为了分析不同方法萃取苦荞样品中挥发性物质的差异,采用同时蒸馏萃取法(SDE)和固相微萃取法(SPME)提取苦荞样品中的挥发性成分,用气相色谱-质谱联用(GC-MS)技术定性鉴定,并用总离子流色谱峰的峰面积进行归一化定量分析。同时蒸馏萃取-气谱-质谱法(SDE-GC-MS)分析出23种挥发性成分,固相微萃取-气相色谱-质谱法(SPME-GC-MS)分析出35种挥发性成分,2种方法均提取出酯类、烃类、酮类、醛类和醇类,其中酯类和醛类的含量较多,说明酯类和醛类对苦荞的风味贡献较大。同时蒸馏萃取法适合对高沸点、低挥发性物质进行分离,固相微萃取法具有快速简便、不使用溶剂和样品检测非破坏性等优点,适合易挥发性化合物的检测。将两种提取方法相结合对苦荞挥发性物质提取能得到比较全面的结果。  相似文献

采用溶剂萃取法提取葡萄酒中的香气成分,应用气相色谱/质谱(GC/MS)进行半定量分析,研完了冷浸渍结合皮汁分离发酵对赤霞珠干红葡萄酒香气的影响。结果表明:与传统发酵工艺相比,发酵前对葡萄原料进行低温浸渍、酒精发酵过程采用皮汁分离可以提高葡萄酒中苯乙醇含量,并且所得的赤霞珠干红葡萄酒含有较多的香气组分。  相似文献

分析了酒类香气物质的研究状况,介绍了目前国内外酒类香气成分的分析方法,包括样品的前处理、定性分析、定量的方法以及研究进展,以期为酒类香气物质研究者提供参考。前处理的方法主要有直接进样、液液萃取、蒸气蒸馏、静态顶空、动态顶空、固相萃取、固相微萃取和搅拌棒萃取法等;定性分析采用气相色谱(GC)、质谱(MS)及多种仪器联用;定量分析法包括了归一法、内标法和外标法等。  相似文献

采用静态顶空 (SHS)、固相微萃取 (SPME)和蒸馏 乙酸乙酯萃取 (DEE) 3种方法处理啤酒样品 ,结合气相色谱 质谱 (GC/MS) ,共分离定性 74种微量香味物质。其中静态顶空进样方法最为简便 ,固相微萃取法分析的物质最为广泛 ,蒸馏萃取法的操作较为繁琐 ,但是能够分离出指示啤酒老化程度的物质———糠醛。  相似文献

采用同时蒸馏萃取(SDE)和顶空-固相微萃取(HS-SPME)结合气相色谱-质谱联用技术(GC/MS)对黄水中挥发性组分进行了分析研究。采用HS-SPME和SDE方式分别获得41种和37种组分的定性结果,具有较好的一致性,并印证了发酵副产物黄水对成品酒风味形成的贡献。这些结果拓展了SPME和SDE技术在白酒分析研究中的应用,为白酒酿造过程的量化评价提供了有效手段。文中除列表分析结果外,还对SPME和SDE方法的特点、黄水中的定性组分与白酒香味组分的相关性作了研讨。  相似文献

针对大豆酸奶的风味,采用抑制离子排斥色谱法和GC—MS的固相微萃取法,分析不同类型大豆酸奶的发酵过程中有机酸的变化以及最终产品的主要风味成分。通过离子色谱,分析了3种不同的大豆原料制备的大豆酸奶在从发酵起始至发酵终止丙酮酸、柠檬酸、乳酸的变化;利用GC—MS的固相微萃取技术分析比较了豆浆酸奶和酸牛奶的主要风味物质,从中发现了影响大豆酸奶产品风味的主要物质以及和酸牛奶产品之间的差异。  相似文献

采用同时蒸馏萃取法和固相微萃取法对棕榈油与菜籽油复合火锅底料中的挥发性风味物质进行提取,并通过气相色谱-质谱联用分析及鉴定。采用2 种方法共鉴定出82 种化合物,其中包括醇类17 种、醛类15 种、酯类9 种、萜烯类16 种、酮类5 种、烃类13 种和其他化合物7 种。其中采用同时蒸馏萃取法检测出58 种化合物,采用固相微萃取法检测出41 种化合物,2 种方法检测出的化合物均以芳樟醇相对含量最大,其次为茴香脑。  相似文献

采用顶空固相微萃取法和同时蒸馏萃取法提取蓝波奶酪中的挥发性风味成分,利用气相色谱-质谱联用技术对挥发性风味成分进行分离鉴定。结果表明,经过气相色谱-质谱联用技术分析,共鉴定出111 种挥发性成分,包括烃类2 种、醛类6 种、酮类12 种、酸类20 种、酯类49 种、醇酚类13 种、含硫含氮及其他杂环化合物9 种。可能对风味造成影响的化合物有:2-庚酮、2-壬酮、丁酸、己酸、辛酸、正癸酸、癸酸乙酯、3-(甲硫基)-1-丙醇、6-庚基四氢-2H-吡喃-2-酮。  相似文献

采用超声溶剂萃取、同时蒸馏萃取、固相微萃取3种方法对会东块菌香气进行提取后,用气相色谱-质谱联用(GC-MS)法结合计算机检索对其进行成分分析和鉴定。结果表明:采用超声溶剂萃取法的萃取物中共分离出80个峰,鉴定出65种化合物,占总组分的93.59%;用同时蒸馏萃取法的萃取物中共分离出了91个峰,鉴定出了67种化合物,占总组分的90.45%;用固相微萃取法的萃取物中共分离出64个峰,鉴定出50种化合物,占总组分的75.15%;综合比较,采用3种方法共分离鉴定出142种香气物质,其中主要香气物质23种,3种提取方法中同时蒸馏萃取法效果最优。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
