BACKGROUND: There is great interest in the use of naturally occurring antioxidants to delay oxidation in meat products. The effect of rosemary extract (RE), green tea extract (TE), tocopherol, trolox, ascorbic acid (AA) and ascorbyl palmitate (AP), at levels of 50–200 ppm of antioxidant components, on colour (CIE L*a*b*), lipid (TBARS) and protein oxidation (thiol groups) in fresh, frozen and cooked pork patties during illuminated chill storage was investigated. Individual components of RE and TE were also tested. RESULTS: RE, TE, AP, tocopherol and trolox equally inhibited lipid oxidation in fresh and frozen patties, whereas for cooked patties RE was most effective. AA stimulated lipid oxidation. No dose effect in the range of 50–200 ppm was found for fresh and frozen patties, whereas for cooked patties higher doses of RE and TE more efficiently prevented lipid oxidation. Protein oxidation was hardly influenced by antioxidant treatment. Colour stability decreased as follows: tocopherol, AA and AP > RE and TE > trolox. Antioxidant properties of the extracts and their major antioxidant components were comparable. CONCLUSION: The relative effect of the antioxidants depends on the oxidation parameter assessed, the applied dose and the hydrophilic/lipophilic character. The antioxidant activity of plant extracts (100 and 500 mg/kg) from cloudberry, willow herb and beetroot on thiobarbituric acid (TBA) reactive substances (TBARS) development and hexanal content of cooked pork patties was investigated. Pure quercetin, rutin and caffeic acid were tested in parallel for comparison. The most potent antioxidants on stabilizing oxidation were cloudberry extract and quercetin. The lowest antioxidant activity was found with the addition of pure rutin to the meat. Caffeic acid showed an intermediate activity. At a concentration of 100 mg/kg, beetroot and willow herb extracts showed an antioxidant activity on TBARS and hexanal contents similar to that observed for caffeic acid during 3 days of refrigerated display, while cloudberry extract was as potent as quercetin. At a concentration of 500 mg/kg, beetroot and willow herb extract stabilized hexanal production of cooked pork patties after 6 days of refrigerated storage in a way comparable to that observed for pure quercetin and cloudberry extract. TBARS numbers were well correlated with hexanal content in cooked pork patties on day 3 of refrigerated storage. However, hexanal production and TBARS numbers were not highly correlated in samples with the highest level of beetroot (500 mg/kg). Hexanal production was inhibited by the high level of beetroot, but TBARS production was not, perhaps because the red color of beetroot extract interfered with the determination of the pink TBA chromogen.  相似文献

The radical scavenging activity, reducing power and phenolic composition of pomegranate rind powder extract (RP) were determined and antioxidant properties of RP was evaluated in cooked chicken patties compared with vitamin C (VC) during refrigerated storage. Freshly minced chicken meat were assigned to one of the following six treatments: control (meat without any antioxidant); RP 5, RP 10, RP 15 and RP 20 (5, 10, 15 and 20 mg equivalent RP phenolics 100 g?1 meat, respectively) and VC 50 (50 mg VC 100 g?1 meat). The RP exhibited significantly (P < 0.05) higher reducing power and 1,1‐diphenyl‐2‐picrylhydrazyl radical scavenging activity. Incorporation of RP into chicken patties significantly (P < 0.05) reduced the HunterLab L* values compared with control and VC patties. Total phenolic content (as tannic acid equivalent) significantly (P < 0.05) increased from 308 in control to 441 μg g?1 in RP 20 patties. Addition of RP to chicken patties did not affect any of the sensory attributes. The values of thiobarbituric acid reactive substances were significantly (P < 0.05) reduced from 1.530 in control patties to 0.135 mg malonaldehyde kg?1 samples in RP patties. Pomegranate rind powder extract treatment (RP 10, RP 15 and RP 20) substantially inhibited (P < 0.05) lipid oxidation in cooked chicken patties to a much greater extent than VC treatment. Therefore, pomegranate rind powder can be utilized as an excellent natural antioxidant source.  相似文献

