This study was performed to evaluate the effect of different doses (0, 1.5, 3, and 4.5 kGy) of e‐beam irradiation on the quality parameters (pH, Hunter's parameter, and heme pigment) and stability qualifiers (peroxide value [POV], thiobarbituric acid reactive substances [ TBARSs], and total volatile basic nitrogen [TVBN]) of smoked duck meat during 40 d of storage under vacuum packaging at 4 °C. The initial populations of total bacteria (7.81 log CFU/g) and coliforms (5.68 log CFU/g) were reduced by approximately 2 to 5 log cycles with respect to irradiation doses. The results showed that pH, myoglobin, met‐myoglobin, L*, a*, and b* showed significant differences with respect to different doses and storage intervals; a* and b* did not vary significantly because of storage. Higher pH was found in samples treated with 4.5 kGy at 40 d, while the minimum was observed in nonirradiated samples at day 0 of storage. Higher POV (2.31 ± 0.03 meq peroxide/kg) and TBARS (5.24 ± 0.03 mg MDA/kg) values were found in 4.5 kGy‐treated smoked meat at 40 d and the lowest was reported in 0 kGy‐treated meat at initiation of storage (0 d). However, irradiation suppressed TVBN during storage and higher TVBN (7.09 ± 0.32 mg/100 mL) was found in duck meat treated with 0 kGy at 40 d. The electronic nose (e‐nose) effectively distinguished flavor profiles during the different storage intervals. The results showed that different sensory attributes did not vary significantly with respect to the dose of irradiation. We conclude that low dose of e‐beam irradiation and vacuum packaging is beneficial for safety and shelf life extension without affecting the sensory characteristics of smoked duck meat.  相似文献

Backround The present study evaluated the quality of raw peanuts and pistachio nuts as a function of irradiation dose in order to determine dose levels causing minimal undesirable changes to these products. Physico‐chemical (colour, peroxide value, hexanal content, fatty acid composition, volatile compounds) and sensory (colour, texture, odour, taste) properties of raw peanuts and pistachio nuts were determined after irradiation at doses up to 7 kGy. Results Results showed an eight‐ and seven‐fold increase in peroxide value and a twelve and five‐fold increase in hexanal content after irradiation at a dose of 7 kGy for peanuts and pistachio nuts, respectively. An increase was also observed in saturated fatty acids (20.51–28.28% and 15.24–24.87%) with a parallel decrease in unsaturated fatty acids (79.49–71.72% and 84.76–75.13%) for peanuts and pistachio nuts, respectively. Likewise, volatile compounds such as aldehydes, alkanes, ketones and alcohols comprising secondary oxidation products of peanut and pistachio nut lipids increased after irradiation. Pistachio nut colour parameter a* and to a lesser extent parameters, L* and b* decreased after irradiation leading to a slight but noticeable darkening in product colour while colour parameter L*, b* and a* of raw peanut remained unchanged by irradiation up to 7 kGy. Conclusion Based on sensory evaluation, peanuts and pistachio nuts become unacceptable for consumption when irradiated at doses higher than 3 kGy. Effects of gamma irradiation on the color characteristic and biological activities of methanol and acetone extracts of Lonicera japonica (Japanese honeysuckle) irradiated at 0, 10, 20, and 30 kGy were investigated. Hunter color L*- and a*-value increased by irradiation in a dose-dependent manner, resulting in it being lighter than the nonirradiated, while Hunter color b*-values decreased by irradiation (P<0.05). The extracts from L. japonica showed an inhibition effect against tyrosinase, xanthine oxidase and the nitrite scavenging ability. Tyrosinase inhibition effect of L. japonica was higher in the irradiated sample than the nonirradiated, and the effect was increased by irradiation doses. The L. japonica extracts had a higher inhibitory effect against xanthine oxidase, and the effect was not changed by irradiation. Nitrite scavenging activity was the highest in L. japonica extract at pH 1.2. The difference between solvents used was not detected. Thus, gamma irradiation may have no influence on the biological activities of the L. japonica extracts except for the tyrosinase inhibition effect when irradiated up to 30 kGy.  相似文献

