Iberian pig (IP) products are gourmet foods highly appreciated at international markets, reaching high prices, because of its exquisite flavors. At present, there aren't practical and affordable analytical methods which can authenticate every single piece put on the market. This paper reports on the performance of a handheld micro-electro-mechanical system (MEMS)-based spectrometer (1600-2400 nm) for authentication-classification of individual IP carcasses into different commercial categories. Performance (accuracy and instrumental design) of the instrument was compared with that of high-resolution NIRS monochromators (400-2500 nm). A total of 300 carcasses of IPs raised under different feeding regimes (“Acorn”, “Recebo” and “Feed”) were analyzed in three modes (intact fat in the carcass, skin-free subcutaneous fat samples and melted fat samples). The best classification results for the MEMS instrument were: 93.9% “Acorn” carcasses correctly classified, 96.4% “Feed” and 60.6% “Recebo”, respectively. Evaluation of model performance confirmed the suitability of the handheld device for individual, fast, non-destructive, low-cost analysis of IP carcasses on the slaughterhouse line.  相似文献

A handheld micro-electro-mechanical system (MEMS) based spectrometer working in the near infrared region (NIR) (1600–2400 nm) was evaluated for in-situ and non-destructive prediction of main fatty acids in Iberian pig (IP) carcasses. 110 IP carcasses were measured. Performance of the instrument was compared with at-line high-resolution NIRS monochromators working in two analysis modes: melted fat samples (transflectance cups) and intact adipose tissues (interactance fiber optic). Standard Error of Prediction (SEP) values obtained on the MEMS-NIRS device were: 0.68% (stearic), 1.30% (oleic), 0.55% (linoleic) and 1% (palmitic), explaining a variability of 83%, 84%, 81% and 78%, respectively. As expected, this represented a loss of predictive capability in comparison to at-line models, even with the same spectral characteristics as on the handheld device. However, the estimated total errors were at the same level for gas chromatography and NIRS analysis. This indicates that the MEMS-NIRS in-situ analysis of each individual carcass provides a cost-effective and real-time quality control system with suitable accuracy.  相似文献

The purpose of this study was to investigate the prevalence of Salmonella contamination and main serovars in pig slaughterhouses in Spain including carcasses, live animals and the environment. A total of 896 pig carcasses were randomly selected and swabbed before chilling in 3–5 visits to four pig slaughterhouses (A, B, C and D). Salmonella contamination was detected in 39.7% of the carcasses. The prevalence of positive carcasses was similar amongst slaughterhouses but significant differences were observed when taking sampling day into consideration within each of the slaughterhouses. Furthermore, a significant reduction in the prevalence of Salmonella contaminated carcasses (10.8%) was demonstrated in slaughterhouses C and D after chilling and cooling procedures.Sixteen batches of 10 animals were tracked from farm-to-slaughterhouse in slaughterhouses A and B to investigate the relationship between carcass contamination and contamination in live animals entering the slaughterhouse. No difference was found between infected and uninfected animals with respect to Salmonella contamination of the carcass although an increase in Salmonella contamination during the processing of live pigs into pork carcasses was evident. Regarding contamination in the slaughterhouse environment, Salmonella was isolated from most of the evaluated points in the slaughter line of the four studied slaughterhouses. Holding pens were identified as highly contaminated and what is more the ineffectiveness of the routinely cleaning protocols at this level was demonstrated in slaughterhouses C and D.The predominant Salmonella serovars found in carcasses, live pigs entering the slaughterhouse and the environment of the slaughterhouse were S. Typhimurium, S. Rissen, S. Derby and S. 4,[5],12:i:-. The same serovars were found in all the stages supporting the hypothesis that infected pigs are the main source of Salmonella contamination within slaughterhouses.  相似文献

