Accumulation of toxic metals in liver, a rich natural source of essential elements, can present health risks to regular consumers of liver. A total of 35 fresh liver samples of cow, sheep, goat, pig, grass-cutter (Thryonomys swinderianus), gaint rat (Cricetomys gambianus), red deer (Cervus elaphus), chicken and antelope (Antilocapra americana) were obtained from three different markets in Accra and Kumasi, Ghana. Samples were analyzed using atomic absorption spectrometry and an automatic mercury analyzer. Levels of iron in the grass-cutter and pig of 500.5–645.4 mg kg?1 were the highest in the animal livers examined. Mn concentrations were highest in grass-cutter and rat liver, ranging 16.5–30.2 mg kg?1. The safe Cu and Zn permissible limits of 20 and 50 mg kg?1 were exceeded in 70 and 75% of the liver samples, respectively. Generally, for each animal group studied, at least 50% of the sample livers exceeded the Cd permissible limit of 0.5 mg kg?1. The levels of Pb, which ranged 1.3–13.8 mg kg?1, exceeded the proposed European Commission (EC) limit of 0.5 mg kg?1. Care must be taken by regular consumers of the iron-rich animal livers of grass-cutter, pig and rat because they also had the highest levels of Pb (in grass-cutter and pig) and Cd (in grass-cutter, rat and pig). The liver samples analyzed for Hg had values far below the permissible limit of 0.5 mg kg?1.  相似文献

ABSTRACT

Concentrations of cadmium (Cd) and lead (Pb) were determined in livers (n = 52) and kidneys (n = 52) of female cattle (345–2717 days old) from dairy farms in the region Vojvodina. Cd and Pb were analysed by inductively coupled plasma-optical emission spectrometry, after microwave digestion. Cd and Pb concentrations did not exceed the Serbian and European maximum set limits in any sample. The Cd concentrations in the livers and kidneys ranged from 0.033 to 0.151 mg kg?1 wet weight and from 0.055 to 0.510 mg kg?1 wet weight, respectively. The corresponding Pb concentrations were 0.015-0.159 mg kg?1 wet weight and 0.021-0.196 mg kg?1 wet weight, respectively. Mean Cd and Pb concentrations were significantly lower (p < 0.001) in the liver (0.072 and 0.053 mg kg?1 wet weight) than in the kidney (0.190 and 0.075 mg kg?1 wet weight). There were good correlations between Cd in liver and Cd in kidney, Pb in liver and Pb in kidney, Cd level and age and Pb level and age in both tissues.  相似文献

The concentrations of seven trace elements (As, Cd, Cr, Pb, Se, Cu and Zn) in 93 red mould rice (Monascus) food samples in Taipei, Taiwan, were determined by inductively coupled plasma-mass spectrometry (ICP-MS) after wet digestion. The results, calculated in mg?kg?1 (wet weight) for each sample, revealed the general scenario of food safety in Taiwan: As (0.005–12.04), Cd (<0.0005–2.22), Cr (0.014–6.95), Cu (0.012–8.70), Pb (0.001–0.64), Se (<0.001–1.29) and Zn (0.020–67.02). Three food samples were identified with As concentrations higher than regulatory limits: a dietary supplement sample and a seaweed sample with As concentrations that exceeded the limit of Taiwan's health food standard of 2?mg?kg?1, and a canned eel sample with an As concentration that exceeded the limit of Canada's fish standard of 3.5?mg?kg?1. This study suggests that the estimated intakes of these seven trace elements from the consumption of foods containing Monascus pose little risk, as the trace element contents in the majority of samples were lower than the permissible/tolerable intakes per week according to the guidelines recommended by the Food and Agricultural Organization/World Health Organization (FAO/WHO). Moreover, their concentrations in foods containing Monascus differ widely for different food varieties, suggesting that external contaminants and raw materials are the main sources of trace elements. This study shows that ICP-MS is a simple method proposed for the determination of As, Cd, Cr, Pb, Se, Cu, and Zn in foods containing Monascus.  相似文献

