The main objective of this study was to evaluate the effects of ewe dietary treatments on the intramuscular fatty acid composition of suckling lambs. Twenty-four pregnant Italian Merino ewes were divided into two equal groups. One group (pasture-fed group) was allowed to graze a natural pasture and the other group (stall-fed group) was penned indoors and fed with hay and concentrate. After lambing, all ewes stayed with their respective lambs for the whole experimental period. Lambs were slaughtered at 100 days of age with an average live weight of 20kg. Fatty acid profiles of milk and lamb meat (longissimus lumborum muscle) were analysed. Intramuscular fat from pasture-fed lambs showed higher (P<0.001) proportions of polyunsaturated fatty acids. The percentage of lauric (C12:0; P<0.05), palmitic (C16.0; P<0.001) and oleic (C18.1; P<0.001) fatty acids were higher in the intramuscular fat from stall-fed lambs, whereas pasture-fed lambs showed greater proportions of linolenic (C18:3; P<0.001), eicosapentaenoic (C20:5; P<0.001) and docosapentaenoic (C22:5; P<0.05) fatty acids. Moreover, the intramuscular fat from pasture-fed lambs displayed a higher (P<0.001) PUFA/SFA ratio, and a lower (p<0.001) n-6/n-3 ratio. The conjugated linoleic acid (CLA) tended to be higher (P=0.07) in the intramuscular fat from pasture-fed lambs. This study confirmed that pasture enhanced the unsaturated fatty acid profile of intramuscular fat in lambs including n-3 fatty acids.  相似文献

The main objective of this study was to evaluate the effects of supplementing lactating ewe diets with extruded linseed on the fatty acid (FA) composition of intramuscular and subcutaneous fat depots of suckling lambs. Twenty-four pregnant Churra ewes were divided into two groups based on the milk production, age, body weight and parity, and assigned to one of two treatments. Each ewe of the Control treatment was supplemented with 70 g/day of FAs from a calcium soap of palm oil, while the other treatment group (Lin) was supplemented with 128 g/day of extruded linseed. All lambs were reared exclusively on milk and were slaughtered when they reached 11 kg live weight. FA profiles of ewe milk, lamb meat and subcutaneous adipose tissue were determined by GC. Lamb performance was not affected by the treatments. Muscle fat and adipose tissue from the Lin treatment showed higher proportions of polyunsaturated fatty acids (PUFA). The percentages of α-linolenic (C18:3 n − 3), docosahexaenoic (C22:6 n − 3), vaccenic (trans-11 C18:1) and rumenic (cis-9, trans-11 C18:2) acids in both fat depots were higher in Lin than in Control suckling lambs. Furthermore, meat fat from Lin carcasses displayed a lower n − 6/n − 3 ratio than Control samples. Intramuscular depots clearly showed a greater content of PUFA, including cis-9, trans-11 C18:2, and a lower n − 6/n − 3 ratio than subcutaneous fat. The results from this study demonstrate that dietary extruded linseed supplementation of lactating ewes enhances the nutritional quality of suckling lamb fat depots such as intramuscular and subcutaneous fats.  相似文献

The aim was to evaluate the effect of maternal rearing system on the chemical composition and odour profile of meat from suckling lamb. Twenty-four single male suckling lambs raised exclusively on maternal milk came from two rearing systems (extensive and intensive), and from Castellana and Churra breeds. The fatty acid composition of lamb meat from both breeds was affected by the rearing system, and Churra lamb reared under the extensive system had noticeable changes in odour attributes as detected by panellists and an electronic nose. Using partial least squares-discriminant analysis, the electronic nose was able to discriminate accurately between samples of Churra and Castellana meat according to their production system. However, it was not able to correctly classify meat samples from the extensive and intensive systems when both breeds were analysed together. The results suggest a significant effect of the rearing system and breed on suckling lamb meat quality traits.  相似文献

