Major antioxidants and antioxidant activity in eight varieties of tomatoes were determined. Hydrophilic and lipophilic antioxidant activity (HAA and LAA) was determined by the ABTS assay and ascorbic acid and carotenoid contents were determined by HPLC-DAD. The HAA has far more significant impact on total antioxidant activity (83%) as compared with LAA. HAA was increasing during all ripening stages and was strongly correlated with ascorbic acid content (r = 0.83). During the ripening the LAA was increasing till the III. stage of maturity and then decreased. The main carotenoids determined in the red-fruit tomatoes were lycopene, β-carotene and lutein. The content of lycopene has been increasing equally during the ripening. β-Carotene and lutein were intensively synthesized between the I. and II. stage of maturity. Among ascorbic acid, α-tocopherol, lycopene, β-carotene and lutein standards ascorbic acid was determined as the most efficient antioxidant followed by α-tocopherol and β-carotene. Antioxidant activity of ascorbic acid, α-tocopherol, β-carotene and lutein grew equally with increasing concentration, however lycopene was the most effective in its lowest concentration. The analysis of two-component mixtures showed significant synergism between lycopene-lutein, lycopene-β-carotene and α-tocopherol-β-carotene.  相似文献

BACKGROUND: The influence of farming systems on fruit quality remains controversial and the different aspects associated with each agricultural management system need to be studied separately to elucidate any specific effect on fruit quality. To this end, a greenhouse experiment was conducted to examine the effect of the usual fertilisation guidelines for pepper cultivation on the nutritional quality of fruits (sugars, vitamin C, total phenolic compounds, chlorophylls, total carotenoids and antioxidant activities in the hydrophilic (HAA) and lipophilic (LAA) fractions). Treatments included manure amendment combined with synthetic fertiliser applied at the rates recommended for organic (T1), low‐input (T2) and conventional (T3) practices. RESULTS: Pepper composition was not affected by increasing mineral fertilisation. In addition, treatment had no significant effect on HAA or LAA. The antioxidant activity of both the hydrophilic and lipophilic fractions increased from the green to the red stage of ripening. HAA contributed about 80% of the total antioxidant activity. CONCLUSION: Pepper response to mineral fertilisation seems to be less pronounced than that of other fruits, since antioxidant concentrations did not increase with increasing fertiliser application. Antioxidant activity in pepper was mainly linked to hydrophilic compounds (vitamin C and phenolic compounds). Ripening was the most important factor determining the fruit antioxidant composition. Processing and preparation methods are generally believed to result in a depletion of naturally occurring antioxidants in food. To evaluate the antioxidant properties of fresh sweet peppers (Capsicum annuum) and five different Italian recipes based on sweet peppers (pickled; “peperonata”; grilled; in sour–sweet condiment; salted), water- and lipid-soluble extracts from fresh and processed peppers were analysed using high-performance liquid chromatography coupled with an electrochemical detector. Total reducing capacity (TRC) and contributions of hydrophilic reducing capacity (HRC) and lipophilic reducing capacity (LRC) to the TRC were determined in all the samples. Three important antioxidant compounds were measured: ascorbic acid, β-carotene and lycopene. The contribution of these individual compounds to TRC was estimated.  相似文献

