This study determined the prevalence of Salmonella in foods widely consumed in Korea from 1993 to 2001, along with antimicrobial susceptibility profiles of Salmonella isolates from these foods for 11 antibiotics. Overall, 41 Salmonella isolates, representing 15 serotypes, were obtained from 2.2% (29 of 1,334) of the samples examined, and most of the Salmonella isolates were recovered from broiler carcasses. The most common serotypes were Salmonella Enteritidis (29.3%), Salmonella Virginia (14.6%), and Salmonella Haart (12.2%). All isolates were screened for antibiotic resistance; 14.6% of the isolates were susceptible to all of the antibiotics, 4.9% were resistant to one antimicrobial agent, 14.6% were resistant to two antimicrobial agents, 22.0% were resistant to three antimicrobial agents, 39.0% were resistant to four antimicrobial agents, and 4.9% were resistant to five antimicrobial agents. Most of the isolates showed resistance or intermediate resistance to streptomycin, ampicillin, carbenicillin, and/or tetracycline.  相似文献

目的调查青岛市规模化肉鸡屠宰场屠宰后整鸡样品中沙门菌的污染及抗生素耐药谱分布状况。方法2014年10~12月在青岛市选择2家规模化肉鸡屠宰场,采用胴体漂洗法定量检测3次共采集的141份屠宰后整鸡样品中沙门菌,根据Kauffmann-White表对沙门菌菌株进行血清学鉴定,应用微量肉汤稀释法检测菌株对11种抗生素的耐药性。结果整鸡样品沙门菌总体污染率为74.5%(105/141),污染水平3.6~1 100 MPN/100 g,中位数为43 MPN/100 g;共分离355株沙门菌,血清型分布为肠炎沙门菌220株,印第安纳沙门菌88株和阿贡纳沙门菌19株,以及其他型28株。355株沙门菌分离株的总体耐药率为90.4%(321/355),萘啶酸(NAL)耐药率最高(88.7%,315/355)。220株肠炎沙门菌中219株(99.5%)耐药,6株(2.7%)为多重耐药株,优势耐药谱为奈啶酸(156株)。88株印第安纳沙门菌均耐药,85株为多重耐药株,优势耐药谱为庆大霉素-氯霉素-环丙沙星-萘啶酸-氨苄西林-青霉烷砜/氨苄西林-头孢他啶-头孢噻肟-复方新诺明。19株阿贡纳沙门菌除1株对奈啶酸耐药外,其余18株对所测试11种抗生素均敏感。结论青岛市肉鸡屠宰场沙门菌污染率较高,血清型以肠炎沙门菌、印第安纳沙门菌和阿贡纳沙门菌为主。沙门菌总体耐药率较高,并呈现多重耐药性趋势。  相似文献

This study estimated the prevalence of Salmonella, Campylobacter, and Escherichia coli isolates in fresh retail grain-fed veal obtained in Ontario, Canada. The prevalence and antimicrobial resistance patterns were examined for points of public health significance. Veal samples (n = 528) were collected from February 2003 through May 2004. Twenty-one Salmonella isolates were recovered from 18 (4%) of 438 samples and underwent antimicrobial susceptibility testing. Resistance to one or more antimicrobials was found in 6 (29%) of 21 Salmonella isolates; 5 (24%) of 21 isolates were resistant to five or more antimicrobials. No resistance to antimicrobials of very high human health importance was observed. Ampicillin-chloramphenicolstreptomycin-sulfamethoxazole-tetracycline resistance was found in 5 (3%) of 21 Salmonella isolates. Campylobacter isolates were recovered from 5 (1%) of 438 samples; 6 isolates underwent antimicrobial susceptibility testing. Resistance to one or more antimicrobials was documented in 3 (50%) of 6 Campylobacter isolates. No Campylobacter isolates were resistant to five or more antimicrobials or category I antimicrobials. E. coli isolates were recovered from 387 (88%) of 438 samples; 1,258 isolates underwent antimicrobial susceptibility testing. Resistance to one or more antimicrobials was found in 678 (54%) of 1,258 E. coli isolates; 128 (10%) of 1,258 were resistant to five or more antimicrobials. Five (0.4%) and 7 (0.6%) of 1,258 E. coli isolates were resistant to ceftiofur and ceftriaxone, respectively, while 34 (3%) of 1,258 were resistant to nalidixic acid. Ciprofloxacin resistance was not detected. There were 101 different resistance patterns observed among E. coli isolates; resistance to tetracycline alone (12.7%, 161 of 1,258) was most frequently observed. This study provides baseline prevalence and antimicrobial resistance data and highlights potential public health concerns.  相似文献

