Stem and pomace of a white grape (Vitis vinifera) variety, Prensal Blanc, were studied for the first time: general composition and dietary fibre components together with the total soluble polyphenol content and antioxidant activity. Both by‐products present high contents of total dietary fibre (TDF), 790 g kg?1 d.m. (stem) and 716 g kg?1 d.m. (pomace). Values of the soluble dietary fibres in relation to TDF differed: 5% (stem) and 14.4% (pomace). Similar values of Klason lignin were found: 229 g kg?1 (stem) and 278 g kg?1 (pomace), however, the pomace exhibited more than twice the content of the condensed tannins (168 g kg?1) with regard to the stem (79 g kg?1). Notable were the high resistant protein contents of both by‐products. Stem and pomace showed appreciable amounts of total soluble polyphenols (87 g kg?1 against 35 g kg?1 respectively). The free radical scavenging capacity of the former by‐products was determined using the 2,2‐diphenyl‐1‐picrylhydrazyl radical (DPPH) method, obtaining EC50 values of 0.79 g d.m. g?1 DPPH (stem) and 1.32 g d.m. g?1 DPPH (pomace). These data shows that both vinification by‐products from the Prensal Blanc variety are a good source of dietary fibre and have antioxidant properties.  相似文献

The following error sources in the present dietary fibre (DF) analytical methods were investigated: (1) the omission of the protease treatment of samples may modify the results by increasing the Klason lignin fraction and altering the content and/or distribution of polysaccharides; (2) some soluble dietary fibre (SDF) constituents can be retained in the insoluble dietary fibre (IDF) matrix affecting the insoluble and soluble fraction distribution; (3) protein, ash and blank corrections in gravimetric analysis involve a lack of precision, over- or undervaluing the actual DF contents; (4) the Klason lignin fractions obtained by acid hydrolysis of DF residues are made up of different components and artifacts besides lignin.

These studies included both new observations and additional quantitative evidence on error sources previously mentioned in the literature. In some cases the published methods were modified to emphasize the methodological errors.  相似文献

Until recently, dietary fibre and its components were regarded as balast substances from vegetal food. These days, they are given increasing attention because of the beneficial physiological effects they may exert on human and animal organisms. Dietary fibre includes a number of components, and each of them displays specific properties. The components of major importance are cellulose, hemicellulose, lignin and pectins. The objective of this study was to determine the amounts of particular dietary fibre fractions in samples containing apple, black currant, chokeberry, pear, cherry and carrot pomace. The results revealed the following pattern: in each pomace sample, pectins occurred in the smallest amounts, and the content of lignin was very high (black currant and cherry pomace) or comparatively high (pear, chokeberry, apple and carrot pomace). The other dietary fibre components were difficult to form into clearly defined groups. Their proportions varied from one pomace type to another.  相似文献

A procedure for the analysis of total dietary fibre (including non-starchy polysaccharides and Klason lignin) is described. The method consists of extraction of homogenised and/or milled foodstuffs with 80% ethanol and chloroform, and analysis of acidic and neutral polysaccharide constituents, starch and Klason lignin in the residue. Uronic acid constituents were determined by a decarboxylation method, neutral sugar constituents as alditol acetates by a gas-liquid chromatographic method, starch by an enzymic method, and Klason lignin gravimetrically. The sum of anhydrosugars, anhydrouronic acids and Klason lignin from which the starch content is subtracted provides a measure of the total dietary fibre. The method described is reproducible, fairly rapid and gives informative quantitative characterisation of the fibre constituents.  相似文献