A study was conducted in order to assess the effect of different fertilisation levels of Ca2+, K+ and NO3? on the bioactive nutrient content in red pepper (Capsicum annuum L) fruits. The experiment was carried out in a greenhouse, under hydroponic culture. Lycopene, β‐carotene, vitamin C, total phenolic compound, sugar, nitrate and potassium contents and antioxidant activity were determined. Increasing Ca2+ and NO3? concentrations in the root medium increased the lycopene and β‐carotene contents in pepper. Antioxidant activity was determined in the hydrophilic (HAA) and lipophilic (LAA) fractions. HAA was increased by intermediate and high Ca2+ concentrations in the culture medium. However, LAA was raised only by NO3? treatments. Vitamin C, sugar and total phenolic acid contents were not affected by Ca2+ or NO3? treatments. K+ treatments had no effect on nutritional quality of pepper. An increased supply of Ca2+ and NO3? in the culture medium could constitute a useful practice for improving the nutritional attributes of pepper as well as its commercial quality. The aim of this study was to evaluate the potential of nanofiltration for the concentration of bioactive compounds of watermelon juice. Lipophilic and hydrophilic antioxidant activities were determined through two assays, ferric reducing antioxidant power and DPPH. The content of lycopene, flavonoids and total phenolic in the concentrate samples increased with the increase in the volume reduction factor. Volume reduction factor of three showed the best performance of concentration, generating the highest values for lycopene, flavonoid and total phenolic contents. Average permeation flux was 2.3 L h?1 m?2, with continuous extraction of the concentrate at a volumetric reduction ratio of three. Lycopene showed the highest rejection coefficient (0.99), followed by flavonoids (0.96) and total phenolic content (0.65). The hydrophilic antioxidant activity values in both assays were higher than the lipophilic antioxidant activity values. A highly significant correlation was noted between the contents of flavonoids, phenolic compounds, ascorbic acid, and lycopene and their antioxidant potential in both lipophilic and hydrophilic fractions.  相似文献

Thirty-eight types of fruits commonly consumed in Singapore were systematically analysed for their hydrophilic oxygen radical absorbance capacity (H-ORAC), total phenolic content (TPC), ascorbic acid (AA) and various lipophilic antioxidants. Antioxidant composition and concentration varied widely across different fruits. Many of the tropical fruits tested were high in antioxidants. Amongst all fruits tested, sapodilla (Manilkara zapota) had the highest H-ORAC and TPC whilst guava had the highest AA per gram fresh weight. Papaya, red watermelon and cantaloupe had the highest β-cryptoxanthin, lycopene and β-carotene per gram fresh weight, respectively. On the other hand, durian and mangosteen were high in tocopherols and tocotrienols, respectively. Based on consumption data, Chinese Singaporeans appear to have a higher intake of carotenoids and tocopherols rich fruits compared to the US population. As fruits are a rich source of diverse antioxidants, efforts to promote consumption of a variety of fruits should be continued for public health benefits.  相似文献

Changes in total phenolics, antioxidant activity (AOX), carotenoids, capsaicin and ascorbic acid were monitored during three maturity stages in 10 genotypes of sweet pepper. In an attempt to explain the variations during maturity stages (green, intermediate and red/yellow), the data was expressed both on fresh and dry weight basis. All the antioxidant constituents (phenolics, ascorbic acid and carotenoids) and AOX, when expressed on fresh weight basis in general, showed an overall increasing trend during maturity in all the genotypes studied. On dry weight basis, phenolic content declined in majority of the genotypes during maturity to red stage. This decline was significant (P<0.05) in Parker, Torkel, HA-1038 and Flamingo. Genotype Flamingo and Golden Summer had the highest phenolic content of 852.0 mg 100 g−1 and 720.5 mg 100 g−1, at their final red and yellow maturity stages, respectively. With maturation, most of the cultivars showed a declining trend with regard to capsaicin content while total carotenoids and β-carotene content increased significantly. Anupam was a promising genotype in terms of both total carotenoids and β-carotene content. Ascorbic acid content declined progressively with advancing maturity. Genotype HA-1038 had the maximum content (3030 mg 100 g−1 dwb) at the green stage. AOX in general, increased with maturity and registered a 1.30-1.95fold increase from green to red stage.The study proposes the nutritional significance of consuming sweet peppers at the red maturity stage because of enhanced functional properties. Overall genotype Flamingo and Anupam represent superior genotypes for both nutrition and germplasm improvement.  相似文献

