The study was designed to determine the influence of the addition of edible seaweeds, Sea Spaghetti (Himanthalia elongata), Wakame (Undaria pinnatifida), and Nori (Porphyra umbilicalis), on fatty acid composition, amino acid profile, protein score, mineral content and antioxidant capacity in low-salt meat emulsion model systems. The addition of seaweeds caused an increase (P < 0.05) in n-3 polyunsaturated fatty acids (PUFA) and a decrease (P < 0.05) in the n-6/n-3 PUFA ratio. The thrombogenic index significantly decreased (P < 0.05) in Nori and Wakame meat samples. Meat systems made with added seaweeds had lower (P < 0.05) sodium contents than control samples. In general, addition of seaweeds to products increased (P < 0.05) the concentrations of K, Ca, Mg and Mn. The presence of Nori caused an increase (P < 0.05) in levels of serine, glycine, alanine, valine, tyrosine, phenylalanine and arginine, whereas Wakame and Sea Spaghetti produced no significant changes in amino acid profiles in the model systems. The inclusion of Sea Spaghetti increased the sulphur amino acid score by 20%. The added seaweeds supplied the meat samples with soluble polyphenolic compounds, which increased the antioxidant capacity of the systems. The polyphenol supply and antioxidant increase were greatest (P < 0.05) in the samples containing Sea Spaghetti.  相似文献

This article reports a study of the physicochemical, sensory and microbiological characteristics of low-fat (10%) and n−3 PUFA-enriched frankfurters as affected by addition of seaweed (5% Himanthalia elongata), partial substitution (50%) of animal fat by olive oil and chilled storage (41 days at 2 °C). The presence of seaweed improved water and fat binding properties, reduced (P < 0.05) lightness and redness and increased (P < 0.05) the hardness and chewiness of low-fat frankfurters enriched with n−3 PUFA. The effect of olive oil on those characteristics was less pronounced than that of seaweed. Replacing pork backfat with olive oil in frankfurters produced acceptable sensory characteristics, similar to control, while addition of seaweed resulted in less acceptable products, due mainly to the special flavour of the seaweed. Formulation and storage time affected the total viable count and lactic acid bacteria count. Frankfurters containing olive oil and seaweed had the highest total viable count from day 14 of storage, with lactic acid bacteria becoming the predominant microflora.  相似文献

The effects of substituting olive, grape seed, corn, canola, or soybean oil and rice bran fiber on the chemical composition, cooking characteristics, fatty acid composition, and sensory properties of low-fat frankfurters were investigated. Ten percent of the total fat content of frankfurters with a total fat content of 30% (control) was partially replaced by one of the vegetable oils to reduce the pork fat content by 10%. The moisture and ash content of low-fat frankfurters with vegetable oil and rice bran fiber were all higher than the control (P < 0.05). Low-fat frankfurters had reduced-fat content, energy values, cholesterol and trans-fat levels, and increased pH, cooking yield and TBA values compared to the controls (P < 0.05). Low-fat frankfurters with reduced-fat content plus rice bran fiber had sensory properties similar to control frankfurters containing pork fat.  相似文献

This study evaluates the physicochemical and sensory properties of healthier frankfurters with 25% added walnut (WF) versus low-fat frankfurters (6% pork fat) (LF) and traditional frankfurters (18% pork fat) (NF). Results reveal that cooking losses were unaffected (p ? 0.05) by the formulation of frankfurters. The addition of walnut led to higher (p < 0.05) redness and yellowness values, while colour parameters did not differ significantly between LF and NF sausages. Frankfurters with added walnut (WF) presented higher (p < 0.05) hardness and chewiness values than LF and NF frankfurters. Differences in composition were also accompanied by changes in the microstructure of the gel/emulsions. Frankfurters with added walnut presented a flavour significantly different from meat and scored lower (p < 0.05) on texture preferences. However, all frankfurters scored the same for overall acceptability.  相似文献

