Two cultivars each of broccoli (Brassica oleracea L var italica), Brussels sprouts (B oleracea var gemmifera), cabbage (B oleracea var capitata), cauliflower (B oleracea var botrytis) and kale (B oleracea var acephala) were grown during two fall seasons and two spring seasons to determine whether significant seasonal effects on glucosinolate (GS) concentrations could be explained by mean temperature, photosynthetic photon flux (PPF) and daylength during the growing seasons. Concentrations of total GSs, indole GSs and glucoraphanin differed by genotype and season. Total GS concentrations at harvest had a negative linear but positive quadratic relationship with temperature and daylength over the 2 weeks preceding harvest and a positive linear but negative quadratic relationship with PPF over the same 2 weeks. The regression model for indole GS concentrations similarly varied with mean temperature, daylength and PPF over the 4 weeks prior to harvest. Glucoraphanin concentrations at harvest decreased linearly with mean PPF from transplanting to harvest and had a negative linear but positive quadratic relationship with daylength from transplanting to harvest. Because glucoraphanin and other GSs in cruciferous crops are important for cancer chemoprotection, climatic conditions should be considered when planning planting dates or when making breeding selections for GS concentration. Myrosinase activity in partially purified extracts of 12 cruciferous vegetables and an acetone powder preparation of Sinapis alba L. (white mustard) was determined by the initial rate of glucose formation from glucosinolate hydrolysis using a coupled assay. Of the species studied Raphanus sativus L. (radish, 12.8±0.7 μmol min?1g?1 powdered tissue) had the greatest myrosinase activity, and Brassica campestris L. ssp. rapifera (turnip) and Nasturtium officinalis R.Br. (watercress) (0.6±0.1 and 0.8±0.03 μmol min?1g?1 powdered tissue respectively) the least. The sub-species of Brassica oleracea studied all had similar myrosinase activity (ca 2.5±0.2μmolmin?1g?1 powdered tissue) except B. oleracea L. var. gemmifera D.C. (Brussels sprouts) and B. oleracea L. var. capitata L. (white cabbage) which had higher activities (7.6±0.1 and 5.2±0.2μmol min?1g?1 powdered tissue respectively). The effect of ascorbate concentration upon the myrosinase activity of six of the crucifers studied and the white mustard preparation, revealed that the ascorbate concentration necessary to promote maximal activity varied with species. A concentration of 0.9mM ascorbate maximally activated radish and turnip myrosinase, while red cabbage, watercress, white mustard and Brussels sprouts were maximally activated at 2.0, 3.0, 5.0 and 0.7–1.0mM ascorbate respectively. Two peaks of maximal myrosinase activity, occurring between 0.9 and 1.0mM and at 3.0mM ascorbate, were found for B. oleracea L. var. botrytis L. subvar. cauliflora D.C. (cauliflower).  相似文献

Total aliphatic, indolic and aromatic glucosinolates were evaluated in the edible portions of fresh harvested inflorescences of five commercial and three experimental broccoli (Brassica oleracea L var italica) cultivars grown under various climatic and agronomic conditions, ie early (winter) or late (spring) season with poor (15 kg ha?1) or rich (150 kg ha?1) sulphur fertilisation, in an attempt to identify differences due to genetic and agronomic factors. The predominant glucosinolates in all broccoli cultivars were 4‐methylsulphinylbutyl‐glucosinolate (glucoraphanin), 3‐indolylmethyl‐glucosinolate (glucobrassicin) and 1‐methoxy‐3‐indolylmethyl‐glucosinolate (neoglucobrassicin). The results showed no significance differences in total glucosinolates between rich and poor fertilisation, whereas total glucosinolates were detected more significantly in the late than in the early season. All broccoli cultivars showed a higher content of indolic glucosinolates than aliphatic glucosinolates. Clear advantages were detected in the analysed commercial cultivars, as the experimental cultivars yielded lower concentrations of these compounds. © 2003 Society of Chemical Industry  相似文献

