The aim of this study was to ascertain whether the inclusion of thyme leaves in the diet of pregnant sheep affects the sensorial characteristics and oxidative stability of cooked lamb meat. Thirty-six Segureña sheeps were randomly assigned into three homogeneous groups. One group was fed a basal diet as control, while the diet of the other two groups was modified by substituting 3.75% and 7.5% of the control diet with thyme leaves. TBARS, volatile compounds, and the sensory characteristics of cooked lamb meat were analysed on days 0, 2 and 4. The incorporation of thyme into the animal diet favoured the antioxidant capacity of these cooked lamb meat samples. The cooked meat of lambs from ewes fed thyme leaves showed lower TBARS, hexanal values, rancid odour and rancid flavour scores. No statistically significant differences were detected between the results obtained for the two leaf levels.  相似文献

In order to prevent potato from browning during preservation and processing, the effects of p-alkylbenzoic acids (p-propylbenzoic acid, p-butylbenzoic acid, p-pentylbenzoic acid, p-hexylbenzoic acid, p-heptylbenzoic acid, p-octylbenzoic acid) on the activity of potato polyphenol oxidase (PPO) have been studied. The PPO was extracted with PBS (pH 6.8), fractionated with ammonium sulphate, concentrated, and purified with Sephadex G-100 (1.8 × 100 cm) filtration chromatography. The active fractions were pooled and the PPO activity was determined to be 79.83 U/mg. The results showed that p-alkylbenzoic acids could strongly inhibit the activity of potato PPO. The values of IC50 of these six inhibitors were determined to be 0.213, 0.180, 0.152, 0.106, 0.075 and 0.047 mM, respectively. Kinetic analyses showed that p-alkylbenzoic acids used in this experiment were reversible and noncompetitive inhibitors to the enzyme. The inhibitory effects were potentiated with increasing lengths of the hydrocarbon chains, indicating that the inhibitory efficiency on the enzyme was influenced by the steric effect of the substituted groups.  相似文献

The aim of the present work was to study the effect of dietary supplementation of Euphorbia heterophylla on the quality of the Guinea pig meat. Forty guinea pigs were divided into two groups fed ad libitum during 46 days a Panicum maximum diet (Panicum diet) or a mixed diet (75% Panicum maximum + 25% Euphorbia heterophylla) (Paneuphorbia diet) to compare their effects on performances and on the composition of guinea pig tissues and carcass. Daily weight gain, liver weight, carcass yield, and the lipid content of both the carcass and the perirenal fat were significantly increased by the Paneuphorbia diet. Feeding Paneuphorbia diet increased (P < 0.05) the n-3 PUFA content in perirenal fat, muscle, liver and in the carcass and decreased (P < 0.05) the n-6/n-3 ratios in all these tissues and the carcass. In conclusion, this study shows that Euphorbia heterophylla is a source of n-3 fatty acids which can improve significantly the n-3 PUFA content of Guinea pig meat and carcass.  相似文献

The effects of high-concentration short-time chlorine dioxide (ClO2) gas treatment on food-borne pathogens inoculated onto the surface of tomatoes, cantaloupes, and strawberries were studied. Produce were spot-inoculated with a mixture of Salmonella enterica (serotypes Montevideo, Javiana and Baildon), Escherichia coli O157:H7 (serotypes 204 P, EDL 933 and C792) or Listeria monocytogenes (serotypes Scott A, F 5069 and LCDC 81-861), and treated with ClO2 gas at 10 mg/l for 180 s. After ClO2 gas treatment, surviving populations were determined and shelf-life studies were conducted (microbial spoilage population, change in color and overall appearance). Significant microbial reduction (p < 0.05) was observed for all treated samples. Nearly a 5 Log CFU/cm2Salmonella reduction was found on tomatoes, cantaloupe and strawberries, while a ∼3 Log CFU/cm2 reduction was observed for E. coli and Listeria on all produce surfaces. E. coli and Listeria appeared to be more resistant to ClO2 gas as compared to Salmonella spp. Treatments significantly (p < 0.05) reduced initial microflora population, while produce color surface was not significantly influenced, as compared to the control (p > 0.05). Results obtained suggest the potential use of high-concentration short-time ClO2 gas treatment as an effective online pathogen inactivation technology for specialty crops in large-scale produce packing operations.  相似文献