Lipid and protein structural characteristics of frankfurter formulated with olive oil-in-water emulsion stabilized with soy protein isolate (SPI) as pork backfat replacer were investigated using Fourier transform infrared spectroscopy (FT-IR). Proximate composition and textural properties were also evaluated. Different frankfurters were reformulated: F/PF with pork backfat, F/SPI with oil-in-water emulsion stabilized with SPI and F/SPI + SC + MTG with emulsion stabilized with a combination of SPI, sodium caseinate (SC) and microbial transglutaminase (MTG). Replacement of pork backfat with these emulsions produced an increase (P < 0.05) of hardness, springiness, cohesiveness and chewiness but a reduction (P < 0.05) of adhesiveness. F/SPI and F/SPI + SC + MTG frankfurters showed the lowest (P < 0.05) half-bandwidth in the 2922 cm−1 band, which could be related to lipid chains were more ordered than in F/PF. Modifications in the amide I band profile revealed a higher concentration of aggregated intermolecular β-sheets in F/SPI + SC + MTG samples. Lipid and protein structural characteristics could be associated with specific textural properties of healthier frankfurters.  相似文献

以低脂低盐鸡肉法兰克福香肠为研究对象,探讨不同添加量(0.5%、0.75%、1%、1.25%、1.5%、1.75%)的海藻膳食纤维对其食用品质的改善效果。结果表明,随着海藻膳食纤维添加量的增加,低脂低盐鸡肉法兰克福香肠的蒸煮损失、L*值和b*值显著降低(P<0.05),而乳化稳定性、弹性、回复性、脆性和感官评价(致密性、多汁性、风味和总体可接受性)显著增大(P<0.05),且1.5%为最佳添加量(P<0.05)。扫描电镜结果表明海藻膳食纤维能够促进鸡肉蛋白凝胶形成致密的三维网状结构。因此,海藻膳食纤维能够提高低脂低盐肉糜体系的持水性和凝胶特性,进而改善产品的食用品质,为低脂低盐肉制品的开发提供技术指导。  相似文献

Nutritional, sensory and technological properties of frankfurters as affected by reformulation processes designed to reduce fat content and improve fatty acid profile were investigated. Healthier oils stabilized in oil in water emulsion or in konjac matrix gel were used as fat replacers. Results showed that improved fat content by the replacement of pork backfat with konjac gel and by the addition of healthier oils stabilized by various different systems, both resulted in products with very similar characteristics. From a nutritional standpoint, reformulated frankfurters with konjac gel and/or added a healthier oil combination may claim “reduced fat content” and/or “high omega 3 fatty acid content” according to European Regulation, since they could contain less than 30% of the fat in the reference product and more than 0.6 g of ALA/100 g and more than 80 mg of the sum of EPA plus DHA per 100 g, respectively. Chill storage over 40 days generally had little effect on the technological characteristics of frankfurters.  相似文献

Characteristics of beef patties with low-salt (0.5%) and low-fat (<10%) contents were studied during frozen storage as affected by addition of Wakame seaweed (3%) and partial or total replacement of pork backfat with olive oil-in-water emulsion. Patties with Wakame presented less (P < 0.05) thawing and cooking losses and were softer (P < 0.05) than patties without seaweed. A softening effect (P < 0.05) induced by olive oil emulsion was observed only in seaweed-free patties. Lipid oxidation and microbiological counts in reformulated products were not a limiting factor for frozen stability. Wakame incorporation increased (P < 0.05) mineral contents, but all products presented the same Na/K ratio. Observed changes in microstructure were associated with seaweed addition (formation of alginate chains). All products were judged acceptable by the sensory panel. In the course of frozen storage no important changes were found in the target properties due to the different treatments.  相似文献

The aim of this work was to examine the relationship of skeletal muscle apoptosis and postmortem development of meat quality. Colour, cooking loss, myofibril fragmentation index (MFI) and shear force of duck breast and thigh meat postmortem were measured, and changes of positive nuclei were assessed with Terminal deoxynucleotidyl transferase-mediated deoxyuridine triphosphophate nick end-labelling method (TUNEL). Correlation analysis revealed that apoptosis were positively correlated with colour (L, a and b), cooking loss and MFI (P < 0.05), while it is negatively correlated with shear force (P < 0.05). Our results indicate the growing level of duck skeletal muscle cell apoptosis was associated with the postmortem development of meat quality traits such as meat colour, water holding capacity and tenderness.  相似文献

