The objectives of these trials were to investigate the performance of Jersey steers in relation to Holsteins under current management practices when fed diets differing in energy density and subsequent effects on carcass characteristics. In experiment 1, twelve Jersey and 12 Holstein steers were offered dietary treatments with differing roughage levels. Roughage levels investigated on a dry matter basis were 55% reduced to 25% versus 25% followed by 12.5% (HIGH and LOW, respectively) with all animals receiving the same finishing diet containing 6.5% roughage. Holstein steers were heavier than Jerseys at the initiation of the trial (228 vs. 116 kg). A diet response was observed for gain efficiency during the first period in which LOW was greater than HIGH. Holstein steers had higher dry matter intakes and rates of gain than Jerseys. However, gain efficiency was better for Jersey steers during the first and last periods. Carcass traits were influenced by breed but not diet. Holsteins had heavier hot carcass weights, greater dressing percentages, more backfat, and larger longissimus muscle area, whereas marbling scores were similar to Jerseys. The increased efficiency of Jersey steers and significant reduction in carcass value due to light carcass weights suggested that Jersey steers should be fed to heavier live weights. Experiment 2 utilized 85 steers to investigate continuous feeding of a low-roughage, high-concentrate diet versus a phase-feeding strategy. Jersey (n = 40) and Holstein (n = 45) steers were assigned to a diet containing 20% corn silage on a dry matter basis (HEN) or a phase-feeding program (PHASE) in which corn silage was reduced from 60 to 40% followed by the same diet as HEN. Initial body weights were similar for dietary treatments but differed by breed. A diet response was observed for live weight at the end of the first and second period, first period average daily gain (ADG), overall ADG, and days on feed with HEN having higher ADG than PHASE and fewer days on feed. Breed affected all body weight and gain variables with Holsteins being heavier and gaining more rapidly than Jersey steers. Jersey carcasses were lighter, had the highest percentage trim loss, least amount of backfat, and lowest numerical yield grade. Holstein steers had a greater propensity for gain, whereas the Jersey steers were equally or more efficient. These findings suggest that phase feeding Jersey steers higher-roughage diets has minimal effect on carcass traits.  相似文献

Meat from Holstein and crossbred organic and conventional dairy steers were evaluated and compared for fatty acid profiles, meat quality, sensory attributes, and consumer acceptance. Bull calves (n = 49) were randomly assigned to 1 of 3 replicated groups: conventional (CONV), organic (ORG, pasture + concentrate), or grass-fed organic (GRS) and were born at the University of Minnesota West Central Research and Outreach Center (Morris, MN) between March and May 2011. The CONV steers (n = 16) were fed a diet that contained 80% concentrate and 20% forage, and ORG steers (n = 16) were fed a diet of organic corn, organic corn silage, and organic protein supplement. Furthermore, ORG steers consumed at least 30% of diet dry matter of high-quality organic pasture during the grazing season. The GRS steers (n = 17) consumed 100% forage from pasture during the grazing season and high-quality hay or hay silage during the nongrazing season. The ORG steers had fat that was greater in oleic acid (C18:1) than the GRS and CONV steers (47.1, 36.1, and 39.9%, respectively). The GRS steers (21.9%) were lower for monounsaturated fat than the ORG (42.1%) and CONV (40.4%) steers. Furthermore, the GRS steers tended to have greater n-3 fat and had lower n-6 fat than the ORG and CONV steers. Consequently, the GRS (1.4%) steers had a lower n-6-to-n-3 fat ratio than the ORG (12.9%) and CONV (10.0%) steers. The GRS (2.6 kg) steers had steaks that were not different for Warner-Bratzler shear force than ORG (2.3 kg) steaks; however, the GRS steaks tended to have greater shear force than the CONV (2.0 kg) steaks. The 3 steer group had steaks that were not different for color brightness (L*; 0 = black and 100 = white) and yellowness/blueness (b*; positive values = yellow and negative values = blue) values; however, the GRS (10.5) steaks had lower redness/greenness (a*; positive values = red and negative values = green) values than CONV (14.5) steaks. For sensory attributes (0- to 120-point scale), no differences were observed for ORG (71.3) and CONV (69.2) steers for overall consumer liking of the beef; however, the GRS (56.3) steers had the lowest overall liking among beef consumers. The ORG (73.3) steers had greater flavor liking than the GRS (56.8) and CONV (69.2) steers. Conversely, the GRS (6.3) steers had the highest scores for off-flavor (0- to 20-point scale) compared with the ORG (3.9) and CONV (4.1) steers. The results of the current study suggest that a potential market may exist for organic grass-fed dairy steers in the United States, but quality and consistency of the beef needs to be improved.  相似文献