Classification records for 136,000 sheep carcasses, a1 in 20 sample of those classified by the Meat and Livestock Commission in 1977, were used to examine the variation in weight, fatness and conformation of commercial British sheep. Overall mean carcass weight was 17·4 kg. Mean subcutaneous fat percentage in carcass (SF(e)) was estimated from the distribution of carcasses between fat classifications. Overall SF(e) was 11·3% and the regression of SF(e) on carcass weight was 0·44 %/kg. There were important differences in the characteristics of carcasses from abattoirs in different regions of the country: carcass weights ranged from 15·5 kg (Wales) to 23·4 kg (north of Scotland). Lambs slaughtered in the north of Scotland were also fattest (mean SF(e) = 13·9). The classification records were used together with results from MLC dissection studies to estimate excess fat production nationally. On the assumption that the consumer eats five parts lean to one part fat, excess carcass fat production from lambs and hoggets in 1977 was estimated to be 25,000 t.  相似文献

The fat from subcutaneous tissue samples of Iberian pigs was extracted by solvent (2:1 chloroform-methanol) and by the action of microwave energy. The samples of liquid fat obtained by both extraction techniques were analysed by gas chromatography. Paired comparisons showed no significant differences in fatty acids in suggesting that the fat obtained by the two techniques was the same and that the extraction of fatty acids by microwaves is suitable for quality classification of Iberian pig carcasses.  相似文献

A Danish pig slaughterhouse was visited in this study to investigate the impact of carcass processing on prevalence of tetracycline-resistant Escherichia coli, and to identify the origins of carcass contaminations with E. coli by assessing genetic diversity of E. coli populations on carcasses. A total of 105 carcasses were sampled at five sequential stages: after stunning, after scalding, after splitting, after cooling and after cutting. Total and tetracycline-resistant E. coli were counted for each sample and tetracycline resistance prevalence per sample was calculated by the fraction of tetracycline-resistant E. coli out of total E. coli. From 15 repeatedly sampled carcasses, 422 E. coli isolates from faeces, stunned carcasses, split carcasses and chilled carcasses were examined by pulse-field gel electrophoresis (PFGE) and tested for antimicrobial susceptibility. The results showed that E. coli counts and the prevalence of tetracycline-resistant E. coli per sample were both progressively reduced after each sampling stage. PFGE analysis showed that E. coli populations from stunned carcasses were highly genetically diverse, compared with those from split carcasses and faeces. Thirteen carcasses (87%) were contaminated with E. coli that were also isolated from faeces of either the same or other pigs slaughtered on the same day; and 80% of stunned carcasses shared the same E. coli PFGE subtypes. The results suggest that some carcass processing steps in the slaughterhouse were effective in reducing both E. coli numbers and the tetracycline resistance prevalence in E. coli on carcasses. Faeces from the same or other pigs slaughtered on the same day were likely to be an important source of E. coli carcass contamination. Combined data from E. coli enumeration, PFGE typing and antimicrobial susceptibility testing suggest that tetracycline-susceptible E. coli probably persisted better compared to resistant ones during the carcass processing.  相似文献

Surubim (Pseudoplatystoma coruscans) is a river fish from the Brazilian São Francisco basin which presents a great potential for commercialization. The amino acid composition of carcasses of surubim fed isoproteic diets with variable levels and sources of fat were determined. The increase of soybean oil at levels of 4%, 8% and 12% in the rations promoted a corresponding increase in nitrogen fixation in the fish carcass, reflected by higher amino acid contents. However, the application of 12% added amounts of pig lard, corn oil, linseed oil or soybean oil, as different sources of fat, did not promote much variation in the fish amino acid fixation. The determination of the essential amino acid composition in the fish carcasses and the A/E ratios of individual amino acids provided a pattern of amino acid requirements of surubim fish.  相似文献

To evaluate the effectiveness of bagging of the rectum in mitigating the contamination of carcasses with enteropathogenic Yersinia at the slaughterhouse and to estimate the hidden prevalences of these pathogens in different farm types and capacities, samples from pigs, carcasses, and slaughterhouse environment were collected, and a Bayesian probability model was constructed. In addition, the contamination routes were studied with molecular typing of the isolated strains. According to the model, bagging of the rectum reduced carcass contamination significantly with pathogenic Yersinia enterocolitica, but not with Yersinia pseudotuberculosis, and alone it was insufficient to completely prevent the carcass contamination with enteropathogenic Yersinia. The hidden prevalence of pathogenic Y. enterocolitica was higher at high production capacity than it was in low production capacity, but the 95 % credible intervals overlapped. Slaughterhouse environments can contaminate carcasses with enteropathogenic Yersinia, but the plausible main contamination source is the pig carrying the pathogen.  相似文献

