoloration and off-odours, the chemical states of the muscle pigment at the exposed surface were estimated, and the surface microflora was characterized. The appearance of the product displayed after storage in a vacuum pack, for times up to 32 days, became unacceptable within 48 h. A product stored in any of the master packs for 1 day appeared unacceptable after 6 h of display. The display life of products stored under N(2) or CO(2) was similar to that of the vacuum packaged products when storage times were between 2 and 24 days but the display life was shorter when the storage times were 28 or 32 days. The display life of products stored under O(2) + CO(2) was similar to that of the vacuum packaged product when storage times were 2, 4 or 6 days, but the appearance of products stored under O(2) + CO(2) for 8 days or longer was unacceptable when master packs were opened. Apart from those latter packs, a product was not discoloured when storage packs were opened. However, all products were discoloured, and the metmyoglobin fractions of the surface pigments had increased, when the product was withdrawn from display. The products in all storage packagings developed flora dominated by lactic acid bacteria. The spoiage flora on products stored in vacuum pack or under O(2) + CO(2) did not attain the maximum numbers of 10(7)/g during either storage or display. Those maximum numbers were attained on products stored under N(2) and CO(2) after 16 and 28 days storage respectively. Some products stored under N(2) for 16 days or longer developed moderate or strong off-odours during display that were ascribable to microbial action. Other products developed only slight, non-microbial off-odours during display. Retail-ready packs or ground beef master-packaged under an oxygen-depleted atmosphere could then have a useful storage life of about 30 days in commercial circumstances.  相似文献

为改善鲜湿面条杀菌效果,探索最适用于微波杀菌的预包装方式,对比密封、半封、敞口3种不同预包装方式下微波杀菌对青稞鲜湿面条温度、水分、菌落总数(total plant count,TPC)、色泽、蒸煮品质、质构及糊化热特性的影响。与对照相比,不同预包装微波处理均使面条的温度、硬度、咀嚼性及糊化度升高,水分含量、L~*值及TPC降低。微波功率越大,杀菌效率越高;相同微波功率条件下,半封预包装杀菌效果最佳,其中,800 W半封处理1 min后,面条的TPC最低为(66.67±30.55)CFU/g,在37℃下保质期延长至60 h,能更有效延缓面条贮藏期的色泽变暗,且对面条的蒸煮和质构品质影响不大。该研究为微波技术在鲜湿面条保鲜中更有效的应用提供了理论指导。  相似文献

Fresh beef samples (n = 1,022) obtained from two processing plants in the Midwest (July to December 2003) were analyzed for levels of microbial populations (total aerobic plate count, total coliform count, and Escherichia coli count) and for the presence or absence of E. coli O157:H7 and Salmonella. A fresh beef cut sample was a 360-g composite of 6-g portions excised from the surface of 60 individual representative cuts in a production lot. Samples of fresh beef cuts yielded levels of 4.0 to 6.2, 1.1 to 1.8, and 0.8 to 1.0 log CFU/g for total aerobic plate count, total coliform count, and E. coli count, respectively. There did not appear to be substantial differences or obvious trends in bacterial populations on different cuts. These data may be useful in establishing a baseline or a benchmark of microbiological levels of contamination of beef cuts. Mean incidence rates of E. coli O157:H7 and Salmonella on raw beef cuts were 0.3 and 2.2%, respectively. Of the 1,022 samples analyzed, cuts testing positive for E. coli O157:H7 included top sirloin butt (0.9%) and butt, ball tip (2.1%) and for Salmonella included short loins (3.4%), strip loins (9.6%), rib eye roll (0.8%), shoulder clod (3.4%), and clod, top blade (1.8%). These data provide evidence of noticeable incidence of pathogens on whole muscle beef and raise the importance of such contamination on product that may be mechanically tenderized. Levels of total aerobic plate count, total coliform count, and E. coli count did not (P > or = 0.05) appear to be associated with the presence of E. coli O157:H7 and Salmonella on fresh beef cuts. E. O157:H7 was exclusively isolated from cuts derived from the sirloin area of the carcass. Salmonella was exclusively isolated from cuts derived from the chuck, rib, and loin areas of the carcass. Results of this study suggest that contamination of beef cuts may be influenced by the region of the carcass from which they are derived.  相似文献

Efficacy of ohmic processing can be influenced by the conductivities of individual components within the food and their behaviour and interactions during the heating process. This study relates to the determination of electrical conductivities of a selection of pork meat cuts used in meat processing. Conductivity measurements of pork cuts indicated that lean is highly conductive compared to fat and addition of fat to lean reduced the overall conductivity but the addition of fat over the range (i.e. 0-100%) was non-linear. Light microscopy suggested that differences in the conductivities of leg and shoulder lean (entire) (0.76 vs. 0.64 Sm(-1), respectively) could be due to the denser muscle fibre structure and/or higher intra-muscular fat in shoulder vs. leg. This could be of significance for ohmic processing of full muscle products.  相似文献

