This work is aimed at: (i) analysing the extracts obtained from canning by‐products of three artichoke cultivars (Opal, Capriccio and Catanese) for antioxidant parameters; (ii) comparing UHPLC‐ESI‐MS/MS profile, colour, textural properties and cooking performance of fresh pasta enriched of the most antioxidant extract, with control pasta. The concentrated Catanese cv. extracts showed the highest antioxidant activity (1662 μmol Trolox equivalents L?1) and the highest levels of luteolin‐7‐O‐rutinoside, luteolin‐7‐O‐glucoside and apigenin‐7‐O‐rutinoside compared to other cultivars. Fresh pasta enriched of Catanese extract showed higher (< 0.05) phenolic compounds and antioxidant activity (500 mg gallic acid kg?1 and 1324 μmol Trolox kg?1, respectively) than control pasta (306 mg gallic acid kg?1 and 886 μmol Trolox kg?1, respectively). The extract increased (< 0.05) pasta brownness (from 19.93 to 23.34), and decreased yellowness (from 27.11 to 23.09), but did not alter textural and cooking parameters. So, pasta was a good vehicle to increase the antioxidant dietary intake.  相似文献

This study was conducted to develop a biodegradable antioxidant film using yellow onion peel extract (YOPE) and funoran extracted from Gloiopeltis furcata. The mechanical, optical and antioxidant properties of the funoran films containing various amounts of YOPE (0.3%, 0.5% and 1.0%) were examined. YOPE dose-dependently increased the flexibility as well as the DPPH and ABTS free radical scavenging activities of the funoran films. Additionally, the total phenolic and total flavonoid contents of the funoran films increased from 31.92 to 61.31 mg gallic acid equivalent g−1 film and from 21.80 to 79.22 mg quercetin equivalent g−1 film after the incorporation of YOPE, respectively. These results suggest that the funoran-based film incorporated with YOPE, which was prepared from underutilised red alga and discarded onion peel, can be used as an antioxidant biodegradable packaging material.  相似文献

Antioxidant activity of the methanol and water extracts of Chinese toon (Toona sinensis) leaf was evaluated using DPPH radical scavenging and lipid peroxidation assays. Contents of four major types of antioxidants including β-carotene, ascorbate, α-tocopherol and phenolics were also quantified. Open column chromatography followed by semi-preparative HPLC were applied to separate phenolic antioxidants whose contents were subsequently determined by HPLC. The methanol extract demonstrated much higher antioxidant activity than the water extract. Contents of β-carotene, ascorbate, α-tocopherol and phenolics were 1.23 μmol g?1, 34.2 μmol g?1, 2.40 μmol g?1 and 872 μmol gallic acid equivalents g?1, respectively. Six phenols were isolated. Their structures were characterized as 5-O-galloylquinic acid, gallic acid, methyl gallate, β-1,2,6-tri-O-galloyl-d-glucose, quercetin 3-O-β-d-glucopyranoside and quercetin 3-O-(2′′-O-galloyl)-β-d-glucopyranoside, respectively. The results indicate that phenolic compounds are the dominant antioxidants in Chinese toon. The compounds β-1,2,6-tri-O-galloyl-d-glucose and quercetin 3-O-(2′′-O-galloyl)-β-d-glucopyranoside were reported for the first time in Chinese toon.  相似文献

The biological activity of mango leaf extracts from different mango varieties was evaluated in terms of total phenolic content, flavonoids, antioxidant activity and inhibition of α-amylase and α-glucosidase enzymes. Leaf extract-based beverages were formulated and evaluated for some physicochemical, microbiological and sensory properties. Results indicated that the extract from 'Tommy Atkins' mango leaves had the highest total phenols content (137.08 mg of GAE g−1) and antioxidant activity (DDPH = 38.26 mg TEAC 100 g−1; ABTS = 59.13 mg TEAC 100 g−1). The beverage formulated with 20% leaf extract presented the highest percentage of antioxidant activity (38.63%) and inhibition of enzymes α-amylase (41.9%) and α-glucosidase (37.53%). All beverages presented a yellow hue and consumers rated it with a degree of liking between 4.8 and 7.3 according to a hedonic scale. Results showed that the biological properties of beverages could be an alternative for the control of free radicals and glucose levels.  相似文献