Fat content of frankfurters (20 g/100 g) was replaced with canola and canola-olive oils. Rice bran (RB) and walnut (WE) were added (2.5 g/100 g) to emulsions as macronutrients. Changes in energy values, color, emulsion stability and lipid oxidation of frankfurters during storage were investigated. ANOVA model was highly significant for color parameters and energy values (P < 0.001). The canola-olive oil replacement led to a high capacity to hold water and fat exudates in frankfurters, reporting higher emulsion stabilization parameters than regular frankfurters. The addition of RB led to an increase of cooking and fat exudates, indicating high emulsion instability possible due to interactions between RB fiber and fat-protein binders. Walnut addition reported low cooking loss values, and a significant capacity for emulsion stabilization in comparison with regular and RB frankfurters. Lipid oxidation increased from days 0-7 in all frankfurters, declining afterwards until end of storage. TBARS was not influenced by type of emulsions control, but significant (P < 0.05) differences were observed in vegetable oil emulsions made with RB; as well as between RB and WE added to either vegetable oil emulsions. These results suggest the use of these natural ingredients as valuable promoters of healthy meat products.  相似文献

Meat and pork consumptions are very high in Spain. Seaweeds are rich in fibre, minerals, and bioactive substances. Due to the growing demand for healthier meats, this work studied the effect of diets containing restructured pork (RP) enriched with Himanthalia elongata (Sea Spaghetti) on: (1) cholesterolaemia; (2) liver cytochrome P450 7A1 (CYP7A1) expression; (3) liver antioxidant enzyme activities and gene expression; (4) the liver antioxidant substrate concentrations. Four groups of 10 Wistar rats each were fed a mix of 85% AIN-93 M rodent diet and 15% freeze-dried RM for 35 days. The control group (C) consumed control RP; the Sea Spaghetti (SS) group, RP with 5% Sea Spaghetti. Animals on added cholesterol diets (CholC and CholSS) consumed their basal C and SS diets enriched with cholesterol and cholic acid as hypercholesterolaemic agent. Food intake was significantly affected by the alga × cholesterol interaction and by dietary cholesterol (both p < 0.001). Plasma cholesterol was significantly affected by the cholesterol × alga interaction (p < 0.05). CholC rats showed significantly higher plasma cholesterol (p < 0.001) than did their C counterparts, whilst serum cholesterol of CholSS was significantly lower (p < 0.05) than that of CholC. The glutathione peroxide (GSSG) concentrations and all mRNA expressions were significantly affected by the cholesterol × alga interaction (at least p < 0.05). SS vs C group showed significant (at least p < 0.05) increases in superoxide dismutase (Mn-SOD and Cu,Zn-SOD), glutathione peroxidase (GPx) and decrease of glutathione reductase (GR) expressions, and increased GR activity, GSSG and the redox index. CholSS vs CholC showed significant (at least p < 0.05) increases of CYP7A1, GR and Cu,Zn-SOD expression but decreases in catalase, Mn-SOD and GPx expression, and increase of GR activity. In conclusion, Sea Spaghetti could be widely used in RP design. Its addition to non-cholesterol enriched RP diet reduced oxidation mechanisms. SS-RP partially blocked the effect of the hypercholesterolaemic agent, giving rise to a new balance of the antioxidant enzyme expression.  相似文献

Raw edible seaweed harvested in the Galician coast (Northwester Spain), including two red seaweed types (Dulse and Nori), three brown seaweed (Kombu, Wakame and Sea Spaghetti), one green seaweed (Sea Lettuce) and one microalgae (Spirulina platensis) were analysed for total iodine and total bromine, as well as for iodine and bromine bioavailability by in-vitro methods (simulated gastric and intestinal digestion/dialysis). Similarly, a cooked seaweed sample (canned in brine) consisting of a mixture of two brown seaweed (Sea Spaghetti and Furbelows) and a derived product (agar–agar) from the red seaweed Gelidiumm sesquipedale, were also included in the study. All measurements were carried out by inductively coupled plasma–mass spectrometry using tellurium and yttrium as internal standards for iodine and bromine, respectively. An optimised microwave assisted alkaline (TMAH) digestion procedure was used as sample pre-treatment for total iodine and bromine determinations, as well as for the determination of both elements in the non-dialyzable fractions. PIPES buffer solution at a pH of 7.0 and dialysis membranes of 10 kDa molecular weight cut off (MWCO) were used for the intestinal digestion. Accuracy of the method (total bromine and iodine determinations) was assessed by analysing a NIES-09 certified reference material. The accuracy of the in-vitro procedure was established by a mass-balance study which led, after statistical evaluation (95% confidence interval), good accuracy of the whole in-vitro process. The highest dialyzability bromine percentages (36 ± 0.7% and 47 ± 3.0%) were obtained for red seaweed (Dulse and Nori), while higher dialyzability iodine was assessed for the brown seaweed (Kombu), around 17% ± 0.7%.  相似文献

