The application of Kluyveromyces marxianus (IFO 288), Lactobacillus delbrueckii ssp. bulgaricus (ATCC 11842) and Lactobacillus helveticus (ATCC 15009) as starter cultures for sourdough bread making was examined. Production of lactic and acetic acids, bread rising, volatile composition, shelf-life and organoleptic quality of the sourdough breads were evaluated. The amount of starter culture added to the flour, the dough fermentation temperature and the amount of sourdough used were examined in order to optimise the bread making process. The use of mixed cultures led to higher total titratable acidities and lactic acid concentrations compared to traditionally made breads. Highest acidity (3.41 g lactic acid/kg of bread) and highest resistance to mould spoilage were observed when bread was made using 50% sourdough containing 1% K. marxianus and 4% L. delbrueckii ssp. bulgaricus. The use of these cultures also improved the aroma of sourdough breads, as shown by sensory evaluations and as revealed by GC–MS analysis.  相似文献

Quality and antioxidant property of buckwheat enhanced wheat bread   总被引:1,自引:0,他引:1  
Common buckwheat (Fagopyrium esculentum Moench) was used to substitute 15% of wheat flour to make buckwheat enhanced wheat breads. Proximate composition, physical quality, functional components and antioxidant properties of buckwheat enhanced wheat breads were analysed and compared with those of white bread. Specific volumes of three breads were 6.10–6.75 cm3/g. Buckwheat enhanced wheat bread showed lower lightness and whiteness index values and higher redness and yellowness values. On a seven-point hedonic scale, all sensory results were 5.33–5.91, indicating that three breads were moderately acceptable. No differences were found in appearance, colour and overall sensory attributes for three breads, whereas both buckwheat enhanced wheat breads were rated higher in flavour and mouth feel. Buckwheat enhanced wheat bread contained more rutin and quercetin as expected. Buckwheat enhanced wheat bread was good in antioxidant activity, reducing power and 1,1-diphenyl-2-picrylhydrazyl radical scavenging ability with unhusked buckwheat enhanced wheat bread being the most effective. Overall, buckwheat enhanced wheat bread could be developed as a food with more effective antioxidant properties.  相似文献

Barley is a desirable food ingredient, with health benefits provided by a β-glucan fibre fraction. A hull-less barley flour and flakes were incorporated into white and wholegrain wheat bread in quantities usually applied in practice. The breads were evaluated for nutritional composition and sensory properties and compared to standard products as controls. The supplemented breads were high in fibre, zinc and selenium content. It was estimated that a 300-gram daily portion of such breads could meet up to 40% of dietary recommended intakes for selenium and 70–75% of recommended daily values for β-glucan. Regarding sensory quality, the only significant differences (p < 0.05) were higher taste and lower volume in the white supplemented breads and lower crumb elasticity in the white bread made with barley flour. Hull-less barley can substantially contribute to an adequate intake of selenium and β-glucan. In addition, supplemented breads were not found to pose a significant risk, with regard to excessive intakes of heavy elements (Pb, Cd, As).  相似文献

In this study, gluten-free bread formulations using chestnut and rice flours at different ratios (0/100, 10/90, 20/80, 30/70, 40/60, 50/50 and 100/0) were tested. In addition, the influence of hydrocolloid blend (xanthan-locustbean gum (LBG), xanthan-guar gum blend) and emulsifier DATEM on the rheological properties of dough formulations and quality parameters of breads were also investigated for the samples having chestnut/rice flour ratio of 10/90, 20/80, 30/70 and 40/60. Herschel-Bulkley model was found to explain the flow behavior of all dough formulations. The power-law index (n) of dough samples at 25 °C ranged from 0.52 to 0.87, the consistency index (K) of the samples ranged from 3.6 to 79 Pa sn and the yield stress of the samples ranged from 4.8 to 85.9 Pa. The breads prepared with chestnut/rice flour ratio of 30/70 and containing xanthan-guar blend and emulsifier, had higher quality in terms of hardness, specific volume, color and sensory values. However, elevated levels of chestnut flour led to some deterioration in quality parameters (low volume, harder texture and darker color) regardless of gum blend and emulsifier addition.  相似文献