BACKGROUND: The influence of sex and location of fat in the carcass on the fatty acid profile of Celta pigs was studied. Twenty pigs (10 castrated males and 10 females) from the Carballina line were used. RESULTS: The fatty acids composition was predominated by monounsaturated fatty acids (MUFA; approximately 48% of total methyl esters), followed by saturated fatty acids (SFA; approximately 40% of total methyl esters) and, finally, polyunsaturated fatty acids (PUFA; approximately 12% of total methyl esters). The sex and location of fat in the carcass showed significant differences in PUFA and SFA content while both factors were not significantly different with respect to MUFA content. Linoleic, linolenic, eicosatrienoic and arachidonic fatty acids showed the largest difference among the three locations (intramuscular, subcutaneous ventral and subcutaneous dorsal) of the fat in the carcass. CONCLUSION: The fatty acid profile that we observed in the fat of the Celta pigs does not differ greatly from those described by other authors in other autochthonous pig breeds. Sixty Pirenaica yearling intact bulls were raised and slaughtered at 519±50kg live weight and 371±18 days of age. Fatty acid composition of intramuscular lipids in longissimus dorsi muscle and subcutaneous fat were determined by capillary gas chromatography. Carcass conformation and fatness, carcass weight, ether extractable intramuscular fat percentage, marbling, dorsal fat thickness, and ultrasonic parameters were recorded to study the relationship between these traits and fatty acid profile. Lipids of subcutaneous adipose tissue had higher monounsaturated fatty acids (MUFA) percentage (49% vs. 33%) but lower saturated fatty acids (SFA) (51% vs. 46%) and polyunsaturated fatty acids (PUFA) (16% vs. 5%) percentages than intramuscular fat depots (p<0.001). Fatter carcasses had higher MUFA percentage and lower PUFA percentage (p<0.01) in intramuscular fat. Carcass weight and conformation would contribute to explain the fatty acid profile of subcutaneous fat (p<0.05). Ultrasound readings reflected the effect of fatness on fat composition.  相似文献

The purpose of this study was to show the distribution of Salmonella in slaughtered pigs and the environment of the slaughterhouse. 1114 samples of slaughtered pigs (six different samples for Salmonella isolation and one serum sample for ELISA on antibodies per pig) and 477 samples of the slaughterhouse environment were collected in two slaughterhouses on two sampling days per slaughterhouse. Salmonella was isolated from one or more samples of 47% of the pigs. The highest prevalence of Salmonella was observed in rectal content samples (25.6%), whereas the lowest prevalence of Salmonella was observed on the carcasses (1.4%). The prevalence of Salmonella in other samples was: 19.6% in tonsils, 9.3% on livers, 9.3% on tongues, and 9.3% in mesenterial lymphnodes. The prevalence of Salmonella in environmental samples was high in the drain water samples in both slaughterhouses (61%) and on the carcass splitter in one slaughterhouse (33%). Salmonella typhimurium was the most frequently isolated serotype in pig samples and environmental samples in both slaughterhouses: 43% of the Salmonella isolates from pigs and 33% of the Salmonella isolates from the environment was S. typhimurium.

The results of this study show that Salmonella prevalences in pigs differ a lot, depending on which part of the pig is sampled. Not all different samples of the pig will become available for human consumption, but collecting more than one sample per pig showed that Salmonella can be found in almost the whole pig. The result of surface samples of carcass and liver gives information about hygiene during the slaughter process; the result of tonsils, lymphnodes and rectal contents, combined with the serological result, gives information about infection of the pig before the slaughter process (on the farm, during transport or in lairage).