In the present study, the occurrence of Arcobacter was assessed at four sites on 169 porcine carcasses (foreleg, chest, pelvis and ham) at different stages of slaughter and 47 pork products at retail. Carcass swab samples were enriched in Arcobacter broth containing 5-fluorouracil, amphotericine B, cefoperazone, novobiocine and trimethoprim as selective supplement. After microaerobic incubation, arcobacters were isolated using Arcobacter selective agar plates, containing the selective supplement described above. Some carcass samples and all pork samples were also examined quantitatively. All 862 isolates were identified by a species-specific m-PCR-assay and 182 isolates were further characterized by ERIC-PCR. Arcobacters were isolated from one or more sampling places on 96.4% of the carcasses, with the foreleg and the chest area as the two most contaminated sites. Furthermore, A. cryaerophilus was the most common species. Chilling decreased the number of positive carcasses, but did not eliminate all arcobacters. Direct isolation revealed that only a few carcasses were contaminated with arcobacters on foreleg and/or chest at levels higher than 10(2 )cfu/100 cm(2). Characterization demonstrated a large heterogeneity among the isolates, with ten genotypes present on more then one site per carcass. Fourteen genotypes were simultaneously present on carcasses from different herds slaughtered on the same day, which may indicate cross-contamination. Arcobacters were present in 21% of the pork samples taken at retail, but contamination levels did not exceed 100 cfu per gram. Characterization of the A. butzleri and A. cryaerophilus isolates indicated an additional contamination during processing at retail.  相似文献

To determine the extent of microbiological contamination of U.S. pork, 384 samples of retail pork were collected from 24 stores in six cities, including (i) whole-muscle, store-packaged pork; (ii) fresh, store-packaged ground pork and/or pork sausage; (iii) prepackaged ground pork and/or pork sausage; and (iv) whole-muscle, enhanced (injected or marinated; 60% store-packaged, 40% prepackaged) pork. Additional samples (n = 120) of freshly ground pork and/or pork sausage were collected from two hot-boning sow/boar sausage plants, two slaughter and fabrication plants, and two further-processing plants. Samples were analyzed for aerobic plate counts (APC), total coliform counts (TCC), Escherichia coli counts (ECC), and incidences of Salmonella spp., Listeria monocytogenes, Campylobacter jejuni, Campylobacter coli, and Yersinia enterocolitica. Mean log APC and TCC were highest (P < 0.05) for store-ground pork, while whole-muscle, enhanced products and prepackaged ground products had the lowest (P < 0.05) APC. Mean log APC and TCC were higher (P < 0.05) in samples from the slaughter and fabrication plants than in samples from hot-boning and further processing plants. Mean log ECC were lower (P < 0.05) in samples from further-processing plants compared to slaughter and fabrication plants and hot-boning, sow and boar sausage plants. L. monocytogenes was detected in 26.7% of plant samples and 19.8% of retail samples and was present more frequently in ground products. Y. enterocolitica was detected most often in whole-muscle, store-packaged cuts (19.8%) and in store-ground product (11.5%). Salmonella spp. were found in 9.6% of retail samples and 5.8% of plant samples, while C. jejuni and C. coli were found in 1.3% of retail samples and 6.7% of plant samples. Pork products exposed to the most handling and processing appeared to be of the poorest microbiological quality. These results should be useful in risk assessments that are directed at the identification of actions that could enhance food safety.  相似文献

A study of the cholesterol content and fatty acid composition of fresh retail Australian pork was undertaken to determine whether new breeding, feeding and processing methods had resulted in any compositional changes in fresh pork in the market place since surveys undertaken in previous decades. Samples of 13 popular pork cuts were purchased from randomly selected supermarkets and butchers’ stores in urban areas across the socioeconomic scale in three States of Australia, and analysed, separable fat and separable lean, in late 2005 and early 2006. Variability was low across States for saturated and monounsaturated fatty acids, but more pronounced for polyunsaturated acids. The separable lean portions of all pork cuts contained levels of n-3 fatty acids and conjugated linoleic acid (C18:1c9t11) in measurable but not nutritionally claimable amounts, whilst total trans fatty acid levels were very low. There appeared to be some differences in fatty acid composition across States that may have resulted from feeding method. Cholesterol contents were similar to levels in the 80s and 90s for separable lean pork tissue, but presently are lower for separable fat tissue than for separable lean.  相似文献

A study was carried out to determine the fat and cholesterol contents of several commercial pork cuts as function of sex. Fat and cholesterol content ranged from 2.7% and 57 mg/100 g in loin to 30.3% and 116 mg/100 g in dewlap. The higher the fat content the higher was the cholesterol content. Sex did not influence fat content and the fat/cholesterol ratio, but cholesterol content was higher in females than in males.  相似文献
