银杏叶提取物控制草莓加工中VC损失的效应研究 总被引:1,自引:0,他引:1
研究了银杏叶提取物在草莓果实清洗、打浆等工序中控制VC 损失的效果 ,并且与食品加工中常用抗氧化剂EDTA、六偏磷酸钠、磷酸氢二钠进行比较。结果表明 :加入0 02 %~0 03 %的银杏叶提取物能有效地控制草莓果实加工中VC 损失 ,使VC 保存率提高52 19 %~72 47 % ,银杏叶提取物的抗氧化作用保护VC 免受破坏。 相似文献

采用95% 乙醇加热回流提取唐古特白刺(Nitraria tangutorum Bohr.)果实成分,依次用石油醚、氯仿、乙酸乙酯和正丁醇进行萃取。用DPPH 自由基法和ABTS+·法进行抗氧化活性实验,并选取抗坏血酸(VC)和生育酚(VE)作为对照。结果显示乙酸乙酯提取物(EAF)具有较高的抗氧化性,进一步对其进行硅胶柱层析分离,得到6 个组分(EAF-Ⅰ~EAF- Ⅵ),其中EAF-Ⅰ和EAF- Ⅳ的抗氧化性均高于VC 和VE。白刺果实提取物具有良好的抗氧化性,有进一步开发为天然抗氧化剂的应用前景。 相似文献

目的研究甘草、诃子提取物复合抗氧化剂对葵花籽油抗氧化作用的影响。方法采用Schaal烘箱法和ABTS法,评价复合抗氧化剂对葵花籽油的抗氧化作用。结果 Schaal烘箱加速氧化实验中,甘草提取物比诃子提取物对葵花籽油的抗氧化作用更强,复合抗氧化剂均表现出协同抗氧化作用,其中,0.007%甘草提取物=0.013%α-生育酚、0.015%甘草提取物+0.005%抗坏血酸、0.007%诃子提取物+0.013%α-生育酚和0.003%诃子提取物+0.017%抗坏血酸对葵花籽油的抗氧化作用较强,均优于其单一抗氧化剂和人工合成抗氧化剂丁基羟基茴香醚(BHA)、2,6-二叔丁基-4-甲基苯酚(BHT),弱于2-叔丁基对苯二酚(TBHQ)。ABTS法中,多数复合抗氧化剂间表现出协同作用,其中,诃子提取物与抗坏血酸复配比例为5:1和3:1时清除ABTS自由基能力最强。结论复合抗氧化剂对葵花籽油具有协同抗氧化作用。 相似文献

热处理增加总抗氧化剂活性提高番茄营养价值 总被引:2,自引:0,他引:2
人们长久以来一直认为加工后的果蔬因Vc损失而导致其营养价值低于新鲜果蔬。而通过我们的研究发现苹果中Vc对总的抗氧化剂活性的贡献率小于0.4%,而大部分该活性来自于植物活性物质的结合,这意味着尽管有Vc损失,但加工过的果蔬还能保留其抗氧化剂活性。结果表明,尽管有Vc损失,热处理提高了总的抗氧化剂活性和番茄中生物可利用番茄红素含量,并且没有引起总酚类和总类黄酮含量的显著变化,从而提高了番茄的营养价值。 相似文献

采用Schaal烘箱耐热试验法,以人工合成抗氧化剂二叔丁基羟基甲苯、丁基羟基茴香醚和特丁基对苯二酚等为阳性对照,研究茶多酚、苹果多酚、葡萄多酚、野葡萄多酚、牡丹籽多酚、生育酚、脂溶性迷迭香提取物和水溶性迷迭香提取物等8种天然抗氧化剂及2种增效剂(维生素C和柠檬酸)对牡丹籽油氧化稳定性的影响。研究以过氧化值为评价指标。结果表明,在国家允许添加量范围内,几种天然抗氧化剂均能提高牡丹籽油的氧化稳定性,但单独使用的效果要弱于人工合成抗氧化剂特丁基对苯二酚。其中脂溶性迷迭香提取物抗氧化效果较为理想,与合成抗氧化剂特丁基对苯二酚效果接近。维生素C与柠檬酸是抗氧化剂的良好增效剂,协同抗氧化作用显著,且维生素C的效果优于柠檬酸。复合抗氧化剂的抗氧化效果优于同等质量浓度的单一抗氧化剂,复合添加0.01%脂溶性迷迭香+0.01%茶多酚+0.02%维生素C、0.01%牡丹籽多酚+0.01%苹果多酚+0.02%维生素C和0.01%脂溶性迷迭香+0.01%茶多酚+0.02%柠檬酸均能显著减缓牡丹籽油的氧化速度,可使牡丹籽油的贮藏时间明显延长。 相似文献