It can be concluded that results of Salmonella isolation of slaughter pigs should always be carefully interpreted, depending on the type of sample that has been collected.  相似文献

Angus steers (n = 78) were feedlot-finished to approximately 703 kg live weight. The finished steers were slaughtered at a commercial packing plant, chilled, and evaluated for USDA and Japanese yield and quality-grade characteristics. The resulting carcasses were excessively heavy and fat for the domestic (US) beef industry. Over 70% of the carcasses were US Yield Grade 5, and almost 40% were Japanese Yield Score 'C'. Although excessively fat externally, fewer than 50% of the carcasses qualified for US Prime, and none of the carcasses qualified for Japanese Meat Quality Score 5. Moderate to high correlations were observed between US twelfth-rib carcass traits and Japanese sixth-rib traits; however, multiple-regression equations based on USDA carcass characteristics explained only 46 and 25% of the observed variation in Japanese marbling score and estimated percentage wholesale-cut yield, respectively.  相似文献

The percentage saleable meat yield was determined for 42 carcasses from grass-fed steers representing a range of breed types purchased in Australia for the Japanese market. Their mean (s.d.) carcass weight and P8 fat depth were 329 (28.1) kg and 17.3 (4.3) mm, respectively. All measures of subcutaneous fat depth were significantly (P < 0.05) and moderately correlated with percentage saleable meat yield, with measures in the loin region showing a stronger association than those taken in the rump region. The association between P8 fat depth and the loin measures of subcutaneous fat were low and there was a significant (P < 0.05) association only between P8 and fat depth at the 10th rib (FD 10). The use of fat depth measurements from the loin region reduced the error associated with predicting saleable meat yield more than those from the rump region and significantly increased the amount of variation (R(2)) in saleable meat yield that was explained. Hot carcass weight (HCW) did not significantly (P > 0.05) improve prediction models when combined with subcutaneous fat depth measurements and overall, the R(2) values were low ranging from 0.19 to 0.42. The models indicated that fat depth measures and carcass weight are poor predictors of percentage meat yield in heavy-weight carcasses from mixed breed cattle as produced and processed in Australia. The prediction of percentage yield was in general significantly (P < 0.05) improved when measures of M. longissimus thoracis et lumborum (LD) area were added as independent variables to models based on hot carcass weight and subcutaneous fat depth measurements. With LD area added the amount of variation in yield that could be explained by the models increased by as much as 28%. Overall, the best model was based on fat depth at the 12th rib and LD area measured at the 5th rib for which the R(2) was 0.58 and the residual standard deviation was 1.63%. The next most accurate prediction of yield was provided by a model which included the independent variables used in the Australian Chiller Assessment Scheme namely HCW, FD10 and LD area at the 10th rib upon which breed type had no significant (P > 0.05) effect.  相似文献

Seventy gilts were used to compare the effect of including 10% tallow (T), high-oleic sunflower oil (HOSF), sunflower oil (SFO), linseed oil (LO), a fat blend (FB), or an oil blend (OB) in finishing diets vs. feeding a semi-synthetic diet with no added fat (NF) on pig performance, carcass traits and carcass fatty acid (FA) composition. Carcasses from SFO-fed gilts had greater fat and lower lean compositions than carcasses from T-fed gilts. Gilts fed NF had greater loin fat than FB-fed gilts, and greater flare fat, loin intermuscular fat and fat:lean than T-fed gilts. Bellies from NF-fed gilts had lower lean and higher intermuscular fat and fat:lean than other diets except HOSF. Fat source had minor effects on animal performance, carcass characteristics and carcass fat content and distribution, whereas feeding NF resulted in carcasses and major cuts with higher fat content. Diets rich in polyunsaturated FA (PUFA) did not reduce fat deposition in separable fat depots with respect to monounsaturated FA (MUFA) and saturated FA (SFA). Carcasses from gilts fed NF had a high degree of saturation (40.6% SFA) followed by carcasses of T- and FB-fed gilts. Feeding HOSF, SFO and LO enriched diets elevated the percentages of MUFA (56.7%), n−6 (30.0%) and n−3 (16.6%) PUFA, respectively, whereas carcasses from gilts fed OB had greater percentages of n−3 FA (14.8% n−3, 0.9% EPA, 1.0% DPA, 3.1% DHA) than gilts fed FB (6.72% n−3, 0.1% EPA, 0.4% DPA, 0.1% DHA).  相似文献

