Noodles were prepared from semolina of durum and aestivum wheats and flour of aestivum with or without 10% of different types of full fat soyflour (i.e. enzyme active, conventional and roasted soyflour) and defatted soyflour. Cooked weight and water absorption of noodles increased with the increase in cooking time but decreased with addition of soy solids. The latter also increased losses of total solids and deceased losses of nitrogen into the cooking water. Sensory evaluation of noodles indicated that the product made from durum semolina containing 10% of defatted soyflour was as good as that from durum semolina alone.  相似文献

Soybean (full‐fat and defatted) and barley flours were incorporated into wheat flour at 5, 10, 15 and 20% substitution levels. The gluten content, sedimentation value and water absorption capacity of the flour blends and the mixing time of the dough decreased with increase in the level of soybean and barley flour separately and in combinations. Protein and glutelin contents increased significantly on blending of soyflour (full‐fat and defatted) to bread wheat flour. The breads prepared from the blends also varied in their loaf weight, loaf volume and sensory characteristics. The bread volume decreased with increasing amount of non‐wheat flour substitution. The crumb colour changed from creamish white to dull brown and a gradual hardening of crumb texture was observed as the addition of soybean (full‐fat and defatted) and barley flours increased. At the higher levels, the acceptability declined because of the compact texture of the crumb and the strong flavour of the product. The addition of 10% of soyflour (full‐fat and defatted) or 15% of barley flour, full‐fat soy + barley or defatted soy + barley flour to bread flour produced acceptable bread.  相似文献

Nutritional, sensory and textural characteristics of defatted mustard flour fortified biscuits were studied to optimize the mustard flour supplement in the blend for making biscuits. The wheat flour was replaced by defatted mustard flour at 5, 10, 15 and 20% incorporation levels in biscuit preparation. The protein content of mustard flour biscuit increased nearly 2.5 times as a result of mustard flour incorporation, coupled with reduction in fat and an increase in fiber content. Sensory evaluation results revealed that the sample containing 15% defatted mustard flour scored highest in most of the attributes including overall acceptability. Textural characteristics of all dough and biscuit upto 15% supplement of defatted mustard flour were similar while at 20% level, the values were significantly different. The study reveals that incorporation of 15% defatted mustard flour gave desirable results in terms of nutritional, sensory and textural attributes of mustard fortified biscuits.  相似文献

The textural attributes of 8 different heat-induced protein gel preparations evaluated by torsion failure testing and Instron texture profile analysis (TPA) were compared to sensory ratings by a trained texture profile panel. The gels presented a wide range of textural properties as determined by the instrumental and sensory parameters. Among the instrumental parameters, true shear strain at failure was the most frequent and significant predictor of sensory notes. Initial shear modulus and 50% compression force had the poorest correlations with sensory notes. Comparison of the two instrumental tests produced high correlations between shear stress at failure and TPA hardness; true shear strain at failure and TPA cohesiveness; and, initial shear modulus and 50% compression force. High correlations were also observed among various panel notes. Canonical correlation analyses showed that sets of linear combinations of parameters from each one of the 3 tests (torsion, TPA or sensory) were highly correlated to sets from either of the other two. Regression equations relating each of the instrumental tests to sensory notes were developed. Of the torsion failure parameters, the logarithm of true shear strain most commonly appeared in the equations. Of the TPA parameters, cohesiveness and its logarithm were the terms that were most frequent. High R2 values were obtained for regression equations developed for predicting torsion failure parameters based on TPA parameters.  相似文献

Lamb loins were subjected to sous-vide cooking at different combinations of temperature (60, 70, and 80 °C) and time (6, 12, and 24 h). Different physicochemical, histological and structural parameters were studied. Increasing cooking temperatures led to higher weight losses and lower moisture contents, whereas the effect of cooking time on these variables was limited. Samples cooked at 60 °C showed the highest lightness and redness, while increasing cooking temperature and cooking time produced higher yellowness values. Most textural variables in a texture profile analysis showed a marked interaction between cooking temperature and time. Samples cooked for 24 h showed significantly lower values for most of the studied textural parameters for all the temperatures considered. Connective tissue granulation at 60 °C and gelation at 70 °C were observed in the SEM micrographs. The sous-vide cooking of lamb loins dramatically reduced microbial population even with the less intense heat treatment studied (60 °C–6 h).  相似文献