Kefir is a fermented milk beverage and known to have positive effects on gut microbial diversity and human health. In this study, digested and undigested kefir samples were compared for changes in their antihypertensive, antidiabetic, antioxidant and antimicrobial activities. Results showed that the amount of total phenolic substances, 2,2-diphenyl-1-picrylhydrazyl radical scavenging (DPPH) activity, and the angiotensin-converting enzyme inhibitor (ACE-I) activity increased from 43.76 ± 0.005 mg gallic acid equivalents (GAE)/L, 4.20 ± 0.55%, and 9.91 ± 3.90% in undigested kefir to 668.16 ± 3.332 mg GAE/L, 63.06 ± 0.64%, and 98.88 ± 0.42% in digested kefir, respectively. While the dipeptidyl peptidase IV-inhibitory (DPPIV-I) activity of undigested kefir increased by 19.11 ± 7.35% after digestion, the optical density of the ferric-reducing antioxidant power (FRAP) decreased from 1.188 ± 0.05 to 0.278 ± 0.009, and the protein amount decreased from 101.4 mg L−1 to 12.42 mg L−1 in digested kefir. No antimicrobial effect was observed in undigested kefir, whereas, digested kefir samples were active, but only against Escherichia coli. These results show that the gastrointestinal digestion processes of kefir generally increase the number of bioactive molecules, and the digestion process must be taken into account to determine the biological capability of foods.  相似文献

We produced the iron rice (IR) drink, determined the relevant chemical composition and antioxidant activity and tested the consumers’ degree of satisfaction. IR grains were digested with α-amylase and analysed chemical composition and antioxidant activity, while the hydrolysate (pH 4.0) and flavouring agents were added for final preparation of the IR drink. The IR hydrolysate contained a total iron content of 13.9 mg g−1, a total phenolic content of 1.33 ± 0.07 mg gallic acid equivalent g−1 and γ-oryzanol of 70.12 ± 2.7 mg kg−1 rice grain, all of which inhibited the generation of free radicals in a concentration-dependent manner. The IR drink was composed of flavonoids and phenolic acids for which kaempferol was predominant. The members of all three groups of elderly subjects who consumed the low-dose IR (1.47 mg iron/100 mL), high-dose IR (2.74 mg iron/100 mL) and white rice (WR; 0.5 mg iron/100 mL) drinks expressed satisfaction and interest with the beverages at 91.2%, 100% and 88.9%, respectively. In terms of sensory evaluation, the low-dose IR drink revealed a higher acceptance rating than high-dose IR and WR (P < 0.05). Notably, the Sinlek rice drink was abundant with iron, anti-oxidative phenolics and γ-oryzanol, for which consumers expressed an overall degree of acceptance (8.1 ± 1.1).  相似文献

This study aimed to identify the least aggressive and highest yield extraction method to obtain bioactive compounds from Inga marginata Willd fruits, determine the chemical components, and evaluate the extracts’' antimicrobial and cytotoxic activity. The extraction efficiency was expressed by the total phenolic and total flavonoid content and antioxidant activity (DPPH, IC50, and ORAC) using conventional, ultrasound, and microwave-assisted extraction. The highest bioactive compound content was achieved using 5 min at 60 °C for total phenolic content (214.98 mg GAE g−1), total flavonoid content (22.90 mg EQ g−1), DPPH (45.98 μmol TEAC g−1), inhibitory capacity (0.80 mg mL−1), and ORAC (167.25 μmol Trolox g−1) using ultrasonic extraction, and the extract inhibited the growth of all microorganisms tested. Thirteen chemical compounds were determined by ESI-ToF-MS, confirming the high phytochemical capacity of the extract. Lastly, the Inga extract showed no cytotoxicity at the concentrations used.  相似文献