Maize (Zea mays L.) processing produces large quantities of defatted maize germ (DMG) that is being used mainly for animal feed. The objective of this study was to exploit use of this nutrient-rich by-product in bread by replacing wheat flour at 5-20 g/100 g levels. Breads prepared with wheat-DMG flour blends were analyzed for loaf volume, density, instrumental dough hardness and bread firmness, Hunter color (“L”, “a”, “b”, chroma, and hue angle), and selected sensory attributes. Loaf volumes decreased significantly, from 318.8 ml to 216.3 ml, as the DMG flour supplementation was increased from 0 to 20 g/100 g; a similar effect was observed for bread specific volume. Increase in dough hardness (7.56-71.32 N) was directly related to increase in DMG flour levels. Instrumental firmness values were significantly higher for breads containing DMG flours, 61.58 N in 20 g/100 g DMG bread versus 32.84 N for the control bread, made with wheat flour only. The control bread was lighter in color, as shown by higher “L” values, than those having DMG flour, with chroma and hue angle values significantly higher in treatment breads. In general, no differences were observed for the sensory attributes of crumb color, cells uniformity, aroma, firmness, mouthfeel, and off-flavor in breads with up to 15 g/100 g DMG flour, while the overall acceptability scores showed a mixed pattern. The results of this study demonstrated that acceptable quality bread could be made with DMG flour addition at ≤15 g/100 g.  相似文献

In this study, the rheological properties of rice bread dough containing different gums with or without emulsifiers were determined. In addition, the quality of rice breads (volume, firmness and sensory analysis) was evaluated. Different gums (xanthan gum, guar gum, locust bean gum (LBG), hydroxyl propyl methyl cellulose (HPMC), pectin, xanthan–guar, and xanthan–LBG blend) and emulsifiers (Purawave and DATEM) were used to find the best formulation for gluten-free breads. Rice dough and wheat dough containing no gum and emulsifier were used as control formulations. The rice dough containing different gums with or without emulsifiers at 25 °C showed shear-thinning behavior with a flow behavior index (n) ranging from 0.33–0.68 (except pectin containing samples) and consistency index (K) ranging from 2.75–61.7 Pa sn. The highest elastic (G′) and loss (G″) module were obtained for rice dough samples containing xanthan gum, xanthan–guar and xanthan–LBG blend with DATEM. When Purawave was used as an emulsifier, dough samples had relatively smaller consistency index and viscoelastic moduli values compared to DATEM. The viscoelastic parameters of rice dough were found to be related to bread firmness. Addition of DATEM improved bread quality in terms of specific volume and sensory values.  相似文献

Physico-chemical properties and volatile compounds of three commercial Altamura breads were evaluated during storage at 25 °C. Two protected denomination of origin (PDO) artisanally produced Altamura breads (Bari, Italy), characterized either by high (High A) or low (LowA) loaf, and an industrial product, commercialized as “Altamura like” (IndA), were studied.HighA and LowA breads had a tick crust that was also detached from the crumb creating an air cushion between crust and crumb. IndA products had a thinner crust, a more homogeneous crumb structure as well as a more homogeneous water distribution among the different portion of the bread loaf than HighA and LowA. A more pronounced water gradient characterized the artisanal breads. Crust and under crust portion of all breads, and crumb for IndA product, underwent a significant reduction of moisture content and aw during storage. Both artisanal breads were subjected to a more significant crumb hardening than IndA sample. Fresh crusts of artisanally produced breads were also significantly harder than IndA. Fresh IndA samples were significantly less cohesive and less springy than artisanal products; cohesiveness significantly decreased in all samples during storage. A more complex gas chromatographic profile was found in the artisanal bread as a larger amount of volatile compounds was present as compared to the IndA bread. Volatile compounds originated both from microbial activity and non-enzymatic browning. Larger amount of volatile compounds characteristics of yeast fermentation was found in IndA. Volatiles decreased over storage in both samples, more significant in the IndA product.  相似文献