BACKGROUND: Human exposure to heavy metals is attributed to consumption of vegetables raised in polluted soil environment. We examined the concentrations of As, Cd, Co, Cr, Cu, Ni, Pb and Zn in soils and lettuce (Latuca sativa) and amaranthus (Amaranthus caudatus) in 15 garden fields under long‐term wastewater irrigation. RESULTS: The concentrations of As (0.3–2.1 mg kg?1), Cd (0.07–0.3 mg kg?1), Co (4.6–9.1 mg kg?1) and Cr (21.6–36.2 mg kg?1) in the gardens were consistent with background concentrations in soils, but Ni (12.6–25.7 mg kg?1), Cu (12.5–24.6 mg kg?1), Pb (25.7–71.6 mg kg?1) and Zn (52.3–158 mg kg?1) concentrations were double the concentrations normally encountered in arable fields in the region. The concentrations of Cd and As in the vegetables were within safe limits, but Co (0.14–0.67 mg kg?1 fresh weight (fw)) and Ni (1.0–2.7 mg kg?1 fw) concentrations in lettuce were relatively high for leaf vegetables. The concentration of Pb (0.65–4.80 mg kg?1 fw) was above safe limit of 0.3 mg kg?1 fw, while the concentrations of Cu (1.3–2.7 mg kg?1 fw and Zn (10.2–23.6 mg kg?1 fw) were close to the unsafe limits for leaf vegetables. There were no strong linear correlations between soil metal concentrations and bio‐concentrations in the vegetable crops. CONCLUSION: We surmise that leaf vegetables can accumulate metals in their tissues to unsafe levels even when total metal concentrations in these soils are below the allowable concentrations in agricultural soils. Accumulation levels of trace elements in edible tissues of three shrimp species (Penaeus semisulcatus, Parapenaeus longirostris and Paleomon serratus) from the Gulf of Antalya, Turkey were investigated. Copper (Cu), cadmium (Cd), zinc (Zn), iron (Fe) and manganese (Mn) concentrations were determined by atomic absorption spectrophotometry. The lowest Cu (1.33 mg kg?1) and Cd (0.23 mg kg?1) and highest Mn (1.52 mg kg?1) concentrations were found in P. longirostris, the lowest Zn (6.25 mg kg?1), Fe (1.84 mg kg?1) and Mn (0.25 mg kg?1) concentrations in P. serratus and the highest Cu (6.19 mg kg?1), Cd (2.36 mg kg?1), Zn (30.84 mg kg?1) and Fe (33.89 mg kg?1) concentrations in P. semisulcatus. The Cd levels detected in P. semisulcatus and P. serratus were above legislative limits. Our results show that there were significant differences in trace element concentrations among the three shrimp species. ABSTRACT

In this study, the levels of arsenic (As), cadmium (Cd) and lead (Pb) have been determined in the flesh of two species of fish, sardine (Sardina pilchardus) and swordfish (Xiphias gladius) fished in the Algerian coast. Quantification of As, Cd and Pb was carried out using an ICP-MS method and the results were compared with the thresholds set by national and international regulatory bodies. In a further step, the risk to consumers was assessed using estimated daily intake (EDI), target hazard quotient (THQ) and hazard index (HI).The average concentration of As and Pb was higher in sardine (1.82; 0.10 mg kg?1 w.w., respectively), than in swordfish (1.10 mg kg?1 w.w.; not determined), whereas the concentration recorded for Cd was the same for both species (0.01 mg kg?1 w.w.). These concentrations are below maximum limits set in regulations. The THQs and HI were widely below 1. The consumption of these fish does not pose risk to the consumers.  相似文献

Concentrations of five toxic metals were determined in two fish species from Turkish cities during 2010–2011. The obtained lead concentrations for all of the studied Trachurus trachurus (mean 777 μg kg?1) and Cyprinus carpio (mean 439 μg kg?1) samples were found to be higher than the maximum level (ML) of 300 μg kg?1, while Cd concentrations in the same samples were lower than the ML. Mean chromium (501 μg kg?1), Ni (272 μg kg?1) and Cu (785 μg kg?1) concentrations in T. trachurus were significantly higher than in C. carpio (336 μg Cr kg?1, 229 μg Ni kg?1 and 394 μg Cu kg?1), similar to those of Pb and Cd. Measured Pb concentrations in T. trachurus tissues are significantly higher than the ML, while those of Cd in both T. trachurus and C. carpio species were lower than the ML values.  相似文献

Whole Atlantic mackerel (Scomber scombrus), sardine (Sardina pilchardus) and Mediterranean hake (Merluccius merluccius) from the Croatian Adriatic were stored at 22 °C and changes in histamine, putrescine, tyramine and cadaverine levels were monitored in relation to bacterial endotoxin. After 12 h, histamine levels in sardine were above the legal limit of 50 mg kg?1, set by the US Food and Drug Administration, and an increase in putrescine content preceded the increase in histamine. After 24 h, histamine contents in mackerel and sardine reached 1090 ± 101 and 577 ± 275 mg kg?1, respectively, which exceeded the toxic threshold of 500 mg kg?1. At the same time, the putrescine content was also high in both fish (353–420 mg kg?1). The time-course of endotoxin production was similar in all fish species stored at 22 °C. A high correlation was found between endotoxin and histamine, and between endotoxin and putrescine in mackerel and sardine. On the other hand, high endotoxin levels in hake, after 24 h, were associated with the low histamine and putrescine content (40–60 mg kg?1).  相似文献