Wakame (Undaria pinnatifida) is edible seaweed rich in fucoxanthin; whilst, pasta is an important dish from nutritional and gastronomic point of view. Pasta was prepared with wakame as an ingredient at different levels. In vitro antioxidant properties, total phenolic content, fatty acid composition, fucoxanthin and fucosterol contents formed the major bio-functional characteristics analysed. Pasta with 10% wakame was acceptable sensorially. The total phenolic content varied between 0.10 and 0.94 mg gallic acid equivalents (GAE)/g, whilst total antioxidant activity varied from 0.16 to 2.14 mg ascorbic acid equivalents (AAE)/g, amongst different samples. 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and superoxide radical scavenging activities of sensorily acceptable pasta were 7.71% and 4.56%, respectively. The sensorily acceptable pasta had a mild seaweed flavour with taste similar to control pasta, as assessed by panelists. The ratio of n-3 to n-6 fatty acid in seaweed incorporated pasta was 1:3.4 as compared to 1:15.2 in the control. Heat process involved in pasta preparation and cooking did not destroy fucoxanthin. Microstructure studies revealed the enhanced interaction between starch granules and protein matrix in pasta containing seaweeds up to 20%.  相似文献

The mulberry leaf is a promising dietary source of antioxidants due to its high levels of beneficial compounds. To further examine its antioxidant properties, twelve batches of authenticated mulberry leaf, with total flavonoid contents (TFC) ranging from 24.34 mg g−1 DW to 58.42 mg g−1 DW and total polyphenol content (TPC) ranging from 11.49 mg g−1 DW to 30.03 mg g−1 DW, were investigated. According to Spearman’s coefficient, antioxidant activities, including the DPPH radical scavenging assay and the ferric reducing antioxidant power (FRAP), were positively correlated with TFC and TPC. The HPLC-DAD analysis results identified the characteristic fingerprint peaks in mulberry leaves as chlorogenic acid, rutin, quercetin 3-O-glucoside and kaempferol 3-O-glucoside, all of which directly contribute to the antioxidant capacity of mulberry leaves. Notably, young mulberry leaves showed higher antioxidant capacity than those of mature leaves. These promising results help create a compelling case for future development of mulberry leaf products.  相似文献

The effect of microwave treatment on phenolics, flavonoids, antioxidant capacity, and phenolic in vitro bioaccessibility of white and red sorghum was evaluated. After microwave treatment for 40 s, the contents of free, bound, and total phenolics in white and red sorghum increased by 15.6–42.6, 4.0–23.4, and 19.7–66.0 mg gallic acid equivalents 100 g−1 dry weight (DW), respectively, and the contents of free, bound, and total flavonoids increased by 9.4–11.2, 4.8–5.4, and 14.2–16.6 mg rutin equivalents 100 g−1 DW, respectively. With increasing microwave treatment time, the contents of phenolic acids and flavonoids in white and red sorghum first increased and then decreased. Additionally, the changes in antioxidant capacity indicated a similar trend with phenolic contents for white and red sorghum. In vitro gastrointestinal digestion indicated that microwave treatment had no effect on the phenolic bioaccessibility of white and red sorghum but increased the release amount of phenolic acid and antioxidant capacity.  相似文献

In the present study, betalains content, phenolic composition, and antioxidant activity of different parts of red beet (Beta vulgaris L. conditiva) (i.e., roots and stems) were compared. Crude extract of root showed the highest betalain content with a maximum of 53 ± 4 mg betanin eq and 46 ± 3 mg vulgaxantin I eq g?1 of extract stems showed higher total phenolic concentration than roots, ranging between 2.0 ± 0.4 and 14.6 ± 0.5 mg gallic acid eq?1 of extract. Chemical composition was analyzed using LC-MS. Betalains (vulgaxanthin I, betanin, and isobetanin) and phenolics (gallic acid, ferulic acid, chlorogenic acid, caffeic acid, vanillic acid, syringic acid, ellagic acid myricetin, quercetin, rutin, kampferol) were identified in roots and stems. Betalain extract obtained from roots showed higher antioxidant activity than extract obtained from stems.  相似文献

