The objective of the present study was to determine the effects of Lactobacillus acidophilus on the sensory attributes, ripening time, and composition of Turkish white cheese and to investigate the survival of L. acidophilus during ripening of the cheese stored in vacuum or in brine. Two types of white cheeses, traditional cheese (control, made with Lactococcus lactis ssp. lactis and Lactococcus lactis ssp. cremoris) and probiotic cheese (made with Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris and L. acidophilus 593 N), were produced and ripened in vacuum pack or in brine at 4°C for 90 days. Cheese samples were assessed for microbiological and compositional properties, proteolysis, and sensory evaluation at different ripening stages. On ripening in vacuum pack, L. acidophilus survived to numbers >107 cfu g−1, which is necessary for positive effects on health. Protein, dry matter, salt content, and percentage of lactic acid in the vacuum-packed and brine-salted probiotic cheeses were significantly different. Also, the lactic acid content of probiotic cheeses was slightly higher than that of the controls for both vacuum- and brine-packed cheeses. Vacuum-packed probiotic cheese had the highest levels of proteolysis and the highest sensory scores of all cheeses. Consequently, L. acidophilus could be used for the manufacturing of probiotic white cheese to shorten ripening time and vacuum packaging is the preferred storage format.  相似文献

In this study, the shelf life of Lor cheese stored under different atmosphere compositions was assessed and compared. Lor cheeses were held in four different atmospheres containing: vacuum packaging (VP), 40% CO2/60% N2, 60% CO2/40% N2 and 70% CO2/30% N2 (modified atmosphere packaging). Control cheeses were stored in air. All cheese samples were kept in the refrigerator at 4°C for 45 days and investigated for physicochemical, microbiological and sensory properties. The acidity index value was significantly higher ( P  < 0.05) in the control and vacuum packaged samples than in those stored for the same period under CO2. Microbiological results showed that modified atmosphere packaging delayed microbial growth compared with air and VP samples. Of the three modified atmospheres, gas mixtures 60% and 70% CO2 were the most effective for inhibition of growth of micro-organisms. Sensory evaluation (odour and taste) results showed that Lor cheese packaged under modified atmosphere packaging (60% CO2/40% N2 and 70% CO2/30% N2 ) retained good characteristics for 45 days of storage, while vacuum and control samples were sensorily unacceptable after 10 days of storage.  相似文献

Tulum cheese, commonly produced in Turkey, is a traditional Turkish dairy product made from raw milk. In this research, 20 samples of tulum cheese were purchased from different markets in Isparta and Ankara (Turkey) and the populations of lactic acid bacteria (LAB) and contents of biogenic amines of Turkish tulum cheeses were investigated. The mean counts of LAB (as log10 cfu/g) were 7.22±0.67 on MRS agar, 6.93±1.77 on M17 agar, 7.28±0.72 on APT agar and 5.98±2.20 on ADA agar. Isolates of LAB obtained from 20 tulum cheeses were characterised as lactobacilli (48.5%), enterococci (32.7%), lactococci (15.8%) and streptococci (3.0%). Lactobacillus paracasei ssp. paracasei, Lactobacillus bifermentans and Enterococcus faecium predominated among the LAB in the samples of tulum cheeses; these organisms represented 30.2% of the isolates. As amino acids, tyrosine and tryptophan were determined in tulum cheeses. Tyramine and tryptamine, biogenic amines, were found at 0.00–329.00 and 0.32–40.44 mg/kg, respectively.  相似文献

The aim of this study was to determine and compare the microbiological, biochemical and sensory characteristics of herby cheese made with two different methods. In the first method (M1), milk and herbs were pasteurized at 65°C for 30 min, and Lactococcus lactis subsp. lactis and L. lactis subsp. cremoris were added as starter culture at an inoculum ratio of 1.5%. In the second method (M2), the conventional cheesemaking was applied. Microbiological and biochemical changes were monitored throughout the ripening period of 90 days. Samples were taken from cheeses on days 1, 15, 30, 60, and 90. At the end of ripening, sensory characteristics of cheeses manufactured with both methods were evaluated. The obtained results suggested that most changes in pH, titratable acidity, and dry matter contents of cheese varieties were not found to differ statistically significant, but the difference in salt content was significant (P < 0.01). Total aerobic count, lactic acid bacteria, Staphylococcus aureus, coliforms, moulds, yeasts, proteolytic and lipolytic microorganism counts were lower in M1 cheese samples than those of M2 cheese samples (P < 0.01). The numbers of psychrotrophic microorganism in both cheese types were not found to differ significantly. Moreover, the results suggested that there were significant differences (P < 0.01) in the degrees of proteolysis and lipolysis of the cheese varieties. High proteolysis and lipolysis rates were monitored in the traditional cheese samples. However, there were no significant differences between the sensory characteristics of cheese samples.  相似文献

