The presence of (E)‐5‐methylhept‐2‐en‐4‐one (filbertone) in a hazelnut oil, deodorised in a laboratory system using nitrogen as stripping gas, is studied regarding its usefulness as a chiral marker for detecting adulterations of olive oil. The analytical method involves the use of both simultaneous distillation–solvent extraction as a sample concentration step and a chiral stationary phase in the subsequent gas chromatographic analysis. The procedure is simple, rapid, effective for detecting adulterations of olive oil with hazelnut oil and can reduce falsely negative results obtained if conventional parameters included in current regulations are exclusively considered when establishing purity in olive oils. © 2000 Society of Chemical Industry  相似文献

The objective of this study was to determine the long-term effect on milk conjugated linoleic acid (cis-9, trans-11 CLA) of adding fish oil (FO) and sunflower oil (SFO) to the diets of partially grazing dairy cows. Fourteen Holstein cows were divided into 2 groups (7 cows/treatment) and fed either a control or oil-supplemented diet for 8 wk while partially grazing pasture. Cows in group 1 were fed a grain mix diet (8.0 kg/d, DM basis) containing 400 g of saturated animal fat (control). Cows in the second group were fed the same grain mix diet except the saturated animal fat was replaced with 100 g of FO and 300 g of SFO. Cows were milked twice a day and milk samples were collected weekly throughout the trial. Both groups grazed together on alfalfa-based pasture ad libitum and were fed their treatment diets after the morning and afternoon milking. Milk production (30.0 and 31.2 kg/d), milk fat percentages (3.64 and 3.50), milk fat yield (1.08 and 1.09 kg/d), milk protein percentages (2.97 and 2.88), and milk protein yield (0.99 and 0.91 kg/d) for diets 1 and 2, respectively, were not affected by the treatment diets. The concentrations of cis-9, trans-11 CLA (1.64 vs. 0.84 g/100 g of fatty acids) and vaccenic acid (5.11 vs. 2.20 g/100 g of fatty acids) in milk fat were higher for cows fed the oil-supplemented diet over the 8 wk of oil supplementation. The concentration of cis-9, trans-11 CLA in milk fat reached a maximum (1.0 and 1.64 g/100 g of fatty acids for diets 1 and 2, respectively) in wk 1 for both diets and remained relatively constant thereafter. The concentration of vaccenic acid in milk fat followed the same temporal pattern as cis-9, trans-11 CLA. In conclusion, supplementing the diet of partially grazing cows with FO and SFO increased the milk cis-9, trans-11 CLA content, and that increase remained relatively constant after 1 wk of oil supplementation.  相似文献

Medium‐ and long‐chain triacylglycerols (MLCTs)–enriched structured lipid (SL) was synthesised through enzymatic interesterification from Cinnamomum camphora seed oil (CCSO) and camellia oil (CO) using Lipozyme RM IM from Rhizomucor miehei as a biocatalyst. Effects of different reaction conditions including substrate molar ratio, reaction time and reaction temperature were investigated. Results showed that 55.81% of total MLCT species (CCO/LaCL, LaCO/LCL, COO/OCO and LaOO/OLaO) was obtained in the interesterified product under the optimal conditions of substrate molar ratio of 1:1.5 (CCSO/CO) at 60 °C for 3 h. Thereafter, fatty acid profiles, tocopherol contents and physiochemical characteristics of the interesterified product and physical blend were comparatively investigated. The fatty acid composition of the interesterified product consisted of capric acid (26.33%), lauric acid (21.29%) and oleic acid (42.33%). It should be mentioned that the interesterified product contained predominantly oleic acid (88.69%) at Sn‐2 position, while MCFAs (68.05%) at Sn‐1,3 positions. Compared with physical blend, the reduction in tocopherol contents and changes of physiochemical characteristics occurred in SL. The smoke point of the interesterified product was much higher than that of the physical blend, which meant that such MLCTs‐enriched SL could be better for cooking purpose.  相似文献

