The antioxidant capacity of an organoleptically mild, water‐ and oil‐soluble rosemary extract (RE) was compared with tert‐butyl‐4‐hydroxyanisol (BHA)/tert‐butyl‐4‐hydroxytoluene (BHT) and vitamin E (through dietary supplementation). An optimum concentration of RE (0.1%) was established from sensory trials and used for subsequent analyses. Beef burgers containing added antioxidants were held under simulated retail conditions and monitored for lipid (TBARS) and colour (Hunter ‘a’) stability. RE was more effective in controlling lipid oxidation in aerobically stored samples compared with control or BHA/BHT samples. Similar findings were observed for burgers stored under modified atmosphere although RE was also more effective than vitamin E under these conditions. Addition of RE to vitamin E supplemented beef resulted in lowest TBARS values and suggests a synergistic effect between RE and vitamin E. RE did not improve meat redness compared with other treatments. Water and oil (O/W) soluble RE offers considerable potential as a natural antioxidant for food products.  相似文献

The antioxidant activities of ethanol extracts of rosemary (Rosmarinus officinalis L.) (RE) were tested in natural sunflower oil stored at 60 °C by measuring their peroxide values (POV), thiobarbituric acid‐reactive substances (TBARS), free fatty acid (FFA) content and p‐anisidine value (AnV) after regular intervals compared with synthetic antioxidants. After 3 weeks of storage at 60 °C, sunflower oil containing 200 mg kg?1 rosemary extracts showed lower POVs (75.7 ± 0.47  meq kg?1), thiobarbituric acid‐reactive substances (TBARS)(0.161 ± 0.002 μg mL?1), FFA contents (0.45 ± 0.04 mg g?1) and AnV (12.4 ± 0.02) than the control sample. Sunflower oil containing 200 ppm butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT) and tert‐butylhydroquinone (TBHQ) showed POVs (204 ± 0.68, 159 ± 0.55, 20 ± 0.49 meq kg?1), thiobarbituric acid‐reactive substances (TBARS) (0.171 ± 0.002, 0.184 ± 0.002, 0.069 ± 0.001 μg mL?1), FFA contents (0.34 ± 0.03, 0.46 ± 0.03, 0.2 ± 0.01 mg g?1) and AnV (14.7 ± 0.03, 16.5 ± 0.04, 6.77 ± 0.01), respectively, after 3 weeks of storage at 60 °C. These results illustrate that rosemary extracts exhibited very strong antioxidant activity, almost equal to that of synthetic antioxidants (BHA and BHT).  相似文献

The effectiveness of butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT) in improving the stability of banana chips stored at 65°C were compared. Criteria used in the assessment of the stability of the chips included the determinations of peroxide, p-anisidine, acid and iodine values, E1cm 1% at 232 amd 268 nm and the C18:2/C16:0 ratio of oil extracted from banana chips. It was found that chips fried in refined, bleached and deodorised (RBD) olein containing BHA or BHT were more stable than chips fried in RBD olein without antioxidants. BHT was more effective than BHA in prolonging the shelf-life of of banana chips. The same order of effectiveness of the antioxidants was observed at 65°C and at room temperature (25°C).  相似文献

Abstract: Singlet oxygen quenching by synthetic antioxidants (BHA, BHT, and TBHQ) was directly observed by spectroscopic monitoring of luminescence at 1268 nm. The luminescence data showed unambiguous evidence of singlet oxygen quenching by synthetic phenolic antioxidants with the highest activity for TBHQ, followed by BHA and BHT. The protective activities of these synthetic antioxidants on α-terpinene oxidation with chemically-induced singlet oxygen under dark further confirmed their singlet oxygen quenching abilities. Total singlet oxygen quenching rate constants (kr + kq) of BHA, BHT, and TBHQ were determined in a system containing α-terpinene (as a singlet oxygen trap) and methylene blue (as a sensitizer) during light irradiation, and the values were 5.14 × 107, 3.41 × 106, and 1.99 × 108 M−1s−1, respectively. After the kr value of α-terpinene was first determined, the kr values of the synthetic antioxidants were calculated by measuring their relative reaction rates with singlet oxygen to that of α-terpinene under the identical conditions. The kr values of the BHA, BHT, and TBHQ were 3.90 × 105, 1.23 × 105, and 2.93 × 106, M−1s−1. The percent partition of chemical quenching over total singlet oxygen quenching (kr × 100)/(kr + kq) for BHA, BHT, and TBHQ were 0.76%, 3.61%, and 1.47%, respectively. The results showed that the synthetic antioxidants quench singlet oxygen almost exclusively through the mechanism of physical quenching. This represents the first report on the singlet oxygen quenching mechanism of these synthetic antioxidants. Practical Application: The synthetic antioxidants, especially TBHQ, have been found to have a strong singlet oxygen quenching ability. This article also clearly showed that singlet oxygen quenching by synthetic antioxidants was mainly by the physical quenching mechanism. The results suggested that these synthetic antioxidants, especially TBHQ, could be used practically for the protection of the food components such as edible oils and vitamins against singlet oxygen induced oxidations without significant losses of antioxidant activity during storage under light.  相似文献