An experiment on PDO (Protected Designation of Origin) Fiore Sardo cheese making was carried out to assess the influence of rennet paste on cheese quality. Four different preparations of lamb rennet paste (A, B, C and D) were used. Rennet A came exclusively from suckling lambs slaughtered immediately after suckling, rennet B from suckling lambs not fed for 12 h, and rennets C and D from suckling lambs allowed to graze and slaughtered in the same way as A and B, respectively. In vitro lipolysis and multiple cheese-making trials were carried out for each rennet. The enzymatic composition of the prepared rennets was different. Lipolytic activity was assessed in vitro by measuring the quantity of free fatty acids released by hydrolysis of a sheep milk cream substrate. Rennet A had the greatest lipolytic activity, which had a strong preference for esters of short-chain fatty acids. The cheeses made using the different rennets did not differ significantly in their moisture, protein and fat content or in the nitrogen fractions which resulted from proteolysis. The cheese produced with rennet A had the highest lipolysis. Short-chain fatty acids, in particular butyric acid, were prevalent, as they were in the in vitro trials. The diet and the presence of milk in the abomasa was responsible for the enzymatic peculiarities of rennet A. Suckling stimulated the secretion of pre-gastric lipase from the pharingeal tissue. Thus, if one wishes to produce a rennet with the particular enzymatic composition necessary for a particular cheese, the diet and the slaughtering conditions of the lambs should be controlled.  相似文献

Eighty eight lambs were used in a 2 × 2 factorial arrangement 1) to investigate the effect of maternal dietary linseed supplementation and/or lamb linseed supplemented concentrate on growth performance, carcass fat quality and fatty acid (FA) composition of muscle and dorsal adipose tissue of indoor lambs 2) to study the relationships between subcutaneous fat quality and FA composition. Feeding linseed to ewes increased C18:3 n-3 (ALA) proportion in milk and therefore the ALA supply to suckling lambs. However, ALA and n-3 polyunsaturated FA (n-3 PUFA) proportions in lamb tissues were not affected. Feeding linseed to lambs during the post-weaning period significantly increased the proportions of ALA and n-3 PUFA in tissues. Softer and more colored fat was associated with a decrease in even medium-chain saturated FA and increases in odd and methyl FA proportions but not with ALA proportion in subcutaneous adipose tissue.  相似文献

The effects of a diet with goat milk "GM" or milk replacer "MR" on the meat quality and fat composition of suckling Murciano-Granadina kids were studied. MR consisted of powdered skimmed milk, coconut oil and fat, and cereal products and by-products. Raw meat quality (moisture, protein, lipids, ash, collagen, cholesterol, haem pigments, CIELab colour, pH and water retention capacity), fatty acid "FA" composition and eating quality of cooked meat (odour, flavour and texture) were determined. Diet had only a slight effect on raw meat quality but had a pronounced effect on fatty acid composition and eating quality of cooked meat. MR diet increased the water/protein proportion in the muscle. The saturated/unsaturated FA ratio in GM and MR fat was 0.94 and 2.27, respectively. The major FA in GM and MR fat were C16:0 and C18:1, respectively. Short-chain C4-C12 hardly accumulated in the adipose tissue of suckling kid, increasing the relative percentages of C14-C20. This effect was more pronounced in MR fat, due to the fact that MR contained more short-chain fatty acids than GM. MR diet gave cooked meat a more intense characteristic goat meat odour and flavour, more tenderness and more juiciness than the natural suckling diet. We investigated whether the inhibition of milk ejection during and/or between machine milkings is responsible for the low milk fat observed in commercial milk obtained from dairy ewes managed with a mixed system (MIX) of partial daily suckling (10 h) and once daily machine milking (after 14 h of udder filling). East Friesian crossbred dairy ewes were randomly allocated postpartum to the MIX system (n = 9) or to exclusive twice-daily machine milking (DY1, n = 8). Following wk 4, MIX ewes were permanently weaned from their lambs and milked twice daily. All ewes were injected with saline, oxytocin, or an oxytocin-receptor antagonist prior to three morning milkings during wk 2,4, and 6 of lactation to study cisternal and alveolar milk distribution. Overall milk yield (cisternal + alveolar) for MIX ewes was 42% greater than for DY1 ewes during wk 2 and 4, which demonstrates the beneficial effect of lamb suckling on milk production of dairy ewes. However, during normal machine milking, only the cisternal fraction was obtained from MIX ewes, confirming that milk ejection did not occur for as long as these ewes remained in partial daily contact with their lambs. Although the volume of milk stored within the cistern, and its concentration of milk protein was similar for the two weaning systems, milk of MIX ewes was significantly inferior in cisternal milk fat concentration and yield compared to DY1 ewes. This provides evidence that not only is there inhibition of milk ejection during machine milking of MIX ewes, there is additional inhibition of transfer of milk fat, but not milk protein, from the alveoli to the cistern during the evening when MIX ewes a reseparated from their lambs. Following weaning of MIX ewes, the majority of lactation traits studied were similar compared to DY1 ewes.  相似文献

