将小麦淀粉分别与黄原胶和瓜尔豆胶以一定的比例复配,利用析水率实验、DSC方法和SEM微观结构观察等方法,研究亲水胶体黄原胶和瓜尔豆胶在5次冻融循环过程中对小麦淀粉稳定性的影响。研究结果表明:小麦淀粉的析水率随着循环次数的增加而增加,黄原胶和瓜尔豆胶能够明显降低冻融过程中小麦淀粉的析水率,从而抑制小麦淀粉冻融过程中的老化,且随着亲水胶体浓度的增加,对冻融稳定性的改善作用越强;小麦淀粉经过5次冻融循环后,淀粉胶基形成了大量的孔洞,并产生不连续丝状的,类似纤维的结构,且基质较薄,添加亲水胶体后显著改变了小麦淀粉的表观形态,孔洞明显减少,且淀粉基质增厚,形成了类似片状的网络结构。因此,黄原胶和瓜尔豆胶均能在一定程度上改善小麦淀粉的冻融稳定性,且与添加浓度有关。  相似文献

The viscoelastic and textural properties of freshly prepared and freeze-thawed sago starch–sugar gels were studied in comparison with other native starches from corn, wheat, tapioca, and potato. The gelatinisation and retrogradation properties of starches were studied using a DSC while the pasting properties of starch–sugar mixtures during the cooking period were studied using a starch pasting cell. The freeze-thaw stability of gels was evaluated by gravimetric measurements of the water of syneresis. The different starches gave properties which varied following to their botanical sources. High-amylose cereal starches (wheat and corn) produced harder gels, while low-amylose root starch (tapioca) produced softer gels. Sago and potato gels showed close similarities in their viscoelastic and textural characteristics. Although the freeze-thaw cycle greatly increased the viscoelasticity and hardness of these two gels, reheating at high temperature significantly reduced these negative effects and resulted in partial recovery of the gel structures. Sago starch produced gels with very low syneresis and high cohesiveness, implying its potential use as a gelling agent in the frozen food industries.  相似文献

研究燕麦粉和女贞叶中热稳定冰结构蛋白(TSISP)对淀粉凝胶冻融稳定性的影响。应用差示扫描量热仪(DSC)、扫描电子显微镜(SEM)和质构仪分别研究燕麦粉、女贞叶TSISP对淀粉凝胶冻融后析水率、可冻结水含量、超微结构、硬度及弹性的影响。结果表明:冻融过程显著地增加淀粉凝胶析水率、可冻结水含量,严重地破坏淀粉凝胶超微结构、增加孔洞尺寸、减小孔洞均匀性,最后导致淀粉凝胶硬度明显增大,弹性明显减小;而燕麦粉和女贞叶中TSISP的添加显著地减小淀粉凝胶冻融后析水率和可冻结水含量,同时显著地改善淀粉凝胶超微结构,使得淀粉凝胶孔洞增大幅度明显得到抑制,孔洞均匀性更好,结果也对淀粉凝胶质构产生明显的改善效果,延缓硬度的增加和弹性的减小,使得冻融后淀粉凝胶的总体品质得以提高。  相似文献

通过对10种植物淀粉糊透明度、凝沉性、冻融性、流变性的理化特性研究,结果表明:薯类淀粉相对于其他类的淀粉糊具有更高的透明性、较低的凝沉比和黏度。加糖加盐对不同淀粉糊有不同的凝沉作用。相对于其他淀粉,玉米、糯米、高粱和小麦淀粉的析水率较低,有较好的冻融性。高粱淀粉、绿豆淀粉,马铃薯淀粉、藕粉淀粉、木薯淀粉黏度均随着剪切速率的增加而明显剪切稀化,呈典型的假塑性流体特性和具有触变性。高粱淀粉、绿豆淀粉有较高的黏性。高粱、小麦、糯米淀粉糊不耐酸性,而红薯、马铃薯、绿豆、藕粉、木薯淀粉糊相对来说比较耐酸性。所有类型的淀粉糊随着pH增加黏度有渐增趋势。  相似文献