Bull calves (n = 49), born at the University of Minnesota West Central Research and Outreach Center (Morris) between March and May 2011, were used to compare growth measurements and profitability of conventional and organic dairy steers. Calves were assigned to 1 of 3 replicated groups at birth: conventional (CONV; n = 16), organic (pasture and concentrate; ORG; n = 16), or organic grass only (GRS; n = 17), and analysis of variables was on a pen basis. Breed groups of calves were Holstein (HO; n = 9); Holsteins (n = 11) maintained at 1964 breed average level; crossbreds (n = 19) including combinations of HO, Montbéliarde, and Swedish Red; and crossbreds (n = 10) including combinations of HO, Jersey, Swedish Red, and Normande. The CONV steers were fed a diet of 80% concentrate and 20% forage. The ORG steers were fed a diet of organic corn, organic corn silage, and at least 30% of their diet consisted of organic pasture during the grazing season. The GRS steers grazed pasture during the grazing season and were fed high-quality hay or hay silage during the nongrazing season. Intakes of a total mixed ration were recorded daily with herd management software. A profit function was defined to include revenues and expenses for beef value, feed intake, pasture intake, health cost, and yardage. The GRS (358.6 kg) steers had lesser total gains from birth to slaughter than ORG (429.6 kg) and CONV (534.5 kg) steers. Furthermore, the GRS (0.61 kg/d) steers had lesser average daily gain from birth compared with ORG (0.81 kg/d) and CONV (1.1 kg/d) steers. The GRS and ORG steers had smaller rib eye area (49.5 and 65.8 cm2, respectively) compared with CONV (75.4 cm2) steers. For profitability, GRS steers had 43% greater profit than CONV steers due to organic beef price premiums and lower feed costs. On the other hand, ORG steers had substantially less profit than CONV steers. The higher cost of production for the ORG steers is due to the extreme high value of organic corn. The results of the current study illustrate the economic potential of alternative strategies for growing and marketing male offspring of organic dairy cattle in the Midwest.  相似文献

Beef production under different local husbandry systems might have meat sensory quality implications for the marketing of these products abroad. In order to assess the effect of finishing diet systems on beef quality, a trained sensory taste panel assessed meat aged for 20 days from 80 Uruguayan Hereford steers that were finished on one of the following diets: T1 = Pasture [4% of animal live weight (LW)], T2 = Pasture [3% LW plus concentrate (0.6% LW)], T3 = Pasture [3% LW plus concentrate (1.2% LW)], or T4 = Concentrate plus hay ad libitum. Beef odour and flavour intensities decreased with an increase in the energy content of the diet. The meat from T2 had the lowest acid flavour and strange odours intensities. In general, steers fed only concentrate plus hay (T4) produced meat that had an inferior sensory quality because they had more pronounced off-flavours and was tougher.  相似文献

This study evaluated the effects of the myostatin g + 6723G > A mutation on carcass and meat quality traits of lamb (AA: n = 5; AG: n = 8; GG: n = 9). Dressing percentage was positively affected by the mutation with homozygotes for the mutation having the highest yield. Regarding carcass composition, there was a significant increase in the proportional weights of the loin and hindquarter muscles. Objective meat quality traits of the M. longissimus lumborum (LL) and M. semimembranosus (SM) were not significantly affected. For the SM, toughness (shear force and compression) tended to be lowest for homozygotes for the mutation. The myostatin g + 6723G > A mutation did not affect sensory meat quality traits of grilled steaks for the LL, but resulted in a significant improvement in eating quality for the SM. Given the number of animals in this study, the robustness of the outcome of this study with regard to the effects on meat quality and its causes requires further investigation.  相似文献