This study evaluated the bioactive compounds of different types of tea by comparing hot and cold infusions. A multivariate data analysis was carried out, where the principal components analysis (PCA) and hierarchical cluster analysis (HCA) were used. Phenolic compounds varied between 267.27–2896.00 mg GAE L?1 and 215.10–7351.33 mg GAE L?1 for hot (80 °C) and cold extraction (20–25 °C), respectively. In the case of their antioxidant activity, results with DPPH were 43.10‐73.67% for hot extraction and 46.80‐77.13% for cold extraction. The average values for the ABTS˙+ method ranged between 2535.43 and 33 300.17 μmol TE L?1 and between 1110.34 and 38 300.67 μmol TE L?1, respectively, for hot and cold extraction. Different compounds were identified by liquid chromatography in the samples evaluated, where caffeine presented the higher concentrations in the teas. Samples of green and black tea (hot extraction) and white tea (cold extraction) showed bacteriostatic activity for S. aureus and E. coli. No extract had any bactericide activity. The current study revealed that cold infusion was more efficient in the extraction of bioactive compounds.  相似文献

This work is aimed at: (i) analysing the extracts obtained from canning by‐products of three artichoke cultivars (Opal, Capriccio and Catanese) for antioxidant parameters; (ii) comparing UHPLC‐ESI‐MS/MS profile, colour, textural properties and cooking performance of fresh pasta enriched of the most antioxidant extract, with control pasta. The concentrated Catanese cv. extracts showed the highest antioxidant activity (1662 μmol Trolox equivalents L?1) and the highest levels of luteolin‐7‐O‐rutinoside, luteolin‐7‐O‐glucoside and apigenin‐7‐O‐rutinoside compared to other cultivars. Fresh pasta enriched of Catanese extract showed higher (< 0.05) phenolic compounds and antioxidant activity (500 mg gallic acid kg?1 and 1324 μmol Trolox kg?1, respectively) than control pasta (306 mg gallic acid kg?1 and 886 μmol Trolox kg?1, respectively). The extract increased (< 0.05) pasta brownness (from 19.93 to 23.34), and decreased yellowness (from 27.11 to 23.09), but did not alter textural and cooking parameters. So, pasta was a good vehicle to increase the antioxidant dietary intake.  相似文献

This study was carried out to determine the antioxidant activity of phytochemicals and plant extracts in fresh lamb patties. Quality indices such as colour (Hunter L* a* b*), lipid oxidation (TBARS) and pH were measured over an 8‐day storage period. Resveratrol, citroflavan‐3‐ol, olive leaf extract and Echinacea purpurea were added to raw minced M. longissimus dorsi lamb patties, at concentrations ranging from 0–400 mg kg?1 lamb meat, stored in high oxygen modified atmospheres packs (75% O2:25% CO2) for up to 8 days at 4 °C. The pH of the lamb meat was not significantly affected by the addition of the phytochemicals and plant extracts examined (P > 0.05). Resveratrol and citroflavan‐3‐ol decreased (P < 0.05) lipid oxidation in raw lamb patties during storage and increased a* values (P < 0.05), relative to controls. By contrast, olive leaf extract and Echinacea purpurea did not exhibit antioxidant activity or promote higher a* values relative to controls. Results obtained demonstrate potential for the development of functional meats using plant extracts such as resveratrol and citroflavan‐3‐ol.  相似文献

This study shows the industrial feasibility of using aqueous methods to produce antioxidative and hypolipidaemic polysaccharides from Laminaria japonica (LJP). Comparison was firstly made among the polysaccharides prepared using different extraction media, that is water alone (LJPW) and citric acid (LJPC), sulphuric acid, hydrochloric acid and phosphoric acid. LJPC enabled the highest extract yield (~11% dry weight), bile salt adsorption rate (~59% dry weight), ABTS radical scavenging activity (IC50 value 1.06 mg mL?1) and ORAC antioxidant activity (341.87 μmol Trolox g?1). In animal trial using diet‐induced high‐fat mice, oral administration of LJP produced with citric acid (LJPC) at a high dose (200 mg kg?1 body mass per day) enabled significantly higher serum HDL‐C, lower LDL‐C/HDL‐C and unaltered LDL‐C, whilst a medium dose (100 mg kg?1 body mass per day) significantly decreased LDL‐C. Administration of LJP produced with water (200 mg kg?1 body mass per day) significantly lowered serum LDL‐C. Therefore, LJP may provide dose‐dependent pharmacological and therapeutic effects to combat atherosclerosis through their hyperlipidaemic and antioxidant properties.  相似文献