During the past decade, it has been reported that the consumption of certain foods and spices such as pepper may have a positive effect on health. The present study evaluates the influence of fruit ripening on total phenols, flavonoids, carotenoids and capsaicinoids content and antioxidant, hypoglycaemic and anticholinesterase activities of Capsicum chinense Jacq. cv Habanero. The chemical investigation showed a different composition between the two stages of ripening (immature and mature). Generally, the concentration of carotenoids and capsaicinoids increased as the peppers reached maturity, whereas the concentration of phenols declined. The immature fruits showed the highest radical scavenging activity (IC50 of 97.14 μg/ml). On the contrary, the antioxidant activity evaluated by the β-carotene bleaching test showed a significant activity for mature peppers (IC50 value of 4.57 μg/ml after 30 min of incubation). Mature peppers inhibited α-amylase with an IC50 of 130.67 μg/ml. The lipophilic fractions of both mature and immature peppers exhibited an interesting and selective inhibitory activity against α-amylase with IC50 values of 29.58 and 9.88 μg/ml, respectively. Both total extracts of mature and immature peppers inhibited butyrylcholinesterase selectively. The obtained results underline the potential health benefits as a result of consuming C. chinense Habanero and suggest that it could be used as new valuable flavour with functional properties for food or nutriceutical products on the basis of the high content of phytochemicals and found biological properties.  相似文献

BACKGROUND: The aim of this work was to study the effects of organic (O), low‐input (LI) and soilless (SL) cultivation on pepper nutritional quality and antioxidant activity. For that, 24 commercial greenhouses were selected following strict criteria in order to reduce the influence of environmental conditions and realistically reflect commercial production systems. Fruits were harvested at two maturity stages (green and red) and three harvesting times during two consecutive years. RESULTS: Pepper antioxidant activity mainly stemmed from water‐soluble compounds, including organic acids and phenolic compounds. Only some differences in sugars and malic and citric acid concentrations were detected between the O and LI systems. Sugars, phenolic compounds, ascorbic acid and hydrophilic antioxidant activity were higher in the SL system. In spite of these differences, overall differences between harvesting times or between years were far greater than those due to the cropping system. CONCLUSION: The main differences in the nutritional quality of pepper fruits were observed between the soil (O and LI) and SL (the most favourable) systems. The results highlight the importance of comparing different harvesting times and years in order to study the effect of cropping system on a specific crop. Four selected fresh consumption tomato varieties, harvested at different ripening stages (green, breaker, pink, red) and five industrial processing tomato varieties, harvested at red ripe stage, were analysed for lycopene and its isomers, β-carotene, total and individual phenolics, vitamin C and hydrophilic antioxidant activity. Tomato variety and ripening stage significantly affected carotenoids, total phenolic compounds and hydrophilic antioxidant activity when fresh consumption tomatoes were compared. The average of total lycopene content at the different ripening stages was 0.63, 12.20, 26.76 and 116.66 mg/kg of fresh weight (FW). Vitamin C ranged from 2.79 (breaker Cherry Pera) to 297.62 (red Cherry Pera) mg/kg FW. In green and breaker tomatoes, a positive correlation of hydrophilic antioxidant activity with vitamin C and chlorogenic acid was observed. However, in industrial tomato varieties (red ripe stage) and fresh consumption varieties harvested at pink and red stages, hydrophilic antioxidant activity was correlated with total phenolics and rutin. Tomato varieties for industrial processing did not show significant differences in total phenolic compounds and lycopene content. Lycopene ranged from 83.17 to 97.60 mg/kg FW, while total phenolic compounds varied between 257.91 and 284.13 mg/kg FW. Chlorogenic acid and rutin were the most abundant individual phenolics found in all the samples studied. Moreover, the content of total phenolics was always significantly correlated with the content of rutin. The amounts of all individual phenolics were affected by variety, with the exception of ferulic acid. Generally, these individual phenolics were more abundant in green and intermediate ripening stages, decreasing in full red tomatoes.  相似文献

