This study determined the effect of heat treatment on bioactive compounds (total monomeric anthocyanins and total phenolics) and the visual colour of wild strawberry (Fragaria vesca) pulp within the temperature range 60–90 °C. The change in the antioxidant activities of the samples was also evaluated. Total monomeric anthocyanins and total phenolics degraded with increasing temperature and time. First-order kinetic models were determined for those reactions. The activation energies for the degradation of total monomeric anthocyanins and total phenolics were 21.6 and 18.95 kJ mol?1, respectively. The change in visual colour of wild strawberry pulp was also determined using CIE L*a*b* colour parameters. The change in colour parameters also followed first-order reaction kinetics. Activation energies for the variation of colour parameters were within the range 11.92–63.23 kJ mol?1. The antioxidant activities of heated wild strawberry pulp increased with increasing temperature and time.  相似文献

The objective of this study was to investigate the effects of 1-methylcyclopropene (1-MCP) combined with UV-C irradiation on postharvest quality of blueberry fruit (Vaccinium spp. Berkeley) stored at 4 ± 1 °C for 8 days. Respiration rate, ethylene production, decay incidence, softness, color, total anthocyanin content, malondialdehyde (MDA) content, titratable acid content, soluble solid content, peroxidase (POD), phenylalanine ammonia lyase (PAL), and catalase (CAT) of treated blueberry fruit were examined. The results indicated that treatment with 1-MCP plus UV-C irradiation inhibited respiration rate, ethylene production, decay incidence, and MDA content. The combined treatment also delayed softness, color, titratable acid, and soluble solid content and improved total anthocyanin content of blueberries throughout the storage period at 4 ± 1 °C compared to the untreated samples. The efficiency of the combined treatment (1-MCP + UV-C irradiation) was better than that of 1-MCP or UV-C irradiation alone. Furthermore, combination of 1-MCP and UV-C irradiation effectively enhanced PAL and CAT activities and inhibited the increasing of POD activity in blueberries. Therefore, our results shows that 1-MCP plus UV-C irradiation treatments may be a useful method in maintaining commercial quality and extending shelf life of blueberries.  相似文献

Pinot noir grapes have a unique phenolic profile which can impinge on the extraction and stabilisation of compounds such as anthocyanins and tannins which contribute to the colour and mouthfeel of red wine. This study examined the concentration of phenolic compounds in Pinot noir grape must and wine following application of a novel microwave maceration treatment for red grape must. Microwave maceration was shown to be highly effective for extraction of phenolics from grape solids into grape juice. When juices were fermented to wine, ultraviolet–visible spectrophotometry showed microwave maceration was associated with significantly higher concentrations of total phenolics, anthocyanin, tannin and pigmented tannin in wine at 18 months bottle age, compared with control wine. Mean tannin concentration in microwave treatment wine was 0.60 gm/L at 18 months, compared with 0.14 gm/L in control wine. The microwave treatment was also associated with a substantial and rapid decrease in the grape-associated yeast population, compared with control maceration, and a shorter lag phase at the outset of alcoholic fermentation. Based on this study, microwave maceration warrants further investigation as a potential industrial-scale application in red winemaking.  相似文献

Juices prepared from arils of ‘Mollar’ pomegranates were analysed for naturally occurring microorganisms, CIE Lab colour parameters, total phenols, anthocyanins and punicalagins, ellagic acid content and antioxidant capacity before and after low-, mild- and high-temperature pasteurisations (LTPs, MTPs and HTPs): 65, 80 and 90 °C for 30 or 60 s. Mean aerobic plate count (APC), yeast and mold count (YMC), and lactic acid bacteria (LAB) for fresh juices were 5.7, 5.36 and 4.0 log CFU/mL, respectively. MTPs and HTPs were sufficiently effective to decrease APCs to nil or negligible levels. An increase in CIE a values and decrease in CIE b values were the characteristic colour changes in heat-treated juices. The effect of pasteurisations showed that total phenols, punicalagins and ellagic acid were not much affected by thermal processing. Total anthocyanin content and antioxidant capacity were substantially and significantly influenced by the heat treatment applied. A linear relationship was observed between Trolox equivalent antioxidant capacity (TEAC) values and total anthocyanins, suggesting that they contributed strongly to the antioxidant capacity of pomegranate juice.  相似文献