Earlier research showed that conjugated linoleic acid (CLA) content in milk fat is highest when cows’ diets are supplemented with a blend of fish oil (FO) and linoleic acid-rich oils. The objective of this study was to compare the effect of FO and sunflower oil (SFO) supplementation on milk cis-9, trans-11 CLA when dairy cows managed on pasture or in confinement. Fourteen Holstein cows were assigned into 2 treatment groups: cows grazed on alfalfa-grass pasture (PAS) or were fed corn silage-alfalfa hay mix ad libitum (LOT). Both groups were supplemented with a 8.2 kg/d grain supplement containing 640 g of FO and SFO (1:3 wt/wt). Grain supplement was fed in 2 equal portions after each milking, for a period of 3 wk. Milk samples were collected during the last 3 d of the experimental period. Milk yield was greater with the LOT diet (23.1 kg/d) compared with the PAS diet (19.4 kg/d). Milk fat percentages (2.51 and 2.95 for the LOT and PAS, respectively) and yields (0.57 and 0.51 kg/d) were similar for the 2 diets. Milk protein percentages were not affected by diets (3.34 and 3.35 for the LOT and PAS diets, respectively), but protein yields were lower for the PAS diet (0.61 kg/d) compared with the LOT diet (0.75 kg/d). Treatment diets had no effect on milk trans C18:1 concentrations [10.64 and 9.82 g/100 g of total fatty acids (FA) for the LOT and PAS, respectively] or yields (60.65 and 64.01 g/d), but did affect isomers distributions. Concentration (g/100 g of total FA) of vaccenic acid was lower with the LOT diet (2.15) compared with the PAS diet (4.52), whereas concentration of trans-10 C18:1 was greater with the LOT diet (4.99) compared with the PAS diet (1.69). Milk cis-9, trans-11 CLA concentration was greater with the PAS diet (1.52) compared with the LOT diet (0.84). In conclusion, the increase in milk cis-9, trans-11 CLA content was greater when pasture-based diets were supplemented with FO and SFO. The lower cis-9, trans-11 CLA concentration in milk from the confinement-fed cows resulted from trans-10 C18:1 replacing vaccenic acid as the predominant trans C18:1 isomer.  相似文献

Supplemental n-3 fatty acids (FA) may support better immune responses than n-6 and n-9 FA in dairy calves. The objective was to evaluate the effect of n-3 FA, supplemented as a fish oil product (FO) in the milk replacer (MR), in comparison to n-6 and n-9 FA, supplemented as canola oil (CO), on body weight (BW), daily gain, and immunological parameters of preweaning Holstein calves. The study was conducted from September to December 2019. Calves were randomly allocated to a control group (n = 15; BW = 36.2 ± 1.5 kg; mean ± SEM) supplemented daily with 30 mL of CO and to an experimental group (n = 15; BW = 36.3 ± 1.5 kg) supplemented with 60 g of a product containing 30 g of FO. Both treatments were added to the MR during the morning feeding. All calves were fed 4 L of MR at 12.5% solids at 0700 and 1600 h for wk 1, 6 L from wk 2 to 7, and 3 L once daily (0700 h) during wk 8 until weaning (56 d). Blood samples were collected at 7, 14, 21, 28, 35, 42, 49, and 56 d of age for serum haptoglobin, TNF-α, IL-1β, and protectin. Dry matter intake was recorded in all experimental calves daily. Seroneutralization titers to vaccination against viral diseases (infectious bovine rhinotracheitis, parainfluenza 3, bovine viral diarrhea, and bovine respiratory syncytial virus) were determined. Mixed models for repeated measures were developed to analyze variables over time. Seroneutralization titers were analyzed by the Kruskal-Wallis test. The other variables were compared by a generalized linear model. Serum FA profile at 35 d of age showed that FO supported higher concentrations of n-3 FA than CO. Final BW [65.2 vs. 62.0 kg, standard error of the mean (SEM) = 2.1 kg] and average daily gain (0.52 vs. 0.46 kg/d, SEM = 0.1 kg/d) tended to be higher for the FO than the CO group. An interaction of treatment × day for dry matter intake was observed, especially during weaning (2.17 kg vs. 1.94 kg, SEM = 0.158 kg, for FO and CO group, respectively). Blood lactate (mmol/L) was higher in the CO than in the FO group at d 7. Haptoglobin and IL-1β were higher for the CO group on d 14 than the FO group. The TNF- α concentrations for the FO group were reduced over time, whereas the concentrations in the CO group remained constant. Protectin was higher in the FO group on d 14, but was lower on d 28, 35, and 49. Seroneutralization antibody titers postvaccination for the PI3 virus were higher for the FO than the CO group. In conclusion, calves supplemented with FO had lower concentrations of blood lactate, haptoglobin, IL-1β and TNF-α than calves supplemented with CO during the study period. The FO supplementation had a higher DMI than CO supplementation. Results of this trial should be interpreted with caution due to the lack of a negative control group as well as the lower birth weight and growth rate observed under heat stress conditions.  相似文献