A considerable amount of information has been generated on the feeding value and impact of corn dried distillers’ grains with solubles (DDGS) on meat quality, whereas little is known about the effects of wheat DDGS on meat quality, and no direct comparison of these two sources of DDGS has been completed. The current study was conducted to examine the objective and subjective carcass and meat quality traits of cattle fed diets containing corn or wheat (20% or 40%) DDGS (DM basis) as compared to a standard barley-based finishing diet (control). In general, meat obtained from animals fed the barley-based control diet was slightly darker in colour (lower chroma and hue at 24 h, P < 0.01) and less tender (highest proportion of tough shears at 2 d and lowest proportion of tender shears at 20 d). Meat from corn DDGS was rated as more tender and palatable than control samples (P < 0.05), and 20% corn samples were rated better for beef flavour intensity (P < 0.01) and desirability (P < 0.05) than 40% corn DDGS samples. In contrast, meat from steers fed wheat DDGS showed intermediate characteristics between steers fed control and corn DDGS diets. Hence, feeding wheat DDGS had no negative effects, and feeding corn DDGS had some positive effects on meat quality characteristics of beef.  相似文献

Bos indicus bulls 20 months of age grazed on pasture in Minas Gerais, Brazil either received 2 doses of the GnRF vaccine Bopriva at d0 and d91 (group IC, n = 144) or were surgically castrated on d91 (group SC, n = 144). Slaughter on d280, was 27 weeks after castration. Adverse safety issues in 8% of group SC bulls following surgery contrasted with 0% in group IC bulls. At d105 testosterone levels were suppressed to similar levels in both groups. Importantly, group IC bulls had higher live weight, hot carcass weight, ADG (P < 0.005) and dressing percentage (P < 0.0001) compared to group SC animals. There were no negative effects on carcass or meat quality traits, thus immunocastration was concluded to offer a safe and effective method that provides production gains, and improves animal welfare in Bos indicus beef bulls without impacting meat and carcass quality.  相似文献

Thirty-nine steers were distributed into a 2 × 2 factorial arrangement of treatments to determine the effect of corn grain particle size (cracked [CC] vs ground [GC] corn) and soybean meal treatment (solvent extracted soybean meal [SS] vs lignosulfonate treated soybean meal Soypass™ [SP]) on carcass and meat quality traits. When CC diet was supplemented with SS carcass quality grade score tended to decrease (P = 0.09). GC had no effect on meat quality, while SP only increased the intramuscular fat content when added to CC (P = 0.01). The CC diet supplemented with SP increased the proportion of saturated fatty acids (P = 0.01). Despite the positive effects on carcass quality, the lack of improvement in meat quality and the more saturated fatty acid profile would not justify the use of processed corn or treated soybean meal in the finishing diet of steers.  相似文献

Twenty-four Holstein steers and 23 Holstein bulls (initial body weight = 252 ± 3.5 kg and age = 187 ± 7.5 d) were randomly allocated to 4 treatments arranged in a 2 × 2 factorial design with gender (bulls vs steers) and vitamin A supplementation (either restricted at 1.3 × 1000 IU/kg, VAR, or supplemented at 4.6 × 1000 IU/kg, CTR) to evaluate the effect of vitamin A restriction on performance, carcass and meat quality traits of Holstein steers and bulls. Intramuscular fat was less (P < 0.01) in bulls than in steers, and tended (P = 0.09) to be greater in VAR than in CTR animals. Oxidative stability tended (P = 0.09) to be greater in meat from VAR than from CTR animals at 21 d of ageing. Vitamin A restriction in Holstein bulls does not achieve the same intramuscular fat levels obtained with castration.  相似文献