Mature-green (breaker-stage) tomatoes were harvested and treated daily with short bursts of UV-C, red light or sun light for up to 21 days. Control untreated tomatoes were kept in the dark for the same period. The effects of the treatments on the levels of the major tomato carotenoids, skin colour, tissue firmness and total soluble refractive solids were evaluated throughout storage. Results indicated that the concentration of lycopene in tomato exocarp was significantly increased after 4 days and dramatically enhanced by UV-C or red light treatments. However, the concentration of β-carotene was not affected by UV-C or red light treatments, and decreased by sun light treatment during 21 days of storage, compared to the control samples. The colour (a∗ and b∗ values) and force required to penetrate the tomatoes was, to a small but significant extent, influenced by the light treatments. However, the total soluble refractive solids of all tomato samples remained the same throughout storage. The findings reported here could be employed to improve tomato nutritional qualities lycopene content without inducing significant changes to the physical properties of tomatoes during post-harvest storage.  相似文献

Alicyclobacillus acidoterrestris is a spore-forming bacterium that can survive thermal pasteurization and acidic conditions. It produces changes in the odour and flavour of fruit juices leading to economical loses. A. acidoterrestris CECT 7094 spores were inoculated in clarified and cloudy apple juices (Golden delicious var.) in the range of 5–6 log10 spores/mL and submitted to different short-wave ultraviolet light (UV-C) doses (7.2–28.7 J/mL) and ultra-high pressure homogenisation (UHPH) treatments (100–300 MPa), including their combination. A. acidoterrestris could be inactivated in clarified apple juice at a level of 4.8 log10 CFU/mL by a 300 MPa-UHPH treatment when the inlet temperature was 80 °C. UV-C treatments showed to be more efficient achieving a lethality of 5.5 log10 CFU/mL with a dose of 21.5 J/mL at 20 °C. In cloudy apple juice (2357 NTU) UV-C treatments were less efficient with a maximum lethality of 4.07 CFU/mL after a dose of 28.7 J/mL. A previous application of UHPH contributed with UV-C to obtain higher reductions of A. acidoterrestris spores at the doses of 14.3 and 21.5 J/mL compared with UV-C single treatments. On the other hand, this previous treatment also changed the properties of particles in the matrix which apparently reduced the effectiveness of UV-C at 28.7 J/mL.  相似文献

Abstract: This study was conducted to evaluate the effect of pulsed electric field (PEF) treatment on anthocyanin extraction from red cabbage using water as a solvent. Mashed cabbage was placed in a batch treatment chamber and subjected to PEF (2.5 kV/cm electric field strength; 15 μs pulse width and 50 pulses, specific energy 15.63 J/g). Extracted anthocyanin concentrations (16 to 889 μg/mL) were determined using HPLC. Heat and light stabilities of the control and PEF-treated samples, having approximately the same initial concentrations, were studied. PEF treatments enhanced total anthocyanin extraction in water from red cabbage by 2.15 times with a higher proportion of nonacylated forms than the control (P < 0.05). The heat and light stabilities of the PEF-treated samples and control samples were not significantly different (P > 0.05). Practical Application: An innovative pretreatment technology, pulsed electric field processing, enhanced total anthocyanin extraction in water from red cabbage by 2.15 times. Manufacturers of natural colors can use this technology to extract anthocyanins from red cabbage efficiently.  相似文献

