In recent years, much attention has been paid to physiological functions of foods due to increasing concerns for health. Although there has been limited information of physiological functions of meat until recently, several attractive meat-based bioactive compounds, such as carnosine, anserine, l-carnitine, conjugated linoleic acid, have been studied. Emphasizing these activities is one possible approach for improving the health image of meat and developing functional meat products. This article provides potential benefits of representative meat-based bioactive compounds on human health and an overview of meat-based functional products. Strategies for designing novel functional meat products utilizing bioactive peptides and/or probiotic bacteria, is also discussed. This article focuses particularly on the possibility of meat protein-derived bioactive peptides, such as antihypertensive peptides. There are still some hurdles in developing and marketing novel functional meat products since such products are unconventional and consumers in many countries recognize meat and meat products to be bad for health. Along with accumulation of scientific data, there is an urgent need to inform consumers of the exact functional value of meat and meat products including novel functional foods.  相似文献

This review deals with the two major aspects to be considered in the context of meat-based functional foods and human health. One involves the different strategies used to improve (increase or reduce) the presence of bioactive (healthy and unhealthy) compounds in meat and meat products in order to develop potential meat-based functional foods; these strategies are basically concerned with animal production practices, meat processing and storage, distribution and consumption conditions. Since the link between the consumption of those foods and their potentially beneficial effects (improving health and/or reducing the risk of several chronic diseases) needs to be demonstrated scientifically, the second aspect considered is related to intervention studies to examine the functional capacity of meat-based potentially functional foods in humans, discussing how the functionality of a food can be assessed in terms of its effects on health in relation to both target body functions and risk factors.  相似文献

The concentrations of fatty acids were measured in intramuscular fat from the longissimus lumborum (LL) and triceps brachii (TB) muscles of Angus-cross heifers finished either on a high-concentrate ration in Washington, USA, (US cattle, n = 15) or on pasture in New Zealand (NZ cattle, n = 16). Half of the NZ cattle were of a similar age to the US cattle (NZAge) and half were of a similar weight (NZWt). Intramuscular fat levels were higher for the LL muscle and for the US cattle but only within the LL muscle (P < 0.05). Aspects of the fatty-acid patterns that are of relevance to human nutrition tended to favour the pasture-finished NZ cattle with lower n − 6/n − 3 fatty acid ratios (P < 0.001), higher concentrations of an anticarcinogenic conjugated linoleic acid (C18:2 c9,t11) (P < 0.05) and its precursor (trans-vaccenic acid, TVA) (P < 0.01), and lower levels of the 18-carbon trans monounsaturated fatty acids other than TVA (P < 0.01). Concentrations of 20 of the 22 fatty acids analysed differed significantly between the two muscles. When values were adjusted to a common intramuscular fat level by covariance, most of the group differences remained, but a number of the muscle differences became non-significant. For almost half the fatty acids considered, there was a significant interaction between treatment group and muscle, which indicates that the results for one muscle do not necessarily apply to other muscles, although the ranking of the groups was usually the same for both muscles.  相似文献

This review deals with the implications of meat and meat products for human health. It analyses the effect of the presence or absence of various factors: fat, fatty acid composition, cholesterol, calorific value, salt, nitrite or lipid oxidation products that can cause health problems. Bearing in mind these considerations, it then describes the strategies used in animal production, treatment of meat raw material and reformulation of meat products to obtain healthier meat and meat products. Functional ingredients are responsible for making functional foods work, and this review therefore discusses the scope of current meat technology to favour the presence of various active-food components, and provide an additional physiological benefit beyond that of meeting basic nutritional needs.  相似文献

This study was conducted to investigate changes in fatty acid profiles of beef cows fed grass hay or barley silage based diets, with or without flaxseed supplementation. Both flaxseed and hay feeding increased levels of α-linolenic acid (LNA; 18:3n-3) in longissimus thoracis and backfat (P<0.001). A forage type by flaxseed level interaction was observed for most LNA biohydrogenation intermediates (P<0.05) that indicated feeding hay combined with flaxseed led to the greatest levels of total conjugated linolenic acid, total conjugated linoleic acid, total non-conjugated dienes and total trans-18:1. Predominant biohydrogenation intermediates included t11,c15-18:2, rumenic acid (c9,t11-18:2) and vaccenic acid (t11-18:1).  相似文献