The maturation level of two olive varieties (Olea europaea, cvs. Arbequina and Picual) was objectively evaluated using two non-destructive methods: checking the fruit firmness using a hand densimeter, and the skin colour with a portable colourimeter. These methods were compared with the Ripening Index (RI), habitually used by olive oil industry, and based on the subjective determination of skin and flesh colour. The values of skin colour [L*(b*–a*)/100] only monitor the olive maturation in both varieties, when the olive is losing its initial green colour, while fruit firmness is decreasing throughout the maturation process. Fruit firmness is directly related to RI and could be useful in objectively estimating the maturation level of the olives.  相似文献

Physical, functional and pasting properties of six maize (Zea mays) cultivars as modified by an increase in γ‐irradiation doses were investigated. From the L*, a* and b* measured, deltachroma, colour intensity and hue angle were calculated. Functional and physicochemical properties of maize flours were determined using standard methods and Rapid Visco Analyser, respectively. Often, the effect of γ‐irradiation on L*, a* and b* values within each cultivar was almost never significant but pronounced between the yellow and white cultivars. Generally, deltachroma, colour intensity and hue angle decreased with increased γ‐irradiation dose. Mean seed bulk density and 100 kernel weight varied from 0.73–0.77 g cm?3 and 23.13–35.42 g, respectively. Loose and packed bulk densities, and water (WAC) and oil absorption capacities of the maize flours were not significantly affected by γ‐irradiation. WAC of nonirradiated and γ‐irradiated maize flours ranged from 1.54–1.62 and 1.09–1.70 g g?1, respectively. Peak, trough, breakdown, final and setback viscosities decreased significantly (P < 0.05) with increased γ‐irradiation dose.  相似文献

Changes in microbiological, physicochemical and sensory properties of shrimp gamma irradiated with 60Co at doses of 0, 1, 3, 6, 9 kGy were investigated. Irradiation at 6 kGy eliminated most of the spoilage microorganisms and did not affect sensory quality. The L* value increased as irradiation dose increased, while a* value decreased as irradiation dose increased. Irradiation had no significant effect on the texture of shrimp samples; however, increasing the dose up to 9 kGy significantly increased the amount of volatile compounds, such as, alcohols, ketones, aldehydes, furans, and oxides. According to the total sensory points, the appearance and flavour of the shrimp product was considered as acceptable by sensory evaluation when irradiated at doses of 0–6 kGy. These results showed that gamma irradiation processing (<6 kGy) had the potential to extend the shelf life of fried shrimp.  相似文献

Eggs from laying hens were irradiated using radioactive Co-60 at a dose of 1 kGy, 2.5 kGy, and 5 kGy, with a dose input of 3.21 kGy h–1. Parameters describing the colour of egg yolk such as L*, a*, and b*, were determined spectrophotometrically using the CIELAB system with the help of the portable spectrophotometer Superchroma S-Spex without gloss. The levels of all three parameters dropped upon ionizing radiation. While at a dose of 1 kGy the difference in the parameters was not statistically conclusive, after irradiation using doses of 2.5 kGy and 5 kGy, the levels of the parameters L*, a*, and b* showed a statistically conclusive decrease which was also accompanied with changes in sensorial properties such as decolouration and decreased colour. The colour of the yolk was evaluated according to the Roche scale, showing that more significant changes occurred upon irradiation at doses of 2.5 and 5 kGy (the value decreased from 6 to 5). The number of acidity estimated in egg yolk (mg KOH/g of fat) increased with the increasing dose, being conclusively higher only for doses of 2.5 kGy and 5 kGy.  相似文献

The content and relative amounts of anthocyanins and hydroxycinnamic acids (HCA) were determined in local sweet cherries (cultivar Petrovka) at 7 stages of maturity, by means of high performance liquid chromatography (HPLC), and compared to instrumentally assessed skin colour of the same sweet cherries. Skin colour of harvested samples was measured using the CIE L*,a*,b* system. The contents of neochlorogenic and 3′-p-coumarylquinnic acids decreased with no significant change in ratio during ripening, except for the first 4 days of maturation, when the ratio changed due to increased content of neochlorogenic acid. The linear increase of total anthocyanins during maturation was observed without the trend of stabilization in the final stages of maturity. The colour change of Petrovka during maturation was influenced by the increase of total anthocyanins, consisting mostly of cyanidin-3-rutinoside and cyanidin-3-glucoside (97-98% of the total). The chroma and L* values appeared to be optimal indicators of anthocyanin accumulation during maturation, and better than the a* value and hue angle. The accumulation of anthocyanins from 507.1 to 1150.9 mg of cyanidin-3-rutinoside/kg of fresh weight (FW) during the second half of maturation caused the formation of a new colour cast of Petrovka, which influenced the decrease of redness and colour intensity, as recognized by CIE L*,a*,b* colour space.  相似文献

