The knowledge of starch pastes behavior during frozen storage becomes necessary to understand more complex systems (e.g. sauces, dressings and desserts) The effect of sub-zero storage on the quality attributes of corn starch pastes (10% w/w) with and without xanthan gum (0.3% w/w) was analyzed. Pastes were frozen at different rates (0.3 to 270cm/h) and stored at −5, −10 and −20°C. Exudate production (syneresis) and rheological behavior were studied by means of capillary suction and rotational viscometry respectively. Ice recrystallization was analyzed by indirect microscopic observations using isothermal freeze fixation and amylopectin retrogradation by differential scanning calorimetry (DSC). Samples stored at −5°C (glass transition temperature) or higher temperatures were under the rubbery state evidenced by starch recrystallization. This state favored molecular mobility leading to deteriorative changes (like spongy structure formation related to amylose retrogradation). At lower storage temperatures (−10 and −20°C) under the glassy state, starch retrogradation was not detected and deteriorative changes can be related to ice recrystallization. The addition of xanthan gum minimized amylose retrogradation, syneresis and rheological changes, however, its presence did not prevent ice recrystallization nor amylopectin retrogradation.  相似文献

Model food systems based on starch (100 g kg−1), sucrose (150 g kg−1) and water (750 g kg−1) with and without the addition of a low proportion of hydrocolloid (xanthan gum, guar gum or sodium alginate) were gelatinised, frozen at different rates and stored to analyse textural changes by oscillatory rheometry. Differential scanning calorimetry (DSC) was used to analyse gelatinisation, amylopectin retrogradation and glass transition temperatures. Sucrose had a significant effect on the increase in the gelatinisation temperature as well as on the decrease observed in glass transition values. The onset temperature of the second step of the glass transition, corresponding to the heat capacity change close to ice melting (denoted Tgim in the present work), ranged between −23.0 and −22.2 °C. Rheological viscoelastic tests showed an increase in the dynamic moduli G* and G ′ after slow freezing and during storage at −19 °C (T > Tgim) in starch–sucrose systems that is related to sponge formation due to amylose retrogradation. DSC studies confirmed that also amylopectin retrogradation occurs during storage; however, samples containing gums did not develop the spongy appearance. Storage at the usual commercial temperatures (close to −18 °C, slightly above Tgim) affects the quality of aqueous starch–sucrose pastes without gums owing to amylose and amylopectin retrogradation. However, when hydrocolloids are included in the formulations, the usual storage conditions allow the maintenance of acceptable textural attributes. © 2000 Society of Chemical Industry  相似文献

为提升和改善冷冻面团南方馒头的品质,分析冻藏过程中复配品质改良剂(海藻糖添加量4%、磷酸二氢钠添加量0.15%、黄原胶添加量0.05%、羧甲基纤维素钠添加量0.04%)对冷冻面团南方馒头比容、硬度、感官品质的影响,并从面团拉伸特性、动态流变特性、微观结构、蛋白质二级结构等方面探究复配品质改良剂在南方馒头冷冻面团中的作用机理。结果表明:冻藏过程中,冰晶会对淀粉颗粒、面筋蛋白及网络结构造成伤害,导致面团品质下降。复配品质改良剂可以保护面团中的面筋结构,减少面筋蛋白二级结构的变化,进而延缓弹性模量和黏性模量的降低速度,改善面团最大拉伸阻力和延伸度劣变,提升南方馒头硬度、比容和感官品质等品质,保持南方馒头松软的风味。  相似文献

Consumer habits have undergone great changes, motivated by the new social lifestyle. These changes have promoted the increase in the production of frozen foods; and as a result, many food applications of some hydrocolloids are limited due to functional loss during freezing. In this study, the effect of freezing treatments (?18 °C for 24 h and ?30 °C for 15 h) on rheological, emulsifying, foaming, and textural characteristics of cress seed gum as a new source of hydrocolloid in comparison with xanthan gum as a commercial gum were investigated. The results demonstrated that cress seed gum had significantly lower viscosity than xanthan gum solution, and the freezing treatments did not have significant impact on rheological properties of both products. Conversion of water to ice leads to an increment in molecular association and improved textural characteristics. The high tendency of cress seed gum chains to associate is attributed to its high mannose to galactose ratio. High stability of cress seed gum and similarity with xanthan gum make it attractive for use in frozen foods as a novel gum to provide specific functionality, minimize the negative effect of freezing, and reduce production costs.  相似文献

