This study addressed determinations of the fatty acid profile of muscle, liver and mesenteric fat in European perch originating from natural aquifers and from intensive rearing in a closed circuit on an artificial feed mixture. The qualitative composition of fatty acids was identical in both groups of perch, except for 16:4 acid identified exclusively in the reared perch. The study demonstrated equal concentrations of saturated (SFA) and unsaturated (UFA) fatty acids in muscles, liver and mesenteric fat of both groups of perch. The wild fish, however, were characterised by lower concentrations of monoenoic (MUFA) and higher concentrations of polyenoic (PUFA) fatty acids. Analyses also demonstrated similar contents of n − 3 PUFA in muscles and their diversified concentrations in liver and mesenteric fat (higher in the wild fish), as well as a higher content of n − 6 PUFA in all samples. The lower content of MUFA in the wild perch was mainly due to lower concentrations of cis18:1 n − 9 and 20:1 n − 9, whereas the higher content of n − 3 PUFA was due to a higher concentration of DHA, and the higher content of n − 6 PUFA was due to a higher concentration of arachidonic acid (AA). The biggest differences between wild and reared perch were detected for AA. The wild and reared perch were also found to differ in the n − 3/n − 6 ratio (higher in the reared fish) and to have similar values for atherogenic index (AI) (except for liver and mesenteric fat) and thrombogenicity index (TI).  相似文献

Juvenile, red hybrid tilapia were fed diets containing cod liver oil (0%, 4%, 8%, 12% of total diet) substituted against corn oil. After 10 weeks, no significant differences between treatments were seen in weight gain, specific growth rate, feed conversion ratio, whole body or dorsal muscle (fillet) proximate composition. Gas chromatography revealed significant differences in the total n-3 content and fatty acid profiles of dorsal muscle. The total n-3 content of dorsal muscle increased from 7.6% to 18.6%, total n-6 content fell from 37.5% to 12.9% and docosahexanaenoic acid increased from 5.8–16.1% of total fatty acids, in fish fed 0% and 12% fish oil, respectively. The retention of eicosapentaenoic acid was low in all dietary groups, possibly indicating selective use as a substrate for β-oxidation. The results demonstrate the potential to enhance the total n-3 fatty acids and docosahexaenoic acid in tilapia fillets by increasing dietary fish oil.  相似文献

This randomized, double-blind, placebo-controlled, and parallel-design study was conducted to investigate the effect of a synbiotic product containing Lactobacillus acidophilus CHO-220 and inulin on the irregularity in shape of red blood cells (RBC) in hypercholesterolemic subjects. The subjects (n = 32) were randomly allocated to 2 groups, a treatment group (synbiotic product) and a control group (placebo), and received 4 capsules of either synbiotic or placebo daily for 12 wk. Morphological representation via scanning electron microscopy showed that the occurrence of spur RBC was improved upon supplementation of the synbiotic. In addition, the supplementation of synbiotic reduced the cholesterol:phospholipids ratio of the RBC membrane by 47.02% over 12 wk, whereas the control showed insignificant changes. Our present study also showed that supplementation of the synbiotic reduced the concentration of saturated fatty acids (SFA), increased unsaturated fatty acids (UFA), and increased the ratio of UFA:SFA over 12 wk, whereas the control showed inconspicuous changes. The alteration of RBC membrane was assessed using fluorescence anisotropy (FAn) and fluorescence probes with different affinities for varying sections of the membrane phospholipid bilayer. A noticeable decrease in FAn of three fluorescent probes was observed in the synbiotic group compared with the control over 12 wk, indicative of increased membrane fluidity and reduced cholesterol enrichment in the RBC membrane.  相似文献

The biometric and nutritional traits of European sea bass from organic or semi-intensive conventional production systems at two commercial sizes (small and medium) were compared. The analysis included a total of 80 specimens. The biometric traits and the texture were not affected by the rearing system, whereas they changed significantly with fish size. The fillet fatty acid profile varied significantly, both with rearing system and sea bass size, depending on the fatty acid profile of the diets. The ratio of n − 3 to n − 6 polyunsaturated fatty acids was higher (p < 0.001) in organic than in conventional fish (1.60 vs. 0.54) and in small than in medium-sized sea bass (1.15 vs. 0.98). Near infrared reflectance spectroscopy (NIRS) successfully classified fillets according to sea bass size in both fresh-minced and freeze-dried samples (90% correct classification), whereas it only classified organic vs. conventional sea bass fairly well (65-75% correct classification) for freeze-dried fillets.  相似文献