Forty Merino Branco ram lambs were used to study the effects of initial diet and duration of supplementation with a conjugated linoleic acid (CLA) promoting diet, on carcass composition, meat quality and fatty acid composition of intramuscular fat. The experimental period was 6 weeks. The experimental design involved 2 initial diets (commercial concentrate (C); dehydrated lucerne (L)), and 2 finishing periods (2 and 4 weeks) on dehydrated lucerne plus 10% soybean oil (O). Data were analysed as a 2 × 2 factorial arrangement with initial diet and time on finishing (CLA promoting) diet as the main factors. The lambs were randomly assigned to four groups: CCO; COO; LLO; LOO according to the lamb’s diet fed in each period.Lambs initially fed with concentrate showed higher hot carcass weights (11.2 vs 9.6 kg) than lambs fed initially with lucerne. The increase of the duration of finishing period reduced the carcass muscle percentage (57.4% vs 55.5%) and increased the subcutaneous fat percentage (5.67% vs 7.03%). Meat colour was affected by initial diet. Lambs initially fed with concentrate showed a lower proportion of CLA (18:2cis-9, trans-11 isomer) (0.98% vs 1.38% of total fatty acids) and most of n−3 polyunsaturated fatty acids than lambs initially fed with lucerne. Initial diet did not compromise the response to the CLA-promoting diet and the proportion of 18:2cis-9, trans-11 in intramuscular fat increased with the duration of time on the CLA-promoting diet (1.02% vs 1.34% of total fatty acids).  相似文献

Consumers are increasingly concerned with the form and quantity of fat present in the foods they consume. This is leading to a shift in the way food is produced. In particular the animal industry is increasing the number of organic and naturally finished meat animals rather than finishing them on grains. The objective of this study was to determine if different pasture compositions (i.e. grass only or grass legume mixtures) would impact the fatty acid (FA) meat composition of beef steers (Bos taurus L.). The pasture treatments were tall fescue [Lollium arundinaceum (Schreb.) S.J. Darbysh] only, or tall fescue combined with either red clover (Trifolium pretense L.) or alfalfa (Medicago sativa L. ssp. sativa L.). Beef steers (n = 9–10 per treatment) rotationally grazed each pasture treatment. Forage from treatments were different for crude protein (CP), in vitro true digestibility (IVTD) and the FA myristric (C14:0), palmitic (C16:0), palmitoleic (C16:1), stearic (C18:0), oleic (C18:1), linoleic (C18:2), and total FA. Steers grazing mixtures with either red clover (RC) or alfalfa (ALF) had greater average daily gains (ADG) than tall fescue only. Additionally, RC treatment steers had larger ribeye areas (REA) and greater finishing weights than those in the ALF treatment. However, the differences found between pasture treatments in FA concentration did not translate to any differences in the FA concentration of meat harvested from steers. Thus, it is concluded that although the pastures contained different FA concentrations, with the levels of legumes present, this does not influence the FA composition of beef.  相似文献

Conjugated linoleic acid (CLA) consists of a group of geometric and positional isomers of linoleic acid to which anticancerogenic, antidiabetic, and antiatherogenic effects, as well as effects on immune system, bone metabolism, and body composition are attributed. CLA is found predominantly in milk and meat of ruminants due to the importance of rumen micro-organism in the formation of CLA and its precursors. This review attempts to give an overview of the available data on intramuscular CLA concentrations in meat and meat products originating from different animal species. The factors influencing these concentrations are discussed and the estimated human daily intakes as well as the percentage provided by meat are reported.  相似文献

Three levels (0%, 1% and 2%) of an enriched conjugated linoleic acid oil (CLA) were combined with two levels of monounsaturated fatty acids (MUFA) (low −19% average and high −39% average) for pig feeding. Composition, weight losses, lipid oxidation (thiobarbituric acid test, TBARs), change in the fatty acid content of the lipid fractions and sensory analysis of dry-cured loin as affected by dietary CLA, MUFA and CLA × MUFA interaction were studied. CLA and CLA × MUFA did not affect moisture and intramuscular fat content of dry-cured loin, weight losses during the processing, changes in the content of most fatty acids from lipid fractions and sensory traits. CLA and MUFA supplementation led to lower TBARs values (1.3 mg MDA/kg sample for 0% CLA and 0.9 mg MDA/kg sample for 2% CLA; 1.2 mg MDA/kg sample for low MUFA diets and 0.9 mg MDA/kg sample for high MUFA diets), the highest TBARs values being detected for 0% CLA-low MUFA diets [1.5 mg MDA/kg sample]. The combination of dietary CLA with different MUFA levels in pig diets did not affect most composition and quality traits of dry-cured loin. Dietary CLA and MUFA seemed to lead to lower lipid oxidation in this product.  相似文献

