通过四因素五水平二次正交旋转组合试验设计,探讨用于浸油的玉米胚挤压膨化预处理过程中的套筒温度、模孔孔径、物料含水率、螺杆转速等挤压系统参数对膨化物容重的影响规律.得到最佳挤压工艺参数:模孔直径Φ=6 mm,物料出口温度T=105 ℃,喂入物料水分含量W=7.5%,螺杆转速N=200 r/min,在此条件下得出膨化物容重的最优值为620.42 kg/m3. 相似文献

不同品种玉米挤压膨化特性研究 总被引:4,自引:2,他引:4
以黄淮海平原玉米主产区53个玉米品种为材料,以德国布拉本德食品仪器公司DSE-25型双螺杆挤压膨化实验室工作站为膨化设备,系统研究了不同玉米品种籽粒的挤压膨化特性。结果表明,在相同挤压膨化工艺条件下(水分为17%,五区温度180℃,螺杆转速120 r.m in-1,喂料速度16 r.m in-1),不同玉米品种籽粒挤压膨化物的产品特性差异较大,而挤压膨化时的系统参数差异较小。与夏玉米品种相比,春玉米品种籽粒挤压膨化物具有较高的径向膨化率、吸水性指数和产量以及较低的水溶性指数和机械能耗。玉米品种挤压膨化物的径向膨化率平均为1.53,容积密度为0.196g.mL-1,水溶性指数为38.44%、吸水性指数为430.00%,扭矩为151.33 N.m、四区压力为26.66bar、五区压力为10.77bar,产量为2.27 kg.h-1,机械能耗为841.4 W.h.kg-1。玉米籽粒的挤压膨化特性与其理化特性有关。 相似文献

以玉米糁为材料,采用DSE-25型双螺杆挤压膨化实验室工作站为加工设备,分析了加工温度和物料含水量对扭矩、压力、膨化率和产品含水量的影响。结果表明,在试验设计的加工温度和物料含水量范围内,加工温度和物料含水量对螺杆扭矩、第4区压力、第5区压力、产品膨化率和含水量都有极显著影响。加工温度对第4区压力影响较大;物料含水量对扭矩、第5区压力、产品膨化率和含水量影响较大。随着加工温度上升,物料含水量增加,扭矩、压力、产品膨化率降低;随着加工温度升高,物料含水量下降,产品含水量降低。 相似文献

Blends were developed to provide 20% protein, 12% fat, 68% carbohydrate and 8% moisture. High protein soy products (full fat flakes, protein isolate and/or concentrate) were formulated with corn meal and soybean oil to provide high protein and fat. The blends were extruded to provide pre-cooked foods that could be reconstituted at 40°C to a porridge or gruel, eliminating prolonged cooking or degradation of heat labile nutrients. Two types of soy isolate and concentrate were evaluated under extrusion temperatures from 100 to 130°C and feed moistures 8.5 to 18%. The extrusion of lower valued concentrates at 100 to 115°C with moisture from 12 to 18% produced a precooked mix that was high in nutrients and contained the most available lysine. 相似文献

The effects of a barrel-valve assembly on extrusion system dynamics and product properties with various screw speeds and specific feeding loads (SFL) were studied using an APV Baker twin-screw extruder. Turning the barrel-valve from the open to closed position resulted in a convex response of die pressure due to the axial offset of paired orifice plugs, with concomitant changes in system responses and extrudate properties. Variations in SFL by changing feed rate or screw speed caused more pronounced effects on product properties compared with barrel-valve control. 相似文献

以玉米籽粒为原料,以膨化度为指标,在单因素试验基础上,采用响应面分析法研究挤压工艺条件对玉米籽粒膨化特性的影响,并分析其主要理化特性.结果表明,回归方程能较好地预测玉米膨化度随挤压工艺参数变化的规律,玉米挤压膨化的最佳工艺条件为物料粒度60目,物料含水量24.5%,挤压温度164℃,转速400r/min,膨化度3.42%.玉米经挤压后还原糖、可溶性膳食纤维、吸水性指数、水溶性指数、糊化度分别提高361.54%、134.38%、80.20%、186.4%和794.12%,淀粉、不溶性膳食纤维分别降低26.03%和36.67%,蛋白质含量基本不变,玉米的理化特性得到有效改善. 相似文献

We investigated the use of electron spin resonance spectroscopy (ESR) and the spin labelled fatty acid, 16 doxylstearic acid (16-DSA) in the study of starch and protein modification during extrusion processing of corn starch (CS), corn meal (CM), and their blends with sunflower protein isolate (SPI). Spectra due to binding of the spin probe to starch and protein were identified. Changes in spectra after extrusion of all materials indicated that: (1) ~90% of the starch was modified (gelatinized); (2) The globular protein structure was disrupted. These changes demonstrate that spin probes and ESR spectroscopy may be used to study starch and protein modification during extrusion and other food processes. 相似文献

考察了不同加水量、机筒温度、螺杆转速对双螺杆挤出玉米粉质构特性的影响。试验结果表明,当加水量由10%增加到35%时,面团硬度增加了38.0%,而粘度和弹性分别下降了42.3%和66.8%。当温度由100℃增加到160℃时,面团硬度减少了19.5%,而粘度和弹性分别增加了92.9%和44.0%;温度由180℃增加到200℃时,硬度增加了41.0%,而粘度和弹性分别减少了34.8%和24.1%。当螺杆转速由180r/min增加到220r/min时,面团硬度和弹性分别增加了48.5%和7.7%,而粘度降低了58.1%;当螺杆转速由240r/min增加到280r/min时,面团硬度和弹性分别降低了24.2%和20.5%,粘度增加了215.8%。因此,双螺杆挤出对玉米粉质构特性有较大的影响。 相似文献