Yam tubers (Dioscorea alata) are a non-traditional starch source that could be used as food ingredient. The stability of yam starch pastes (6/100 g suspension) submitted to different pH conditions during gelatinization and the effect of hydrocolloids addition (guar and xanthan gums) on starch syneresis under refrigeration were analyzed. Changes in pH (3, 5, 6) or the addition of gums (0.1–0.5/100 g suspension) did not affect the starch gelatinization temperature nor the gelatinization enthalpy as determined by differential scanning calorimetry. Rheological behavior was characterized by amylograph profiles and oscillatory rheometry. Amylograms showed that yam starch pastes maintained a high viscosity under heat treatment and mechanical stirring in neutral to slightly acidic conditions. Brabender viscosity increased when gums were added; the effect of guar gum on viscosity was more marked than that of xanthan gum. During refrigerated storage exudate production was observed of pastes without gums. Xanthan gum, at a concentration of 0.5/100 g suspension, showed higher effectiveness than guar gum to reduce exudate production during refrigerated storage. The addition of hydrocolloids could allow yam starch to be used in foods requiring low temperatures.  相似文献

It is well accepted that high undercooling or supercooling usually produces numerous small ice crystals. This paper shows that if heat transfer is not rapid enough, high undercooling causes non-homogenous sized ice crystals. Three freezing regimes (i.e. fast, slow and slow with undercooling) were used in this study. Fast freezing produced numerous homogeneously small ice crystals embedded in a thin rice starch gel matrix. This microstructure caused low % syneresis and hardness versus slow freezing’s rather homogenous distribution of fewer large ice crystals embedded in a thicker gel matrix resulting in high % syneresis and hardness. However, slow freezing with undercooling produced non-homogenous clusters involving small and large ice crystals embedded in a very thick gel matrix. Starch retrogradation before ice formation played an important role in this frozen structure. The information gained from this study enhances understanding of the behavior of starch-based food during freezing and storage.  相似文献

The effects of freezing rates and storage temperatures on starch retrogradation and textural properties of cooked rice were evaluated. Cooked rice was frozen with different freezing rates and then stored at 4 °C for 14 days or −18 °C for up to 7 months. Starch retrogradation enthalpy (ΔHr) of cooked rice was determined by a differential scanning calorimetry, and textural properties were determined by a texture analyser. The results showed that the ΔHr and hardness values had a negative correlation with freezing rate, however, a positive correlation was found between adhesiveness and freezing rate. On the other hand, the advantages (lower hardness and higher adhesiveness, less starch retrogradaton) of cooked rice gained by rapid freezing, were lost quickly in the first 3 days of storage at 4 °C. However, rapid freezing combined with −18 °C frozen storage can effectively retard starch retrogradation and maintain the textural properties of cooked rice for at least 7 months. Therefore, high quality cooked rice can be produced by combined rapid freezing with frozen storage.  相似文献

研究了黄原胶和瓜尔豆胶的复配胶作为冰淇淋稳定剂对冰淇淋品质和流变性的影响,测定了冰淇淋浆料的粘度,应用小幅振荡测定经硬化后冰淇淋成品的动态粘弹性,以及硬化冰淇淋的硬度和粘结度.结果表明,随复配胶用量的增加,冰淇淋浆料的粘度也随之增加,另外,Power law模型的流动指数和粘度指数、冰淇淋成品储能模量、及硬度、粘结度均呈增加趋势.实验结果还表明,随复配胶用量的增加,冰淇淋的弹性模量和稳定性得以提高.通过测定冰淇淋的膨胀率和抗融性,得出冰淇淋中复配胶的最佳添加量质量分数为0.35%.  相似文献

研究添加黄原胶对冷冻熟面质构特性和蒸煮品质的影响,并采用差示扫描量热仪(DSC)和低场核磁共振(NMR)探究了添加黄原胶对冷冻熟面冻藏过程中可冻结水含量和水分分布的影响;利用激光共聚焦显微镜(CLSM)观察了冻藏过程中蛋白质网络结构的变化。结果表明:添加黄原胶可以提高冷冻熟面的硬度、咀嚼性和拉伸性能,降低复煮损失率和吸水率,减缓在冻藏过程中质构品质和蒸煮品质的降低趋势。黄原胶的加入可以使冻藏过程中冷冻熟面的蛋白质网络结构更加连续致密,抑制深层结合水向弱结合水方向的转移,减少可冻结水的含量,从而减少冰晶的形成,减轻因冰晶带来的机械损伤,从而改善冷冻熟面的冻藏品质。  相似文献

