The evolution of intramuscular fat (IMF) and subcutaneous backfat (SB) content and fatty acid composition with age was investigated. A repeated sampling scheme (n=517) for longissimus dorsi (LM) and SB specimens was performed from 160 to 220 days on 216 purebred Duroc barrows. IMF content increased linearly with age at a rate of 0.05%/day, with major compositional changes occurring in C18:1 and C18.2, which increased and decreased by around 4%, respectively. Backfat thickness increase rate declined with age, showing similar compositional changes to IMF but halved in magnitude. Fat content itself also influenced fat composition. At a fixed age, both saturated (SFA) (C16:0) and monounsaturated (MUFA) (C18:1) increased with IMF but only SFA (C16:0 and C18:0) with SB. Aging mostly affected MUFA while fatness SFA. A delay in age at slaughter will enhance IMF and C18:1 in relation to overall fatness but at expense of decreasing body and loin growth rate. 相似文献

Sixteen gilts were fed a control (4% of sunflower oil) or an experimental diet (4% conjugated linoleic acid (CLA) oil). CLA had no effect on intramuscular fat (IMF) content neither in longissimus thoracis (LT) nor in semimembranosus (SM) muscles but increased liver weight, reduced perirenal fat and tended to reduce backfat between the last 3th–4th lumbar vertebrae. Despite the fact that 9c,11t and 10t,12c CLA isomers were included in the same proportion in the diet, the 9c,11t and 9c,11c were the isomers more deposited in all tissues. Addition of CLA in the diet affected fatty acid composition in a tissue specific manner, increasing percentages of SFA in all tissues, reducing percentages of MUFA in LT and LT subcutaneous fat, and of PUFA in LT subcutaneous fat, liver and SM. The FA modification by dietary CLA in LT IMF was reflected in the different lipid fractions, SFA and MUFA mainly in the neutral lipid fraction, and PUFA in the polar fraction. 相似文献

This study was conducted to determine the effects of dietary beef tallow, corn oil, and conjugated linoleic acid (CLA) on the distribution of fatty acids among positions within triacylglycerols. Crossbred barrows (n=6 per treatment group) received diets containing 1.5% beef tallow, 1.5% corn oil, or 1.5% CLA for 5 weeks. Subcutaneous adipose tissue samples were obtained immediately postmortem. The fatty acid composition was determined for the sn-2 positions of the triacylglycerols by digestion with Rhizopus arrhizus lipase. Fatty acids in the sn-1/3 position were calculated from these data. Feeding CLA increased (P<0.05) the concentration of total saturated fatty acids (SFA, especially 16:0) and isomers of CLA in adipose tissue lipids, but reduced (P<0.05) the concentration of total monounsaturated fatty acids (MUFA, especially 18:1n−9). Dietary CLA caused an accumulation of total SFA in the sn-1/3 position, with a proportional decrease in total MUFA and 18:2n−6 in the outer positions. Correspondingly, lipids extracted from CLA-fed pigs had slip points that were 10 °C higher (P<0.05) than those from corn oil- or tallow-fed pigs. These data suggest that dietary CLA increases the melting point of lipids in porcine adipose tissue by increasing the proportion of SFA at the sn-1/3 position of lipids. 相似文献

研究肌内脂肪(IMF)含量与肉质以及脂肪酸含量和组成比例之间的关系。以北京黑猪背最长肌(n=20)为实验材料,测定肌内脂肪含量、肉质以及脂肪酸含量和组成。结果显示,肌内脂肪含量与滴水损失呈显著正相关(p<0.05),与蒸煮损失、剪切力、肉色的相关性不显著(p>0.05)。随着肌内脂肪含量升高,除长链多不饱和脂肪酸(C20:3n6、C20:4n6)以外的大多数脂肪酸含量增加,相对比例也上升;多不饱和脂肪酸的含量增加,但是相对比例下降;长链多不饱和脂肪酸的含量和相对比例都降低。随着肌内脂肪含量的升高,饱和脂肪酸(SFA)和单不饱和脂肪酸(MUFA)的含量升高,回归方程斜率分别为197.3和248.31,多不饱和脂肪酸(PUFA)增加的幅度不大,回归方程的斜率为11.43。结果提示:肌内脂肪含量较低时(本实验平均值2.86%),对肉质的影响不显著。随着肌内脂肪含量升高,总脂肪酸含量(TFA)增加,主要归因于SFA和MUFA含量的增加。PUFA的含量相对稳定,受肌内脂肪含量变化的影响较小。 相似文献