Wheat fiber as a functional ingredient in restructured fish products   总被引:2,自引:0,他引:2  
The technological effect of wheat fiber as an ingredient in minced fish was tested. Thus 3% and 6% of wheat fiber with different size particles were added to minced hake (Merluccius merluccius) and horse mackerel (Trachurus trachurus) muscle and water was also added to maintain the original moisture of the sample. The addition of fiber increased the water holding capacity (WHC). The water binding capacity (WBC) also increased, but only when water was not added to maintain the moisture constant. The cooking drip was lower when 3% or 6% of fiber was added. In general, when the drip was released by gravity, the 250 μm particle fiber bound more water than the 80 μm particle fiber, but when the water was extracted by a centrifugal force the opposite was observed. Restructured products with fiber were whiter and their rigidity and cohesiveness were lower. Products with 3% of fiber were well rated by the sensory panel, unlike the products with 6% of fiber. No unusual flavors were apparent when the wheat fiber was added. The effect of fiber as a stabilizing agent on protein and lipid was not apparent, either.  相似文献

In this study, the effect of pasteurisation temperature on fatty acid composition of cheese was investigated. The fatty acid composition of raw and different heat‐treated milk, salt and salt‐free cheese were determined using cheese made from raw milk at temperatures varying between 70 and 90°C for 5 min. Generally, C 16:0 palmitic acid was the major fatty acid present in all milk and cheese samples. C 18:1 t11 vaccenic acid was the major trans fatty acid (TFA) in all samples. C 18:2 cis‐9, trans‐11 (Rumenic acid) was the major CLA isomer in these samples. Pasteurisation temperatures had no effect on TFA, CLA and fatty acid composition of the milk and cheese samples.  相似文献

Chemical and mineral composition and the intramuscular fatty acid (IMF) profile of the Longissimus dorsi muscle (LM) of 60 purebred Hereford, 1/4 Braford and 3/8 Braford steers finished either in a feedlot or on improved pastures of the Pampa biome were evaluated. Pastures were improved with the introduction of Lolium multiflorum, Trifolium repens, and Lotus corniculatus. On average, beef from pasture-fed steers presented higher concentrations of the fatty acids C18:3n − 3 (P < 0.001), C20:3n − 3 (P = 0.035), total n − 3 (P < 0.001) and lower n − 6/n − 3 ratio (P < 0.001) in the IMF, and higher Mg and lower K content in muscle relative to those finished in the feedlot. C12:0 concentration in IMF was higher (P = 0.027) for 3/8 Braford than the purebred Hereford steers, whereas purebred Herefords presented lower C14:1 (P = 0.003) and higher C18:0 (P = 0.022) concentrations than the two Braford groups. The meat composition of purebred Hereford and Braford steers was not substantially different; however, beef produced exclusively on improved pastures presented higher concentration of components that are considered beneficial to human health, such as n − 3 fatty acids, and a lower n − 6/n − 3 ratio.  相似文献

Three levels (0%, 1% and 2%) of an enriched conjugated linoleic acid oil (CLA) were combined with two levels of monounsaturated fatty acids (MUFA) (low (19%) average and high (39%) average) for pig feeding. The profile of volatile compounds of fresh and dry-cured loin as affected by dietary CLA, MUFA and CLA × MUFA interaction was studied by headspace-solid phase microextraction coupled to gas chromatography–mass spectrometry. A total of 27 and 69 compounds were identified in fresh loin and dry-cured loin, respectively. Identified compounds were alcohols, aldehydes, aliphatic hydrocarbons, aromatic hydrocarbons, esters, furans, ketones, nitrogen compounds, sulphur compounds and terpenes. No qualitative differences in volatile compounds caused by the assayed treatments were found neither in fresh loin nor in dry-cured loin. Dietary CLA, MUFA and their interaction did not affect the level of most detected volatiles. Nevertheless, in fresh loin, the level of heptanal significantly increased due to dietary CLA (p = 0.001) and the area units (AU) for ethyl benzene and 1,3-dimethyl benzene increased at 1% CLA (p < 0.05). In the case of dry-cured loin, the AU of heptanal, nonanal and 2-nonenal contents increased due to dietary CLA (p = 0.016, 0.024 and 0.019, respectively).  相似文献

This study was conducted to determine the effects of dietary beef tallow, corn oil, and conjugated linoleic acid (CLA) on the distribution of fatty acids among positions within triacylglycerols. Crossbred barrows (n=6 per treatment group) received diets containing 1.5% beef tallow, 1.5% corn oil, or 1.5% CLA for 5 weeks. Subcutaneous adipose tissue samples were obtained immediately postmortem. The fatty acid composition was determined for the sn-2 positions of the triacylglycerols by digestion with Rhizopus arrhizus lipase. Fatty acids in the sn-1/3 position were calculated from these data. Feeding CLA increased (P<0.05) the concentration of total saturated fatty acids (SFA, especially 16:0) and isomers of CLA in adipose tissue lipids, but reduced (P<0.05) the concentration of total monounsaturated fatty acids (MUFA, especially 18:1n−9). Dietary CLA caused an accumulation of total SFA in the sn-1/3 position, with a proportional decrease in total MUFA and 18:2n−6 in the outer positions. Correspondingly, lipids extracted from CLA-fed pigs had slip points that were 10 °C higher (P<0.05) than those from corn oil- or tallow-fed pigs. These data suggest that dietary CLA increases the melting point of lipids in porcine adipose tissue by increasing the proportion of SFA at the sn-1/3 position of lipids.  相似文献