The aims of the present study were: (i) to evaluate verotoxin-producing Escherichia coli (VTEC) faecal carriage of slaughtered pigs; (ii) to determine the effects of three different pig slaughtering processes on pig carcass contamination by VTEC; (iii) to characterise the VTEC strains isolated from pig and pig slaughterhouses (virulence genes and serotype); and (iv) to compare the strains isolated in the same slaughterhouse in order to identify the routes of contamination inside the slaughterhouse. Pork carcasses from three French slaughterhouses were sampled at three steps of the slaughter process and different sites in each slaughterhouse were sampled at three different times in the work day. Faecal material from each sampled carcass, potable water and scalding water were also collected. Detection of stx genes was performed by polymerase chain reaction (PCR) on a total of 1227 samples. In addition, a second PCR specific for E. coli O157:H7 detection was carried out on the stx-positive samples. VTEC strains were recovered from positive samples by colony hybridisation or immunoconcentration, then serotyped, genetically characterised (eae, ehx, stx1, stx2, stx2c, uidA genes associated with virulence) and pulsotyped. No E. coli O157:H7 was isolated from the three uidA-positive samples. VTEC faecal carriage was 31%. Global carcass contamination decreased with slaughter process (from 46% to 15%), whereas environmental contamination increased (from 7% to 29%). No VTEC isolates harboured eae, ehx, and uidA genes. VTEC contamination routes were not clearly identified.  相似文献

This study investigated how accurately taste panel sensory assessments of meat eating quality (MEQ) could be predicted in two divergent lamb breeds, using predictors measured in live animals (weights, subjective conformation assessments, ultrasound, computed tomography (CT) and video image analysis measurements) and carcasses (weights, MLC fat and conformation classes, pH, temperature, carcass dimensions and cross-sectional tissue dimensions), individually and in optimal combinations. Grilled muscle samples from the pelvic limb (semimembranosus) and loin (Longissimus lumborum) of 120 Texel (TEX) and 112 Scottish Blackface (SBF) lambs were assessed by a trained taste panel for texture, juiciness, flavour, abnormal flavour and overall liking. Residual correlations (adjusted for fixed effects, age and sire) between MEQ and predictor traits were low to moderate in size (<±0.42). MEQ traits predicted best by single measurements were loin flavour and overall liking for TEX (using fat area in a CT scan or subcutaneous fat depth measured post-mortem), and for SBF were leg texture (using carcass weight or temperature) and juiciness (using CT fat area or shoulder conformation score). Combining live animal and carcass measurements increased MEQ prediction accuracies, compared with using either set alone, to explain >40% of residual variation in several MEQ traits, with the highest adjusted R2 values for leg juiciness in TEX (0.53) and leg texture in SBF (0.59). The most useful predictors of MEQ depended on breed, with measurements of fatness generally more important in the lean breed and carcass size and muscling more important in the fatter breed.  相似文献

Faecal contamination of carcasses in the slaughterhouse is generally considered to be the source of Salmonella on pork. In this study the hygiene indicator Escherichia coli is used to quantify faecal contamination of carcasses and it is hypothesized that it can be used to predict the quantitative carcass contamination with Salmonella, when the distribution of Salmonella concentrations in faeces is known. Paired pig sample data (faecal samples and carcass swabs) were obtained from five slaughterhouses and analysed for prevalence and concentrations of E. coli and Salmonella. A simple model was developed to describe the faecal contamination of carcasses using the E. coli data. The E. coli results suggested different hygiene performances in different slaughterhouses, and showed that a model assuming that carcasses are predominantly contaminated by their own faeces was not appropriate. Observed Salmonella prevalences were low (on average 1.9% on carcasses) and between slaughterhouses the prevalences ranked differently than the hygiene performance based on the E. coli data suggested. Also, the Salmonella concentrations predicted using E. coli as a faecal indicator were lower than the observed Salmonella concentrations. It is concluded that the faecal carriage of Salmonella together with the faecal contamination of carcasses, as predicted from E. coli data in the animal faeces and hygiene performance of the slaughterhouse, is not sufficient to explain carcass contamination with Salmonella. Our extensive data set showed that other factors than the observed faecal carriage of Salmonella by the individual animals brought to slaughter, play a more important role in the Salmonella carcass contamination of pork.  相似文献