A freshness index called the global stablity index (GSI) applicable to follow the variation of multi-quality indices of bighead carp (Aristichthys nobilis) heads during different temperatures storage was evaluated. Quality indices (sensory score, total aerobic counts, volatile base nitrogen, and K value) were estimated and calculated into the single parameter GSI at −3, 0, 3, 9 and 15 °C. GSI was then kinetically modeled to describe the dependency of GSI with temperature and storage time. The calculated data of GSI were satisfactorily described by a zero order kinetic model. The activation energy (EA) and the corresponding pre-exponential constant (k0) of GSI were 85.61 kJ/mol and 1.14 × 1015, respectively. Relative errors between predicted and observed GSI values were all below 10% before the 15th day. Thus, the established model based on GSI could effectively predict the freshness of bighead carp heads at the range of −3 and 15 °C during different temperatures storage.  相似文献

Chemical composition, baking process and structure of breads influence their degradation in digestion leading to different postprandial responses. Rye bread has a very different structure as compared to wheat bread, and rye breads are known to induce lower postprandial insulin responses than wheat bread. The aim of this study was to find out potential differences in mastication and initial starch hydrolysis rate of rye and wheat breads. Three rye breads (wholemeal rye, endosperm rye and endosperm rye with gluten) and wheat bread were masticated by fifteen participants and the process was monitored using electromyography. The particle size distribution and initial in vitro starch hydrolysis of the bread boluses were analysed. Specific volume correlated negatively and closed porosity of breads correlated positively with work required for mastication. When compared to wheat bread, wholemeal rye bread required more work for mastication process (p = 0.004). Rye breads were degraded to smaller particles than wheat bread during mastication. There was a trend (p = 0.098) towards slower in vitro starch hydrolysis rate in rye bread boluses than in wheat bread boluses. The results indicate that the digestion process of rye breads differs from that of wheat bread already in the early phase of digestion. This may be one reason behind the unique postprandial responses reported for rye breads.  相似文献

An alternative freshness index method for abalone (Haliotis asinina) muscle packaged under atmospheric air (Air) and modified atmosphere (MA) of 40% CO2: 30% O2: 30% N2 packaging conditions and stored at 2 ± 1 °C was developed. Biochemical indices covering pH, total volatile basic nitrogen (TVB-N), trimethylamine (TMA) and nucleotide degradation products, as well as instrumental texture and color of the packaged abalones, were determined. Sensory characteristics including odor, color and appearance were evaluated and then summarized into overall freshness scores (freshness index). The biochemical and instrumental analyses were then calibrated with the freshness index, using an artificial neural network algorithm. The neural network was shown to be capable of correlating biochemical and instrumental analyses with the freshness index. A useful prediction was possible, as measured by a low mean square error (MSE = 0.092) and a regression coefficient (R2 = 0.98) between true and predicted data.  相似文献

Wheat flour (WF) flat bread was prepared with varying levels of wholegrain “white” sorghum flour (WSF) or “red” sorghum flour (RSF). Farinograph dough rheology indicated reduced water absorption and stability time and increased breakdown with increased sorghum flour addition. The total phenolic content and antioxidant capacity of the 40% RSF flat bread >40% WSF flat bread > control (100% WF) flat bread. The rapidly digestible starch (RDS) level was lower in the 40% WSF and 40% RSF flat breads than the control (100% WF). Hedonic sensory evaluation indicated that sorghum addition did not reduce the sensory preference for the flat breads. Human clinical studies are now required to determine if the lower levels of RDS and higher antioxidants observed in the sorghum containing flat breads translate into beneficial low glycemic index and reduced oxidative stress in vivo.  相似文献

