In the global food system, food is considered a disposable commodity and waste is produced at extraordinarily high levels. In a number of affluent nations, including Canada, “dumpster diving” for food has emerged as an approach to food provisioning. This article is based on a research project conducted for an honors thesis that examines dumpster diving for food in Vancouver, British Columbia. While an earlier report (Miewald 2009) identified dumpster diving in Vancouver as a survival strategy for people living in poverty who experience food insecurity, research for this article reveals that motivations also extend beyond economic desperation. The data contest some common assumptions and provide explanations of people's motivations and their means of “dumpstering” in the Vancouver locale. As such, the article reveals divers’ broader political, social, and economic motivations in a specific locale, enabling an exploration of some systemic contradictions of food production, distribution, provisioning, and consumption.  相似文献

Biofuels are considered as a carbon neutral alternative to hydrocarbons in the transport sector and this approach has triggered concerns about the impact the production of biofuels might have on land usage. Another option that might also lead to reduced emissions in the transport sector is electricity based on renewable energy sources such as biomass. Below, we assess the benefits and drawbacks of the joint production of ethanol and electricity in a sugar cane based refinery, and the use of both energy forms in privately owned automobiles. In this analysis, we have considered technology for energy production that is currently available and cost competitive. The results show that the amount of land that is required to power our current automobile use needs is less than what is typically stated. According to our results that are based on 2010 values, 2 million ha of land are sufficient to power the Brazilian automobile fleet, 25 million ha are enough to satisfy the needs of the U.S. fleet, and 67 million ha are sufficient to cover the global autofuel requirements. When minor efficiency gains are considered, 19 million ha will be enough to satisfy the fuel needs of the U.S. fleet in 2030, whereas land required to supply the Brazilian and global fleet remain basically unchanged. Our analysis shows that the harvested energy density of sugar cane is 306 GJ/ha/yr, which is 1.7 times the value usually reported in the literature for biofuels. As a result, taking advantage of the primary energy potential of sugar cane, only 4% of the world's available cropland area would be sufficient to produce fuels that would power the global car fleet.  相似文献

With the surge in consumption of insects, the search continues to find ways to increase the popularity of insect‐based products in the Western world. The black soldier fly larvae (BSFL), which is mainly utilized for animal feed, has great potential to provide a sustainable source of nutrients for human food. This review aims to discuss some of the key benefits and challenges of BSFL and their potential role as a food ingredient and/or product for human consumption. Few articles specifically discuss BSFL as a food source, therefore a comprehensive literature search strategy consisted of collecting and evaluating published data about BSFL as animal feed that could be relevant to its use in food. The hurdles that need to be overcome in order to introduce BSFL as a viable food option include safety concerns, technofunctional properties, nutritional aspects, consumer attitudes, and product applications for BSFL.  相似文献

Vacuum cooling is a rapid cooling method widely used in cooling some food products. Simulating the vacuum cooling process with mathematical models helps to acquire a more intuitive understanding and optimize the whole cooling process. However, there is no review summarizing the mathematical models of vacuum cooling. In this review, heat and mass transfer process during vacuum cooling, types of mathematical models for vacuum cooling, and numerical methods including finite difference method, finite element method and finite volume method used for process simulation are introduced in details. The food products used in numerical simulation study of vacuum cooling generally include liquid food, vegetables and cooked meat. The ranges of application of various numerical methods are also discussed. Moreover, heat and mass transfer coefficients have a great influence on the accuracy of the model, and are generally provided by the literature. The investigations presented in this review invariably demonstrate that mathematical modeling can provide good prediction of key information of vacuum cooling process, and has a great potential to improve vacuum cooling process in the food industry. However, more efforts are still needed to realize the industrial translation of laboratory results.  相似文献

Bamboo shoot processing produces substantial quantities of wastes in China and other parts of the world, with estimates of up to 70% of the harvested bamboo shoots being discarded as waste biomass. The solid waste residues that are generated as processing by-products consist of the outer sheath and basal section of the bamboo shoot, and wastewater is also produced, all of which pose a significant environmental burden. In comparison to the edible bamboo shoot tips, data on the composition of bamboo shoot processing residue (BSPR) are comparatively scarce. The tender shoots are rich in nutrients and bioactive compounds that are associated with health benefits against many chronic and degenerative diseases, and there is potential for these compounds to also be present in BSPR. Therefore, this paper reviews the current literature available on BSPR composition from both English and Chinese journals, for comparison with the tender bamboo shoot. From this information, the potential of using BSPR as a cheap source of valuable nutrients and bioactive compounds for value-added products (e.g., food additives, functional foods, and pharmaceuticals) is discussed. To maximize the value from BSPR and reduce its environmental impact as a waste, a systematic biorefinery approach for waste valorization is recommended.  相似文献

There is no systematic procedure described in the literature to establish a robust and accurate reference method for determining the moisture content in any solid food product. In this paper, we are proposing a new approach based on simultaneous thermogravimetry and differential thermal analysis (TG–DTA), with data for several amorphous food powders that result from spray-drying, freeze-drying or extrusion. In the first step, by heating a representative sample of about 20 mg at 2 °C/min we would detect the temperature and the mass loss at the inflection point that characterises, if there is an inflection, the end of the drying and the onset of chemical reactions. In cases of not too much sensitive products, the mass loss at the inflection may be considered as a good estimation of the moisture content. At 2 °C/min heating rate, the inflection temperature Ti is an indicator that allows estimating the optimal isothermal drying temperature Td about 15–30 °C below Ti, depending on the product sensitivity to heat treatments and the kinetics of water molecule diffusion through the amorphous matrix. Then, a series of three isothermal drying are performed at about Td−12 °C, Td and Td+8 °C, and a simple multilinear model allows calculating the best oven temperature to achieve the optimal moisture content determination in 2 h. This procedure is described and results are shown for several dehydrated food products: milk, coffee, cereal and pet food. This fast procedure may be applied either for establishing optimal oven conditions for most amorphous new products or for revising conditions that have been established in the past but are not robust enough for several ones.  相似文献

