BACKGROUND: There is a need for information on the performance and carcass quality of pigs under different organic management systems. This study compared Duroc‐sired progeny from three maternal breed types when kept either at pasture or in housing with an outdoor run and offered ad libitum concentrate either alone or with fodder beet or grass/clover silage as additional forage. RESULTS: Liveweight gain, feed intake and the proportion of forages consumed did not differ between genotypes. Carcass fatness of progeny was lowest for a ‘modern’ genotype (Camborough 12) and highest for a ‘traditional’ purebred genotype (Saddleback), with a ‘crossbred traditional’ genotype (Saddleback × Duroc) being intermediate (11.4, 14.3 and 13.4 mm P2 respectively, standard error of mean (SEM) 0.27, P < 0.001). With a cereal‐based concentrate available ad libitum, intake of forages was low (<2% of dry matter intake). Although growth rate did not differ between housing systems, daily feed intake was greater at pasture (2.47 vs 2.22 kg meal equivalent, SEM 0.05, P < 0.001), giving poorer feed efficiency (P < 0.01). Pastured animals consumed less additional forage and had a higher killing‐out % but similar carcass fatness. CONCLUSION: For organic pig production to be financially sustainable, disadvantages arising from the genotype and/or rearing system chosen need to be offset by a market premium for the pigs produced. We investigated the contents in yolk and albumen of the trace minerals Se, Zn, Mn, Co, Cu, Mo, V, Cr, Ni, Tl, As and Cd in eggs from hens from three husbandry systems by ICP-MS. Conventional hens were given a commercial feed with added minerals, organic hens were given a feed based on organic feedstuffs also with added minerals, and courtyard hens were fed on cereals, legumes, grass and swill. Dietary Se, Zn, Mn, Co and Cu concentrations were lower in courtyard compared to conventional and organic diets; Cr concentration was highest in courtyard compared to organic diet. Trace element contents in yolks were higher than those in albumen. The highest content of Se in yolks was in organic, followed by conventional eggs. Zn contents were highest in courtyard yolk, followed by conventional, which in turn was higher than organic. Mn yolk contents were lowest in courtyard eggs; Cr contents were highest in courtyard eggs. The differences in albumen were in Zn and Cr values, which were highest in courtyard eggs. Τhe results provide baseline measurements of trace mineral contents of eggs and suggest measurable differences amongst eggs from hens in different husbandry systems; the physiological significance of these differences are discussed.  相似文献

The aim of this study was to investigate the effect of diets supplemented with fish oil, flaxseed, and chia seed on the omega‐3 fatty acid composition and sensory properties of hens’ eggs. No significant difference in yolk fat content was found between treatments. The fatty acid composition of egg yolk was significantly affected by the dietary treatments. Inclusion of chia at 300 g/kg into the diet produced eggs with the highest concentration of omega‐3 fatty acid. Eicosapentaenoic acid and docosahexaenoic acid were only detected in eggs from laying hens fed the diet supplemented with fish oil. Diet had a significant effect on color, flavor and overall acceptability of eggs. Types and levels of omega‐3 fatty acids in feed influence the level of yolk omega‐3 fatty acids in egg yolk. Inclusion of chia into the hens’ diet significantly increased the concentration of yolk omega‐3 fatty acid without significant change in sensory properties.  相似文献

Ribeye steaks (Longissimus muscle) and ground beef from 15 Angus or Angus × Hereford steers slaughtered at weights of 480–500 kg were evaluated for proximate composition, color, β-carotene content and consumer preference. Three groups of five animals were finished on annual ryegrass pasture (Lolium multiflorum), ryegrass and ‘Coastal’ bermu-dagrass hay (Cynodon hybrid), or a feedlot diet.β-carotene content of ribeye steaks and ground beef was higher (p < 0.05) for the forage finished animals than those finished in the feedlot. There was no difference in scores from consumer panels (n = 80) for steaks from feedlot or pasture finished animals, but scores for ground beef from cattle finished on the feedlot diet were higher than other treatments (p < 0.05).  相似文献

