为提高澳芒的真空预冷及保鲜效果,以失重率为评价指标,在单因素的基础上,通过正交实验,优化真空预冷澳芒工艺;从感官评分、失重率、还原糖、蛋白质、V_C、损耗率、贮藏期变化七个方面,探讨真空预冷后,冷库贮藏(T=6℃,RH=65%)期间,澳芒的品质变化规律。结果表明:真空预冷澳芒的最佳工艺条件为预冷终温6℃,补水量5%(m/m),装料密度40 kg/m~3。真空预冷对澳芒后续贮藏过程中品质保持具有积极的作用,能够有效抑制澳芒贮藏过程中感官品质的下降,减缓还原糖、蛋白质、V_C含量的降低,抑制澳芒失重率、损耗率的增加,延长贮藏期。真空预冷后,结合冷库贮藏,可延长澳芒的贮藏期至30 d以上(相较25℃贮藏)。因此,真空预冷可作为澳芒保鲜一个较好的前处理方法。 相似文献

Feasibility assessment of vacuum cooling followed by immersion vacuum cooling on water-cooked pork 总被引:1,自引:0,他引:1
Vacuum cooling followed by immersion vacuum cooling was designed to cool water-cooked pork (1.5 ± 0.05 kg) compared with air blast cooling (4 ± 0.5 °C, 2 m/s), vacuum cooling (10 mbar) and immersion vacuum cooling. This combined cooling method was: vacuum cooling to an intermediate temperature of 25 °C and then immersion vacuum cooling with water of 10 °C to the final temperature of 10 °C. It was found that the cooling loss of this combined cooling method was significantly lower (P < 0.05) than those of air blast cooling and vacuum cooling. This combined cooling was faster (P < 0.05) than air blast cooling and immersion vacuum cooling in terms of cooling rate. Moreover, the pork cooled by combined cooling method had significant differences (P < 0.05) in water content, color and shear force. 相似文献

Influence of the vacuum break conditions on oil uptake during potato post-frying cooling 总被引:1,自引:0,他引:1
Reduced pressure frying is an alternative to conventional frying that enables products to be obtained at lower processing temperatures with lower fat content. The oil uptake in frying mainly occurs during the subsequent cooling stage. With vacuum frying, this stage necessarily includes a period of vacuum break when the system recovers the initial pressure. The different conditions under which this pressurisation occurs can influence the final oil content of the product. To study this effect, potatoes of the “Monalisa” variety, with different geometries, were fried at 140 °C and moderate vacuum (24.9 kPa). Various combinations of draining times (30, 60, and 90 s) and vacuum break velocity, VBV (0.75, 2.21, 4.43 and 12.43 kPa s−1), were tested for this stage, and the final oil content of the product determined by comparison with the dry weight. The results showed that both parameters have a significant influence (α < 0.05) on oil uptake. A short draining time and a low vacuum break velocity result in greater final fat content. There is a linear relationship between the oil uptake and the inverse of VBV, following the Washburn equation. The influence of VBV is such that differences of up to 70% in the final fat content can be obtained in the range tested. 相似文献

为了提高生菜的真空预冷及保鲜效果,采用不预冷+25℃贮藏、不预冷+6℃贮藏、真空喷水预冷+6℃贮藏以及真空喷CaCl2溶液+6℃贮藏4种方式,从感官品质、失重率、叶绿素含量及维生素C含量四个方面研究了不同预冷和贮藏方式对采后新鲜生菜品质的影响。结果表明:生菜采收后,感官品质、叶绿素和维生素C含量均随贮藏时间的延长而下降,失重率上升。真空预冷前喷洒0.5%浓度的CaCl2溶液+6℃贮藏的方法既能补充真空预冷过程中的水分损失,又能延长生菜的贮藏期,减缓生菜的失重率增长、叶绿素和维生素C含量的降低,是一种能将快速预冷和保鲜贮藏结合起来,且省时有效的好方法,为探寻预冷保鲜的新途径提供了理论依据。 相似文献

采用压盖导流通风降温技术储藏稻谷,研究稻谷储藏期间水分含量、黄粒米含量、脂肪酸值、品尝评分值、出糙率和整精米率的变化。结果表明:相比于常规储藏,采用压盖导流通风降温技术可减少水分损失0.5%;黄粒米含量维持在0.1%左右,比对照仓低0.8%;脂肪酸值为19.2mg KOH/100g,比对照仓低7.6mg KOH/100g;品尝评分值为79分,比对照仓高7分;出糙率和整精米率分别为77.2%和55.2%,比对照仓高5.7%和8.1%。说明采用压盖导流通风降温技术能够充分利用粮堆"冷心",使稻谷全年处于低温或准低温储藏状态,符合基本无虫粮要求,实现了免熏蒸绿色储藏。 相似文献