The edible portions of different Brassica spp. grown in several areas of Northwest Spain (Galicia) were studied during 2007 and 2008. The aim of the study was to determine and compare the values of some physicochemical parameters (moisture, soluble solids, titratable acidity, pH, protein, ash, vitamin C, total phenolics, chlorogenic acid, caffeic acid, p‐coumaric acid, quercitin and chlorophyll) in different edible portions of turnip greens and turnip tops (Brassica rapa var. rapa), Galega kales (B. oleracea L. var. acephala), white cabbages (B. oleracea L. convar. capitata var. alba) and Savoy cabbage (B. oleracea L. convar. capitata var. sabauda). Different values were obtained for the parameters depending on the variety of plant. In general, the nutrient contents of the turnips and the Galega kales were higher than those of the cabbages. Variations within different edible portions were also observed. Moreover, the mean values of the parameters measured in leaves were higher than those measured in stems, except for moisture content. High concentrations of soluble solids, protein, vitamin C and phenolics were found in the different varieties of Brassica studied.  相似文献

Two Brassica oleracea varieties (B. oleracea L. var. costata DC and B. oleracea L. var. acephala) and Brassica rapa L. var. rapa inflorescences were studied for their chemical composition and antioxidant capacity. Phenolic compounds and organic acids profiles were determined by HPLC–DAD and HPLC–UV, respectively. B. oleracea var. costata and B. oleracea L. var. acephala inflorescences presented a similar qualitative phenolic composition, exhibiting several complex kaempferol derivatives and 3-p-coumaroylquinic acid, while B. rapa var. rapa was characterized by kaempferol and isorhamnetin glycosides and several phenolic acids derivatives. B. oleracea L. var. costata and B. rapa var. rapa showed the highest phenolics content. The three Brassica exhibited the same six organic acids (aconitic, citric, pyruvic, malic, shikimic and fumaric acids), but B. oleracea L. var. acephala presented a considerably higher amount. Each inflorescence was investigated for its capacity to act as a scavenger of DPPH radical and reactive oxygen species (superoxide radical, hydroxyl radical and hypochlorous acid), exhibiting antioxidant capacity in a concentration dependent manner against all radicals. These samples were also studied for its antimicrobial potential against Gram-positive and Gram-negative bacteria and fungi, displaying antimicrobial capacity only against Gram-positive bacteria.  相似文献

The following four vegetables; beans (Phaseolus vulgaris var. vulgaris), brinjal (Solanum melongena var. esculentum), knol‐khol (Brassica oleracea var. caulorapa) and radish (Raphanus raphanistrum satvius) were processed either by conventional, pressure or microwave cooking methods and were analysed for their nutritional and sensory profile. Raw samples were used as controls. Microwave cooking resulted in greater moisture loss when compared with vegetables cooked by other methods. The protein, fat, total ash, calcium, phosphorus, iron, and dietary fibre contents of the vegetables did not differ significantly in raw or cooked vegetables. Ascorbic acid was destroyed to the greatest extent by pressure cooking followed by microwave and conventional method. The sensory attributes of cooked vegetables, as evaluated by a paired preference test, revealed that there were no significant differences between cooked radish and knol‐khol but, in the case of beans and brinjal, microwave and conventionally cooked samples were preferred over pressure cooked ones.  相似文献