目的 了解我国2015年食源性沙门菌的耐药状况及mcr-1基因在硫酸粘菌素(conlistin,CT)耐药菌株中的分布情况。方法 采用微量肉汤稀释法测定1 070株食源性沙门菌对10类16种抗生素的药物敏感性,采用荧光定量聚合酶链式反应(PCR)方法检测196株CT耐药菌株中是否存在mcr-1基因。结果 71.9%(769/1 070)的沙门菌对受试的16种抗生素呈现不同程度的耐药性,其中萘啶酸(NAL)、四环素(TET)、氨苄西林(AMP)、氨苄西林/舒巴坦(SAM)4种抗生素的耐药率较高,均在40%以上,未见碳青霉烯类耐药菌株,47.5%(508/1 070)的沙门菌同时耐受3类或3类以上抗生素,表现为多重耐药,同时耐受抗生素种类最高为9类。共存在141种耐药谱,优势耐药谱型为NAL、AMP-SAM-NAL-CT和TET。196株CT耐药沙门菌检出1株携带mcr-1基因且超广谱β-内酰胺酶(ESBLs)阳性的菌株,该菌株为伦敦血清型,是所有测试菌株中唯一1株九重耐药株。部分省份沙门菌耐药率较高。生禽肉和生畜肉来源沙门菌耐药率较高,分别为80.6%(349/433)和73.5%(283/385)。结论 我国2015年食源性沙门菌整体耐药水平较高,且多重耐药情况严重,生禽畜肉是耐药沙门菌的主要来源,我国食源性沙门菌中存在携带mcr-1基因的严重耐药菌株,应引起关注。  相似文献

Campylobacter is a human pathogen associated with chicken and chicken meat products. This study was designed to examine the prevalence and number of Campylobacter on broiler chicken carcasses in commercial processing plants in the United States. Carcass samples were collected from each of 20 U.S. plants four times, roughly approximating the four seasons of 2005. At each plant on each sample day, 10 carcasses were collected at rehang (prior to evisceration), and 10 carcasses from the same flock were collected postchill. A total of 800 carcasses were collected at rehang and another 800 were collected postchill. All carcasses were subjected to a whole-carcass rinse, and the rinse diluent was cultured for Campylobacter. The overall mean number of Campylobacter detected on carcasses at rehang was 2.66 log CFU per ml of carcass rinse. In each plant, the Campylobacter numbers were significantly reduced by broiler processing; the mean concentration after chill was 0.43 log CFU/ml. Overall prevalence was also reduced by processing from a mean of > or =30 of 40 carcasses at rehang to > or =14 of 40 carcasses at postchill. Seven different on-line reprocessing techniques were applied in the test plants, and all techniques resulted in <1 log CFU/ml after chilling. Use of a chlorinated carcass wash before evisceration did not affect the postchill Campylobacter numbers. However, use of chlorine in the chill tank was related to lower numbers on postchill carcasses. Overall, U.S. commercial poultry slaughter operations are successful in significantly lowering the prevalence and number of Campylobacter on broiler carcasses during processing.  相似文献

