Acrylamide Mitigation in Potato Chips by Using NaCl   总被引:1,自引:0,他引:1  
In April 2002, Swedish researchers shocked the world when they presented preliminary findings on the presence of acrylamide in fried and baked foods, most notably potato chips and French fries, at levels of 30–2,300 ppb. The objective of this research was to study the effect of immersing potato slices in a NaCl solution over the acrylamide formation in the resultant potato chips. Potato slices (Verdi variety, diameter 40 mm, width 2.0 mm) were fried at 170 °C for 5 min (final moisture content of ∼2.0%). Prior to frying, the potato slices were treated in one of the following ways: (1) control slices (unblanched or raw potato slices); (2) slices blanched at 90 °C for 5 min in water; (3) slices blanched at 90 °C for 5 min plus immersed in a 1 g/100 g NaCl solution at 25 °C for 5 min; (4) slices blanched at 90 °C for 5 min plus immersed in a 3 g/100 g NaCl solution at 25 °C for 5 min; (5) slices blanched at 90 °C for 5 min plus immersed in distilled water at 25 °C for 5 min; and (6) slices blanched at 90 °C for 5 min in a 3 g/100 g NaCl solution. Blanching followed by the immersion of potato slices in 1 g/100 g NaCl solution was effective in reducing acrylamide content in ∼62%; however, almost half of this percentage (∼27%) could be attributed to the effect of NaCl and 35% to the effect of the slight heating treatment during salt immersion step (25 °C for 5 min). Blanching seems to make the NaCl diffusion in potato tissue easier leading to a significant acrylamide reduction in the potato slices after frying.  相似文献

Ivy gourd (Coccinia indica L.) is an important tropical vegetable cultivated in India. It belongs to the Cucurbitaceae family and is attributed with neutraceutical properties such as hypoglycemic effect and contained a fair amount of ascorbic acid. The effect of blanching and different pretreatments on the quality characteristics of dehydrated ivy gourd slices was optimized. The treated ivy gourd slices were dehydrated in a cross flow hot air drier at 50 ± 1 °C to a final moisture content of 4.6%. The dehydration ratio of dried ivy gourd slices ranged from 17.1:1 to 18.7:1. Ivy gourd slices blanched at 98 °C in water, dipped in 0.2% potassium metabisulphite (K2S2O5) solution and dried at 50 ± 1 °C for 5–6 h resulted in best product. Dehydrated ivy gourd slices obtained from the optimized treatment had good color, texture with rehydration ratio of 1:8.6. Equilibrium relative humidity of dehydrated slices was 34.18% with an initial moisture content of 4.6% at 28 ± 1 °C. Dehydrated slices were packed in low density polyethylene (LDPE) and metallized polyester polyethylene (MPP) pouches and stored at room temperature (27–35 °C) for 6 months. The dehydrated slices were analyzed for changes in physicochemical composition and sensory quality characteristic such as color and appearance, texture and overall quality during storage. Dehydrated ivy gourd slices remained acceptable during storage of 4 and 6 months in LDPE and MPP pouches, respectively, at room temperature.  相似文献

Whole carrots were blanched at four temperatures for five time periods, then blanched again for 6 min at 100°C. A control sample was blanched 8 min at 100°C. All samples were then dehydrated. Very slight differences in rehydration ratios between treatments were observed. The 50°C blanch gave a firmness equal to or less than the control for all blanch times. The carrots blanched at 55°C for 15, 30 and 45 min were less firm than the control while the 60 and 90 min blanched samples were firmer than the control. The 60 and 65°C blanched samples had significantly firmer texture than the control when blanch time was > 30 min. Blanching carrots for 45 min at 65°C increased firmness of the rehydrated product by 51% for uncooked and 27% for cooked.  相似文献