The objective of this work was to evaluate the influence of the addition of native and autoclaved mustard seed (AMS) with combination of acid whey (AW) on the stability of organic model sausages during 30 days of vacuum storage by measuring primary and secondary products of lipid oxidation, the changes in the fatty acid composition, oxidation–reduction potential and antioxidant capacity. Briefly, the addition of AW (5%) with combination of AMS (1%) significantly increased the capacity of sausages to capture the radical cations 2,2‐azinobis(3‐ethyl‐benzothiazoline)‐6‐sulphonate at 1 day of storage which suggests that autoclaved mustard possessed significantly higher amount of phenolic acids compared with native mustard. The salted samples with mustard seed addition characterised by lower oxidation–reduction potential values (264.5–302.1 mV) during the whole storage period compared with control‐cured sample (307.3–330.5 mV). Results of conjugated dienes (CD) measurements indicated that salted meat product samples with mustard seed addition were characterised by significantly lower CD concentration (1.12–1.90 μmol mg?1 meat product) compared with control‐cured sample (1.86–2.55 μmol mg?1 meat product). The AW and mustard seed added to uncured sausage were able to protect polyunsaturated fatty acids against the oxidation comparable to nitrite.  相似文献

The effect of adding Himanthalia elongata seaweed (10–40% w/w) as a source of antioxidants and dietary fibre on physical, chemical, microbial and sensory traits of cooked beef patties was studied throughout chilled storage. Patties with seaweed showed reduced cooking losses and were nearly 50% more tender as compared to patties without seaweed. Microbiological counts and lipid oxidation were significantly lower in patties containing seaweed (< 0.05), and by day 30 of storage, there was no bacterial growth in samples with ≥20% seaweed and lipid oxidation levels were low (0.61 mg malondialdehyde kg?1 of sample). Seaweed incorporation significantly increased the dietary fibre (1.64 g per 100 g fw in 40% seaweed patties), total phenolic content (up to 28.11 mg GAE per 100 g fw) and DPPH radical scavenging activity (up to 52.32%) of patties compared to the control. Sensory analysis indicated that the seaweed patties were accepted by consumers in terms of aroma, appearance, texture and taste. Patties containing 40% seaweed were rated highest in terms of overall acceptability, most likely due to improvement in texture and mouthfeel. Addition of seaweed in the formulation of beef patties leads to the enhancement of the nutritional and technological quality together with an acceptable sensory quality.  相似文献

The effective utilisation of Moringa oleiferia mature leaves (MOL) extract as an antioxidant in cooked goat meat patties during refrigerated storage was investigated, and its efficiency was evaluated against butylated hydroxytoluene (BHT). The extract exhibited high phenolic content (48.36 mg of gallic acid equivalent per g), flavonoid (31.42 mg g?1 of sample) being the major component. Moringa oleiferia mature leaves extract showed excellent antioxidant activity as determined by radical‐scavenging activity of 1, 1‐diphenyl 2 picrylhydrazyl (DPPH). The IC50 value of MOL extract for 2, 2‐diphenyl‐1‐picrylhydrazyl radical scavenging was 18.54 μg mL?1. Total phenolic content (as gallic acid equivalent) significantly (P < 0.05) increased from 285.56 in control to 379.45 in patties with MOL extract. MOL extract (0.1%) when added to meat was found to retard lipid peroxidation of cooked goat meat patties as measured by TBARS number during refrigerated storage. The increase in TBARS number in MOL extract–treated samples was very slow and remained lowest (0.53 mg malonaldehyde per kg sample) up to 15 days. The antioxidant activity of MOL extract was found to be comparable to BHT. Addition of MOL extract did not affect any of the sensory attributes of patties. The MOL extract at a level of 100 mg/100 g meat was sufficient to protect goat meat patties against oxidative rancidity for periods longer than the most commonly used synthetic antioxidant like BHT.  相似文献