Experiments were performed to assess the reduction of Campylobacter spp. and Escherichia coli in commercial broiler carcasses by postchill dip applications of acidified sodium chlorite. Carcass rinses were collected before the inside-outside-bird washer (IOBW), post-IOBW, postchill, and after the postchill application of acidified sodium chlorite. Prevalence and counts of Campylobacter spp. and E. coli were determined. The mean values for Campylobacter spp. and E. coli counts differed significantly at sampling sites. The IOBW reduced the bacterial counts significantly in only one experiment. The chiller reduced Campylobacter counts significantly in both experiments but failed to significantly reduce the counts of E. coli in one experiment. No major reduction in the prevalence after enrichment for Campylobacter spp. was detected post-IOBW or postchill. However, a significant reduction in Campylobacter spp. and in E. coli counts and Campylobacter spp. prevalence was seen after the postchill application of acidified sodium chlorite. These results demonstrate that the antimicrobial effect of acidified sodium chlorite applied postchill may be used to significantly reduce Campylobacter spp. and E. coli in commercial broiler carcasses. Postchill systems may eventually be used in different applications, such as mist, spray, or bath, which could be applied closer to the final stages in processing.  相似文献

The prevalence and antimicrobial resistance of Salmonella serotypes on beef carcasses from four small abattoirs in Jalisco State, Mexico, were investigated during a 10-month period. Following U.S. Department of Agriculture Food Safety and Inspection Service protocols, Salmonella was isolated from 78 (15.4%) beef carcasses (n = 505) after the final carcass water wash. Isolation frequency differed by establishment (P < 0.05) and was higher (P < 0.05) during the wet season (May through September) for all establishments. Thirteen Salmonella serotypes and four serogroups (partially serotyped isolates) were identified. The most prevalent were Salmonella enterica Give (24.4%), Salmonella Typhimurium (17.9%), and Salmonella Group B (14.1%). Antimicrobial susceptibility was tested against 11 drugs, and results indicated that 46.2% of the isolates were resistant to tetracycline, 42.3% were resistant to streptomycin, 23.1% were resistant to chloramphenicol, 21.8% were resistant to trimethoprim-sulfamethoxazole, and 19.2% were resistant to gentamicin. No resistance to ceftriaxone or ciprofloxacin was observed, and 33% of the isolates were resistant to three or more antimicrobials. Although Salmonella Give was the most prevalent serotype, 95% of the isolates of this serotype were susceptible to all antimicrobials tested. Antimicrobial resistance was more common in Salmonella Typhimurium, and 93% (13 of 14) of the isolates of this serotype were resistant to at least five antimicrobials. The frequency of multidrug-resistant Salmonella isolates differed among establishments (P < 0.05) and may be related to the origin of the cattle presented for harvesting. These findings highlight the need for control measures to reduce Salmonella prevalence on beef carcasses in small abattoirs in Mexico and for strategies to ensure the cautious use of antimicrobials in animal production to prevent and control the spread of antimicrobial-resistant foodborne pathogens.  相似文献

This study was conducted to determine the prevalence and antimicrobial resistance of Listeria monocytogenes recovered from chicken carcasses in slaughterhouses in Northern Greece. A total of 100 poultry samples (300 carcasses) were examined for Listeria spp. The samples were neck skin taken from four different slaughterhouses in Northern Greece. Forty samples were also taken from the environment of the slaughterhouses. Identification of L. monocytogenes was carried out by PCR and fingerprinting of the isolates by random amplified polymorphic DNA. L. monocytogenes strains isolated from chicken carcasses and from the environment of the slaughterhouses were also examined for antibiotic resistance. Fifty-five isolates of L. monocytogenes were tested for susceptibility to 20 antibiotics using the disk diffusion method. Listeria spp. were present in 99 of the poultry samples tested (99%), and 38 yielded L monocytogenes (38%). L. monocytogenes was also isolated in 80% of samples from the environment of a certain slaughterhouse, while the other slaughterhouses were found to be contaminated only with Listeria spp. All isolates were resistant to nalidixic acid and oxolinic acid, the majority of them to clindamycin, and only a few to tetracycline and oxytetracycline, whereas they were found to be susceptible to all other antimicrobials. The results of this study demonstrate a high prevalence of L. monocytogenes contamination in chicken carcasses, and all isolates were found to be sensitive to the antimicrobials most commonly used to treat human listeriosis.  相似文献