Pooled milk samples from 115 Bergamasca meat sheep were collected aseptically five times from lambing to weaning to determine the prevalence of intramammary infection, somatic cell counts and milk quality parameters (protein, fat and lactose), and effects of infection on lamb weight gain. The global prevalence of subclinical intramammary infection was 51.2%. The Staphylococcus genus was responsible for the greatest prevalence (53.3% among infected udders). Staphylococcus aureus was isolated in 8.4% of infected milk samples. Infection status had significant effects on fat and protein percentage and on somatic cell count. Lamb growth was greatest for lambs of ewes with no infection and decreased as the number of infected samples increased. No significant differences were detected in the growth of lambs with dams infected by different bacterial species.  相似文献

Total mixed rations containing corn silage (CS) or forage sorghum silage (SS) were fed to mid-lactation Holstein cows to determine the effects on feed intake, lactation performance, milk composition and fatty acid profile, nutrient digestibility, blood metabolites, rumen microbial N synthesis, and antioxidant status. The experiment was designed as a 2-period change-over (two 28-d periods) trial with 2 diets including CS diet or SS diet and 12 cows. Total replacement of CS with SS had no significant influence on dry matter intake. Substituting CS with SS had no effect on milk production, feed efficiency, and milk concentrations of fat, protein, lactose, and solids-not-fat, whereas yields of milk fat, protein, and lactose were greater for cows fed the CS diet. Blood parameters including glucose, albumin, cholesterol, triglyceride, total protein, urea N, and fatty acids were not affected by the dietary treatments. Apparent digestibility coefficients of dry matter, organic matter, crude protein, ether extract, neutral detergent fiber, and acid detergent fiber were not significantly influenced by the diets. Replacing CS with SS had no effect on total saturated fatty acids and total monounsaturated fatty acids, whereas total polyunsaturated fatty acid percentage was greater with the SS diet. Proportions of C20:0, C18:3n-3, and C18:3n-6 were affected by feeding SS. Cows fed CS had a greater amount of urinary purine derivatives. Feeding SS had a positive effect on total antioxidant capacity of blood and milk. In conclusion, SS can be fed to lactating Holstein cows as a total replacement for CS without undesirable effects on animal performance, but with positive effects on antioxidant capacity and polyunsaturated fatty acids of milk. This forage can be an excellent choice for dairy farms in areas where cultivation of corn is difficult due to water shortage.  相似文献