The control of the microbiological quality of bivalve molluscs assumes particular importance because they are among the most produced seafood products and mostly consumed as a whole, raw, or lightly cooked. The composition of the bacterial community associated with bivalves depends mostly on the microbiology of the surrounding environment at growing sites. Once the relationship between microbiology of bivalves and environment is established, a better classification and monitoring of the shellfish beds and evaluation of depuration strategies can be achieved. In this work, we tested if the methods of DNA extraction commonly used for the culture-independent microbiological analysis of sediment and water could be used directly, or with modifications, for the analysis of bacteria in mussels. The commercial kits Genomic DNA Purification Kit (MBI Fermentas, Vilnius, Lithuania), UltraCleanTM Soil DNA Isolation Kit (MOBIO Laboratories, Inc., Carlsbad, CA) and the method described by Griffiths and collaborators for DNA/RNA co-extraction were compared. The efficiency of extraction was assessed by DNA fluorescence and the denaturing gradient gel electrophoresis gel patterns of 16S ribosomal RNA gene fragments were used to compare the reproducibility and representativeness of the extraction methods. Results showed that the DNA/RNA co-extraction method with modifications was the most suitable. However, the results must be interpreted in the light of the purpose of the study and the relevance of maximizing extraction yield or diversity estimate, without compromising reproducibility. To our knowledge, this was the first attempt to transpose the procedure currently used for DNA extraction from sediments or waters, to the analysis of whole mussels.  相似文献

Food must supply a balance of nutrients to support both brain and body. The human brain makes us uniquely human. Essential fatty acids are part of the metabolic pathways that define tissue structure and function. Omega-6 (O6) linoleic acid (LA6) has long been known to be required for skin structure, and as a precursor for inflammatory, thrombotic, immune, and other signaling molecules. Omega-3 (O3) alpha-linolenic acid (ALA3) and particularly its long chain product docosahexaenoic acid (DHA3) has a key structural role in the brain, retina, and related neural tissue. In the 20th century western world, inexpensive, high quality oils primarily from LA6-rich/O3-poor vegetable seed oils became dominant fats produced by the food industry. Provision of LA6-rich/O3-poor oils as the sole source of fat in the diets of pregnant animals causes O3 deficiency and poor brain development, primarily because high LA6 antagonizes metabolism of all O3, creating an artificial metabolic demand for O3. Data developed over the last 2~3 decades show that provision of low LA6 combined with preformed DHA3 optimizes brain function. Recent studies emphasize the importance of nutrition to support brain development, with newer findings showing particular importance of fatty acid balance in malnourished children. The World Health Organization (WHO) through the Codex Alimentarius (“Code for Food”) is increasingly recognizing the primacy of brain health and in part on that basis recently acted to recommend balanced fat for Ready-to-Use-Therapeutic Foods used to treat children with severe acute malnutrition. Similar principles are likely to be important in older persons. Industry now has the tools to adjust the composition of oils to support brain health throughout the life cycle.  相似文献

Rapid control of heavy hemorrhaging is critical to save the life of injured individuals.Herein,we developed a novel hemostat employing chitosan-based microspheres,which was prepared by sequential microemulsion of chitosan solution,sol-gel phase transition,and surface modification by 3,4-dihydroxyhydrocinnamic acid(HCA).HCA-modified chitosan microspheres(CSMS-HCA)displayed a porous structure,with a high specific surface area(~211.3 m2/g),accelerating their rapid absorption of blood and concentrating red cells and platelets.The CSMS-HCA exhibited much better in vitro and in vivo hemostatic efficacy than porous chitosan microspheres did.Such a rapid hemostat in the form of microspheres is highly effective in treating deep and irregular wounds,owing to easy accessibility to injured sites.  相似文献

Identification of myofibrillar substrates for μ-calpain   总被引:1,自引:0,他引:1  
To identify myofibrillar substrates of μ-calpain under post-mortem conditions, a combination of SDS–PAGE, two-dimensional gel electrophoresis (2DE) and matrix-assisted laser desorption/ionisation time-of-flight mass spectrometry (MALDI-TOF MS) was used. Purified myofibrils were incubated with μ-calpain under post-mortem-simulated conditions for two or four days at 4 °C. The resulting protein changes were analyzed by SDS–PAGE and 2DE. The μ-calpain-mediated protein changes were identified by peptide-mass mapping using MALDI-TOF MS and revealed that desmin, actin, myosin heavy chain, myosin light chain I, troponin T, tropomyosin 1, tropomyosin 4, thioredoxin and CapZ are all degraded in vitro by μ-calpain. The findings that actin and myosin heavy chain are substrates of μ-calpain were rather surprising, as it has previously been reported that these proteins are resistant to μ-calpain degradation. However, both actin and myosin heavy chain are poor substrates compared with desmin.  相似文献