Control of bacterial contamination during poultry slaughter can be compromised by natural disaster. In October 2005, disaster recovery was evaluated in 11 broiler slaughter establishments 1 month after operations were disrupted by Hurricane Katrina. A questionnaire was administered to characterize the establishment's operational disruption. Carcass rinses were collected at the early and late stage of the slaughter process (rehang and postchill). Counts for generic Escherichia coli were determined for all rinses. Salmonella culture and serotyping were performed on postchill samples. Historical U.S. Food Safety and Inspection Service data on the presence of Salmonella also were examined. The mean duration of disruption was 6.3 days (range, 3 to 9 days). Loss of utilities (electricity and water) was the cause of prolonged recoveries. Most establishments (64%) did not exceed the m performance criteria threshold for generic E. coli (>2 log or 100 CFU/ml) during the recovery period. The mean reduction in E. coli counts between rehang and postchill was 2.3 log or 200 CFU/ml (range, 0.9 to 3.1 log CFU/ ml). Rinse samples from 5 of 11 establishments were positive for Salmonella. Of 12 Salmonella isolates that were recovered, eight were Salmonella Kentucky. Salmonella Heidelberg and Salmonella Thompson were recovered from one establishment, and two isolates of Salmonella Typhimurium were isolated from another. This study provided empirical reassurance that the establishments' processes controlled bacterial contamination. Data on reductions in E. coli counts during poultry slaughter may help establishments control microbial contamination. Other data (e.g., Salmonella and Campylobacter enumeration) may also have merit for this purpose.  相似文献

Salmonella prevalence and counts were estimated for samples from the oral cavity, hide, rumen, and feces of 100 cattle at slaughter and from the pre- and postchill carcasses of these cattle. Samples were collected from 25 consecutively slaughtered cattle from each of four unrelated groups slaughtered at a single abattoir on different days. Ten additional fecal samples from each group were collected from their respective abattoir holding pens prior to slaughter. The prevalence of Salmonella was estimated using automated immunomagnetic separation, and the counts were estimated using a combination of most probable number (MPN) and automated immunomagnetic separation. A total of 606 samples were collected with Salmonella isolated from 157 (26%), including 29% of oral cavities, 68% of hides, 16% of feces collected after evisceration, 25% of rumen samples, 2% of prechill carcasses, 3% of postchill carcasses, and 48% of feces collected from holding pens. The prevalence and count of Salmonella varied between the different groups of animals tested. The highest count obtained was from a rumen sample (1.1 x 10(4) MPN/g). Other counts were generally low, with a maximum count in feces collected after evisceration and in the abattoir holding pens of 93 and 23 MPN/g, respectively. The highest count on hides, in oral cavities, and on carcasses was 4.8 MPN/cm2, 23 MPN/g, and 0.31 MPN/cm2, respectively. Even though Salmonella was present on the hides and in the rumen and feces of at least one animal from each group of cattle, the processing of animals at this abattoir resulted in few contaminated carcasses, and when contamination occurred, Salmonella was detected at low numbers.  相似文献