Structured triacylglycerols, containing medium chain fatty acids, were produced by acidolysis of virgin olive oil with caprylic or capric acid, at a molar ratio of olive oil:fatty acid of 1:2, at 45 °C for 24 h, in solvent-free media or in n-hexane, catalysed by Thermomyces lanuginosa (Lipozyme TL IM), Rhizomucor miehei (Lipozyme RM IM) and Candida antarctica (Novozym 435) immobilised lipases. Incorporations were always greater for capric than for caprylic acid. For both acids, higher incorporations were always attained in solvent-free media: the highest caprylic acid incorporations were obtained with Novozym 435 (25.5 mol%) and Lipozyme RM IM (25.7 mol%), while similar capric acid incorporations were obtained with all biocatalysts (27.1–30.4 mol%).  相似文献

Fructose, glucose and sucrose, as the major soluble sugars and citric and malic acids, as the major organic acids, were identified and determined in kale (Brassica oleraceae L. var. acephala DC., black cabbage) leaves. Fructose was the predominant sugar (2011 mg 100 g−1 dry wt) identified, followed by glucose (1056 mg 100 g−1 dry wt) and sucrose (894 mg 100 g−1 dry wt). The contents of citric and malic acids were at 2213 and 151 mg 100 g−1 dry wt in the leaves. The 16:0, 18:2n − 6 and 18:3n − 3 fatty acids were the most abundant fatty acids in the leaves. Considering the level of these fatty acids, 18:3n − 3 was found to be the highest (85.3 μg g−1 dry wt), contributing 54.0% of the total fatty acid content. Linoleic acid (18:2n − 6), being the second most abundant fatty acid was present at 18.6 μg g−1 dry wt, contributing 11.8% of the total fatty acid content. In the seed oil of kale, 22:1n − 9 was the most abundant fatty acid (4198 μg g−1 dry wt, 45.7%), with 18:2n − 6 (1199 μg g−1 dry wt, 12.3%) and 18:1n − 9 (1408 μg g−1 dry wt, 14.8%) being the second next most abundant fatty acids. The most abundant amino acid was glutamic acid (Glu) which was present at 33.2 mg g−1 dry wt. Aspartic acid, which was the second most abundant amino acid, was present at 27.6 mg g−1 dry wt and accounted for 10.2% of the total amino acid content of kale leaf. The amino acid content was assessed by comparing the percentages of the essential amino acids in kale leaf versus those of a World Health Organization (WHO) standard protein. The protein of kale leaf compares well with that of the WHO standard. Only one amino acid, lysine, had a score that fell below 100%; the lysine score of kale leaf was 95%. This study attempts to contribute to knowledge of the nutritional properties of the plant. These results may be useful for the evaluation of dietary information.  相似文献

Nutritional quality parameters (proximate and mineral composition, contents of glycogen, fatty acids, cholesterol, plant sterols, fat-soluble vitamins, carotenes) and ecophysiological and commercial quality indicators (Condition Index, percent content of meat and intervalvar fluid) of the striped venus clam, Chamelea gallina, from the central Adriatic coast of Italy were studied at seasonal intervals over a 1-year period. Contents of protein (8.55–10.7 g/100 g), total lipid (0.73–1.59 g/100 g), glycogen (2.25–4.96 g/100 g) and non-protein nitrogen (0.54–0.78 g/100 g) varied significantly during the year, reaching the highest values in winter, in coincidence with a peak of Condition Index. Gas chromatography of total lipids showed high percentages of n − 3 polyunsaturated fatty acids (33.7–41.9% of total fatty acids), in particular eicosapentaenoic (8.16–20.0% of total fatty acids) and docosahexaenoic acids (12.5–20.3% of total fatty acids) and low levels of total n − 6 polyunsaturated fatty acids (3.61–7.87% of total fatty acids). HPLC analysis of the unsaponifiable lipids showed low levels of cholesterol, the dominant sterol (28.3–34.2 mg/ 100 g), and variable amounts of plant sterols (stigmasterol + campesterol, β-sitosterol, fucosterol + brassicasterol), α-tocopherol and carotenes.  相似文献

