This study was designed to determine the effect of fluorescent light on riboflavin in homogenized milk and in the resulting fat, casein, and acid whey isolated therefrom. The major proportion (82%) of riboflavin in homogenized milk was associated with the acid whey fraction, about 15% with the casein phase and about 3% with the fat phase. Riboflavin loss due to light exposure (2150 lx for 48 h at 7 C) was greatest in the whey fraction. Further separation of the whey proteins by gel filtration on Sephadex G-75 superfine indicated that the riboflavin associated with the high molecular weight fraction decreased following exposure. In the whey fraction, 95% of the riboflavin was in the free form and not associated with the major whey proteins. The free riboflavin was most labile to light exposure.  相似文献

本文采用控制喷雾干燥塔排风温度的方法来控制乳粉的含水量,通过步进电机带动干燥热风的通道挡板来改变进入喷雾干燥塔的热风量,从而控制排风温度,使乳粉的含水量控制在一定范围内,进而提高了乳粉产品的质量和生产效率。  相似文献

Out of 208 samples of dairy products, 17.8% contained thermonuclease. Staphylococcal TNase (6-49 μg/100 mL or g) was detected in 14.4% samples that also contained TNase positive S. aureus and their enterotoxins. Enterotoxin A was recorded most frequently. Incidence of TNase was maximum (30.4%) in raw cow's milk followed by nonfat dry cow's milk (25.9%) and Kulfli (25.0%). The most frequent contaminants in the seven nonstaphylococcal TNase positive samples (6 – 16 μg per 100 mL org) were TNase-positive enterococci. TNase-positive B. cereus was recovered from a TNase-positive sweetened condensed milk sample. Unidentifiable TNase producing molds were detected in three TNase-positive samples.  相似文献

为探讨牛奶巧克力的TPA分析方法和测试条件,采用TA-XT2i物性测试仪,研究牛奶巧克力各向差异性和不同压缩量以及不同测试速率对结果的影响.试验结果表明,ANOVA分析结果表明巧克力内部同一测试面上质地是均匀的,但不同测试面、各小块间、各大块间都存在显著差异;压缩比对TPA各测试参数都有显著影响;巧克力TPA测试最佳条件:测试速率0.5mm/s,压缩比60%;巧克力脆性峰最佳测试条件为压缩比≥30.5%,测试速率0.5 mm/s.TPA方法可以用于巧克力质地的评价.  相似文献

Tests of 84 randomly numbered raw milk samples in five Market Administrator laboratories produced an overall mean difference in milk fat of .051% when Association of Official Analytical Chemists Babcock and ether extraction (with minor modifications) methods were collaboratively compared. Variance was equal for the two tests. Implications are discussed in view of current state regulations and applications of these tests as reference methods for calibrating fat testing instruments.  相似文献

Milk is a complete food containing high-quality protein, the only source of lactose, and an excellent source of calcium. Thus, milk is prone to adulteration and to combat this menace, in India, the government appoints food safety officers who carry out chemical examination of milk and milk products. Formalin is the only legally permitted preservative for milk and milk products, in India, meant for analytical purposes. Scientific reports suggest that formalin interferes in maintaining the compositional profile; since accuracy in analysis of milk components is very important, these changes can be problematic. The other preservatives that have been described in the literature include mercuric chloride, potassium dichromate, hydrogen peroxide, bronopol, and azidiol Most of these preservatives are bactericidal but either involve a health hazard or environmental hazard or are unsuitable for long-term storage. Hence, there is a need to uncover combinations of antibacterial agents and bacteriostatic antibiotics for preserving milk and milk products until analyzed.  相似文献

本研究对医院鼻饲病人的匀浆膳配方,加工工艺及消毒方法给予改进,使其配方营养均衡,基本符合中国营养学会推荐的每日膳食中营养素的供给量(RDA)标准,在医院现有的条件下,经过较为简单的加工并经过流通蒸汽加热消毒,制成颗粒细小,质地均匀,便于喂饲,合乎食品卫生要求,价格低廉的匀浆膳。可作为因中原因不能经口进食而消化功能基本正常的鼻饲病人长期的供给方式。  相似文献

The theory that consumption of homogenized milk containing active xanthine oxidase is a causative factor in development of atherosclerosis is reviewed. Biologically available xanthine oxidase in consumed milk products may be absorbed in the small intestine and enter the blood stream. However, there appears to be no unequivocal evidence that the absorbed enzyme has any pathological effects that may contribute to development of atherosclerotic heart disease.  相似文献