The changes of metabolites in pork patties with different antioxidants added (control without antioxidants, 200 mg kg−1 butylated hydroxytoluene (BHT) and 250 mg kg−1 guarana seed extracts (GSEs)) under modified atmosphere (80% O2 and 20% CO2) for 18 days of refrigerated storage were evaluated. Untargeted metabolomic approach based on UHPLC-ESI-QTOF-MS analysis was applied. GSE phytochemical profile revealed a wide variety of compounds (caffeine, glycerol 1-propanoate, amino acids, alkaloids and glycerophospholipids), together with antioxidants (tyrosols, procyanidins and flavonoids). Important differences in BHT and GSE patties metabolomic profiles were found during storage. Most of the differences could be attributed to glycerophospholipids and fatty acyls, along with specific compounds derived from lipid oxidation (i.e. 2-hexenal, 4-hydroxy-2-hexenal and 2,4-heptadienal) and protein degradation (spermine). Therefore, the approach used highlighted a modulation of lipid oxidative processes, together with strict correlation between metabolic profiles and factors associated with meat quality, highlighting GSE effect on active compounds delaying oxidative phenomena.  相似文献

The effects of lutein (100, 200 μg/g muscle), sesamol (250, 500 μg/g muscle), ellagic acid (300, 600 μg/g muscle) and olive leaf extract (100, 200 μg/g muscle) on lipid oxidation (thiobarbituric acid-reactive substances TBARs), colour (CIE L∗, a∗, b∗), pH, texture profile analysis (TPA), water holding capacity (WHC), cooking losses and sensorial properties of fresh and cooked pork patties were investigated. Raw and cooked minced pork (M. longissimus thoracis et lumborum) containing added lutein, sesamol, ellagic acid or olive leaf extract were stored aerobically or in modified atmosphere packs (MAP) for up to 8 and 12 days, respectively. Lutein, sesamol, ellagic acid and olive leaf extract had no significant effect on microbial status, cook loss, pH or WHC. Lipid oxidation was reduced (P < 0.001) in raw and cooked pork patties stored in aerobic packs and in MAP following addition of sesamol, ellagic acid and olive leaf extract. Antioxidant effectiveness in raw and cooked patties was in the order: sesamol = ellagic acid > olive leaf extract > lutein. Lutein increased (P < 0.001) b∗ yellowness values in raw pork patties. Addition of lutein, sesamol, ellagic acid and olive leaf extract to pork had no detrimental effects on the organoleptic properties of cooked patties but altered (P < 0.05) instrumental textural attributes. Results highlight the potential of using natural functional ingredients in the development of functional pork products with enhanced quality and shelf-life.  相似文献

探究不同添加量的花椒提取物对调理猪肉饼冷藏期间品质及氧化程度的影响。将0.01%、0.02%和0.03%的花椒提取物添加到调理猪肉饼中,研究其在1、4、7、10 d冷藏期间的pH、颜色、质构、硫代巴比妥酸值(thiobarbituric acid reactive substance,TBARS)和巯基值的变化,并与0.02%二丁基羟基甲苯(butylated hydroxytoluene,BHT)作比较。研究结果表明,添加花椒提取物对调理猪肉饼冷藏期间的pH、颜色无显著影响(p>0.05),在一定程度上降低了其硬度和咀嚼性。此外,添加花椒提取物可显著降低猪肉饼脂肪氧化和蛋白质氧化程度(p<0.05)。当添加量为0.01%和0.02%时,花椒提取物处理组抑制脂肪氧化的效果与0.02%的BHT效果相当,而当添加量增加至0.03%时,花椒提取物组抗脂肪氧化效果优于0.02%的BHT,且其蛋白氧化程度在整个冷藏期间均显著低于对照组(p<0.05),表明花椒提取物可有效抑制猪肉饼中脂肪和蛋白质氧化,其中0.03%花椒提取物组效果最好,甚至优于0.02%的BHT。  相似文献