BACKGROUND: The use of antibiotic growth promoters in animal feeds is not approved for laying hens in many countries, and economically feasible biological measures which include probiotics are developed to improve hen performance. The present study investigated the effects of probiotics on hen performance for a 48‐week period and the cholesterol, total lipid and fatty acid composition of egg yolk at 24, 28 and 32 weeks of age. RESULTS: Egg weight of Lactobacillus culture (LC)‐fed hens was significantly (P < 0.05) greater than that of control hens throughout the laying period. From 20 to 44 weeks of age, LC‐fed hens produced a significantly (P < 0.05) lower percentage of small eggs and a higher percentage of large eggs, and from 45 to 68 weeks of age a significantly (P < 0.05) lower percentage of medium eggs and a higher percentage of large and extra‐large eggs than control hens. Significantly (P < 0.05) less cholesterol was found in egg yolks of hens fed LC at 24 and 28 weeks of age, but not at 32 weeks of age. The total lipid content and the fatty acid composition of egg yolks were similar between the treatments at 24, 28 and 32 weeks of age, except for stearic acid (C18 : 0), which was significantly reduced in the egg yolk of LC‐fed hens at 28–32 weeks of age. CONCLUSION: The greatest benefit of LC was in increasing egg weight and improving egg size by influencing a shift from small and medium to large and extra‐large eggs. Deposition of carotenoids in saponified paprika (SP) and unsaponified oleoresin paprika (OP) in egg yolks as well as the dietary level for desired pigmentation were evaluated. Sixty-four hens on a carotenoid-depletion diet were divided into two replicated groups of each of eight dietary treatments containing from 0 to 16 mg paprika carotenoids per kg feed. Colour and the carotenoid content of egg yolk increased linearly ( P< 0·01) with the amounts of paprika carotenoids in the diets. The colours of egg yolks from hens fed similar concentra-tions of OP or SP were not significantly different ( P< 0·01). A low dose (4 mg kg−1) of OP or SP provided yolk colour equivalent to the colour of eggs in supermarkets. High-performance liquid chromatographic analyses showed that carotenoids deposited in the yolk are in the free alcohol form, regardless of the form of carotenoids in the diet. Capsanthin, the predominant carotenoid in paprika, was deposited in egg yolk less efficiently than zeaxanthin and lutein.  相似文献

Hempseed (HS) is rich in omega-3 polyunsaturated fatty acids, with approximately 17% of total fatty acids as alpha-linolenic acid. As such, HS and its oil may be used in hen diet formulations to produce eggs enriched in essential fatty acids. Because omega-3 eggs have the potential for unpleasant aromas and flavors, the current study was designed to assess the fatty acid profile and sensory attributes of eggs procured from hens consuming diets containing hempseed oil (HO) or HS. A total of 48 individually caged White Bovan hens received 1 of 6 diets containing 4%, 8%, 12% HO, 10%, 20% HS or 0% hemp (w/w) for 12 wk. Total omega-3 polyunsaturated fatty acid content was highest in the 12% HO group (15.3 mg/g of yolk) compared to the control (2.4 mg/g of yolk). Trained panellists (n= 8) found no significant differences (P≥ 0.05) in aroma or flavor between cooked eggs from different dietary treatments, with the exception of sweet flavor. The 4% HO group yielded the least sweet eggs compared to the 20% HS group, which was highest. For yolk color, L*, a*, and b* values (Mean ± SEM) for control eggs were 61.2 ± 0.10, 1.1 ± 0.05, and 43.0 ± 0.22, respectively. Addition of hemp led to significant (P < 0.001) reductions in L*, and significant increases in a* and b*, with the largest changes observed in the 20% HS treatment (L*= 58.7 ± 0.10; a*= 5.8 ± 0.05; b*= 60.5 ± 0.22). The results show that hemp use in hen diets leads to increased omega-3 polyunsaturated fatty acid content and color intensity of egg yolks, but does not have adverse effects on the sensory profiles of the cooked eggs. PRACTICAL APPLICATION: This study provides evidence that HS and hempseed oil (HO) can safely be utilized as feed ingredients for laying hens to produce table eggs that are enriched in essential fatty acids. Additionally, the eggs procured from these hens had similar aroma and flavor compared to eggs from hens not fed any hemp. The greater the dietary hemp inclusion, the more pigmented the resulting yolks became in terms of darkness, redness, and yellowness.  相似文献