Carp viscera oil can be obtained by both ensilage and fishmeal processes. This study examined the refinement of carp (Cyprinus carpio) oils obtained by both processes, and compared crude, neutralised, bleached, winterised and deodorised oils’ characteristics and lipid profiles. Refined oils obtained by the two processes did not present significant difference (> 0.05) for Lovibond colour, free fatty acids, and thiobarbituric acid values. The major fatty acids identified in the carp crude, bleached and refined oils were oleic, palmitic, palmitoleic, linoleic and linolenic, constituting approximately 69.6% of the total fatty acids of the oils. The n − 3/n − 6 ratio was approximately 1.05 for refined oil. Therefore, carp viscera refined oil can be considered a rich source of essential fatty acids of the n − 3 and n − 6 series.  相似文献

The composition of three porcine muscles (Longissimus thoracis: LT, Semitendinosus: ST, Masseter: MS) was characterized and its link with muscle quality was evaluated. The LT muscle had a higher content of tyrosine, tryptophan, and carbohydrates and a lower content of vitamin E and haem iron than the MS muscle, while the ST had similar composition to MS but a lower content of haem iron. Large differences between muscles were observed in relative amounts of most of the major fatty acids. The LT muscle had higher saturated fatty acids (SFA) and n− 6:n− 3 fatty acid ratio, and lower polyunsaturated fatty acids (PUFA), PUFA:SFA ratio, unsaturation index and average fatty acid chain length than the ST and MS muscles. Muscle pH, redness and chroma were positively correlated with vitamin E and unsaturated lipids and negatively correlated with tyrosine, tryptophan, carbohydrates and saturated lipids, whereas muscle lightness and expressible juice showed similar correlations but an opposite sign with these variables.  相似文献

An extracellular lipase derived from Bacillus circulans, isolated from marine macroalga, Turbinaraia conoides, was used to prepare n-3 polyunsaturated fatty acid (PUFA) concentrates from sardine oil triglycerides. The enzyme was purified 132-fold with specific activity of 386 LU/mg. The purified lipase was able to enrich sardine oil with 37.7 ± 1.98% 20:5n-3 and 5.11 ± 0.14% 18:3n-3 in the triglyceride fraction after 3 h of hydrolysis. Lower hydrophobic constants of n-3 fatty acids (18:3n-3logP = 5.65; 20:5n-3logP = 5.85, respectively) than n-6 (20:4n-6logP = 6.16) resulted in higher hydrolytic resistance of the former toward lipase, leading to their enrichment in the triglyceride fraction. Lipase-catalysed hydrolysis of sardine oil for 3 h, followed by urea complexation, provided free fatty acids containing 51.3 ± 4.65% 20:5n-3. The purified methyl ester of 20:5n-3 (68.29 ± 2.15%) from the urea concentrate was attained by chromatography on argentated neutral alumina.  相似文献

The present study was conducted to evaluate the ability of horse fat produced in Uruguay, compared with other lipid sources supplemented in the diet of laying hens, to modify the lipid composition and the n − 6/n − 3 fatty acid ratio of the produced eggs. For this purpose, 60 laying hens (Gallus domesticus) were fed for 30 days with five experimental diets (12 hens/diet) containing 3% sunflower oil (SO), rice oil (RO), beef tallow (BT), pressed-fat (PF), obtained by pressing fat from bovine viscera, and horse fat (HF) obtained from horse bone medulla. Throughout the trial, feeding rate, shell index, weight and total lipid contents of eggs, were not affected by the different diets. Feeding on the SO and RO diets significantly increased the amount of linoleic acid of the egg, although it was lower in the RO than in the SO eggs. Diet BT did not affect the saturated fatty acid content of the yolks. The diets with animal fats containing 18:3n − 3 (diets PF and HF), resulted in a significant increase in the n − 3 fatty acid contents of the eggs, through an increase of linolenic (18:3n − 3) and docosahexaenoic acid (DHA, 22:6n − 3) contents. Eggs from hens fed the HF diet showed increased linolenic acid (46 mg/yolk) and DHA (71 mg/yolk, 1.7% of total fatty acids) contents. These levels were obtained after two weeks of feeding. Moreover, the fatty acid profiles of eggs from treatment HF were not significantly affected by thermal treatment of the yolks. In conclusion, the fat from horse bone medulla, as produced in Uruguay, can be considered as a suitable lipid source for diets of laying hens, to modify the nutritional composition of the eggs in n − 3 PUFA content, especially DHA, and consequently, the n − 6/n − 3 fatty acid ratio.  相似文献