Irradiation can extend the shelf‐life of fish, but it may cause unacceptable change on quality. Since rose polyphenols have high antioxidant and antibacterial activities, this study evaluated the combined effect of polyphenol‐chitosan coatings and irradiation (3 kGy) on the microbial and sensory qualities of carp fillets during storage at 4 °C. A dose of 3 kGy irradiation reduced the initial total viable counts (TVC) and psychrophiles, and increased the initial b* and thiobarbituric acid reactive substance (TBARS) values. During storage, TBARS, TVC and psychrophiles of nonirradiated samples increased faster and were higher than those irradiated. Regardless of irradiation treatment, samples coated with chitosan containing rose polyphenols had lower TBARS, pH and bacteria than that in no coating or chitosan coating batches. Carp treated with combined treatment could preserve an acceptable sensory quality at the end of storage. The result indicated that polyphenol‐chitosan coating combined with irradiation can maintain fish quality by preventing bacterial growth, oxidation, and changes in color and sensory acceptability.  相似文献

The use of microalgal biomass, a natural ingredient, to colour oil-in-water pea protein stabilised emulsions was studied. Various levels of incorporation of Chlorella vulgaris green, Chlorella vulgaris orange (after carotenogenesis), and Haematococcus pluvialis (red, after carotenogenesis) were used, resulting in a wide range of appealing colours from green to orange and pink. The colour stability of the emulsions was evaluated, through the evolution of the L*a*b* parameters (CIELAB system) along 6 weeks. The primary and secondary oxidation products of the emulsions were also determined, and an enhanced resistance to oxidation was evidenced by emulsions containing microalgae. Therefore antioxidant functionality was another positive aspect of its use as an ingredient. Colour stability, a variety of attractive hues, and added resistance to oxidation ensure an adequate compromise of sensory and functional properties for these novel emulsions.  相似文献