Dry soybean seeds were soaked in water for 15 to 300 min at temperatures of 50C, 60C, 70C, 80C and then compressed 75% two times with an Instron in a texture profile analysis type of test. A multiple regression analysis showed a nonlinear function of time and temperature of hydration for all the three textural parameters and can be used for determining the blanching conditions for obtaining any desirable texture of the product.  相似文献

Mixture experimental design was used to model the formulation of a low fat peanut spread based on textural profile analysis. Emulsifier was the important factor affecting physical properties of the low fat peanut spread. Sucrose polyester (SPE) contributed only the oily attribute to the product and did not significantly affect physical properties. The optimum combination was 1% salt, 6% corn syrup solids, 2.6% emulsifier, 23.9% SPE, and 66.5% ground defatted peanuts adjusted to 40% peanut oil. ABSTRACT

Extrudates used in the study were prepared on the base of cornmeal (100%) – control, which was in 10, 30 and 50% replaced by defatted seeds of blackcurrant, which were a by‐product of supercritical fluid extraction, used for oil production. The aim of the study was to check the influence of the level of defatted blackcurrant seeds, on texture and chemical composition of the obtained extrudates. Special attention was paid to pro‐health constituents, i.e., dietary fiber, polyphenols, flavonoids and anthocyanins. The addition of defatted seeds resulted in an increase of polyphenol content, and antioxidant activity, and the rise in the level of flavonoids and soluble dietary fiber as compared with control. The enrichment of extrudates in pro‐health components, as well as improvement of sensory score, suggests that 10% addition of defatted blackcurrant seeds is a suitable level for preparation of extruded fruit‐cereal snacks.

PRACTICAL APPLICATIONS

The study demonstrates that defatted blackcurrant seeds could be a good, natural source of bioactive components in cereal snacks produced by extrusion. The suggested level of this component, optimal from sensory and dietary point of view, is 10%.

Large deformation rheological tests were employed to determine the textural differences in heat‐induced gel systems. Three different large deformation rheological methods (viscosity index and apparent elasticity, texture profile analysis (TPA) and torsional fracture) were employed to study the dependence of the ion type on the textural properties of heat‐induced mixed protein–gum gels. Protein–gum mixed solutions were prepared with bovine serum albumin (BSA) or egg white albumin (EWA) (20% w/v) with κ‐carrageenan (KCG), gellan (GLN) or xanthan gums (XNT) (0.5% w/v) at 0.1 M sodium chloride (NaCl), potassium chloride (KCl) or no added salt. Despite inherent differences in protein type, the main effect on the textural properties evaluated was for the kind of salt added, since potassium ions, with a strong influence on KCG and GLN gelation, affected the parameters related to the structure or hardness of the samples. There was no significant effect on parameters associated with sample ductility or elasticity. GLN formed stronger gels than KCG, whereas XNT did not perform as well in gel formation since it does not contribute to protein matrix formation. The results indicated that potassium may be substituted for sodium ions at low ionic strengths in foods where the incorporation of KCG or GLN helps to improve texture and related features.  相似文献

Eight Charolais heifers (ca. 300 kg) were fed a diet containing either 0 (control) or 1 ppm clenbuterol during 5 weeks. Daily live weight gain was higher (p<0.01), by about 34%, in treated animals. They were slaughtered after a week of withdrawal. Activity of μ-calpain of meat from clenbuterol-fed heifers was lower (p<0.01) immediately post mortem, while activity of calpastatin was higher (p<0.05) than in meat from controls. According to sensory and instrumental data, meat from clenbuterol-fed heifers did not tenderise during aging, and was tougher (p<0.05) than control meat at 8th day post mortem. Both principal component analysis and multivariate discriminant analysis of a pool of data of the textural profile showed differences due to clenbuterol treatment at 24 h. The slope after yield (calculated from the Warner–Bratzler shearing force–deformation curve), was the only textural parameter affected (p<0.05) at 24 h by the treatment.  相似文献

The influence of fermented whey protein concentrate (FWPC) added before and after formation of cheese curd on the textural characteristics of Iranian white cheese was studied. The FWPC, prepared from whey obtained during cheese making, was added at different levels 5, 10, 15 and 20% (v/v) after (A) or before (B) cheese curdling. The changes in rheological parameters of cheeses were determined before and after 1 month of ripening. It was found that both incorporation level and stage of addition of FWPC (A and B) caused significant effects on texture profile analysis of cheeses. Increasing the level of FWPC in B group, except samples containing 10% FWPC, in contrast with A cheeses led to considerable increase in moisture and decrease in hardness and chewiness. Samples containing more than 15% FWPC had undesirable texture and were too soft. All experimental cheeses exhibited a decline in values for each rheological parameter after 1 month of ripening.