Despite eggs having a natural packaging—shell—they are perishable and can lose their quality during storage. Chitosan‐based coatings were applied to shell eggs to examine potential effects on egg quality properties (weight loss, Haugh unit, yolk index) during 4 weeks of storage. Mineral amounts in yolks were also evaluated after 4 weeks of storage. Three chitosan‐based coatings produced with organic acids (acetic‐(C‐AA), lactic‐(C‐LA), and propionic (C‐PA)) were evaluated on shelf‐life enhancements of fresh egg quality. All chitosan‐coated eggs showed greater interior quality than the non‐coated eggs. The coatings significantly maintained weight loss compared to the control specimen (4.96%). Lower weight loss (3.45% for C‐PA, 3.53% for C‐LA) was observed in the coated eggs. Eggshell chitosan coat containing lactic and propionic acids maintained higher Haugh unit and yolk index than eggs coated with acetic acid. Uncoated (UC) eggs changed from grade ‘A’ to ‘B’ after 1 week of storage. Chitosan‐based coating containing lactic and propionic acids maintained eggs in grade ‘A’ for 4 weeks. Haugh unit showed that C‐LA and C‐PA effectively maintained eggs at grade ‘A’ quality for at least 3 weeks more than control and 1 week more than C‐AA. Results also indicated that the chitosan coating maintained mineral amounts at nutritional values (especially calcium, iron and magnesium concentration) in yolks after 4 weeks storage. The objective of the current study was to examine the effect of fibrous pulp and partial substitution of soybean meal with green protein concentrate from biorefining of grass–clover on dry matter intake, milk production, digestibility, and eating behavior in dairy cows compared with untreated grass–clover silage and soybean meal. Biorefining of grass–clover occurred right after harvest in a production-scale twin-screw press. The twin-screw pressing separated the grass–clover into a pulp and a green juice. The green juice was fermented using lactic acid bacteria for protein precipitation and then decanted, and the precipitate was heat dried to constitute the green protein concentrate. From the same field, grass–clover was harvested 6 d later due to rainy weather and was prewilted before ensiling. The pulp and the grass–clover were ensiled in bales without additives. The production trial consisted of an incomplete 6 × 4 Latin square trial (3-wk periods; 12 wk total) including 36 lactating Holstein cows. The trial had 6 treatments in a 2 × 3 factorial design with 2 forage types (grass–clover silage and pulp silage) and 3 protein treatments (low protein, high protein with soybean meal, and high protein with a mixture of soybean meal and green protein). The trial was designed to test silage type, protein type, protein level, and the interaction between protein level and silage type. The forage:concentrate ratio was 55:45 in low protein total mixed rations (TMR) and 51:49 in high protein TMR. Low protein and high protein TMR were composed of 372 and 342 g/kg of DM of experimental silages, respectively, and green protein supplemented TMR was composed of 28.5 g/kg of DM of green protein. Silage type did not affect dry matter intake of cows. The average energy-corrected milk yield was 37.0 and 33.4 kg/d for cows fed pulp silage and grass–clover silage, respectively, resulting in an improved feed efficiency in the cows receiving pulp silage. Milk fat concentration was greater in milk from cows fed pulp silage, and milk protein concentration was lower compared with milk from cows fed grass–clover silage. The in vivo digestibility of crude protein and neutral detergent fiber was greater for pulp silage diets compared with grass–clover silage diets. Eating rate was greater, whereas daily eating duration was lower, for pulp silage diets compared with grass–clover silage diets. The partial substitution of soybean meal with green protein did not affect dry matter intake, milk yield, or eating behavior. The in vivo digestibility of crude protein in green protein supplemented diets was lower compared with soybean meal diets. The results imply that extraction of protein from grassland plants can increase the value of the fiber part of grassland plants.  相似文献

Laying hens were fed contaminated feed containing narasin 2.5 mg/kg for 21 days followed by a 7 day withdrawal period, hens in the control group were fed unmedicated feed. Eggs were collected during trial days 0, 3, 7, 14, 21 and after the withdrawal period of 7 days. The concentration of narasin in yolks and egg whites was analyzed by a liquid chromatography-mass spectrometry method. Narasin was found to accumulate in yolks, where the narasin concentration increased during the treatment. The concentration of narasin varied from 5.9 to 13.8 microg/kg (mean 10.6 microg/kg) in yolks after 21 day feeding periods. The concentrations of narasin ranged from < 0.9 to 1.4 microg/kg after the withdrawal period. Narasin residues were not found in egg whites of the laying hens fed contaminated feed nor in either yolks or egg whites of the laying hens fed unmedicated feed. The effect of cooking was also tested on the amount of narasin residues in eggs. Cooking for 10 min did not significantly influence the narasin residues in eggs. Traces of lasalocid were also found in the yolks. The traces of lasalocid are attributable to an accidental contamination of the feed during its manufacture.  相似文献