BACKGROUND: Minolta and machine vision are two different instrumental techniques used for measuring the colour of muscle food products. Between these two techniques, machine vision has many advantages, such as its ability to determine L*, a*, b* values for each pixel of a sample's image and to analyse the entire surface of a food regardless of surface uniformity and colour variation. The objective of this study was to measure the colour of irradiated Atlantic salmon fillets using a hand‐held Minolta colorimeter and a machine vision system and to compare their performance. RESULTS: The L*, a*, b* values of Atlantic salmon fillets subjected to different electron beam doses (0, 1, 1.5, 2 and 3 kGy) were measured using a Minolta CR‐200 Chroma Meter and a machine vision system. For both Minolta and machine vision the L* value increased and the a* and b* values decreased with increasing irradiation dose. However, the machine vision system showed significantly higher readings for L*, a*, b* values than the Minolta colorimeter. Because of this difference, colours that were actually measured by the two instruments were illustrated for visual comparison. Minolta readings resulted in a purplish colour based on average L*, a*, b* values, while machine vision readings resulted in an orange colour, which was expected for Atlantic salmon fillets. CONCLUSION: The Minolta colorimeter and the machine vision system were very close in reading the standard red plate with known L*, a*, b* values. Hence some caution is recommended in reporting colour values measured by Minolta, even when the ‘reference’ tiles are measured correctly. BACKGROUND: The present study investigated the effect of irradiation, active and modified atmosphere packaging, and storage conditions on quality retention of raw, whole, unpeeled almonds. Almond kernels were packaged in barrier and high‐barrier pouches, under N2 or with an O2 absorber and stored either under fluorescent lighting or in the dark at 20 °C for 12 months. Quality parameters monitored were peroxide value, hexanal content, colour, fatty acid composition and volatile compounds. Of the sensory attributes colour, texture, odour and taste were evaluated. RESULTS: Peroxide value and hexanal increased with dose of irradiation and storage time. Irradiation resulted in a decrease of polyunsaturated and monounsaturated fatty acids during storage with a parallel increase of saturated fatty acids. Volatile compounds were not affected by irradiation but increased with storage time indicating enhanced lipid oxidation. Colour parameters of samples remained unaffected immediately after irradiation. For samples packaged under a N2, atmosphere L* and b* values decreased during storage with a parallel increase of value a* resulting to gradual product darkening especially in irradiated samples. CONCLUSION: Non‐irradiated almonds retained acceptable quality for ca. 12 months stored at 20 °C with the O2 absorber irrespective of lighting conditions and packaging material oxygen barrier. The respective shelf life for samples irradiated at 1.0 kGy was 12 months packaged in PET‐SiOx//LDPE irrespective of lighting conditions and 12 months for samples irradiated at 3 kGy packaged in PET‐SiOx//LDPE stored in the dark. Food-grade PVC film containing 28.3% dioctyladipate (DOA) plasticizer was used to wrap chicken meat samples, with and without skin, contained in a polystyrene tray. Samples were then irradiated with -radiation [60Co] at doses equal to 4 kGy and 9 kGy corresponding to cold pasteurization. Irradiation was carried out at 8–10 °C and samples were subsequently stored at 4–5 °C. Contaminated chicken meat samples were analysed for DOA at intervals between 7 h and 240 h of contact, using an indirect GC method. Identical non-irradiated (control) samples were also analysed for their DOA content. Results showed no statistically significant differences in migrated amounts of DOA between irradiated and non-irradiated samples. Neither were differences observed between samples irradiated at 4 kGy and 9 kGy. This was supported by identical IR spectra recorded for irradiated and non-irradiated samples and leads to the conclusion that, at such intermediate radiation doses (kGy), the migration characteristics of PVC film are not affected. DOA migration was found to be time dependent, approaching equilibrium after approximately 170 h for the chicken flesh plus skin samples and 120 h for the chicken flesh samples. The amount of DOA migrated into chicken flesh plus skin samples was significantly greater (3.2–22.3 mg/dm2) than that for chicken flesh samples (0.9–8.9 mg/dm2). After 240 h of sample/ film contact under refrigeration, loss of DOA was approximately 35.6% for chicken flesh plus skin samples and 14.3% for chicken flesh samples. Sample spoilage, as demonstrated by off-odour development, occurred after approximately 120 h of refrigerated storage. Diffusion coefficients for DOA were calculated and were found to be lower for chicken flesh (1×10–13) than for flesh plus skin (4.4×10–13) samples.  相似文献

Besides texture degradation and aroma loss colour fading and browning of processed fruits, in particular strawberries, displaying comparatively low amounts of non-acylated anthocyanins, still pose a serious problem. Therefore, in the present study the colour of texture-improved canned strawberries was stabilised using commercial concentrates from black carrots and elderberries as natural colourants. CIE L * a * b * values of the fruit surface and of the brine solutions were monitored over a period of 24 weeks under light exposure. Furthermore, the contents of individual anthocyanins were analysed by HPLC-DAD. The colour of the processed control fruits (without added colourant) was unacceptable even at the beginning of the storage. Their anthocyanin contents were reduced by more than 85% at the end of the storage period. In contrast, the colour of canned strawberries containing black carrot and elderberry anthocyanins was significantly improved. Colour difference values ΔE * of black carrot-coloured strawberries were found to be smaller than those of the samples containing elderberry concentrate as a colourant. This could be ascribed to the presence of acylated anthocyanins in the first exhibiting exceptional storage stability, while all non-acylated pigments were degraded. The chill brining process for fruit firming markedly affected pigment stability, which can be attributed to enzymes that are still active at cold storage conditions.  相似文献

Meat ‘reddening’ by bacteria was observed in chilled beef. To identify the reddening bacteria, isolates were inoculated onto beef and the changes in CIE L*a*b* values monitored. As a result, two Pseudomonas spp., including Pseudomonas fragi which is commonly observed in raw meat, were selected and identified as reddening bacteria. The reddening was coincidentally occurred with the appearance of slime, and the increase in thiobarbituric acid-reactive substances (TBARS) was simultaneously suppressed. In myoglobin-containing nutrient broth, it is shown spectroscopically that P. fragi converted metmyoglobin into deoxymyoglobin. It was concluded that the meat reddening was due to the formation of deoxymyoglobin, induced by the very-low-oxygen tension brought about by Pseudomonad’s oxygen consumption: This oxygen depletion simultaneously suppressed TBARS increase.  相似文献