PRACTICAL APPLICATIONS


Perhaps the biggest story in the dairy industry in the past couple of decades has been the rise of new applications for whey and whey proteins. Once considered a waste product in the cheese manufacturing process, whey and whey protein products today are used for a wide range of functional and nutritional properties. In the cheese industry, particularly in soft cheese varieties, whey proteins have shown good applications to replace caseins as they act as fat replacer and bind more water than caseins, which results in softer cheeses. Therefore, this study was attempted to investigate the impact of fermented whey protein concentrate on textural attributes of Iranian white cheese.  相似文献

Meat batters containing either 0.5% or 1% iota carrageenan (IC, kappa carrageenan (KC) or xanthan gum (XG) were investigated. Rigidity changes during heating and Instron texture profile analysis indicated textural properties of batters. All treatments exhibited a decrease in water-holding ability (WHA) from 55–70°C. Addition of IC increased WHA, rigidity at 70°C, force-to-fracture and true shear strain. KC increased rigidity at 70°C and was most effective at increasing hardness. XC decreased all textural parameters measured. Gums were specific in affecting textural and WHA properties.  相似文献

ABSTRACT

The effects of sugar levels (3, 6, 9, 12%, w/w) on gross composition, the main physicochemical parameters, microbiology, protein composition and proteolytic change of water soluble protein (water soluble nitrogen [WSN]) of Cantonese sausage were evaluated. The sample with 12% sugar addition had low aw as well as pH values. During processing, sarcoplasmic and myofibrillar protein content decreased, while alkaline‐soluble fraction and nonprotein constituent (nonprotein nitrogen) content increased. Sugar exhibited stabilizing effect against denaturation of both sarcoplasmic and myofibrillar protein fractions. The water soluble protein with molecular weight of >10 and 3–5 kDa was the main fraction, and progressive decrease of peptide fractions of >10 kDa was observed during ripening process. Higher sugar levels showed protective effects against proteolysis of WSN and advantages on improving the textural characteristics. Samples with higher sugar levels had lower microbial counts in Cantonese sausage.

PRACTICAL APPLICATIONS

Cantonese sausage is a traditional Chinese meat product that is well accepted by consumers over the world. The aim of this article was to evaluate the effect of sugar level on changes in physicochemical and biochemical characteristics, including chemical composition, proteolysis, textural profile and microorganism of Cantonese sausage during processing. The results will be favor of process control of reduced sugar Cantonese sausage production that consumers can enjoy as part of an ongoing healthier diet and lifestyle.  相似文献

通过调节烹调用水的pH 值、离子强度,考察二者对煮制面条的感官性状、出品率、溶出率的影响,以确定烹调用水中最佳食醋和食盐的添加量。分析面条质构指标、感官指标及面条出品率和溶出率间的相关性,同时对该优化水煮制的面条和普通饮用水煮制的面条做了质构分析。结果表明:面条质构指标、感官指标及面条出品率和溶出率间存在着显著的相关性,不同的水煮条件会对面条品质产生影响,当烹调用水中9°食醋添加量为1.2%(V/V)食盐添加量为0.3g/100L 时,面条的感官性状、黏附性及弹性得到改善。  相似文献