The growing demand for the consumption of more natural products challenges the food industry to meet consumer expectations. In this regard, bioactive peptides obtained from flavourzyme, bromelain and alcalase activity were added to pork patties with the aim of improving their shelf-life. Five treatments were prepared: control (CON, without enzymatic extract), positive control (ASA, with 150 mg kg−1 of ascorbic acid) and three batches with 250 mg kg−1 of different porcine liver hydrolysates [flavourzyme (FLA), bromelain (BRO) and alcalase (ALC)]. The analysis of raw burgers included proximate composition (moisture, protein, fat and ash contents), colour parameters (L*, a*, b*), metmyoglobin, lipid oxidation, volatile compounds profile and sensory evaluation. Hydrolysate obtained from bromelain enzyme showed the best a* parameter (5.15), the least lipid oxidation (0.63 mg MDA kg−1) and the lowest percentage of metmyoglobin (56.02%). Furthermore, this batch also presented the lowest content of aldehydes and alcohols resulting from lipid oxidation. Our results suggested that the hydrolysates obtained from bromelain activity possessed a good antioxidative activity, and therefore, they could be used as a natural antioxidant to extend the shelf-life of pork burgers.  相似文献

This study investigated the efficacy of licorice extract (LE) to curtail lipid oxidation and protect sensory attributes of ground pork during refrigerated and frozen storage. Pork patties (20% fat) were formulated with 0%, 0.02%, 0.05%, and 0.1% (meat basis) LE or rosemary extract (RE) as comparison or 0.01% (fat basis) BHA with 0 or 1.5% NaCl. Raw and precooked (75 °C) patties were packaged in polyvinylchloride overwrapped trays and stored at 2 °C up to 7 and 14 d, respectively, or at –20 °C up to 6 mo. Lipid oxidation (thiobarbituric acid‐reactive substances [TBARS]) and sensory attributes of stored patty samples were evaluated, radical scavenging activity of the LE was measured, and the active phenolic compounds were identified. Cooking yield (<85%) was similar among antioxidant treatments, and lipid oxidation was minimal in refrigerated or frozen raw samples. However, TBARS values in refrigerated precooked control patties (0.22 mg/kg) rose to 9.3 to 9.4 mg/kg after 14 d, compared to 3.4 to 4.4 and 4.4 to 6.9 mg/kg in patties treated with 0.1% LE and RE, respectively. In frozen precooked samples, TBARS (0.22 mg/kg) increased to 1.3 mg/kg (P < 0.05) in control patties after 6 mo and had no significant change in patties treated with 0.1% LE or 0.01% butylated hydroxyanisol. Sensory panel evaluation confirmed strong inhibition of rancidity production by LE, corroborating its remarkable antiradical activity due to the presence of multiple phenolics. The results indicate that licorice has great potential as a natural antioxidative additive to extend the shelf‐life of precooked pork.  相似文献

This study aims to investigate the antioxidant properties and physical stability of convection‐ or vacuum‐dried orange, yellow and purple sweet potato (Ipomoea batatas) powder upon room temperature storage at different relative humidity (RH) of 33%, 43%, 54% and 75% for 25 days. Both convection and vacuum‐dried samples had lower total phenolic content (TPC), anthocyanin content and antioxidant activity compared to the fresh samples. Vacuum‐dried powder retained higher antioxidant activity than convection‐dried powder. Storage of the powder at high RH of 75% resulted in apparent clump formation, which was likely attributed to the decrease of glass transition temperature (Tg). In general, purple sweet potato powder contained the highest TPC (255.0 mg GAE 100 g DW?1) and antioxidant activity (1924.0 μmol TEAC 100 g DW?1), while orange powder had the highest beta‐carotene content (127.2 mg 100 g DW?1). Vacuum‐dried sweet potato powder, which has relatively higher antioxidant activity, could be a potential functional ingredient or natural colourant for the food industry.  相似文献

