多聚磷酸盐是肉及肉制品中常用的品质改良剂,但摄入过量的磷酸盐也会危害人体健康。离子色谱由于具有可对不同形态的多聚磷酸盐同时进行分离测定的优点,目前研究较多,然而多聚磷酸盐在肉制品中的分解给多聚磷酸盐的准确测定带来困扰。本文主要介绍了近年来国内应用离子色谱法测定肉及肉制品中多聚磷酸盐的研究成果,对于准确、快速选择适于实际样品测定的方法具有一定意义。 相似文献

肉及肉制品中的酪胺是在产酪胺菌(粪肠球菌、屎肠球菌等)作用下、适宜条件(25 ℃、pH<7)下产生的一种生物胺。食用酪胺浓度超过阈值的肉制品会引发高血压、偏头痛等疾病,危害人类健康,因此,抑制肉和肉制品中酪胺形成和降低其含量的方法已成为新的研究热点。抑制食品中酪胺形成的方法有物理法、化学法和生物法,其中利用植物活性成分具有的抑菌/抗氧化性可有效地控制酪胺形成,从而降低酪胺在肉制品中的积累。本文介绍了肉及肉制品中酪胺的形成途径、植物活性成分的特性(抑菌性和抗氧化性)及其结构,以及植物提取物控制酪胺形成、抑制其积累的效果。重点综述了植物源活性成分抑制肉制品中酪胺形成的机理,为降低肉制品中生物胺含量、提高肉及肉制品安全性、促进植物源生物活性成分在食品中的应用提供技术支持。 相似文献

The use of soyabean proteins as meat extenders has spread significantly due to the interesting nutritional and functional properties that are present in soyabean proteins. Together with these, health and economical reasons are the major causes for the addition of soyabean proteins to meat products. Nevertheless, despite the good properties associated to soyabean proteins, there are many countries in which the addition of these proteins is forbidden or in which the addition of soyabean proteins is allowed up to a certain extent. Thus, the need of analytical methods enabling the detection of added soyabean proteins in meat products is obvious. Microscopic, electrophoretic, immunologic, and chromatographic methods are the most widely used for this purpose. However, the detection of soyabean proteins in meat products presents difficulties related to the composition (meat species, meat quality, soyabean protein source, presence of other non-meat proteins, etc.) and the processing of the meat products, and, although these analytical methods have tried to overcome all these difficulties, there is still not a method enabling quantitative assessment of soyabean proteins in all kinds of meat products. 相似文献

Consumers believe that foods are associated directly to their health. Today foods are not only used to satisfy our hunger but also to provide indispensible nutrients for humans and these nutrients having the health benefits regarding in controlling the diseases. The market for functional foods has seen a sharp rise in demand in the recent years. This has driven researchers to multiply their efforts in producing functional meat products also. Feed manipulation and post-mortem modification of meat coupled with enrichment of bioactive compounds are gaining importance. This review discusses the candidate ingredients and strategies, utilized in crafting such functional meat products, and the notable developments and commercial successes in functional meat industry. Dry fermented sausages meet the conditions required to carry viable probiotic microbes. 肉类及肉制品是人类日常饮食中获取营养物质的主要来源, 食用营养和健康的肉制品已成为人们健康饮食的消费观念。然而, 由于肉制品供应难以满足全球人口快速增长的需求、过量摄入红肉可能导致的健康隐患以及肉类生产对环境造成的负面影响等问题, 新型肉类替代品的出现为消费者提供了更多的选择。其中, 食用菌在我国具有悠久的食用历史, 其菌丝体的营养成分与子实体相近, 且栽培消耗的资源少。因此, 将食用菌菌丝体应用于肉制品中极具开发潜力。本文结合近年的研究成果, 主要介绍了当前典型工业栽培食用菌(双孢菇、香菇、平菇、金针菇)菌丝的性质特点和营养价值, 重点综述了食用菌菌丝蛋白的生产加工技术及其在肉制品中的应用, 并分析了目前食用菌菌丝体在肉制品中应用的阻碍因素, 为食用菌菌丝体肉制品的研发提供理论基础。 相似文献
