Mathematical modeling of wood drying is a powerful tool to better understand and quantify the effects of wood properties as well as the effects of drying and post-drying treatment conditions on drying and thus the wood drying models can be used to improve drying quality. The models that have been developed can be divided into three categories: models for drying a single board, models for drying a kiln-wide stack, and models for drying stress and deformation. The single-board drying model employs comprehensive heat and moisture mass transfer equations and can be used to investigate the influence of wood variability. The kiln-wide drying model, which is based on the transfer processes between wood and the drying medium, is able to examine the influence of drying schedules and wood properties. The stress model can predict stress development in drying and stress relief in final steam conditioning and post-kiln treatment. An integrated model can be used to optimize drying schedules and develop strategies for high-quality dried timber. 相似文献

Fresh or dried ginger is a common traditional Chinese medicine as well as an important spice in China. The volatile components of ginger play important roles in its flavor and bioactivities. In this work, headspace solid-phase microextraction followed by gas chromatography–mass spectrometry (GC-MS) was used to study the effects of oven drying, microwave drying, and silica gel drying methods on the degree of dehydration and volatile components of ginger. Sixty compounds were identified by GC-MS. The major volatile compounds were zingiberene (26.4–37.1%), β-phellandrene (7.4–12.9%), β-sesquiphellandrene (10.2–12.8%), and geranial (6.6–8.1%). The volatiles of silica gel–dried ginger were similar to those of fresh ginger. Microwave-dried ginger had a higher content of zingiberene and satisfactory dehydration efficiency. The result showed that microwave and silica gel can be used in drying of ginger to maintain the taste and appearance of fresh ginger. 相似文献

Abstract One of the main problems in drying of meat products is the surface hardening or crusting. The crusted surface layer is harder and less permeable than the inner part of the product. A dramatic increase of hardness during drying in dry-cured meat products has been found when the water content reaches a critical value. The water content can be related with the water activity by sorption isotherms. Therefore, an on-line measurement of the water activity at the surface (aws) could be used by the control system in order to avoid the crusting problem. The aim of this study was to evaluate a methodology for the on-line water activity determination at the lean surface of raw or salted meat during drying and relate this determination with the crusting development. Water activity at the surface was estimated from the heat balance (aws h) in salted meat slices and in unsalted and in salted loin samples. The proposed methodology was able to monitor the aws in both products. The estimated aws h was related with the crusting development in loin samples, showing its potential application in control systems for avoiding the crusting development during the drying of meat products. 相似文献