A fundamental rheological method was used to study the freeze-thaw stability of hydroxypropyl potato starch pastes. The effect of the number of freeze-thaw cycles on the changes in complex modulus (G*) and phase angle (δ) during heating of the thawed starch pastes was evaluated by comparing the rheological measurements with the measurements of syneresis at different centrifugal forces. The centrifugal forces influenced the detection of the first syneresis as well as the extent of syneresis, with regard to the number of freeze-thaw cycles. When starch pastes exhibited syneresis, the G* formed a distinctive peak during heating at 52.5–53.8C. The magnitude of the peak became bigger with number of freeze-thaw cycles. Furthermore, the results of this rheological method give information on the destabilization process and provide a simple method for detection and prediction of the extent of freeze-thaw stability of starch paste. With this method, the effect of the storage period at –20C, and the freezing rate, on the extent of freeze-damage of starch pastes could be investigated successfully.  相似文献

A method for the evaluation of freeze-thaw stability of starch gels is described and compared with refrigerated-storage retrogradation. Differential scanning calorimetry (DSC) is used to estimate the energy required to break down recrystallized starch molecules after 10 cycles of freezing-thawing or after storage at 4°C for 1 week. Different DSC properties were observed for different starches. Chemical modification decreased all DSC values for gelatinization except the gelatinization range of all modified starches examined. Rice and wheat starches displayed the lowest energies of gelatinization compared with other native starches studied. Most chemical modifications completely inhibited the recrystallization of starches during storage at 4°C or after 10 cycles of freeze-thaw. Mira-Cleer 340® (modified regular maize starch; hydroxypropyl distarch phosphate) had a slight recrystallization value. DSC endotherms for both recrystallization studies occured at considerably lower temperatures than those of the original gelatinization.  相似文献

Morphological, thermal and rheological properties of starches separated from five rice cultivars (PR-106, PR-114, IR-8, PR-103 and PR-113), varying in amylose content, were studied. Amylose contents of starches separated from PR-103, IR-8, PR-106, PR-114 and PR-113 were 7.83, 15.62, 16.05, 16.13 and 18.86%, respectively. The granular size, measured using a Scanning Electron Microscope, varied from 2.4 to 5.4 μm in all rice starches. PR-103 starch, with lowest average granular size, amylose content and solubility, had the highest swelling power, while PR-113 starch, with the highest average granular size and amylose content had the lowest swelling power. PR-103 starch showed highest transition temperatures, enthalpies of gelatinization, peak height index, range and enthalpies of retrogradation. The retrogradation (%) was observed to be highest in PR-113 starch and lowest in PR-103 starch. The changes in rheological parameters of rice starches during heating were measured using a Dynamic rheometer. PR-113 rice starch showed the highest G′, G″ and breakdown in G′ values, whereas PR-103 starch showed the lowest values for these parameters. Turbidity value of gelatinized pastes from all rice starches progressively increased up to the 3rd day during refrigerated storage, PR-103 starch paste showed the lowest turbidity value and PR-113 starch showed the highest value. The syneresis (%) of starch pastes, from different rice cultivars during storage at 4 °C, was also measured. The syneresis of starch pastes from all rice cultivars, except PR-103, increased with storage. PR-103 starch paste showed negligible syneresis during storage.  相似文献

通过与玉米淀粉比较,乙酰化香蕉淀粉的灰分、蛋白质、脂肪含量均比乙酰化玉米淀粉高.乙酰化香蕉淀粉糊的透明率在低温下出现较小的退化趋势,但常温下淀粉糊的透明率较高且有较好的稳定性.在较高温度下,乙酰化香蕉淀粉的持水能力比原淀粉高.乙酰化作用增加淀粉的溶解度和膨胀率.乙酰化作用也增加了香蕉淀粉糊的粘度值.  相似文献