BACKGROUND: Strawberries are nutritive fruits and a source of antioxidants. We evaluated antioxidant properties of ‘Camino Real’ strawberries grown in the Brazilian savannah, harvested in different seasons. Analytical and meteorological data were analyzed by partial least squares regression. RESULTS: Fruits from May showed the lowest contents of total phenolics (1789.78 mg kg?1 fresh weight (FW)), catechin (21.37 mg kg?1 FW), quercetins (4.89 mg kg?1 FW) and total ellagic acid (208.68 mg kg?1 FW) and the lowest antioxidant activity by 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) (11.39 mg Butylated hydroxytoluene (BHT) eq. g?1 FW) and ferric reducing antioxidant power (FRAP) (22.01 mg ferrous sulfate eq. g?1 FW) assays. Strawberries harvested in July presented the lowest concentrations of total (190.61 mg kg?1 FW) and individual anthocyanins (73.88 mg kg?1 FW and 5.96 mg kg?1 FW for pelargonidin‐3‐glucoside and cyanidin‐3‐glucoside, respectively), but the highest contents of vitamin C (685.47 mg kg?1 FW), DPPH (18.87 mg BHT eq. g?1 FW) and FRAP (39.30 mg ferrous sulfate eq. g?1 FW). The highest contents of free ellagic acid (26.11 mg kg?1 FW), pelargonidin‐3‐glucoside (291.82 mg kg?1 FW) and cyanidin‐3‐glucoside (11.84 mg kg?1 FW) were found in strawberries from September. Rain in the previous 30 days to harvest influenced negatively many phenolics and antioxidant activity of strawberries harvested in May. In July, longer photoperiod and lower temperature at 30 days previous to harvest probably led to higher antioxidant activity and vitamin C. Increased photoperiod and temperature at the final stage of maturation seem to raise pigments and free ellagic acid in strawberries. CONCLUSION: It was possible to observe significant relationships among meteorological and antioxidant variables for strawberries grown in the Brazilian savannah. BACKGROUND: There is growing interest among consumers in baby leaf vegetables, mostly requested for mixed salads, both as fresh market products and ready‐to‐use vegetables. Fertilisation is one of the most practical and effective ways of controlling and improving the yield and nutritional quality of crops for human consumption. The optimal fertiliser concentration for baby leaf vegetables depends on the environmental conditions. The aim of the present work was to determine the effects of nutrient solution concentration (2, 18, 34, 50 or 66 mequiv L?1) during two consecutive growing seasons (spring and summer) on the yield and leaf quality of Lactuca sativa L. var. acephala grown in a floating system. RESULTS: Marketable fresh yield, total dry biomass, leaf area index, macroelement (N, P, K and Mg) concentrations and nitrate and total chlorophyll contents increased in response to an increase in nutrient solution concentration, while the opposite trend was observed for root/shoot ratio and glucose, fructose, starch, total carbohydrate and protein contents. Plants grown in the spring season exhibited lower yield and growth (total dry biomass and leaf area index) but higher leaf quality (higher carbohydrate content and lower nitrate content) than those grown in the summer season. CONCLUSION: The use of nutrient solution concentrations of 37 and 44 mequiv L?1 for the spring and summer seasons respectively could be adopted in the present conditions to improve marketable fresh yield and leaf mineral content, but with a slight reduction in some nutritional parameters. Kale (Brassica oleracea var. Acephala), broccoli (Brassica oleracea var. botrytis italica), Brussels sprouts (Brassica oleracea L. var. gemmifera) and green and white cauliflower (Brassica oleracea var. botrytis) were used to determine their contents of antioxidising agents: vitamin C, carotenoids and polyphenols. The examined vegetables were found to contain between 40.6 and 107 mg/100 g FW of vitamin C, from 0.04 to 2.7 mg/100 g FW of carotenoids, and from 144 to 773 mg/100 g FW of polyphenols. Cauliflower was found to contain the smallest amount of these compounds and kale the largest. The antioxidant activity of the vegetables was determined on the basis of their ability to extinguish the ABTS free radical. The aquathermal processes to which the vegetables were subsequently subjected reduced their antioxidant activity, mainly due to escape of vitamin C and polyphenols into the water environment. These losses were largest in the case of leafy or highly fragmented vegetables.  相似文献