Traditional processing technologies for fish by‐products containing significant amounts of oils usually either give high amounts of oil or maximised solubilisation of proteins. Due to lower yields and insufficient quality, the proteins or the oil is considered as secondary products. The proposed concept combines a gentle thermal separation of oil followed by enzymatic hydrolysis of the remaining protein‐rich fraction. The first stage, thermal treatment (40 °C) of fresh salmon backbones, separated up to 85% of the oil from the raw material and gave high‐quality oil (PV = 0.2 ± 0.0 meq kg?1, 0.16 ± 0.05% free fatty acids). Separation of a significant part of the oil gave reduced mass flow into the enzymatic stage, which then requires less enzymes and reduced energy consumption. Among the tested enzymes: Trypsin, Corolase PP and Mixture of Papain and Bromelain gave the highest yield of fish protein hydrolysates (FPH), while use of Protamex and Corolase PP resulted in FPH with the best sensory properties leading to the lowest bitterness.  相似文献

An investigation was carried out to evaluate the oxidative and hydrolytic degradation of 37 olive‐pomace oils marketed in southern Italy and to compare the results with those obtained from 10 deodorised olive‐pomace oils representative of large stocks of oil obtained after the final step of refining. One aim of the research was to ascertain the quality characteristics of commercial olive‐pomace oils; another was to verify whether the legally prescribed addition of virgin olive oil to refined pomace oil, so that the final product may be classified commercially as olive‐pomace oil, was actually sufficient to justify upgrading. The analytical methods used were silica gel column chromatography and high‐performance size exclusion chromatography. The data obtained showed that the final retail olive‐pomace oils had a lower degree of oxidative degradation than the refined oils, as indicated by the lower values obtained when summing the proportions of triglyceride oligopolymers and oxidised triglycerides. Conversely, hydrolytic degradation, which was evaluated by determining diglycerides, proved to be the same in the two categories of oil. The proportions of virgin olive oil added are small, as indicated by the statistically indistinguishable values of triglyceride oligopolymers and free fatty acids obtained. The possibility of setting a limit to the amount of triglyceride oligopolymers present in the commercial category of olive‐pomace oil has been considered. This limit would ensure standardisation of the level of oxidation and, consequently, of the quality of marketed oils and would enhance differentiation between olive‐pomace oil and refined olive‐pomace oil. © 2000 Society of Chemical Industry  相似文献

The oil content of 64 samples of groundnut kernels, representing 47 genotypes, was determined by the conventional Soxhlet extraction procedure (OilSOX). The values of OilSOX ranged from 403 to 536 g kg−1. The optical densities (ODs) of these samples were determined at 12 wavelengths (918, 928, 940, 950, 968, 975, 985, 998, 1010, 1023, 1037 and 1045 nm) in the near‐infrared (NIR) region using a food composition analyser (essentially a filter‐based NIR spectrophotometer). The instrument also recorded the temperatures of the sample (TempS) and the air (TempA) surrounding it. A sample holder (75 mm × 150 mm; optical path length 25 mm) was used for optical density measurement. The data obtained were subjected to multiple linear regression analysis using the ODs at 12 wavelengths, TempS and TempA as the independent (predictor) variables, and OilSOX as the dependent variable. The multiple linear regression equation comprising 14 predictors showed a significant relationship between predicted values of oil content (OilNIR) and OilSOX. The standard error of calibration and the coefficient of determination for calibration (R) were 3.54 and 0.821 respectively, while the standard error of prediction and the coefficient of determination for prediction were 5.82 and 0.865 respectively. The ratio of standard error of calibration and standard error of prediction was 0.608. The differences between OilSOX and OilNIR were less than ± 20 g kg−1 for samples having oil contents in the range from 480 to 510 g kg−1. However, for samples having OilSOX lower than 480 g kg−1 or higher than 510 g kg−1, differences greater than ± 20 g kg−1 were observed. There exists scope for further refining the regression equation by using a larger number of samples for generating optical data. The results demonstrated the potential of NIR transmittance spectroscopy for determining the oil content of groundnuts in a non‐destructive manner. © 2000 Society of Chemical Industry  相似文献