The effect of a novel nano-packing material on preservation quality of Chinese jujube (Ziziphus jujuba Mill. var. inermis (Bunge) Rehd) during room temperature storage was investigated. The nano-packing material with lower relative humidity, oxygen transmission rate and high longitudinal strength (2.05 g/m2 24 h, 12.56 cm3/m2 24 h 0.1 MPa and 40.16 MPa, respectively) was synthesized by blending polyethylene with nano-powder (nano-Ag, kaolin, anatase TiO2, rutile TiO2). The results showed that the nano-packing material had a quite beneficial effect on physicochemical and sensory quality compared with normal packing material. After 12-day storage, fruit softening, weight loss, browning and climatic evolution of nano-packing were significantly inhibited. Meanwhile, the contents of titrable acid and ascorbic acid were decreased to 0.21%, 251 mg/100 g, for nano-packing and 0.15%, 198 mg/100 g, for normal packing; The contents of total soluble sugar, reducing sugar, total soluble solids and malondialdehyde were increased to 28.4%, 5.2%, 19.5% and 98.9 μmol/g for nano-packing and 30.0%, 6.3%, 23.1% and 149 μmol/g for normal packing. Therefore, the nano-packing could be applied for preservation of Chinese jujube to expand its shelf life and improve preservation quality.  相似文献

This article reports a study of the concentrations of dietary fiber (DF) and antioxidant capacity in fruits (pulp and oil) of a new açaí (Euterpe oleraceae) cultivar—‘BRS-Pará’, with a view to determine the possibility of using it as a source of antioxidants in functional foods or dietary supplements. Results show that ‘BRS-Pará’ açaí fruits has a high content of DF (71% dry matter) and oil (20.82%) as well as a high antioxidant capacity in both defatted matter and oil. ‘BRS-Pará’ Açaí fruits can be considered as an excellent source of antioxidant dietary fiber. Antioxidant capacity of açaí ‘BRS-Pará’ oil by DPPH assay was higher (EC50 = 646.3 g/g DPPH) than extra virgin olive oil (EC50 = 2057.27 g/g DPPH). These features provide açaí ‘BRS-Pará’ fruits with considerable potential for nutritional and health applications.  相似文献

During essential oil production from Alpinia zerumbet, large volumes of water and solid wastes are produced and subsequently discarded. An extraction protocol to obtain essential oil, dihydro-5,6-dehydrokawain (DDK) and enriched antioxidant phenolic extracts from fresh leaves or rhizomes of A. zerumbet and their wastes was developed. The main components determined in leaf oil were 1,8-cineol, camphor and methyl cinnamate, whereas rhizome oil mainly contained DDK and methyl cinnamate. The highest DDK content was found in the hexane extract of fresh rhizomes. Ethyl acetate extracts from leaves showed higher 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activities than those from rhizomes. Ethyl acetate extract from wastewater of leaves possessed the strongest inhibition to β-carotene oxidation. Ferulic and p-hydroxybenzoic acids were the major phenolics present in these extracts. The results indicate that disposed wastes produced during essential oil production from A. zerumbet leaves or rhizomes may be utilized in foodstuffs as a cheap source of natural antioxidants.  相似文献

The effect of reduced oxygen atmosphere and sodium acetate treatment on the microbial quality of seer fish (Scomberomorus commerson) steaks was determined during chilled storage (1–2 °C). The O2 absorber reduced the oxygen content in the pack to less than 0.01% corresponding to 99.96% reduction within 24 h. The use of O2 absorber with sodium acetate dip treatment (2% w/v) extended the sensory shelf life up to 25 days compared to only 12 days for control air packs and 20 days for untreated samples with O2 absorber. A prominent lag phase was observed for many bacterium studied, particularly for the sodium acetate treated samples with O2 absorber. On the day of sensory rejection, both the total mesophilic and psychrotrophic counts reached 7.7–8.1 and 7.1–7.9 log cfu/g, respectively. The sodium acetate treatment and reduced O2 atmosphere affected the type of major spoilers. In air packed samples, H2S-producers predominated followed by Brochothrix thermosphacta, Pseudomonas spp., where as in the untreated samples with O2 absorber, H2S-producers predominated the microbial flora followed by Lactobacillus spp. For treated samples with O2 absorber, B. thermosphacta formed the major micro-flora followed by Lactobacillus spp. The use of O2 absorber inhibited the growth of Pseudomonas spp., and total Enterobacteriaceae.  相似文献