A new starch was isolated from fruits of two acorn species, Quercus rotundifolia and Quercus suber by alkaline (A3S) and enzymatic (ENZ) methods and physical and functional properties were studied. The isolation method induced changes in most of those properties in the isolated starches, mainly in resistant starch content, syneresis, pasting, thermal and rheological properties. Isolated acorn starches presented high amylose content (53–59%) and resistant starch content (30.8–41.4%). Acorn starches showed limited and similar solubility values and swelling power values, showing a gradual increase from 60 °C to 90 °C. The pasting temperatures ranged from 67.5 to 72.0 °C and pastes did not present breakdown, which is suggestive of a high paste stability of acorn starches during heating. At ambient temperature the turbidity and syneresis values were low, but when held at freezing temperatures the syneresis significantly increased. Thermal analysis revealed that the acorn starches easily undergo transition phenomena as shown by the low To and enthalpy values (4.1–4.3 J/g), these effects were more evident in starches isolated by ENZ method. Pastes are more elastic than viscous and form strong gels after cooling. Q. suber starch was shown to be more sensitive to the effect of isolation method. Generally, starch isolated by enzymatic method presented less interesting functional properties, since this isolation procedure greater affected the raw structure of starches.  相似文献

Physicochemical properties of pinhão (seeds of Paraná pine) starch phosphates were evaluated and compared to corn starch phosphates. The phosphorylation process used yielded starch phosphates with three different degrees of substitution (DS): low (0.015), medium (0.07) and high (?0.12). Medium and high DS starch phosphates had higher cold water binding capacity, swelling power, and paste clarity, but lower paste syneresis (at 5 °C and after freeze-thaw cycles) than native starches (P<0.05). Low, medium, and high DS corn starches had higher solubility than native starches (3.8-, 8-, and 6-fold higher; P<0.05), but the solubility of pinhão starch increased only in medium DS starch phosphates (3-fold higher; P<0.05). Low DS starch phosphates had viscosity curves similar to native starches. In contrast, medium and high DS starch pastes had peak viscosity at room temperature, reached the minimum viscosity when heated to 95 °C, and had low setback.  相似文献

为提高糯米淀粉凝胶冻融稳定性,研究了蔗糖和海藻糖对淀粉凝胶析水率、质构特性、热特性及微观结构的影响。结果表明,经过5次冻融处理,蔗糖和海藻糖均能显著降低淀粉凝胶析水率,且添加6%蔗糖与添加4%海藻糖对凝胶析水率的影响相同。添加2种糖后,凝胶弹性增加,硬度先增大后减小。差示扫描量热仪测定显示添加2种糖的淀粉凝胶熔融焓/糊化焓均显著降低,表明淀粉老化受抑制,且抑制能力为海藻糖大于蔗糖。利用扫描电镜观察凝胶微观结构发现,添加海藻糖的淀粉凝胶表面光滑平整,凹洞较小,基质较紧密。与蔗糖相比,海藻糖更能提高糯米淀粉凝胶冻融稳定性。  相似文献

以9个品种绿豆淀粉为研究对象,研究了绿豆淀粉的化学组成及糊化特性、溶解度、膨胀度和冻融稳定性等功能特性,并分析了直链淀粉含量与功能特性的相关性。结果表明,不同品种绿豆淀粉直链淀粉含量不同,其分布范围为33.10%~44.08%;不同品种淀粉糊化特性参数间有明显差异;潍绿4号和中绿1号绿豆淀粉峰值粘度显著高于其他品种(p0.05),安绿8号具有最低破损值(p0.05),毛绿豆和安绿092具有较低的回生值。绿豆淀粉的溶解度和膨胀度与温度有关,均随温度的增加而增大。不同品种绿豆淀粉糊经一次冻融后析水率均较高,随冻融循环次数的增加,析水率均逐渐增大。相关性分析表明,直链淀粉含量与淀粉糊的最终粘度和回生值之间存在显著正相关(r=0.674,r=0.725;p0.05),与膨胀度之间具有极显著负相关关系(r=-0.805,p0.01)。  相似文献