BACKGROUND: In this study the effects of pulsed electric field (PEF) pretreatment were evaluated during drying and rehydration of carrots. Carrots pretreated with an electric field intensity of 1 kV cm?1 (capacitance 0.5 µF, 20 pulses) or 1.5 kV cm?1 (capacitance 1 µF, 20 pulses) as well as blanched (100 °C, 3 min) carrots were used for the study. Following pretreatment, samples were oven dried at 70 °C and then rehydrated in distilled water (1:30 w/v) at room temperature (24 ± 1 °C). RESULTS: PEF pretreatment increased the drying rate of carrots. However, the rehydration rate of PEF‐pretreated carrots was lower than that of blanched carrots. There were no colour differences between PEF‐pretreated and blanched carrots before drying and after rehydration. In terms of texture, PEF‐pretreated carrots were firmer than blanched carrots. PEF pretreatment reduced the activity of peroxidase by 30–50%, while blanching completely inactivated the enzyme (>95%). CONCLUSIONS: Overall, the results suggest that PEF could be an effective pretreatment during drying and rehydration of carrots. Copyright © 2009 Society of Chemical Industry  相似文献

 Response surface methodology was used to compare the effect of temperature and time of the first step of blanching on compression, shear, tension and stress-relaxation parameters of frozen-thawed potato tissues. A central, composite rotatable design was used to study the effects of variation in levels of temperature (52.93–67.07  °C) and time (15.86–44.14 min) on rheological parameters. Blanching temperature was the most important factor affecting the mechanical properties tested. The models fitted for the apparent modulus of elasticity in compression, maximum tension force, and relaxed force in the first cycle (F r1); all had R 2>0.85 (P≤0.01) and were used for doing predictions. Optimum conditions were with in the ranges of temperature (60–65  °C) and time (25–35 min) used for each factor. In the experimental verification of the models at 65  °C during 30 min, the lowest percentage residual between experimental and predicted values was obtained for F r1 (0.644), which was therefore the most appropiate parameter for detecting the firming effect that the pectinesterase activity produced on frozen potato tissues as a consequence of stepwise blanching under these conditions. Cauliflower florets were blanched at 55, 60, 65, and 70°C, held without cooling for 15, 30, 45, 60, and 90 min, blanched again at 100°and then dried in a hot air dehydrater. The coefficient for the rate of rehydration (?) was calculated using a diffusion model. Rehydrated samples were divided into two equal parts, one part was boiled in water and the other was uncooked. Firmness of rehydrated samples was measured by back extrusion. Blanching cauliflower between 55°and 70°before dehydration caused a substantial increase in extrusion forces after rehydration. Cooking the rehydrated cauliflower decreased firmness of all samples. However, the degree of softening caused by cooking was proportionally less for the low temperature blanch treatments than for the controls.  相似文献

The effects of blanching and drying treatments on stability, physical properties, and antioxidant activity of apple pomace polyphenols were evaluated. Blanched and unblanched apples were extracted, and the pomace was dried in a cabinet dryer at a speed of 3 m/s at 50 °C, 60 °C, 70 °C, and 80 °C. The color, total phenolics, flavonoids, individual polyphenolic compounds, anthocyanins, and total antioxidant activity were analyzed. The blanching process caused a major retention in color, total polyphenolic content, and total flavonoid content for fresh apple pomace when compared with fresh unblanched pomace. Drying of either fresh blanched or fresh unblanched pomace caused a significant reduction (P < 0.05) in total polyphenol and flavonoid content leading to a reduction in the total antioxidant activity. When compared with the unblanched treatment, drying the blanched pomace at 80 °C resulted in a product with significant amounts of total phenolics, flavonoids, and antioxidant activity. The individual phenolic compounds were significantly increased (P < 0.05) in blanched pomace that was not dried when compared with unblanched samples. Drying blanched apple pomace did not cause a significant change in the concentration of individual polyphenolic compounds, but drying unblanched apple pomace caused a reduction in the concentrations of epicatechin and caffeic acid, with an important reduction in p-coumaric acid at temperatures higher than 60 °C. However, the drying process caused a significant reduction in the antioxidant capacity. Therefore, a combination of blanching and drying processes for apple pomace results in a product that maintains antioxidant capacity.  相似文献