The present study determined the chemical composition, fatty acid (FA) content and antioxidant capacity of meat from goats supplemented with Moringa oleifera leaves (MOL) or sunflower cake (SC) or grass hay (GH). The meat from goat supplemented with MOL had higher concentrations of total phenolic content (10.62 ± 0.27 mg tannic acid equivalent E/g). The MOL significantly scavenged 2,2′-azino-bis-3-ethylbenzothiazoline-6-sulfonic-acid (ABTS) radical to 93.51 ± 0.19% (93.51 ± 0.19%) and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical to 58.95 ± 0.3% than other supplements. The antioxidative effect of MOL supplemented meat on catalase (CAT), reduced glutathione (GSH), superoxide dismutase (SOD) and lipid oxidation (LO) was significantly (P < 0.05) higher than other meat from goat feed on grass hay or those supplemented with sunflower seed cake. The present study indicated that the anti-oxidative potential of MOL may play a role in improving meat quality (chemical composition, colour and lipid stability).  相似文献

The electrochemical behaviour and the antioxidant effectiveness of ascorbic acid (AA), caffeic acid (CA), quercetin (Q), catechin (Cat), hesperetin (H) and their equimolar binary mixtures were evaluated by means of cyclic voltammetry and luminol Co(II)–EDTA chemiluminescence, respectively, with a view to the prediction of a potential prooxidant or synergistic behaviour of mixtures of antioxidants. An important synergistic oxidation between Q and Cat was observed. The mixture CA/AA manifested the most prooxidant tendency among all the tested compounds and their mixtures. AA increased the antioxidant activity of Q and decreased that of Cat. Q and Cat regenerated CA, the prooxidant effect of the mixtures increasing with less e-delocalisation. Cat and CA have an antagonistic effect. H has the closest oxidation potential to CA and a slight increase of its antioxidant activity was registered when mixed with CA, which was not the case when it was combined with the other compounds or measured alone.  相似文献

Green, unripe olives were subjected to post-harvest treatment under a CO2 atmosphere for a period of 12 days. The total polyphenol (TP), total flavonoid (TFd) and total anthocyanin (TA) contents, along with the antioxidant and sensory characteristics, were continuously monitored during the treatment on a 24 h-interval basis, in order to identify possible changes in the quality of olives related mainly to changes in the polyphenolic contents. The storage of olives under CO2 atmosphere resulted in pronounced increases in TP and TF contents, mainly within the first 3-5 days, but TA exhibited a different pattern of evolution. Furthermore, storage under CO2 contributed to flavour appearance with the development of fruity/floral notes, and reduced bitterness. The in vitro antioxidant properties of the CO2-treated sample showed notable increases compared with the sample stored under regular atmospheric conditions. It was concluded that storage of olives under a CO2 atmosphere resulted in the appearance of desired sensory attributes, by decreasing bitterness and developing aroma and colour, and the functional (antioxidant) properties were improved. This approach may be used as an alternative, chemical-free means of table olive debittering.  相似文献

The mulberry (Morus alba L.) leaf is a promising dietary source of antioxidants such as quercetin due to its relatively high content of that compound. We investigated effects of an air-drying process on the antioxidant capacity and stability of antioxidant polyphenolic compounds in mulberry leaves. Main compounds playing a central role in antioxidant activities in mulberry leaves are quercetin glycosides and chlorogenic acid. Raw mulberry leaves were air-dried at various temperatures, and antioxidant activity using DPPH radical scavenging assay and levels of antioxidant compounds were measured. DPPH radical scavenging activity and levels of polyphenolic compounds in mulberry leaves air-dried at 60 °C or below were not significantly different from those of freeze-dried mulberry leaves, whereas both values in mulberry leaves air-dried at 70 °C and over decreased significantly. These results indicate that strict temperature control is important in the production of mulberry leaf products to maintain antioxidant activity and levels of polyphenolic compounds.  相似文献