The fish freshness was evaluated using machine vision technique through color changes of eyes and gills of farmed and wild gilthead sea bream (Sparus aurata), being employed lightness (L*), redness (a*), yellowness (b*), chroma (c*), and total color difference (ΔE) parameters during fish ice storage. A digital color imaging system, calibrated to provide accurate CIELAB color measurements, was employed to record the visual characteristics of eyes and gills. The region of interest was automatically selected using a computer program developed in MATLAB software. L*, b*, and ΔE of eyes increased with storage time, while c* decreased. The a* parameter of fish eyes did not show clear a trend with storage time. The L*, b*, and ΔE of fish gills increased with storage time, but a* and c* decreased. Regression analysis and artificial neural networks approaches were used to correlate the eyes and gills color parameters with the time of storage and a strong correlation was found between color parameters and storage day. Gills color changes were more precise than those found for eyes in order to evaluate the fish freshness. However, the gills cover should be removed for taking the images and thus, the method is destructive and time-consuming. Therefore, the color parameters of fish eyes can be used as a green, low cost and easy method for fast and on-line assessing of fish freshness in food industry.  相似文献

BACKGROUND: This experiment was designed to examine the effect of dietary humate supplementation primarily on pH and colour parameters of carcasses, breast fillets and drumsticks and, secondarily on performance and carcass characteristics in broilers. RESULTS: A total of 240 male broiler chicks (Ross‐308) were randomly allocated to four dietary treatments varying in supplemental humate level (0, 0.1, 0.2 and 0.3% for H0, H1, H2 and H3). Dietary humate supplementation did not affect performance traits and slaughter, hot carcass weights and yields. Carcass‐related variables (pH, L*, a*, b*, H* and C*) were responsive to the dietary treatments. The L*, a*, b*, and C* values for drumstick muscles were higher than those for breast muscles. Except for the L* value, meat colour parameters changed due to packaging. The a* value was higher and b* value was lower for vacuum packaged breast and drumsticks than for those aerobic packaged. Storage period affected colour parameters; while L*, b*, H* and C* values were higher for drumstick skin than for drumstick meat; the a* value was greater in drumstick meat than in skin. CONCLUSION: pH and colour parameters of carcasses, breast fillets and drumsticks of broilers were improved by dietary humate supplementation. White sesame seeds (Sesamum indicum L.) were studied with the purpose to evaluate γ-irradiation effect at 2.5, 5.0 and 10.0 kGy on lipid and fatty acid content, colour and protein allergenicity and to identify whether sesame oil was extracted from irradiated seeds by using High Resolution Nuclear Magnetic Resonance spectroscopy (HR-NMR). The fat decreased significantly, whereas triglyceride and phospholipid content was significantly decreased by the increase of irradiation dose. Monounsaturated and polyunsaturated fatty acids and unsaturated/saturated fatty acids ratio decreased. The presence of radiolytic decomposition products, shown by NMR, formed after a 2.5 kGy dose, confirmed that the lipid content decrease was a result of the irradiation process. The allergenicity of storage seed proteins was not significantly affected by irradiation up to 10.0 kGy. Colour parameter a* increased after 5.0 kGy, while L* values decreased significantly after 2.5 kGy. Conclusively, irradiation could be applied at doses <2.5 kGy while sustaining the sesame seed nutritional benefits.  相似文献

The pectoralis profundus muscles of 200 selected beef carcasses were measured to develop a standard colour scale for evaluating beef carcasses at the time of classification (approximately 60 min post mortem). Five lightness (L*) values were chosen ranging from 22 to 42 with intervals of five L* units. Corresponding a* and b* values were calculated. Based on regressions between the actual reflection spectra and the L*, a* and b* values, spectra of the five chosen colours for the colour scale were predicted. The L*, a* and b* values accurately predicted the reflection spectra. A paint company imitated the five reflection spectra. Spectra could not be matched exactly, without metamerism occuring. Therefore, the colour scale should be used with specific light sources. The scale is recommended in The Netherlands to classify the colour of beef, as a supplement of SEUROP‐system for conformation and fatness. © 1999 Society of Chemical Industry  相似文献