Thirty lambs were assigned to the following treatments: control diet (C) rich in omega-3 fatty acids; C plus 900 ppm red wine extract (RWE), or C plus 300 ppm vitamin E (VE). Oxidative stability and sensory properties of chops stored in MAP (70% O2/30% CO2) during 12 days were evaluated. Chops from the VE group showed lower lipid oxidation (p < 0.001) and protein carbonylation (p < 0.05), stable omega-3 fatty acids proportions and overall liking sensory scores (p < 0.05). Dietary RWE supplementation did not influence oxidative stability of chops, however levels of C20:5n-3 were greater (p < 0.05) and n-6/n-3 ratio (p < 0.01) was lower, relative to controls.  相似文献

Mortadellas manufactured using Caiman yacare meat (70%) and pork fat (30%) were reformulated by substituting pork fat with increasing amounts of soybean oil (25%, 50%, and 100%) and evaluated 7, 30, and 60 days post-manufacture. The substitutions resulted in an increase in fat content and in the percentage of polyunsaturated fatty acids (total PUFA; 18:2 n − 6 and 18:3 n − 3), and a reduction in saturated fatty acids (total SFA; 14:0 and 16:0). These alterations reduced (P < 0.01) the indices of atherogenicity and thrombogenicity by 4- to 5-fold in the formulation with 100% soybean oil compared to the original formulation. The levels of TBARS obtained at day 7 were positively correlated (P < 0.01) with 18:2 n − 6 and 18:3 n − 3 (r = 0.83 and 0.84, respectively) and negatively correlated with 17:0 and 17:1 (r = − 0.91 and − 0.89, respectively). All formulations received favourable overall acceptability by the sensory panel.  相似文献

Twenty-five mature Small Tail Han ewes were used to investigate the effects of supplemental oilseeds in the diet (sunflower seed, safflower seed, rapeseed, and linseed) on fatty acid composition in different tissues (longissimus lumborum muscle, tail fat, subcutaneous back fat and kidney fat). Averaged over tissue, safflower and sunflower seed was most effective (P < 0.05) in enhancing the concentration of conjugated linoleic acid compared to rapeseed, linseed, and control (1.35% and 1.15% vs. 0.80%, 0.80%, and 0.75%, respectively). Linseed supplemented ewes had lesser n−6/n−3 value (2.48, P < 0.05) compared to sunflower and safflower supplemented ewes (6.12 and 3.90, respectively). Fatty acid composition for most major fatty acids differed among tissues (P < 0.05) but tissue differences varied depending on oilseed supplement (P < 0.05). Proportions of conjugated linoleic acid were greatest in tail fat (1.54% vs. 0.82%, 0.79% and 0.70% for kidney, back, and muscle fat, P < 0.05) as were total unsaturated fatty acids (49.1% vs. 42.4%, 36.7% and 33.4% for muscle, back, and kidney fat, P < 0.05) and tail fat was the most responsive tissue to improvement in fatty acid profile through supplementation. Beneficial fatty acid content of tissues can be increased by oilseed supplementation, but the magnitude of increase varies according to tissue.  相似文献