This study evaluated the effect of a blend of synthetic antioxidants on the yield of milk and milk components and milk fatty acid composition in dairy cows fed a diet designed to cause milk fat depression (MFD). We hypothesized that supplementing a synthetic antioxidant to diets with a high rumen unsaturated fatty acid load (RUFAL) would decrease the severity of MFD. Sixteen lactating Holstein cows (163 ± 47 d in milk), in a crossover design with two 21-d periods, were fed a corn silage and grass silage-based diet containing 15% distillers grains. The diet contained 34% neutral detergent fiber, 18% crude protein, 26% starch, and 4.3% total fatty acids (dry matter basis). Cows were fed the diet without supplementation (control; CON) or supplemented with 0.02% (dry matter basis) of a synthetic antioxidant (AOX; Agrado Plus, Novus International Inc., St. Charles, MO). Dry matter intake and milk yields were recorded daily. Milk samples were collected at the start of the study for baseline values and the end of each period (d 20–21) and analyzed for milk components and fatty acid composition. Dry matter intake and milk yield were unaffected by treatment and averaged 25.9 and 50.2 kg/d, respectively. Similarly, we observed no effect of treatment on yields of fat, protein, lactose, 3.5% fat-corrected milk, energy-corrected milk, feed efficiency, body weight, or body condition score. Milk fat concentration and yield were both reduced by the high RUFAL diets. We observed a tendency for AOX to increase the concentration of milk fat and decrease the concentration of milk protein. Yields of de novo and preformed fatty acids were not affected by treatment, although we detected a trend for a slight increase in the yield of 16-carbon fatty acid for AOX compared with CON. Treatment had only minor effects on individual milk fatty acids, except for the concentration and yield of linoleic acid, which were over 90% higher for AOX compared with CON. In conclusion, milk fat concentration and yield were reduced by a high RUFAL diet containing 15% distillers grains; however, supplementation with AOX did not overcome the MFD induced by this diet.  相似文献

Forty-nine male Talaverana-breed suckling lambs slaughtered at 14 kg live weight were used to study the fatty acid composition of adipose depots of lambs raised under different management systems (pasture or drylot) and diets (maternal milk with or without a concentrate supplement). Drylot lambs displayed a higher fatness score, in addition to greater dorsal fat thickness; these parameters corresponded with a greater percentage of total fat at dissection. Addition of concentrate to the diet did not modify carcass fatness. Drylot lambs presented higher proportions of oleic acid (C18:1) and monounsaturated fatty acids (MUFA) and lower linolenic acid (C18:3) values in subcutaneous and intramuscular fat (muscle longissimus thoracis). The subcutaneous fat of these lambs thus displayed a higher n-6/n-3 PUFA ratio (C18:2/C18:3) than that of pasture-raised ones. Concentrate in the diet of both pasture and drylot lambs resulted in higher linoleic fatty acid (C18:2) and PUFA values and a greater PUFA/SFA ratio in intramuscular fat than the corresponding values of lambs which consumed maternal milk alone. Loin displayed a higher percentage of subcutaneous and intramuscular chemical fat than leg. Compared with intramuscular leg fat (muscle quadriceps femoris), intramuscular loin fat (muscle longissimus thoracis) had lower oleic acid (C18:1) and MUFA values, higher PUFA values and a higher PUFA/SFA ratio, due to greater linolenic acid (C18:3) levels.  相似文献