 This paper describes the total non-starch polysaccharide (NSP), soluble and insoluble dietary fibre (SDF and IDF) content of processed cocoa husk (cocoa butter <3 g/100 g) determined according to Englyst's enzymatic-chemical procedure. In addition, fibre values were determined by measuring the levels of the composite sugars by spectrophotometry and gas chromatography methods, and the fractions acid-detergent fibre, neutral-detergent fibre, crude fibre, Klason lignin, starch, crude protein, ash, fat, water content, and water-holding capacity (WHC). The NSP content was 43.8±2.32 g/100 g (28.34 g/100 g IDF plus 15.60 g/100 g SDF), the mean soluble fibre concentration was 35.5% of total fibre. Klason lignin content, estimated gravimetrically, was 13.7±1.8 g/100 g. Cellulose (19.7±1.48 g/100 g) and uronic acids (12.4±1.35 g/100 g) were the main type of IDF and SDF substances, respectively. The analysis of neutral sugar constituents showed the presence of glucose, the predominant sugar, followed by arabinose, galactose and xylose. The WHC was 3.62±0.47 g water/g cocoa husk. Two methods—Klason lignin (KL) and acid detergent lignin (ADL)— for determining lignin concentration in plants were compared using stem material from lucerne (Medicago sativa L), cocksfoot (Dactylis glomerata L) and switchgrass (Panicum virgatum L), at three stages of maturity, and leaf samples from lucerne and cocksfoot. For all forages, KL values were higher than ADL values. Lucerne samples, which had crude protein levels twice that of the grass species, had KL values that were only 30–40% higher than ADL values; in grasses, KL values were 200–300% greater than ADL values. The addition of nitrogenous materials (bovine serum albumin, lysine, and ammonium sulfate) to commercial xylan and cellulose did not result in additional KL residue. Pyrolysis-GC-MS revealed that both residues appeared to be similar to the orginal plant lignin and did not appear to be contaminated with carbohydrate or protein. The higher values for grass KL residues were not due to protein con- tamination or incomplete hydrolysis of carbohydrates, but were more likely due to the solubilization of lignin components by the ADL treatment. KL values may give a more accurate quantification of the total lignin within forage plants.  相似文献

The physicochemical properties of brewer’s spent grain (BSG) and apple pomace (AP), and their effect on dough rheological properties were investigated. BSG had high protein content and both by-products were found to be high in dietary fibre. The rheological and the pasting properties of dough were significantly altered by the addition of by-products, with the main effects being due to the presence of dietary fibre. The biaxial extensional viscosity was significantly higher for the supplemented doughs; the strain hardening index decreased with increasing the levels of flour substitution. The replacement of wheat flour with the by-products significantly reduced the uniaxial extensibility, while the storage modulus, G″, was found to increase, indicating changes in the structural properties of dough. These changes were reflected in the ability of dough to rise during proofing.  相似文献

White grape antioxidant dietary fibre (WGDF) was obtained from white grape (Vitis vinifera, var. Airén) pomace from wine production. The antioxidant capacity of WGDF was determined in minced fish muscle (MFM) during frozen storage. Concentrations of 0, 2, and 4% WGDF ((0-WGDF), (2-WGDF), and (4-WGDF) respectively) were added to MFM samples. Analyses were carried out immediately after preparation of samples and over 6 months of storage at −20 °C. WGDF was characterized in terms of dietary fibre (DF) (insoluble and soluble), total polyphenols and antioxidant capacity, and multifunctional antioxidant assays were done on all the MFM samples. The addition of white grape DF considerably delayed lipid oxidation in minced horse mackerel muscle during the frozen storage. Vacuum-packing the sample with 2% WGDF significantly enhanced the antioxidant properties of WGDF.  相似文献

Grape pomace, and insoluble and soluble dietary fiber (DF) fractions, obtained by enzymatic-gravimetric methods, were analyzed for neutral sugars, uranic acids, Klason lignin and amino acids. DF constituted 80% of dry matter, IDF was the major fraction. The main neutral sugar constituent of IDF was glucose. The major part was cellulose and the remainder, along with xylose, was a xyloglucan, which also contained fucose. Uranic acids accounted for 64% of SDF and a high amount of arabinose, galactose and mannose were also included in that fraction. Proteins were not well solubilized by the assay enzymes. During the isolation of DF fractions a considerable solubilization of polyphenols was observed. These compounds were associated with Klason lignin in the starting material. Composition of DF fractions enables grape pomace to be considered a useful fiber-rich food ingredient.  相似文献