Studies were conducted to compare the effect of sodium hypochlorite (SH) versus monochloramine (MON) on bacterial populations associated with broiler chicken carcasses. In study 1, nominal populations (6.5 to 7.5 log CFU) of Escherichia coli, Listeria monocytogenes, Pseudomonas fluorescens, Salmonella serovars, Shewanella putrefaciens, and Staphylococcus aureus were exposed to sterilized chiller water (controls) or sterilized chiller water containing 50 ppm SH or MON. SH at 50 ppm eliminated all (6.5 to 7.5 log CFU) viable E. coli, L. monocytogenes, and Salmonella serovars; 1.2 log CFU of P. fluorescens; and 5.5 log CFU of S. putrefaciens. MON eliminated all (6.5 to 7.5 log CFU) viable E. coli, L. monocytogenes, S. putrefaciens, and Salmonella serovars and 4.2 log CFU of P. fluorescens. In study 2, chicken carcasses were inoculated with P. fluorescens or nalidixic acid-resistant Salmonella serovars or were temperature abused at 25 degrees C for 2 h to increase the populations of naturally occurring E. coli. The groups of Salmonella serovar-inoculated or temperature-abused E. coli carcasses were immersed separately in pilot-scale poultry chillers and exposed to tap water (controls) or tap water containing 20 ppm SH or 20 ppm MON for 1 h. The P. fluorescens-inoculated group was immersed in pilot-scale poultry chillers and exposed to tap water (controls) or tap water containing 50 ppm SH or 50 ppm MON for 1 h. Carcasses exposed to the SH treatment had nominal increases (0.22 log CFU) in E. coli counts compared with controls, whereas exposure to MON resulted in a 0.89-log reduction. Similarly, average nalidixic acid-resistant Salmonella serovar counts increased nominally by 34% (41 to 55 CFU/ml) compared with controls on carcasses exposed to SH, whereas exposure to MON resulted in an average nominal decrease of 80% (41 to 8 CFU/ml). P. fluorescens decreased by 0.64 log CFU on carcasses exposed to SH and decreased by 0.87 log CFU on carcasses exposed to MON. In study 3, SH or MON was applied to the chiller in a commercial poultry processing facility. E. coli counts (for carcass halves emerging from both saddle and front-half chillers) and Salmonella prevalence were evaluated. Data from carcasses exposed to SH during an 84-day historical (Hist) and a 9-day prepilot (Pre) period were evaluated. Other carcasses were exposed to MON and tested during a 27-day period (Test). E. coli counts for samples collected from the saddle chiller were 25.7, 25.2, and 8.6 CFU/ml for Hist, Pre, and Test, respectively. E. coli counts for samples collected from the front-half chiller were 6.7, 6.9, and 2.5 CFU/ml for Hist, Pre, and Test, respectively. Salmonella prevalence was reduced from 8.7% (Hist + Pre) to 4% (Test). These studies indicate that MON is superior to SH in reducing microbial populations in poultry chiller water.  相似文献

The U.S. Food Safety and Inspection Service (FSIS) tests for Salmonella in meat, poultry, and egg products through three regulatory testing programs: the Pathogen Reduction-Hazard Analysis and Critical Control Point (PR-HACCP) program, the ready-to-eat program for meat and poultry products, and the pasteurized egg products program. From 1998 through 2003, 293,938 samples collected for these testing programs were analyzed for the presence of Salmonella enterica serotypes. Of these samples, 12,699 (4.3%) were positive for Salmonella, and 167 (1.3%) of the positive samples (0.06% of all samples) contained Salmonella Enteritidis. The highest incidence of Salmonella Enteritidis was observed in ground chicken PR-HACCP samples (8 of 1,722 samples, 0.46%), and the lowest was found in steer-heifer PR-HACCP samples (0 of 12,835 samples). Salmonella Enteritidis isolates were characterized by phage type, pulsed-field gel electrophoretic pattern, and antimicrobial susceptibility. Phage typing of 94 Salmonella Enteritidis isolates identified PT13 (39 isolates) and PT8 (36 isolates) as the most common types. One isolate from a ready-to-eat ham product was characterized as PT4. Electrophoretic analysis of 148 Salmonella Enteritidis isolates indicated genetic diversity among the isolates, with 28 unique XbaI electrophoretic patterns identified. Of these 148 isolates, 136 (92%) were susceptible to each of 16 antimicrobials tested. Two isolates were resistant to ampicillin alone, and 10 isolates were resistant to two or more antimicrobials. Isolation of Salmonella Enteritidis from FSIS-regulated products emphasizes the need for continued consumer education on proper food handling and cooking practices and continued work to decrease the prevalence of Salmonella in meat, poultry, and pasteurized egg products.  相似文献