The aim of the present work was to evaluate the chemical composition and the radical-scavenging and antioxidant activities of hot pepper fruits (Capsicum annuum L. var. acuminatum) at three maturity stages (small green, green and red). GC–MS analysis of n-hexane and chloroform fractions showed a different composition between the three stages of ripening. The first stage of maturation (small green) showed the highest radical-scavenging activity (IC50 of 129 μg/ml). Using the bovine brain peroxidation assay, the methanolic extract of green pepper showed significant antioxidant activity (IC50 of 522 μg/ml). Addition of methanolic extract of red and green pepper inhibited oxidation of linoleic acid. Methanolic extract of red pepper showed greater antioxidative potency than the others (IC50 of 3 μg/ml). The different composition of lipophilic compounds and the various amount of phenolics, showed in the three stage of ripening of C. annuum var. acuminatum fruits, modifies the antioxidant activity.  相似文献

The antioxidant properties of methanol extracts from daylily flowers during maturation were determined with antioxidant assays, including antioxidant activity, DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging, superoxide anion radical scavenging and reducing power. Antioxidant compounds, such as phenolic compounds, ascorbic acid and β-carotene were also analysed. Significant variation in antioxidant properties and involved compounds was observed between different maturity stages of daylily flowers. The highest antioxidant activity was observed at stage III (flower opening) accompanying the highest content of ascorbic acid and phenolic compounds, while no significant difference of β-carotene contents was observed among the four maturity stages. Four individual phenolics, such as (+)-catechin, chlorogenic acid, rutin and quercetin were identified and quantified by HPLC. (+)-Catechin was the main phenolic compound identified in daylily flowers, accounting for about 74.11% of total phenolics. Overall, daylily flowers at opening stage possess the highest functional benefit and thus would be the appropriate harvesting stage in view of the nutritional consideration.  相似文献

BACKGROUND: There is a need to encourage more sustainable agricultural practices, reducing inputs of water and fertilisers while minimising any negative impact on fruit quality. The effect of irrigation frequency, salinity and potassium and calcium fertilisation on the content of bioactive compounds and quality attributes of green and red peppers grown with and without substrate was evaluated. RESULTS: Low irrigation frequency and salinity improved the quality attributes (dry matter, soluble solids content and titratable acidity) of pepper. Low irrigation frequency increased vitamin C content by 23% in green peppers, while in red fruits it was not affected. In contrast, total carotenoids and provitamin A only increased in red fruits by 30% and 15%, respectively, as a consequence of low irrigation frequency. When the effect of potassium and calcium doses was investigated, it was shown that a high proportion of potassium increased the vitamin C, provitamin A and total phenolic content of red and green peppers, whereas pepper grown at low calcium doses, presented the highest content in carotenoids and provitamin A. CONCLUSION: Low irrigation frequency and fertilisation with high potassium and low calcium doses improved pepper quality increasing the content of bioactive compounds. The antioxidant activity of Portuguese honeys was evaluated considering the different contribution of entire samples and phenolic extracts. Several chemical and biochemical assays were used to screen the antioxidant properties of entire honeys with different colour intensity and phenolic extracts: reducing power, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical-scavenging capacity, and inhibition of lipid peroxidation using the β-carotene linoleate model system and the thiobarbituric acid reactive substances (TBARS) assay. The amounts of phenols, flavonoids, ascorbic acid, β-carotene, lycopene and sugars present in the samples were also determined. The highest antioxidant contents and the lowest EC50 values for antioxidant activity were obtained in the dark honey. An analysis of variance was carried out to evaluate the influence of the colour intensity and extraction method in the antioxidant properties and phenolic contents. A discriminant analysis was also performed, giving satisfactory results once the six samples were clustered in six individual groups obtained through the definition of two discriminant analysis dimensions.  相似文献