Beef lungs are an underutilised co-product of the meat industry that could be used as an ingredient to supplement the protein content of cereal foods. Beef lung powder (BLP) had a protein content of 87% (dry weight basis), an amino acid score of 1, and contained 1 mg g−1 iron. Fresh semolina pasta was used as a model food, and BLP was incorporated up to 20%. Incorporation of 10% BLP improved the indispensable amino acid score of the pasta from 0.48 to 0.91. At that level of incorporation, higher cooking loss and redder (increased ‘a’ value) and darker (decreased ‘L’ value) colour resulted. The fresh pasta with BLP had a lower glycaemic response compared to control samples. BLP improved the functional value of the fresh pasta and is a potential ingredient in the development of new food products.  相似文献

Bioactive compounds from Brazilian hop (Humulus lupulus L.) cultivars were extracted by ultrasound and their phenolic profile compared with commercial hop from the USA. The most effective extraction conditions (solution of ethanol 49%, at 52 °C and a solid/liquid ratio of 1 g per 34 mL) for the total phenolic compounds (TPC) were determined using a Central Composite Rotatable Design. The Brazilian hop showed higher content of TPC (33.93 ± 0.67 mg GAE g−1), total flavonoids (54.47 ± 0.10 mg QE g−1) and higher antioxidant activity (ABTS: EC50 21.29 ± 1.36 μL mL−1; DPPH: EC50 3.91 ± 0.17 μL mL−1) when compared with the USA hop. The main phenolic compounds present in the extracts were the flavonoids isoquercitrin and quercetin. The antioxidant properties of the Brazilian hop extract had not been reported yet in the literature for this raw material, thus showing potential to be incorporated in polymeric films used as active packaging.  相似文献

This study evaluated the effect of different cooking methods (microwaving, boiling, steaming and stir-frying) on the phenolic acids and antioxidant activity in Hericium erinaceus (HE). The total phenolic content (TPC) of HE decreased after cooking and was in the order of dried (control) > stir-fried > microwaved > steamed > boiled. An increase in antioxidant activity was found in all cooked HE, albeit statistically insignificant (P > 0.05). Gallic acid was reported to be the dominant phenolic acid found in HE extracts in the range of 3.03–49.41 μg g−1 dry weight. Low negative correlations were observed between 2,2-diphenyl-1-picrylhydrazyl (DPPH) and TPC as well as DPPH and gallic acid profile. Sensory data revealed that stir-fried HE received the most favourable response in colour, texture, aroma and flavour attributes. Overall, this study suggested that the method of stir-frying could be used to prepare HE for better retention of gallic acid and antioxidant activity with acceptable sensory characteristics.  相似文献

Nonconventional raw materials have been applied in gluten‐free pasta, to meet the demand of people with coeliac disease. The objective of this study was to evaluate the cooking properties and texture of pasta formulated with rice flour, defatted flaxseed flour and pregelatinised mixed flour of rice and flaxseed (80:20). For this experiment, simplex design was used. Cooking properties and texture were found within the quality limits established for this type of product. The pasta with the most desirable properties (short optimum cooking time (OCT), less solid loss (SL) and intermediate mass increase (MI)) was that one formulated with 43 g 100 g?1 of pregelatinised flour, 47 g 100 g?1 of rice flour and 10 g 100 g?1 of defatted flaxseed flour. This formulation can be characterised as a food rich in dietary fibre and of high nutritional value.  相似文献

This study aimed to optimise aqueous extraction conditions for total phenolic compounds (TPC) from Davidson's plum (Davidsonia pruriens F. Muell) and to assess the physicochemical and antioxidant properties of the phenolic‐enriched extract. The results showed that temperature, time and ratio significantly affected the extraction of TPC. Optimization of extraction conditions was performed using response surface methodology (RSM) utilising a Box–Behnken design. Optimal extraction conditions were determined to be temperature: 90 °C, extraction time: 30 min and solvent to mass ratio: 20:1 mL g?1. The extracted solid obtained under these conditions had low‐moisture content, high water solubility and contained 45 mg GAE g?1 of TPC, 22 mg RUE g?1 of flavonoids, 3.2 mg CAE g?1 of proanthocyanidins, 2 mg CGE g?1 of anthocyanidins and 56 mg ACE g?1 vitamin C. The extract possessed potent antioxidant capacity, but was comparatively lower than those of vitamin E and BHT. Thus, Davidson's plum should be further investigated for its potential health promoting benefits and utilisation in the nutraceutical and food industries.  相似文献