The aim of this study was to investigate the association and expression of HNF1A gene as a candidate gene for meat and carcass quality traits in pigs. Statistical analysis revealed that the g.8260 A>G polymorphism significantly associated with pH 24H, meat percentage and muscle area in the F2 Duroc × Pietrain (DuPi, n = 313) and with pH 24L, fat area and backfat thickness in the Pietrain (Pi, n = 110) population. HNF1A mRNA and protein expressions were higher (p < 0.05) in animals with the low post-mortem muscle pH 24L. The promoter methylation profiling suggested that methylation was not involved on HNF1A expression regulation (p > 0.05) in animal with divergent muscle pH. In conclusion, polymorphism in porcine HNF1A gene could be used as a candidate marker to improve the meat and carcass quality traits, with the consideration of breed-specific effect.  相似文献

A total of forty Duroc–Landrace–Large White female pigs (90 ± 5 kg) were used to study the effects of different lairage times (0 h, 3 h, 8 h, 24 h) on welfare, energy metabolism and meat quality. The results showed that lairage time of 3 h led to a lower blood cortisol, a decreased drip loss and a delayed degradation of glycogen in muscles compared with pigs without rest, while lairage times of 8 h and 24 h resulted in a significant increase in pork toughness. It was concluded that three hours of lairage was appropriate to reduce pre-slaughter stress and obtain better meat quality for pigs transported for 4 h in winter, under the most frequent commercial conditions in Beijing, China. No lairage, or excessively long lairage time, might compromise animal welfare and meat quality.  相似文献

This experiment was conducted in 2005–2007 to evaluate carcass and chevon (goat meat) quality parameters when meat-goat kids (n = 72) were finished on alfalfa (Medicago sativa L; ALF); red clover (Trifolium pratense L.; RCG); or orchardgrass (Dactylis glomerata L.; OGR) pastures. Carcass conformation score was greater (P = 0.08) when meat-goat kids were finished on ALF compared to OGR with RCG intermediate. Chevon meat samples from goats finished on the three pasture treatments did not differ in ash, intramuscular fat, or crude protein content or in concentrations of omega6 and omega3 fatty acids, or the omega6 to omega3 ratio. Goats finished on OGR had higher (P < 0.001) 18:1 trans-11 fatty acids (FA) compared to ALF or RCG. Overall, meat-goat kids finished on ALF, RCG, or ORG produced desirable carcass weights for most niche markets in the USA. Chevon is a low-fat meat option with high desirable fatty acids for human diets.  相似文献

Thirty Kivircik lambs were used to investigate effect of pre-slaughter treatment on certain haematological and biochemical parameters, carcass and meat quality characteristics. Lambs were divided into three treatments: 75 min transport and lairage for 18 h (TS-L18 h); 75 min transport and lairage for 30 min (TS-L30 min) and no pre-slaughter transport and lairage for 30 min (NTS). Treatment, as a main effect, did not influence haematological and biochemical parameters, but sampling time significantly affected these parameters, except total protein. Plasma cortisol concentration at exsanguination in TS-18 h, TS-30 min and NTS treatments were 117.34, 119.23 and 72.51 ng/ml, respectively. pH of longissimus dorsi muscle was higher in TS-L30 min than other treatments. TS-L30 min lambs had the highest shear force value, the lowest WHC and cooking loss. TS-L30 min treatment yielded the darkest meat immediately after cutting and 1 h later. Meat redness, yellowness and chroma values were similar in treatments.  相似文献

This study aimed to investigate verocytotoxigenic Escherichia coli O157 in the largest beef and sheep slaughter plants in Ireland over a one-year period. Samples consisted of pooled rectal swabs (n = 407) and pooled carcass swabs (n = 407) from 5 animals belonging to the same herd or flock and minced meat (n = 91) from the same sampling date. E. coli O157 isolates were characterised using PCR for a range of genes, i.e. 16S, rfbE, fliC, vtx1, vtx2, eaeA and confirmed VTEC O157 isolates were tested for antimicrobial susceptibility and typed using Pulsed-Field Gel Electrophoresis (PFGE) and Multi-Locus Variable Number of Tandem Repeat Analysis (MLVA). VTEC O157 was isolated from 7.6% and 3.9% of bovine rectal and carcass swab samples and from 5.8% and 2.9% of ovine rectal and carcass swab samples respectively. None of the bovine minced meat samples (n = 77) and only one of the 14 ovine minced meat samples was positive for VTEC O157. Following PFGE and MLVA, cross contamination from faeces to carcasses was identified. While PFGE and MLVA identified the same clusters for highly related strains, MLVA discriminated better than PFGE in addition to being more rapid and less labour intensive. Results showed that cattle and sheep presented for slaughter in Ireland harbour VTEC O157, and although the levels entering the food chain are low, this should not be overlooked as possible sources of zoonotic infection; molecular typing was able to demonstrate relationships among strains and could be used to elucidate the sources of human infection.  相似文献