Currently UK fruit and vegetable intakes are below recommendations. Bread is a staple food consumed by approximately 95% of adults in western countries. In addition, bread provides an ideal matrix by which functionality can be delivered to the consumer in an accepted and convenient food. Therefore, enriching bread with vegetables may be an effective strategy to increase vegetable consumption. This study evaluated bread enriched with red beetroot, carrot with coriander, red pepper with tomato or white beetroot (40 g vegetable per 100 g) compared to white control bread (0 g vegetable) for consumer acceptance. Consumers (n = 120) rated their liking of the breads overall, as well as their liking of appearance, flavour and texture using nine-point hedonic scales. Product replacement and purchase intent of the breads were rated using five-point scales. The effect of providing consumers with health information about the breads was also evaluated. There were significant differences in overall liking (P < 0.0001), as well as liking of appearance (P < 0.0001), flavour (P = 0.0002) and texture (P = 0.04), between the breads. However, the significant differences resulted from the red beetroot bread which was significantly (P < 0.05) less liked compared to control bread. There were no significant differences in overall liking between any of the other vegetable-enriched breads compared with the control bread (no vegetable inclusion). The provision of health information about the breads did not increase consumer liking of the vegetable-enriched breads. In conclusion, this study demonstrated that vegetable-enriched bread appeared to be an acceptable strategy to increase vegetable intake, however, liking depended on vegetable type.  相似文献

Leuconostoc citreum HO12 and Weissella koreensis HO20 isolated from kimchi were evaluated as starter cultures in the making of whole wheat sourdough bread. After 24 h of fermentation at 25 °C, both lactobacilli grew to the final cell numbers of ca. 109 cfu/g dough, and both doughs had similar pHs and total titratable acidities. In addition, the fermentation quotient of the dough with Lc. citreum HO12 was slightly lower than that of the dough with W. koreensis HO20 (1.6 versus 2.8). Sourdoughs and bread with 50% sourdough produced with the starter cultures exhibited consistent ability to retard the growth of bread spoilage fungi (Penicillium roqueforti and Aspergillus niger) and rope-forming bacterium (Bacillus subtilis). Sourdough breads underwent a significant reduction in bread firming during storage. It seems that both lactobacilli have the potential to improve the shelf-life of wheat bread. The results indicate that the selected lactobacilli have unique fermentation characteristics and produce sourdough breads with overall satisfactory quality.  相似文献

To study quality changes in cold chain circulation, kinetic models were developed to predict the freshness of crucian carp at different temperatures during storage. Electrical conductivity (EC) and freshness indictors (Total volatile basic nitrogen, Total aerobic count and K-value) at 270, 273, 277, 282 and 288 K were accessed to investigate the relation between the crucian carp’s freshness and storage condition (storage temperature and storage time). The kinetic models were developed based on Arrhenius equation. Activation energies (EA) of EC and Total aerobic count (TAC) are 97.75 and 105.93 kJ mol−1, and corresponding rate constants (k0) are 5.25 × 1016 and 5.70 × 1018, respectively. Relative errors between predicted and values of EC are all within ±5%. The kinetic model established through EC can accurately describe the changes of crucian carp’s quality during the storage within 270-288 K. The kinetic model established based on TAC can accurately forecast crucian carp’s early freshness.  相似文献

The aim of this study was to investigate the effect of Montbéliarde (Mb) gene frequency on fatty acid composition and sensory properties of Italian Simmental (IS) steaks (longissimus thoracis m.). Twenty-seven bulls belonging to three strains with different percentages of Mb genes: traditional (ISt), without Mb ascendants (ISt = 0% Mb genes), cross-strain (ISmt = 37.5–50% Mb genes), Montbéliarde strain (ISm = 87.5–100% Mb genes) and balanced for stearoyl Co-A desaturase genotype were considered. ISt has the highest C20:4 n−6 (P < 0.01), C22:4 n−6 (P < 0.05) and total PUFA n−3 level (P < 0.01), while ISt and ISmt have higher C18:3 n−3 (P < 0.05) and slightly lower MUFA (P = 0.08) than ISm. Sensory tests indicated that the three experimental groups can be differentiated; moreover, ISmt meat is perceived as less hard (P < 0.01), less chewable (P < 0.01) and less fibrous (P < 0.05) than ISt meat.  相似文献