The effects of three different types of edible seaweeds, Sea Spaghetti (Himanthalia elongata), Wakame (Undaria pinnatifida), and Nori (Porphyra umbilicalis) added at two concentrations (2.5% and 5% dry matter) on the physicochemical and morphological characteristics of gel/emulsion systems were evaluated. The addition of seaweeds improved (P<0.05) water- and fat-binding properties except in the case of Nori added at 2.5%. Hardness and chewiness of the cooked products with added seaweed were higher (P<0.05), and springiness and cohesiveness were lower (P<0.05) than in control samples. Colour changes in meat systems were affected by the type of seaweed. The morphology of sample differed depending on the type of seaweed added, and this is the result of differences in physical and chemical characteristic of the seaweed powder used. In general, products formulated with the brown seaweeds (Sea Spaghetti and Wakame) exhibited similar behaviour, different from that of products made with the red seaweed Nori.  相似文献

The effects of electrical stimulation (90 V) 20 min post mortem on meat quality and muscle fibre types of four age group camels (1–3, 4–6, 7–9, 10–12 years) camels were assessed. Quality of the Longissimus thoracis at 1 and 7 days post mortem ageing was evaluated using shear force, pH, sarcomere length, myofibrillar fragmentation index, expressed juice, cooking loss and L, a, b colour values. Age of camel and electrical stimulation had a significant effect on meat quality of L. thoracis. Electrical stimulation resulted in a significantly (P < 0.05) more rapid pH fall in muscle during the first 24 h after slaughter. Muscles from electrically-stimulated carcasses had significantly (P < 0.05) lower pH values, longer sarcomeres, lower shear force value, higher expressed juice and myofibrillar fragmentation index than those from non-stimulated ones. Electrically-stimulated meat was significantly (P < 0.05) lighter in colour than non-stimulated based on L value. Muscles of 1–3 year camels had a significantly (P < 0.05) lower shear force value, and pH, but longer sarcomere, and higher myofibrillar fragmentation index, expressed juice, and lightness colour (L) than those of the 10–12 years camels. The proportions of Type I, Type IIA and Type IIB were 25.0, 41.1 and 33.6%, respectively were found in camel meat. Muscle samples from 1–3 year camels had significantly (P < 0.05) higher Type I and lower Type IIB fibres compared to those from 10–12 year camel samples. These results indicated that age and ES had a significant effect on camel meat quality.  相似文献

The effect of 40 percent sodium chloride replacement with salt substitute blend (potassium chloride, citric acid, tartaric acid and sucrose) and incorporation of apple pulp, at the levels of 8 (Treatment I), 10 (Treatment II) and 12 (Treatment III) g/100 g of formulation, on the various quality characteristics of low fat chicken nuggets was investigated. Emulsion and product pH values were significantly higher (P < 0.01) for the control when compared to treatments. Salt replacement and apple pulp addition resulted in significantly lower (P < 0.05) emulsion stability and cooking yield. Among low salt and low fat nuggets, the product with 12 g/100 g apple pulp had the highest moisture percent. Protein and ash contents were significantly lower (P < 0.01) in treatment products, whereas moisture protein ratio was higher. Incorporation of apple pulp significantly increased (P < 0.01) dietary fibre content, redness, yellowness and chroma index of the product. Textural properties of the products significantly decreased (P < 0.01) with substitution of common salt and addition of apple pulp. Sensory evaluation showed significant reduction (P < 0.01) in texture and overall acceptability scores of treatment products; however, scores were in the range of very good.  相似文献