In this study, conducted at five slaughterhouses, individual pigs were sampled and followed up from stunning to cooling down of the carcasses. In this way, Salmonella prevalence and possible risk points were described. At the lairage area, pens were sampled using overshoes. At stunning and bleeding, pigs were individually identified and subsequently swabs were taken of the oral cavity and the carcass after polishing, splitting and forced chilling. Additionally, duodenum, ileum, rectum and mesenteric lymph nodes were extracted and samples were taken of the scalding water. All samples were submitted to Salmonella isolation and Salmonella isolates were serotyped and genotyped by pulsed-field gel electrophoresis (PFGE). Of all samples taken (n = 1953), 14.1% were Salmonella positive. The prevalence of S. in the lairage area varied widely (from 0 to 100%) between the slaughterhouses. Of the sampled pigs (n = 226), 48.2% were positive in at least one sample. Statistical analysis revealed that the contamination of the lairage area was related to a higher amount of positive carcasses after polishing. Furthermore, the contamination of the carcasses after splitting and forced chilling was related to the contamination level of the carcass after polishing. A relation between the outer (carcass) contamination and the inner (gut content and lymph nodes) contamination of a pig could not be established. The predominant serotypes were S. Typhimurium (58.7%) and S. Derby (17.4%). Genotyping revealed 46 different PFGE profiles among the 276 Salmonella isolates. The same genotype at the lairage area as in the oral cavity of the pigs was found in 95%. The results indicate that the lairage area is a primary source of Salmonella in slaughter pigs and that carcass contamination originates from the environment rather than from the pig (inner contamination) itself. It further shows that slaughterhouses vary in their capability of dealing with Salmonella positive pigs. A slaughterhouse specific approach is needed, however, general guidelines should be provided to decrease the contamination level of the lairage area and the slaughter environment.  相似文献

Dairy goat kids born during a 3-yr period (n = 97) and their mothers (n = 29) were used for a long-term evaluation of the performance of 9 types of identification (ID) devices. Kids wore multiple ID devices: visual ear tags (V1, tip-tag, n = 47; V2, official, n = 50), electronic ear tags (E1, button-button, n = 46; E2, flag-button, n = 46), electronic rumen boluses (B1, mini-bolus 14 g, n = 92; B2, mini-bolus 20 g, n = 28; B3, standard bolus 75 g, n = 34) and glass-encapsulated transponders injected in the forefeet (T1, 15 mm, n = 75; T2, 12 mm, n = 100). Visual ear tags were applied at birth and removed in yearlings, whereas electronic ear tags were applied after bolusing with B1 (6.7 kg BW and 30 d, on average); B2 were administered in the event of a B1 loss, and B3 in case of a B2 loss and in goat does. At d 60 of age, kids were allocated into 2 groups to evaluate the effects of rearing system on ID. Treatments were: weaned (n = 46), and not weaned (n = 46) where kids suckled a milk substitute until d 150. Readability of ID devices (read/readable × 100) was monitored from 1 to 3 yr of age, depending on device and year of birth. Long-term readability was analyzed using a nonparametric survival analysis. A total of 3.3% infections and 6.5% tissue reactions were reported for electronic ear tags, but ears were fully healed in yearlings. Weaning numerically reduced B1 losses at d 150 (weaned, 84.8% vs. not weaned, 73.3%). Readability of visual ear tags in yearlings (V1, 82.9%; V2, 94.0%) was lower than for electronic ear tags (E1 and E2, 100%). Mini-bolus readability in yearlings did not differ by type (B1, 71.4%; B2, 84.6%) or with visual ear tags. No effect of inject type was reported (T1, 92.0%; T2, 96.0%). Survival analysis after yr 3 gave the greatest readability value for E1 (100%), which did not differ from B3 (96.8%). The lowest readability was estimated for B1 (66.3%), followed by E2 (79.8%), B2 (81.4%), and T1 (90.4%). In conclusion, button-button electronic ear tags and standard boluses were the more efficient devices under our conditions, their readability values being greater than injects, electronic mini-boluses, and visual and flag-button electronic ear tags. Transponders injected in the forefeet and mini-boluses used here are not recommended in practice. Further research on E1 and B3 electronic devices should be done in a higher number of goats to confirm the current results.  相似文献