BACKGROUND: The present study has explored the use of natural antioxidants from plant sources such as hexane (G‐1) and chloroform (G‐2) extracts of Garcinia, Peltophorum ferrugineum flower extract (FE), turmeric powder (C‐1) and curcumin (C‐2), in biscuit preparation in the place of synthetic ones, and their carry‐through properties were evaluated during processing and storage. Microstructure and electrophoretic characterization of biscuit dough were carried out to understand the influence of these natural antioxidants in the processing of biscuits. RESULTS: Biscuits prepared with C‐1, C‐2, G‐1, and G‐2 were well acceptable, and FE biscuits were least acceptable. Among the antioxidants used, C‐2 was found to retain only 11.23% activity whereas G‐2 had retained 51% activity after baking, which was comparable to synthetic antioxidant butylated hydroxyanisole (BHA) and better than tert‐butylhydroquinone (TBHQ). Microstructure studies of biscuit dough indicated that in the case of G‐1, G‐2, C‐1 and BHA the gluten network formation was intact when compared to FE and TBHQ. Supportive electrophoresis studies indicated that there was no change in the wheat protein subunits of different samples except for FE biscuit dough. CONCLUSION: Based on the result of retention of antioxidant activity during baking and storage, hexane and chloroform extracts of Garcinia (G‐1, G‐2) and turmeric powder (C‐1) were found to be suitable for use in biscuits as natural antioxidants and results were comparable with BHA. The present study also indicated that protein subunits of biscuit dough were not affected by antioxidants. Polypropylene (PP) based active composite films were prepared by adding butylated hydroxy anisole (BHA), butylated hydroxytoluene (BHT), and tertiary butylated hydroquinone (TBHQ) antioxidants using the extrusion molding process. All concentrations of BHT, 2% to 3% BHA, and 3% TBHQ significantly increased the tensile strength (TS) of the composite films compared with control films. Increasing antioxidant concentration decreased TS values for BHT films, whereas an opposite trend was observed for BHA and TBHQ films. BHA at < 2%, BHT at > 2%, and TBHQ at all added concentrations significantly reduced elongation at break (Eb) of the composite films compared to control films. Water vapor permeability (WVP) of 1% BHT film was not significantly different from control. However, other antioxidants especially at increased concentrations significantly increased WVP values. TBHQ films with 300% to 662% increase had the highest WVP and BHT films with 5% to 81% increase had the lowest WVP among composite films. All three antioxidants had a negative effect on the transparency of the films; however the effect of BHA at higher concentrations was greater. The antioxidants did not change the color attributes of the films. Films containing all antioxidants showed 2,2-diphenyl-1-picrylhydrazyl radical-scavenging activity, which increased with increase in their concentration, especially for those containing 3 wt.% BHT and TBHQ. Overall, incorporating BHA and BHT into a PP matrix improved mechanical, barrier, antioxidant properties, and film appearance and consequently were proposed for the development of antioxidant active PP films. TBHQ film is not recommended for food packaging because of its weak mechanical properties (lower Eb and TS values, higher WVP, and greater migration).  相似文献