The retrogradation behavior of waxy maize starch pastes with added xanthan gum was investigated. The pastes were prepared with or without added xanthan gum at two starch concentrations (5:100 and 7:100), at two temperatures within the gelatinization range (70 °C or 72 °C) and at acid or neutral pH. The evolution of the macrostructure (texture, flow behavior and syneresis), microstructure (oscillation rheology) and molecular aggregation (pulsed-field NMR) of the pastes was followed up in an 8 week period during cold storage (7 °C). Heating temperature was found to have a profound effect on the long-term stability of the pastes. Pastes prepared at 70 °C behaved as flocculated dispersions of largely intact, swollen granules which resulted in stable structural properties during the preservation period. At 72 °C, a higher degree of gelatinization and degradation was observed, resulting in structurally unstable systems due to association and crystallization of amylopectin. Especially for these systems, xanthan gum was found to enhance the gelation process, probably due to phase separation. Although xanthan gum may restrict the granule disruption during preparation, this beneficial effect on the freshly prepared pastes did not result in an improved stability during storage.  相似文献

The effect of xanthan gum at different concentrations (0.2–0.6% w/w) on the rheological properties of sweet potato starch (SPS) pastes was evaluated under steady and dynamic shear conditions. The presence of xanthan resulted in an increase in the consistency index and vane yield stress of SPS. The effect of temperature on the apparent viscosity of SPS–xanthan mixtures is well described by the Arrhenius equation. Dynamic moduli (G′, G″, and η*) values of the mixtures increased with an increase in xanthan concentration while the tan δ values decreased. The addition of xanthan appeared to contribute to the elastic properties of the weak network of the SPS pastes. The structure development rate constant (k) of gelation during ageing was strongly influenced by the presence of xanthan. This suggests that the phase separation process caused by the incompatibility phenomena between the amylose component in starch and xanthan can increase the elastic characteristics of the SPS–xanthan mixtures.  相似文献

Cryoprotectant mixtures were added to frozen/thawed (F/T) mashed potatoes in the form of amidated low-methoxyl (ALM) pectin and xanthan gum (XG), kappa-carrageenan (κ-C) and XG and sodium caseinate (SC) and XG, and the effect of frozen storage was examined. F/T mashed potatoes without added biopolymers had higher storage modulus G ' after freezing and frozen storage, associated with sponge formation due to amylose retrogradation. Oscillatory measurements indicated weakening of the structure of mashed potatoes without biopolymers and with added κ-C/XG and SC/XG mixtures at the end of storage due to ice recrystallisation, whereas the structure of samples with added ALM/XG mixtures was reinforced by increasing time in storage. Mashed potatoes with added mixtures exhibited water-holding capacity for 1 year. Samples with added κ-C/XG mixtures were more structured, although when both κ-C/XG and SC/XG mixtures were included in mashed potato, very acceptable sensory quality was maintained in usual frozen storage conditions.  相似文献

This work investigated the effect of modified tapioca starch and xanthan gum on dough viscoelasticity and texture stability during storage at 4 °C of starch sheets for Chinese shrimp dumplings. Hydroxypropylated starch and hydroxypropylated-crosslinked starch were used to substitute for tapioca starch in the control formulation, and xanthan gum was added to adjust the formulation. During storage, texture of the control became firmer due to amylopectin retrogradation confirmed by differential scanning calorimetry and X-ray diffraction. Conversely, gel sheets containing modified starches showed less texture change. Dough viscoelasticity of the formulations substituted by hydroxypropylated starch were much softer and easier to deform than that of the control one. Dough with hydroxypropylated-crosslinked starch was, however, stiffer and more strain-resistant. Moreover, the formulation comprising the mixture of both types of modified starches and xanthan gum gave dough viscoelasticity similar to that of the control, and provided gel sheet the least texture change. Consequently, this modified formulation could be beneficial for the application of frozen/chilled dumpling wrappers.  相似文献

The aim of the study was to define the influence of selected nonstarch polysaccharides (guar gum, xanthan gum and arabic gum) on several rheological properties of triticale starch pastes/gels, at constant polysaccharide concentration (6.5 g/100 g). These included pasting characteristics, flow curves at 50 °C and mechanical spectra at 25 °C. It was found that the presence of a gum in a system modified the rheological properties of triticale starch gels/pastes, depending on the type and concentration of the gums. In the case of guar and xanthan gums, higher pasting viscosity was observed and the shear stress was increased compared with native starch. The presence of guar gum reduced the degree of thixotropy hysteresis, negative values for this being found for systems with xanthan in spite of their shear‐thinning behaviour. Systems containing arabic gum displayed lower values of pasting and flow viscosity. The type and concentration of gums added to the polysaccharide influenced the viscoelastic properties of the gels.  相似文献

