Dried rosemary and origanum were added to soybean oil, individually and in combination, to determine their effect on the oxidation stability of soybean oil. Samples were stored at two different temperatures (60°C and room temperature) and oxidation was determined by peroxide value and conjugated diene value. The treated soybean oil samples showed evidence of antioxidant activity at 60°C and at room temperature. Furthermore, it was observed that the herbs stored under room temperature had a higher activity compared to those stored at 60°C. 相似文献

以提取率为指标,运用单因素试验和响应面优化方法,研究玉米须中抗氧化物质的乙醇提取工艺。考察液料比、提取温度、提取时间、提取次数和乙醇体积分数的影响。结果表明,对提取率影响较大的因素是液料比、提取次数和乙醇体积分数,确定最佳提取工艺,即提取溶剂采用80%乙醇,液料比24∶1 mL/g,在60℃下提取90 min,共提取3次。采用该工艺,玉米须中抗氧化物质的提取率为3.72%。考察不同提取率的玉米须抗氧化物质对DPPH自由基和羟自由基的清除活性。结果显示,乙醇提取的玉米须抗氧化物质可以清除2种自由基,并且其提取率升高不影响对自由基的清除活性。 相似文献

采用反相高效液相色谱法测定油炸小食品中BHA、4HR、BHT、2,2-2甲基双(4-甲基6-叔丁基苯酚) (2246)的含量。采用V(甲醇):V(二氯甲烷)=9:1作提取剂,ODS-2HYPERSIL(250mm×4.6mm,5μm)色谱柱,体积分数80%的甲醇作流动相进行分离。结果表明:浓度在2.0~40μg/mL,4种物质均呈线性关系,相关系数为0.998 3~0.999 1,标准偏差为1.14%~5.90%,平均回收率均在80%以上,检出限2μg/g。因此,该方法可用于油炸食品中酚类抗氧剂的测定。 相似文献

Tomatoes, as an agricultural product, represent an important commodity worldwide and comprise a significant part of the human diet. They are one of the most versatile and widely used fruits, being consumed in the raw state and used for the preparation of a wide range of products. Tomatoes and tomato products are rich in antioxidant compounds such as carotenoids (particularly lycopene), ascorbic acid and phenolic compounds. The regular consumption of tomatoes and tomato products has been correlated to a reduction in risk of contracting various types of cancer and cardiovascular diseases. This positive effect is attributed to the antioxidants present in tomatoes. 相似文献

研究了微波辐射对柚皮抗氧化物质浸取的作用及有机溶剂浸取条件的优化。微波辐射预处理试验表明 ,微波辐射的最适操作条件为 :微波辐射功率 52 5W ,辐射时间 7min。通过正交试验确定了微波辐射预处理后柚皮抗氧化物质浸取的最适条件 ,即乙醇体积分数为 70 % ,料液比为1 g∶3mL ;浸取温度为 50℃ ,振荡浸取时间为 4h。结果表明 ,微波辐射预处理有助于柚皮中抗氧化物质的浸取 ,浸取率可提高 1 2 5 %。在此条件下 ,微波辐射不影响柚皮抗氧化物质的活性 ,柚皮抗氧化物质的一次浸取率可达 60 7%。 相似文献