BACKGROUND: The purpose of this study was to evaluate the effects of leaf order or crop season on anthocyanins and other chemicals in the anthocyanin‐rich tea cultivar ‘Sunrouge’ (Camellia sinensis x C. taliensis) by using high‐performance liquid chromatography, and to study the effect of ‘Sunrouge’ extract on acetylcholinesterase (AChE) activity in human neuroblastoma SK‐N‐SH cells. RESULTS: The total anthocyanin content was higher in the third (3.09 mg g?1) than in the second (2.24 mg g?1) or first crop season (1.79 mg g?1). The amount of anthocyanins contained in the stem was high (1.61 mg g?1). In the third crop season, the concentrations of delphinidin‐3‐O‐β‐D ‐(6‐(E)‐p‐coumaroyl)galactopyranoside (DCGa), cyanidin‐3‐O‐β‐D ‐(6‐(E)‐p‐coumaroyl)galactopyranoside, delphinidin‐3‐O‐β‐D ‐galactopyranoside, delphinidin‐3‐O‐β‐D ‐(6‐O‐(Z)‐p‐coumaroyl)galactopyranoside, cyanidin‐3‐O‐β‐D ‐galactoside, and delphinidin‐3‐O‐β‐D ‐glucoside were 1.57 mg g?1, 0.52 mg g?1, 0.40 mg g?1, 0.22 mg g?1, 0.14 mg g?1, and 0.11 mg g?1, respectively. DCGa accounted for about 50% of the anthocyanins present. The suppressive effect of ‘Sunrouge’ water extract on AChE activity in human neuroblastoma SK‐N‐SH cells was the strongest among the three tea cultivars (‘Sunrouge’, ‘Yabukita’ and ‘Benifuuki’). CONCLUSION: These results suggested that ‘Sunrouge’ might protect humans from humans from AChE‐related diseases by suppressing AChE activity. To obtain sufficient amounts of anthocyanins, catechins and/or caffeine for a functional food material, ‘Sunrouge’ from the third crop season should be used. Summary Volatiles from the edible part of kohlrabi (Brassica oleracea var.gongylodes) were isolated by means of a dynamic headspace sampling device and separated by capillary gas chromatography. For identification samples were subjected to element-specific detection (Flame photometric and nitrogen-phosphorus detectors) and mass spectral analyses. Major volatile products are: 3-methylthiopropyl, 4-methylthiobutyl and allyl isothiocyanate. The two corresponding organic cyanides 3-methylthiopropyl and 4-methylthiobutyl cyanides and dimethyl, trimethyl and tetramethyl disulphides are also present in higher amounts.n-Nonenal, (E)-2-hexenal, (E,E)-2,4-heptadienal and some isothiocyanates of unknown structure appear in the volatile fraction as minor constituents. The sulphur- and nitrogen-containing components could be related to the enzymic cleavage (myrosinase) of glucosinolates, naturally occurring precursors in brassica plants. Some of the volatile products possess antimicrobial and antithyroid effects and have been identified in different plants of the cruciferae family. The possible role of the isothiocyanates, cyanides, sulphides and aldehydes to the flavour of kohlrabi is discussed.
Flüchtige schwefel- und stickstoffhaltige Komponenten in Kohlrabi (Brassica oleracea var.gongylodes L.)
Zusammenfassung Die flüchtigen Inhaltsstoffe des Kohlrabi (Brassica oleracea var.gongylodes L.) wurden mittels der dynamischen Kopfraum-Technik isoliert und anschligßend gaschromatographisch aufgetrennt. Unter Anwendung elementspezifischer Detektoren (FPD, NPD) und Massenspektrometrie erfolgte deren Identifizierung. Zu den Hauptkomponenten gehören: 3-Methylthiopropyl-,4-Methylthiobutyl- und Allyrisothiocyanat. Die beiden korrespondierenden organischen Cyanide 3-Methylthiopropyl- und 4-Methylthiobutyl-cyanid sowie Dimethyldisulfid, Dimethyltrisulfid und Dimethyl-tetrasulfid erscheinen ebenfalls in gröBeren Mengen. In geringerer Konzentration treten nochn-Nonenal, (E)-2-Hexenal, (E,E)-2,4-Heptadienal und einige Isothiocyanate unbekannter Struktur in den Extrakten auf. Die schwefel- und stickstoffhaltigen Komponenten sind auf die enzymatische Spaltung (Myrosinase) der inBrassica-Arten vorhandenen Glucosinolate zurückzuführen. Einige der identifizierten Stoffe zeigen antimikrobielle und antithyroide Eigenschaften und wurden in verschiedenen Cruziferenarten nachgewiesen. Die mögliche Bedeutung der Isothiocyanate, Cyanide, Sulfide und Aldehyde für das Kohlrabiaroma wird diskutiert.