The antioxidant properties of plants could be correlated with oxidative stress defence in different human diseases. The present study was undertaken to evaluate and compare the antioxidant potential and the phytochemical composition in the aqueous extracts of mint leaves, black tea and black tea enriched with mint extract. All the three preparations exhibited free radical‐scavenging potential for nitric oxide (NO) radical, superoxide anion radical and hydroxyl radical, and the values were lesser than those of the antioxidants which acted as standards. In comparison, the mint extract exhibited higher free radical and NO scavenging effect. Hydroxyl radical and superoxide scavenging effects were more pronounced in tea with the mint extract, while the reducing power was exhibited more significantly by the black tea extract. The phytochemical compounds were identified and the total phenols and flavonoids were quantified and compared between these extracts. 相似文献

对贡水白柚柚皮乙醇提取物的体外抗氧化作用进行研究,同时与椪柑皮乙醇提取物、VC、没食子酸丙酯(PG)等物质的抗氧化作用进行对比。结果表明:在水杨酸体系中椪柑皮乙醇提取物上清液、VC 和PG 对羟自由基的清除能力分别是贡水白柚柚皮乙醇提取物上清液的5.515、1.320、0.428 倍;而椪柑皮乙醇提取物结晶、VC和PG 分别是贡水白柚柚皮乙醇提取物结晶部分清除能力的17.407、1.586、0.514 倍。在邻二氮菲体系中贡水白柚柚皮乙醇提取物对自由基的清除作用均弱于椪柑皮、PG 和VC,其中椪柑皮乙醇提取物上清液、PG 和VC 分别是贡水白柚柚皮乙醇提取物上清液清除能力的18.416、4.820、1.716 倍;而椪柑皮乙醇提取物结晶、PG 和VC 是贡水白柚柚皮乙醇提取物结晶清除能力的6.589、3.609、1.285 倍。椪柑皮乙醇提取物上清液、PG 和VC 对超氧阴离子自由基的清除作用分别是贡水白柚柚皮乙醇提取物上清液的13.941、1.059、2.442 倍;椪柑皮乙醇提取物结晶、PG 和VC 是贡水白柚柚皮乙醇提取物结晶的5.908、1.471、3.392 倍。贡水白柚柚皮乙醇提取物具有一定的还原力,但弱于椪柑皮乙醇提取物、PG 和VC。 相似文献

In recent years, there has been a general trend towards replacing the use of synthetic antioxidant by natural antioxidant, derived from various plants, spices and oil seeds, in processed food. The present study deals in the use of mint (Mentha spicta L) as a source of natural antioxidant in different forms viz, powder, extract, and pure menthol for its application in biscuits. Formulation of mint component was designed based on preliminary studies using various parameters such as instrumental assessment for texture and color measurement and sensory evaluation. The selected levels were as follows 1% mint powder (MNT-P), 500 mg mint extract (MNT-E), and 100 ppm pure menthol (MNT-M) for incorporation in biscuits. The biscuits with different mint forms were packed in unit pouches of metallized polyester/poly laminate and stored at room temperature for five months. The texture value of biscuits with mint powder (MNT-P) received higher scores, comparable with the control (CNT) and BHA (BNT) biscuit indicating their crisp nature. However, color measurement (ΔE) values in MNT-P biscuits were higher followed by MNT-E biscuit due to their green color, whereas the values of MNT-M biscuit were comparable with the CNT and BHA biscuit indicating MNT-M did not impart any change in the color of the biscuit. The sensory scores of MNT-M were higher (P?≤?0.05) than MNT‐P and MNT-E biscuits. MNT-P variation received significantly higher (P?≤?0.05) scores in terms of texture, taste and mouth feel. The results indicate that MNT-P biscuits were highly acceptable compared to MNT-E and MNT-M biscuits. 相似文献

目的:研究银杏叶提取液结合异抗坏血酸钠对鲜切梨的保鲜效果。方法:以鲜切砀山梨为材料,探究总黄酮含量分别为0.25(处理1)、0.50(处理2)、0.75 mg/m L(处理3)的银杏叶提取液结合1%的异抗坏血酸钠(D-sodium ascorbate,D-VCNa)溶液对鲜切砀山梨在4℃条件下贮藏品质的影响。采用SPSS软件分析了贮藏期间鲜切梨的呼吸强度、质量损失率、色差、VC含量、硬度、可溶性固形物含量(soluble solid content,SSC)、过氧化物酶(peroxidase,POD)活力、相对电导率及pH值的变化等。结果:不同质量浓度黄酮的银杏叶提取液结合D-VCNa溶液都可以在不同程度上减缓鲜切梨的呼吸强度、质量损失率、色差的增加,减缓VC含量、硬度、SSC的下降速率,延迟褐变发生、POD活力高峰的出现时间,抑制果实pH值和相对电导率的上升。结论:银杏叶提取液结合D-VCNa对鲜切砀山梨的贮藏品质有一定的保鲜作用,其中以总黄酮含量为0.50 mg/m L银杏叶提取液结合1%的D-VCNa溶液处理的鲜切梨保鲜效果最好。 相似文献