BACKGROUND: This aim of this study was to investigate the effects of supplementing laying hen diets with different n‐3 fatty acid sources (linseed oil, fish oil and microalgae) on egg quality and fatty acid profile. The addition of inorganic selenium (Se) and iodine (I) and their effects on egg characteristics and Se concentration were also evaluated. RESULTS: A significantly lower egg weight was found in the control group and in groups fed a diet containing fish oil or a diet containing microalgae plus Se and I. Yolks from all supplemented diet groups exhibited a significant reduction in n‐6 fatty acid content compared with the control group. The docosahexaenoic acid (DHA) content of yolks was higher (P < 0.01) in all supplemented diet groups. Selenium supplementation increased the Se concentration (P < 0.001) in eggs. CONCLUSION: The results of this study provide evidence that an improvement in egg weight and in the DHA content of yolks can be achieved by feeding hens a microalgae‐rich diet, which avoids the unpleasant flavours associated with fish oil supplementation. BACKGROUND: Breast meat from broilers produced in very different production systems may vary considerable in sensory profile, which may affect consumer interests. In this study the aim was to evaluate differences in the sensory profiles of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40 and K8) reared in an apple orchard. RESULTS: Thirteen out of 22 sensory attributes differed significantly between the products. The aroma attributes ‘chicken’, ‘bouillon’ and ‘fat’ scored highest and the ‘iron/liver’ aroma lowest for the niche products. The meat was more ‘tender’, ‘short’ and ‘crumbly’ and less ‘hard’ and ‘stringy’ in the standard products than in one or more of the niche products. Product ‘I 657’ was less ‘juicy’ than the rest. Products ‘I 657’ and ‘L 40’ were more ‘cohesive’ and tasted more ‘sourish’ and less of ‘sweet/maize’ than the standard products. The ‘overall liking’ score was significantly higher for the ‘K 8’ product than for the ‘Standard A’ and ‘L 40’ products. The ‘overall liking’ score was significantly correlated with the scores for aroma and taste of ‘chicken’, ‘umami/bouillon’, ‘iron/liver’ and ‘fat’ aroma. CONCLUSION: The sensory profiles differed particularly between conventional standard broilers and organic niche broilers, although differences were also found between breeds. The present study indicates that aroma and taste attributes were more important for the assessors than meat ‘tenderness’ for the overall liking of broiler meat. The present study was conducted to evaluate the ability of horse fat produced in Uruguay, compared with other lipid sources supplemented in the diet of laying hens, to modify the lipid composition and the n − 6/n − 3 fatty acid ratio of the produced eggs. For this purpose, 60 laying hens (Gallus domesticus) were fed for 30 days with five experimental diets (12 hens/diet) containing 3% sunflower oil (SO), rice oil (RO), beef tallow (BT), pressed-fat (PF), obtained by pressing fat from bovine viscera, and horse fat (HF) obtained from horse bone medulla. Throughout the trial, feeding rate, shell index, weight and total lipid contents of eggs, were not affected by the different diets. Feeding on the SO and RO diets significantly increased the amount of linoleic acid of the egg, although it was lower in the RO than in the SO eggs. Diet BT did not affect the saturated fatty acid content of the yolks. The diets with animal fats containing 18:3n − 3 (diets PF and HF), resulted in a significant increase in the n − 3 fatty acid contents of the eggs, through an increase of linolenic (18:3n − 3) and docosahexaenoic acid (DHA, 22:6n − 3) contents. Eggs from hens fed the HF diet showed increased linolenic acid (46 mg/yolk) and DHA (71 mg/yolk, 1.7% of total fatty acids) contents. These levels were obtained after two weeks of feeding. Moreover, the fatty acid profiles of eggs from treatment HF were not significantly affected by thermal treatment of the yolks. In conclusion, the fat from horse bone medulla, as produced in Uruguay, can be considered as a suitable lipid source for diets of laying hens, to modify the nutritional composition of the eggs in n − 3 PUFA content, especially DHA, and consequently, the n − 6/n − 3 fatty acid ratio.  相似文献

