Consumers’ concerns about the environment and health have led to the development of new food packaging materials avoiding petroleum-based matrices and synthetic additives. The present study has developed polylactic acid (PLA) films containing different concentrations of essential oil from Origanum vulgare L. virens (OEO). The effectiveness of this new active packaging was checked for use in ready-to-eat salads. A plasticising effect was observed when OEO was incorporated in PLA films. The rest of the mechanical and physical properties of developed films did not show much change when OEO was included in the film. An antioxidant effect was recorded only for films containing the highest percentages of the active agent (5% and 10%). In addition, films exhibited in vitro antibacterial activity against Staphylococcus aureus, Yersinia enterocolitica, Listeria monocytogenes, Enterococcus faecalis and Staphylococcus carnosus. Moreover, in ready-to-eat salads, antimicrobial activity was only observed against yeast and moulds, where 5% and 10% of OEO was the most effective.  相似文献

基于牛至精油具有较强的刺激性气味、白藜芦醇溶解性低,以及二者稳定性差的应用缺陷,构建以酪蛋白酸钠为乳化剂,菊粉和阿拉伯胶为稳定剂,牛至精油为油相并包埋白藜芦醇的乳液;以鼠伤寒沙门氏菌为目标微生物,探讨牛至精油、白藜芦醇、牛至精油-白藜芦醇及其乳液的抑菌效果,以及4,25℃储藏期间抑菌效果的变化,并在鲜切卷心菜中初步应用。结果表明:牛至精油和白藜芦醇对鼠伤寒沙门氏菌有很好的协同抑菌作用;2.0%菊粉/阿拉伯胶可以提高牛至精油-白藜芦醇的抑菌效果;乳液可降低二者的氧化降解速率并保护其生物活性,乳液4℃贮藏20d,25℃贮藏12d后仍有较好的抑制作用。接种鼠伤寒沙门氏菌的鲜切卷心菜在牛至精油-白藜芦醇及其酪蛋白酸钠、酪蛋白酸钠-菊粉/阿拉伯胶乳液中处理1min,8℃储藏4d后菌落数分别降低了1.52,2.04,2.67,2.98lg CFU/g。  相似文献

Antimicrobial active films based on polypropylene (PP) were prepared by incorporating thymol and carvacrol at three different concentrations: 4, 6 and 8 wt.% of both additives as well as an equimolar mixture of them. A complete thermal, structural, mechanical and functional characterization of all formulations was carried out. SEM micrographs showed certain porosity for films with high additives concentrations. A decrease in elastic modulus was obtained for the active formulations compared with neat PP. The presence of additives did not affect the thermal stability of PP samples, but decreased PP crystallinity and oxygen barrier properties. The presence of thymol and carvacrol also increased stabilization against thermo-oxidative degradation, with higher oxidation induction parameters. Finally, thymol showed higher inhibition against bacterial strain present in food compared with carvacrol, leading to higher antimicrobial activity. The obtained results proved the permanence of certain amounts of the studied additives in the polymer matrix after processing making them able to be used as active additives in PP formulations.  相似文献

The purpose of this work was to determine chemical composition and antioxidant activity of essential oil of different oregano species from Argentina: ‘Cordobes’, ‘Criollo’, ‘Mendocino’ and ‘Compacto’. The essential oil composition was determined by gas–liquid chromatography and mass spectrometry. Scavenging activity was analysed by DPPH test. The antioxidant activity of the essential oils was determined by an accelerated oxidation test in canola oil. Thirty‐nine compounds were identified in the oregano essential oils. The oregano species showed differences in their chemical composition, radical scavenging activity and antioxidant activity. The main compounds in the studied oregano species were thymol and trans‐sabinene hydrate followed by γ‐terpinene, terpinen‐4‐ol and α‐terpinene. The oregano, ‘Criollo’, was rich in γ‐terpinene and had lower thymol and trans‐sabinene hydrate and higher α‐terpinene and carvacrol contents than the other oregano species. ‘Mendocino’ had higher trans‐sabinene hydrate and limonene than the other oregano species. ‘Cordobes’ and ‘Compacto’ had higher thymol content, radical scavenging activity and antioxidant activity in canola oil.  相似文献

该文探讨植物精油和包装方式对冷鲜羊肉货架期及其品质的影响。研究采用2×2双因子试验设计,利用牛至精油和不同包装方式结合的保鲜方法研究羊肉在4℃下贮藏0、3、6、9、12 d的质构特性、肉色、pH、过氧化值(peroxide value,POV)、丙二醛(malondialdehyde,MDA)、挥发性盐基氮(total volatile base-nitrogen,TVB-N)及菌落总数(total bacteria count,TBC)的变化。结果表明,冷鲜羊肉贮存至第12天时,牛至精油与真空包装结合组中肉的红度(a*值)、硬度、弹性、回复性均极显著高于牛至精油和普通包装结合组(P <0. 01),且其黏附性、POV、MDA、TVB-N和TBC在第12天时均极显著低于牛至精油和普通包装结合组中冷鲜羊肉该指标(P <0. 01)。牛至精油与真空包装结合的保鲜方法可使冷鲜羊肉贮藏时间延长至12 d。  相似文献