This study evaluates the effects of different cooking (grilling, frying and steaming) and processing (smoking, salting, marinating and drying) methods on iodine contents of valuable marine and freshwater fish species commonly consumed in Turkey. The highest mean iodine content of cooked fish was determined to be 3.760 mg kg?1, 2.788 mg kg?1, 5.831 mg kg?1 and 6.161 mg kg?1 in grilled anchovy, horse mackerel, Atlantic Bonito and whiting, 0.914 mg kg?1, 1.452 mg kg?1, 3.106 mg kg?1 in steamed bluefish, red mullet. The highest mean iodine content of processed fish was determined to be 2.149 mg kg?1 in smoked mackerel, 0.701 mg kg?1 in salted Bonito, 1.128 mg kg?1 in dried horse mackerel and 7.283 mg kg?1 in marinated anchovy. This iodine values are also above the Upper Tolerable Nutrient Level of 100–150 μg day?1 iodine.  相似文献

BACKGROUND: Among seafood products, crustaceans are an important group owing to their nutritional benefits and high market value. The aim of this study was to evaluate the proximate composition as well as essential and non‐essential elements in the edible muscle of Nephrops norvegicus (Norway lobster). RESULTS: The studied crustacean showed a high protein level of about 210 g kg?1 and a mineral level of about 24 g kg?1. The pattern for the elements studied was Cl > Na > K > P > S > Ca > Mg > Br > Fe > Sr ≈ Zn > Cu > Mn > Rb > Se > Ni > Cr. Regarding non‐essential elements, the average total Hg content was 0.40 mg kg?1, but two samples exceeded the legal limit set by the European Union (EU) for Hg in crustaceans (0.50 mg kg?1). The levels of Pb and Cd found in all samples were below the EU limits (0.50 mg kg?1 for both metals). CONCLUSION: Nephrops norvegicus is a good source of protein and contains most minerals at levels sufficient to satisfy the dietary reference intake. The amounts of Pb and Cd are not a concern. Hg levels indicate some contamination; however, taking into account the type of consumption of this species, it can be concluded that this does not represent a risk in terms of the human diet. ABSTRACT

Lead (Pb) and cadmium (Cd) were determined in mangrove root crab (Goniopsis cruentata) tissues (in natura) and in two culinary preparations by graphite furnace atomic absorption spectrometry. Mangrove root crab samples from three sampling sites along the Jaguaripe River, Bahia, Brazil, where lead-glazed ceramics are produced, and from two commercial preparations were collected or purchased in March and April 2016. Cd levels in raw and processed samples were below the methods’ limits of detection (0.016 mg kg?1), while Pb levels in the raw tissues were determined only in the gills (0.67 mg kg?1) and in the hepatopancreas (0.14 mg kg?1). However, Pb levels increased from 0.05 to 2.84 mg kg?1 in boiled/sorted muscle and in the traditional stew (with a 57-fold increase), respectively. Pb levels augmented significantly in the processed food due to migration of Pb used in the glazing of cooking ceramic utensils, surpassing the Brazilian and international safety limits.  相似文献

Two essential amino acids (methionine and tryptophan); anti‐nutritional factors (tannin and trypsin inhibitor) and toxic elements (Pb, Cd, Ni, As, Hg and Cr) were determined spectrophotometrically from five edible wild mushrooms. The tryptophan content was between 1.00 and 1.82 g (100 g)?1 but methionine was low at 0.26–1.38 g (100 g)?1. Tannin content was high (30.3–40.0 mg g?1) but trypsin inhibitor was low (22.0–39.5 TIU g?1). Trace elements analysis reviled Pb (0.34–5.06 mg kg?1) to be the highest of all the trace elements. Cd was (0.06–1.70 mg kg?1), Ni (0.26–2.08 mg kg?1), As (0.17–0.92 mg kg?1), Hg (0.01–0.05 mg kg?1) and Cr (0.04–0.22 mg kg?1). These mushrooms are nutritious but must be well processed to eliminate or at least reduce the levels of tannin and Pb to improve their nutritional values.  相似文献