Terrincho is a Portuguese traditional cheese, bearing a protected denomination of origin (PDO) status, which is manufactured from raw ewes’ milk and ripened for a minimum period of 30 d. The objectives of this research effort were to characterize the microbiological and biochemical profiles of this cheese, manufactured in several dairy farms during the winter cheesemaking season (December through March), and establish tentative correlations between these profiles and formation of biogenic amines. For this goal, 29 cheeses from five batches, manufactured in as many dairy farms located throughout the PDO region, were analysed. The viable numbers of the total (mesophilic) microflora, enterococci, lactococci, lactobacilli, enterobacteria, staphylococci, pseudomonads, yeasts and moulds were determined by 30 d, following classical plate counting on specific media. Free amino acid and biogenic amine contents were determined by reverse-phase high-pressure liquid chromatography. The concentration of biogenic amines correlated well with microbial viable numbers, in both qualitative and quantitative terms; significant correlations were observed between enterococci and phenylethylamine (r=0.868, p<0.0001), and between lactococci and cadaverine (r=0.646, p=0.002) and tyramine (r=0.868, p<0.0001). On the other hand, 220 g of Terrincho cheese would have to be consumed at a given time if the threshold of worst case risk was to be attained, which appears unrealistic for a typically single-doses meal ingredient. This study has contributed to deepen the knowledge on the microbiological and biochemical features of a unique Portuguese cheese throughout ripening, and to rationalize its safe consumption in terms of biogenic amines.  相似文献

The objective of this research was to determine the effect of drainage pH on physicochemical, biochemical, microbiological and sensory properties of Mozzarella cheese made from buffalo milk during refrigerated storage. Four vats of cheese were made at 4 different whey drainage pH (6.2, 5.9, 5.6, and 5.2). Lower drainage pH caused higher pH 4.4-soluble N and pH 4.4-soluble N:total N. Interaction of drainage pH at d 1 and 30 of storage on all soluble nitrogen fractions was significant. Degradation of caseins in samples made at a drainage pH of 6.2 was lower than that of other cheese samples. The decreasing whey drainage pH significantly increased counts of thermophilic and mesophilic lactobacilli of the samples during refrigerated storage. No coliforms or Escherichia coli were detected in the cheeses. The average sensory property scores of all cheese samples were very close, and, as expected, storage time had a negative effect on all sensory scores.  相似文献

The objective of this research was to determine the effects of different ripening methods [brine salting, dry salting, incorporating with Lor cheese (LR) and vacuum packaging] of Civil cheeses on its microbiological, chemical and sensory properties. Civil cheeses were analysed on the 2nd, 30th, 60th and 90th day of ripening. Chemical compositions of the cheeses were significantly different. While the highest dry matter and titratable acidity values were determined on dry salted cheeses, the highest fat and fat in dry matter contents were found in Civil cheese ripened together with LR. The water-soluble nitrogen and ripening index values were lower in cheese ripened incorporating with LR. Excessive proteolysis was not seen in any of cheese samples. The ripening in different methods affected microbiological and sensory properties of Civil cheese. Panellists preferred vacuum packaging and dry-salting cheeses compared to the other samples on the 90th day of ripening.  相似文献

ABSTRACT:  " Requeijão cremoso " is a traditional Brazilian processed cheese spread, showing ample acceptance on the national market. Emulsifying salts (ES) are an important factor influencing the characteristics of processed cheeses, but the literature presents conflicting results about their action on cheese functionality.  Requeijão cremoso  obtained from anhydrous ingredients allows the study of the influence of each type of ES on the cheese properties, since it can be treated as a model system where the variables are limited and well known. The objective of this study was to evaluate the effect of different types of ES (TSC—sodium citrate, SHMP—sodium hexametaphosphate, STPP—sodium tripolyphosphate, and TSPP—tetrasodium pyrophosphate) on the sensory and functional characteristics of  requeijão cremoso -processed cheeses obtained from anhydrous ingredients. The physicochemical composition, degree of casein dissociation, fat particle size, melting index, color, texture profile, and sensory acceptance of the cheeses were determined. The functional behavior of processed cheeses was strongly influenced by the type of ES and its physicochemical properties including its ability to bind Ca, the casein dispersion during cooking, and the possible creation of cross-links with casein during cooling. The cheese made with SHMP was the one most differentiated from the others, presenting lower melting index, whiter color, and higher values for hardness, gumminess, and adhesiveness. The differences in texture had an impact on sensory acceptance: with the exception of the sample manufactured with sodium hexametaphosphate, all the samples presented good sensory acceptance.  相似文献