BACKGROUND: Chapati preparation involves various processing steps such as mixing the flour into dough, sheeting and baking. During these processing steps, flour components are likely to undergo changes in their nutrient and polyphenol composition and their antioxidant properties due to phenol‐mediated crosslinking of proteins and carbohydrates. Therefore, in the present study, changes in nutritional, nutraceutical and antioxidant properties of chapatis prepared from doughs treated with amylases and xylanase were determined. RESULTS: An increase in insoluble dietary fibre content and a decrease in soluble polyphenol content were observed during preparation of control chapatis from whole wheat flours. However, significant increases in soluble dietary fibre and soluble polyphenol contents were observed in chapatis prepared from amylase‐treated doughs compared with control chapatis. Extracts of chapatis prepared from amylase‐ and xylanase‐treated doughs showed better antioxidant properties than extracts of control chapatis. Among these enzyme treatments, chapatis prepared from amylase‐treated doughs showed better antioxidant properties than chapatis prepared from xylanase‐treated doughs. High‐performance liquid chromatography analysis of extracts of chapatis prepared from doughs treated with amylases showed the presence of potential antioxidant phenolic acids such as caffeic, gentisic and syringic acids in addition to the phenolic acids present in control chapatis. CONCLUSION: Treatment of doughs with amylases increased the contents of soluble dietary fibre and soluble polyphenols as well as improving the antioxidant properties of chapatis. The aim of this work is to model the variation of texture parameters in cakes during staling. The evolution was studied in layer cakes (cake A) and sponge cakes (cake B). The effect of storage temperature and the addition of fiber, xanthan gum (cake A) and emulsifier (cake B) were also studied. The best model to adjust the texture parameters variation during storage in both kinds of cakes was square root x ( y = a + b * x1/2 ), except for firmness and springiness in cakes B. Firmness and springiness were adjusted the best to the linear model. In the model, y stood for the textural parameters and x for the time. a and b were related to the initial value of the studied parameter and with its change over time respectively. In both kinds of cakes, A and B, the firmness and gumminess increased, and the cohesiveness, springiness and resilience decreased, as the storage time increased. The increase in the storage temperature and the addition of fiber minimized the firmness changes in both kinds of cakes.

PRACTICAL APPLICATIONS


This methodology simplifies the study of cake textural parameters during storage and the result interpretation. Moreover, the correlation analysis has demonstrated that the number of textural parameters of cakes to study can be reduced.  相似文献

The viscoelastic properties of individual rice grains were measured by using a novel oscillatory squeezing instrument. Specifically, rice grains at different moisture contents and cooking durations were chosen as the model grain, and their viscoelastic characteristics, namely viscous modulus and elastic modulus, were determined. During the measurement, the grains were squeezed between a rigid bottom plate and a top round element oscillating at random frequencies in the range of 10–30,000 rad/s. The mechanical impedance of the rice samples, defined as the ratio between the force applied to the samples and the oscillation velocity, was obtained and used to calculate viscoelastic parameters. Measurements with the grains having moisture content between 12.8 and 29.1% indicated that both viscous and elastic moduli of the samples decreased significantly with increasing moisture content. The measured mechanical impedances of the samples showed that changes in viscoelastic properties for various cooking periods can be also monitored using the proposed oscillatory squeezing method.

PRACTICAL APPLICATIONS


In this study, a method for measuring viscoelastic properties of individual rice grain is presented. The technique is simple and easy to use. It can generate data for both elastic and viscous modulus properties for a single grain. There may be various practical applications for this instrument, such as textural characterization of grains having various chemical compositions and effect of cooking parameters on texture. The presented method can be also used to obtain textural differences between different varieties.  相似文献

研究了脱毒亚麻饼粉的不同添加比例对馒头比容、色泽、质构、感官和营养等品质的影响。结果表明:添加过多的脱毒亚麻饼粉,会使馒头的比容、扩展比下降以及色泽变暗;质构结果表明,随着脱毒亚麻饼粉添加比例的增加,馒头的硬度、胶粘性与咀嚼性不断增加,弹性、内聚性与回复性不断减小;馒头的油脂、蛋白质和灰分含量逐渐增加,氨基酸含量除脯氨酸外均呈增加趋势,木酚素含量也显著增加(p0.05),添加15%脱毒亚麻饼粉馒头的木酚素含量高达3.34 mg/g;馒头的感官评分随着脱毒亚麻饼粉的添加比例增大逐渐降低,但添加3%和6%脱毒亚麻饼粉馒头的感官评分显著高于其他添加脱毒亚麻饼粉的馒头,二者的感官评分均大于90且没有显著性差异,因添加6%脱毒亚麻饼粉馒头含有更多的油脂、蛋白质和木酚素等营养物质,故选择脱毒亚麻饼粉的最佳添加比例为6%。  相似文献