ABSTRACT

Tuna is one of the most frequently consumed fish and, as a predator, can biomagnify pollutants. Metal and other elements pollution is an important worldwide concern. Based on these considerations, the aim of this work was to investigate the occurrence of As, Cd, Cr, Ni, Hg and Pb in tuna coming from different FAO areas to evaluate human exposure. The analysis was performed on muscle tissues through a quadrupole inductively coupled mass spectrometry. One hundred thirty-one samples were analysed. One red tuna from the Adriatic Sea and 11 yellow tunas exceeded Pb maximum levels (MLs) with a concentration ranging 0.31–0.86 mg kg?1; three red tunas from different Mediterranean sub-areas exceeded Hg MLs, with a concentration range 1.19 to 1.80 mg kg?1. All the Hazard Indexes (HIs) were lower than one, indicating that only a negligible health hazard could derive from the ingestion of tuna, for both average and high consumers. The risk of carcinogenicity from Cr is still under debate at the concentrations detectable in food.  相似文献

Concentrations of As, Cd, Cu, Hg and Pb were measured by atomic absorption spectrometry (AAS) in muscle tissues of four fish species: anchovy (Engraulis encrasicholus), mackerel (Scomber japonicus), red mullet (Mullus surmuletus) and picarel (Spicara smaris) from the Croatian waters of the Adriatic Sea during 2008 and 2009. Metal levels measured in anchovy were in the following ranges (mg kg−1): As 0.01–54.8, Cd 0.001–0.02, Cu 0.001–6.29, Hg 0.001–0.52 and Pb 0.001–0.34 mg kg−1. Metal ranges in red mullet were (mg kg−1): As 0.01–70.9, Cd 0.002–0.85, Cu 0.001–57.3, Hg 0.001–2.07 and Pb 0.001–0.27 mg kg−1. Metal level ranges measured in mackerel were (mg kg−1): As 0.01–36.4, Cd 0.001–0.1, Cu 0.001–15.9, Hg 0.001–0.78 and Pb 0.002–0.24 mg kg−1. In picarel, metal level ranges were (mg kg−1): As 0.01–54.6, Cd 0.001–0.1, Cu 0.08–32.9, Hg 0.001–0.207 and Pb 0.001–0.46 mg kg−1. Significant differences in metal concentrations were found among fish species. The results presented on metal contents in the examined species give an indication of the environmental conditions. Concentrations of Cd, Cu, Hg and Pb obtained were far below the established values by the European Community regulations. However, arsenic levels found in red mullet were higher than the recommended legal limits for human consumption and as such may present a human health issue.  相似文献

In the present study ninety nine polished white rice samples were collected in three areas, all over Lorestan Province located in the west of Iran, and analysed for six elements by Flame Atomic Absorption Spectrometry (FAAS). For individual elements, Zinc (Zn) showed the highest concentration among the analysed essential elements with a mean of 28.6 mg kg?1 and next to copper (Cu) of 22.8 mg kg?1. Analysis of the essential and toxic elements for possible inter-area variation by ANOVA showed that there are significant differences between the areas. There was no significant difference between areas for Zn concentrations. Most of the samples nearly contained world wide average concentration of iron (Fe) and Zn in rice grains that were reported by various researches. But, the content of calcium (Ca) in the rice samples produced in Lorestan Province were much lower than other countries, meanwhile Cu concentrations were much higher than other studies. Cadmium (Cd) and Lead (Pb) concentrations in the sampled rice were lower in comparison with their upper limits (0.1 and 0.2 mg kg?1 for Cd and Pb, respectively) approved by Iranian Ministry of Health. Therefore, it can be concluded that there is no health problems result from Lorestan rice consumption, for these two elements.  相似文献

The current study encompassed a survey on the levels of toxic trace elements in two highly consumed fish species in commercial fishing centres of western, central and eastern Mediterranean Sea. A Zeeman GTA-AAS graphite furnace atomic absorption spectrometry system was used throughout the study. Toxicological evaluation of the samples revealed a low Cd content in the raw samples, ranging between 0.003 and 0.027?mg?kg?1. Pb presented significantly higher values, from 0.037 to 0.297?mg?kg?1, occasionally reaching the limit of 0.3?mg?kg?1. Heavy metal levels were particularly higher in bones, thus raising queries about the safe consumption of fish intended to be eaten as a whole, a very common practice for small fish and canned products. The influence of industrial-scale canning showed that canning enhanced heavy metal levels by 35%–80%. The effect of canning depended on metal type and reduction of moisture loss after the steam-roasting step of the canning procedure.  相似文献