Oil uptake in fresh, blanched and, blanched and dried potato slices was studied during frying. Potato slices blanched in hot water (85 °C, 3.5 min) and potato slices blanched (85 °C, 3.5 min) and then dried until to a moisture content of ∼60 g/100 g (wet basis) were deep fried in sunflower oil at 120, 150 and 180 °C. A control treatment consisted of unblanched potato slices without the pre-drying treatment (fresh samples). It was studied applying two empirical kinetic models in order to fit the oil uptake during frying: (i) a first order model; (ii) a proposed model, with a linear time behavior for short times, while time independent for long times. Oil uptake was high even for short frying times at the different temperatures tested suggesting that oil wetting is an important mechanism of oil uptake during frying. For control slices, oil uptake increased approximately by 32% as the frying temperature decreased from 180 to 120 °C at moisture contents ?1 g water/g dry solid. No apparent effect of frying temperature in oil uptake was observed at moisture contents ?0.5 g water/g dry solid in fried slices previously blanched and dried. The two kinetic models studied fitted properly the values of oil uptake during frying, with similar correlation coefficient r2.  相似文献

The effect on quality of stepwise blanching (first 10 min at 65 °C, 50 min holding time, and 1 min at 95 °C) prior to drying of carrot slices was compared with conventional blanching (95 °C, 1 min). As quality parameters, rehydration capacity (effective diffusivity De, equilibrium moisture content We), texture (puncture test) and microstructure (SEM and Cryo‐SEM) were chosen. Non‐significant differences were found between the We of stepwise blanched samples and conventionally blanched ones, both values being similar to the moisture content of fresh carrots. De of conventional blanched carrots was higher than for stepwise blanched ones. Maximum force of stepwise blanched samples was higher than those of conventionally blanched ones and not significantly different from fresh carrots. Microstructural observations showed that stepwise blanching preserved cell to cell contacts better than conventional blanching; this fact was attributed to pectin‐methyl‐esterase activation at 65 °C, resulting in the differences in the maximum force between both treatments. Conventionally blanched samples tended to separate along their cell walls, forming voids among the phloem parenchyma cells. These voids would be filled with water during rehydration, thus showing the slightly higher We and the higher De for conventionally blanched carrots. The objective of this work was to study the kinetics of browning during deep-fat frying of blanched and unblanched potato chips by using the dynamic method and to find a relationship between browning development and acrylamide formation. Prior to frying, potato slices were blanched in hot water at 85 °C for 3.5 min. Unblanched slices were used as the control. Control and blanched potato slices (Panda variety, diameter: 37 mm, width: 2.2 mm) were fried at 120, 150 and 180 °C until reaching moisture contents of ∼1.8% (total basis) and their acrylamide content and final color were measured. Color changes were recorded at different sampling times during frying at the three mentioned temperatures using the chromatic redness parameter a1. Experimental data of surface temperature, moisture content and color change in potato chips during frying were fit to empirical relationships, with correlation coefficients greater than 90%. A first-order rate equation was used to model the kinetics of color change. In all cases, the Arrhenius activation energy decreases alongside with decreasing chip moisture content. Blanching reduced acrylamide formation in potato chips in ∼64% (average value) in comparison with control chips at the three oil temperatures tested. For the two pre-treatments studied, average acrylamide content increased ∼58 times as the frying temperature increased from 120 to 180 °C. There was a linear correlation between acrylamide content of potato chips and their color represented by the redness component a1 in the range of the temperatures studied.  相似文献