The use of carambola pomace as a raw material for the production of a high dietary fibre powder (HDFP) was investigated. A face‐centred design was used to study the effects of extraction conditions, namely water‐to‐pomace ratio, time and temperature, on both reducing sugars (RS) and total extractable polyphenols (EPP) contents of fibre concentrate. RS content decreased by increasing extraction times and water‐to‐pomace ratios, while EPP tend to diminish by increasing temperature and contact time (< 0.01). Selected HDFPs showed an EPP content in the range of 5.0–6.1 g GAE 100 g?1 dry basis (db), with antioxidant activities between 386.2–443.9 and 204.7–228.6 μmol Trolox equivalents g?1 db according to FRAP and ABTS assays, respectively. HDFP obtained at 55 °C, 5 min and 2:1 water‐to‐pomace ratio exhibited the highest EPP content, total dietary fibre (84.0% db) and dietary indigestible fraction (61.3% db). This product can be considered as a potential valuable food ingredient considering their oil retention and swelling capacities.  相似文献

The skins of two white wine grape pomace (WWGP) and three red wine grape pomace (RWGP) from US Pacific Northwest were analyzed for their dietary fiber (DF) and phenolic composition. DF was measured by gravimetric–enzymatic method with sugar profiling by HPLC–ELSD. Insoluble DF composed of Klason lignin (7.9–36.1% DM), neutral sugars (4.9–14.6% DM), and uronic acid (3.6–8.5% DM) weighed more than 95.5% of total DF in all five WGP varieties. WWGP was significantly lower in DF (17.3–28.0% DM) than those of RWGP (51.1–56.3%), but extremely higher in soluble sugar (55.8–77.5% DM vs. 1.3–1.7% DM) (p < 0.05). Soluble polyphenols were extracted by acidified 70% acetone and measured spectrophotometrically. Compared with WWGP, RWGP had higher values in total phenolic content (21.4–26.7 mg GAE/g DM vs. 11.6–15.8 mg GAE/g DM) and DPPH radical scavenging activity (32.2–40.2 mg AAE/g DM vs. 20.5–25.6 mg AAE/g DM) (p < 0.05). The total flavanol and proanthocyanidin contents were ranged from 31.0 to 61.2 mg CE/g DM and 8.0 to 24.1 mg/g DM, respectively for the five WGP varieties. This study demonstrated that the skins of WGP can be ideal sources of DF rich in bioactive compounds.  相似文献

Insoluble and soluble dietary fibre (DF) fractions of peach DF concentrate, obtained by an enzymatic-chemical method, were analysed for neutral sugars, uronic acids and Klason lignin. Proximate composition, energy value, colour and water- and oil-holding capacities were also determined. Total DF constituted 31–36% dry matter (DM) of the concentrate and insoluble DF was its major fraction (20–24% DM). The high proportion of soluble fraction (11–12% DM) in the peach DF concentrate, in comparison with cereal brans, was noticeable. Insoluble and total dietary fibre contents significantly decreased throughout the harvest time of the original fresh fruit. Results suggested that peach DF concentrate may be not only an excellent DF source but an ingredient in the food industry because it showed a high affinity for water (9.12–12.09 g water/g fibre) and low energy (3.723–3.494 kcal/g). However, the use of this material could affect the colour and pH of the final product.  相似文献

Influence of light exposure during germination on structural and soluble carbohydrates including total dietary fibre (TDF), insoluble dietary fibre (IDF) and soluble (SDF) dietary fibre fractions and also raffinose family oligosaccharides (RFOs) was studied in non-conventional legumes Vigna unguiculata (cowpea), Canavalia ensiformis (jack bean), Stizolobium niveum (mucuna), and Lablab purpureus (dolichos), and compared to a well known and used Glycine max (soybean). Non-conventional legumes were rich in DF, mainly IDF, which represented 93–97% of TDF. It was relevant the proportion of protein that remained associated to the insoluble DF matrix. Non-conventional legumes exhibited important levels of RFOs but their profile was different depending on the tropical seed. The germination of seeds produced changes in the carbohydrate fraction, mainly an increase of TDF in most instances, except for soybean, and a drastic reduction of RFOs, from 98% to 63%, with the corresponding increase in the amounts of total soluble sugars.  相似文献