Surimi franks were fortified with flaxseed or salmon oil at 2 g/100 g sample, franks without added oil served as a control. Thiobarbituric acid reactive substances values were highest (< 0.001) in salmon oil franks; however, these values did not change over the 21‐day storage period regardless of frank type (> 0.05). Frank pH decreased over time (= 0.011) for all frank types. There were differences in textural properties between frank types (< 0.05), with the flaxseed franks being softer and less gummy, cohesive and chewy than the control franks. Participants (= 79; age 18–35) evaluated visual appeal, colour, aroma, texture, flavour and acceptability on a hedonic scale; there were no differences (> 0.05) between franks. Fifty‐four panellists reported consuming sausage on a weekly to monthly basis, and most (50/79) indicated interest in purchasing this type product. The surimi franks were accepted by young adult consumers, which may indicate market potential of these types of products.  相似文献

The effects of feeding rumen-inert fat sources on production responses of lactating dairy cows have been well reported but less thoroughly described in lactating dairy buffalo. The objective of this study was to investigate the effect of oil and 2 different rumen-inert fat sources on dry matter intake, milk yield, milk composition, and milk fatty acid (FA) profile in Nili Ravi buffalo. Twelve multiparous mid-lactating Nili Ravi buffaloes received 4 treatments in a 4 × 4 Latin square design with a period length of 21 d. The treatments were (1) the basal diet without supplementation of oil or fats (CTRL), (2) the basal diet supplemented with canola oil (CO), (3) the basal diet supplemented with calcium salts of palm FA (Ca-FA), and (4) the basal diet supplemented with high palmitic acid (PA). Dry matter intake was decreased by 4.4% in the CO compared with Ca-FA and PA. Milk yield and milk fat yield were increased by 7.8 and 14.3%, respectively, in CO, Ca-FA, and PA compared with the CTRL. Milk fat content increased by 7.5%, whereas milk fat yield tended to increase with the supplementation of Ca-FA and PA compared with CO. No effect on milk yield and milk composition was observed in Ca-FA versus PA treatments. The yield of medium-chain FA was increased by Ca-FA and PA versus CO. The CO treatment increased the yield of long-chain FA compared with Ca-FA and PA treatments. Plasma glucose level was higher in CO, Ca-FA, and PA compared with the CTRL. In conclusion, feeding rumen-inert fats in the lactating buffalo diet proved to be a useful strategy to increase the 3.5% fat-corrected milk yield due to the higher milk fat content in this study.  相似文献

The aim of this study was to test the in vivo digestibility of a highly polymerized sunflower oil. The true digestibility of both the unheated oil and of an oil heated at frying temperature (180 °C) for 50 h in the presence of air was determined by using a 4 h in vivo test after applying the oil by an oesophageal probe to Wistar rats followed by high‐performance exclusion chromatography analysis of the luminal remaining fat. The true digestibility coefficient of the heated oil did not change significantly with respect to the unheated oil, although it tended to decrease (p < 0.1; 38%). The true digestibility of polymers, dimers, and total oligomers was 30%, 59%, and 38% respectively, whereas those of the unheated oil was much higher (95%, 90%, and 91% respectively). True digestibility did not change for the triacylglycerol monomers. The plasma concentration of triacylglycerol tended to decrease (9.7%; p > 0.05) in the rats receiving the heated oil, suggesting some delay in the absorption mechanism. Data show that thermoxidized compounds from abused oil are poorly but actively hydrolysed and absorbed in vivo. Copyright © 2003 Society of Chemical Industry  相似文献