The main goal of this study was to develop tools for genetic selection of animals producing milk with a lower concentration of saturated fatty acids (SFA) and a higher concentration of unsaturated fatty acids (UFA). The reasons for changing milk fatty acid (FA) composition were to improve milk technological properties, such as for production of more spreadable butter, and milk nutritional value with respect to the potentially adverse effects of SFA on human health. We hypothesized that genetic polymorphisms in solute carrier family 27, isoform A6 (SLC27A6) fatty acid transport protein gene and fatty acid binding protein (FABP)-3 and FABP-4 (FABP3 and FABP4) would affect the selectivity of FA uptake into, and FA redistribution inside, mammary epithelial cells, resulting in altered FA composition of bovine milk. The objectives of our study were to discover genetic polymorphisms in SLC27A6, FABP3, and FABP4, and to test those polymorphisms for associations with milk FA composition. The results showed that after pairwise comparisons between SLC27A6 haplotypes for significantly associated traits, haplotype H3 was significantly associated with 1.37 weight percentage (wt%) lower SFA concentration, 0.091 lower SFA:UFA ratio, and 0.17 wt% lower lauric acid (12:0) concentration, but 1.37 wt% higher UFA and 1.24 wt% higher monounsaturated fatty acid (MUFA) concentrations compared with haplotype H1 during the first 3 mo of lactation. Pairwise comparisons between FABP4 haplotypes for significantly associated traits showed that haplotype H3 was significantly associated with 1.04 wt% lower SFA concentration, 0.079 lower SFA:UFA ratio, 0.15 wt% lower lauric acid (12:0), and 0.27 wt% lower myristic acid (14:0) concentrations, but 1.04 wt% higher UFA and 0.91 wt% higher MUFA concentrations compared with haplotype H1 during the first 3 mo of lactation. Percentages of genetic variance explained by H3 versus H1 haplotype substitutions for SLC27A6 and FABP4 ranged from 2.50 to 4.86% and from 4.91 to 7.22%, respectively. Tag single nucleotide polymorphisms were identified to distinguish haplotypes H3 of SLC27A6 and FABP4 from others encompassing each gene. We found no significant associations between FABP3 haplotypes and milk FA composition. In conclusion, polymorphisms in FABP4 and SLC27A6 can be used to select for cattle producing milk with lower concentrations of SFA and higher concentrations of UFA.  相似文献

Five varieties of Spanish dry cured ham were studied to assess their nutritional value in relation to fatty acids. Ten hams of the Traditional Speciality Guaranteed (TSG) “Jamón Serrano”, and the Protected Designations of Origin (PDO) “Jamón de Teruel”, “Dehesa de Extremadura”, “Jamón de Huelva” and “Guijuelo”, were analysed. Iberian hams (“Dehesa de Extremadura”, “Jamón de Huelva” and “Guijuelo”) were characterised by a lower proportion of saturated fatty acids (SFA) and a significantly higher percentage of monounsaturated fatty acids (MUFA) than white hams (“Jamón Serrano” and “Jamón de Teruel”). The Iberian varieties also showed a high proportion (approximately 50%) of C18:1 n − 9, while “Jamón Serrano” showed the highest percentage of C18:2n−6. The PUFA/SFA (P/S) ratio of the five varieties was ? 0.19, with the highest ratio corresponding to “Jamón Serrano” (0.3). The n−6/n−3 ratio was in the order of 13/1 in “Jamón Serrano” and “Jamón de Huelva”, and ranged from 9.3/1 to 10.3/1 in the other varieties. The most favourable hypocholesterolemic/Hypercholesterolemic (h/H) ratio (?2.5) was found in the Iberian varieties. TSG “Serrano” was shown to supply the lowest percentage of the recommended daily intake of MUFA, the Iberian varieties showed the highest percentage of the daily intake of long-chain PUFA, and PDO “Dehesa de Extremadura” showed the highest percentage of the intake of C18:3n−3. The higher MUFA proportion and h/H ratio observed in the Iberian hams, together with their contribution to the recommended daily intake of fatty acids, would make these products more suitable for healthier diets, although consumption must be recommended in moderation.  相似文献