In the Iberian Peninsula, Brassica crops are grown throughout the year and may be consumed at immature stages or leaves may be harvested by ‘picking-over’ during plant growth. Consumption of Brassicas in Portugal is high but there is no information on the levels of glucosinolates in such material. Changes in the total and individual glucosinolate concentrations of four Brassica oleracea types (two cultivars of Portuguese cabbage, one Portuguese kale type and one hybrid white cabbage) and one Portuguese Brassica napus type were monitored throughout two growing seasons, spring/summer (SS) and summer/winter (SW). Glucosinolates were determined between sowing and maturity corresponding to nine sampling dates in the leaves and five harvests in the heads. The main glucosinolates in B oleracea types were 3-methylsulphinylpropyl-, allyl- and indol-3-ylmethyl- whereas in the B napus type pent-4-enyl-, 2-hydroxybut-3-enyl- and but-3-enylglucosinolate predominated. In the leaves of B oleracea types, the highest concentration of total glucosinolates and of most of the individual glucosinolates was observed at 14 days after sowing whilst, in the heads the highest levels were noted at the start of head formation. In the B napus , the highest total and individual glucosinolate concentration was generally observed at the end of the growing season. Both for the total and for the main individual glucosinolates there were significant differences ( P< 0·001) between the nine harvest dates and between growing seasons. Between the two seasons, the glucosinolate levels in SS were generally higher than in SW. A comparison of cultivars showed the hybrid cabbage to have generally higher glucosinolate levels than the Portuguese types, except for B napus .  相似文献

In this study, antioxidant activities of aqueous and ethanolic extracts of Brassica oleracea L. var. italica were investigated. The antioxidant properties of both extracts of Brassica oleracea L. var. italica were evaluated using different antioxidant tests, including 1, 1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging, superoxide radical scavenging, inhibition of microsomal lipid peroxidation, reduction of power, and metal ion chelating activities. Inhibition of superoxide scavenging by aqueous and ethanolic extracts showed an IC50 of 0.93 and 0.25 mg/ml, respectively. Metal ion chelation showed an IC50 of 0.35 mg/ml of both the extracts and was equipotent to positive control, ethylenediamine tetra-acetic acid. The ethanolic extract of Brassica oleracea L. var. italica exhibited higher antioxidant activity in DPPH radical and superoxide anion scavenging than that of aqueous extract. The results obtained in the in vitro models clearly suggest that, Brassica oleracea L. var. italica is a natural source for antioxidants, which could serve as a nutraceutical with potential applications in reducing the level of oxidative stress and related health benefits. However, comprehensive studies need to be conducted to ascertain the in vivo safety of such extracts in experimental animal models.  相似文献

The myrosinase activity and total glucosinolates of 10 different cruciferous vegetables and some properties of cabbage (Brassica oleracea L var capitata L) myrosinase were investigated. Radish, cabbage and broccoli showed higher myrosinase activity than other samples. No correlation (P > 0–05) was found between myrosinase activity and total glucosinolates of cruciferous vegetables tested. Myrosinase activity for white cabbage was higher than red cabbage. An optimal pH of myrosinase activity was observed at pH 8–0 for both white and red cabbages. The myrosinase extracted from cabbage was more stable in neutral or alkaline pH. The optimal temperature of myrosinase activity for both cabbages was about 60°C, but the myrosinase activity was destroyed after heating at 70°C for 30 min. The myrosinase activities of both white and red cabbages were activated by 10 mM and 5 mM ascorbic acid, respectively.  相似文献