The main aim of this work was to assess the frying strength of the enzymatically synthesized palm-based medium- and long-chain triacylglycerols (MLCT) oil with the aid of different antioxidants under deep-frying conditions. Palm-based MLCT oil in the presence of synthetic or natural antioxidants showed significantly better (P < 0.05) thermal resistance and oxidative strength than refined, bleached, and deodorized (RBD) palm olein throughout the five consecutive days of frying. Rancimat induction period, free fatty acid content, anisidine value, E\text1% 1\textcm E^{{\text{1\% }}} _{1{\text{cm}}} at 232 and 268 nm, color, percentage of oil uptake, and viscosity measurement can be used as oil quality parameters to indicate the degree of oil deterioration under continuous stressed frying conditions. No significant changes (P > 0.05) in the saturated/unsaturated fatty acids ratio across frying periods indicated good oxidative stability of the palm-based MLCT oil. Due to the polarity of medium- and long-chain triacylglycerols in palm-based MLCT oil, total polar compounds determination may not be a suitable oil quality measures. Sensory evaluation of fried chips showed no significant differences (P > 0.05) between chips fried in RBD palm olein and palm-based MLCT oil over the 3-month storage period.  相似文献

ABSTRACT: Effects of synthetic phenolic antioxidants (BHA, BHT, and TBHQ) on the methylene blue (MB) sensitized photooxidation of linoleic acid as compared with that of α‐tocopherol have been studied. Their antioxidative mechanism was studied by both ESR spectroscopy in a 2,2,6,6‐tetramethylpiperidone (TMPD)‐methylene blue (MB) system and spectroscopic analysis of rubrene oxidation induced by a chemical source of singlet oxygen. Total singlet oxygen quenching rate constants (kox?Q+kq) were determined using a steady state kinetic equation. TBHQ showed the strongest protective activity against the MB sensitized photooxidation of linoleic acid, followed by BHA and BHT. TBHQ (1 × 10?3 M) exhibited 86.5% and 71.4% inhibition of peroxide and conjugated diene formations, respectively, in linoleic acid photooxidation after 60‐min light illumination. The protective activity of TBHQ against the photosensitized oxidation of linoleic acid was almost comparable to that of α‐tocopherol. The data obtained from ESR and rubrene oxidation studies clearly showed the strong singlet oxygen quenching ability of TBHQ. The kox?Q+kq of BHA, BHT, and TBHQ were determined to be 3.37 × 107, 4.26 × 106, and 1.67 × 108 M?1 s?1, respectively. The kox?Q+kq of TBHQ was within the same order of magnitude of that of α‐tocopherol, a known efficient singlet oxygen quencher. There was a high negative correlation (r2 = ?0.991) between log (kox?Q+kq) and reported oxidation potentials for the synthetic antioxidants, indicating their charge‐transfer mechanism for singlet oxygen quenching. This is the 1st report on the kinetic study on kox?Q+kq of TBHQ in methanol as compared with other commonly used commercial synthetic antioxidants and α‐tocopherol.  相似文献