Consumption of fruits and vegetables has been associated with a healthy state which has been attributed, in part, to their antioxidant capacity. Characterization of the bioactive compounds with antioxidant activity found in fruits cultivated in the tropic is limited. Thus, the objective of the present work was the characterization of phytochemicals and antioxidants of the fruit of black sapote (Diospyros digyna Jacq.). HPLC-DAD-Mass Spectrometry (HPLC-MS) analyses were used to identify and quantify phenolics, carotenoids and tocopherols. Total soluble phenolic content was 247.8 mg GAE/100 g fw (fresh weight). Important phenolics identified were sinapic acid, myricetin, ferulic acid, and catechin. Total carotenoid content was 399.4 ??g of ??-carotene/100 g fw, and ??-carotene and lutein were the main carotenoids identified. ??-Tocopherol concentration was 672.0 ??g/100 g dry weight. Antioxidant capacity as measured by the DPPH and FRAP assays was higher in the hydrophilic than in the lipophilic extract, and it is thought to be due mainly to the phenolic content of this fruit. Results suggest that the fruit of black sapote has an antioxidant capacity comparable to other important fruits, and its inclusion in the diet is therefore recommended.  相似文献

In this study, influence of 3 types of photo‐selective nets (pearl, red and yellow) and a standard black net on marketable yield, fruit quality and bioactive compounds after postharvest storage was investigated. Percentage marketable fruits were higher in green sweet peppers produced under the pearl nets. Fruits produced under the pearl nets showed higher fruit mass, firmness, chlorophyll content, ascorbic acid content, antioxidant scavenging activity after postharvest storage. Red/far red photon ratio under the pearl net could have improved the ascorbic acid content and the antioxidant scavenging activity in green peppers. Green sweet peppers grown under the pearl nets had higher hue values and maintained green color longer. Our results showed the impact of modified light quality on the bioactive compounds of green sweet pepper during postharvest storage.  相似文献

A mix of nitrophenolates was applied to pepper plants in the irrigation system along the growth cycle. Fruits were labelled at fruit set to study the evolution of fruit growth and ripening based on fruit size and colour. In addition, at 3-day intervals, samples were taken in which the evolution of fruit weight, colour, nutritive (sugars and organic acids) and bioactive compounds (total phenolics, carotenoids, and ascorbic acid) was evaluated. Pepper fruit growth followed a simple sigmoid curve reaching its maximum size at 49 days after fruit set, although nitrophenolate treatments led to significant increases in fruit weight due to higher length, diameter, and pericarp thickness, without affecting the normal ripening process, since colour and carotenoid evolution was similar for both control and treated fruits. Glucose, fructose, ascorbic acid, citric acid, total antioxidant activity (TAA) and total phenolics increased during pepper development, and their levels were significantly enhanced by nitrophenolate applications. Thus, this treatment induced beneficial effects in terms of the improvement of fruit quality, and especially its nutritive and antioxidant constituents. Finally, it is advisable to consume peppers at the full red stage in order to achieve the maximum health-beneficial effects by consumers.  相似文献

Several exotic fruits are used in folk medicine as potential sources of healthy compounds. Rosa canina L. (dog rose) fruits and other parts used to be widely consumed in rural areas from Portugal. The present work intends to highlight the presence of bioactive compounds in those different parts, in order to improve their use based on scientific studies. The antioxidant activity was screened through: radical scavenging effects, reducing power, and inhibition of lipid peroxidation in brain homogenates. Phytochemical characterization included determination of sugars by HPLC-RI, fatty acids by GC-FID, tocopherols by HPLC-fluorescence, phenolics, flavonoids, carotenoids, chlorophylls and ascorbic acid, by spectrophotometric techniques. Galls revealed the highest antioxidant potential, ripen hips showed the highest tocopherols and ??-carotene contents, as also the most adequate n-6/n-3 fatty acids ratios. Unripe hips gave the highest levels of ascorbic acid and petals revealed the highest concentration of sugars. Ethnobotanical studies conducted have mentioned different use-reports for seeds, petals, flowers and galls, as well as for fruits in different stages of maturity and, therefore, the comparison between chemical compounds and antioxidant properties of those different parts is a key-point of the present study. Furthermore, the levels of antioxidants found would make them suitable sources of compounds to be used commercially to retard rancidity in fatty materials in food manufacturing, to reduce the effects of ageing and to help to prevent oxidative-stress related diseases such as cancer and heart disease.  相似文献