This experiment was conducted to study the effect of vitamin A concentration in the diet on fatty acid composition in pigs. One-hundred and twenty eight Duroc × (Large White × Landrace) castrated male pigs were used. Pigs were randomly distributed and located in cages of four pigs each to the following treatment: vitamin A-enriched diet (100,000IU/kg) (n=16) and control diet with a basal level (7500IU/kg) (n=16). The pigs were slaughtered at an average weight of 125.9kg. No effect of diet vitamin A level on performance, carcass traits and intramuscular fat percentage was observed. The retinol concentration in subcutaneous backfat and retinol and retinol palmitate contents in liver were higher in the pigs that were given the vitamin A enriched diet than in those receiving the control diet. However the vitamin A supplementation did not increase the retinol content in the muscle. Pigs receiving the vitamin A enriched diet showed a higher C16:0 and ∑SFA proportions in the outer layer and C18:0 and ∑SFA proportions in the inner layer. Moreover, the diet rich in vitamin A led to a reduction of C18:1 n-9 and ∑MUFA proportions in subcutaneous backfat inner layer. Dietary vitamin A concentration had not influence on main fatty acids composition of intramuscular lipids. The concentrations of fatty acids were measured in intramuscular fat from the longissimus lumborum (LL) and triceps brachii (TB) muscles of Angus-cross heifers finished either on a high-concentrate ration in Washington, USA, (US cattle, n = 15) or on pasture in New Zealand (NZ cattle, n = 16). Half of the NZ cattle were of a similar age to the US cattle (NZAge) and half were of a similar weight (NZWt). Intramuscular fat levels were higher for the LL muscle and for the US cattle but only within the LL muscle (P < 0.05). Aspects of the fatty-acid patterns that are of relevance to human nutrition tended to favour the pasture-finished NZ cattle with lower n − 6/n − 3 fatty acid ratios (P < 0.001), higher concentrations of an anticarcinogenic conjugated linoleic acid (C18:2 c9,t11) (P < 0.05) and its precursor (trans-vaccenic acid, TVA) (P < 0.01), and lower levels of the 18-carbon trans monounsaturated fatty acids other than TVA (P < 0.01). Concentrations of 20 of the 22 fatty acids analysed differed significantly between the two muscles. When values were adjusted to a common intramuscular fat level by covariance, most of the group differences remained, but a number of the muscle differences became non-significant. For almost half the fatty acids considered, there was a significant interaction between treatment group and muscle, which indicates that the results for one muscle do not necessarily apply to other muscles, although the ranking of the groups was usually the same for both muscles. 相似文献

Repeated muscle sampling (n = 732) on 216 pigs was performed to evaluate the effect of live sampling and sample size on intramuscular fat (IMF) content and fatty acid (FA) composition. The sampling scheme consisted of 1–3 biopsies of longissimus dorsi (LM), a small and a big post-mortem sample of LM, and a big post-mortem sample of gluteus medius (GM). IMF was determined by quantitative gas chromatography after direct transesterification. Data on LM were jointly analyzed using a mixed model on age with heterogeneous residual variances across sampling methods. Biopsies overestimated IMF and polyunsaturated FA content and underestimated monounsaturated FA content with decreasing sample size. Potential for bias and not sampling variance is the major limitation of using live samples for assessing changes in IMF with age. Small post-mortem samples of LM were as informative as big samples of GM for inferring IMF content but not IMF composition. 相似文献

In this study, the effect of pasteurisation temperature on fatty acid composition of cheese was investigated. The fatty acid composition of raw and different heat‐treated milk, salt and salt‐free cheese were determined using cheese made from raw milk at temperatures varying between 70 and 90°C for 5 min. Generally, C 16:0 palmitic acid was the major fatty acid present in all milk and cheese samples. C 18:1 t11 vaccenic acid was the major trans fatty acid (TFA) in all samples. C 18:2 cis‐9, trans‐11 (Rumenic acid) was the major CLA isomer in these samples. Pasteurisation temperatures had no effect on TFA, CLA and fatty acid composition of the milk and cheese samples. 相似文献