The present study evaluated the effect of oregano essential oil (EO) on fresh salted, packaged (45%CO(2)/5%O(2)/50%N(2)) rainbow trout fillets and stored for a period of 21 d at 4 °C. Treatments included the following: M1 (control without added EO), M2 (EO 0.2%, v/w), and M3 (0.4%, v/w). Populations of lactic acid bacteria (LAB), H(2)S-producing bacteria (including Shewanella putrefaciens), Enterobacteriaceae, and Pseudomonas spp. reached higher final numbers in control (M1) than for M2 and M3 samples. Under treatments M2 and M3, total volatile basic nitrogen (TVBN) and trimethylamine nitrogen (TMAN) values were lower than for M1 samples, whereas lipid oxidation, as judged by determination of thiobarbituric acid values (TBA), did not occur during the refrigerated storage period. Interestingly, treatment M2 resulted in a shelf-life extension of 7 to 8 d for the fresh trout fillets, whereas treatment M3 proved unsuitable (due to strong odor) for trout fillet preservation, as determined by sensory evaluation. PRACTICAL APPLICATION: The use of an essential oil such as oregano oil in fresh fish preservation may be considered an alternative "natural" additive, enhancing the sensory characteristics and extending the shelf life of the product.  相似文献

Rosemary essential oil (REO) was used to develop an active film from chitosan. The effects of REO concentration (0.5, 1.0 and 1.5% v/v) on film properties were studied by measuring the physical, mechanical and optical properties of the REO‐loaded films. Scanning electron microscopy and Fourier transform infrared (FTIR) spectroscopy were used to study microstructure and the interaction of the chitosan‐based films. The solubility and water gain of the chitosan film decreased about 25% and 85%, respectively, by REO incorporation, up to 1.5% v/v, because of the interaction between hydrophilic groups of chitosan and REO as confirmed by FTIR. It was determined that REO improved the transparency of the films from 4.97 in neat chitosan up to 7.61; moreover, it reduced the films’ light transmission in UV light more than 25%. Films containing REO showed more antibacterial activity and total phenol content. The films containing REO showed potential to be used as active film in food preservation.  相似文献

Combined washing effect of noni extract (NE) and oregano essential oil (OE) on the decontamination of Listeria monocytogenes on romaine lettuce was examined. The fractional inhibitory concentration index (FICI) between NE and three different essential oils (cinnamon leaf, thyme and OE) was determined. Fractional inhibitory concentration index results indicated that OE only had an additive effect (FICI = 1). Noni extract/oregano essential oil combined washing resulted in the greatest reduction in viable cell numbers (3.42 log CFU g−1) relative to non-washed samples. Furthermore, the combined washing was more effective than sodium hypochlorite washing in terms of reducing the microbial load (>1.44-log reduction). Washing treatment did not change the surface colour or total phenolic content in lettuce samples. These results suggest that NE/OE combined washing is applicable as a novel decontamination treatment to ensure the microbial safety of romaine lettuce without changing the quality.  相似文献

Spices and herbal plant species have been recognized to possess a broad spectrum of active constituents that exhibit antimicrobial (AM) activity. These active compounds are produced as secondary metabolites associated with the volatile essential oil (EO) fraction of these plants. A wide range of AM agents derived from EOs have the potential to be used in AM packaging systems which is one of the promising forms of active packaging systems aimed at protecting food products from microbial contamination. Many studies have evaluated the AM activity of synthetic AM and/or natural AM agents incorporated into packaging materials and have demonstrated effective AM activity by controlling the growth of microorganisms. This review examines the more common synthetic and natural AM agents incorporated into or coated onto synthetic packaging films for AM packaging applications. The focus is on the widely studied herb varieties including basil, oregano, and thyme and their EOs.  相似文献

Antibacterial activity of soy protein edible films (SPEF) incorporated with 1, 2, 3, 4 and 5% oregano (OR) or thyme (TH) essential oils was evaluated against Escherichia coli, E. coli O157:H7, Staphylococcus aureus, Pseudomonas aeruginosa and Lactobacillus plantarum by the inhibition zone test. Effects of SPEF containing 5% OR and TH or a mixture of OR + TH (ORT) were also tested on fresh ground beef during refrigerated storage (at 4 °C). OR and TH incorporated SPEF exhibited similar antibacterial activity against all bacteria in inhibition zone test. While E. coli, E. coli O157:H7 and S. aureus were significantly inhibited by antimicrobial films, L. plantarum and P. aeruginosa appeared to be the more resistant bacteria. SPEF with OR, ORT, and TH did not have significant effects on total viable counts, lactic acid bacteria and Staphylococcus spp. when applied on ground beef patties whereas reductions (p < 0.05) in coliform and Pseudomonas spp. counts were observed.  相似文献

