先由食用葵花籽油和甲醇在碱性催化剂条件下酯交换反应制得脂肪酸甲酯,然后脂肪酸甲酯与蔗糖通过水溶剂法,以逆相转移催化剂DMAP催化制备蔗糖脂肪酸酯.通过对酯糖摩尔比、催化剂用量、反应温度、反应时间进行考察,确定最佳合成条件为:酯糖摩尔比2.5∶1,催化剂用量4%,反应温度 85℃,反应时间7h.在最佳合成条件下,葵花籽油脂肪酸甲酯的转化率高达65.32%,所得产品具有良好的表面活性,其临界胶束质量浓度(CMC)为6.5 g/L,表面张力为27.41 mN/m,乳化力为79 s,浊点指数为7.2 mL,HLB值为10.1,碘值(Ⅰ)为126.9 g/100 g. 相似文献

The main objective of this work is to present new experimental information concerning the effect of relevant process parameters related to the production of diglycerides by enzymatic glycerolysis of fish oil. Reaction products can be applied as ingredients in food industry, joining the emulsifying properties of partial glycerides along with the nutritional benefits attributed to the omega-3 fatty acids. From preliminary reactions, conversion was higher for a solvent- and surfactant-free system but the long time to reach appreciable amounts of diglycerides may be a drawback for practical purposes. To overcome this problem, the addition of tert-butanol revealed to be relevant, leading to high diglycerides contents in short times. The system containing Tween 65 led to the highest amount of diglycerides. This study described the feasibility of enzymatic synthesis of diglycerides rich in EPA and DHA in short reaction times as well by using a more environmentally friendly process. 相似文献

The polymorphism of 1,3-dipalmitin, 1,2-dipalmitoyl-sn-glycerol, 1.2-dipalmitoyl-rac-glycerol has been examined by X-ray diffraction, IR spectroscopy and Raman spectroscopy and differential scanning calorimetry. The respective spectra and thermographs are presented for these polymorphs. Optically active 1,2-diglycerides exhibit very different thermal behaviour from the optically inactive 1,2-diglycerides. 研究多不饱和脂肪酸(PUFAs)对发育期大鼠大脑细胞膜脂肪酸类别与含量的变化。将56只初断乳雄性SD大鼠随机分为阴性组、必需脂肪酸(EFA)缺乏组、鱼油组[300mg/(kg·d)]、紫苏组[2.45mL/(kg·d)]、α-亚油酸组[1.32g/(kg·d)]、核桃组[2.45mL/(kg·d)]与红花组[1.65g/(kg·d)]。连续饲养8周,提取大脑组织总细胞膜,并使用气相色谱-质谱联用技术检测其脂肪酸的种类与含量。结果表明,各组大鼠脂肪酸组成无差别;与阴性组比较,各组均能显著提高n-3PUFAs的含量;紫苏组、核桃组和红花组能显著降低n-6PUFAs的含量,增加饱和脂肪酸的含量;紫苏组、核桃组、红花组和鱼油组能显著降低单不饱和脂肪酸的含量。说明PUFAs能改变大鼠大脑细胞膜的含量,但对其类别影响不大;短期缺乏EFA对细胞膜脂肪酸的类别与含量无影响。 相似文献

The mechanism of the biogenesis and the influencing factors are not definitely clarified. A side pathway of the biogenesis of the saturated fatty acids is supposed. 采用气相色谱法测定火麻油中总脂肪酸和sn-2位脂肪酸的组成和含量,并与其他9种常见植物油进行对比,旨在为火麻油的营养价值研究提供基础数据。结果表明,3种不同品牌火麻油主要由软脂酸(C16∶ 0)、硬脂酸(C18∶ 0)、油酸(C18∶ 1n9c)、亚油酸(C18∶ 2n6c)、α-亚麻酸(C18∶ 3n3)组成,其中多不饱和脂肪酸含量为70.57%~78.73%,sn-2位多不饱和脂肪酸含量为77.61%~83.74%,说明以亚油酸和α-亚麻酸为主的多不饱和脂肪酸更易连接在甘三酯结构的sn-2位上。另外,对比其他9种常见植物油,火麻油总脂肪酸和sn-2位脂肪酸中油酸含量均最低,亚油酸和亚麻酸含量较高;多不饱和脂肪酸含量均最高,分别为77.90%和83.74%;n-6系脂肪酸与n-3系脂肪酸比例分别为3.7∶ 1和4.2∶ 1。研究结果表明,火麻油是一种不饱和脂肪酸含量较高且易于被人体吸收代谢的植物油。 相似文献

The kinetics of the oxidation of mixtures of methyl linoleate-linoleic acid and of mixtures of pelargonic acid-linoleic acid have been studied at 30°C by the oxygen absorption method. During the oxidation of methyl linoleate-linoleic acid mixtures, a linear relationship was found between the overall monomolecular rate constant, Km, and the composition of the sample. When the reaction entered the bimolecular period, a strong prooxidant effect was found when the molar fraction of methyl linoleate was above 0.50. With mixtures of pelargonic acid-linoleic acid, it was found that the saturated fatty acid behaved as an inert diluent throughout all the levels of oxidation studied and for all the range of molar fractions. 相似文献