The effect of dietary fat saturation (dFat) and dietary vitamin A (dVitA) level (0 IU vs. 100,000 IU) on performance, carcass characteristics and fatty acid composition in the offspring of two terminal sires: Duroc (DU) and Landrace × Large White (LD × LW) was studied. In the inner backfat layer, the DU-sired pigs had higher C16:0 proportion (P < 0.05) and tended (P < 0.07) to have higher total saturated fatty acids (SFA) and lower C18:1 n-9 proportions than LD × LW-sired pigs. An interaction sire line × dVitA was observed for intramuscular fat (IMF) content (P < 0.005). The effect of supplementation with the high dVitA level in DU-sired pigs was associated with a 20% increase in IMF while no effect was observed in LD × LW pigs. Fatty acid pattern was affected by dFat and sire line. In the inner backfat layer, LD × LW-sired pigs receiving the low dVitA level increased C18:0 proportions by 8% in comparison to animals receiving the high dVitA, whereas in DU-sired pigs the effect of vitamin A was opposite. It is concluded that the effect of dFat and dVitA concentration on IMF content and fatty acid profile of subcutaneous backfat and IMF is variable according to pig genotype. 相似文献

Lipid contents and compositions were measured in 35 pigs from seven genotype-sex groups with large variations in body composition. The animals were slaughtered at 115kg live weight, and the left side was separated into four primal cuts: belly, ham, loin, and shoulder. Samples of adipose tissues were taken from flare fat and from subcutaneous and intermuscular adipose tissues in each of the four cuts. In the loin, the outer and inner layers of subcutaneous adipose tissue were sampled separately. Total lipid content was lower in intermuscular than in subcutaneous adipose tissue. It was the highest in flare fat. There was a gradient of decreasing unsaturation from the outer layer of subcutaneous adipose tissue, to the inner layer, to intermuscular adipose tissue, to flare fat. The monounsaturated fatty acid concentrations followed the same pattern. There was a statistically positive correlation between the linoleic acid concentration of the different adipose tissues and the half carcass muscle content. 相似文献

Many studies with conjugated linoleic acid (CLA) indicate that it has a protective effect against mammary cancer. Because dairy products are the most important dietary sources of CLA, we have investigated the CLA concentrations and additionally the fatty acid profiles and chemical composition of several commercial, traditional, Greek yogurts from different geographical origin. The fat content of yogurts was in the order of goat < cow < sheep. Cow, sheep and goat milk yogurts contain respectively 0.128–1.501, 0.405–1.250 and 0.433–0.976 g CLA/100 g fat. Low-fat milk yogurts showed lower values of c-9, t-11 CLA content on lipid basis compared to full-fat yogurts. Samples from mountain areas showed average c-9, t-11 CLA content higher than those from prairie districts. The highest amounts of saturated fatty acids (SFA) were found in low-fat yogurts, of monounsaturated fatty acids (MUFA) in sheep milk yogurts and of polyunsaturated fatty acid (PUFA) in low-fat cow milk yogurts. 相似文献

Pigs of Belgian Landrace (B), Duroc (D), Hampshire (H), and Pietrain (P) breeds were slaughtered at 90, 110 and 130 kg body weight (BW) and the carcass chemical composition and fatty acid profiles of intramuscular fat of loin and backfat were determined. The carcass of Pietrain pigs had a higher concentration of protein and less fat than of B, D and H breeds. In tissues, the PUFA:SFA ratio was lower in the heavier (130 kg BW) than in lighter pigs (90 and 110 kg BW). This feature was higher in P pigs compared with the other breeds. The backfat had a higher concentration of PUFA:SFA ratio than intramuscular fat. The PUFA n− 6:n− 3 ratio was not affected by the breed and weight of pigs, but it was lower in backfat than in longissimus muscle fat. The protein concentration in the carcass was positively related to PUFA and negatively to SFA concentration in tissues. 相似文献