In this study, the effect of combined preheating time (2, 5, and 10 min) and extraction medium pH (2.5, 3.5, and 4.5) on total monomeric anthocyanin yield, and removal of off‐odour in red radish anthocyanins were evaluated. The tentative anthocyanin identification showed twelve pelargonidin anthocyanins, and only nine were identified in samples preheated for 10 min. Sample preheated for 10 min and extracted at pH 4.5 showed lower the anthocyanin yield (98.02 mg/100 g, FW), lighter colour and higher percentage polymeric colour compared with that preheated for 2 min and extracted at pH 2.5. However, prolonged preheating time (10 min) significantly reduced myrosinase enzyme activity by 73%. Additionally, results showed that preheating time and extraction medium pH have negative and significant effect on the total monomeric anthocyanin yield, while they showed positive and negative significant effect on the total glucosinolate degradation. Furthermore, the sensory evaluation results revealed no significant difference in radish odour for samples preheated for 2 and 5 min followed by anthocyanin extraction in pH 2.5 medium. It might therefore be concluded that the combination of moderated preheating treatment time (≤5 min) and lower extraction medium pH could be effective to reduce the off‐odour characteristics and maintaining high yield and stable red radish pigment.  相似文献

以“东魁”杨梅果实为材料,研究不同剂量的短波紫外线(UV-C)照射处理对杨梅果实采后品质、抗氧化活性、苯丙烷类代谢产物含量和相关酶活性的影响。杨梅果实先用0、1.5、3.0、4.5、6.0 kJ/m2剂量的UV-C照射处理,然后转入5 ℃贮藏12 d。结果表明,3.0 kJ/m2 UV-C处理显著地抑制了杨梅果实贮藏期间腐烂的发生,延缓了果实硬度和VC含量的下降,保持了果实品质;UV-C处理还显著提高了果实中苯丙氨酸解氨酶、4-香豆酰辅酶A连接酶、查尔酮异构酶和肉桂醛羟化酶等苯丙烷类代谢相关酶的活性,增加了总酚、花色苷、胡萝卜素和类黄酮的积累,保持了果实较高的抗氧化活性。  相似文献

Thermal degradation kinetics of anthocyanin and visual colour (tristimulus L, a and b values) of plum puree were studied at selected temperatures (50–90 °C) for a residence time of 20 min. Results indicated that the thermal degradation of anthocyanin, tristimulus colour a value (representing redness) and L×a×b value (representing total colour) followed first-order reaction kinetics. The activation energy values for anthocyanin, red colour and total colour were 37.48, 25.86 and 30.68 kJ/mol respectively. Higher activation energy signified higher thermal sensitivity of anthocyanin during heat processing of plum puree. A linear relationship described well the variation of total visual colour (L×a×b) with anthocyanin content of plum puree during thermal processing.  相似文献

Large decreases in colour density during the making of red wines, whether by the traditional fermentation on skins or by thermovinification, have not previously been explained in terms of juice and wine composition. The major colour loss is actually due to the extreme instability of deeply coloured pigment structures initially present in the juice extract to ethanol, whereas decrease in anthocyanin content is a minor contributing factor. The consequent decline in colour density during fermentation can be as much as five-fold under conditions of high pH. Both red and blue chromophoric forms of the anthocyanins, in self-association and co-pigmentation with related flavonoid phenolics, are proposed as being present in the juice pigments. The stability of such complexes is ascribed to intermolecular hydrogen bonding forces. The existence of two nearly distinct phases in the accounting of total phenolics during ‘evolution ’of a red wine is emphasised.  相似文献