The role of sensory attributes and storage time information in driving liking for and perceptions of freshness for ready to eat vegetables was investigated in mixed salad leaves for different storage times (0, 3, 7 and 9 days). A modified Repertory Grid Method was used to identify ten attributes describing consumer's perception of sensory properties over storage. Eighty-one consumers rated the overall liking, the intensity of sensory attributes and the level of freshness in salad samples at different storage times. Freshness was evaluated in blind and informed conditions. Furthermore, consumers filled in a Food Choice Questionnaire and rated the importance of six attributes known to be important for ready to eat salad choice. The relationships between sensory properties significantly affected by storage time, perceived freshness and liking showed that both liking and freshness were positively related to appearance attributes (green colour, salad assortment and leaf turgidity). The perceived level of freshness, expiry date and appearance were confirmed as the most important attributes for ready to eat salad choice. Two clusters of consumers (Cl1: n = 49; Cl2: n = 32) were identified based on the mean liking rating. The positive effects on health and mood as well as ethical concerns drove food choice more in Cl1 than in Cl2 subjects. No significant effect of storage time was found on liking ratings expressed by Cl1 in blind conditions, while a significant decrease of perceived freshness was observed. On the other hand, results from Cl2 in blind conditions showed a significant decrease of both liking and perceived freshness. Information about storage time significantly affected freshness ratings in Cl1 but did not influence those from Cl2.Results suggest that collection of sensory data, affective responses and information about the background of subjects is needed to fully investigate the perceptions of freshness from a consumer perspective.  相似文献

Physical, chemical and sensory characteristics of meat were compared between non-domestic eland (Taurotragus oryx) bulls (n = 6) and domestic Fleckvieh (Bos taurus) bulls (n = 6) which were finished under controlled conditions of feeding and management. Musculus longissimus lumborum from eland were darker and less yellow in colour, with a higher pH24 and lower contents of intramuscular fat and total collagen, compared to cattle. Contents (mg/100 g muscle tissue) and proportions (g/100 g of FA determined) of SFA and MUFA were higher (P < 0.01) in cattle. Although the proportion of total PUFA were higher (P < 0.001) in eland, contents of PUFA were similar between species. Meat from cattle was consistently scored higher (P < 0.05) for sensory texture characteristics, juiciness, flavour, and overall acceptance. We concluded that bulls of eland provided low-fat meat with a beneficial fatty acid composition from a human nutrition perspective, but with lower sensory scores, compared to bull beef.  相似文献

Two mixed starter cultures were used for sourdough bread making to evaluate their ability to improve quality and increase bread shelf-life: Lactobacillus delbrueckii ssp. bulgaricus or Lactobacillus helveticus mixed with the lactose fermenting yeast Kluyveromyces marxianus as alternative baker’s yeast. Control sourdough breads (K. marxianus) without the addition of bacteria, were also prepared. The changes on the headspace aroma volatiles during storage were assessed using solid-phase microextraction (SPME) GC–MS analysis. The effect of these changes on bread flavour was evaluated by consumer preference evaluations and the results were co-evaluated with those from the GC–MS analysis. The obtained results showed differences in the volatile composition of the different types of breads examined, as well as dramatic decreases of the number and the amount of volatiles after five days of storage. The sourdough breads made with K. marxianus and L. bulgaricus, had a more complex aroma profile, longer shelf-life and achieved the highest scores in the sensory tests.  相似文献