 Low-temperature, long-time blanching (LT–LT blanching) was performed on potato strips prior to frying. Application of this treatment actived the pectinesterase enzyme in situ resulting in a decrease in the limpness of the fried potatoes; likewise, an improvement in color was obtained as the result of a decrease in reducing sugar content.  Cactus pear (Opuntia ficus-indica) juice with a total soluble solids content of 15.94 °Brix was fermented using the wine yeast Saccharomyces cerevisiae. A 94.54% conversion of fermentable sugar was achieved with an ethanol production of 55.3 ml/l. The pigment degradation was found to be 17% at the end of the time allowed for fermentation. However, the fermentation had actually ceased due to depletion of fermentable sugars after 12 h, a point at which only 9.4% pigment degradation was observed and there was no further total soluble solids degradation. The thermal stability of the yellow-orange pigment of the fermented juice was determined as a function of temperature at pH 5.0. The kinetic experiments were carried out at three different temperatures, 50, 70 and 90  °C. For a pseudo-first order thermal degradation rate the reaction rate constants were determined to be 0.0066, 0.0206 and 0.1244 min–1 for temperatures of 50, 75 and 90  °C, respectively. The activation energy was calculated as 15.71 kcal mole–1. The fermentation process did not affect the thermostability of the pigment extract.  Microbiological, rheological and chemical characteristics were examined in gels made from the muscle of blue whiting (Micromesistius poutassou) and subjected to three different combinations of pressure, temperature and time: 200 MPa at 3  °C for 10 min (lot L), 375 MPa at 38  °C for 20 min (lot H) and atmospheric pressure at 37  °C for 30 min followed by 90  °C for 50 min (lot T), and kept in chilled storage for 20 days. The microorganism content dropped at the outset as pressurizing took effect, the highest microbial content being found in lot L; however as the effect was not lethal, the total load increased over the following days. Microbial load was significantly lower in lot T. During chilled storage, the values of breaking deformation, breaking force and cohesiveness of lot L were higher than those of the other lots, although they did decrease with storage. The heat-induced gel was much harder, had greater water-holding capacity and was considerably more stable than the high-pressure-induced gels. The lightness value was higher in lot H than in the other two lots. In general, changes in protein solubility tended towards the cleavage of strong bonds as a result of microbial action. The electrophoretic profiles evolved differently in each of the lots over the chilled storage period. However, all of them exhibited large numbers of bands of lower molecular mass which could have been the result of degradation. This was particularly evident in lot H. The heat-induced gels exhibited a highly porous ultrastructure, quite different from the high-pressure-induced gels; these had a more compact matrix which expanded as storage progressed. The objective of this research was to determine the kinetics of water loss and oil uptake during frying of pre-treated potato slices under vacuum and atmospheric pressure. Potato slices (diameter: 30 mm; width: 3 mm) were pre-treated in the following ways: (i) raw potato slices “control”; (ii) control slices were blanched in hot water at 85 °C for 3.5 min; (iii) blanched slices were dried in hot air until reaching a moisture content of ∼0.6 g water/g dry basis. The slices were fried under vacuum (5.37 kPa, absolute pressure, at 120, 130 and 140 °C) and atmospheric conditions (at 180 °C). Two models based on the Fick's law were used to describe water loss: (i) with a constant effective diffusive coefficient; and (ii) with a variable effective diffusive coefficient. Oil uptake data were fitted to an empirical model, with a linear behavior for short times whereas the model was time independent for long times. The variable diffusivity model better fitted experimental water loss, giving values of effective diffusivity between 4.73 × 10−9 and 1.80 × 10−8 m2/s. The proposed model for the study of the kinetics of oil uptake fitted the experimental data properly. Control and blanched vacuum fried potato chips increased their final oil contents to 57.1% and 75.4% respectively, when compared with those fried at atmospheric pressure. However, the oil absorption of dried vacuum fried potato chips diminished by ∼30%.  相似文献

