为及时了解国内外黄曲霉毒素的研究现状、热点及发展趋势,为相关研究领域的科研工作者与决策者提供参考,本文采用文献计量学方法对Web of Science核心数据库收录的2003—2020年间黄曲霉毒素研究文献进行了统计分析。结果表明,目前全球黄曲霉毒素研究的文献数量呈快速增长趋势,其中美国和中国是发文量最高,也是开展国际合作最活跃的两个国家。发表黄曲霉毒素相关研究最多的期刊是Food Control,而食品科学技术是发文最多的学科方向。美国的Cotty P J在发文量和H指数方面均居世界首位。仅1篇中国学者的论文进入了该领域高被引论文的前100名,表明国内目前缺乏具有国际影响力的重要成果,在研究创新性和发文质量上还有上升空间。此外,利用VOSviewer和CiteSpace文献可视化分析软件分析了不同时期及不同国家黄曲霉毒素研究的高频关键词,并对关键词进行了聚类分析和突现分析。黄曲霉毒素的新型检测技术、高效解毒方法、生物防治以及生物合成的调控机制等将可能成为该领域未来的研究热点和前沿。  相似文献

为了解食品科学学科的研究现状,基于文献计量学视角,对2009—2018年食品科学学科高被引论文的文献总量、发文国家、研究机构、来源期刊与研究热点进行分析。结果显示:我国在食品科学学科高被引论文数已位居全球第一,然而,从总被引次数和篇均被引次数看,我国高被引论文的影响力和质量与美国存在较大差距,我国在高被引论文国际科技合作网络中的影响力也远不及美国。在入选高被引论文数排名前20的科研机构中,中国的机构虽占据最多(5席),但各机构同样存在总被引次数和篇均被引次数偏低的现象。当前食品科学学科的发展呈现多学科交叉融合态势,全球范围内的研究热点主要集中在食品有效组分的生物活性及作用机理、新型营养成分递送系统(微胶囊、纳米胶囊、乳液体系)、肠道微生物、成分的稳定性、食品包装和货架期等方面。中美之间以及中国的优势研究机构之间研究领域有明显不同且各具特色。  相似文献

21世纪以来食品科学与技术发展迅速,食品科学与情报科学的关系更加紧密,本文应用文献计量学方法通过分析食品科学领域内发表论文的数量与质量,从食品学科竞争力角度出发,对国家和代表机构的学科竞争力进行可视化比较研究。结果表明:2010—2014年Scopus数据库中食品科学学科,中国以17 054篇发文量成为全球第二位大发文国家,但是中国篇均被引次数为4.6次/篇,略低于全球篇均被引次数。虽然我国这些年在发文量上已经取得了不小的成就,但是反映论文质量的篇均被引次数、前10%高被引文献等指标与传统食品科学强国相比,整体上还存在一定的差距。从发文数量与质量等多角度分析得出,中国代表性机构在国际学术中有一定的影响力与知名度,但我国食品科学呈现地区发展不平衡现象。通过观察全球食品学科领域的研究热点及发展趋势,我国在2010—2014年产生了101个具有独特竞争优势(distinctive competencies,DC)的研究方向,这101个DC体现了2010—2014年我国食品科学方向主要的交叉学科竞争优势,为食品科研工作者提供相关参考。  相似文献

为了解和评价烟草科技期刊的学术影响力,以3种烟草行业科技期刊和7种行业外刊登烟草科技论文较多的期刊为统计对象,依据《中国期刊引证报告(扩刊版)》对其2005-2008年的总被引频次、影响因子、他引率、基金论文比等6项主要评价指标进行了统计分析,并对比了轻工业类科技期刊及全部统计源科技期刊的均值。结果表明,3种烟草科技期刊的总被引频次、影响因子、基金论文比和平均引文数平均值都高于科技期刊总均值和轻工业类期刊均值,但总被引频次和基金论文比略低于7种行业外期刊,他引率和来源文献量则较低,反映出烟草科技期刊在期刊推广、稿源选取及引用编辑规范等方面有较多值得研究和改进提高的问题。结合影响文献计量指标的主要因素,提出了提高烟草科技期刊学术影响力的建议。  相似文献

本文基于CiteSpace和文献计量分析平台,以中国知网(China National Knowledge Infrastructure,CNKI)和Web of Science(WOS)为数据库,分别以“鱼糜”和“surimi”为主题检索词,以收集到的2009—2021年CNKI中的944篇和WOS中的1 082篇文献为研究对象,对发文量、发文作者、国家、机构及期刊进行科技文本挖掘,并通过关键词聚类图谱、时间线图谱和突现图谱等进行数据可视化分析,总结国内外鱼糜研究的现状和内容演变进展。研究发现,鱼糜领域的研究受到越来越多人的关注,国内外发文量均呈上升趋势,且刊载量大的期刊多为食品领域的顶级期刊,中国的英文文献发文量为411篇,位居全球第一,占到总发文量的37.99%,除此之外,泰国、美国、日本等国家均形成较大的研究体量;不同区域的作者、研究机构及国家之间合作密切,在国际上已经形成了学术共同体;研究内容从宏观领域向微观领域发展,研究热点由加工工艺和鱼糜品质向保鲜、抗冻剂转变,目前“蛋白质”“肌球蛋白”“二级结构”等成为突现关键词,研究内容已经深入到分子水平;时区分析表明“感官评价”“品...  相似文献