The effects of different cooking conditions and concentrations on the freeze-thaw stability of hydroxypropyl potato starch (molar substitution 0·125) paste were investigated by dynamic rheological measurements and syneresis determination. The cooking conditions of the starch were chosen by taking the starch pastes at peak consistency (SP/Peak), at half breakdown consistency (SP/HB), after being held at 95°C for 15 min (SP/95°C) and after the whole pasting cycle (SP/25°C) in the Brabender Amylograph. The concentration effect was studied with the starch pastes after a whole pasting cycle at 35, 50 and 65 g kg?1. Depending on cooking conditions and concentration, the rheological responses in changes of complex modulus (G*) and phase angle () of the starch pastes, with regard to the number of freeze-thaw cycles, differed considerably. This indicated that the starch pastes had undergone various structural changes during freeze-thaw treatments. With an increased extent of pasting, and with an increased starch concentration, the rheological responses indicative of the destabilisation process of the starch pastes were, in general, delayed. The number of freeze-thaw cycles required for the appearance of a peak in G*, related to the first syneresis, was one, two, five and six for SP/Peak, SP/HB, SP/95°C and SP/25°C, respectively. For the starch pastes at 35, 50 and 65 g kg?1, it was four, six and seven cycles, respectively. Based on these rheological data, it was suggested that the amount of inter-mingled amylose and amylopectin in the dispersion of hydroxypropyl starch paste is the main controlling factor, which plays a critical role in the rheological response as well as in the syneresis.  相似文献

以8个品种甘薯淀粉为研究对象,研究了甘薯淀粉的颗粒形态、粒径大小和结晶特性等结构特性,糊化特性、凝胶质构、溶解度、膨胀度和冻融稳定性等功能特性,并分析了甘薯淀粉结构与功能特性间的相关性。结果表明,不同品种甘薯淀粉的直链淀粉含量不同,其颗粒形态在不同品种间没有明显差异,均具有典型的A型衍射图谱;淀粉粒径大小和糊化参数在不同品种间差异明显。甘薯淀粉的溶解度和膨胀度与温度有关,均随温度的上升而增大。相关性分析表明,直链淀粉含量与回生值、硬度、胶着性、咀嚼性、析水率均呈显著正相关(r=0.807,0.721,0.722,0.734,0.803,P<0.05),与凝胶回复性呈显著负相关(r=-0.832,P<0.05)。平均粒径与内聚性、膨胀度呈显著负相关(r=-0.762,-0.775,P<0.05)。此外,甘薯淀粉糊的回生值与凝胶硬度、胶着性和咀嚼性均呈显著正相关(P<0.05),而与内聚性呈显著负相关(P<0.05)。本研究结果可为甘薯淀粉的精深加工和具体应用领域的甘薯淀粉选择提供一定的科学依据。  相似文献

Refined field pea (Pisum sativum L.) starches were prepared from air‐classified pea starch by washing or from whole pea by wet milling, and analyzed for their physicochemical and pasting characteristics in the presence of alkali and borax. Commercial corn and high amylose corn starches were included in the study for comparative purposes. The two pea starches exhibited similar physicochemical characteristics. Amylose content markedly influenced pasting and other characteristics of the corn starches. Pea starch and high amylose corn starch exhibited little viscosity development during pasting in deionized water. The presence of alkali or borax significantly altered the peak viscosities and cold paste stabilities of all four starches in a concentration dependent manner. Alkali and borax increased peak and cold paste viscosity and reduced syneresis in all cases.  相似文献

Starch was isolated from four-o'clock flower (Mirabilis jalapa L.) seed by an alkaline process and selected physicochemical properties was determined. The nearly spherical starch granules were approximately 1.5–3.0 μm in diameter. The starch had a pasting temperature of 72.5°C, and an iodine affinity of 3.6%. The Bra-bender viscoamylogram and the swelling pattern indicated the starch underwent restricted swelling. The starch contained only trace amounts of phosphate. Solubility in dimethyl sulfoxide was low, but after being treated with bacterial alpha-amylase, the solubility was high. The degree of syneresis of the pasted starch during storage was high and freeze-thaw stability was low. The properties of this isolated small-granule starch differed from other such starches reported in the literature.  相似文献