The aim of the present work was to study the effect of dietary supplementation of Euphorbia heterophylla on the quality of the Guinea pig meat. Forty guinea pigs were divided into two groups fed ad libitum during 46 days a Panicum maximum diet (Panicum diet) or a mixed diet (75% Panicum maximum + 25% Euphorbia heterophylla) (Paneuphorbia diet) to compare their effects on performances and on the composition of guinea pig tissues and carcass. Daily weight gain, liver weight, carcass yield, and the lipid content of both the carcass and the perirenal fat were significantly increased by the Paneuphorbia diet. Feeding Paneuphorbia diet increased (P < 0.05) the n-3 PUFA content in perirenal fat, muscle, liver and in the carcass and decreased (P < 0.05) the n-6/n-3 ratios in all these tissues and the carcass. In conclusion, this study shows that Euphorbia heterophylla is a source of n-3 fatty acids which can improve significantly the n-3 PUFA content of Guinea pig meat and carcass.  相似文献

Thirty non-castrated male lambs with 20 ± 2.3 kg average body weight (BW) were randomly assigned to five treatments consisted of different dietary concentrations of crude glycerin (CG; 0, 3, 6, 9 and 12% on DM basis) to evaluate the effects on performance, carcass and meat quality traits. A quadratic effect was observed for performance (P = 0.04), final BW (P < 0.01) and hot carcass weight (P < 0.01). No effects of CG were observed (P > 0.05) on carcass pH neither on shear-force, cooking loss and ether extract content in longissimus. The inclusion of CG tended to reduce the Zn content in meat (P = 0.09). The data suggests that CG (36.2% of glycerol and 46.5% of crude fat) may be used in diets of finishing lambs with concentrations up to 3% without negative effects on performance and main carcass traits. Moreover, inclusion of CG seems to not affect quality and safety of meat for human consumption.  相似文献

The objective of this study was to determine the effects of three lairage times (24 h, 48 h and 72 h) on the meat quality of tame trained to lead Hungarian Simmental bulls subjected to long commercial transportation of approximately 1800 km. A total of 30 bulls, with an average age of 24 months, were used. During the lairage, bulls received 0.5 kg concentrate feed per animal per day and ad libitum access to the hay and water. As the lairage duration increased, the pHult decreased (P < 0.05). Bulls lairaged for 24 h had lower L*, b* and H* values than those lairaged for 48 h and 72 h (P < 0.05). The effect of lairage time on WHC, cooking loss and Warner–Bratzler shear force values was not significant. The b* value was considered the best predictor of muscle pHult. In conclusion, 72 h quiet lairage time is recommended after transportation in order to prevent the adverse effects of transportation on meat quality.  相似文献

This study was conducted to evaluate concentrate level (CL) and slaughter body weight (SW) effects on growth performances, carcass traits and meat quality of Barbarine lambs. Twenty-four weaned male lambs (23.1 kg), receiving an oat-hay based diet, were allotted into two groups. The LCL group received low concentrate level (300 g) and the HCL group received high concentrate level (600 g). Lambs were slaughtered at two prefixed weights (35 and 42 kg). For each group and each weight, six lambs were slaughtered. Lambs from HCL group had higher ADG, carcass yields, carcass compactness and subcutaneous fat thickness, and lower carcass meat proportion. CL increase did not affect meat pH, meat and fat color, chemical and fatty acid composition. Late slaughtering improved carcass yields and increased carcass adiposity. However, it did not affect carcass meat proportion and shoulder tissue composition. SW had effect on meat color and fatty acid composition.  相似文献