East Friesian crossbred ewes (n = 99) and their lambs (n = 232) were used to study the effects of three weaning systems on milk production and lamb growth. Prior to parturition, a ewe and her lambs were assigned to one of the following three treatments for the first 28 +/- 3 d of lactation: 1) ewes weaned from their lambs at 24 h postpartum, ewes machine milked twice daily, and their lambs raised artificially (DY1); or 2) beginning 24 h postpartum, ewes separated from their lambs for 15 h during the evening, ewes machine milked once daily in the morning, and their lambs allowed to suckle for 9 h during the day (MIX); or 3) ewes not machine milked and exclusively suckled by their lambs (DY30). After the treatment period, lambs were weaned from MIX and DY30 ewes, and all three groups were machine milked twice daily. Daily commercial milk yield and milk composition were recorded weekly or twice monthly, and lambs were weighed at weaning or at 28 d and at approximately 120 d of age. Average lactation length (suckling + milking period) was 183 +/- 5 d and was similar among weaning systems. Differences among weaning systems for milk yield, milk fat and protein percentages, and somatic cell count were highly significant prior to and around weaning, and became nonsignificant by 6 wk in lactation. Total commercial milk production was greatest for DY1 and MIX ewes (261 +/- 10 and 236 +/- 10 kg/ewe, respectively) and least for DY30 ewes (172 +/- 10 kg/ewe). Daily gain of lambs to 30 d and weight at 30 d were similar regardless of weaning system; however, by 120 d, DY30 lambs tended to be heaviest, MIX lambs intermediate, and DY1 lambs lightest (47.3 +/- 1.6, 45.9 +/- 1.8, and 43.7 +/- 1.2 kg, respectively). Overall financial returns for milk and lamb sales were greatest for the MIX system because of the increase in marketable milk during the first 30 d of lactation compared with the DY30 system and because of acceptable 120-d lamb weights without the expenses of artificial rearing compared with the DY1 system. A mixed system of suckling and milking during early lactation appears to be a valuable management tool for dairy sheep production.  相似文献

Flaxseed supplementation improves fatty acid profile of cow milk   总被引:2,自引:0,他引:2  
The objective of the study was to determine the effects of adding flaxseed or fish oil to the diet on the milk fatty acid profile of cows. The experiment was conducted in the summer of 2006 and involved 24 Friesian cows that were divided into 3 groups of 8 animals according to different type of fat supplementation: a traditional diet with no fat supplementation, a diet supplemented with whole flaxseed, and a diet supplemented with fish oil. Results suggested that whole flaxseed supplementation positively affects the milk fatty acid profile during summer. In particular, milk from cows receiving flaxseed supplementation showed a decrease in saturated fatty acid, an increase in monounsaturated fatty acid, and, together with the milk from fish oil-supplemented cows, an increase in polyunsaturated fatty acid content compared with milk from control cows. As expected, both fish oil and flaxseed supplementation increased the content of n-3 polyunsaturated fatty acids in milk fat. The increased dietary intake of C18:3 in flaxseed-supplemented cows resulted in increased levels of milk C18:1 trans-11 and increased conjugated linoleic acid C18:2 cis-9,trans-11 by Δ9-desaturase activity. Milk from flaxseed-supplemented cows together with the high conjugated linoleic acid content was characterized by low atherogenic and thrombogenic indices, suggesting that its use has less detrimental effects concerning the atherosclerosis and coronary thrombosis risk associated with the consumption of milk and dairy products. In conclusion, flaxseed supplementation improves composition and nutritional properties of milk from cows milked during times of high ambient temperature.  相似文献

Diets with and without added fat and with different amounts of soluble and insoluble calcium were fed to rumencannulated cows to determine roles of fat and calcium in formation of insoluble calcium soaps in the rumen. Percent of total fatty acids in soap was increased only by addition of soluble calcium (CaCl2). The amount of fatty acid in soap was highly dependent on amount of fat in the rumen and was not changed by calcium addition. Concentration of ionized calcium in rumen content was halved by fat addition and was inversely correlated with rumen pH, whereas proportion of fatty acid in soap was directly related to pH. Rumen pH was lower 8 to 12 h postfeeding when calcium was added to the diet, which was related nonsignificantly with total volatile fatty acid concentration. Addition of fat to diets tended to lower the ratio of acetic to propionic acids in the rumen; this trend was reversed by calcium addition. Beneficial effects of added calcium in high fat diets were not caused by increased calcium soap formation in the rumen.  相似文献