The effect of blanching and treatment with white vinegar containing acetic acid on dietary fibre, low-molecular-weight carbohydrates and glucosinolates was studied in two cultivars of white cabbage (Heckla and Predikant). The total content of dietary fibre and low-molecular-weight carbohydrates was similar in both cultivars (24 and 60 g/100 g DM, respectively), while the distribution between soluble and insoluble fibre differed (19% was soluble in Heckla versus 26% in Predikant, P < 0.01). Further, Heckla contained higher amounts of glucose and sucrose, while the content of fructose and total glucosinolates was lower than in Predikant. The content of individual glucosinolates differed between the two cultivars. During blanching there was a loss of dry substance (30–34 g/100 g DM), where low-molecular-weight carbohydrates primarily explained the loss (82–90%), but some of the loss was also dietary fibre (about 8%), both soluble fibre containing uronic acids (mainly Predikant) and insoluble ones containing glucose (mainly Heckla). The glucosinolate levels decreased substantially in both cultivars, although the total loss was higher in Predikant (74%) than in Heckla (50%). The individual glucosinolates were affected to different degrees (15–91%). During souring with acetic acid, the content of dietary fibre (primarily insoluble ones) decreased further, while the content of low-molecular-weight carbohydrates was less affected. The total content of glucosinolates was not affected in Heckla but was further reduced in Predikant. There was, however, a substantial increase in 4-methoxyglucobrassicin in both cultivars. It is concluded that blanching and souring decrease the content of carbohydrates and glucosinolates to a great extent and both cultivars behaved similarly. However, individual components were affected differently in the two cultivars.  相似文献

The availability and the potential of wine by-products, grape pomaces and stems, obtained from ten different grape (Vitis vinifera L.) varieties (six red and four white) as raw materials for the production of dietary fibre (DF) concentrates were evaluated. The overall chemical composition, carbohydrate analysis and functional properties of DF from fresh grapes, grape pomaces and stems from those grape varieties were analysed. Both winemaking by-products presented considerable quantities of DF, ranging from 60% to 90% of total dry matter. The cell wall polysaccharides (CWP) composition of grape pomaces and fresh grapes was rather similar, pectic substances being the main component of the cell walls (40–54% total CWP). In contrast, cellulose was the predominant cell wall polymer for the stems (40–49% total CWP). In addition, the pectin content of grape pomaces exhibited significant differences between red and white grape varieties. The degree of methyl-esterification of uronic acids from wine by-products ranged from 21 to 39%; thus, pectic polysaccharides from the different samples could be classified as low methyl-esterified pectins. Klason lignin accounted for around 20–25% of DF in both grape pomaces and stems. With regard to the potential incorporation of DF concentrates into the food chain, functional properties were also determined. Swelling, water and fat retention capacity results showed great variability depending on the grape variety analysed.  相似文献

The combined effect of high hydrostatic pressure (HHP) and controlled temperature on total (TDF), soluble dietary fibre (SDF) content, and its associated hydration properties were assayed in okara, a rich-in-insoluble dietary fibre residue from the soydrink- and tofu-making process of soybean. TDF in starting unprocessed okara was 45.7% and its SDF to TDF ratio was 4.6. When dry, hydrated and autoclaved okara samples, were subjected to HHP-treatment (200 and 400 MPa) at 30 and 60 °C, the amount of SDF went up by more than 8-fold. At 200 MPa, TDF was not significantly different from control, but at 400 MPa values varied from 38.1 to 64.8%. In vitro physicochemical properties of okara were also modified by HHP-treatment. Therefore, the effect of a combined treatment with hydration, temperature and HHP-technology on the improvement of the soluble fibre fraction (%) and functionality of certain vegetable by-products from the food industry could be very useful for the elaboration of food ingredients with potential health-promoting effects.Industrial relevanceThis article deals with the effect of HHP-treatment on dietary fibre fractions and associated physicochemical properties in okara by-product from soybean. Results suggested that the higher the hydrostatic pressure and temperature applied, the higher the ratio of soluble to total dietary fibre in okara. Likewise, the effect of combined hydration, mild temperature, and HHP-treatment could increase the soluble fraction (%) of other rich-in-insoluble dietary fibre vegetable by-products, which could potentially be used as valuable ingredients of new functional foods.  相似文献