Isoflavone glucosides and aglucons in various soybean varieties (Chiang Mai‐60, S.J.‐5, Chiang Mai‐2, Srisumrong‐1, and Nakhonsawan‐1) harvested from dry vs. rainy seasons were quantified. Isoflavone contents of all soy germs ranged from 16.5 to 30.6 μmol g?1. Regardless of varieties, isoflavone contents in germ of seeds from dry season were higher (P < 0.05) than those from rainy season. The Chiang Mai‐60 germ, having the highest isoflavone content (30.6 μmol g?1), was selected for germ flour production. Freeze‐dried germ flour contained higher isoflavone aglucons (17.72 μmol g?1 daidzein; 6.48 mg g?1 glycitein; 4.28 μmol g?1 genistein) than those (15.07; 5.59; 3.41) of drum‐dried germ flour. However, isoflavone glucoside contents in freeze‐dried germ flour (3.27 μmol g?1 daidzin; 1.86 μmol g?1 glycitin; 1.41 μmol g?1 genistin) were lower than those (5.22; 3.15; 1.89) of drum‐dried germ flour. Total isoflavone contents of drum‐dried and freeze‐dried germ flours were comparable (34.32 vs. 35.02 μmol g?1) but more than that (30.16 μmol g?1) of unprocessed germ flour.  相似文献

Thirty‐eight rice varieties, grown in Low Country Wet Zone, during Yala (2006) and Maha (2006/2007) seasons were screened for stable high iron rice varieties and were statistically analysed. Iron contents ranged 1.89–3.73 mg 100 g?1 and varied significantly (P < 0.05) with variety and season. Selected fifteen high iron rice varieties, at degree of polishing 8–10% were analysed for iron, zinc and phytate. High iron contents in endosperm were observed in Suduru Samba (0.47 mg 100 g?1), Basmati 370 (0.37 mg 100 g?1), Kalu Heenati (0.42 mg 100 g?1), Rathu Heenati (0.44 mg 100 g?1) and Sudu Heenati (0.37 mg 100 g?1). Phytate contents of polished rice varieties ranged from 200–300 mg 100 g?1. Large reduction in iron content (84.5–93.6%) was observed in polished rice while the reduction in phytate content (18.9–40.8%) was low. Percentage dialyzability of iron in selected endosperm high iron rice varieties ranged from 1.73 to 8.71. Dialysability of iron in cooked polished rice did not show a relation to the phytate content in raw rice.  相似文献

This study evaluated the effects of two commonly used microbial inoculants (Lactobacillus buchneri (LB) and Lactobacillus plantarum (LP)), formic acid (FA) and quebracho tannins (QT) on the fermentation quality, aerobic stability and in situ rumen degradation of pea/wheat bi‐crop forages. Precision‐chopped spring pea (Pisum sativum, var Magnus) and wheat (Triticum aestivum, var Axona) bi‐crops (3:1 pea/wheat ratio) harvested at a combined dry matter (DM) content of 301 g kg?1 were used for the study. The bi‐crops were conserved without (Control) or with inoculants based on lactic acid bacteria (LB (105 CFU g?1 fresh weight (FW)) or LP (106 CFU g?1 FW)), QT (16 g kg?1 FW) or FA (2.5 g kg?1 FW) in laboratory silos of 1.5 kg capacity, with each treatment being replicated six times. The pH, chemical composition, aerobic stability and in situ rumen degradation of DM, nitrogen (N) and neutral detergent fibre (NDF) after 112 days of ensilage were measured. The average pH at silo opening was 4.0, suggesting that the silages were well fermented. There were no significant effects of additive treatment on water‐soluble carbohydrate, total N, soluble N, ammonia N and NDF. Lactic acid and acetic acid were the main fermentation products. High concentrations of acetic acid were found in all the treatments, indicating a heterofermentative pathway. Although FA treatment gave the most aerobically stable silage, the Control and QT‐treated silages did not heat up by more than 1 °C until after 6 days of exposure to air. There were no effects of additives on DM degradation characteristics. However, the inoculants increased the rate of N and NDF degradation in the rumen, and both FA and QT reduced the effective and potential degradation of N. © 2001 Society of Chemical Industry  相似文献