In this study, the concentrations of copper, zinc, manganese, iron, cobalt, calcium, magnesium, nickel, lead, chrome and boron elements in muscle, gill, skin, intestine and liver of selected fish species (Rutilus rutilus, Carassius carassius, and Cyprinus carpio) from Porsuk Dam Lake/Turkey were determined. The element analyses were performed with inductive coupled plasma-optic emission spectroscopy following microwave digestion techniques. Metal accumulation levels of tissues and species were remarkably different. Concentrations of Ni, Pb, Cr and B in all tissues of the species were found to be below the detection limit (BDL) with ICP-OES. Irrespective of the fish species and tissues, the concentrations (mg kg?1 wet weight) of the other matals varied in the following ranges: Cu, below detection limit (BDL)-17.15; Zn, 9.08–699.60; Mn, BDL-8.23; Fe, 4.42–137.17; Co, BDL-1.49; Ca, 144.40–14376.60 and Mg, 95.81–903.23. The metal levels in muscle of the species were found below the limits proposed by FAO, WHO, and Turkish Food Codes, and these are safe for human consumption. However, heavy metal accumulation in skin and liver of some species was as high as non-permitted limits.  相似文献

Concentration levels of As, Cd, Hg, Pb, Tl, Sn, Sb Co, Cu, Mn, Se, Zn, Cr, Ni and Mo in different types of rice cultivated in irrigated fields in Brazil were evaluated. Arsenic, Cd, Pb, Zn, Mn and Cu were found in higher concentrations in brown rice samples, suggesting the prevalence of these elements in the bran. Meanwhile, lower concentrations of Pb, Mo, Cr, Se and Co were found in parboiled rice. Organic rice did not differ of cultivated conventionally rice. Thallium, Hg and Sb were not detected in any rice sample whose limits of detection were 0.7 μg kg?1, 2.5 μg kg?1 and 8 μg kg?1, respectively. The concentrations of the investigated elements were compared with those reported for polished rice and brown rice from other countries, unveiling concentrations in general at the same level for rice produced at non-contaminated sites.  相似文献

Toxic and essential elements in 11 different sea cucumber species were determined and compared with daily intake recommendations and maximum allowed levels. The contents of macro-elements contents in dried sea cucumber samples were found to be 25,000–152,000?mg?kg–1 for Na, 4000–8600?mg?kg?1 for Mg, 1100–5200?mg?kg?1 for K, 15,000–68,000?mg?kg?1 and 36,300–251,000?mg?kg?1 for Cl. Trace element concentrations in dried sea cucumber samples were found to be 11–100?mg?kg?1 for Zn, 41–660?mg?kg?1 for Fe, 3–74?mg?kg?1 for Cu, 1.1–16?mg?kg?1 for Mn, 1.4–3.7?mg?kg?1 for Se, 1.1–9.6?mg?kg?1 for Cr, and 0.3–5.1?mg?kg?1 for Ni. All sea cucumber species were rich sources of Na, Cl, Mg, Ca, Fe, Cu, Se and Cr for human consumption. Regarding contaminants, As, Cd and Pb concentrations in dried sea cucumbers were in the ranges of 1.1–6.1, 0.03–0.06 and 0.11–0.69?mg?kg?1, respectively. The aim of the study was to investigate the interactions between selenium (Se) and various trace elements, both toxic and essential, involved in the antioxidant system. A total of 128?day-old chicks (Gallus gallus, broilers) were used to investigate the effect of Se yeast supplementation on the accumulation of cadmium (Cd), copper (Cu) iron (Fe) and zinc (Zn). There were four replicates of four dietary treatments: T1 (basal diet with no added Se, analyzed to contain 0.21?mg?kg?1), T2 (T1 with 0.15?mg?kg?1 Se added), T3 (T1 with 0.3?mg?kg?1 Se) and T4 (T1 with 3.0?mg?kg?1 Se). At week 4 and 6, two chickens per replicate pen were sacrificed for whole blood, breast muscle and liver sampling. Samples were analyzed by ICP–MS. Supplementation with Se-yeast, not only increased Se concentration but also reduced Cd concentration in the tissues. Selenium was negatively correlated with Cd and positively correlated with Zn, Cu and Fe. Cadmium was negatively correlated with Zn and Cu. Zinc was positively correlated with Cu. Iron was negatively correlated with Cu and uncorrelated with Zn and Cd. The balance between Se, Cu, Fe and Zn is important for proper antioxidant defense since they are an integral part of various antioxidant enzymes.  相似文献