The stability of five major phenolics, namely (−)-epicatechin (EC), procyanidin B2 (PC-B2), chlorogenic acid (ChA), hyperoside (HP) and isoquercitrin (IQ), in hawthorn fruits and a canned hawthorn drink were evaluated during 6 months of storage in the dark at three different temperatures (4, 23 and 40 °C). HPLC with a diode-array detector was used to determine the contents of the individual compounds. The results showed that the studied phenolics in the hawthorn fruits and the drink were both stable at 4 °C and relatively unstable at 23 and 40 °C with varied extents of degradation. At room temperature (23 °C), marked degradations of EC and PC-B2 were observed in both the fruits and the drink with around 50% and 30% decrease after a 6-month storage, respectively. A more significant decrease of the phenolics was observed at 40 °C, especially for EC and PC-B2, which were almost completely degraded after a 6-month storage. HP, IQ and ChA were relatively stable at 23 °C, but unstable at 40 °C. Therefore, low-temperature storage is recommended for maintaining the quality and efficacy of hawthorn fruits and its preparations.  相似文献

Wild berries of Hippophaë rhamnoides ssp. sinensis were collected from nine natural growth sites in China in three consecutive years in order to get an overall profile of the sugars, sugar alcohols, fruit acids, and ascorbic acid, and especially of the influence of the latitude and altitude of the growth place on these components. The contents of fructose, glucose, and l-quebrachitol in the berry juice varied in the ranges of 0.01-7.17, 0.05-7.85 and 0.21-1.09 g/100 mL, respectively, those of malic, quinic, and ascorbic acids were 1.55-8.84, 0.07-2.94, and 0.25-1.66 g/100 mL, respectively. The berries from Hebei and Inner Mongolia were characterized by high contents of sugars and l-quebrachitol and low contents of malic acid and ascorbic acid. In contrast, the berries from Sichuan and Qinghai contained lower contents of sugars and higher contents of malic acid and ascorbic acid than the berries from other growth areas. The berries from Sichuan differed considerably from others by the remarkably low contents of sugars and the exceptionally high contents of acids. The contents of fructose, glucose, and total sugar decreased as the altitude increased and as the latitude decreased (p < 0.05). In contrast, the contents of malic acid and ascorbic acid increased as the altitude increased and as the latitude decreased (p < 0.05). The contents of quinic acid and l-quebrachitol correlated strongly and positively with the latitude (p < 0.01).  相似文献

The effects of various thermal processing treatments (blanching, boiling and steaming) of red cabbage, Brassica oleracea L. ssp. capitata f. rubra cv. ‘Autoro’, were assessed for the levels of glucosinolates (GLS), total phenols (TP), total monomeric anthocyanins (TMA), l-ascorbic acid (L-AA) and soluble sugars, as well as for the antioxidant potential by the ferric reducing ability power (FRAP) and oxygen radical absorbance capacity (ORAC) assays. Individual native GLS were determined by ion-pair HPLC-MS/DAD. There were significant (p < 0.05) losses in blanched red cabbage: TP, 43%, TMA 59%, FRAP 42%, ORAC 51%, L-AA 48% and soluble sugars 45%. Boiling gave less extensive reductions: TP 16%, TMA 41%, FRAP 17%, ORAC 19%, L-AA 24% and soluble sugars 19%. Steaming caused no losses for TP, ORAC, FRAP or soluble sugars. However, significant reductions were found for TMA and L-AA, with 29% and 11%, respectively. In general losses were accounted for in the processing waters; however, TMA was not fully recovered, indicating degradation. Total GLS were severely affected by processing, with reductions of 64%, 38% and 19% in blanched, boiled and steamed red cabbage, respectively. Total aliphatic and indole GLS were similarly affected. Lost GLS were partially recovered in the processing water.  相似文献

Nine phenolic acids were identified and quantified by HPLC–MS in leaves and 10 in seeds of kale (black cabbage). The free, ester (methanol-soluble), glycoside and ester-bound (methanol-insoluble) phenolic acid contents of the leaves were 487, 532, 4989 and 6402 ng/g fresh weight, respectively. Ferulic and caffeic acids (total contents; 4269 and 4887 ng/g, respectively) were the most abundant. The seed contents of these fractions were 1993, 1477, 1231 and 4909 ng/g dry weight (DW), respectively, and sinapic acid was the most abundant (5037 ng/g DW). The fractions’ total phenolic contents, determined colorimetrically, were highly correlated with their DPPH scavenging capacity, and in antimicrobial activity assays, with nine test organisms representing a wide array of taxa, all of the fractions were effective against Staphylococcus aureus, Enterococcus faecalis, Bacillus subtilis and (most strongly) Moraxella catarrhalis. Antimicrobial and antioxidant activities of kale phenolics in free and conjugated forms are discussed.  相似文献

