春节时,吃年糕做年糕一直是家家户户乐此不疲的事情。年糕象征着"年年高"的美好寓意,所以年糕理所当然的成为了过年时最为应景的食品之一,而吃年糕的习俗究竟始于何时,恐怕已无从考证,但年糕作为一种祝福则长长久久的留存了下来。俗话说:"百里不同风,千里不同俗。"年糕的做法、吃法、种类、口味在大江南北风格各异,其中具有代表性的有北方的白糕、塞北农家的黄米糕、江南水乡的水磨年糕等。至于做法,北方年糕有蒸、炸两种,均为甜味;南方年糕除蒸、炸外,尚有片炒和汤煮诸法,味道则甜咸皆有。对于现代人来说,年糕早已不仅仅为了满足果腹之需,而是更多地被赋予了象征意义:对于漂泊在外的游子来说,年糕代表了一份对家乡的思念;对于儿女在外的老者而言,年糕则代表了合家的团圆;对于全家欢聚的人来说,年糕代表了一种祝福、一份希望!总之,在这个辞旧迎新的日子里,有年糕总是好的…… 相似文献

Puffed rice cakes were produced from a blend of ground black rice (GBR) and medium‐grain brown rice (GMBR) by using a rice cake machine. Effects of moisture content, heating temperature and heating time on quality of the black rice cake were investigated. The specific volume of black rice cakes showed an increasing trend with increasing tempering moisture, heating temperature and heating time. The hardness of puffed black rice cake decreased as tempering moisture and heating time increased, and was influenced more by GMBR content than heating temperature. In general, the black rice cake lightness and yellowness decreased steadily with increasing GBR content, while tempering moisture, heating temperature and heating time did not significantly affect the colours of black rice cake. On the contrary, the redness increased with increasing GBR contents. The weight loss during tumbling was not found at all puffing conditions. 相似文献

Manufacture and Characterization of Gua-Nai: A New Dairy Food Produced with an Oriental-Type Culture

Gua-nai is a sweet-set gel produced from pasteurized whole or skim milk. The milk-clotting enzymes were elaborated from Chinese wine cake culture raised on steamed glutinous rice (sweet rice). The organisms involved were isolated and identified as Amylomyces rouxii, Rhizopus oryzae, Aspergillus oryzae, and a single yeast, Endomycopsis burtonii. These organisms were employed in the reconstitution of the wine cake culture using sweet rice flour as the medium. During the rice fermentation, a clear, effervescent, pale yellow liquid phase appeared exhibiting both proteolytic and milk-clotting activities and containing ethanol. Taxonomic studies of the mycoflora of the fermenting rice also revealed a gradual disappearance of the filamentous molds, leaving only the yeast in the medium at completion of fermentation. A consumer taste panel did not indicate significant differences between gua-nai made with commercial wine cake culture and that made with the culture reconstituted from isolated microorganisms. 相似文献

目的 探究菊芋全粉添加量与米发糕品质特性之间的相关性。方法 在米发糕中添加不同比例(5%、10%、15%、20%、25%)的菊芋全粉,测定其贮藏过程(0、1、3、5、7 d)中感官品质、质构特性和体外消化特性等指标,探究菊芋全粉与米发糕品质指标之间的相关性。结果 与未添加菊芋全粉的米发糕相比,菊芋全粉的添加降低了米发糕的硬度、粘性和咀嚼性,感官评分从81.91下降到70.91,而米发糕抗性淀粉从26.02%增加至34.59%。菊芋全粉的添加能有效减缓米发糕在贮藏期间质构的劣变,贮藏第7d时,添加15%菊芋全粉的米发糕感官评分(80.83)高于对照组(66.57),且添加10%菊芋全粉的米发糕抗性淀粉高达42.23%。通过相关性分析,回复值、弹性和粘聚性是影响米发糕感官品质的主要因素,其中弹性与米发糕感官评分呈极显著负相关(P<0.01)。结论 添加菊芋全粉可有效提升米发糕的感官品质及抗消化特性,并能有效减缓米发糕在贮藏期间的质构劣变,同时也丰富了米发糕品种多样性,可为菊芋资源的开发和高值化利用、发糕制品的深度研究提供理论参考。 相似文献

Effect of heat-moisture treatment (HMT) of brown rice flour on the quality and digestibility of Korean rice cake (jeolpyeon) was investigated. Brown rice flour with 20% moisture content was heat-moisture treated at 100–110 °C for 1–2 h, and subsequently cooled to 4 °C for 1–2 h. The lightness of HMT rice cake decreased as HMT temperature and time increased, whereas redness and yellowness increased. The hardness, springiness, and cohesiveness of HMT rice cake were much lower than those of brown rice cake. HMT of rice cake caused an increase in the resistant starch content and a decrease in the rapidly digestible starch content. In sensory evaluation, hardness of HMT rice cake was substantially lower than that of rice cake made with untreated brown rice due to retardation of retrogradation. However, the overall acceptability of HMT rice cake was lower than that of white rice cake or brown rice cake. 相似文献