A 3 x 3 Latin Square experiment was designed to compare 2 ways of bypassing the effects of the rumen with olive oil fatty acids in 'Manchega' dairy ewes. Treatments were a control diet, CaOFA (control diet plus 45 g of olive fatty acids as calcium soap), and OO (control plus 45 g/d of olive fatty acids as olive oil emulsified in skim milk) and bottle-fed to animals trained to maintain the reticular groove reflex). No differences were found in milk, protein, and lactose yields, but fat yield and milk fat content were greater in treatments with added fat (CaOFA and OO). Content of short- and medium-chain fatty acids in milk fat was greater for control treatment than for the other 2 groups, the yield of these fatty acids being similar for all 3 diets, except that of C12:0, which was greater for the control treatment. Content and yield of C18:0 and isomers of C18:1 others than oleic acid were greater in milk from the CaOFA diet than from the other 2 diets. Oleic acid content and yield were greater in milk after OO treatment (23.9% and 16.8 g/d, respectively), intermediate after CaOFA treatment (19.2% and 13.8 g/d, respectively), and lower after control diet (10.7% and 6.52 g/d, respectively). Linoleic acid yield and content were greater in ewes fed the OO diet than in those on the other 2 diets, both of which showed similar data. All these changes indicated that the "protected" olive fatty acids (as calcium soap) were severely affected by the rumen environment and that the use of the reticular groove reflex seems to be a more effective way of bypassing the rumen in adult lactating dairy ewes.  相似文献

The nutritional and rheological properties of butter depend on the fatty acid composition of milk. Therefore, feeding oilseeds rich in unsaturated fatty acids is likely to affect butter properties. The aim of this trial was to examine to what extent feeding the linolenic acid-rich cruciferous plant camelina can affect the fatty acid composition of dairy products and the properties of butter. A control diet composed of 60% corn silage-based ration and completed with high-energy and nitrogenous concentrates was compared with 2 experimental diets designed to provide the same amount of polyunsaturated fatty acids via either camelina seed (630 g/d, CS diet) or camelina meal (2 kg/d, CM diet). The diets were isoenergetic and isonitrogenous. The trial followed a double 3 × 3 Latin-square design with 4-wk periods on 6 Holstein dairy cows. The camelina diets tended to decrease dry matter intake but did not have a significant effect on milk production. They generated a slight decrease in milk protein and a strong decrease in milk fat yield and content. The CM diet led to a stronger decrease in fat content. Camelina generated a greater proportion of monounsaturated fatty acids, notably C18:1 trans isomers, including trans-10 and trans-11 C18:1, which increased by 11.0- and 2.6-fold, respectively, with the CM diet. Camelina also led to an increase in conjugated linoleic acids, particularly rumenic acid, cis-9, trans-11 C18:2. Camelina did not affect parameters of buttermaking except churning time with milk from CM fed cows, which was longer. The butters of camelina diets were softer at all temperatures tested, especially with the CM diet. In conclusion, feeding camelina can modify milk fatty acid profile and butter spreadability.  相似文献

The present work evaluates the ability of lactic acid bacteria isolated from goat’s and ewe’s milk and cheeses to synthesise short-chain fatty acid esters. In order to elucidate the mechanisms of ester synthesis involved, cell-free extracts were incubated in sodium phosphate buffer containing triglyceride plus ethanol (alcoholysis) and free fatty acid plus ethanol (esterification). After 24 h incubation at 37 °C esters were extracted and determined by gas chromatography. Strains evaluated were able to synthesise ethyl esters from 2 to 10 carbon atoms, mainly ethyl butanoate and ethyl hexanoate. A great variability amongst strains was observed. In general, higher ester-forming activities by esterification were detected. In enterococci strains the alcoholysis mechanism was also involved.  相似文献