Fish oil is an excellent source of omega-3 fatty acids and is easily susceptible to oxidation. Microencapsulation is a commonly employed technique to protect fish oil against oxidation. In the present study, the potential of chitosan in combination with bovine gelatin and maltodextrin as wall material for microencapsulation of fish oil by spray drying was evaluated. To improve the oxidative stability of the fish oil microencapsulates, oregano (Origanum vulgare L) extract was added at 0.50 g/100 g of emulsion. The spray-dried powder showed a moisture content of 2.8 – 3.2 g/100 g of spray-dried powder. The powder contained spherical microparticles with different sizes as indicated by scanning electron microscope images. Encapsulation efficiency of microencapsulates ranged between 68.94% and 81.88%. Differential scanning calorimetry and Fourier-transformed infrared spectroscopy analysis of microencapsulates revealed the possible structural stabilization of core and wall material. The oxidative stability of fish oil microencapsulates were monitored under three different temperature (60°C, 28 ± 2°C, and 4°C). Incorporation of oregano extract minimized the generation of secondary and tertiary oxidation products as indicated by lower peroxide value and thiobarbituric acid reactive substance values compared to control. Overall, the results suggested that combination of chitosan along with bovine gelatin and maltodextrin as wall material improved the surface morphology of the microparticle and encapsulation efficiency, whereas incorporation of oregano extract in fish oil before spray drying enhanced the oxidative stability during storage.  相似文献

Biodegradable coatings based on 1% and 2% sodium alginate (NaAlg) with and without grapefruit seed extract (GSE) or grapefruit essential oil (GEO) were applied to table grapes to preserve their quality. Changes in weight loss, firmness and antioxidant activity were assessed over 15 days of cold storage. The effectiveness of developed coatings to control postharvest decay of inoculated grape berries stored for 5 days at 20 °C was also investigated. Biodegradable coatings based on pure NaAlg and those containing GSE were efficient in reducing weight loss and maintaining firmness during storage. Coatings incorporating either GEO or GSE were able to preserve the antioxidant activity of treated grapes and to reduce decay incidence in inoculated fruits. Coatings formulated with 2% NaAlg‐1% GSE showed the greatest preservation of antioxidant activity and the highest antifungal effect, with an effective control of water and firmness losses. These coatings can be recommended for maintaining table grapes quality.  相似文献

In this study, skate skin gelatin (SSG) was used as a new biodegradable film source and a SSG film was prepared. In addition, thyme essential oil (TEO) was incorporated in the SSG film as an antimicrobial agent for the preparation of an antimicrobial film. The tensile strength (TS) of the film decreased, whereas elongation at break (E) increased by the addition of TEO. The SSG film containing TEO showed increased antimicrobial activity against Listeria monocytogenes and Escherichia coli O157:H7 as TEO concentration increased. To apply the SSG film to food packaging, chicken tenderloin samples were wrapped with the film containing 1% TEO. The packaging of chicken tenderloin with the TEO‐containing SSG film inhibited the growth of L. monocytogenes and E. coli O157:H7 compared to the control during storage. Therefore, the SSG film with added TEO has potential as active food packaging to extend the shelf life of chicken tenderloin.  相似文献

The combined effect of oregano essential oil (0.1% and 1% w/w) and modified atmosphere packaging (MAP) (30% CO2/70% N2 and 70% CO2/30% N2) on shelf-life extension of fresh chicken meat stored at 4 degrees C was investigated. The parameters that were monitored were: microbiological (TVC, Pseudomonas spp., lactic acid bacteria (LAB), yeasts, Brochothrix thermosphacta and Enterobacteriaceae), physico-chemical (pH, TBA, color) and sensory (odor and taste) attributes. Microbial populations were reduced by 1-5 log cfu/g for a given sampling day, with the more pronounced effect being achieved by the combination of MAP and oregano essential oil. TBA values for all treatments remained lower than 1 mg malondialdehyde (MDA) kg(-1) throughout the 25-day storage period. pH values varied between 6.4 (day 0) and 5.9 (day 25). The values of the color parameters L*, a* and b* were not considerably affected by oregano oil or by MAP. Finally, sensory analysis showed that oregano oil at a concentration of 1% imparted a very strong taste to the product for which reason these lots of samples were not scored. On the basis of sensory evaluation a shelf-life extension of breast chicken meat by ca. 3-4 days for samples containing 0.1% oregano oil, 2-3 days for samples under MAP and 5-6 days for samples under MAP containing 0.1% of oregano oil was attained. Thus oregano oil and MAP exhibited an additive preservation effect.  相似文献

Significant interest has emerged in the introduction of food packaging materials manufactured from biodegradable polymers that have the potential to reduce the environmental impacts associated with conventional packaging materials. Current technologies in active packaging enable effective antimicrobial (AM) packaging films to be prepared from biodegradable materials that have been modified and/or blended with different compatible materials and/or plasticisers. A wide range of AM films prepared from modified biodegradable materials have the potential to be used for packaging of various food products. This review examines biodegradable polymers derived from polysaccharides and protein-based materials for their potential use in packaging systems designed for the protection of food products from microbial contamination. A comprehensive table that systematically analyses and categorizes much of the current literature in this area is included in the review.  相似文献