Incorporation of palm oil (PO) increased the α-and γ-tocotrienol content of eggs, liver, meat and adipose tissue. Total tocotrienols were higher in eggs, liver and adipose tissue of hens fed 1.5% PO than those fed 3.5% PO. An increase in retinol was observed in the eggs, liver and dark meat of hens fed PO diet. Feeding diets containing 1.5 or 3.5% PO increased the α-and β- carotenes in eggs and liver tissue. However, carotenoids were not detected in white meat, dark meat or adipose tissue. Dark meat incorporated higher levels of tocopherols and retinol than white meat. The diets had no effect on egg or yolk weight. Egg yolks from hens fed PO had higher yolk color than those without PO. Addition of tocopherol mix in the control diet increased total tocopherol content in all tissues.  相似文献

Milk production of fall-calving dairy cows during subsequent summer grazing was evaluated in two consecutive years using a total of 80 mid- to late-lactation Holsteins. Cows calved during September and October and grazed from April to August in the following year. In yr 1, 27 cows grazed a native grass pasture and 13 cows grazed a native grass-clover mixed pasture containing 26% red clover and white clover. In yr 2, 40 cows grazed native grass pasture as one group. Also, cows in yr 2 were administered bovine somatotropin, whereas in yr 1, no bST was used. Grazing cows also were fed concentrate supplements at 6.2 kg/d of dry matter (DM) in yr 1 and 7.9 kg/d of DM in yr 2 to provide 35 to 40% of total intake. Average daily milk during the grazing period decreased 3.6 kg in yr 1 and 7.7 kg in yr 2 when compared with milk yield extrapolated from the lactation curve established 10 wk before being turned out to pasture. Estimated DM intake during grazing was also less than what would have been expected had cows continued on a total mixed ration in confinement. Cows grazing the mixed pasture of grass and clover yielded 1.3 kg/d more milk than those grazing the grass pasture in yr 1. A decrease in milk resulting from the change from total mixed ration fed in confinement to grazing supplemented with concentrates was not avoided with these mid- to late-lactation cows, but the cumulative loss over the lactation was less than with early lactation cows in a companion study. Clover enhances the grazing value of pasture when grown with grasses.  相似文献

Twenty-four multiparous Holstein-Friesian dairy cows were used in a replicated 4 × 4 Latin square changeover design experiment to test the effects of changing from ryegrass (Lolium perenne) silage to red clover (Trifolium pratense) silage in graded proportions on feed intakes, milk production, milk organoleptic qualities, and whole-body nitrogen partitioning. Four dietary treatments, comprising ad libitum access to 1 of 4 forage mixtures plus a standard allowance of 4 kg/d dairy concentrates, were offered. The 4 forage mixtures were, on a dry matter (DM) basis: 1) 100% grass silage, 2) 66% grass silage: 34% red clover silage, 3) 34% grass silage: 66% red clover silage, and 4) 100% red clover silage. In each of 4 experimental periods, there were 21 d for adaptation to diets and 7 d for measurements. There was an increase in both DM intakes and milk yields as the proportion of red clover in the diet increased. However, the increase in milk yield was not as great as the increase in DM intake, so that the efficiency of milk production, in terms of yield (kg) of milk per kg of DM intake, decreased. The concentrations of protein, milk fat, and the shorter chain saturated fatty acids decreased, whereas C18 polyunsaturated fatty acids (PUFA) and long-chain PUFA (C20+) increased as the proportion of red clover in the diet increased. There was little effect of dietary treatment on the organoleptic qualities of milk as assessed by taste panel analysis. There were no effects on the aroma of milk, on aftertaste, or overall liking of the milk. Milk was thicker and creamier in color when cows were fed grass silage compared with red clover silage. The flavor of milk was largely unaffected by dietary treatment. In conclusion, increasing the proportion of red clover in the diet of dairy cows increased feed intakes and milk yields, decreased the concentration of fat and protein in milk, increased PUFA for healthiness, and had little effect on milk organoleptic characteristics.  相似文献