Roncal cheese (regulated by an Apellation of Origin) is a traditional hard cheese manufactured from raw ewe's milk in the region of Navarre in Spain. Roncal cheeses, manufactured using two lamb rennets with different milk-clotting activity levels, were evaluated to compare their chemical, proteolytic, and sensory characteristics. A preliminary study of samples of lamb rennets indicated that a large proportion of such rennets did not fulfil current microbiological requirements and likewise revealed considerable variation in the milk-clotting activity of the samples examined. Trends in the overall physicochemical parameter values (pH, dry matter, fat, and protein) were similar in both cheese batches. Proteolysis of the nitrogen fractions was observed to take place at a faster rate in the cheeses made using the rennet with the higher milk-clotting activity (soluble nitrogen, non-protein nitrogen, and amino acid nitrogen values around 13–20% higher than in the cheeses made using the rennet with the lower milk-clotting activity after 180 days of ripening). Urea-PAGE electrophoretic analysis of the caseins from the cheeses manufactured using both types of rennet showed that the β-caseins were less susceptible to proteolysis than the αs-caseins. The effect of the different milk-clotting activity levels was most pronounced on the αs-caseins, in which the rennet with the higher milk-clotting activity gave higher breakdown. Nevertheless, the differences in the proteolysis rates did not yield any appreciable sensory differences.  相似文献

 Picante da Beira Baixa (or Picante) cheese is a hard, piquant, salted traditional cheese manufactured in Portugal from raw sheep's and goat's milks. The purpose of this work was to quantitatively assess the influence of various ripening procedures on the final characteristics of Picante cheese. Two alternative ripening protocols were considered, the traditional one and another with controlled environmental conditions via use of maturation chambers set at different preselected temperatures. The experimental cheeses were characterised in terms of microbiological, physicochemical, biochemical, sensorial and textural properties. Ripening time and temperature were statistically significant parameters for all microflora. The two ripening methods led to statistically significant differences in all physicochemical and biochemical parameters, especially the moisture content and the soluble nitrogen fractions (i.e. water loss was slower and proteolysis was faster in cheeses ripened via the traditional method). Differences in microbiological, physicochemical and biochemical properties were probables implicated in differences in textural and sensorial properties, especially cheese hardness and flavour. It was concluded that the standard ripening method was closest to the traditional one in terms of final cheese characteristics when the ripening temperature was above 11.5  °C. Short-term effects of transhumance to high altitude were investigated in Valdostana bovine milk and Fontina cheeses. The study included samples taken at each milking on days 1, 2 and 5 after transhumance compared with 5 days before; individual cow milk was collected and bulk milk was manufactured to cheese. Somatic cell count and milk fat content increased the day immediately after transhumance. In bulk milk, transhumance effects were less pronounced. Except for sour taste, no clear trend for impaired composition or sensory properties was observed in the cheeses produced on the day after transhumance and ripened for 115 days. Milking time and, with that, manufacturing time influenced milk and cheese quality, leading to higher fat and more melting cheeses in the evening. These results allow better characterisation of the changes during this transition and will help farmers to tackle the difficulties in producing cheese during this period.  相似文献

White cheese samples were manufactured from bovine milk using three different commercial direct vat starter cultures (DVS-1, -2 and -3) and a lyophilized culture, and ripened at 4 ± 1°C for 90 days. The composition, titratable acidity and ripening indices of the cheese samples were determined on the 2nd, 30th, 60th and 90th days of ripening. The ratios of total solids, protein and fat were higher for cheeses manufactured using DVS-2 and lyophilized cultures but the titratable acidity in cheese produced using DVS-3 and lyophilized cultures was higher (P < 0.01). The mean value of the ripening indices of the cheese produced using the lyophilized culture was lower than the cheeses produced with added DVS cultures (P < 0.05). The total solids, ash, salt ratios, titratable acidity and ripening indices values increased for all types of white cheeses during ripening (P < 0.05).  相似文献

Changes which take place in the sensory characteristics of cheeses during ripening are influenced by different factors, involving rennet, starter culture and adventitious contamination of the cheese by non-starter lactic acid bacteria. The objective of this work was to study the influence of the starter on sensory and microbiological ewe's cheese properties during ripening time. Four batches (two with starter added and two without) were manufactured. Milk and cheeses at different stages of ripening were analysed. Cheeses manufactured without adding starter showed a significantly higher level of mesophilic aerobic microflora, lactobacilli, facultatively heterofermentative lactobacilli and enterococci (indigenous microflora) than cheeses manufactured with starter. This study has also shown that adding or not adding starter affects the flavour profile of the cheese. Cheeses with starter added showed greater intensity of the following attributes: refreshing, astringent, sweet; and received lower scores on bitterness. With respect to texture, the said cheeses develop a more homogenous texture and greater elasticity throughout ripening.  相似文献