The present study was conducted to determinate the responsiveness of different levels of dietary conjugated linoleic acid (CLA) on intramuscular fat (IMF) and fatty acid composition of skeletal muscle and fat in pigs fed from 59.5 to 133.5 kg. Forty female Large White × (Large White × Landrace) pigs were used. Four levels (0%, 0.5%, 1% and 2%) of a commercial enriched CLA oil supplementation (60% of CLA isomers, 30% cis-9, trans-11 and 30% trans-10, cis-12) were fed to pigs. Carcass, ham, foreleg and loin weights were recorded. Dietary CLA enrichment increased the loin weight (P < 0.01) and the combined weights of hams + forelegs + loins (P < 0.02). IMF content in Longissimus dorsi was also increased by dietary CLA treatment (P < 0.001) and a linear response was observed. Dietary CLA increased saturated fatty acids (SFA) and decreased monounsaturated fatty acids (MUFA) in muscle and adipose tissue (P < 0.001). Feeding 1% CLA to finishing swine increases IMF in heavy pigs slaughtered at an average weight of 133.5 kg.  相似文献

The effect of stepwise replacement of dietary sunflower oil (SO) with linseed oil (LO) on carcass composition, meat colour and fatty acid (FA) composition of intramuscular lipids of lamb meat was investigated. Thirty-six lambs were fed one of four diets consisting of pellets of lucerne with oil (60 g/kg): the diet varied in the composition of oil added and were: 100% SO; 66.6% SO plus 33.3% LO; 33.3% SO plus 66.6% LO and 100% LO. The experimental period was 7 weeks. Live slaughter weight, hot carcass weight and intermuscular fat percentage of chump and shoulder increased linearly with replacement of SO by LO.  相似文献

This study was undertaken to evaluate the production and isomeric distribution of conjugated linoleic acid (CLA) in milk fermented with lactic acid bacteria (LAB. A total of 155 cultures of LAB were analysed. Control milk samples had an average CLA content of 0.41 g/100 g of fatty acids (FA), while the lactic cultures produced CLA in the range of 0.43–1.12 g. No major changes in free fatty acids profiles were observed in milk samples fermented with CLA‐producing LAB. The present study demonstrated that LAB can increase levels of CLA in nonsupplemented milk fermented for a short period of 4 h.  相似文献

Recently, a great deal of interest has been developed by the consumers towards natural bioactive compounds as functional ingredients in the food products due to their various health beneficial effects. Hence, it can be suggested that antioxidative functional ingredients from marine foods and their by-products are alternative sources for synthetic ingredients that can contribute to a consumer's well-being, as a part of nutraceuticals and functional foods. This contribution presents an overview of the marine food-derived antioxidants such as bioactive peptides, chitooligosaccharide derivatives, sulfated polysaccharides, phlorotannins and carotenoids with the potential utilization in the food industry.  相似文献

The aim of this trial was to investigate the effects that dietary tannins have on lamb intramuscular fatty acids. Twenty-seven lambs were divided into three homogeneous groups: control group, receiving commercial concentrate based on maize; tannin group, fed a diet based on carob pulp (45% as fed basis); PEG group, receiving the same diet as the latter with addition of 42 g/kg of polyethylene glycol (PEG, a binding agent that eliminates the effects of condensed tannins). The duration of the trial was 45 d. Intramuscular fatty acids were measured in the longissimus dorsi muscle. The isomer cis-9 trans-11 of linoleic acid (conjugated linoleic acid or CLA) and linolenic acid were higher in the longissimus muscle fat from animals fed the control diet compared to the other groups (P < 0.0005); these fatty acids were higher in the fat from animals fed the carob diet supplemented with PEG compared to those fed the same diet without PEG (P < 0.05). trans-Vaccenic acid (C18:1 trans-11) was found at higher concentration in fat from control and PEG lambs compared to tannin lambs (P < 0.01); the CLA/C18:1 trans-11 ratio was lower in lambs fed control and PEG diets than in tannin-fed animals (P < 0.05).  相似文献