Taro leaves are an important food in the Pacific Islands but the overall oxalate composition and its nutritional effect has not been investigated. The oxalate contents of taro leaves were determined using chemical and in vitro extraction methods. Maori‐type taro leaves contained 524.2 ± 21.3 mg total oxalates 100 g?1 fresh weight (FW) and 241.1 ± 20.9 mg soluble oxalates 100 g?1 FW while the Japanese‐type leaves contained 525.6 ± 19.9 mg total oxalates 100 g?1 FW and 330.4 ± 28.3 mg soluble oxalates 100 g?1 FW. Maori‐type taro leaves contained 416.4 ± 1.5 mg gastric soluble oxalates 100 g?1 FW and 212.4 ± 34.8 mg intestinal soluble oxalates 100 g?1 FW while the Japanese‐type leaves contained 433.3 ± 9.7 mg gastric soluble oxalates 100 g?1 FW and 224.2 ± 38.7 mg intestinal soluble oxalates 100 g?1 FW). Human feeding experiments were conducted to determine the availability of the oxalates in the baked leaves following additions of cows milk and coconut milk. The consumption of a test meal of baked taro leaves resulted in a significant increase (P < 0.001) in the output of urinary oxalate in the following 6 h when compared to the output of oxalate during a reference collection. When the leaves were baked with cows milk or cows milk and coconut milk combined and consumed there was a small non‐significant reduction in urinary oxalate output which suggests that less soluble oxalate was absorbed from these mixtures.  相似文献

Glucosinolates, phenolic compounds and vitamin C were evaluated in two commercial and 12 experimental cultivars of broccoli (Brassica oleracea L var italica) grown under uniform cultural conditions. The predominant glucosinolates in all broccoli cultivars were 4‐methylsulphinylbutyl glucosinolate (glucoraphanin) and 3‐indolylmethyl glucosinolate (glucobrassicin). Other glucosinolates such as 4‐OH‐glucobrassicin and N‐methoxyglucobrassicin were detected in lower amounts. The total glucosinolate concentration ranged from 3.0 µmol g?1 dw (dry weight) in Pentathlon (experimental cultivar) to 28.3 µmol g?1 dw in I‐9905 (experimental cultivar). Flavonoids, caffeic acid derivatives and sinapic acid derivatives were quantified in methanol extracts. The largest content of flavonoids was found in the commercial cultivars Marathon and Lord, around 60 mg kg?1 fw (fresh weight). The vitamin C content of broccoli ranged from 43.1 mg per 100 g fw in Lord (commercial cultivar) to 146.3 mg per 100 g fw in SG‐4515 (experimental cultivar). © 2002 Society of Chemical Industry  相似文献

Antibacterial and antioxidant potential of essential oil, extract and its fractions of Bidens frondosa Linn were evaluated. Sixty‐one components representing 95.41% of the total oil were identified. The essential oil (7.5 μL disc?1), methanol extract and its different organic subfractions (0.5 μg disc?1) of B. frondosa displayed a great potential of antibacterial activity against Staphylococcus aureus (ATCC 6538 and KCTC 1916), Listeria monocytogenes ATCC 19116, Bacillus subtilis ATCC 6633, Pseudomonas aeruginosa KCTC 2004, Salmonella enteritidis KCTC 12021 and Enterobacter aerogenes KCTC 2190. Antioxidant activity was evaluated by using 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) assay. The free radical scavenging activity of ethyl acetate (EtOAc) fraction was superior to all other fractions (IC50 = 11.96 μg mL?1), which was higher than synthetic antioxidant butylated hydroxyanisole, (IC50 = 18.27 μg mL?1). Furthermore, the amount of total phenolic compounds was determined and its content in EtOAc fraction was the highest as compared to methanol extract or other fractions. The results indicate that the oil and extracts of B. frondosa could serve as an important bio‐resource of antimicrobial agents and antioxidants for using in the food industries.  相似文献