This study evaluated the shelf life extension of a cheese cake subjected to modified atmosphere (MAP) and active packaging (AP). Cheese cakes were packaged under different N2/CO2 ratios (70/30 and 20/80) (MAP batches), by placing a sachet of an iron oxide-based oxygen absorber inside trays (AP batch) and with air (air batch). Changes in microbial growth, in-package gas composition, chemical–physical parameters including texture and sensory attributes were monitored for 48 days at 20 °C. AP allowed a mould-free cheese cake shelf life of 48 days, MAP extended the shelf life of samples packaged under 30% and 80% CO2 up to 14 and 34 days, respectively, whereas tarts stored with air spoiled after 7 days. MAP resulted in a significant increase in hardness after 14 days of storage, whereas AP tarts recovered the initial texture after 48 days. Panellists judged AP tarts over the acceptability threshold during the whole shelf life of cheese tarts.  相似文献

In this study, we compared the effect of basil essential oil (EO) and various packaging conditions on “Anthotyros,” a Greek whey cheese. This cheese was stored at 4 °C under aerobic (A), vacuum (V), and modified atmosphere (M, 40%/60%; CO2/N2,) conditions, without or with (AB, VB, and VM) basil EO added to the cheese samples to a final concentration of 0.4% (v/w). The quality characteristics and the shelf life of both untreated and basil EO-treated cheese were assessed using microbiological, physicochemical, and sensory parameters. Microbiological results revealed that either modified atmosphere/vacuum packaging (MAP/VP) singly or in combination with basil EO delayed microbial growth as compared to the control (A) samples. The sensory and microbiological data showed that the combined use of MAP and VP with added basil EO extended the shelf life of fresh Anthotyros (4 °C) by approximately 10–12 days (treatment MB) and 6 days (treatment VB) as compared to aerobic packaging (A). Under these treatments, whey cheese samples maintained good sensory characteristics. This study has shown that the combined use of either VP or MAP, and basil EO, can extend the shelf life of whey cheese and maintain the freshness and the sensorial characteristics of the product.  相似文献

The use of antimicrobial active compounds (chitosan, lemon and sage extract) in Fior di latte cheesemaking was assessed. The three agents were added at different concentrations during processing cow’s milk. Control cheese was also made without active compounds. All cheese samples were kept at 4°C for 7 days and investigated for sensory and microbiological properties. Results clearly showed that the addition of lemon extract and chitosan increased cheese shelf life. In particular, the highest increase (129%) was recorded by adding 1000 mg/kg of lemon. In contrast, the addition of sage extract negatively affected the sensory properties, thus making the cheese unacceptable.  相似文献

The aim of the present work was to study the influence of temperature on sensory and microbiological qualities, and on shelf life of butterhead lettuce leaves in passive modified atmosphere packages. Butterhead lettuce was washed and placed under ambient air in 30  ×  40 cm polypropylene bags, and stored at 5, 10 and 15C. A first-order equation was obtained for the development of the evaluated appearance sensory attributes as a function of storage time. For all the evaluated storage temperatures, microbiological shelf lives (14, 17 and 42 days at 5, 10 and 15C) were higher than estimated sensory shelf lives (8, 14 and 26 days at 5, 10 and 15C), showing that shelf life of lettuce in passive modified atmosphere packages was limited by sensory properties and not by microbial growth.

PRACTICAL APPLICATIONS


Sensory shelf life of lettuce in passive modified atmosphere packages was estimated using consumer data, which are an improvement of a more arbitrary criteria presented in most studies. Moreover, if failure criteria used in other studies were applied, consumer rejection at the end of shelf life would be higher, suggesting that more conservative criteria are necessary to assure the product's quality at the end of its shelf life.  相似文献

The effects of gutting and filleting on microbiological, chemical, and sensory properties of tilapia ( Oreochromis niloticus ) stored under refrigeration were studied. All the tilapia samples were analysed periodically for microbiological (APC), chemical (pH, total volatile basic nitrogen, 2-thiobarbituricacid, K -value), and sensory characteristics. Results indicated that sensory data were in good agreement with microbiological data (APC rejection limit of 107 CFU g−1) and K -value (rejection limit of 60%). Storage life of (I) whole ungutted, (II) whole gutted and (III) filleted tilapia stored under refrigeration (5 ± 1 °C) can be expected to be 12, 10, and 6 days, respectively.  相似文献