Soybean oil in the presence or absence of 200 µg g?1 tert‐butyl hydroquinone (TBHQ) was subjected to accelerated oxidative storage at 60 °C for 10 days or stored at room temperature for 12 months. Tocopherol contents of the oil decreased, whereas the headspace volatiles and peroxide values (PV) increased as the storage time increased. During accelerated storage, TBHQ was effective in retarding the formation of hydroperoxides and headspace volatiles in the oil. TBHQ also protected tocopherols, especially α‐tocopherol, from oxidation. During long‐term room‐temperature (LTRT) storage, the changes in PV between the oils with and without TBHQ were similar, but the oil with TBHQ had lower headspace volatile contents than that without TBHQ. Headspace volatile analysis was more suitable than PV measurement for predicting the oxidative stability of soybean oil during LTRT storage. The contents of hexanal or (E)‐2‐heptenal in the oil at 1–5 days of accelerated storage could be used to predict those of the corresponding compound in the oil at 0–4 weeks of LTRT storage. The oxidative stability of structured lipids (SLs) synthesised by specific sn‐1,3‐lipase catalysed interesterification of soybean oil (SBO) with caprylic acid (CA) in a stirred batch reactor was studied. SLs contained considerable amounts of tocopherol (TOH) isomers, although they lost almost 25% of endogenous TOHs during production. The effects of the addition of different TOH homologues (α, β, γ, δ), ascorbyl palmitate (AP, 200 ppm), lecithin (Le, 1000 ppm), butylated hydroxytoluene (BHT, 100 ppm) and butylated hydroxyanisole (BHA, 100 ppm) on the oxidative stability of SLs were investigated. Induction time (IT) of SBO, determined by the Rancimat method, decreased from 8.4 to 5.8 h at 110 °C after the modification. On the other hand, purified SLs and purified SBO had the same IT due to the tocopherol reduction during silica purification. No significant difference was observed between IT of SLs and SLs plus different α‐tocopherol concentrations (50, 100, 150, 200, 300, 500 and 1000 ppm) (P > 0.05). However, the addition of Le and/or AP significantly improved oxidative stability of purified SLs and SBO. The ternary blend containing δ‐TOH, AP and Le had higher IT than ternary blends of α‐TOH, β‐TOH or γ‐TOH. Furthermore, ternary blend containing BHA, AP and Le had higher IT than ternary blends of BHT, AP and Le. In addition, there was an increase in peroxide value (PV), conjugated diene (CD) content and p‐anisidine value (AV) during oxidation of oils at 60 °C. The changes in quality characteristics of refined, bleached and deodorized (RBD) palm olein used for deep‐fat frying of banana chips (180°C for 3 min at 17 min intervals for 2 h day?1, to give six fryings per day and 30 fryings over five consecutive days) were studied. Four frying systems were used: RBD palm olein without antioxidant (system 1); RBD palm olein with 0.2 g kg?1 α‐tocopherol (system 2); RBD palm olein with 1 g kg?1 oleoresin rosemary (system 3); and RBD palm olein with the combination of 0.1 g kg?1 α‐tocopherol + 0.5 g kg?1 oleoresin rosemary (system 4). Fried oil samples were analysed for fatty acid composition, peroxide value (PV), anisidine value (AnV), totox value, free fatty acids (FFA) value, iodine value, at 232 and 268 nm, colour and viscosity. The crispness and sensory evaluation of the banana chips fried in this study were also evaluated. The results showed that RBD palm olein with added antioxidant reduced PV, AnV, totox value, at 232 and 268 nm, FFA and viscosity. The order of effectiveness in inhibiting oil oxidation in RBD palm olein was: oleoresin rosemary > α tocopherol + oleoresin rosemary > α‐tocopherol > control. For the crispness, the force values of banana chips fried in all systems were comparable. Sensory evaluation of fried banana chips for each system showed that there was no significant (P > 0.05) difference in terms of colour, flavour, odour, texture and overall acceptability. Structured lipid (SL) was synthesised by enzymatic interesterification of soybean oil and perilla oil. Response surface methodology (RSM) was used to determine the effects of three variables on the lipase‐catalysed interesterification. Based on ridge analysis, combination of reaction time (X1; 18 h), reaction temperature (X2; 60 °C), and substrate mole ratio (X3; 1:1) were optimised for higher incorporation of ω3 (alpha (α) linolenic acid (ALA)) (Y). The predictive model was found to be adequate due to no significant lack of fit and satisfactory level of coefficient of determination (R2 = 0.97). Experiments were conducted under optimised conditions which were predicted by the model equations, obtained from RSM yielded SL with linoleic (44.01%) and ALA (35.82%) were detected at sn‐2 position. The effects of antioxidants such as catechin, butylated hydroxytoluene (BHT) BHT and rosemary extracted on the oxidative stability in SL were investigated. Among all antioxidants, the highest stability was obtained from catechin.  相似文献

The potential of Asparagus racemosus (shatavari) extract was evaluated in comparison with natural (rosemary, green tea) and synthetic (butylated hydroxyanisole, tert‐butyl hydroquinone) antioxidants, in ghee using accelerated oxidation tests. Its aqueous and ethanolic extracts significantly retarded deterioration of ghee relative to the control (without addition of synthetic or natural herb extract), as observed in peroxide value (8.3, 13.2 and 25.8 mmolO2/g fat respectively), conjugated diene% (1.30, 1.44 and 1.78, respectively), radical‐scavenging potential (40.0, 25 and 5.5% inhibition, respectively) and oxidative stability index (16.8, 13.5 and 10.3 h respectively) after 21 days. However, these were less effective than the natural and synthetic antioxidants. The ethanolic extract of shatavari, having polyphenol content of 24.99 ± 0.74 mg gallic acid equivalent/g, exhibited some antioxidative and radical‐scavenging activities.  相似文献