Chinese mitten crab (Eriocheir sinensis) was analyzed for proximate composition, minerals, amino acids and fatty acid composition, and also evaluated for nutritional quality. The yields of crab meat and edible viscera were 24.2% and 9.2%, respectively. The crab meat contained 18.9% crude protein. About 80% of the protein resided in the crab meat portion, while about 90% of the fat was in the viscera. Chinese mitten crab was an excellent source of minerals, particularly zinc, iron, copper and phosphorus. The crab protein contained high amounts of glutamic acid (151 mg/g), aspartic acid (99 mg/g), arginine (99 mg/g), lysine (81 mg/g) and leucine (77 mg/g), and it was a high quality protein with well-balanced essential amino acid compositions. Twenty six fatty acids were found in the crab oil. The monounsaturated fatty acids were predominant with a percentage of 49.8. Oleic acid (18:1) was the dominant fatty acid, followed by palmitoleic acid (16:1), palmitic acid (16:0) and linoleic acid (18:2n − 6); and the percentages were 31.0, 14.3, 14.2 and 11.9, respectively. The ratio of n − 6/n − 3 polyunsaturated fatty acids (PUFAs) was 2.2, and this is a n − 3 PUFA-rich food. In short, the results showed that Chinese mitten crab is a nutritious food.  相似文献

The effect of the fattening diet on the intramuscular fatty acid composition was studied on a total of 96 hybrid rabbits. Animals were slaughtered at weaning, at 1.6 kg after the consumption for three weeks of various diets containing low (14.28%), medium (18.04%) and high (20.48%) fibre content, and at 2 and 2.30 kg after the consumption of a common non-medicated concentrate, as occurs commercially. Weight had an effect on the percentage of intramuscular fat that decreased as weight increased, as well as on the percentage of most fatty acids except for saturated fatty acids. The percentage of monounsaturated fatty acids increased from weaning whereas polyunsaturated fatty acids subsequently decreased due to a reduction of n-6 fatty acids. In general, diet affected the fatty acid profile in rabbits slaughtered at 1.6 kg, which the rabbits were having exclusively one of the three fattening diets. The finishing common diet seems to reduce most differences due to the growing diet which, if rich in fibre, would produce a more favourable final n-6/n-3 ratio.  相似文献

The total fat contents and the fatty acid compositions of three common Mediterranean fish, namely sardine (Sardina pilchardus), anchovy (Engraulis encrasicholus) and picarel (Spicara smaris) were determined at bimonthly intervals for a one-year period. The purpose of this work was to study the seasonal variation of the fatty acids in the three fish that are some of the best sources of n − 3 fatty acids. The fat and fatty acid content of the investigated fish species show a significant seasonal dependency. Two of the fish (anchovy and picarel) have the highest fat content during the late winter – spring period. On the other hand, sardine shows the highest fat concentrations during the spring-early summer period. The fish that showed the highest variation in fatty acid composition was the anchovy. The sardine was found to be the best source of n − 3 fatty acids during the one-year period (35.35 g/100 g fatty acids). Finally the picarel had the highest oleic acid content (on average, 13.89/100 g fatty acids).  相似文献

Four underutilized Georgia-grown fruit crops, namely loquat (Eriobotrya japonica), mayhaw (Crataegus sp.), fig (Ficus carica), and pawpaw (Asimina triloba), and their leaves were analysed for total polyphenols by Folin–Ciocalteau method, and antioxidant capacity by ferric-reducing antioxidant power (FRAP) and Trolox-equivalent antioxidant capacity (TEAC) assays. Organic acids and phenolic compounds were identified by RP-HPLC. For lipid profile, fruits were separated into two fractions – seed and fruit (i.e., without seed); lipid was extracted using the Folch method and analysed for fatty acids, phytosterols, tocopherols, and phospholipids. The major organic acid identified in all samples was malic acid (177–1918 mg/100 g FW). The predominant phenolic acids in all the fruits were gallic (1.5–6.4 mg/100 g FW) and ellagic (0.2–33.8 mg/100 g FW), and the most abundant flavonoid was catechin (12.2–37.8 mg/100 g FW). Total lipid content varied from 0.1% in mayhaw fruit to 21.5% in pawpaw seed. Linoleic acid was the predominant fatty acid in all of the samples (28.2–55.7%).  相似文献