To study the polyphenols in whole grain rice varying in bran colour, the total phenolics, flavonoids and antioxidant capacities of the solvent-extractable (Free) and cell-wall bound (Bound) fractions and the profiles of proanthocyanidins and anthocyanins were determined. Red and purple bran rices had significantly higher total (sum of Free- and Bound-) phenolic (PC) and flavonoid (FC) concentrations and antioxidant capacities than light-coloured bran rice or other cereals (P < 0.05), due to their higher concentrations of proanthocyanidins and anthocyanins, respectively. The concentrations of the Bound-PC and FC accounted for approximately half of the total PC and FC in the light-coloured bran rice, but were lower than those in purple and red bran rice (P < 0.05). High correlations were found between the concentrations of total phenolics and the three antioxidant capacity assays except for those in the bound fraction when related to iron chelating capacity. The concentrations of proanthocyanidins in red bran rice was 1.27 mg/g and its composition was 6.5%, 33.5%, 30.6% and 29.4% of 1–3, 4–6, 7–10 mers, and polymer (>10 mers), respectively. Cyanidin-3-glucoside was the predominant anthocyanin and peonidin-3-glucoside was the second highest; the profiles varied between purple bran cultivars. Whole grain rice differing in bran colour contained unique polyphenol subgroups, which have been proposed to positively impact human health.  相似文献

Previously optimised postharvest treatments were compared to conventional chlorinated water treatment in terms of their effects on the overall quality of tomato (‘Zinac’) during storage at 10 °C. The treatments in question were water heat treatment (WHT?=?40 °C, 30 min), ultrasounds (US?=?45 kHz, 80 %, 30 min), thermosonication (TS?=?40 °C, 30 min, 45 kHz, 80 %) and ultraviolet irradiation (UV-C: 0.97 kJ m?2). The quality factors evaluated were colour, texture, sensorial analysis, mass loss, antioxidant capacity, total phenolic content, peroxidase and pectin methylesterase enzymatic activities, and microbial load reduction. The results demonstrate that all treatments tested preserve tomato quality to some extent during storage at 10 °C. WHT, TS and UV-C proved to be more efficient on minimising colour and texture changes with the additional advantage of microbial load reduction, leading to a shelf life extension when compared to control trials. However, at the end of storage, with exception of WHT samples, the antioxidant activity and phenolic content of treated samples was lower than for control samples. Moreover, sensorial results were well correlated with instrumental colour experimental data. This study presents alternative postharvest technologies that improve tomato (Zinac) quality during shelf life period and minimise the negative impact of conventional chlorinated water on human safety, health and environment.  相似文献

以‘红艳’草莓为材料,研究短波紫外线(ultraviolet-C,UV-C)处理对草莓果实在5℃、12 d贮藏期间腐烂、苯丙烷类代谢和抗氧化活性的影响。结果表明,2.0 k J/m2 UV-C处理能显著抑制草莓果实贮藏期间腐烂指数的上升。同时,UV-C处理能有效诱导果实贮藏期间苯丙氨酸解氨酶、肉桂酸羧化酶、对香豆酰-Co A连接酶、查尔酮异构酶和二氢黄酮醇还原酶活性的增加,维持较高的总酚、总花色苷、总黄酮以及主要酚类和花色苷类单体的含量,促进果实1,1-二苯基-2-三硝基苯肼自由基清除率和总还原力的上升,抑制羟自由基清除率的下降,从而保持了果实较高的抗氧化活性。  相似文献

This research established a database of analytical values associated with 173 commercial red wines from 7 vintages (1995–2001), 4 varieties (Pinot noir, Merlot, Cabernet Franc, Cabernet Sauvignon) and 13 vineyard locations within BC. Wines were analyzed for sulfur dioxide, pH, titratable acidity, phenolics, tartaric esters, flavonols, as well as copigmented, monomeric, polymeric, and total anthocyanins. Colour was evaluated using colour density, hue, and L, a1, b1 and chroma measurements. The sensory astringent qualities were characterized on a subset of 78 wines, using a panel of 12 judges. The panel evaluated the magnitude of the astringency, astringent aftertaste, oakiness and bitterness, as well as 3 astringent sub-qualities (surface roughness, drying, puckering). Data were analyzed by analysis of variance, principle component analyses, and canonical discriminant analyses to track the influence of variety, vintage and vineyard location. Trends were observable despite large variation in winemaking techniques. Red colour, colour density, copigmented, monomeric, polymeric and total anthocyanins were lowest in Pinot noir and highest in Cabernet Sauvignon wines. Younger wines had higher concentrations of copigmented, monomeric, and total anthocyanins than did older wines. Canonical discriminant analysis of the analytical and sensory determinations were successful in distinguishing the wines according to where the grapes were grown.  相似文献