Various promoters and inhibitors of enzymic lipid peroxidation in catfish were investigated. At 100 ppm BHA, BHT, NDGA, TBHQ, PG, EDTA, STPP, TDPA, THBP, and ethoxyquin completely inhibited lipid peroxidation activity. Natural antioxidants, a-tocopherol, P-carotene, and rosemary powder, had moderate inhibitory effects. Sodium ascorbate and erythorbate at a concentration of 100 ppm activated lipid peroxidation; however, higher concenlrations of these antioxidants had inhibitory effects. Unlike ferric and ferrous ions, Cu++ ions at 0.015 mM did not catalyze lipid peroxidation. Inorganic pyrophosphate and phosphate at 0.1 mM chelated ferric ion and inhibited lipid peroxidation.  相似文献

The effect of the natural antioxidants and antimicrobials from ethanol extracts of rosemary and sage tea on sensory, chemical [Total volatile basic nitrogen (TVB‐N), thiobarbituric acid reactive substances (TBARs), peroxide value (PV), free fatty acid (FFA)] and microbiological (total viable count‐TVC and total coliform count) changes of vacuum‐packaged sardine (Sardina pilchardus) fillets stored at 3 ± 1 °C was investigated for 20 days. The fish fillets were divided into three groups: untreated group (control, C) and treated groups that were immersed in a 1 L of distilled water containing 10 g rosemary (R group) or sage tea (S group) extracts for 4 min. The shelf life of sardine fillets was found to be 13 days for control (C), 20 days for R and S groups according to sensory assessment results, whose corresponded microbiological assessment showed a shorter shelf life (5 days for C group, 9 for R and S groups). At the end of storage period, TBARs values were 0.98 mg malonaldehyde kg?1 for C group, 0.66 malonaldehyde kg?1 for R group and 1.44 mg malonaldehyde kg?1 for S group. Microbiological results showed that natural compounds from rosemary and sage tea resulted in a lower bacterial growth in fish fillets during the storage period.  相似文献

The synthetic phenolic antioxidants butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT) and tert-butyl hydroquinone (TBHQ) were pre-concentrated by stir-bar sorptive extraction and thermally desorbed (SBSE-TD) before analysis by GC-MS. Several parameters affecting the derivatisation step and both SBSE extraction and thermal desorption were carefully optimised. When the analyses of BHA and TBHQ in their acetylated, silylated and underivatised forms were compared, the best results were obtained when the in-situ derivatisation procedure with acetic anhydride was employed. Quantification was carried out using carvacrol as the internal standard, providing quantification limits of between 0.11 and 0.15 ng ml?1, depending on the compound. Recovery assays for samples spiked at two concentration levels, 1 and 5 ng ml?1, provided recoveries in the 81–117% range. The proposed method was applied in the analysis canned soft drinks and the analytes were found in five of the 10 samples analysed.  相似文献

Antioxidants may be present in foods as endogenous factors or may be added to preserve their lipid components from quality deterioration. Synthetic antioxidants such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), propyl gallate (PG) and tert-butylhydroquinone (TBHQ) are commonly used in food formulations. However, due to safety concerns, interest in natural antioxidants has intensified. To address the demand by consumers, mixed tocopherols, herbal extracts such as those of rosemary and sage, as well as tea extracts have been commercialized for food and nutraceutical applications. 目的通过添加具有抗氧化活性和较高安全性的香辛料提取物,解决中式肉类菜肴的软罐头食品中变色、风味变差以及脂肪氧化酸败等问题。方法向低温油炸肉丝软罐头中添加不同添加量的迷迭香、肉桂和VE提取物以及2种人工合成抗氧化剂丁基羟基茴香醚(butyl hydroxy anisd,BHA)和没食子酸丙酯(propylgallate,PG),测定其对软罐头菜肴产品在贮藏过程中硫代巴比妥酸值(thiobarbituric acid-reacitive substances,TBARS值)、过氧化物值(peroxide value,POV值)和色差值的影响。结果添加的3种共9组天然抗氧化剂中,迷迭香提取物抑制初级氧化产物氢过氧化物和次级氧化产物丙二醛的效果最好(P0.05)。添加300 mg/kg迷迭香、90 mg/kg PG和120 mg/kg BHA的3组处理组在21 d冷藏期内,其POV值和TBARS值显著小于其他各组(P0.05),说明添加300 mg/kg迷迭香可以替代人工抗氧化剂。结论低温油炸肉丝软罐头中添加300 mg/kg迷迭香提取物,可以减缓脂肪氧化速度,进而延长产品的货架期。  相似文献