依据美国科学引文索引数据库扩展版(Science Citation Index Expanded),对2004-2013年期间SCI-E收录的有关猕猴桃的1 253 篇研究文献,采用文献计量的方法,从论文发表的年份、文献类型与语种、学科领域和来源期刊、核心研究机构、国家或地区分布以及作者等方面对检索结果进行统计分析。结果表明:10 a内SCI猕猴桃研究文献呈逐步增长趋势;研究文献主要以期刊文献、英语文献为主;研究文献的主要学科领域是食品科技和植物科学;载文量最多的期刊是《Postharvest Biology and Technology》;发文量最多的机构为“New Zealand Institute forPlant Food Research Ltd.”;发文较多的国家有新西兰、意大利、中国等;发文最多的作者是塞尔维亚的Gavrovic-Jankulovic和新西兰的Clearwater;最具影响力作者是意大利的Tamburrini。通过该文的分析为我国科研人员了解有关猕猴桃研究动态,确立研究方向,开展科学研究与学术交流提供信息和帮助。  相似文献

We examined the factors that determine the citations of 153 mechanistic aquatic biogeochemical modeling papers published from 1990 to 2002. Our analysis provides overwhelming evidence that ocean modeling is a dynamic area of the current modeling practice. Models developed to gain insight into the ocean carbon cycle/marine biogeochemistry are most highly cited, the produced knowledge is exported to other cognitive disciplines, and oceanic modelers are less reluctant to embrace technical advances (e.g., assimilation schemes) and more critically increase model complexity. Contrary to our predictions, model application for environmental management issues on a local scale seems to have languished; the pertinent papers comprise a smaller portion of the published modeling literature and receive lower citations. Given the critical planning information that these models aim to provide, we hypothesize that the latter finding probably stems from conceptual weaknesses, methodological omissions, and an evident lack of haste from modelers to adopt new ideas in their repertoire when addressing environmental management issues. We also highlight the lack of significant association between citation frequency and model complexity, model performance, implementation of conventional methodological steps during model development (e.g., validation, sensitivity analysis), number of authors, and country of affiliation. While these results cast doubt on the rationale of the current modeling practice, the fact that the Fasham et al. (1990) paper has received over 400 citations probably dictates what should be done from the modeling community to meet the practical need for attractive and powerful modeling tools.  相似文献

The domestic refrigerator is now a common household device with very few households in the developed world not possessing 1, or more, for the storage of chilled foods. Domestic storage is the last, and in many respects the most important, link in the food chill chain. Inadequate domestic refrigeration or cooling is frequently cited as a factor in incidents of food poisoning. The authors reviewed the temperature performance of refrigerators in 2008. This new review builds on that review, covering studies that have been published since (and those that were unfortunately missed in the first review), and also seeks to put this important stage of the food cold chain in its context. It is clear from the published data that many refrigerators throughout the world are running at higher than recommended temperatures. It is also clear that, despite improvements in energy use, the temperature performance and use of refrigerators have not changed significantly in the last 40 or so years. Many householders still remain unaware of the recommended refrigeration temperature range, how to ensure that the correct refrigeration temperature range is achieved, the importance of monitoring that it is being maintained, and the potential hazards of temperature abuse.  相似文献

Purpose

A previous literature review reported tear evaporation rates (TERs) from studies conducted on rabbits and humans between 1941 and 2003. Closer examination of the presented data revealed inaccuracies in the reporting of some values. This paper presents updated tables of TERs using values from the original papers cited in the review, in addition to incorporating new studies published between 2003 and 2016.

Methods

A copy of each paper cited in the literature review was obtained and checked against the evaporation rate reported in the review. If the expected value could not be found in the cited paper, other papers by the same author were consulted to see if the value had been reported elsewhere. A PubMed and Scopus database search was conducted to find papers published on tear evaporimetry since 2003.

Results

Two new tables of TERs were created, based on the values reported by the original author. To aid in interpretation, the majority of results are expressed in units of x 10?7?g/cm2/sec. Where it was not possible to convert these values, some values are expressed as x 10?7?g/sec, x 10?7?g/sec/eye or W/min.

Conclusions

Two new tables of TERs have been compiled to provide an accurate representation of the values reported in the original papers. These tables can be used as a point of reference for other researchers to compare their results.  相似文献

目的计量分析国内外有机农业研究的文献,了解有机农业的研究进展。方法运用可视化分析工具VOSviewer及文献计量分析法,从年发文量、论文发表期刊、高影响力论文、主要研究机构及研究内容等方面,对CNKI及WOS两数据库收录的1954~2018年的相关文献进行计量分析。结果该领域文献量自1954年来整体呈现上升趋势;美国及以荷兰、丹麦为首的欧洲各国的有机农业发文量领先于其他国家;中国农业大学、南京农业大学与国家环境保护总局有机食品发展中心的有机农业发文量在中国位居前三位。结论现阶段国内外有机农业研究以有机农产品为主,国内研究同时注重有机农业发展趋势,国际上研究重点亦为市场及有机农产品之间的相互关系。  相似文献