Pigs with a lean genotype were fed diets differing in protein and amino acid contents between 40 and 115 kg live weight. A high protein control regime (C) was compared with one supplying 11% less total protein but the same essential amino acid levels (LP1) and one supplying 16% less protein but lower amino acid levels (LP2). Regime LP2 produced fatter pigs in terms of subcutaneous, intermuscular and intramuscular fat (IMF), the latter measured in longissimus and semimembranosus muscles. The percentage of linoleic acid was lowest and that of oleic acid highest in IMF from LP2 pigs (11.57 and 34.59% respectively in longissimus). Pigs in regime LP1 had more longissimus IMF than C but similar semimembranosus IMF although both muscles had lower percentages of linoleic acid in LP1 than C, suggesting a tendency towards greater fat deposition in LP1. The objective of this study was to examine the relationship between polymorphisms of the heart fatty acid binding protein (H-FABP) gene and variation in intramuscular fat (IMF) content, fatty acid composition, and meat quality in Berkshire breed. We detected an association between IMF content and H-FABP HinfI restriction fragment length polymorphism (RFLP) genotype. The HH genotype showed the greatest IMF content among the genotype classes (P < 0.05). Regarding meat quality traits, only drip loss was significantly different among the H-FABP HinfI RFLP genotype classes (P < 0.01). In the case of fatty acid composition, the degree of saturation of fatty acids was greater in hh-genotype pigs than in HH and Hh genotypes. The H-FABP MspI RFLP genotype affected unsaturated fatty acid content, and the ratio of polyunsaturated fatty acid to saturated fatty acid (P < 0.05), whereas the H-FABP HaeIII RFLP genotype had no effect on fatty acid characteristics. 相似文献

Sixteen steers (441±31.7kg initial body weight) consumed two high concentrate diets with either 0 or 3% fish oil to determine the impact of fish oil, an omega-3 fatty acid source, on the fatty acid composition of beef carcasses. Collected tissue samples included the Longissimus thoracis from the 6th to 7th rib section, ground 10th to 12th rib, liver, subcutaneous adipose tissue adjacent to the 12th rib, intramuscular adipose tissue in the 6th to 7th rib sections, perirenal adipose tissue, and brisket adipose tissue. Including fish oil in the diet increased most of the saturated fatty acids (P<0.01) and proportions of polyunsaturated fatty acids (P<0.06), and decreased (P<0.01) proportions of monounsaturated fatty acids. Dietary fish oil increased (P<0.01) levels of omega-3 fatty acids in sampled tissues, resulting in lower (P<0.01) omega-6:omega-3 ratios. The weight percentages of C20:5 and C22:6 in tissue may provide the recommended daily allowance for humans. Fish oil may have a role in beef niche marketing if there are no deleterious effects on consumer satisfaction. 相似文献

The aim of this trial was to investigate the effects that dietary tannins have on lamb intramuscular fatty acids. Twenty-seven lambs were divided into three homogeneous groups: control group, receiving commercial concentrate based on maize; tannin group, fed a diet based on carob pulp (45% as fed basis); PEG group, receiving the same diet as the latter with addition of 42 g/kg of polyethylene glycol (PEG, a binding agent that eliminates the effects of condensed tannins). The duration of the trial was 45 d. Intramuscular fatty acids were measured in the longissimus dorsi muscle. The isomer cis-9 trans-11 of linoleic acid (conjugated linoleic acid or CLA) and linolenic acid were higher in the longissimus muscle fat from animals fed the control diet compared to the other groups (P < 0.0005); these fatty acids were higher in the fat from animals fed the carob diet supplemented with PEG compared to those fed the same diet without PEG (P < 0.05). trans-Vaccenic acid (C18:1 trans-11) was found at higher concentration in fat from control and PEG lambs compared to tannin lambs (P < 0.01); the CLA/C18:1 trans-11 ratio was lower in lambs fed control and PEG diets than in tannin-fed animals (P < 0.05). 相似文献