Effect of tannic acid (0.02% and 0.04%) and ethanolic kiam wood extract (EKWE) (0.04% and 0.08%) on lipid oxidation and textural properties of fish emulsion sausages during 20 days of refrigerated storage was investigated. Control samples (C) had the highest peroxide value (PV) and thiobarbituric acid-reactive substances (TBARS) value up to day 16 and 8 of storage, respectively. With the addition of tannic acid and EKWE, PV and TBARS values in the sausages were retarded effectively, compared to the control (P < 0.05), especially when the tannic acid and EKWE at higher level were used. At the same level, EKWE showed the lower ability in retarding the lipid oxidation, in comparison with tannic acid. Tannic acid at both levels (0.02% and 0.04%) was also effective in retarding the formation of fishy odour in the samples throughout the storage, compared to the control and EKWE treated samples (P < 0.05). Both tannic acid and EKWE had no detrimental effect on the sensory attributes of sausages. However, EKWE treated sample had lower L and higher a and ΔE values, compared to the control samples (P < 0.05). After 20 days of storage, the sample added with 0.04% tannic acid had higher hardness, gumminess and chewiness, compared with others (P < 0.05). Samples added with 0.04% tannic acid also displayed more compact structure with no visible voids. Furthermore, oil droplets with smaller size were dispersed more uniformly, compared to others. Thus, tannic acid (0.02% and 0.04%) and EKWE (0.08%) were effective in retarding lipid oxidation and fishy odour development as well as could maintain the textural properties of fish emulsion sausages during the refrigerated storage of 20 days.  相似文献

The effect of high pressure treatment (HPP) (150 MPa and 300 MPa for 15 min) and cooking on quality of Atlantic salmon based on microbial activity, lipid oxidation, fatty acid profile, colour and texture during 6 days of storage was studied. High pressure and cooking significantly (p < 0.05) reduced microbial growth. The 300 MPa treatment and cooking showed higher L∗ and b∗ values but lower a∗ values for dark muscle compared to control and samples treated at 150 MPa. An increase in pressure resulted in an increase in hardness, gumminess and chewiness parameters, and a decrease in adhesiveness compared to control and cooked samples. Whereas cooking and 150 MPa led to similar oxidation development as control in dark muscle, the 300 MPa treatment effectively reduced the samples susceptibility to oxidation. Fatty acid profile of cooked Atlantic salmon dark muscle showed significantly (p < 0.05) lower amounts of total saturated, n−3 Polyunsaturated fatty acids (PUFA) and n−6 PUFA and significantly (p < 0.05) higher amounts of monoenes than HPP treated samples during the entire storage period. However, the most important finding of this study was that there was no significant (p > 0.05) difference between control and HPP treated samples in terms of total saturated, monoenes, n−3 PUFA and n−6 PUFA fatty acid profile. This demonstrates that HPP is a very mild process in terms of its effect on fatty acids.  相似文献

A Raman spectroscopic study was performed to determine protein and lipid structural properties in meat batter containing oil bulking agents as pork backfat replacers. Meat batters were prepared with pork backfat (MB-PF) or with a combination of olive oil, sodium alginate, CaSO4, sodium pyrophosphate and dextrin (MB-A/D) or inulin (MB-A/I) as a fat replacer. Proximate composition, pH, cooking loss (CL), colour and texture were evaluated. MB-A/D and MB-A/I both showed lower (P < 0.05) CL and a values, higher (P < 0.05) L and b values, and higher (P < 0.05) hardness and chewiness. MB-A/I showed the highest hardness and chewiness. Enhancement of the β-sheet structure was observed in MB-A/D and MB-A/I, more so in MB-A/I. There was increased disorder in the oil acyl chains, which involve lipid–protein interactions, in both MB-A/D and MB-A/I. Structural characteristics in proteins and lipids may be associated with specific water and fat binding properties and textural characteristics of meat batters.  相似文献

Characteristics of restructured poultry steaks as affected by addition of Sea Spaghetti seaweed (3% dry matter) combined with NaCl reduction and a microbial transgutaminase/caseinate (MTGase/caseinate) system as a cold binding agent were studied during chill storage. The incorporation of Sea Spaghetti caused a slight (P<0.05) increase in purge loss but reduced cooking loss in the products. Addition of MTGase/caseinate did not affect water binding properties. The added seaweed and the MTGase/caseinate system both increased (P<0.05), the Kramer shear force (KSF) of raw products, making them easier to handle. No such effect was observed in cooked products. Products with Sea Spaghetti had higher levels (P<0.05) of total viable counts and lactic acid bacteria, and also higher levels of tyramine and spermidine. All products were judged acceptable by a sensory panel. During chill storage no important changes were found in the target properties due to composition.  相似文献