Jicama and maize starches were hydrolyzed with HCl (1.5, 3.0 or 4.5 g/100 g of starch), at a temperature of 40 °C using two hydrolysis times (3 and 6 h). The acid degradation of both starches was not excessive as revealed by the positive blue value, amylose content, gel formation and gel thermo-reversibility. Jicama starches were more susceptible to acid hydrolysis than maize starches. Hydrolyzed jicama starches showed low values of gel strength and water solubility index, and high values of damaged starch, total sugar content and water absorption index. Stirred yogurt formulated with hydrolyzed starches showed different properties of syneresis index according to the starch type and hydrolysis conditions. Yogurt samples with hydrolyzed jicama starches added did not show significant differences in pH and viscosity. Sensorial testing showed that it is possible to produce yogurt with good functional and sensorial properties using hydrolyzed jicama starches as a fat substitute.  相似文献

Starch from the new sweetpotato cultivar Konamizuki (KM) was evaluated as a food material, and its basic properties were characterized. Change in elastic modulus during cold storage of KM starch gels and syneresis after freeze-thaw treatment were limited and indicated slow retrogradation properties. In addition, KM starch paste had higher and more stable storage modulus than other starches, suggesting desirable gel-forming properties. These KM gel properties reflected distinctive structural properties, including larger quantities of short unit chains with degree of polymerization 6-10 and amylose-like long chains of the amylopectin, as well as longer amyloses and longer amylose-like chains of the amylopectin compared with other starches. Finally, KM starch was used in the production of tapioca pearls and starchy noodles, and subsequent sensory analyses indicated highly desirable properties as a food material for starchy gel products.  相似文献

对20种中国主产区蚕豆淀粉粉丝烹煮品质和感官品质进行了评价,并对蚕豆淀粉的物理特性指标、糊化回生指标与相应的粉丝品质进行相关性分析。淮安大蚕豆等5个蚕豆品种的淀粉制作的粉丝品质最好,而青海马牙等3个蚕豆品种的淀粉制作的粉丝品质较差。蚕豆淀粉部分物理特性指标与粉丝品质的密切相关表现在:持水性越低,溶解度越低,膨润力越低,粉丝品质越好。淀粉的冻藏缩水率、透光率与粉丝的烹煮、感官品质指标相关性不大。蚕豆淀粉的RVA参数与其粉丝感官品质指标密切相关,其中衰减度、峰粘度、保持强度等对其影响最大。蚕豆淀粉凝胶强度越大,粉丝的烹煮品质和感官品质越好。在评价蚕豆淀粉品种的粉丝加工适应性时,一方面可以通过测试蚕豆淀粉的溶解度、持水性、膨润力和凝胶强度来预测其粉丝烹煮品质和感官品质的好坏;另一方面可以用RVA测试蚕豆淀粉,预测其相应的粉丝感官品质的优劣。  相似文献

Refined legume starches were evaluated for their Brabender Visco/Amylograph properties in their native form and after chemical and enzymatic pretreatment during incubation for 20 h at room temperature. Although exhibiting the characteristic restricted paste viscosities of legume starches, native lentil starch showed much higher viscosity parameters than navy bean starch while field pea starch had very low, stable viscosities. Pretreatments with mineral acids, alkali or enzymes failed to significantly alter the amylographs of the 8% slurries (w/v). Removal of surface lipids on the refined starch granules with propanol/water (3:1 v/v) or chloroform/methanol (2:1 v/v) increased paste viscosities substantially, as did the complexation of the starches with palmitic acid or glyceryl monopalmitate. None of the treatments resulted in complete dissolution of the starch granules and the modified starches showed no improvement in gel syneresis during storage.  相似文献