The comparative antioxidant activity of added tea catechins on susceptibility of cooked and overwrapped red meat (beef and pork), poultry (chicken, duck and ostrich) and fish (whiting and mackerel) to lipid oxidation was investigated. Fresh meats, poultry and fish, purchased from a local market, were trimmed to remove bones, skin and visible fat and minced through a 4-mm plate. The minced muscle from each species was treated with either 1% NaCl (S), 300 mg tea catechins kg−1 minced muscle (TC) or 1% NaCl plus 300 mg tea catechins kg−1 minced muscle (TCS). Control minced muscle samples (C) contained neither NaCl nor tea catechins. Patties (50 g), prepared from treated and untreated minced muscle, were cooked until the core temperature reached 75°C, cooled down to room temperature and held in a refrigerated (4°C) and illuminated (616 lux) display cabinet for 10 days. Oxidative stability (TBARS) was measured at 3-day intervals. The susceptibility of cooked patties to lipid oxidation was closely related to lipid content, concentration of unsaturated fatty acids and presence of iron in different species. Addition of NaCl to raw minced muscle significantly (P<0.05) promoted lipid oxidation for cooked patties regardless of species sources. Tea catechins added at a level of 300 mg kg−1 minced muscle significantly (P<0.01) inhibited the pro-oxidation caused by NaCl and controlled lipid oxidation for all cooked muscle patties examined. Tea catechins at concentrations greater than 300 mg kg−1 were necessary to reduce oxidation for mackerel patties containing high levels of lipids and unsaturated fatty acids. The high affinity of tea catechins for the lipid bilayers of muscle and the radical scavenging abilities of tea catechins may be possible mechanisms to explain the oxidative stability in cooked muscle foods.  相似文献

This study evaluated the effects of different gastrointestinal digestion models in vitro on the bioaccessibility of phenolics and antioxidant activity in juçara frozen pulp. In the sequence, method 3 was applied to juçara fruit in three different stages of maturation (vitrin – reddish fruits, mature – purple fruits, tuíra – deep purple fruits). In the method applied, the final pH adopted was 5.0, in order to avoid interference in the assay used to determine the antioxidant activity, and BHT was used to prevent excessive oxidation in the system. In this method, higher values for antioxidant activity were obtained (3574.95–3719.10 μmol L?1 Trolox 100 g?1 pulp) compared with the other two methods tested (1969.14–3034.74 μmol L?1 Trolox 100 g?1 pulp). In relation to juçara fruit, the mature stage was found to be ideal for processing, showing generally higher values of the bioaccessibility for phenolics and antioxidant activity compared to other maturation stages.  相似文献

This study aimed to optimise aqueous extraction conditions for total phenolic compounds (TPC) from Davidson's plum (Davidsonia pruriens F. Muell) and to assess the physicochemical and antioxidant properties of the phenolic‐enriched extract. The results showed that temperature, time and ratio significantly affected the extraction of TPC. Optimization of extraction conditions was performed using response surface methodology (RSM) utilising a Box–Behnken design. Optimal extraction conditions were determined to be temperature: 90 °C, extraction time: 30 min and solvent to mass ratio: 20:1 mL g?1. The extracted solid obtained under these conditions had low‐moisture content, high water solubility and contained 45 mg GAE g?1 of TPC, 22 mg RUE g?1 of flavonoids, 3.2 mg CAE g?1 of proanthocyanidins, 2 mg CGE g?1 of anthocyanidins and 56 mg ACE g?1 vitamin C. The extract possessed potent antioxidant capacity, but was comparatively lower than those of vitamin E and BHT. Thus, Davidson's plum should be further investigated for its potential health promoting benefits and utilisation in the nutraceutical and food industries.  相似文献

The antioxidant activity of carnosine in chicken meat, and its relationship to dietary α-tocopherol supplementation, was examined. Broiler chickens were fed diets containing 30 (basal) or 200 (supplemental) mg α-tocopherol acetate kg−1 feed for 6 weeks. Raw and cooked thigh meat patties containing carnosine (0–1·5%) were prepared. Lipid oxidation, during refrigerated storage under fluorescent light, was assessed by monitoring malonaldehyde formation, using the TBA assay and single wavelength (conventional) or first derivative spectrophotometry. In raw patties, added carnosine improved oxidative stability for up to 10 days of refrigerated storage. In cooked patties, the 1·5% carnosine level provided the best antioxidant protection during 7 days of storage. Carnosine (1·5%) was at least as effective as supplemental α-tocopherol in improving the oxidative stability of raw and cooked patties. The presence of both antioxidants had an additive effect on oxidative stability. Overall, the use of derivative spectrophotometry improved the specificity of the TBA assay for monitoring MDA formation in refrigerated meats.  相似文献