A reduction in Campylobacter spp. has been associated with use of commercial antimicrobial technologies during the processing of broiler chickens. This review is focused on commercial interventions that have received approval by both the U.S. Food and Drug Administration and the U.S. Department of Agriculture for use on raw poultry in the United States. Most of these interventions are currently applied prechill. The limited number of publications on the topic suggests that the application of antimicrobials in commercial settings results in Campylobacter reduction of 1 to 2 log CFU/ml of carcass rinse. However, postchill counts of 0.5 to 1 log CFU/ml of carcass rinse (approximately 4,000 CFU per carcass) are still common. Thus, antimicrobial interventions are not a complete solution for the control of Campylobacter on raw poultry. New postchill interventions are needed, as are (i) improvements in the methodology for detection and enumeration of Campylobacter, (ii) additional surveys on the contamination of processed poultry, and (iii) an understanding of possible resistance to antimicrobials by Campylobacter spp. Research addressing these topics will lead to better control of Campylobacter in commercial poultry carcasses.  相似文献

Peracetic acid mixture (PAHP), which is a combination of peracetic acid and hydrogen peroxide, has been approved as an antimicrobial for use in poultry chillers. To validate its effectiveness, 85 ppm of PAHP was compared with the 30-ppm chlorine treatment in a commercial setting. In this trial, 100 carcasses were sampled for Salmonella and Campylobacter spp. prior to chilling and 100 carcasses were sampled after chilling. In all, 400 carcasses were sampled using 85 ppm of PAHP in the chiller and 400 carcasses were sampled using the chlorine treatment. PAHP at 85 ppm reduced Salmonella-positive carcasses by 92% exiting the chiller, whereas treatment with 30 ppm of chlorine reduced Salmonella by 57%. Additionally, PAHP reduced Campylobacter species-positive carcasses exiting the chiller by 43% while chlorine resulted in a 13% reduction. These results suggest that peracetic acid in combination with hydrogen peroxide may be an effective antimicrobial in poultry chiller applications.  相似文献

Salmonella serotypes are important foodborne pathogens of humans that can be acquired through consumption of contaminated meat and dairy products. Salmonella infection also can be a significant animal health issue. As part of a national study of U.S. dairy operations conducted between March and September 2002, fecal samples were collected from representative cows in 97 dairy herds in 21 states and were cultured to determine the prevalence of Salmonella shedding. Salmonella was recovered from the feces of at least one cow in 30.9% of the herds. Overall, 7.3% of fecal samples were culture positive for Salmonella. The three most frequently recovered serotypes were Salmonella Meleagridis (24.1%), Salmonella Montevideo (11.9%), and Salmonella Typhimurium (9.9%). The susceptibilities of Salmonella isolates recovered were determined using a panel of 16 antimicrobial drugs. Salmonella isolates recovered from dairy cows had relatively little resistance to these antimicrobial agents; 83.0% of the isolates were susceptible to all antimicrobials tested. This study provides updated information on the prevalence and susceptibility patterns of Salmonella in dairy herds and on cow and herd characteristics. These data contribute to our understanding of the ecology of Salmonella in the dairy farm environment.  相似文献