Control (CL) and select line (SL) dairy cows (n = 22) managed identically but differing in milk yield (>4100 kg/305 d) were used to determine differences in milk fatty acid profile as lactation progressed. Milk yield was recorded daily and milk samples were collected during wk 1, 4, 8, 12, and 16 postpartum for milk composition analysis. Milk samples from wk 1, 8, and 16 were also analyzed for fatty acid composition. Select-line cows produced more milk (44.4 vs. 31.2 kg/d) and milk components than CL cows during the 16-wk period. There was no difference in rate of milk yield increase, but peak milk yield for SL cows was greater and occurred later in lactation. There were no differences in milk SCC or milk fat, protein, or lactose content. Selection for milk yield did not affect the content of most individual milk fatty acids; however, compared with CL, SL cows had a reduced Delta(9)-desaturase system and tended to produce milk with lower monounsaturated fatty acid content. Selection for milk yield did not affect milk fatty acid origin but the percentage of de novo fatty acids increased and preformed fatty acids decreased as lactation progressed. Milk fat trans-11 18:1 and cis-9,trans-11 conjugated linoleic acid increased with progressing lactation (10.7 vs. 14.1 and 3.1 vs. 5.4 mg/g, or 31 and 76%, respectively) and were correlated strongly among wk 1, 8, and 16 of lactation. Temporal changes in the Delta(9)-desaturase system occurred during lactation but these changes were not correlated with milk fat cis-9,trans-11 conjugated linoleic acid content. Results indicate prolonged genetic selection for milk yield had little effect on milk fatty acid composition, but milk fatty acid profiles varied markedly by week of lactation.  相似文献

Conjugated linoleic acid (CLA) has a range of biological properties, including effects on lipid metabolism, milk and body composition in animals. This study investigated the effects of dietary CLA on lactating rats and development of the suckling pups. Dams were fed either a control diet or the same diet supplemented with 25 g/kg of a fat supplement containing 540 g CLA/kg (final concentration of 13.5 g CLA/kg diet) from parturition to the 15th day post-partum. The CLA mixture used in this study contained the following isomers (per 100 g): cis-9, trans-11 (24 g); cis-10, trans-12 (35 g); cis-8, trans-10 (15 g); cis-11, trans-13 (17 g) and others (9 g). On d 15 post partum, CLA supplementation reduced milk fat content by 33% and pup growth by 21%. The milk fatty acid profile, with decreased content of short and medium chain acids, suggests CLA inhibition was more pronounced for de novo lipid synthesis. Consistent with these results, activities of fatty acid synthase, glucose 6-phosphate dehydrogenase and 6-phosphogluconate dehydrogenase were reduced by CLA treatment in the mammary gland and liver. The effects of lamb age and diet on volatiles from fat are described. Rendered fat from ram lambs raised on ewe's milk then a corn-based diet was compared with that from lambs raised on milk and a pasture of grass/clover, six treatments in all. An additional treatment comprised very old ewes maintained on pasture. Helium-borne volatiles of rendered fat were resolved on a DB5 gas chromatographic column and the mass spectra obtained. Long chain alka(e)nes like neophytadiene were dominant in pasture treatments especially where the lamb growth rate was slow. Branch chain fatty acids (4-methyloctanoic, 4-methylnonanoic and an unidentified acid) were also highest in these treatments. Longer chain aldehydes like 2-undecenal were good indicators of a grain diet. Hexanal, commonly associated with rancid odours, was unaffected by treatment. The diketone 2,3-octanedione was an excellent indicator of a pasture diet, as was 3-methylindole (skatole). Phenols showed complex relationships to treatments, but were generally more common in pasture treatments. Benzenethiol (thiophenol) was unaffected by treatment. Inspection of principal component analysis plots identified 10 volatile compounds as contenders for the cause of sheepmeat odour; branch chain fatty acids were confirmed as the leading chemical class. There were indications that puberty or age caused an increase in the odorous 4-methylnonanoic acid. Animal odour-the odour of confined livestock-was clearly causally linked to 3-methylindole, a rumen breakdown product of tryptophan. 3-Methylindole was also responsible for rancid odour, rather than hexanal and its analogues. A hypothesis is advanced that links 2,3-octanedione formation to the enzyme lipoxygenase and linolenic acid, both abundant in green leafy tissue. Overall, the data confirm that sheepmeat odour/flavour is specifically linked to the branch chain fatty acids, and is probably exacerbated by pasture-derived 3-methylindole and alkyl phenols.  相似文献