Artichoke (Cynara scolymus L.) is an edible vegetable largely used in the Mediterranean diet and in folk medicine. The present paper discusses the analysis of the polyphenol content of leaves and outer bracts of Violetto di Toscana artichoke using different extraction procedures with the aim of establishing a correlation between polyphenol subclasses and antioxidant activity measured on human LDL oxidized by copper ions. HPLC/DAD and HPLC/MS analyses revealed that both the matrixes contain identical polyphenol subclasses, with mainly quantitative differences. The antioxidant effect of four artichoke extracts decreases in the following order when the sum of total phenolic compounds was considered: ethanolic extract from leaves (IC50 = 2.92 ± 0.46 μM); ethanolic extract from outer bracts (IC50 = 4.04 ± 0.21 μM); ethyl acetate extract from leaves (IC50 = 4.91 ± 0.11 μM); ethyl acetate extract from outer bracts (IC50 = 10.18 ± 1.6 μM). IC50 were also calculated considering the concentrations of single polyphenol subclasses. In both cases, the potency of antioxidant properties was not related to the amount of total polyphenols or the single subclasses.  相似文献

The growth rate of Plodia interpunctella larvae feeding on wheat germ was highly dependent upon the water content in the diet. The water content in a cereal diet is established by the hygroscopicity of the dietary components and the relative humidity (r.h.) in the equilibrating atmosphere. The larval growth rates on wheat germ increased with corresponding increases in r.h. over the range of 40-85%. Similar changes in r.h. had a measurable, albeit minimal, impact on the time required for embryonic development and egg hatch. The water content of wheat germ was further increased by supplementing the germ with the humectant, glycerol. The larval growth rate increased with each incremental increase in dietary water content irrespective of whether it resulted from increases in r.h. or glycerol. However, glycerol supplementation provided an additional boost to the growth rate that was in addition to and distinct from the dietary water increase.  相似文献

Aroma is an essential factor affecting the quality of tea (Camellia sinensis) products. While changes of volatile compounds during tea manufacturing have been intensively studied, the effect of environmental factors on volatile contents of fresh tea leaves has received less attention. We found that C. sinensis var. Yabukita kept in darkness by shading treatment for 3 weeks developed etiolated leaves with significantly increased levels of volatiles, especially volatile phenylpropanoids/benzenoids (VPBs). Upstream metabolites of VPBs, in particular shikimic acid, prephenic acid, and phenylpyruvic acid, showed lower levels in dark treated than in control leaves, whereas the contents of most amino acids including l-phenylalanine, a key precursor of VPBs, were significantly enhanced. In addition, analysis by ultra performance liquid chromatography-time of flight mass spectrometry, capillary electrophoresis–time of flight mass spectrometry, high performance liquid chromatography, and gas chromatography–mass spectrometry indicated that volatile and non-volatile metabolite profiles differed significantly between dark treated and untreated leaves.  相似文献

Five different varieties of cauliflower (Brassica oleracea L. ssp. botrytis); two white (cv. ‘Aviso’, ‘Dania’), one purple (cv. ‘Grafitti’), one green (cv. ‘Emeraude’) and one romanesco/green pyramidal (cv. ‘Celio’) cultivar have been studied. All samples were thermally processed and the effects on the levels of glucosinolates (GLS), total phenols (TP), total monomeric anthocyanins (TMA), l-ascorbic acid (l-AA) and antioxidant capacities (FRAP and ORAC) were investigated. Processing methods applied were: blanching (3 min), boiling (10 min) and steaming (10 min). Total GLS were significantly (p < 0.05) affected by processing with the highest losses, 55 and 42% on average, occurring for boiled and blanched samples, respectively. Significant effects were also noted for steaming, but to a lesser extent, i.e. 19% average reduction. Antioxidant-related parameters were similarly affected with average losses of 27, 33, 36 and 46% in boiled cauliflower and 16, 21, 22 and 28% in blanched for TP, FRAP, l-AA and ORAC, respectively. Blanching and boiling reduced TMA in purple cauliflower by 38 and 53%, respectively. Steaming affected the antioxidant-related parameters the least for all cultivars. l-AA was significantly reduced by 14% in all cultivars by steaming. Some differences in behaviour between cultivars were noted, especially between white and coloured cultivars for TP, FRAP and l-AA, but also for some GLS. The main losses were caused by leaching into the processing water.  相似文献