This study determined the prevalence of Salmonella on beef animal hides and carcasses and antimicrobial susceptibility profiles against a panel of 13 antibiotics. In each of the eight commercial packing facilities, of which five processed primarily heifers and steers and the remaining three processed primarily cows and bulls, hide and carcass sponge swab samples were obtained immediately before hide removal and before carcass chilling, respectively. Overall, prevalence of Salmonella on external surfaces (hides) of cattle was 15.4% (49 of 319), whereas prevalence after dehiding and other slaughtering/dressing processes, including the application of decontamination treatments, was, as expected, reduced (P < 0.05) to 1.3% (4 of 320) on carcass surfaces. From 53 total Salmonella-positive hide and carcass samples, 526 biochemically confirmed isolates were obtained to determine antimicrobial susceptibility profiles. Of 53 Salmonella-positive samples, individually, 24 (45.3%), 17 (32.1%), 17 (32.1%), 11 (20.8%), 8 (15.1%), 8 (15.1%), 8 (15.1%), 4 (7.5%), and 2 (3.8%) samples yielded at least one isolate resistant to amoxicillin/clavulanic acid, tetracycline, streptomycin, sulfonamides, ampicillin, ampicillin/sulbactam, chloramphenicol, gentamicin, and trimethoprim/sulfamethoxazole, respectively. None of the Salmonella-positive samples yielded an isolate resistant to ceftriaxone, ciprofloxacin, enrofloxacin, or levofloxacin. Although none of the samples yielded an isolate simultaneously resistant to three or four antimicrobials, a total of eight samples yielded at least one isolate resistant to five or more antimicrobials tested. Included among the 18 group B-positive samples were three samples that, individually, yielded at least one Salmonella Typhimurium var. Copenhagen DT104 isolate resistant to at least six antimicrobials tested. Results from this study support current prudent therapeutic and subtherapeutic antimicrobial use recommendations.  相似文献

Concern about Salmonella contamination of food is compounded by fear that antimicrobials traditionally used to combat the infection will become useless due to rising antibiotic resistance. Livestock, in particular swine, often are blamed for illnesses caused by Salmonella and for increasing antibiotic resistance due to use of antibiotics in pigs. As part of the National Animal Health Monitoring System Swine 2000 and 2006 studies, swine fecal samples were cultured for Salmonella. These samples were collected from 123 operations in 17 states in 2000 and from 135 operations in 17 states in 2006. At each operation, 50 and 60 fecal samples were collected from late finisher pig pens in 2000 and 2006, respectively. Salmonella isolates were characterized to determine serogroup and serotype and were tested for susceptibility to a panel of 17 and 15 antimicrobial drugs in 2000 and 2006, respectively. A total of 5,470 and 7,788 samples were cultured for Salmonella in 2000 and 2006, respectively. Overall, 6.2% of the samples and 34.2% of the farms were positive for Salmonella in 2000. In 2006, 7.2% of the samples and 52.6% of the farms were positive. Salmonella Derby, Salmonella Typhimurium var. 5- (formerly Salmonella Typhimurium var. Copenhagen), and Salmonella Agona were the three serotypes most often recovered in both study years. The most common antimicrobial resistance pattern for Salmonella Derby in the two study years was resistance to streptomycin, sulfisoxazole, and tetracycline. Most isolates were resistant to tetracycline, sulfisoxazole, and streptomycin in both study years. The proportion of Salmonella isolates that were susceptible to all antimicrobials (pansusceptible) was 38.1% in 2000 and 20.4% in 2006. The proportion of Salmonella isolates that were resistant to three or more antimicrobials (multidrug resistant) was similar in 2000 and in 2006 (52.8 and 57.7%, respectively).  相似文献

The effect of prechill fecal contamination on numbers of bacteria on immersion-chilled carcasses was tested in each of three replicate trials. For each trial, 16 eviscerated broiler carcasses were split into 32 halves and assigned to one of two groups. Cecal contents (0.1 g inoculated with Campylobacter and nalidixic acid-resistant Salmonella) were applied to each of eight halves in one group (direct contamination) that were placed into one paddle chiller (contaminated), whereas the other paired halves were placed into another chiller (control). From the second group of eight split birds, one of each paired half was placed in the contaminated chiller (to determine cross-contamination) and the other half was placed in the control chiller. Postchill carcass halves were sampled by a 1-min rinse in sterile water, which was collected and cultured. Bacterial counts were reported as log CFU per milliliter of rinsate. There were no significant statistical differences (paired t test, P < 0.05) from direct contamination for coliforms (mean 3.0 log CFU) and Escherichia coli (mean 2.7 log CFU), although Campylobacter numbers significantly increased from control values because of direct contamination (1.5 versus 2.1 log CFU), and the incidence increased from 79 to 100%. There was no significant effect of cross-contamination on coliform (mean 2.9 log CFU) or E. coli (mean 2.6 log CFU) numbers. Nevertheless, Campylobacter levels were significantly higher after exposure to cross-contamination (1.6 versus 2.0 log CFU), and the incidence of this bacterium increased from 75 to 100%. Salmonella-positive halves increased from 0 to 42% postchill because of direct contamination and from 0 to 25% as a result of cross-contamination after chilling. Water samples and surface swabs taken postchill from the contaminated chiller were higher for Campylobacter than those taken from the control chiller. Immersion chilling equilibrated bacterial numbers between contaminated and control halves subjected to either direct contamination or cross-contamination for coliforms and E. coli. Campylobacter numbers, Campylobacter incidence, and Salmonella incidence increased because of both direct contamination and cross-contamination in the chiller. Postchill E. coli numbers did not indicate which carcass halves were contaminated with feces before chilling.  相似文献