 The effect of curing kola nuts at 30  °C was evaluated at the Cocoa Research Institute of Nigeria, Ibadan, to determine the effect of curing time and delay between inoculation and initiation of curing on storage rot. For nuts inoculated 24 h prior to curing, 48–72 h curing at 30  °C gave optimal disease control. The incidence of rot was higher when the treatment was delayed for 48 h after inoculation. When artificially wounded and inoculated kola nuts were dipped in a solution of 1.0 g l–1 of sodium bicarbonate for 2 mins, disease development was significantly reduced compared to the 0.5% sodium hypochorite treatment. Sodium metabisulphite also reduced disease development but the level of disease control achieved was not significantly different from that of the water-dipped controls. The effect of high-pressure (HP) pretreatment on oil uptake of potato slices is examined in this paper. Potato slices were treated either by HP or thermal blanching, or a combination of thermal blanching followed by HP prior to frying. The effect of HP on starch gelatinization and potato microstructure was assessed by differential scanning calorimeter and environmental scanning electron microscope (ESEM), respectively. After treatments, the slices were fried in sunflower oil at 185 °C for a predetermined time. Frying time was either kept constant (4 min) or varied according to the time needed to reach a desired moisture content of ≈2%. The high pressure applied in this study was found not to be sufficient to cause a significant degree of starch gelatinization. Analysis of the ESEM images showed that blanching had a limited effect on cell wall integrity. HP pretreatment was found to increase the oil uptake marginally. When frying for a fixed time, the highest total oil content was found in slices treated at 200 MPa for 5 min. The oil content was found to increase significantly (p < 0.05) to 41.23 ± 1.82 compared to 29.03 ± 0.21 in the control slices. The same effect of pressure on oil content was found when the time of frying varied. On the other hand, HP pretreatment was found to decrease the frying time required to achieve a given moisture content. Thus, high-pressure pretreatment may be used to reduce the frying time, but not oil uptake.  相似文献

 Further work on an enzymic method to differentiate frozen from unfrozen fish and shellfish is reported. The method is based on the release of the β-hydroxyacyl-CoA-dehydrogenase (HADH) from mitochondria during freezing. Enzymic activity was evaluated in fresh and frozen thawed samples from sole (Solea solea), sea bream (Pagellus centrodontus), hake (Merluccius merluccius), gilt headed bream (Sparus aurata), sea bass (Dicentrarchus labrax), salmon (Salmo salar), prawn (Penaeus japonicus) and Norwegian lobster (Nephrops norvegicus). Changes in the HADH activity of fresh and frozen thawed samples were compared after freezing at –196  °C for 15 min. Two values were obtained: U (by dividing: HADH activity of samples frozen at –196  °C, then thawed/HADH activity of unfrozen samples) and F (by dividing: HADH activity of samples frozen at –18  °C, thawed, then frozen at –196  °C /HADH activity of samples frozen at –18  °C, then thawed). Statistical analysis showed significant differences (P≤0.05) between both quotients for gilt headed bream, salmon, sea bream, sole and prawn, and an arbitrary limit was set at 2 to differentiate frozen thawed from unfrozen samples. The application of this limit made it possible to discriminate the unfrozen from the frozen thawed state of around 90% of the total samples analysed. Best results were obtained for prawn (100% of samples differentiated). In the present paper, a laboratory routine is proposed based on the comparison of the HADH activity of a sample analysed straight away and that of a sample frozen at –196  °C and then thawed.  Application of the aroma extract dilution analysis to volatile fractions obtained from dry-heated (180  °C for 6 min on silica) mixtures of cysteine and ribose (I), glucose (II) or rhamnose (III) revealed the following compounds with the highest flavour dilution factors: 2-furfurylthiol (FFT) and 2-acetyl-2-thiazoline in I; 2-acetyl-2-thiazoline, 2-propionyl-2-thiazoline and FFT in II; 5-methyl-2-furfurylthiol, 4-hydroxy-2,5-dimethyl-3(2H)-furanone, 2-acetyl-2-thiazoline, 2-propionyl-2-thiazoline and (Z)-2-propenyl-3,5-dimethylpyrazine in III. A comparison of the data with results of previous studies, in which the same mixtures had been reacted under aqueous conditions (145  °C, 20 min) revealed that the dry-heating process favoured the formation of the roasty, popcorn-like smelling 2-acetyl- and 2-propionyl-2-thiazoline as well as the potato-chip-like 2-ethyl-3,5-dimethylpyrazine and 2,3-diethyl-5-methylpyrazine in all three reaction systems. 2-Ethenyl- and (Z)-2-propenyl-3,5-dimethylpyrazine, both having an intense roast potato smell were, however, selectively formed in the presence of ribose or rhamnose, respectively. Based on quantitative data, pathways generating the latter two pyrazines via their 1-desoxyosones as key intermediates are discussed. Received: 11 March 1998  相似文献