Seventy gilts were used to compare the effect of including 10% tallow (T), high-oleic sunflower oil (HOSF), sunflower oil (SFO), linseed oil (LO), a fat blend (FB), or an oil blend (OB) in finishing diets vs. feeding a semi-synthetic diet with no added fat (NF) on pig performance, carcass traits and carcass fatty acid (FA) composition. Carcasses from SFO-fed gilts had greater fat and lower lean compositions than carcasses from T-fed gilts. Gilts fed NF had greater loin fat than FB-fed gilts, and greater flare fat, loin intermuscular fat and fat:lean than T-fed gilts. Bellies from NF-fed gilts had lower lean and higher intermuscular fat and fat:lean than other diets except HOSF. Fat source had minor effects on animal performance, carcass characteristics and carcass fat content and distribution, whereas feeding NF resulted in carcasses and major cuts with higher fat content. Diets rich in polyunsaturated FA (PUFA) did not reduce fat deposition in separable fat depots with respect to monounsaturated FA (MUFA) and saturated FA (SFA). Carcasses from gilts fed NF had a high degree of saturation (40.6% SFA) followed by carcasses of T- and FB-fed gilts. Feeding HOSF, SFO and LO enriched diets elevated the percentages of MUFA (56.7%), n−6 (30.0%) and n−3 (16.6%) PUFA, respectively, whereas carcasses from gilts fed OB had greater percentages of n−3 FA (14.8% n−3, 0.9% EPA, 1.0% DPA, 3.1% DHA) than gilts fed FB (6.72% n−3, 0.1% EPA, 0.4% DPA, 0.1% DHA). 相似文献

Fatty acid (FA) composition of intramuscular fat (IMF) in M. Longissimus dorsi (LD) was measured in 72 steers from Angus (A), Charolais×Angus (CHA×A) and Holstein Argentine (HA) breeds. The steers were allotted to four dietary treatments of six animals each: T1, steers grazed on pasture; T2, steers supplemented with cracked corn grain (0.7% of live-weight) daily and free access to pasture; T3, steers supplemented with cracked corn grain (1% of live-weight) daily and free access to pasture; and T4, feedlot (concentrate based on corn, alfalfa hay and soybean meal without access to pasture). At slaughter weight, samples of LD at the 11th rib were used for intramuscular lipid analysis. The diet was shown to be more important than breed in determining FA composition. Pasture beef had higher percentages of saturated fatty acids (SFA), n-3 polyunsaturated fatty acids (PUFA) and conjugated linoleic acid (CLA) and lower percentages of IMF, monounsaturated fatty acids (MUFA), n-6 PUFA and n-6/n-3 ratios than feedlot beef. HA beef presented lower percentages of SFA and more MUFA with a higher n-6/n-3 ratio than A and CHA×A. Comparing grass and feedlot beef the amounts of FA in muscle (mg/100g) were, respectively 18:3 n-3 (44 vs. 11mg), CLA (20 vs. 12mg), 20:5 n-3 (20 vs. 11mg), 22:5 n-5 (20 vs. 11mg), 22:6 n-3 (12 vs. 6mg) and n-3 PUFA (84 vs. 32mg). Increasing conjugated linoleic acid (CLA) content of milk fat from lactating dairy cattle has become a research interest due to the possible health benefits afforded humans consuming CLA. Dietary supplementation of CLA to lactating dairy cows is one potential method by which CLA content of milk and dairy products may be enhanced. Feeding CLA in calcium salt form could potentially deliver CLA to the lower digestive tract through prevention of biohydrogenation by rumen microbes. Milk fat depression (MFD) occurs when cows receive CLA-60, a commercially available CLA source containing numerous CLA isomers, abomasally. Our objectives were to determine the quantity of CLA as calcium salts required to elicit maximal MFD and to evaluate the effects of CLA supplementation on fatty acid composition of milk fat. Five Holstein cows at approximately 93 DIM were utilized in a 5 x 5 balanced Latin square crossover design. Periods were 14-d in length with a 5-d treatment phase and 9-d rest phase. Treatments were 5-d supplementation of 0, 12.5, 25, 50, and 100 g of CLA-60 in calcium salt form. Milk samples were collected on d 5 of CLA supplementation and analyzed for composition and fatty acid profile. Regression analysis of milk fat data suggested that MFD was not maximized over the dose levels investigated, despite delivery of 34.5 g of trans-10, cis-12 CLA in the 100-g dose of CLA. Supplementation with 50 and 100 g of CLA per day resulted in a reduction of milk fat percent of 29 and 34%, respectively. Trend analysis indicated a linear decrease in the milk fat content of caprylic, capric, and lauric acids as the dose of CLA increased. Milk fat content of cis-9, trans-11, and trans-10, cis-12 CLA increased at an increasing rate as dose increased. 相似文献