Salmonella is one of the most common foodborne pathogens associated with diarrheal disease in humans. Food animals, especially poultry, are important direct and indirect sources of human salmonellosis, and antimicrobial resistance is an emerging problem of public health concern. The use of antimicrobials benefits producers but contributes to the emergence of antimicrobial resistant bacteria. As a step toward implementing the Colombian Integrated Program for Antimicrobial Resistance Surveillance, this study was conducted to establish the prevalence, distribution of serovars, antimicrobial resistance profiles, and risk factors for Salmonella on poultry farms in the two largest states of poultry production in Colombia. Salmonella was isolated from 41% of farms and 65% of the 315 chicken houses sampled. Salmonella Paratyphi B variant Java was the most prevalent serovar (76%), followed by Salmonella Heidelberg (23%). All Salmonella isolates were resistant to 2 to 15 of the antimicrobial drugs tested in this study. For Salmonella Paratyphi B variant Java, 34 drug resistance patterns were present. The predominant resistance pattern was ciprofloxacin, nitrofurantoin, tetracycline, trimethoprim-sulfamethoxazole, ceftiofur, streptomycin, enrofloxacin, and nalidixic acid; this pattern was detected in 15% of isolates. The resistance pattern of tetracycline, ceftiofur, and nalidixic acid was found in over 40% of the isolates of Salmonella Heidelberg. Of the biosecurity practices considered, two factors were significantly associated with reduction in Salmonella: cleaning of fixed equipment and composting of dead birds on the farm. Findings from the present study provide scientific evidence to inform implementation of official policies that support new biosecurity legislation in an effort to decrease the prevalence of Salmonella on Colombian poultry farms.  相似文献

Data from an ongoing national surveillance program of Campylobacter prevalence in broiler slaughter groups were related to results from a 1-year baseline study of broiler carcasses postchill. The goals were to establish the relation between Campylobacter prevalence in slaughter groups and on carcasses and to determine the effect of various chilling systems on Campylobacter prevalence. Pooled cloacal and neck skin samples from the surveillance program were analyzed after enrichment. Carcass rinse samples from the baseline study were analyzed after enrichment and by direct plating. Data from both studies were available for 614 carcasses. Direct-plating analyses indicated that the percentages of carcasses positive for Campylobacter jejuni and other Campylobacter spp. in slaughter groups with negative cloacal samples were 2 and 10%, respectively, whereas enrichment analyses indicated prevalences of 2% in both cases. Campylobacter prevalence in slaughter groups with a high degree of intestinal colonization (more than half of the pooled cloacal samples positive) was significantly higher than in slaughter groups with a low degree of colonization (76 to 85% and 30 to 50%, respectively, depending on Campylobacter spp. and analytical method). The prevalence of Campylobacter-positive carcasses postchill was at the same level as the prevalence of carcasses that originated from slaughter groups with positive neck skin samples at four of the six slaughterhouses. Only at one slaughterhouse, with an air-chilling system, was the postchill prevalence (13%) lower than that expected from slaughter group data (23%). The postchill prevalence (43%) was higher than that expected from slaughter group data (33%) at one slaughterhouse with immersion chilling.  相似文献