Attempts were made to improve the accuracy of prediction of carcass components in 68 steer carcasses using a subcutaneous fat thickness measurement (FTP(8)) and hot side weight as the principal or sole predictors. When carcasses were divided into two weight ranges, prediction of the percentages of carcass fat (fat %) and muscle (muscle %) in the lighter group, using FTP(8), were almost as accurate (fat %: RSD, 1.83; R(2), 0.73; muscle %: RSD, 1.70; R(2), 0.47) as those given by multiple regression measurements made by advanced technologies. Prediction in the heavier weight group was unsatisfactory, featuring high RSDs and a low R(2). Because breed differences in prediction did not occur in the lighter group, a single prediction equation could be used for each carcass component. The use of fat thickness groups gave a similar result to that of weight groups. Once weight groups were used, curvilinear analysis did not improve the accuracy of prediction. In the lighter carcasses, the addition of hot side weight, eye muscle area and muscle score, singly or in combination, did not improve the accuracy of percentage predictions. In the heavier carcasses, the addition of hot side weight and eye muscle area was necessary to give prediction of a modest level of accuracy. For the prediction of the weights of carcass components, the addition of hot side weight to FTP(8) gave the most accurate prediction in light carcasses (fat weight: RSD, 1.60; R(2), 0.92; muscle weight: RSD, 2.08; R(2), 0.97). In the heavy carcasses, hot side weight and eye muscle area added to FTP(8) gave the most accurate prediction (fat weight: RSD, 4.40; R(2), 0.69; muscle weight: RSD, 3.73; R(2), 0.88). Because of the high level of variance explained, it is recommended that weights of carcass components be predicted, particularly in heavy carcasses.  相似文献

The purpose of this study was to establish the prevalence and possible contamination routes of Campylobacter spp. in a pig slaughterhouse. Swab samples were taken from the last part of rectum, from the carcasses surface before meat inspection and from slaughter line surface from 4 different pig herds during slaughtering. Identification of Campylobacter isolates was determined by the use of phase-contrast microscopy, hippurate hydrolysis, indoxyl acetate hydrolysis tests and PCR based restriction fragment length polymorphism method (PCR-RFLP). Pulsed-field gel electrophoresis (PFGE) typing using two macro-restriction enzymes SmaI and SalI was applied to in-slaughterhouse contamination analysis of pig carcasses. The study showed that 28 (63.6%) of the 44 samples collected at slaughterhouse were contaminated by Campylobacter spp. Up to 5 different colonies were obtained from each swab sample and a total of 120 different isolates were collected. 23.4% (28 of 120) isolates were identified as C. jejuni (19 from carcasses and 9 from slaughter line surfaces) and 76.6% (92 of 120) isolates as C. coli (28 from faeces, 47 from carcasses and 17 from slaughter line surfaces). The typing results showed identity between isolates from successive flocks, different carcasses, and places in the slaughterhouse in contact with carcasses. The results suggest that cross-contamination originated in the gastro-intestinal tract of the slaughtered pigs and that cross-contamination happened during the slaughter process.  相似文献

Bioelectrical impedance technology (BIA) is capable of providing an objective method of beef carcass yield estimation with the rapidity of yield grading. Electrical resistance (Rs), reactance (Xc), impedance (I), hot carcass weight (HCW), fat thickness between the 12th and 13th ribs (FT), estimated percentage kidney, pelvic, and heart fat (KPH%), longissimus muscle area (LMA), length between electrodes (LGE) as well as three derived carcass values that included electrical volume (EVOL), reactive density (XcD), and resistive density (RsD) were determined for the carcasses of 41 commercially fed cattle. Carcasses were subsequently fabricated into salable beef products reflective of industry standards. Equations were developed to predict percentage salable carcass yield (SY%) and percentage trimmable fat (FT%). Resulting equations accounted for 81% and 84% of variation in SY% and FT%, respectively. These results indicate that BIA technology is an accurate predictor of beef carcass composition.  相似文献
