将全脂大豆粉和脱脂大豆粉添加到小麦粉中,研究其对精制级面包粉和普通级面包粉烘焙品质的影响.结果表明,在两种面包粉中添加大豆粉后,当全脂大豆粉质量分数不高于2%、脱脂大豆粉质量分数不高于3%时,面包体积和比容有所增加,添加量进一步增大时面包体积和面包比容反而下降;随着添加量的增加,全脂大豆粉和脱脂大豆粉使两种面包粉的面包质量增加;当大豆粉质量分数不超过3%时,两种大豆粉均对两种面包粉的面包综合品质有改良作用,添加量进一步增大反而使面包品质劣变.  相似文献

分别用小麦麸皮和全脂大豆粉替代小麦粉进行面包制作,研究小麦麸皮和全脂大豆粉的添加对面包中蛋白质、各种氨基酸(AA)等营养成分,风味物质组成及含量的影响,结果表明:在小麦粉中添加小麦麸皮和全脂大豆粉,引起面包中的蛋白质含量、粗纤维含量以及部分氨基酸水平明显增加,达到了营养强化的作用;小麦麸皮面包中共检出风味物质87种,总含量减少了11.36%,但主要香气物质的增加使麸皮面包更具浓郁的香味;全脂大豆粉面包中共检出风味物质89种,总含量增加了9.89%,且几乎所有影响风味的物质含量都有不同程度的增加。  相似文献

全营养面包     
本发明涉及一种全营养面包,由小麦粉50%~80%、大豆粉20%~30%、燕麦粉20%~35%、钙粉3%~8%、维生素(A、B、C、D、E)0.5%~1%、硫酸亚铁、硫酸锌及其它辅料制成,该面包的制作方法是:将小麦粉与去皮后粉碎的大豆粉(全脂或脱脂)及燕麦粉混合搅拌均匀,加入水,调成粘稠、稀软的面团,边搅拌边加入维生素、硫酸亚铁、硫酸锌及发酵粉、糖、盐;将混合好的面团放入烘烤模具中.烘烤至熟.包装成品。  相似文献

制备全脂大豆(S),85%全脂大豆 15%鸡蛋(85S),75%全脂大豆 25%鸡旦(75s)三种粉剂,并以10%,20%与30%的量取代化学起发的快速面包的面粉。这些面包的硫胺素含量与对照组相比,随着掺代量的不同而有显著的差异。从快速面包的感官鉴定表明:S,85S与75S的取代物的掺代量最多可以加到30%,虽然随着增加大豆粉用量而评比得分减少,产品仍可达到满意的效果。  相似文献

以面包专用粉为主要原料,添加大豆粉、酵母、面包改良剂、白砂糖等辅料,采用一次发酵工艺生产面包。以感官评价为指标,通过单因素试验和正交试验,确定最佳的工艺参数为:面包专用粉100g,大豆粉添加量为4g,面包改良剂量0.2g,酵母添加量1.8g。该工艺参数下制作的面包内部组织柔软细腻,纹理结构好,香味浓郁,蛋白质含量由11%提高到14%,强化了面包中蛋白质营养,其品质优于普通面包。  相似文献

全脂膨化大豆粉的生产中对大豆的膨化可分为干法膨化和湿法膨化。介绍了干法膨化和湿法膨化生产的大豆粉质量的区别。详细介绍了湿法膨化生产全脂膨化大豆粉工艺,及全脂膨化大豆粉的地区(企业)产品质量验收标准,并进行了投资效益分析。对湿法膨化生产的全脂膨化大豆粉进行营养成分测定,结果为全脂膨化大豆粉中粗蛋白质含量35.2%,含油17.1%,粗纤维5.2%,粗灰分5.7%,含钙0.32%,总磷含量0.4%,各项指标符合地区(企业)对产品的要求。采用湿法膨化生产的全脂膨化大豆粉是一种很好的饲料配料。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