Asparagus (Asparagus officinalis L.) by-products, which represent around 50% of the processed vegetable, are a potential source of dietary fibre. The way that these by-products are treated affects the composition and functional properties of fibre-rich powders. Factors such as treatment intensity, solvent, and drying system were studied. Only the more soluble components (soluble sugars, uronic acids and proteins) showed significant differences. All the fibre-rich powders had high concentrations of TDF (62–77%). The IF/SF proportion decreased with the severity of treatment, in this way increasing the physiological quality of the fibre. Functional properties, namely water-holding capacity (WHC), oil-holding capacity (OHC), solubility (SOL), and glucose dialysis retardation index (GDRI), varied according to the preparation procedure. WHC and GDRI were higher in intensely extracted fibres; due to the effect of thermal processing. WHC showed values (11–20 ml water/g powder) similar to those described for other agricultural by-products, but OHC and GDRI were much higher (5–8 ml oil/g powder and 25–45%, respectively). These properties make fibre-rich powders from asparagus by-products a valuable source of dietary fibre to be included in the formulation of fibre-enriched foods.  相似文献

Antioxidant activity and dietary fibre in durum wheat bran by-products   总被引:5,自引:0,他引:5  
Milling of wheat generates by-products, which can be used to improve the technological performance and/or to integrate foods with healthy compounds. The aim of this paper was to select fractions of durum wheat bran having different functional and nutritional characteristics. Wheat bran by-products were obtained by an industrial milling process. Beside the single fractions, two commercial products Bran & Brain 50 and 70, obtained by blending some of the durum wheat fractions were also studied. All samples were investigated for water holding capacity, soluble and insoluble dietary fibre content and for their antioxidant activity. The soluble fibre content of the durum wheat by-product ranged between 0.9% and 4.1%; while that of insoluble fibre between 21% and 64%. B&B 70 has a TDF content of 61%, while B&B 50 has 42%. The water holding capacity of each fraction is strictly related to the amount of insoluble fibre and to the granulometry of the by-products. Cooking-extrusion process does not affect the amount of soluble fibre; by contrast, a significant increase of the insoluble fibre was detected. The antioxidant activity is higher for the internal bran fraction and it increases in fractions having reduced granulometry. The antioxidant activity of some durum wheat by-product fractions is comparable to that of widespread fruits and fresh vegetables, likely due to the presence of fibre-bound phenol compounds. The high fibre content and antioxidant activity of durum wheat bran by-products can be of particular interest for their use in cereal-based products.  相似文献

The chemical composition and some functional properties of the dried “Ulva lactuca” algae, collected from the littoral between the Taboulba and Sayada area, were determined. The dried “U. lactuca” algae were investigated for their soluble, insoluble and total dietary fibre content, mineral amount, amino acid and fatty acid profiles, swelling capacity (SWC), water holding capacity (WHC) and oil holding capacity (OHC). Results showed that “U. lactuca” alga powder was characterised by a high content of fibres (54.0%), minerals (19.6%), proteins (8.5%) and lipids (7.9%). The neutral fibres contain hemicellulose (20.6%), cellulose (9.0%) and lignin (1.7%). The proteinic fraction analysis indicated the presence of essential amino acids, which represent 42.0% of the total amino acids. The fatty acids profile was dominated by the palmitic acid, which represents about 60.0% of the total fatty acids, followed by oleic acid (16.0%). The study of the functional properties proved that SWC, WHC and OHC of this alga varied with temperatures and that were comparable to those of some commercial fibre rich products.  相似文献