The meat quality of 8-9-month-old cryptorchid, wether and ewe lambs (Poll Dorset×Border Leicester×Merino) was assessed. These lambs were grazed over summer and autumn from weaning (November) on lucerne (Medicago sativa) or ryegrass/clover (Lolium rigidum/trifolium subterranean) pasture at two locations (A or B). After 72 days lambs grazed on lucerne were supplemented with either ad lib clover hay or clover silage. Those grazed on the ryegrass/clover pasture were supplemented from weaning with either oat grain (400-600 g/h day and clover hay ad lib) or oat grain (200-400 g/h day) plus sunflower seed meal (200 g/h day) and clover hay ad lib. Lambs were slaughtered in April and May after they reached 48 kg liveweight. Lambs supplemented solely with roughage produced muscle (m. longissimus thoracis et lumborum; LTL) with a higher (P<0.05) pH, but there was no effect of nutrition or sex on meat colour or tenderness. Slaughter day affected tenderness of the topside (m. semimembranosus). Assessment of aroma, flavour and acceptability was undertaken on the m. biceps femoris from wether and cryptorchid lambs using an experienced taste panel. There was no clear effect of sex or nutrition on the assessment of the sensory attributes. However, panellists considered meat from cryptorchid lambs fed the oats/sunflower supplement and grazed at location B, to have a stronger aroma and flavour (P<0.05) and in some cases to be less acceptable than meat from other combinations of sex, diet and location. The most acceptable meat came from lambs supplemented with oats, irrespective of sex or location. As such, these effects could not be attributed solely to either the diet or sex, but suggest there are conditions where meat from cryptorchids can be less acceptable.  相似文献

First, second and third cut grass silage samples were collected from eight regions around Ireland (184 samples in total) and analysed for vitamin E content. Fresh grass samples were also collected at one site in Co. Cork and analysed for α-tocopherol content. The concentration of α-tocopherol [μg/g dry matter (DM)] was determined using high performance liquid chromatography analysis. A wide variation in α-tocopherol levels in silage samples was found. α-Tocopherol levels in first, second and third cut silage samples ranged from 4.9 to 20.8, 4.4 to 13.0 and 1.3 to 3.9 μg/g DM, respectively. The mean values of α-tocopherol in first, second and third cut silage samples were 11.3±0.9, 9.7±0.7 and 2.3±0.5 μg/g DM, respectively. There was no significant difference in α-tocopherol levels between first and second cut silage samples. However, third cut silage samples had significantly (P<0.05) less α-tocopherol compared to first and second cut samples. There was no decrease in α-tocopherol levels in silage samples following storage at −20°C for 2 months. Fresh grass samples were classified as pasture grass, meadow grass (consisting of 20% Bromus spp and 80% Holcus spp, hedgerow grasses (predominately Dactylis glomerata L.) and white or red clover. Pasture grass had significantly (P<0.05) higher α-tocopherol levels than other grass types analysed. Meadow grass had significantly (P<0.05) higher α-tocopherol levels than clover or hedgerow grasses. α-Tocopherol concentration in the different grass types decreased in the order: pasture grass>meadow grass>hedgerow>white clover>red clover.  相似文献

Carrots harvested by hand or machine and given additional mechanical stress by shaking in a transport simulator were analysed for taste, flavour and content of sugars, terpenes, 6‐methoxymellein and ethanol as well as for ethylene production and respiration. Carrots stressed by shaking had higher ethylene production and respiration, higher content of ethanol and 6‐methoxymellein and lower levels of total terpenes, several individual terpenes and sugars. This corresponded to a higher sensory score for ethanol flavour and odour, bitter taste, earthy flavour, terpene flavour, aftertaste and sickeningly sweet taste and a lower score for acidic taste and sweet taste as measured by an expert taste panel. Ethanol content was highly correlated with ethanol flavour and odour and sickeningly sweet taste. Of five varieties tested, ‘Bolero’ ‘Panter’ and ‘Yukon’ were most sensitive to mechanical stress, whereas ‘Napa’ and ‘Newburg’ were most resistant. Hand‐harvested carrots were not significantly different from machine‐harvested carrots as regards chemical or sensory variables. Principal component analysis showed only slightly different placing of these samples in the score plot. A digital carrot could monitor the degree of mechanical stress to which the carrots were subjected. © 2001 Society of Chemical Industry  相似文献