The work is focused on the interpretation of flow curves obtained at two different temperatures for water solutions of xanthan and guar gum, and pastes of oxidized corn starch and starch phosphate. Based on exponential state equations for shear thinning and shear thickening systems characteristic times distributions were estimated using Tikhonov regularization method. Values of time constants and their intensities were strongly associated with the composition of the examined mixtures. Food thickeners such as GG or XG form solutions of very high viscosity. Characteristic times determined from De Kee equation take large values (0.1–1 s). This could be connected with a predominance of viscous behavior during shear. Starch pastes with GG or XG show very complex rheological behavior resulting from synergistic effects. This is reflected in the form of distributions of time constants, which have two peaks. One of them is specific to the non-starch hydrocolloid and corresponds to the characteristic time of approximately 1 s. Global maximum is located at the time of 0.001 s and is associated with the presence of starch and its gel structure. The differences in rheological characteristic times for various structure forming agents reflect their technological functions.  相似文献

研究瓜尔胶和黄原胶对马铃薯淀粉、马铃薯磷酸酯淀粉和马铃薯阳离子淀粉糊化和流变性质的影响。糊化性质实验表明瓜尔胶增加了3种淀粉的峰值黏度和成糊温度,降低了淀粉糊的热稳定性。黄原胶降低了马铃薯淀粉和马铃薯磷酸酯淀粉的峰值黏度并提高了糊的热稳定性和成糊温度,但对马铃薯阳离子淀粉起相反作用。动态流变实验表明加入黄原胶显著提高了3种淀粉的GO`、GO`O`值,降低了损耗角正切值tanδ,黄原胶对马铃薯阳离子淀粉动态流变学性质的影响最大,瓜尔胶对3种淀粉的动态流变学性质的影响不显著。静态流变实验表明加入瓜尔胶和黄原胶后的淀粉糊仍为假塑性流体,滞后环面积减少,稳定性提高,两种胶对马铃薯淀粉和马铃薯磷酸酯淀粉的作用比对马铃薯阳离子淀粉作用明显,并且黄原胶比瓜尔胶对淀粉作用更为显著。研究发现胶体与淀粉之间的电荷相互作用对复配体系的糊化性质和流变学性质起重要的作用。  相似文献

为了改善马铃薯淀粉加工特性,选用瓜尔胶、羧甲基纤维素钠和黄原胶3种食品胶分别与马铃薯淀粉复配后进行干热处理,研究食品胶协同干热处理对马铃薯淀粉糊化、老化和流变特性的影响。研究发现,中3种食品胶协同干热处理均能够降低糊化温度与糊化焓,并且均能增强淀粉体系稳定性,使其呈现出弹性流体性质,不仅如此还均能提高淀粉糊热稳定性以及耐剪切能力,此外均能增强淀粉凝胶的冻融稳定性。结果表明,3种食品胶协同干热处理均能起到改善马铃薯淀粉加工特性的作用,对其改善程度对比分析发现,黄原胶协同干热处理改善马铃薯淀粉特性效果最好。  相似文献

In the present paper, the functionality of hydrocolloids related to the rheological, physical and sensory characteristics of ice cream mixes and frozen ice cream was studied. Carboxylmethylcellulose, guar gum, sodium alginate and xanthan gum were used as primary stabilizing agents, whereas κ-carrageenan as secondary. The hydrocolloid concentrations were 0.1 and 0.2% and the primary to secondary ratio was 9:1. The ice cream samples were stored under quiescent frozen conditions. Samples were taken after 4, 8 and 16 weeks of storage and examined for the functionality of the stabilizing systems.The addition of hydrocolloids significantly reinforced the shear thinning behavior, particularly in the case of sodium alginate, xanthan gum, and κ-carrageenan which was attributed to gelation phenomena. Sodium alginate attained the better stabilizing effect improving textural quality and acceptance of ice creams even after 16 weeks of storage, whereas the presence of κ-carrageenan found to be a crucial factor for the cryoprotection. Xanthan gum was also evaluated as an effective stabilizing agent, indicating that gelling hydrocolloids may remarkably amend ice cream shelf life.Moreover, principal components and cluster analysis of instrumental and sensory data furnished important information for the correlation of objective and sensory properties and discrimination of stabilizing systems based on quality criteria.  相似文献

Mixtures of starch, xanthan gum and either polyvinyl alcohol, epichlorohydrin, valeric acid or adipoyl chloride were extruded. Properties of extrudates including apparent viscosity, water solubility, water absorption indices and exrudate expansion were measured for different proportions of xanthan gum, 70% amylose starch (with or without irradiation) and chemical agents. Extrusion with chemical agents and irradiation changed physical properties of both starch and xanthan gum. Expansions of extrudates were higher than that of starch. Viscosity of extrudates increased with xanthan gum concentration. The addition of 1% (w/w) polyvinyl alcohol had the greatest effect of the chemical agents. Irradiation increased the apparent viscosity of starchxanthan gum mixtures.  相似文献