The two main flavonol glycosides present in broccoli florets were identified as quercetin 3-O-sophoroside and kaempferol 3-O-sophoroside. Three minor glucosides of quercetin and kaempferol were also detected, namely isoquercitrin, kaempferol 3-O-glucoside and a kaempferol diglucoside. The sophorosides of quercetin and kaempferol were present in raw florets at a level of 65 mg kg−1 and 166 mg kg−1 fresh weight, respectively. The total content of quercetin and kaempferol glycosides expressed as aglycone was 43 and 94 μg g−1 fresh weight, respectively, and these agree with other recently published data. During the cooking process only 14–28% of the individual glucosides were retained in the cooked tissue, the remainder being largely leached into the cooking water with only a small loss attributed to the formation of the respective aglycones. © 1998 SCI.  相似文献

The inhibition mechanism of buckwheat phenolics on in vitro starch digestion was investigated using extruded noodles with buckwheat starch and phenolic extract (0.50%–2.00%). The cooking quality and reducing sugar released during in vitro digestion were studied, and the extractable phenolic content along digestion was also monitored to reveal a dose–effect relationship between reducing sugar released and the release of phenolics. Noodles containing increased phenolics released less reducing sugar (230–188 mg g−1) during digestion. Cooking and digestion made phenolics more extractable, and most of the phenolics were released at the end of the gastric phase (85.6%–94.8%) compared with during the small intestinal digestion. The IC50 of buckwheat phenolic extract (0.102 mg mL−1) was four times that of acarbose (0.032 mg mL−1). The inhibitory mechanism was further analysed using molecular docking, in which the activity of α-amylase was inhibited by phenolics that bind with active sites of α-amylase through hydrogen bonds and hydrophobic interaction. Phenolics interacting with starch and the released phenolics can both explain the reduction in starch digestion.  相似文献

The content of total polyphenolics, antioxidative capacity and antiproliferative activity were tested in wild and cultivated blackberry pomace. Wild blackberry pomace extract Tw2 showed the highest following contents: total polyphenolics (50.16 mg GAE g−1 dw), flavonoids (7.73 mg Qc g−1 dw), flavonols (6.63 mg Qc g−1 dw) and total monomeric anthocyanins (13.40 mg Cy g−1). Tw2 extract significantly inhibited free radicals: IC50DPPH = 127.76 μg mL−1, IC50ABTS = 26.53 μg mL−1 and IC50 ˙ OH = 168.62 μg mL−1, and the growth of breast adenocarcinoma IC50MCF7 = 306.68 μg mL−1 and cervix epitheloid carcinoma cell lines IC50HeLa = 315.49 μg mL−1. Wild blackberry varieties had higher extraction yields, higher total polyphenolic contents and possessed stronger biological effects compared to cultivated blackberries (P < 0.05). All blackberry extracts showed high biological potential that could be attributed to high total polyphenols and flavonoids content and could be utilised as value-added functional food.  相似文献

Polyphenols were extracted from five kinds of New Zealand grape pomace (Sauvignon Blanc, Pinot Gris, Gerwurztraminer, Merlot and Pinot Noir) at 30, 50 and 70 °C in an ultrasonic generator. The extraction kinetics for total phenol, anthocyanin and tannin were determined. The results of dynamics study showed that the extraction of total polyphenols, anthocyanin and tannin followed first-order reaction kinetics during the extraction at 30, 50 and 70 °C. The total phenolic content, anthocyanin conten, and tannin content of water–ethanol extracts from grape pomaces were compared, and the parameters in the extraction kinetics equations were determined. The extraction results showed that the Pinot Noir pomace extract had the highest total phenolic content of 59.95 mg GAE g−1 pomace and tannin content of 79.93 mg EE g−1 pomace. The anthocyanin content in Merlot pomace extract was the highest, which was 4.50 CE g−1 pomace. The results might be of great significance for the development of grape pomace or its polyphenol and/or anthocyanin components as an antioxidant source with natural and inexpensive benefits.  相似文献