The effect of the addition of two commercial pectolytic enzymes on the anthocyanin and chemical composition of Öküzgözü wines was studied. A rapid HPLC-diode array detection (DAD) method was developed for the analysis of anthocyanins in wines. Direct injection of filtered wine samples followed by selective detection at 520 nm allowed quantitation of these compounds in red wines. Thirteen anthocyanin compounds were detected in wines and, addition of the two enzyme preparations improved the extraction of anthocyanins. Moreover, the wines treated with enzymes had higher values in total phenolics, tannins, and colour intensity than the control wines.  相似文献

Red wine colour is an integration of contributions from monomeric anthocyanins and polymeric pigment forms. Because of gross differences between the two fractions in their responses to pH change and to SO2 addition, approximate measures of the states of anthocyanin equilibria in young red wines can be routinely made. Recent correlations of such measures with independent assessments of relative wine quality have prompted further examination and development of the original analytical concepts. The equilibria may be described in terms of two percentage parameters α and α ', the values of which are related to wine pH and to SO2 added after fermentation. Measures of free SO2 and also molecular SO2, anthocyanin content and total phenolics are obtained from the same set of spectral data. The interpretations are based upon a number of analytical premises for which certain approximations have been necessary. These appear to be well justified in comparative evaluations because of the wide range of parameter values observed in surveys of current vintage wines. Observations of ageing changes in the composition of wine colour, with proposed spectral indices of “chemical age”, are also presented.  相似文献

The aim of the present study was to investigate the effectiveness of UV-C and thermal treatments on the shelf life of carrot juice. Carrot juice samples were exposed to UV-C radiation and thermal treatment. After the treatments, all carrot juice samples were stored at 4 °C for 16 days. Parameters taken into account were: physicochemical [colour values (L*, a*, and b*) and browning index, viscosity, optical density, density, pH, turbidity], microbiological [total plate count mesophilic, total plate count psychrotrophic, lactic acid bacteria Enterobacteriaceae and yeast and moulds) and sensory attributes. Results showed that the shelf life of carrot juice samples was 4 days for the fresh (control samples) and increased to 12 days for the thermally and UV-Ctreated, respectively. In addition, no significant changes occurred in the investigated physicochemical parameters, while sensory characteristics were not downgraded by UV-C treatment. Present results obtained, support the use of UV-C technology for improving shelf life stability of carrot juice.  相似文献

Sixteen Indian commercial carrot cultivars were analysed for variations in β-carotene, total phenolics, total flavonoids, total monomeric anthocyanin and antioxidant activity. Antioxidant activity was measured using four in vitro assays viz. ferric reducing antioxidant power (FRAP), cupric reducing antioxidant power (CUPRAC), 2, 2-diphenyl-1-picrylhydrazyl (DPPH) and Trolox equivalent antioxidant capacity assays (TEAC). Additionally six colour attributes were evaluated. Among carrot cultivars, significant differences (p < 0.05) were obtained with respect to antioxidant composition and antioxidant activity. Total phenols and total flavonoids varied from 7.98 to 291.48 mg/100 g fresh weight (fw) and 3.00 to 111.70 mg/100 g fw respectively. Chemometric tools like principal component analysis (PCA) and agglomerative hierarchical clustering (AHC) were applied to understand possible classification Indian carrot cultivars based on colour properties, bioactive antioxidant compounds and antioxidant potentiality. PCA revealed that the first two components represented 92.9% of the total variability in the total variation. AHC classified cultivars into four main groups on the basis of the measured parameters. Black coloured genotype was found to be rich source of phenols, flavonoids and anthocyanin with very high antioxidant activity. Orange cultivars were found to be rich sources for β-carotene compared to red & black cultivars.  相似文献
